Meet Kory Nelson, candidate for Douglas County School Board

Parker resident Kory Nelson has filed with the Colorado Secretary of State’s Office as a candidate for Douglas County School Board director for District F. The region encompasses Parker and nearby unincorporated areas.

Nelson was born and raised in Fremont, Nebraska, where his parents worked as public school teachers.

He served in the Army prior to receiving a degree from the Sandra Nelson Day O’Connor College of Law at Arizona State University. He’s been a prosecutor for the City and County of Denver for 30 years.

Nelson’s wife, Kim, works as a reading recovery literacy specialist for the Douglas County School District, and his daughter, Alyssa, is a junior at Legend High School in Parker. The two of them, he said, are the reason he’s running for a seat on the school board.

“I’ve been passionate about this because the two most important people in my life are in these schools every day,” Nelson said.

His priorities for the school district are first and foremost safety, teacher retention and parent engagement with the school board.

He plans to spend the months leading up to the November election engaging with the community.

“I’m going to be knocking on a lot of doors, talking to a lot of parents and teachers who will talk to me,” Nelson said. “I think we’ve got great bones for a good school system, but I think we can do better.”

Meek was employed with DCSD from 2005-11, during which she created the Apple Awards teacher recognition program, developed the Digital Educator Program for teacher profesMeek sional development and launched the Girls and Women in Sports Luncheon. She was a spokeswoman for the district from 2009-11, and she ran for the school board in 2011.

Meek served as president of Eldorado Elementary School’s parent teacher organization and chair of the school accountability committee at Northridge Elementary School. Her two children attended the Highlands Ranch schools and graduated from ThunderRidge High School.

“Given my passion for public education and serving,” Meek said, “I really can’t imagine a better volunteer role for me at this time in my life.”

Meek, who was born and raised in Florida, double-majored in international business and management, with a minor in French, at James Madison University, and received an MBA in business economics and public policy from George Washington University.

Meek is the director of strategic engagement and communications at the Colorado Association of School Boards. Her role includes working with administrators and school boards across the state.

Her professional background and volunteer experience prompted her to run for school board.

“Serving on the board has always been something I knew I would end up doing at some point in my life,” she said. “I am absolutely passionate about public education.”

Her priorities for the district include: ensuring safe and welcoming schools with stable teaching and learning environments, ensuring equitable learning opportunities for all students and ensuring the focus is on all kids.

She plans on spending the next few months engaging with the community.

“I’m certainly encouraging everyone to reach out and share their views of where they think the district should be headed,” Meek said.

Douglas County School Board Director Wendy Vogel will not be running for reelection this November, she announced in a public Facebook post on July 26.

“It has been my privilege to serve in this capacity for the last 4 years,” she wrote in the post. “I am incred- Vogel ibly proud of all that we have accomplished on behalf of the students and staff of DCSD. Thank you for entrusting and sup-

porting me in this role.”

In the post Vogel announced that she is supporting Susan Meek, a former DCSD spokeswoman who is running for Vogel’s seat, District A, which covers western Highlands Ranch.

“Susan has been a mentor to me, someone from whom I have sought counsel and guidance while serving on the school board,” Vogel wrote. “I am confident that she will continue the forward progress our board has made.”

Directors David Ray and AnneMarie Lemieux remain undecided on whether they plan to run for reelection, Ray said in an email correspondence.

A sneak peak of the Harvie Open Space The Douglas Land Conservancy offered a private tour of the site

Just off East Mainstreet and Canterberry Parkway, the Harvie Open Space sits almost completely untouched and preserved with more than 71 acres of Colorado grassland at the heart of Parker.

The former ranch of the late Ray J. Harvie will soon be a place for residents to escape the bustle of the metro area while not having to venture too far from home. In the open fields and on top of rolling hills are breathtaking views of the Front Range and the town.

The project was put on hold last year due to flattening growth in sales tax funding for capital projects. Due to great public interest, the Douglas Land Conservancy, a nonprofit which ensures the property is maintained properly, will begin scheduling private tours of the space over the next couple months.

It’s undertermined when at this point when, but the space will eventually be open to the public, said Brian O’Malley, the town’s representative on SEE OPEN SPACE, P10

Wildlife have wandered through the Canterberry neighborhood for years knowing the Harvie Open Space is a sanctuary from humans. The black bear that had been roaming through Parker for two weeks in June spent some time at the Harvie Open Space as he cut through Canterberry.

The Harvie Open Space is 71.5 acres of preserved Colorado foothills just southeast of downtown Parker at the intersection of East Mainstreet and Canterberry Parkway.

Parade means fair is on way

hildren dashed into the street to grab candy. Friends shouted and cheered from the sidewalk for those they knew on the many floats. Local officials and business owners waved to the crowds. And there was no shortage of fun at the 2019 Douglas County Fair Parade in downtown Castle Rock.

The event wound through streets lined with lawn chairs and people standing wherever they could. More than 75 entries ranging from bands to businesses to fair organizations kept the event lively. Presented by the Castle Rock Chamber of Commerce, the parade is the annual kickoff to the Douglas County Fair and Rodeo, which begins with a full schedule on Aug. 1.

Lauren Riendeau held her 1-yearold daughter, Maddie, on her shoulders as her husband, Austin, and 4-year-old son, Hayden, watched the parade nearby. Riendeau graduated from high school in Castle Rock but moved away for a number of years.

The couple moved back when they had children.

They were enjoying their second time attending the parade, she said as an excited and smiling Hayden shouted from the sidewalk to parade floats, “Give me candy!”

First responders make impactful trip for D-Day Marking 75 years since battle sends local men home with life lessons

Lt. Tommy Barrella, of the Douglas County Sheriff ’s Office, vividly remembers his trip to France with the Colorado Emerald Society Pipe Band in June, where the musicians helped mark 75 years since the battle called DDay began. There, the group of nearly 30 police and firefighters performed at more than a dozen remembrance ceremonies scheduled for the milestone anniversary.

As the band went from one event to the next, they saw local residents waving American flags in recognition of Americans’ role within the Allied troops before, during and after June 6, 1944, when soldiers stormed the beaches of Normandy during World War II. By the battle’s end, an estimated 10,000 Allied troops were killed, wounded or missing.

Barrella, a base drummer in the band, was struck that decades later people from a different country took time to honor Allied soldiers. For others on the trip, it was a lesson in humility and respect for veterans. One thing they had in common — weeks later each were still beaming with pride and gratitude at having gone on what they called a once-in-a-lifetime experience.

He recently closed 30 years with South Metro Fire Rescue and is now fire chief for Front Range Fire Rescue in Weld County.

West helped lead the trip, which included personnel from South Metro, the Castle Rock, Arvada and Adams County fire departments and the Douglas County Sheriff ’s Office. Band members left May 29 and returned home June 10, arriving first in Frankfurt, Germany before traveling throughout the region and ending in Paris.

“It was definitely not a tourist trip at all, which was fine. That’s not what we were there for,” said Castle Rock Fire Rescue Lt. Adam Gallegos, who plays bagpipes for the band and lives in Thornton. “We were up early every morning, we got home late.”

The band traveled to locations widely known, and those that aren’t.

That included the Brittany American Cemetery in St. James, France. World War II veterans told West they referred to Brittany as “the forgotten cemetery,” because most people visit Omaha Beach when in the area.

The 28-acre Brittany cemetery is where 4,405 war dead are laid to rest.

Most died in the Normandy and Brittany campaigns of 1944, according to the American Battle Monuments Commission.

On June 7, the band traveled to Omaha Beach, and the following day played at Sainte-Mere-Eglise, where paratroopers unintentionally landed during D-Day. The local church is known for the story of paratrooper

Steele hung from the church for hours until German soldiers captured him.

He later escaped and survived the war, according to The Airborne Museum in Sainte-Mere-Eglise.

Gallegos, West and Barrella all pointed to this stop as one of the most memorable moments of the trip. As the band played “Amazing Grace” during a performance, something unusual happened. The crowds, estimated in the thousands, began to sing with them.

“The people in the square were singing louder than we could play,” Gallegos said. “That gave me goosebumps.”

West said the trip was meaningful for everyone, but particularly those with a personal connection.

“A number of our band members had relatives that fought on D-Day as well as the other battles around that time in World War II,” he said. “Including one of my bass drummers from Adams County that actually found the grave of his father’s cousin.”

Most impactful for West was meeting veterans who fought during D-Day and hearing their firsthand accounts of the battle.

“What struck me about their stories was that most of them had volunteered to go to war at age 16, 17,” Gallegos said.

“They had to beg their parents to sign off the military stuff and they actually had to get permission from the schools.”

All three men noted the beauty of the Normandy area. Omaha’s sandy beaches, rolling green hills and a resort-like town where children built sand castles by the ocean — a town that might have been a tourist destination were it not for the devastating history, Gallegos said.

Barrella imagined nurses in the middle of a war zone treating wounded, soldiers piling onto the shore from boats, no better than sitting ducks, the injured sinking to the ocean floor, soldiers trying to scale cliffs, and recalled peering at 75-year-old craters that remain on the beach from “the massive battle that went on.”

‘A gut check to where we have gone’

“You think about what took place there. It’s surreal. It really is,” West said.

West said the trip reminded him to fervently honor World War II and D-Day veterans, whose time on earth is dwindling.

“They’re passing on in such a

huge number right now,” West said.

“They’re that age.”

For Gallegos, the trip sparked a desire to keep on playing, and to keep honoring veterans’ sacrifices.

“I hope to still be playing by the 100th anniversary,” said the 38-year-old Gallegos. “I’d love to go back.”

One-ring scam calls back in circulation STAFF REPORT

The 18th Judicial District Attorney’s Office has seen a sudden spike in the number of complaints from residents receiving one-ring phone calls over their landline and cell phones, according to a news release.

The way the scam works, according to the release, is that the phone rings once, then abruptly cuts off before the person has a chance to answer, leaving only a missed call notification. The call is then followed by repeated calls that happen either in a short sequence or over the course of a day. The calls always display the same call-back number.

Victims who call back — either because they are curious about the number or because they think someone is trying to get through but keeps getting cut off — are put on hold by an operator before realizing that no one is coming on the line. The call is, in fact, an international call to a scammer, who collects long-distance fees billed to the victim. Fees include a connection charge of $35-$40 and fee-perminute charges.

The scam is not usually discov-

ered until the victim gets a phone bill. Fortunately, the fees can be deducted if it is reported to the phone carrier when the bill comes in, the release said.

Other signs of a potential scam are that the caller ID number is prefaced by a three-digit number resembling an area code that could be construed as any U.S. code. However, such calls often originate in other countries that also use threedigit area codes.

Other numbers also might be spoofed to appear local.

To remove charges, look for long-distance calls listed on the bill as premium service, international calls or a toll call. Report to the phone carrier the date of the scam, the details of the scam and the phone number that appears on the caller ID, and ask to have the charges deducted. If you do not anticipate needing international phone call service, request that your phone company remove the feature from your plan.

So long, sweet summertime: The Douglas County School District welcomes most students back on Aug. 7. That date may differ for DCSD charter schools and kindergarten programs, and parents are encouraged to confirm the date for their child or children.

To ease some of the usual, backto-school stress, we’ve provided five changes for families to be aware of.

More counselors Douglas County schools will see more mental health resources thanks to a $40 million mill levy

override passed by voters last November. Of that amount, $6 million has gone toward hiring 85 additional counselors.

At the start of the school year, each elementary school will have a counselor, and the ratio in middle and high schools will improve from one counselor per 350 students to one counselor per 250 students.

Construction Also passed by voters last November was a $250 million bond, which is going toward critical building repairs, new construction and safety measures.

Upcoming projects include a 25,000-square-foot addition to Castle View High School in Castle Rock, which is over capacity by more than 360 students. The $13.2 million project is expected to begin this December and be completed by December 2020, according to district documents.

Schools including ThunderRidge High School in Highlands Ranch, South Ridge Elementary in Castle Rock and Iron Horse Elementary in Parker are scheduled to receive roof repairs and control system improvements.

School resource officers The upcoming school year will see more security following the shooting at STEM School Highlands Ranch.

The Douglas County Sheriff ’s Office — which already provides 11 school resource officers to local schools — will add five SROs to middle schools, two to charter schools, and expects to convert seven school marshal positions into eight more SRO positions for elementary schools

by December. Additional sergeants and detectives will support the SROs, according to the sheriff ’s office.

The Parker and Castle Rock police departments each provide three resource officers to schools in their community. Each department recently received council approval to add one SRO in the school district, bringing their counts up from two.

Car seat safety checks offered at free event Mothers of Multiples Society brings in certified technicians to inspect seats and provide information STAFF REPORT

Certified child passenger safety technicians will offer free car seat checks and discuss proper use of a car seat, including installation, daily use, and car seat selections at a free car seat safety event in August.

The semiannual event, hosted by the Mothers of Multiples Society, is Aug. 17 at the Douglas County Fairgrounds, 500 Fairgrounds Drive in Castle Rock. No appointment is necessary. Drop-in times are between 9 a.m. and 1 p.m.

Car accidents are the number one cause of death in children ages 13 years of age and younger, according to a news release. According to the American Academy of Pedi-

atrics, “for every fatality, roughly 18 children are hospitalized and more than 400 are injured seriously enough to require medical treatment.”

More than 90 percent of car seats are not used correctly, the release said, which is why MOMS hosts the event. Whether you have an infant car seat, a convertible car seat, or a booster seat, MOMS invites you to meet one-on-one with a certified technician to ensure that your child is safe.

“Only certified child passenger safety technicians are trained in the most current child passenger safety practices,” Erin Brill, certified technician and MOMS member, said in the release. “Child passenger safety is not part of standard training for medical professionals, law enforcement, fire departments, etc.

A certified child passenger safety technician is the best resource for car seat information.”

hen Chopin — one of my favorites — died, he began to decompose.

No one is born with a sense of humor, and you can’t order one online. Some people are funny and some people aren’t.

Some people who think they are funny, aren’t.

One of my sister’s husbands thought he was funny. Being around him was painful. I had to bite my tongue.

His jokes about German sausages were the wurst.

He said he worked at a bakery because he “kneaded the dough.”

This isn’t going to get any better. My friend Barb Dwyer sent me a bunch of puns, and now that I am through

groaning, I thought I would pass them on to you.

There is no such thing as a “funny bone.” Your upper arm bone, however, is called the “humerus,” a homophone of “humorous.”

But tibia honest with you, I know a skeleton who can Craig Marshall predict bad weather.

Smith He can feel it in his bones.

All seriousness aside, I took a communism class in college. I am afraid I didn’t do very well. I got bad Marx.

QUIET DESPERATION

I had a beard in college. After all, it was the 1960s. I didn’t like it at first, but it grew on me.

I met a girl the other day who said she recognized me from a vegetarian club, but I’ve never met herbivore.

When E.T. finally made it back home, his mother said, “Where on Earth have you been?” Isn’t that just like a mother?

My mother once ordered 2,000 pounds of Chinese soup. It was won ton.

I couldn’t remember how to throw a boomerang, but eventually it came back to me.

When we met, I told Jennifer, “I’m no photographer, but I can picture us together.”

I told her, “I was once caught stealing a calendar. I got twelve months.”

A friend of mine is a mathematician. Ironically, he’s afraid of negative numbers, and he will stop at nothing to avoid them.

I wrote something for the stage about puns. It’s a play on words.

I just found out I’m colorblind. The news came out of the purple.

I went to see the doctor because I thought I was invisible. The nurse came out and told me, “The doctor can’t see you know.”

On the way out of the clinic, I heard two doctors joking about sutures.

They had each other in stitches.

Results needed on school safety What happened to the days when kids could freely come and go to school, be instructed on reading, writing and arithmetic with teachers responsible for teaching, testing and grading? It wasn’t complicated, but now we’ve got professionals calling for metal detectors, roaming security guards (SROs) and counselors who want children to openly discuss their mental health. We’ve also got a school board that hired a superintendent for the sole purpose of selling a tax increase for a $250 million bond in 2018 but now can’t afford to match the county’s requirement for $3 million matching funds for security.

Sometimes we get so caught up in either one or the other, it’s our success or our perceived failure.

And it’s not until we are reminded to consciously think about it that we remember that the two really do go hand in hand.

And all too often our perceived failures become our realities. You might agree that when that perception becomes our reality, maintaining our motivation and enthusiasm becomes hard, and even harder with each failed attempt.

A failed attempt is exactly what it is, a failed attempt. It is not failure at all, it’s just one more opportunity to test our enthusiasm and resiliency. I don’t know about you, but if I have a failed attempt at anything, I just can’t wait to try again. A lost sale? Show me the next prospect.

A missed basket? Give me the ball again. A sliced drive? I’ll take it as I am hitting three off the tee. I just can’t wait to get back in the game.

It’s a sense of wanting to try again, it’s a feeling that even

though we lost or made a mistake, we ask to be put back in the game or we put ourselves back in the game.

Failure isn’t failing, its actually just putting us back in a position to want whatever it is we failed at or lost even more. It WINNING drives us to a place of fortitude.

WORDS Now, if the “it” is something we do not have passion for or a task or event where we were half-hearted from the beginning, that is a different story. Because if we think Michael Norton we failed there, we didn’t. I say that because if we are not connected to the outcome physically, spiritually, or emotionally, then it was just something we tried and nothing more. No failure here.

The role of a grandparent is often versatile and everevolving as the child grows older and expresses different interests and needs.

To children, grandparents can be mentors, chefs, historians, artists, coaches, confidants, playmates, storytellers and so much more.

Due to medical advances, people are living longer and healthier lives, increasing the number of grandparents in the world and creating more opportunities for deeper and enduring intergenerational bonds between the generations. The impact and difference a grandparent can make in a child’s life is invaluable and can sometimes be underestimated due to ageist beliefs.

Grandparents should not underestimate the effect they can have on their grandchildren and the valuable role they play in their family.

Stories passed down among the generations are often divided into three categories: directive, social bonding, and personal identity. Directive stories are often those that convey feelings of regret about past mistakes or missed opportunities, relaying the age-old adage of “don’t do what I did.” These help children learn from their elders’ past mistakes and how they can apply these lessons in their own lives. Social bonding stories revolve around happier memories, often centering around family traditions, celebrations and shared interests. These stories teach children

When we get knocked down or slowed down — and it will happen — I hope that we will remember that failed attempts are awesome. They are never a reason to quit — they are the exact opposite, failed attempts are the reason we push forward, they are the fuel behind our passion and drive to succeed.

The wonderful thing about storytelling is that it doesn’t have to be an isolated activity. These conversations between generations are often sparked by activities they’re doing together, whether it be passing down family recipes while baking together, sharing stories behind photographs while scrapbooking, or demonstrating how they coped with the loss of a baseball game while playing catch together. So, if you’re wondering where to start with the types of stories or lessons you want to pass on to your grandchildren, it can be helpful to first determine what activities you’re both interested in and go from there.

ily stories can be told nearly anywhere.

They cost us only our time, our memories, our creativity. They can inspire us, protect us, and bind us to others. So be generous with your stories, and be generous in your stories. Remember that your children may have them for a lifetime.”

The chew yonder Edible and medicinal plants can be found growing around metro area

ost people would look at a backyard filled with weeds and see a problem. Kate Armstrong sees a feast.

Armstrong is an urban forager — someone versed in wild edible and medicinal plants of the urban environment. She leads nature walks and seminars that teach people a new way to look at the plants in their midst.

“People are astonished when they find out how much food is all around us,” Armstrong said. “Nature isn’t here to hurt us, it’s here to give us everything we need.”

Indeed, in the course of a short stroll through a Lakewood back yard, Armstrong pointed out dozens of plants growing in sidewalk cracks or along fences with uses ranging from salad greens to treating toothache.

There are very few toxic plants in our region, Armstrong said. Most plants are technically edible, it’s just that most don’t taste very good.

For novice foragers, though, Armstrong recommends a few highly common — and highly tasty — plants that abound throughout the Denver area.

There’s purslane, a low-growing weed with thick leaves and meaty stems, which can be eaten raw in a salad, fried in stir-fry, used as a soup thickener, or pickled.

Also abundant is mallow, a roundleafed weed that also makes a good snack when eaten raw, but also provides chewy seedpods that Armstrong calls “cheeses.” The stems can be roasted and eaten like pretzel sticks, she said, and the bigger leaves can be used as mini-serving trays for hors d’oeuvres.

Lamb’s quarter grows in moist, disturbed soil, and produces leaves with a mild, lettuce-like taste. A single lamb’s quarter plant can provide months of salad greens by snipping off tender young leaves, Armstrong said.

Dandelion greens are best eaten raw, Armstrong said, and are excellent for detoxing the body.

Even bindweed, the bane of so many gardeners and lawn lovers, produces tiny white flowers with a delicate, floral taste that make an elegant garnish in a salad, Armstrong said.

Only a couple plants common in our region are poisonous, Armstrong said.

One is hemlock, which grows in moist soil and produces spindly, wispy leaves that are hard to tell apart from carrot tops. The other is death camas, which looks similar to wild onion or wild

Burger said. “We’re starting to move past our diets of overly processed foods. It’s empowering to feed yourself or heal yourself from things in your landscape. These are things our ancestors knew, and they still work today.”

Purslane, a common garden weed, tastes great in stir-fries. garlic, but doesn’t have their characteristic savory odor.

A more common problem, Armstrong said, is herbicides and pesticides. Urban foragers should try to ensure that the place they’re gathering from hasn’t been sprayed to keep weeds and bugs down, she said. That’s easy in your own back yard, but when foraging along roadsides or other wilder places, a key is to watch out for areas with monocultures — where only one type of plant is abundant.

That’s often a sign that sprays are in use.

The safest bet, Armstrong said, is to let your own yard go wild, which will also help it become a haven for pollinators and other wildlife.

“This can be a really fun hobby, and a great way to reconnect with nature,” Armstrong said. “And, who knows? If push comes to shove, it’s knowledge that could come in handy.”

Hit the trails Beyond the back yard, Colorado provides all sorts of edible goodies, said Blake Burger, a horticulturist with the Denver Botanic Gardens.

Spruce tree tips are high in vitamin

Bindweed flowers have a delicate floral taste.

C, Burger said, and make a tasty tea, or an addition to herb butters or marinades for fish and chicken.

Currant berries are plentiful in the region, Burger said, and make delicious syrups and jams.

Rose hips, the pink or red seedpods left behind after the flower dies, are also high in vitamin C and make a distinctive sour, floral tea.

It’s important to harvest wild edibles ethically and consciously, Burger said.

As a rule of thumb, try not to gather more than 10% from a single plant, or from a patch of plants.

Interest in wild edible plants is growing, Burger said. He leads the Denver Botanic Gardens’ new herbalism certificate program, which covers how to use a variety of wild and cultivated plants for health and medicine.

Burger, like Armstrong, is tied into the flourishing community of urban foragers in the Denver area. There’s a lot of activity in the subculture these days, Burger said, with classes around the metro area filling up quickly.

“I think people are starting to experience a shift in their vision, and are realizing natural is the way to go,”

Do it right While Burger and Armstrong said the best place to forage is on land you or someone you know owns, so you can be sure of herbicide use, it’s possible to forage in other environs.

There’s no specific rule against gathering wild edibles in most of the parks in the South Suburban Parks and Recreation District, said Skot Latona, who manages South Platte Park in Littleton. It’s against the rules to gather in South Platte Park itself, though.

While gathering a few berries or leaves isn’t going to get you busted, Latona said, “the behavior would be judged on observed damage to park property. Don’t go digging up roots, disturbing soil or removing entire species.”

Wild edibles are everywhere in South Suburban properties, said Victoria Sutton, an interpreter at South Platte Park, including wild asparagus, chokecherries and wild plums.

But, she said, consider your impact on your fellow animals when you forage, Sutton said.

“It’s fun to take a nibble here and there, but those plants can be a matter of life and death for wildlife in our area,” Sutton said. “Don’t go hauling basketfuls of material out of parks.”

Even for those not hitting the trails, there should be lots to munch on this year in back yards alone, Burger said.

“It was a wet spring, and plants are delayed in their growth, but strong” Burger said. “If you’re going to get into urban foraging, this is a good year for it.”

‘Cutthroat Kitchen’ winner hired by Laszlo Hotel Leah Eveleigh will take on the role of executive chef of the Laszlo’s three restaurants

A former “Cutthroat Kitchen” champion and local private chef has been hired as the Laszlo Hotel’s executive chef in charge of its three restaurants.

Leah Eveleigh, of Highlands Ranch, will oversee all cooking operations at downtown Parker’s coming boutique hotel, including for the hotel’s built-in restaurants: Rick’s Prime Steak and Seafood, Martinis on the Half Shell and The Upper Deck. Eveleigh runs a private catering business serving mostly Filipino cuisine. Eveleigh moved to Colorado from the Philippines about 20 years ago.

“There’s no Filipino food around here. I have clients say ‘Leah, I can’t afford to have you cater all the time.

Where can I get your food?’ That’s what I’m excited about,” Eveleigh said. “I’m in my happy place so you can come now and I can cook for you.”

The Laszlo Hotel is nearing completion. According to hotel officials, they will begin hiring staff in the coming weeks and already have different events

planned for the fall season and a New Year’s Eve bash.

The Laszlo will cover a variety of cuisines, from seafood to breakfast burritos; oysters to burgers; draft beer to hand-made martinis. Eveleigh hopes to sprinkle in Filipino favorites alongside the traditional steakhouse classics and fan-favorite pub foods.

Eveleigh will serve Filipino eggrolls as an appetizer and an “ahi tuna tower,” which Eveleigh said fits her vision for the hotel of being a place to find trendy foods.

“Every day, it’s going to be like `Wow. That’s something that’s unique,’” Eveleigh said. “It’s going to be the place to be…It’s going to be awesome for Parker because there’s nothing else like it.”

The restaurants will have standard menus — with steak, seafood, burgers — accompanied by special seasonal menus.

Some of Eveleigh’s unique Filipino creations can be found there. The Laszlo Hotel will include special off-menu items as well for those in the know.

“Laszlo is a lifestyle. It is an event,” said Candice Coleridge, the Laszlo’s director of food and beverage. “Every time you visit us, from the moment you walk in, we’re not just a place you go stay or go dine or go experience, and that’s really important. I want something that passes your table and you say ‘I want that. I need to be a part of that.’”

Eveleigh hopes to make the Laszlo a trendy place for people from all over the

area. But, she said, she took this job because she wants to share her creations with her neighbors in the community.

How I got started cooking When I was little, my mom was always cooking something... Being little, I would just tag along and see what she was doing. I didn’t really have any intentions of cooking in the future. Somehow, it made sense to me, that passion. No matter how poor we were, when we would have guests, we would feed them. We would make something and that was the hospitality we had to offer — food. It took me a while to realize “I like to cook too!” So I started to experiment as a little girl.

My advice for young chefs Follow your heart. Follow what you’re happy doing and really pursue that. Listen to yourself and shut out all the other noises. Be yourself and be in tune with that voice inside you, whatever that may be and just go for it. Work hard as much as you can. At the end of the day, do one more thing. My thing is doing 110%. If I miss that last 10%, it (negates) that 100%. Really, pursuing what you’re passionate about and never, ever give up. Put yourself out there and take a risk. Show up. Be punctual.

What I learned from winning Cutthroat Kitchen Without formal training, I went into this competition, being filmed and all that, and won. So, (I thought) what are other things I can do to really step up? I enrolled myself into culinary school.

I had a scholarship at the Auguste Escoffier of Culinary Arts in Boulder. I did that full-time. It was amazing how it opened my eyes to classical French technique and the farm-to-table concept.

That’s how I became more of a seasoned chef. I really had a lot of time to talk to myself to see if that was something I wanted to do.

Two articles in last week’s paper by Jessica Gibbs and Alex Dewind demystify as much as possible the $10 million for a one-time expenditure set aside by the county government for school safety. You can also watch a video on the county’s web site of the 16 July meeting about committee recommendations. Don’t look for facts or anything concrete from the professionals, but you can trust Commissioner Roger Partridge, who clarified that the process is only beginning.

Drag-racing plot thickens in thin air

“Although we’re all competitive guys, at the end of the day there’s a brotherhood of coaches,” Cohen said.

“I really feel the more successful kids are in a sport by learning how to play the right way, the longer they’re going to stay with it, and it’s a way to keep kids in the sport.”

It doesn’t matter if it is baseball, golf, tennis, football, basketball or any event you choose, because there will probably be some mention about the impact of the altitude.

The National Hot Rod Association came to Bandimere Speedway for the Mile High Nationals on July 19-21, and naturally the altitude forced adjustments that both the crews and drivers had to take into consideration.

OVERTIME Many teams only use parts specifically for Bandimere.

Crews have to deal with tuning, blower and piston changes, and the parachutes work but react different than at sea level. Drivers also Jim Benton have to adapt.

Funny car driver Tommy Johnson Jr., who once lived in Denver for six months, says he comes to Colorado early each season and makes adjustments to get more sleep and makes sure he stays hydrated to help avoid fatigue.

Matt Hagan is a physical fitness enthusiast who drove the 2018 Charger Funny Car and jokes about having to climb stairs.

“I come early because I have to walk up the stairs and I’m sucking wind,” he said. “I don’t want anybody to see me sucking wind. You have to get acclimated to the altitude.

“I work on my mental game a lot as far as being mentally and physical fit to drive the race car. You have to be super focused up here. At the end of the week, I’m ready to get off the mountain. You can’t get water fast enough. It’s a challenge.”

Crews were tested all week.

“It’s a huge challenge but it’s fun because it’s the biggest challenge we face all year,” Pro Stock driver Greg Anderson told NHRA.com. “Everything is different. We basically lift the gas cap up and slide a new car underneath it. We change gearing, suspensions and just about everything else you can change.”

Anderson won Mile High Nationals championship and talked about the effort it took from his team to win a Wally trophy at Bandimere.

“Everybody did their job and the car was flawless,” he said. “This has been the only track I’ve been able to win at the past two years.

‘We want this sport to thrive’ Parker high school coaches come together for Hawks youth camp

yker Thompson lives and breathes football.

The 13-year-old from Parker recently came back from shoulder surgery and at a Parker Hawks youth football camp July 17, Thompson said he already has his sights set on winning an Arapahoe Youth League Super Bowl. Last year, his team came up short in the final round.

“I’m just trying to be the best one out here,” Thompson said.

The sun fell behind the mountains as the two waves of kids transitioned, but not before a group photo of all 327 of them together. Thompson was one of the athletes at what was day three of the four-day Parker Hawks pre-season training camp.

Athletes from throughout the town — and even a few from Castle Rock to Aurora, Elizabeth to Highlands Ranch, and everywhere in between — converged on the hill at EchoPark Stadium to get back into football.

For years, each head football coach would host their own youth camp.

This is just the second year it has been hosted by the Parker Hawks, the town’s youth football program

For Thompson, who plays linebacker and wide receiver, it was a chance to lay a hit on his friends again. But this camp is also one of the only chances that local players will have to train with coaching staffs from all four Parker high schools at once.

And it’s a rare collaboration between crosstown rival head coaches to lay the groundwork for a stronger football identity in Parker.

“It’s a neat challenge to come here. People don’t understand what you have to do with these great cars to perform at Bandimere.

“They are not built for racing here. We build these race cars for 1,400, 1,500 horsepower. The driver, because of the fact you lose 300 horsepower, you have to jam all kinds of gear ratios into the car to make it think it has more power.

It makes a tough challenge for a driver and it takes three or four runs to get the driver in sync.”

At one station, players were catching passes from volunteer quarterbacks from Legend High School. After about 15 minutes, each group of 10 or so campers rotated to the next coach with a different approach to the game.

“It’s unparalleled. Other organizations…that have seen what we’re doing and tried to emulate it are unable to because these coaches aren’t willing to collaborate because they think they’re infringing on each other’s territories or players,” Fields said.

“Our coaches have come together, as a community, to say `We are out here in the best interests of the sport. We want to see this sport thrive.’”

Best football programs MaxPreps has rated Colorado’s high school football programs over 10 seasons from 2009-18.

The programs were assessed on finishes in state, national rankings and title game appearances.

Public Notice REQUEST FOR PROPOSAL (RFP) #020-19 DOUGLAS COUNTY MENTAL HEALTH INITIATIVE COMMUNITY RESPONSE TEAM TRAINING for LAW ENFORCEMENT Douglas County Government, in partnership with the Douglas County Mental Health Initiative Community Response Teams, is seeking a mental health professional to provide training to law enforcement in Douglas County. The training should focus on improving the understanding of mental illness, levels of care, and trauma informed language, emphasizing the procedures of the mental health system in Colorado (i.e. what it is like for someone to enter through the crisis system on a mental health hold or transportation hold and receive treatment at various levels of care), and provide skills training on recognizing mental illnesses.

The RFP documents may be reviewed and/or printed from the Rocky Mountain E-Purchasing System website at www.rockymountainbidsystem.com. RFP documents are not available for purchase from Douglas County Government and can only be accessed from the above-mentioned website.
