We always hesitate to write about our colleagues here at the Dispatch Printing Company.

As journalists, we know that presents an unavoidable conflict; as readers, you have a right to be skeptical when we cover our own company.

But I couldn’t resist previewing the Dispatch’s format change, and I thought the story was worth braving those pitfalls (see page 66).

I always get a kick out of seeing newspapers in old movies—they were huge! Fifty years ago, the Dispatch measured 15 inches wide—that’s twoand-a-half feet when spread open. It’s now 11 inches wide by 22 inches tall. But even as the page dimensions have gotten smaller over the decades, the basic format hasn’t changed much.

The new Dispatch will be different.

It’s even more compact, at 10.5 by 14.6 inches, and the format is more modular and colorful—more like a magazine.

For those of us who are fans of the printed page, it’s exciting to see the city’s daily newspaper undergo such a groundbreaking transformation.

here’s a reason it’s called the Brewery District.

Columbus has a proud history of beer making, dating back to the brewery founded

by Louis Hoster in 1836. A handful of major breweries were producing hundreds of thousands of barrels on Front Street by 1900, fueled by the traditions of the German immigrants who lived nearby.

Prohibition pretty much put an end to that. A long dry spell followed, but Columbus beer is back in a big way.

The revival started in the late 1980s with CBC and Barley’s. More recently, names such as Four String and Zauber have taken the place of century-old labels like Born and Gambrinus on local tap handles. (Check out John Ross’ feature on page 50 for a tasting tour of these breweries and more.)

This new generation of brewers reflects the celebrate-local sentiment that’s also blossomed in the food scene.

Columbus beers taste like they’re from Columbus—they’re unique, sometimes eccentric, always interesting—and they’re crafted with the passion and energy we expect from the city’s creative community.

By the way, Hoster Gold Top is still around, though the Columbus beer shares only a name with the historic brewery, not a direct lineage. It is one of my favorites—ice cold on tap at Villa Nova. It’s a nice way to toast the past, and future, of the city’s most refreshing industry.

As a former resident of Columbus for 30 years and a contributor of many ideas for the development of the Downtown waterfront (happily many have come to pass), I’m disturbed to read about the mayor’s plan to destroy the Main Street dam (“Splendor in the Grass,” July).

Apparently the mayor hasn’t seen photos of the pre-dam Scioto River as it passed under the Broad Street bridge.

For many months, when the water level was low, it was a forlorn sight in the broad expanse with lots of mudflats. The dam created a beautiful pool reflecting the changing skyline. It may be trendy to return a river to its natural course. But with all the resources put into upgrading the Scioto Mile, the future viewing of the Scioto in its natural state will be a big and inappropriate step back.

Local innovators gather at idUS conference

T

wo years ago, Scott Ihrig and Shannon Morrison could barely pick out Columbus on a map.

Now, they’re among the city’s biggest advocates. The principals at event-design and production firm IM Creative have been given the reins to idUS, a Central Ohio symposium of creative types and forward thinkers that runs from Sept. 28 through Oct. 8.

But in order to tell that story, it’s important to

explain how the couple came to call this city home.

The two had been living in New York. Morrison produced Broadway shows, Ihrig the Radio City Christmas Spectacular. But disillusionment set in under the big-city lights.

“It was super-glamorous in our twenties and super-tired in our thirties,” Ihrig says.

While working on a project in Orlando, the couple saw a Victorian Village home featured in The New York Times. Intrigued by the charm (not to mention the affordability), they took the scenic route home, making a stop in Columbus before returning to New York.

By the end of the trip, Ihrig recalls, “We were scouring the Short North and Victorian Village for ‘For Sale’ signs. We moved here within six months.”

The pair brought with them their fledgling business, IM Creative, which Ihrig launched in 2000 to keep himself occupied during the nine months of the year he wasn’t engrossed in the Christmas Spectacular. The business has grown along with the client list, which has included Microsoft, L’Oreal and Pfizer, among others.

“We create live experiences for clients,” Ihrig says, “making sure that whatever the experience is aligns with the company’s business goal.

We translate a brand into an experience.”

Their move came at a good time. 200Columbus, the city’s bicentennial initiative, began seeking someone to spearhead its ambitious fall event. The duo seemed a perfect fit for idUS, both for their expertise and their unique back story. Ihrig and Morrison represent the kind of people the city is hoping to attract and retain. “[Columbus has] a huge intellectual capacity,” says Jamie Greene, program manager for 200Columbus.

“We have the world’s largest private research entity in Battelle. We have the No. 1 library, the No. 1 zoo. There’s a lot we can stake a claim to.”

Greene says he was immediately drawn to IM Creative because of the principals’ extensive background producing technical events. “But also they have a really strong creative component stemming from their work in the theater,” Greene says. The goal, according to Morrison, is for idUS to be “a driver of economic prosperity for the city of Columbus.”

The way to do that, he says, is “to create a community that is more proud and engaged.”

Programs range from the Mini Maker Faire (showcasing crafters) to TEDxColumbus (an idea forum centered on technology, entertainment and design). There will be events dedicated to the

green dream The city of Columbus has two major events coming up that should put it squarely on the map. One is the 2013 NHL AllStar Game. The other is EcoSummit.

Meet Ohio State professor Bill Mitsch, the Rick Nash of the ecological world (except he’s staying put). He’s the director of those kidney bean-shaped wetlands just north of the university. He’s also responsible for bringing EcoSummit to Columbus from Sept. 30 through Oct. 5 for the international environmental forum’s first U.S. appearance.

Its focus is “prescriptive ecology,” says Mitsch. In other words, “What do we need to do to fix the planet?”

The buzzword in ecology these days is “ecosystem services.”

It’s the idea that nature is benefitting us with bountiful resources, “and when we build over them and destroy them, we’re destroying things nature gives us for free,” Mitsch says. “Even economists are buying into this idea.”

The six-day event will include presentations by delegates from around the world, who will discuss specific international sites in need of restoration and other topics.

ancer, choreographer and Ohio State professor Bebe Miller is taking a step back through her own past. If you’re not already familiar with her work, there’s no better time to get caught up.

Miller has been the artistic director of the Bebe Miller Company since 1985 and is, as of April, part of the first crop of Doris Duke Artists. The prestigious prize from the Doris Duke Charitable Foundation recognizes her exceptional creativity—-and comes with a cool $250,000.

Her newest piece, A History, premieres this month at the Wexner Center. A concurrent exhibition, Bebe Miller: Tracing History, is on view at the OSU Urban Arts Space, the university’s Downtown gallery.

“My toolbox is movement and physicality, and with it I try to take a reading of who we are as people,” she explains.

Miller is the creator of 40 original works, including the Bessie Awardwinning Verge. The exhibit pulls from video, audio, sketches, clippings, diaries and sets to share her artistry and unveil the process behind it.

“Bebe is 150 percent about process,” curator Jerry Dannemiller says of the exhibition.

At a mid-July rehearsal for A History, this process looked to be intensely collaborative, open, exploratory, trusting

and, at times, chatty. For example, when dancer Angie Hauser announced a problem was fixed, Miller, always curious, kindly asked, “How?” The history being explored in the new dance piece is that of the Bebe Miller Company—-sort of. The raw material is the highly documented life of the group, yet the dance, Miller says,

The city sees its first game when squads from the Buckeye Baseball Club scrimmage on the grounds of the county insane asylum.

Deaf pitcher Ed “Dummy” Dundon of the Columbus Buckeyes can’t hear calls, so hand signals for ball and strike are invented.

They become a permanent part of the game.

1887

At German Village baseball haven Recreation Park II, entrepreneur Harry Stevens opens the first stadium concession stand. He sells peanuts and tripe.

1900

The city’s baseball capital moves to Neil Park, which soon holds the nation’s first concrete-and-steel stadium.

The area around Hoover Reservoir offers a wealth of outdoor amenities, including the recreation hotspot near the dam. If you’re looking for more secluded and intriguing territory, head to the Hoover Nature Preserve on the water’s northeastern coast.

A gorgeous portion of this twisting green space is Hoover Meadows. Wide, grassy paths encircle ponds, prairies, marshes and forest.

Columbus Audubon has recorded around 188 bird types at the preserve, and its shallow waters are a perfect place to see and hear frogs in season.

If you have some extra time, drive to the 1,500-foot boardwalk at the preserve’s northern tip, near Front and West streets in Galena.

The 560-square-mile Darby Watershed is one of the Midwest’s most biologically diverse aquatic ecosystems.

Thousands canoe down Big Darby Creek, but few grasp the area’s larger significance.

Do so at The Nature Conservancy’s 800-acre Big Darby Headwaters Nature Preserve, which is tucked like an aquatic splinter alongside State Route 33 in a tiny hamlet called Zane.

You’ll encounter streamside forests, recovering prairies and the start of something great. Coldwater springs and small streams that emerge within the preserve are a major part of the Darby’s permanent flow. Colorful trailside bulletins explain the waterway’s importance and the project that restored about a mile of the stream.

Interesting ecosystems don’t always survive around urban settings, but Gahanna Woods State Nature Preserve has thrived on the outskirts of the growing eastern suburb.

Hikers will find buttonbush marshes and dense forests— ecosystems that are equally interesting to scientists and casual hikers.

When you pull into the parking lot, you’ll find a trailhead for a city park and one for the adjacent state nature preserve, where you should spend most of your time. The preserve’s Woodlands Pond and Beechwood trails both are excellent. Though paths are often muddy, they trek into mysterious swamps and lovely wooded highlands, true Ohio treats.

Most Columbus hikers speed right past Wahkeena en route to Hocking Hills State Park.

Yet this flyover territory lives up to its name, an American Indian word that means “most beautiful.” The Casa Burro and Shelter trails are short but savory. Tackle them together to see rock outcroppings, bushy ferns, beautiful rhododendrons and remnants of an old homestead. Other paths lead to Lake Odonata and a beaver pond.

Though less well known than the Columbus Metro Parks, the Preservation Parks of Delaware County protect places like Hogback Ridge Preserve. The enclave in the shadow of Alum Creek State Park offers two half-mile loops connected by staircases that bring hikers into and out of a lovely stream-cut ravine.

After hiking, head to the top-quality nature center for wildlife displays, friendly staff and comprehensive guides to local flora and fauna. Preserve hours run 8 a.m. to 4:30 p.m. Wednesdays through Sundays through Nov. 4.

From the parking lot, take the Woodland Ridge Trail counterclockwise and cross the connector to the Pinegrove Trail. Walk this loop, see what’s floating on the pond behind the wildlife blind and return via the connector to finish the final section of the Woodland Ridge. Even novice hikers can complete the entire trail system in a couple of hours.

oBo Style has been a Clintonville fixture since Katie Palmer opened the vintage decor boutique more than a decade ago. With a unique mix of new and repurposed furnishings, gifts and baby items, Palmer says it’s the perfect place for young couples to shop when starting a family.

“They are beginning to develop a sense of style,” says Palmer. “At that age, you’re getting into what you like and what you want to buy.”

Palmer also notes that SoBo is a good place for families to find items when their homes grow and expand. “Since we’ve been in business for 11 years, I remember when people’s kids were born,” she explains. “Now they’re 10 years old, which is crazy to think about.” t Heather Weekley

Don’t Miss Hot Skwash: These decorative pumpkins ($8$48) were so popular last year that Palmer placed her fall order in January. They’re made of silk velvet stuffed with rice, complete with a real pumpkin stem. “People would buy one and then come back to buy more because they didn’t have enough,” she says.

Birch tubes: Use these natural tubes of soft birch wood as a decorative vase. Keep them from season to season, simply changing the flowers or plants inside. Tubes range from $15 to $25.

Window-pane cabinets: The cabinets (around $595) are SoBo’s signature piece and top seller, Palmer says.

She’s been working with a producer from Illinois for the past eight years to ensure she always has them in stock.

Just a few years after debating whether Ohio would ever see its first casino, the state is betting on an explosion of gambling options B y K e l ly l e c K e r

cioto Downs sounds a lot like Las Vegas these days. On a busy Saturday night at the South Side casino and race track, the familiar dingding-ding of slot machines punctuates the efforts of gamblers looking for a little luck. Theme songs from Wheel of Fortune and Wizard of Oz games compete with quiet cheers from winners and groans from losers.

Just three miles north on High Street, a hand-painted sign on a dark storefront window urges visitors to “Win cash now.”

The Internet Cafe offers none of the glitz of the nearby racino, but they have one

thing in common: the chance to win money.

There are at least 770 internet cafes just like this around Ohio, and they might have more machines—as many as 7,700—than the open casinos and racino combined. Nobody knows how much money they make because the industry is unregulated.

Soon, a full-scale casino will join the mix in Central Ohio. The Hollywood Casino Columbus, set to open Oct. 8 on the West Side, will feature more than 70 game tables and more than 3,000 slots.

Casinos are already open in Toledo and

Cleveland; the Cincinnati casino will open next year.

This is the vast world of Ohio gaming, and everyone seems to want a piece of it. While state and local governments take a cut of the revenue generated by the casinos and racino, internet cafes—capable of making hundreds of millions, investigators say— operate out of the state’s reach.

“There’s a lot of gambling in the state,” Ohio Attorney General Mike DeWine said. “But all of it that’s out in the open is regulated by the state of Ohio. What’s different about the

so-called internet cafes is that they’re unregulated. They’re an anomaly.”

T

here has long been gambling in Ohio. The state legalized betting on horses in 1933. Voters approved the lottery in 1973, and this year the Ohio Lottery turned over a record $771 million to the state education fund.

But four times since 1990, voters rejected plans for casino gambling.

Each time a proposal would fail, casino proponents hatched a new plan. Even as voters rejected the proposals, they seemed to be warming to the idea.

A poll in 1998 showed the majority of Ohioans would approve of a casino near their homes. In 2000, another poll showed most felt casino gambling should be legal in the state. Still, voters turned

Even as Ohio voters rejected casino-gambling proposals, they seemed to be warming to the idea. down casino proposals two more times, in 2006 and 2008.

Finally, in 2009, desperate for anything that would bring money and jobs and barraged with a $50 million campaign by supporters, Ohio approved a constitutional amendment allowing four casinos.

Earlier that year, then-Gov. Ted Strickland pushed a controversial plan to allow slot machines at race tracks as a way to balance the state’s budget.

While he opposed casinos, some argued he opened the door for gambling in the state. That issue died after a lawsuit, but in 2011 Gov. John Kasich signed new legislation allowing slot machines at race tracks.

Scioto Downs opened its racino June 1.

On Aug. 4, it added a buffet, sports bar and about 300 new machines, bringing the slot total to more than 2,100.

So why now?

“Part of this was driven by the economy. In 2009, Ohio’s economic climate was much more desperate,” said William Eadington, director of the Institute for the Study of Gambling and Commercial Gaming at the University of Nevada, Reno.

Opposition to casinos is often driven by moral factors such as fear of crime or addiction problems. Many may think the potential tax revenue isn’t worth the risk during good economic times.

In lean years, though, voters might consider anything that could bring jobs and money. The Columbus casino alone plans to hire 2,000 workers.

Whether gambling will help boost Ohio’s economy remains to be seen. In 2009, the Ohio Department of Taxation estimated the casinos’ gross tax revenue at $643 million, or $470 million if slot machines were allowed at Ohio’s race tracks. In its first month, Scioto Downs reported revenue of $11.1 million, $3.7 million of which went to the Ohio Lottery to distribute to schools.

Rob Walgate, vice president of Ohio Roundtable, opposed the casinos and still thinks they are bad for Ohio. His group continues to fight the racinos. But he’s not surprised that after so many attempts, the issue passed.

“They spent over $40 million to buy a piece of the Ohio constitution. They just had the perfect storm,” he said of casino proponents. “Obviously we didn’t raise the money to counter that.”

Ameet Patel, general manager of Hollywood Casino Columbus, is counting on fine dining, bars and buffets to keep the thousands expected at the casino opening coming back. Patel said he expects the casino to attract many out-of-state visitors as well as Ohio gamblers.

“We learned from the opening of the other casinos not to underestimate the enthusiasm for the casinos,” Patel said.

Eadington said that with all the competition, drawing out-of-state visitors is unlikely. But the Ohio casinos should be able to capture the business

hile the state scrambled to draft regulations governing casinos and race track slot machines, storefronts tucked in strip malls around Ohio quietly advertised another way of making money: internet cafes.

Internet sweepstakes machines typically work like this: Customers buy phone cards or internet time. With the purchase, they receive â&#x20AC;&#x153;pointsâ&#x20AC;? that can be used to play computer games that look like video poker or slot machines.

Winners are paid cash prizes.

Operators of internet cafes say the games are promotions for customers who buy internet time or phone cards, and winners are predetermined, so itâ&#x20AC;&#x2122;s

To the attorney generalâ&#x20AC;&#x2122;s surprise, 772 internet cafes registered with the state, up from 280 the last time investigators counted. not gambling. If you go into an internet cafe, no one has a clue what is being paid out or where the money is going.â&#x20AC;?

The state ordered internet cafe owners to register their businesses and issued a moratorium on all new internet cafes until June 2013, giving the legislature time to figure out how to regulate them. To DeWineâ&#x20AC;&#x2122;s surprise, 772 cafes put themselves on the list. The last time investigators counted, there were approximately 280.

Helping hands As developers worked to open Ohio’s first casinos, Maryhaven was getting ready, too. The Columbus drug and alcohol treatment center started a program in 2009 to help problem gamblers. It treats about 40 patients a year and provides educational programming for many more.

“The vast majority of people who engage in gambling do so without any problem whatsoever,” Coleman said. “When gambling takes more of their time and money than people close to them feel they should, they should call us.”

gambling—particularly internet gaming—on his Columbus church. He’s written to legislators, begging them to allow charities to have slot machines, too, so they can replace the income lost by the downward slide of bingo revenue.

While he works to change lawmakers’ minds, Mauriello tried another approach: He started an internet cafe. “We just want a fair chance to compete,” he said.

Internet gambling nearly killed bingo, charities say, and casinos might mean the end. The Christopher Columbus Educational Foundation, which relied on bingo revenue to supply scholarships to students pursuing secondary education, closed its bingo games after profits plummeted.

Director Yvonne Aschinger hasn’t given up on gaming as a revenue source for scholarships. She’s looking for a bar, bowling alley or restaurant to sell instant bingo tickets for the foundation.

The seller could keep six percent of the profits.

Four String Brewing Co. was born from Cochran’s extensive homebrewing experience, and it’s colored front to back by his rocker spirit. If a beer name like Backstage Blonde doesn’t catch your attention, its guitar-neck tap handle will. like a road-weary musician, Cochran likes getting his hands dirty and meeting his fans: “It’s very gratifying to walk into a bar and have one of your own beers. It’s also gratifying to see someone you’ve never met walk into a bar and order one of your beers.”

Four String’s main offerings are available at a growing number of Columbus bars and restaurants, and he opens the Grandview brewery’s tap room from 5 to 7 p.m.

Also in the works is Oval Brewing Co., which is named in honor of Ohio State’s trademark lawn but has no official connection to the university. Founders have a robust line of beers planned and recently received roughly $31,000 in start-up cash through online fundraising forum Kickstarter.com.

“We found some newer hop varieties, the Simcoe and the Amarillo, and started kind of designing the beer around that. For the malt profile, it had a little sweetness behind it to balance out the hop flavor. That was probably one of the most purpose-built beers we’ve done.”

A welding engineer and a wine salesman who became friends in middle school join forces to open a microbrewery on a farm in Morrow County.

That, in a nutshell, is Hoof Hearted Brewing.

Then there’s the pair’s love of mythical creatures, pin-up girls and fart jokes. (don’t hear it yet? Say the brewery name again, fast and loose.) “with the name, we wanted to embody our personalities,” partner Jarrod Bichon joked from the barn where Hoof Hearted brews. “which is kind of childish.”

But scoffers will find serious beer beneath the goofy facade. Hoof Hearted’s excellent porter gains its creamy, chocolate nose from hefty additions of oats, and a copper-colored ale called ryborg boasts a tonguetingling spice and delicious hop flavor.

The beer’s been a hit in elizabeth lessner’s Columbus Food league restaurants since the brewery launched in May. “it’s a great group of restaurants to get some feedback,” said Trevor williams, who sold wine before jumping into the beer game.

Hoof Hearted is set to expand in the fall. “we thought if we could build things from the ground up it would mean more than just buying a bunch of equipment,” Bichon said.

One of the beer-maker’s two pubs, Barley’s Ale House No. 1 lies in one of those worn, warm buildings that has held a dozen businesses over the decades and that you’re glad is still standing. Best among the broad range of picks are the Turkey Nut burger and MacLenny’s Scottish Ale. The burger’s base of ground turkey and spices is topped with a layer of pecans, which gives the patty a nutty kick and crunch. Grab it with crispy fries or the spicy coleslaw.

MacLenny’s Scottish Ale is an ideal dining beer—solid body, strong malty backbone, a touch of sweetness magnified by anything spicy or tart. It’s likely among the brewpub’s top sellers because it washes down food without being washed away.

International bittering units are how the industry measures hop flavor. A standard India pale ale measures around 60 IBUs, while a wheat beer packs less than 15.

SeSSion beer

A beer with relatively light body and low alcohol content, usually five percent or less. Drinkers can consume a couple during a single sitting without getting smashed. reinheitSgebot

The German purity law of 1516 stated that beer could only contain water, hops and barley. Yeast was added to the list when scientists discovered its role in fermentation.

The Three parTners and two brewers behind seventh son Brewing Co. come from different fields. They boast different strengths. They even like different styles of beer. But the team of local tastemakers has made seventh son the most anticipated local brewery opening of the past decade. partner Collin Castore, a driving force behind beer bar Bodega and north Market carryout The Barrel and Bottle, said collaboration will hone the brewery and its beers. Two production systems will allow seventh son to create year-round offerings and one-off experiments, Castore said.

Bodega, located a few blocks from the brewery, will provide a testing ground.

Initially, the brewery will have two selections. seventh son of a seventh son is an american strong ale with big flavors of malt and hops, while Black sheep is a stout with dark hues and a hefty alcohol punch. Others will be influenced by brewer Colin Vent’s experience as a sous chef at DeepWood. nearly finished, the brewery in Italian Village will function as an event space. It’ll open occasionally as a bar with a full liquor license, though it won’t keep conventional hours.

The space is set to open later this year, and seventh son plans to have beers available for the Columbus Microbrew Festival this month.

Beer from Rockmill Brewery is the dream beverage for a city yearning to drink local and think global. Owner Matthew Barbee’s small but magnificent beer line is produced in Lancaster but tastes like Belgium.

Grab a champagne bottle of Rockmill’s excellent saison at The Rossi alongside the chic eatery’s Grilled Short Rib. Two thick hunks of fork-tender beef come with a footer of corn pancakes and a drizzle of sweet-and-spicy jam made of hot peppers and maple syrup. It’s like chicken and waffles—for royalty.

Built to mirror the traditional Belgian farmhouse style, Rockmill’s saison is light and golden with a fluffy, lingering head. Its floral nose and tastes of rosemary, thyme and dried fruit are the perfect complement to a sturdy, standout dish.

The world’s oldest fermented beverage is made with honey instead of barley and hops.

The brewers at Brothers Drake Meadery & Bar in the Short North add locally sourced fruit and aromatics to a wide lineup of varieties, including berries in the Scarlet Solstice mead and Ohio’s native fruit in the Paw Paw mead.

KoMBucha

Touted by the homeopathic set for its immune-boosting effects, kombucha is a probiotic tea made with live cultures of yeast and bacteria.

Locally, Luna Kombucha brews varieties like black raspberry and strawberry with Ohio fruit, and KombuTea Kombucha Kvass crafts effervescent teas in flavors like goji-ginger and blueberry.

The Hoster Brewing Co. opens. The brewpub is named after the historic brewery but has no connection to it. It closes in 2001.

Beer is a social DriNK, something to enjoy slowly among friends. That’s the vision behind Zauber Brewing co., the Grandview operation that released its first pints in april.

Grab one of five selections on draft and you’ll taste owner Geoff Towne’s take on sip-and-savor european styles. Vertigo is a hazy, yellow hefeweizen, while the stodgy Brown is a darker ale with nutty, hoppy kicks. “it’s beer with character and nuance that i didn’t easily find when i was growing up,” said Towne, who earned a brewing degree from the University of california at Davis.

His slow-sip philosophy goes beyond his suds.

Zauber’s facility features a tap room where beer fans can order pints and fill growlers from 4 to 8 p.m. Thursdays, Fridays and saturdays.

Down the road, Towne plans to transform the space into a German-style beer hall.

He currently crafts batches on a beefed-up homebrew rig, but by early next year a new system will increase his output up to 20 times. He isn’t fazed: Before going solo, he brewed at Boston Beer co. in cincinnati and Great lakes Brewing co. in cleveland.

Each selection from the fledgling local brewery comes with a label painstakingly designed by illustrator Cyrus Fire, who sees big opportunity in a bottle-sized canvas.

“Limitations make you creative,” Fire says. “I pretty much have free rein to see what I come up with.”

The most striking pieces are attached to Frost Giant Pale Ale and Tangerine Wheat Dream, two selections in the growing Spruce Campbells lineup.

Local Roots proudly offers Ohio-made products from beer to beef. The charming restaurant in downtown Powell doesn’t source its scallops from the Buckeye State, but this excellent seafood offering is still worth a trip.

You can enjoy these pan-seared beauties in their own dish with lobster risotto, but try a pair added to the Mediterranean Salad, a crunchy blend of mixed greens, olives, feta, red onions, artichoke hearts and tangy vinaigrette.

To complete your ideal patio meal, swig from a pint of Ornery Otter Blonde Ale, a light and summer-ready selection from Zanesville’s Weasel Boy Brewing Co. This refreshing beer is low in bitterness and bears a subtle sweetness—an easy introduction to Central Ohio’s microbrew scene.

Brewmaster Jason Matthew Kusowski crafts his beer in small batches through contracts with Grandview’s Zauber Brewing Co. Limited amounts are available in bottles, while most is released in kegs at smaller Columbus bars. Often Kusowski will celebrate a tapping with a show featuring his rock band, The Spruce Campbells.

“We want to put out rocksolid beer that’s visually, aesthetically pleasing—but that tastes awesome, too,” Kusowski says. “It’s going to take some time, that’s for sure.”

the morning of Sept. 10, roughly 200,000 copies of the Columbus Dispatch will hit front porches and newsstands, office tables and hotel lobbies. it will be the same newspaper that’s covered the city for 141 years. only these papers won’t look, read or feel the same.

Pages will be smaller, folding across the middle to about the size of an iPad. Papers will be thicker, with more pages and additional sections. the layouts will be more colorful and modular—more like a magazine. the newspaper’s gothic-font nameplate will be there, only reduced in size.

Welcome to the “3Volution,” a compact newspaper format named for the technology able to produce it. the Dispatch will be the first paper in the world to convert to the format, which is also known as “3V” or “three-around.” many expect it to change the industry.

“We’re talking to a lot of newspapers around the country about it,” said Jim gore, vice president and general manager of Pressline Services inc., the company that recently patented 3V technology. “everybody’s watching, waiting for it to launch. there’s a ton of interest in it.”

Several other daily newspapers are expected to switch to the format in the next year. the gannett Co. will use the Dispatch’s printing facility on the West Side to produce 3V versions of the Cincinnati enquirer and Kentucky enquirer in the fourth quarter of this year. gannett declined to comment for this story.

Phil Pikelny, chief marketing officer for the Dispatch Printing Company, said the new format is a giant leap forward for broadsheet papers that have remained relatively unchanged for more than a century. “i’d like to meet the man who invented the broadsheet— because the man should be shot,” Pikelny joked. “the consumer was already wanting this to go away.” the change shrinks pages of the Dispatch to 14.6 inches long by 10.5 inches wide, down from 22 inches long by 11.375 inches wide. the company says the new format will include the same amount of news content in a greater page count. (Like the Dispatch, Columbus monthly is owned by the Dispatch Printing Company.)

“most newspapers are either standing still or cutting,” Dispatch editor Ben marrison said. “this company has decided to double down, and we’re reinvesting in this community and this product. the feedback has been off the hook.”

A neWSPAPer With SmALLer PAge DimenSionS isn’t big news, so to understand the significance of the Dispatch’s new format, you’ve got to go to the presses. newspapers are printed by threading long rolls of paper through multi-story presses that hold a series of cylinders; wrapped around the cylinders are thin metal printing plates. these plates guide the transfer of ink to paper, creating an image of each page. in traditional set-ups, two printing plates wrap around each cylinder, so two pages are produced in a single rotation. in the 3V format, each cylinder holds a single plate with three page images on it. this one plate produces three pages per turn. the new size essentially increases productivity by 50 percent. running paper through the presses at the same speed produces 90,000 3V copies per hour, up from 60,000 copies of a traditional broadsheet.

Pressline Services’ technology uses the Dispatch’s existing presses, but the switch required a significant overhaul of the infrastructure, said Joe gallo, Dispatch executive vice president and corporate chief information officer. even devices that move papers through the plant and machines that translate computer files to plates had to be altered.

But the conversion hinged on the development of a new folder, a machine that cuts sheets, gathers pages in sections and folds them together to be stacked in bundles. Pressline’s new folder can run faster and more efficiently to keep up with the increased pace as 3V newspapers emerge from the presses. “the new folder is the reason you can do a faster number of copies,” gore said as he recently oversaw installation at the Dispatch facility. “the folder has to go faster, but the [press] doesn’t.” each of the four press lines at the Dispatch’s printing plant is page breaks The redesigned Dispatch features additional sections, including a daily business standalone.

being fitted with a new folder. The Dispatch’s total investment to reformat to 3V is estimated in the eight-figure range.

“It’s very significant,” Gallo said. “Everybody thinks that print’s going to go away. I truly think that this is something that will be a good enough experience that it has a very long life.”

ThE DIffErEnT look anD fEEl of ThE 3V formaT means a new approach to stories, photos, graphics and illustrations.

“We took it as an opportunity, essentially, to build a brand-new newspaper using the same award-winning journalists,” marrison explained. “There are sections within sections. It’s very logical. It’s going to have more color. It’ll have far more pages. It’s going to have new sections.” marrison said that the paper will likely have a greater number of tighter stories and more newsy shots rather than feature photos. reporters also will experiment with new story styles, including “charticles,” a format that uses briefs and graphics. a prototype version included familiar sections like Sports, metro & State and life & arts. also inside were standalone sections for travel, college football and business. Increased sectioning is one of 3V’s biggest advantages for an editorial staff.

Take, for example, fall sports coverage. nfl football, nhl hockey and baseball playoffs compete for prime placement, but the Buckeyes usually command the front of the sports section. In the 3V format, ohio State football will get its own section during the season, leaving more front-page real estate for others in the main sports section. mary lynn Plageman, managing editor of features for the Dispatch, noted that sections have been organized like a news magazine. Content is organized to aid navigation, she said, a benefit for readers and advertisers. for instance, the at home section contains specific segments for gardening, home projects, real estate and the housing market.

“You can really draw out the benefits of how easy it is to package content,” she said.

The recent prototype handles easily and opens far more comfortably, to about the width of a desk chair’s arms. Section fronts bear multiple entry points, including top stories, graphics and page numbers of other articles. additional color is obvious.

“Every time we’ve tested it, we’ve been really surprised by the response,” marrison said of the overwhelmingly positive feedback.

That is, after the shock wore off. many who glance at the prototypes are quick to assume that smaller pages mean fewer stories or a smaller typeface. others believe that the new format is simply a way to cut costs or hide shrinking coverage.

Initial ideas change once readers start paging through, said Pikelny, who noted that all the positive feedback would “go out the window” if the new format offered less content. “This is not a money-saving issue,” he said. according to results from a June mail survey conducted by the Dispatch, roughly 70 percent of 213 respondents preferred the new format over the old. Those “pleased” or “very pleased” by 3V numbered 83, compared with 16 who were “displeased” or “very displeased.”

“What everybody loves about it is that it’s a smaller size, but it’s still your newspaper,” Pikelny said. n

Reynoldsburg bistro serves great cocktails and small plates but misses with its namesake pies

n paper, Pie’s Gourmet Pizza Bistro looks like a slam dunk.

The owners of this ambitious new Reynoldsburg spot managed to snag Rigsby’s vet Bill Fugitt, one of the city’s most talented chefs, who has created an inspired farm-to-table-themed menu.

They also talked bartender extraordinaire Cris Dehlavi, renowned for her cocktail menu at M at Miranova, into overseeing the bar.

Pie’s is based out of a centuryold, renovated Colonial and boasts a gorgeous open kitchen and a tranquil outdoor patio. The gourmet pizza concept is solid, too—everyone loves pizza, and the price point is low enough 74

it won’t scare away folks used to dining in chain-restaurant land.

But here’s the thing—you can be a brilliant chef (Fugitt is, and I don’t say that lightly) and still not understand how to make something as deceptively simple as a great pizza.

Fugitt whips up some lofty topping combos (Duck leg confit with gruyere, roasted mushrooms and a poached egg?

Yes, please.) but hasn’t yet mastered the fine arts of crust and sauce and cheeseto-topping ratios. And that’s problematic when your restaurant is packed with table after table ordering pizzas all around.

Pie’s pizza problem was glaringly

evident on my initial visit. The first few courses were stunning. I sat there grinning as I sipped a pitch-perfect Heirloom Mary ($8, basically a Bloody

Mary lightened up for dinnertime with dill-infused Oyo vodka and heirloom tomato juice) and savored the best few bites of food I’d eaten in quite some time.

Expertly cooked pork belly ($9)— smoky, velvety meat encased in a crisp baconlike skin—served with a Lyonnaise salad and a poached quail egg. Prince Edward Island mussels ($14) sauteed with ginger and garlic in local Zauber beer. A beautiful little Summer Salad ($8) of lettuces and baby vegetables straight from the chef ’s garden, drenched in a lemon-chive vinaigrette.

Then came the pizza, a mushroomtopped specialty pie. Now, a good pizza starts with good crust and sauce. This noticeably misshapen crust (and not in a charming, handmade way) was fairly bland with an odd note I later realized comes from being made with a sourdough starter. And the toosweet sauce veered dangerously close to Donatos territory. On top, some goat cheese and trendy country bacon overpowered the flavorless “wild forest” mushrooms.

I was similarly underwhelmed by the Pepperizzo ($10), which wastes housemade, chorizo-like pepperoni by 76

pairing it with an undercooked applefennel salad.

That first meal was like a roller coaster ride, and I left feeling disappointed.

Next time, I snagged a seat in the neat upstairs “Pie in the Sky” bar. I bypassed the pies and had more luck ordering from the chef ’s daily small plate and entree specials. Casino-style scallops on the half-shell ($14 for six) and Pan Roasted Cod ($20) served over warm veggies and fingerlings in a bright citrus sauce were terrific seafood deals.

And with Dehlavi herself behind the bar that night, every cocktail I tried was a winner—especially a refreshing Pimm’s Local Fruit Cup ($7) that combines Watershed Gin with Pimm’s, ginger beer and muddled seasonal fruits.

Bread-lovers across the city will be happy to know that Eleni-Christina Bakery, owned by restaurateurs Kent and Tasi Rigsby, quietly reopened its doors to retail customers in July—fours year after transitioning to a wholesale-only model in the wake of a downturned economy.

“The neighborhood wanted it again,” manager Joe Aponte says. “Plus, we’re all such big fans of the product we make here.”

A new lunchtime cafe menu at the bakery offers a few sandwiches, like a seasonal-veggie-and-herb banh mi and a hearty meatball sub on the bakery’s fresh-made bread. The cafe is open for lunch from Thursday through Saturday.

Latitude 41 knows how to throw a party. For their first Rooftop Beer Garden event, which took place poolside on the Renaissance Hotel’s deck, the restaurant put together a spread featuring Ohio sweet corn, pickled vegetables and two roasted whole pigs.

Nearly 100 people mingled, swam and drank after work Aug. 2, and chef Adam Cobb says to expect more of the same at the second party on Sept. 6. Cobb and company roasted whole pigs from North Market’s Bluescreek Farms for about 10 hours in a dedicated cooker, cultivating a crispy skin guests fawned over.

“It’s great for people who live and work Downtown,” Cobb says.

DIRTY FRANK’S heads West

Liz Lessner has a knack for opening restaurants in quiet corners of the city and watching them grow in her wake—for evidence, see how Gay Street has blossomed since Tip Top opened. Now, she’s got Westgate in her crosshairs as she plans to open a second location of Dirty Frank’s on West Broad Street in the spring.

Rents in the family-friendly neighborhood are low, and the city expects to see an increase in traffic when the casino opens.

The Westgate menu will include all the original location’s beloved hot dogs plus burgers and steak sandwiches.

“I love the idea of Broad Street becoming like High Street,” Lessner says, “and I think we’re well on our way.”

Polish restaurant Babushka’s Kitchen is moving from its Clintonville location to a storefront on Sinclair Road near I-71.

With a slate of renovations underway, owner Dennis Bennett says the new location should be open early this month.

He says their high-visibility High Street storefront was ideal for building the restaurant’s brand, but was far from perfect in its energy-inefficient design and location in a dry neighborhood. SpaniSh accent Dae Oh rebrands Barrio space as Madrid The former Barrio space has gotten a facelift.

The restaurant at Spring and High was purchased this summer by local restaurateur Dae Oh, who owns Black Olive, Two Fish, Red and Shoku. Oh has changed the name to Madrid, but kept the Spanish tapas. “We’ve taken the Barrio concept and refined it,” Oh says.

The restaurant closed in mid-June and quietly reopened in August after extensive renovations. Dark wood tables and a rustic slatted ceiling have been swapped for clean, light and modern decor. The upstairs dining room has been rebranded as The White Bar. “The interior is not the same place,” Oh says. “We expanded the kitchen and did all of the things that needed to be done to be more efficient.”

Oh admits this Spanish-influenced concept is quite different than his Asian-fusion restaurants. When he took over the space, he says, the majority of the kitchen staff remained—including the executive chef—which has made the transition fairly seamless.

And while the menu items may appear similar, guests should notice prices have been reduced an average of 30 percent across the board. “Our magic number for lunch is $10,” Oh says.

But the quality—and quantity—will not be affected, Oh promises.

Storied sips Granville Inn’s clever cocktail list offers a peek into the restaurant’s past

M

ost cocktails have some history behind them, but few have stories as fascinating and personal as the ones at the Granville Inn. Take the “Hold Me Touch Me”—the sparkling wine and limoncello drink was inspired by a memorable song from Mel Brooks’ The Producers, and created during the production’s run at Weathervane Playhouse in neighboring Newark.

And then there’s the Bryn Du Julep, named after the town’s historic Bryn Du Mansion (it’s Welsh for “dark hills”). Or the Elements of Ivy, a vodka cocktail that shares a name with an Abercrombie & Fitch clothing line—the Inn first made the drink for a catered A&F event.

Best, though, is the new Raisin Bread Martini. Many years ago, the Inn offered diners complimentary homemade raisin bread topped with buttercream frosting. Though the before-dinner treat is no longer served, customers haven’t forgotten about it.

New technology is allowing doctors to monitor patients remotely, sculpt customized replacement joints and minimize the devastation of strokes.

The U.S. is one of the best places in the world to receive medical care, thanks to a constant stream of innovation. And with its many hospitals, research facilities and world-class doctors, Central Ohio often is at the epicenter of that advancement. Here is a look at some of newest technology available in our area, and how it’s improving—and even saving—lives.

TECH ADVANCES

Expert healthcare is more widely available thanks to computer and communications technology that’s being used by Columbus doctors to monitor patients remotely. Phyllis Teater, chief information officer for the Wexner Medical Center at the Ohio State University, says remote monitoring can catch major problems before they develop.

“This is changing the way the industry interacts with patients,” she says. “Remote sensors provide wellness information, instead of just information about illness.”

Scales can be programmed to transmit weight data through an Internet or phone connection, since rapid weight change can indicate a looming event for patients suffering from conditions such as heart failure. Doctors also can remotely monitor blood levels and other factors. Information is uploaded automatically to the patient’s electronic medical record, which is then accessible to all of his or her physicians.

Experts also are working to develop ways to monitor blood pressure remotely. “A lot of this is in the early pilot and research phase,” Teater says. “We are beginning to gain ground and look for ways to make patients stay healthy, instead of just treating them when they are sick.”

Part of the advantage of remote monitoring is convenience—patients don’t need to travel to their doctors’ offices as frequently. But the constant care also encourages patients to take a greater role in their own healthcare, Teater says.

The technology helps speed the process along and keeps all parties informed. “Alerts are set, and the system will send a note to the physician if one of the things they are monitoring is sort of out of whack,” Teater explains. “In some cases, we can even get a call out to the patient before the patient knows there is a problem.”

OSU also is extending its reach through telestroke and teleburn networks, which give patients who live in remote rural areas access to highly trained experts. Through phone and Internet connections, OSU doctors can closely monitor patients who need immediate care but are in hospitals that don’t have every kind of expert on 24-hour call. There is a window of just a few hours to treat stroke victims, and decisions must be made rapidly. A delay in treatment can mean the difference between recovery and lifelong disability or even death.

“We set up a secure video line and Internet connection and have the capability to look at a set of key clinical results that indicate the impact of the stoke the patients have had,” Teater says. “Immediately, doctors can tell if the patient ought to have clot-busting drugs, be treated locally, or be transferred here for a different level of ongoing care.”

Another network does the same thing in the case of serious burns. OSU operates the only dedicated burn center in Central Ohio, and the network allows burn specialists to 88

assess the level of care needed for patients in outlying areas. Through this system, burn patients are being assessed all over the state and even as far away as West Virginia, Teater says. They could receive a high level of care at OSU, but if they can be effectively treated closer to home, doctors want to save them the stress and expense of an unnecessary trip.

A new device called Solitaire is helping doctors minimize the effects of stroke, restoring healthy blood flow to the brain.

Dr. Ron Budzik says the device doubles the chances of surviving a stroke.

Teater says the program is growing rapidly, with 12 sites live in the telestroke network and about an equal number in development or discussion. The teleburn program has just one site running now, but other partnerships are in development.

OSU also is considering applying this long-distance technology to wound care, maternal/fetal medicine and psychiatry.

“These are all high-specialty areas where a few minutes of consultation with a specialist can make the difference for both patient outcome and patient convenience,” Teater says.

Experts are using remote technology to treat sleep disorders as well, including sleep apnea, which causes a patient to stop breathing during the night. Overnight sleep studies are still the norm, but the use of portable sleep diagnostic systems is on the rise. The systems are popular among patients because of the convenience, and among insurance companies because of the cost savings. The systems also can monitor usage of nighttime breathing aids (Continuous Positive Airway Pressure, or CPAP, machines), determine the efficiency of oral appliances and keep an eye on patients after ear, nose or throat surgery.

Medicine Institute says remote monitoring has its advantages, but he still recommends an overnight sleep study, overseen by a technician, for patients who experience sleep apnea symptoms such as daytime sleepiness in spite of treatment.

One sleep solution that is growing in popularity is the use of oral appliances that move the lower jaw forward and prevent the airway from collapsing, thereby lessening the chance of snoring. These appliances are less visible than the CPAP machine and can be adjusted slowly for the sake of comfort.

They’re not for everyone, though, and an expert opinion is essential.

“Oral appliances should only be used to treat mild to low-moderate sleep apnea,” Schmidt says. “Patients interested in this new form of treatment should undergo an initial evaluation with a board-certified sleep specialist practicing in an accredited sleep disorders center to ensure maximum safety and reliability.”

Other technology is not only making it easier for people to see well, but making it easier to share the experience with others.

Dr. James Schumer of ReVision Advanced Laser Eye Center is using a 3D projection called TrueVision to improve the common procedure of laser vision correction. LASIK corrects astigmatism, in which vision is distorted because the lens of the eye is misshapen.

“We can project the microscopic view on a 42” flat panel, so that everyone gets to see what only I could see before,” Schumer says.

The operating room staff and even family members waiting outside can watch the surgery as it happens. “It is a very powerful thing to see,” he says.

The system projects the optimal alignment of the lens of the eye, which helps the surgeon make more precise corrections.

“It helps us be more accurate and helps with the end result,” Schumer says.

The system also allows the surgeon to sit upright in a comfortable position, rather than hunch over a microscope for hours at a time.

A more comfortable doctor makes for more successful surgeries and a greater number of people being helped. “This device will extend my career,” Schumer says.

Methodist Hospital are using computer imagery to perform virtual surgery two weeks before the actual procedure.

Colin Yoder, a spokesman for OhioHealth, says the organization is using Prophecy Inbone Pre-Operative Navigation Alignment Guides. Dr. Gregory Berlet, a foot and ankle surgeon at Dublin Methodist, helped design the technology and was the first to use the procedure. Using tomography, surgeons can see the ankle from every angle and design a custom set of forms that will hold the limb in a precise position during surgery. The result is a highly customized and incredibly accurate total ankle replacement.

Following the 3D journey through the ankle, the surgeon will receive a custom set of tools that will show exactly where to drill, slice and screw, Yoder says. “It’s like a piece of a puzzle that can only fit on your leg one way,” he explains. In traditional ankle replacement, surgeons spend the first half hour getting the patient’s foot aligned in a massive brace system. “Now the surgery can take less time, which means less time under anesthesia,” Yoder says. “The end result

is an ankle replacement that is much more accurate than those that had been done in the old way. And when you’re talking about joint replacement, accuracy is everything.”

Dr. Adolph Lombardi of Joint Implant Surgeons is using the same sort of technology to perform knee replacement surgery, and is using it more frequently for other joints as well. Using 3D technology, technicians are able to build implants that will fit the patient’s body perfectly. While a variety of sizes and shapes of implants is available, customized parts are always preferred.

Surgeons use custom guides and milling devices to remove arthritic material and excess bone and to restore a smooth, gliding motion. “It’s kind of like retreading a tire,” Lombardi says. The technology has been in use for total knee replacement for some time, and now is being used in partial knee and hip replacements. The same technology for shoulder joint surgery is on the horizon, Lombardi says.

Doctors also are beginning to use a porous metal that allows natural bone to

grow into and around the structure, making for a more solid bond between patient and implant.

The advances are particularly welcome since knee replacement surgery is in growing demand, and the patients who seek it are getting younger. Lombardi says on a recent day, he had 11 knee replacement patients ranging in age from 49 to 82. Many of his patients still have decades of life to live, and they want to do it with comfort and functionality. “It’s not uncommon for patients to say you’ve given them a new lease on life,” he says.

Sometimes technology moves in exciting new directions, while other times it takes us back to basics. Increasingly, patients seeking breast augmentation are opting to use their own tissue rather than synthetic implants. having to use silicone or saline implants,” she says. “The benefit over using artificial implants is that the patient has the additional benefit of body contour improvement of liposuction, and has only small needle incisions from the surgery.” The process also eliminates potential complications such as hardening, rupture and interference with mammograms.

About 75 to 90 percent of the fat that is placed will remain there permanently.

“So unlike a breast implant, where the patient selects the desired size, there is less certainty of the final volume change,” Vasko says. Most patients who opt for implants eventually will need to have the implants replaced, but that isn’t necessary when a patient’s own fat is used, she adds.

SAVING LIVES

Technology can improve the quality of life, but one of its most important roles is being at a doctor’s fingertips when a life is on the line. Each year, according to the American Heart Association, 795,000 Americans have a stroke—that’s about one person every 40 seconds. In many cases, victims can recover

fully. But if proper treatment is delayed, the result can be devastating.

A new device called Solitaire is helping doctors minimize the effects of stroke, restoring healthy blood flow to the brain.

Dr. Ron Budzik of Riverside Radiology and Interventional Associates says the device doubles the chances of surviving a stroke.

Solitaire works by reaching into the recesses of the cardiovascular system, grabbing a clot and retrieving it. The predecessors of the Solitaire were a corkscrew-like device and a suction catheter that worked well, but not nearly as effectively. “Solitaire has taken it to a whole new level,” Budzik says.

During a Solitaire procedure, a component similar to a compressed, mesh heart stent is attached to a long wire. The device is deployed through the large arteries in the groin and the doctor helps it make its way to the brain. The mesh cage springs open, compressing the clot against the sides of the blood vessel. The clot is ensnared in the mesh and is cautiously suctioned out.

Budzik says the new device has proven to be 20 to 30 percent more effective at getting clots out in one piece than its predecessors.

Riverside Methodist Hospital has grown to become the largest stroke center in Ohio.

As a result, the hospital has large numbers of patients flooding in for treatment—it’s among the top five to eight hospitals in the country in terms of stroke volume. Every day, between two and 10 people come in with strokes severe enough to be considered candidates for the Solitaire procedure, Budzik says.

Riverside was the second hospital in the country to use the device—about six hours after the first hospital, which is located next door to the manufacturer in Los Angeles, Budzik says. Now Riverside and its experts are taking part in another new innovation— injecting a patient’s stem cells into the body.

The cells come from a patient’s own bone marrow and can help protect and possibly regenerate brain tissue and blood supply.

“It isn’t well known exactly what it is that it does,” Budzik says. “It has been studied well in the heart and the lower extremities, and now we’re one of a dozen trial sites in the U.S. trying it in the brain.” n Kristin Campbell is a freelance writer in Columbus.

With help from “Urban’s Way,” the Florida-era biography by Buddy Martin, we looked for lessons from Meyer’s career that will raise your tailgate party to championship level. ▼ Brian Lindamood Meyer coached BGSU to an 8-3 turnaround season and led Utah to a BCS game, before leading Florida to two national championships.

In his two years playing minorleague baseball for the Atlanta Braves organization, Meyer had a .182 batting average.

In 2009, Meyer was named college football Coach of the Decade by Sports Illustrated.

One of the tenets of Meyer’s Plan to Win: “Score in the red zone.”

Lesson: Don’t sit down and relax when you still have burgers on the grill.

Meyer will call trick plays in big games, which he sees as calculated risks.

Lesson: There are no small tailgates, only small tailgaters.

Lesson: Don’t be afraid to try a spicy new wings recipe when your buddies least expect it.
