Stephanie Keck, a Texas Roadhouse marketing coach, said it is exciting to get back to hosting the competitions in the area, given they were canceled due to the pandemic in 2020.
Keck said the Oct. 4 event in Highlands Ranch was a qualifi er competition, which means the winner not only receives $20,000 but also earns to the right to go on and compete in the semi-fi nals. Winners of the semifi nal events go on to compete in the 2021 national competition where the winner is crowned Meat Cutter of the Year.
The semi-fi nals and national competition will be held in Nashville in February.
“At Texas Roadhouse, our professional butchers hand-cut every steak in each restaurant,” said Mike Castaneda, Texas Roadhouse senior product coach. “Our meat-cutting challenge recognizes the signifi cant contributions of our talented butchers and we’re proud to reward and honor these individuals through this national competition.”
With judges constantly watching through the hour, Clint Hacker, the competition emcee, said competitors are judged on width of the cuts of sirloin, fi let and ribeye. They are also judged on muscle-to-gristle ratio, marbling and technique, Hacker said.
Mark Gurger said he drove from Albuqurque to compete in the 2021 competition. While he measured the fat down the center of a cut of meat in preparation of the offi cial start time, Gurger said he has competed several times because “it is really a lot of fun.”
Zuriel Rubio, a native of Mexico, said he currently works in a restaurant in Wyoming. He said he was excited to come to the Highlands Ranch competition, noting this is his sixth time competing in the Slice on Ice challenge.

“I come every year because it is not just about a competition,” Rubio said. “I get to see other techniques and learn from others. I think that is the best part.”
Texas Roadhouse offi cials said it is important to host the competition and constantly encourage consistency among meat cutters. In an average year, Texas Roadhouse butchers cut about $1 million worth of meat and spend between seven and eight hours per day cutting meat in a 35-degree walk-in cooler.
The National Meat Cutting Challenge is part of Texas Roadhouse’s Meat Hero Program, which was created in 2001 to recognize daily efforts of the company’s meat cutters, who hand-cut each steak served at each restaurant.
Since the fi rst Texas Roadhouse opened in 1993, the chain has grown to more than 580 locations in 49 states, including several in metro Denver, and 22 locations in nine foreign countries.

County libraries receive historical, valuable donation

The Archives & Local History (ALH) department at Douglas County Libraries recently received a historical donation from the estate of siblings Robert and Rosemary Metzler of Castle Rock.
The Metzlers were professional educators and third-generation Coloradans whose family history in Douglas County dates back more than 100 years. Both sets of grandparents were early pioneers who homesteaded in various parts of the county.
The Metzler collection was acquired over a period of several months, between May and September, and includes a variety of materials, including books of Western history, fi ction, and art; local and historical cookbooks; teaching and educational materials; collectible rare books and fi ne editions; photographs; and paper documents of teaching material, Douglas County School District history, land and property history, and more.
According to Alyssa Carver, head archivist with ALH, the materials donated are representative of the history of the Metzler Ranch in Castle Rock and the personal legacies of the family members.
“The Metzler family donation is a valuable acquisition for ALH because of its large size, broad scope, and historical signifi cance across a number of important subject areas,” Carver said.
Those subject areas include history of schools and education in Douglas County; ranch life and the history of cattle, dairy, and related agricultural industries in the county; the ongoing suburbanization of the area over time; and local artists, authors, and creators.

Local author’s book looks at value of life
She writes about sibling’s 1974 death, attitudes in society

In a recently published book, a longtime Parker resident tells the story of the 1974 death of her 10-year-old brother, who was developmentally disabled.
Janet FarmerSelden’s brother, Jules Farmer — who was also deaf and blind — contracted a fatal disease while in the care of Ridge State Home in Arvada.
“It is a look at the value his life really had and what value came with his death,” FarmerSelden said.
Farmer-Selden’s parents struggled to fi nd ways to help their son to thrive despite his disabilities and often ran into challenges from the state, she said.
Farmer-Selden wrote the 104-page book, titled “Value of a Life,” in part to let readers know about the legislation that came from her family’s advocacy, she said.
“I wanted others to know as a society we have not really come that far in inclusion for people with disabilities,” she said. “It is my personal belief that you can measure a society’s moral compass not by the rhetoric of its public offi cials but by the way traditionally marginalized groups are faring and honestly, I believe that Colorado still has a long way to go especially in providing equity in services outside of the metro area.”
Farmer-Selden began writing the book in November 2019 and it was published in February 2021. In her writing, she used documents and
journal entries from her mother about the struggles the family faced in “attempting to provide the best possible life for my brother,” she said. She also used documents showing the lack of services that were available to her brother due to the severity of his disabilities. Farmer-Selden said that during her writing process, she was challenged by memories of the “negative attitudes” her brother and family experienced for “allowing him to be an active member of our family.” “This did not just come from neighbors but from some members of our extended family,” she said. The fi nal chapter of the book is a copy of Farmer-Selden’s mom’s diary from the fi nal days of Jules’ life. FarmerSelden “As my mom passed away in 2002, I felt an incredible sense of responsibility in representing what she would want to communicate if she were writing the chapter herself and I felt it was only fi tting that she gets the fi nal word in this book,” she said. Farmer-Selden decided to write the book after trying to fi nd services for her foster son, who is on the autism spectrum. “I struggled to understand why nearly 50 years after my brother’s death, Americans with disabilities are still challenged with physical environments that are not accessible,” she said. Farmer-Selden also said she believes people with disabilities lack assistive technology and internet access and experience negative attitudes from others. “We need to be conscious of the attitudes we hold regarding others who are not like us,” Farmer-Selden said. “If I can have one person act on this message, I have been successful in this effort and honored my brother and my parents.” The book, sold for $12, is available for purchase at tinyurl.com/Valueof-a-life.
