Prior to opening the restaurant in December 2019, married co-owners Kristen and John Porter had a successful consulting business specializing in emergency management exercises with the Department of Homeland Security. Nonetheless, John has had a longstanding dream of melding his fascination with the fermentation process with his vision of opening a restaurant.

“We have lived in the Evergreen community for 17 years,” said Kris Porter. “Each year the topic of restaurant ownership would arise, and I would tell John, ‘No.’” Kris explained that although she, John, an attractive trunk or storage bench you can use as an accent table and as a spot to tuck away clutter.
