INCREASE BONE DENSITY: Slow down or stop loss of bone mass and build strong bones, reducing the risk of osteoporosis.
2 BURN FAT (even if you want to lose in a different area you are working!)
3 BUILD MUSCLE: Makes joints, tendons & ligaments hardier and more capable of avoiding injury. Frighteningly, women tend to lose 5 to 7 pounds of muscle every decade if they're not doing some sort of weight bearing exercise.
4 CHANGE METABOLISM LONG AFTER THE WORKOUT IS OVER: Metabolism will mirac ulously adjust itself, significantly speeding it up in most cases, however underweight individuals will find it slow down.*
5 BUILD STRENGTH: Boost coordination and improve overall balance.
*Additionally, there is some research that indicates that weight bearing exercise for several weeks will lower cholesterol levels which can greatly reduce the chance of heart disease.
2 pounds Yukon gold potatoes
4 Tbsp (1/2 stick) unsalted melted margarine or butter
2 tsp fresh thyme leaves
Chopped fresh rosemary - optional
1 tsp kosher salt
½ tsp freshly ground black pepper
1 cup chicken or vegetable stock
3 to 4 smashed garlic cloves
Heat your oven to 500°F with the rack in upper-middle position. The hot oven is key!! It gives the potatoes their deep golden color and crispy exterior.
Peel potatoes and slice them into 1-inch thick rounds so they are more hefty, decadent slabs of potato.
Toss the rounds with the melted margarine or butter, thyme, rosemary (if using), salt & pepper.
Transfer to a 9x13 metal baking dish and arrange in a single layer. (Don’t use a glass pan - it can burst under the high heat.)
Bake for 15 minutes, flip the potatoes, then bake 15 minutes more.
Remove the dish from the oven and add chicken or vegetable stock and the smashed garlic cloves.
Return to oven until most of the stock is absorbed, about 15 minutes more. Transfer to a serving platter and pour the remaining liquid in the pan overtop.
