Farming when you can’t count on climate
Couple eager to open Fort Lupton greenhouse and market By Belen Ward bward@coloradocommunitymedia.com
Y
ou might say that Len and Sherri Toews’ dreams of Brandywine Farm’s greenhouse and farm market came right off the back of a truck. As a kid, Sherri Toews’ dad would take watermelons and melons from Boulder fields and bring them down south into Denver. “My dad sold melons off the truck. It was when farmers used to sell vegetables off a truck,” Sherri said. It was necessary at the time. Husband Len said it’s a matter of the Colorado climate. We have the sunlight in Colorado, he said, but we don’t have the forgiving climate that lets farmers get their vegetables started early. “In this region — Brighton and Fort

Lupton — they used to have over 600 of what they call truck farmers,” Len said. “These farmers would grow at their farms and take the vegetable to sell somewhere else. They are all gone now. “There is a need for a local farm market, and it’s in our background,” he added. The couple moved from Boulder 10 years ago to purchase a farm in Fort Lupton with a dream to build a large greenhouse and farm market. “There are some large farmers growing onions and cabbage but specific vegetables that you would use every day such as tomatoes, peppers, cucumbers, the softer fruits, they are not in high supply here in this state, and it has a lot of do with our weather,” Len said. Farmer’s goal is to provide quality food Anthony Pacheco’s desire to be a beef farmer was not something he jumped into immediately. But when he did, he went all in. It all depended on finding the right kind of cow to raise, he said. That turned out to be the storied Scottish Highland breed. “This is my first time raising cattle. I did my research, and it’s how I got into it,” he said. “I liked the meat. It’s premium cut meat. It’s leaner and healthier with lots of vitamins and iron than an Angus.” Royal breed Highland cattle were bred in the mountains of Scotland and are considered a docile but surprisingly hardy and diseaseresistant breed of bovine with a distinctive look — a long, reddish coat that can survive rugged, remote and harsh conditions. It’s a slow-growing breed, Pacheco said, which results in a better flavor. “It’s unsurpassed for tenderness,” he said. “That’s why we fell in love with the beef.”
Jinnah Moses, of Brighton’s Highland Cattle Association, said the Scottish Highland Cow’s first herd can be traced back to 1885 by the Scottish Highland Cattle Society. But written archaeological evidence found that the highlander breed goes back to the sixth century. It’s truly a breed of royalty, Moses said. Queen Elizabeth only eats the Scottish Highland pedigree cow. “The Queen raises the pedigree Highland Cow at her Balmoral home,” she said. The breed was first imported into the United States in late 1890, Moses said. City to farm The Pachecos — Anthony, his wife, Christina, and teen children — sold their Denver home four years ago and moved to Fort Lupton. Pacheco’s goal is to provide local quality food for people to eat, and they also raise chickens and sell eggs. Anthony was born in Denver and grew up
in the city until high school. His dad raised hogs, so he had some experience raising farm animals for breeding and production. But Christina was raised in Thornton. Christina said, “I had never dreamed about living on a farm, I love it, and I don’t miss the city.” The family has now lived in Fort Lupton for four years, raising their herd of Scottish Highland cows for the past two years. Before Pacheco moved to Fort Lupton, he told Christina he was interested in buying local beef. Anthony researched and found a gentleman in LaSalle, Colorado, that raised Scottish Highland. “I never tasted it before, and I wanted to try it. They named their farm market Brandywine Farms/Buffalo Farms. Currently, the Toews are working on street signs. The plan is to be the local supply store drawing people from the north suburbs of Denver as well as Denver itself and Boulder. They will have a petting zoo, and during the off-season, they will set up farm tables and offer dinner surrounded by flowers. In addition, they will sell bison meat. Brandywine Farms specializes in hanging baskets, patio pots and 4.5” bedding plants. This summer, they hope to add perennials and vegetable plants, too. They plan to have plants ready by the first week of May. Testing tomatoes
Both are business savvy. Sherri is a CU Boulder graduate with a business degree, and Len is a University of Denver business grad. Len grew up in Canada but has lived in Colorado for more than 30 years. Like his wife, Len was born into agriculture but from a different direction. His dad was a research scientist for plant breeding with Del Monte Foods. “My dad tested hundreds of tomatoe varieties over the years in high-tech green houses,” Len said. “The tomatoes in the store are highly commercial so they ship really well. They’ve gotten better over the years, but there still is a massive difference between a garden-grown tomato and an heirloom tomato. It’s a night-and-day difference.” Colorado is not like other regions of the country because farmers here can’t plant until the first and second week of May.
That pushes the first harvests later in the year. And even then, there are some specific dangers. “We have a pretty harsh climate but last summer was perfect. We didn’t have hail or the crazy rains that come through,” Len said. Farmers cannot count on that every year, and Len said agriculture needs to be protected. They built their 15,000-square-foot large, stateof-the-art greenhouses with a sales area. Not only can they grow vegetable but flowers, too. “The high-tech greenhouse has different stages of cooling, starting with vents that open on the top when we want cool, natural air. As it gets really hot, about 80-100 degrees outside, there’s a wet pad wall on the far side that turns on, and the fans on the opposite wall draw the cool air across the greenhouse.

When the fans go on, the vents close. We can also save on electricity by utilizing the vents first,” Len said. Len said up to 90% of people in Colorado buy their plants from Home Depot, Lowes, Walmart, King Soopers and Safeway. The Toews are targeting the rest, Len said. “We will sell to the independent garden centers, about 10% to 20% of the market,” he said. They plan to sell a combination of wholesale and retail at their own garden center in Fort Lupton, catering to private gardeners in Erie, Dacono, Firestone, Frederick, Hudson and Brighton.
