Buying local benefits the environment, too Buying local has many benefits.

But while consumers may know that buying local helps grow the local economy by supporting local business owners and creating jobs, they may not realize the positive impact that buying local can have on the environment as well.

Eco-conscious consumers often go to great lengths to ensure their money is being spent in an environmentally friendly way. But one of the easiest ways to be an ecofriendly consumer is to support local businesses, which tend to benefit the environment in a variety of ways.

• Shopping locally reduces the environmental impact of your purchases. When buying from a large national chain store, chances are the products you’re purchasing were produced outside of your local community, oftentimes halfway across the globe. That means those products had to be shipped to reach the store shelves in your community. Such shipping leads to greater

fuel consumption and air pollution.

But local businesses often buy their supplies from other local businesses, cutting down on shipping and, as a result, benefitting the environment.

• Local businesses often operate from the center of town. Local businesses typically need less space for their stores, which allows them to set up shop right in the heart of town as opposed to on the town’s outskirts. That makes local businesses more accessible to community residents, who might be able to walk or take a short bike ride to smaller, local businesses.

On the contrary, larger chains tend to diversify their offerings and, as a result, need more space. This often pushes them to the fringes of towns, eliminating the possibility of walking to the store. That means consumers will have to drive to the store, increasing their fuel consumption and their carbon footprint as a result.

• Shopping locally employs

your neighbors, reducing their carbon footprints as well. Another benefit to shopping locally that’s often overlooked is the impact it can have on your neighbors’ carbon footprint. Local businesses often employ members of the community, which translates to shorter commutes, less highway congestion and less fuel consumption. • Shopping locally can protect local wildlife. Many people prefer to buy locally grown foods because they feel such foods are fresh and buying locally-grown foods reduces fuel consumption. Those things are true, but buying locally grown foods also can help protect local wildlife.

When local farms can afford to stay in operation, local farmers are far less likely to sell their lands to developers. That can help protect the habitats of local wildlife.

Exploring the amazing health benefits of reading It can be hard for some people to pick up a book when there are so many distractions at the ready. But while books might not be as flashy as the latest must-have gadget, they can provide benefits that might surprise even the most avid readers.

Reading can help men and women get a better night’s rest. People who are accustomed to reading books before going to bed actually train their mind and

body for relaxation. Picking up a book can send signals that it is time to settle down and get ready for sleep. Health experts often recommend developing a sleep routine to people who struggle to fall asleep at night, and reading for 30 minutes before bed each night can be an integral part of such routines.

Research has shown that reading and engaging the brain in other ways, such as through intellectual games and puzzles, can stave off dementia. These activities stimulate the cells in the brain to grow and connect, increasing the power of brain tissue. According to the Alzheimer’s Association, keeping the mind active through reading can strengthen connections between brain cells and build up brain cell reserves.

Mental activity might even generate new brain cells. All of these factors can reduce the risk of Alzheimer’s disease and dementia.

According to a paper from researchers at Carnegie Mellon University, reading can stimulate the brain to produce more white matter. White matter works together with gray matter and is responsible for sending sensory and motor stimuli to the central nervous system to stimulate a response. Healthy white matter keeps the central nervous system working effectively and may reduce risk of learning disabilities as well as impaired motor functions.

The educational benefits of reading are widely known. But reading also provides a host of other benefits.

The hottest day in recorded history is July 10, 1913, when temperatures soared to 134 F at Furnace Creek, Calif. in the area known as Death Valley. In July of 1913, the area was enduring an especially scorching heat wave, as temperatures exceeded 125 F for more than a week straight. By July 10, the temperature peaked at 134 F, a temperature that was measured at a weather observation post at Greenland Ranch. Interestingly enough, the high for the day was just one degree cooler than the thermometer at Greenland Ranch was capable of measuring.

Though Death Valley still holds the distinction it earned on that especially hot day in July of 1913, for much of the 101 years since it was not officially recognized as the record holder thanks to an erroneous report of a 136 F degree day in Libya in 1922. That error, which was blamed on the inexperience of the weather observer and outdated equipment, was eventually corrected by the World Meteorological Organization in 2012.

Home Savings adds the personal touch to mortgage lending

By DEB HERMAN Home Savings Advertising Director Shopping for a home mortgage can be confusing. Most banks have very similar rates and fees, so what should you look for when choosing a mortgage lender?

“Look for a real person, someone you can connect with,” said Rick Baylor, Area Sales Manager for Home Savings & Loan. “A lot of banks today don’t even offer you a personal meeting, just a phone call or email contact. That’s what makes Home Savings so special,” he explained.

Home Savings has been in this market for about 10 years with a mortgage office in Worthington, initially working mostly with builders and their clients. “But now we’re growing more into the consumer market, focusing on reaching out to individuals looking for a mortgage that’s not only competitively priced, but also competently managed by an experienced loan officer with a personal touch,” said Baylor.

The bank’s loan officers will meet with customers at their convenience … evenings, weekends, whenever and wherever is good for the customer. “Like most other banks, Home Savings offers the convenience of applying online, but if you want to meet with a loan officer that option is always open,” said Baylor.

Of course Home Savings offers loans for purchases and refinances, but the bank does offer a couple of programs that are unique. The bank has a construction/permanent mortgage product that allows for one loan closing; the construction loan converts to a

regular mortgage upon completion of the home. “We have discovered that our program is somewhat unique; not too many banks offer construction/ perm loans now,” Baylor explained. “And, qualified applicants can get a really low down payment, lower than most other mortgage loans.”

Home Savings has a special FirstTime Buyers Program, too. The program offers low down payments (which can be gifted to the borrower), no mortgage insurance costs and no income restrictions. “This program makes it affordable for someone who’s still renting to become a homeowner,” said Baylor.

How to grill the perfect burger Could any food be as simplistic and delicious at the same time as a patty of beef on top of a crusty bun, served with lettuce, tomato and your choice of condiments? Burgers are the go-to item for barbecues, campouts, fast-food meals and late night trips to the diner. A juicy burger can satisfy so many cravings in one sitting.

If ever there was a recipe to master, it would be grilling the perfect burger. Though barbecued burgers may seem easy to make, all too often burgers are botched by a few mistakes. But don’t worry, burger mastery is within reach if you follow these simple tips.

• Begin with fresh meat.

Freshly ground meat will produce the best flavor. If you are unsure when the packaged ground beef was made, ask the butcher or someone in the meat department of the super-

market to grind you up a fresh batch. Otherwise, use a food processor or an attachment on a stand mixer to grind the meat yourself.

• Fat has flavor. If you’re going to indulge in a burger, make sure it has a fair amount of fat content. Fat helps keep the burgers moist and juicy.

Make sure the fat content is about 18 to 20 percent of the mix. This helps to guarantee flavorful burgers.

• Keep the meat cold.

Chilled burger patties will firm up and hold their shape better during cooking. Leave the premade patties in the refrigerator until the last minute. Keep patties on ice if you will be cooking burgers in batches.

• Don’t overhandle the meat. Compressing the meat and handling it too much can lead to dry, dense burgers.

Avoid tough meat by handling it as little as possible. Keep

your hands wet while shaping the patties so they’ll come together easily.

• Oil up the grill. A clean, well-oiled grill prevents burgers from sticking during cooking.

• Make sure the grill is super-hot. The goal is to cook

burgers over high heat and fast.

This is achieved with a very hot grill. It may only take three to five minutes per side to cook the burgers, depending on the thickness of the patty.

• Flip only once. Wait until the burgers have been grilling for a few minutes and release

• Check the wood.

Split or decaying wood is a trouble spot that will need to be addressed.

• Inspect support posts. Support posts should be firmly connected to the beams below the deck floor. Loose connections between the support posts and beams should be tightened, and replace any bolts that need replacing.

• Inspect the surface. The elements can be harsh on a deck, so inspect the surface to ensure there is no buildup of mildew, power washing any areas where mildew has started to accumulate. Deck inspections ideally should be performed in spring before homeowners host their first get-together, and if any problems are discovered, everyone should steer clear of the deck until those issues have been addressed.

cups half-and-half or milk large egg yolks cup sugar ounces butterscotch chips, divided cup heavy whipping cream teaspoon vanilla extract

Prepare a large bowl or pan of ice water.

In the top of a double boiler, heat the half-and-half over simmering water until steaming. In a bowl, whisk the egg yolks until blended, then whisk in the sugar.

Whisk in about half of the hot half-and-half and pour the yolk mixture into the pan of half-and-half. Stir with a silicone spatula or spoon and cook over simmering water for about 8 minutes.

Stir in 1 cup of the chips and continue stirring until blended in and the custard coats the back of the spatula, about 2 minutes more. Immediately place the custard pan in the ice bath and stir the custard occasionally until it cools to room temperature. Transfer to a container and stir in the cream and vanilla. Cover and refrigerate until thoroughly chilled, about 3 hours.

Freeze in an ice cream maker according to the manufacturer’s instructions.

When the ice cream is almost frozen, add the remaining 1 cup chips and churn until blended in, about 15 seconds more. Transfer to a container, cover and freeze until firm, about 2 hours.
