WHO CAN GET THE VACCINE (AND WHEN) The following are updated priority guidelines for receiving the COVID-19 vaccine, released by the state Dec. 30: Phase One (winter)

1A: Highest-risk health-care workers and individuals — People who have direct contact with COVID-19 patients for 15 minutes or more over a 24-hour period; long-term care facility staff and residents.

1B: People age 70 and older, moderate-risk health-care workers, first responders, frontline essential workers and continuity of state government — Health-care workers with less direct contact with COVID-19 patients, including workers in home health/hospice and dental settings; emergency medical services personnel, firefighters, police, correctional workers, dispatchers, funeral services, other first responders and COVID-19 response personnel; people 70 or older; frontline essential workers in education, food and agriculture, manufacturing, public transit, grocery, essential human services and direct care for those experiencing homelessness; frontline journalists; essential officials from executive, legislative and judicial branches of state government.

Locals receive first doses of COVID-19 vaccine; Tier 1B modified to add seniors, frontline workers

COVID-19 vaccines are in Clear Creek, and some community members might receive them earlier than they initially expected.

On Dec. 30, Colorado Gov. Jared Polis announced an updated vaccine distribution schedule, modifying who qualifies for Tier 1B. This was previously first responders and

Cheyenne, Arapaho tribes say renaming Mount Evans would help educate, heal

Now is the perfect time to educate the youth of both Colorado and the Cheyenne and Arapaho tribes about the state’s history, particularly the Sand Creek Massacre, so that everyone can start the healing process, tribal representatives recently told the Clear Creek commissioners.

In November, the Oklahoma-based Cheyenne and Arapaho tribes filed a federal petition to rename Mount Evans to Mount Blue Sky, a name significant to both tribes.

Colorado’s then-territorial Gov. John Evans is believed to have authorized the Sand Creek Massacre in which American soldiers fired on and killed Cheyenne and Arapaho civilians.

The Mount Blue Sky petition and at least three others to rename the peak are being evaluated by a state advisory board, which will then make a recommendation to the federal naming board. The tribes are hopeful for a decision by this summer.

Clear Creek has registered as neutral on all the petitions, but Commissioner Randy Wheelock said the county will hear from the community before deciding which petition, if any, to support.

A local National Weather Service volunteer observer makes temperature and precipitation observations each day at about 8 a.m. at the Georgetown Weather Station.

Wind observations are made at Georgetown Lake. “Max” and “Min” temperatures are from digital displays of a “MMTS” (“Maximum/Minimum Temperature System”); “Mean daily” temperature is the calculated average of max and min. “Total Precipitation” is inches of rainfall plus melted snow. “Snowfall” is inches of snow that accumulated during the preceding 24 hours. Monday, Dec. 21 — Idaho Springs police received a report of suspicious activity regarding three people in the 1500 block of Virginia Street in the early morning hours.

The three, including two juveniles, were captured on a resident’s surveillance camera. They are suspects in a string of thefts from unlocked vehicles. Charges are pending, and the case remains open.

Monday, Dec. 21 — Empire police executed a search warrant on a local residence following a report of domestic violence where a convicted felon is suspected of having a firearm. The search reportedly yielded methamphetamine, firearms and ammunition.

Monday, Dec. 21 — Georgetown police identified a local man known to have an active warrant for his arrest. He was taken into custody without incident and booked into the county jail.

Monday, Dec. 21 — Georgetown police received a report of a suspicious vehicle in the 900 block of Taos Street. The vehicle was later found and determined to belong to a contractor who was working at the church.

Tuesday, Dec. 22 — Georgetown police responded to a motor vehicle theft in the 900 block of 15th Street.

It was later recovered in another area of Clear Creek County. The investigation is ongoing, and residents are reminded to keep their vehicle

doors locked at all times.

Tuesday, Dec. 22 — Idaho Springs police responded to a call about a firearm found at a business in the 1400 block of Miner Street. Employees had discovered a loaded pistol in the restroom, and officers identified the owner. State investigators are checking on whether the owner is legally allowed to possess a firearm.

The case remains open.

Tuesday, Dec. 22 — An Idaho Springs officer was dispatched to an eastside residence to help a distraught resident. The officer talked to the resident and provided them information on resources for those experiencing mental health crises.

Tuesday, Dec. 22 — While investigating reports of shots fired in the 900 block of Argentine Street, Georgetown police suspected several juveniles were smoking marijuana and issued them summonses.

Tuesday, Dec. 22 — Idaho Springs officers conducted a welfare check on a guest who was late returning to their accommodations. The person was found passed out, reportedly from intoxication, in a running vehicle in a nearby parking lot. The person was taken into custody on suspicion of being in control of a motor vehicle while intoxicated.

Thursday, Dec. 24 — Empire police investigated a theft in the 400 block of East Mountain Avenue. A catalytic converter had been stolen from a nearby vehicle. There are currently no leads or suspects in the case.

A responsible decision The Colorado legislature returns for the first regular session of the 73rd General Assembly on Jan. 13.

Kind of.

Using the power that the Colorado Supreme Court gave them last year to conduct their 120 sessions over non-consecutive days during a state of emergency, legislators plan to come in just long enough to swear in members and take care of urgent needs before recessing and coming back to conduct business later in the year.

As we saw both at the end of the last regular session last spring and during the special session in the fall, it’s less than ideal for the legislature to meet during a pandemic. First and foremost, meeting under these conditions provides limited ability for the public to meaningfully

participate. Significant numbers of legislators participated remotely.

Social distancing inside the Capitol limited where and how meetings could take place. Most members of the public were unwilling to enter the Capitol at the risk of being subjected to the virus. Additionally, there was an underlying tension as some legislators refused to wear masks.

In addition to the limitations of conducting public business in public during a pandemic, the extra time the recess will provide should give decision-makers better information about how to proceed and what can be accomplished. Because of the devastating impact the virus has had on the economy and tax collections, large budget cuts had to be made to balance the state budget.

The delay will provide more time and information about if and how the economy is recovering. With better data, the legislature will know if further cuts are necessary or how much, if any, additional resources will be available to fund new or existing programs.

While there are no assurances that the extra time will fundamentally change the risks of people gathering

in public, it is likely that as the first phases of the vaccine are provided that legislative work can be conducted in public more safely.

Legislative leaders have made a responsible decision to delay work until later in the year. The delay should provide more opportunities for public understanding and participation, more and better data about what resources are available and a safer environment. They should continue to monitor how additional time impacts each of these factors and develop both the timing and an appropriate agenda to move forward based upon whether and how things change.

Resolutions for 2021 This strange and bewildering year is in our rearview mirror. I’m sure that many of you are feeling as I do, wiping your brow and breathing a huge sigh of relief to put behind us the uncertainties and stress of a year filled with a pandemic, racial injustice, destructive wildfires and the divisiveness of the presidential election.

As I welcome the arrival of a new year, I’m giving thanks for the swift development of a vaccine to protect us from COVID-19 and the actions of the new administration that will address the devastating economic impacts of the virus, the inequities of racism and climate change, and bring a measure of healing to our fractured country.

To ensure I make the most and best of 2021, I have been thinking of resolutions that I will try my utmost to carry out throughout the year.

Oh yes, those pesky resolutions ... eliminate the clutter in the house, eat healthier, exercise more, learn a new language and more. There are so many that fall by the wayside right from the start.

So as the new year arrives, I’m being more thoughtful and creative in

developing my resolutions. I thought I’d share a few that I believe will not only make us all better people but also make our world a better place in which to live, not just for ourselves, but for others, whether they be neighbors or strangers.

A couple with two young children were checking out at a Dollar Store with Christmas purchases. First, one credit card was declined and then a second, and they didn’t have enough cash to cover their purchases. A person in the line spoke up and said, “I’ll pay for them.”

Witnessing this, my husband, next in line, was moved to tell the clerk that he wanted to pay for the woman’s purchases who had just paid for the family whose credit cards had been declined. Wouldn’t it be wonderful to start a chain reaction of kindness such as this right here in our community?

Perhaps it would even result in outdoing the 900 strangers at a Minnesota Dairy Queen who opted to pay it forward for the car behind them, creating a mega chain of goodwill that lasted two and a half days!

Practice intentional acts of kindness. This can be done by giving thought to how you can help those less fortunate than you are on a long-term basis. Commit to someone in need or some organization whose mission it is to lift up people in need throughout the entire year and truly make a difference for their longterm wellbeing.

Need comes in as many forms as kindness does and doesn’t always require a financial commitment to address. Your time can be as valuable as your money. As the president-elect and vice president-elect take office this month, whether you voted for them or not, it is imperative that we understand our differences in order to heal the deep fractures that run through our country.

Think positively about what can be accomplished if we work together, whether or not we agree 100 percent on what needs to be done.

Surely, there are some areas where our views meet those of people with whom we don’t always see eye to eye.

However we get there, let’s try to meet in the middle and move forward in 2021.

similar personnel, but it has now expanded to include anyone 70 or older as well as essential frontline workers, such as teachers.

These changes, along with an uncertainty of how many vaccines it will receive each week, has made the county’s distribution process a moving target, Clear Creek Public & Environmental Health Director Tim Ryan described.

On Dec. 22, the county received its first 100 Moderna vaccines. A week later, it received another 200, he described, and his staff was working hard to identify and contact those in Tier 1B even before the state updated the schedule.

“We’re trying to adjust as quickly as we possibly can,” Ryan said. “ ...

It’s harder to line up people once you get closer to the general population.”

On Dec. 30, the county had only 80 people scheduled to receive their first dose, so Ryan said it’s possible Clear Creek could vaccinate 320 people this week depending on whether it receives another 200-vaccine shipment as expected.

Clear Creek officials are still working on how to contact and schedule all these new Tier 1B recipients and will announce its finalized plans on social media and other outlets.

The state’s schedule outlines Tier 2 individuals, such as those who have medical conditions that put them at higher risk, receiving the vaccine this spring and the general

population receiving it this summer.

However, that’s subject to change.

In the meantime, Ryan explained, Clear Creek is still conducting weekly testing at various sites across the county. Until herd immunity is achieved by enough people getting vaccinated, Ryan said everyone must continue to wear face coverings, social distance, and reduce the size and frequency of personal gatherings.

Honored and relieved Zoom is getting old as a way to connect with others, Project Support board member and volunteer JoAnn Sorensen said.

So, getting her first dose of the COVID-19 vaccine last week at the Idaho Springs fire station was the first step to be able to interact more freely with people, she described.

Sorensen and others said receiving the first dose was less painful than getting the flu shot, although they were expecting some soreness at the injection site in the days following.

“The process is easy,” Project Support resident Mike Maloney said.

Maloney, 68, likewise described feeling cooped up. He said he reads books and articles online far more than he used to, and he only leaves to walk to the post office and the grocery store.

“If I’m inspired, I walk to Starbucks,” he said with a smile, adding that he wants to go on a road trip soon.

Like Maloney, Idaho Springs dentist George Douvas and his office manager/assistant Jennifer Upright recommended everyone get the vaccine when it’s their turn.

The entire process — which involves turning in paperwork, receiving the injection and then waiting 15-30 minutes to monitor for allergic reactions — is easy, efficient and painless, Douvas described.

Douvas, who was an immunologist before becoming a dentist, said he’s a very strong believer in vaccines.

“I’m thrilled (to receive it),” he said. “I wish it on everyone. They need to protect other people as well as themselves.”

since the pandemic started. Her medical conditions make her highrisk, she explained.

Along with her own isolation, the impacts of COVID-19 are all too acute for Shaw and her family. One of their loved ones died from the virus, and her mother died from being isolated from her loved ones, Shaw described.

“I would’ve given (the vaccine) to my son or grandkids first if I could’ve,” she continued. “ …

Just the possibility of it helping is encouraging.”

Clear Creek’s boys basketball team will lean on a trio of returners to carry the load in 2021

On one hand, Seattle Schuessler, Reese Onago and Kiefer Zabel are their unique selves. But, on the other, collectively the trio of Clear Creek High School seniors will be the nucleus for the Golddiggers’ boys basketball squad in 2021.

Be it Onago penetrating toward the basket or crashing the boards, Zabel setting up shop in the cor-

ner for a wide-open 3-pointer or Schuessler bringing the ball up the court from the point, they’re all likely to know where the other is and vice-versa.

“We’ve always pushed each other to be our best. We’re very competitive,” Schuessler said. “I feel like there’s a brothership. We know where the others will be on the court. We know what will happen.

We can anticipate what the others are doing. It’s an instinctual bond.”

It doesn’t hurt given the continuity this trio has built having played with each other throughout the years, be it in the middle school or for the past three seasons at CCHS. That camaraderie and teamwork will come in handy as Clear Creek, coming off an 11-12 record one season ago, looks to return to regionals

and possibly go even further led by these three seniors.

“It takes a lot more stress off of yourself having people who can get you out of a tight spot and help you score and you can help them score,” Onago said. “We all know where we’re going to be and where we like to have the ball passed to so that

they can get the best opportunity to score.”

Blazing a trail Groups work together to create a hiking, biking path on CCHS property

A trail planned along the perimeter of the Clear Creek High/Middle School property is more than a trail — it’s a partnership.

Stakeholders from the Mountain Youth Network, Clear Creek County and the Clear Creek School District including the high school’s Eco Schools club have walked the property to discuss a 1-mile hiking and biking trail with its main goal to get children outside.

Once built later this year, the trail

will give Clear Creek High/Middle School students a place to go outdoors during and before/after the school day, according to Ben Shay, youth programs coordinator for MYN’s outdoor leadership program. “(The trail will) give them a resource to use outside of a textbook,” Shay said. “They want to have other resources than staring at the screen to help inspire creative, active learning.”

Mountain Youth Network is a community-based coalition created to implement the Communities that Care program, which promotes healthy youth development, especially by connecting to the environment. The TREK Teen Council, which meets in the former middle school, advises MYN on programs.

Space are on board with creating the trail, and the school district sees many advantages to it — a place for science and physical education classes, plus a social/emotional

component.

Organizers have enlisted the help of area businesses as plans for the trail progress.

Clear Creek High School senior Chloe Alspaugh, a student leader in TREK, said the connections among the community, school, parents and students are inspirational.

“Hopefully besides getting kids involved in creating it, the trail will give students another place to get outside,” Alspaugh said. “We have a beautiful campus, but you don’t get to walk around it very often. Having a trail that can be used all the time will get students out more.”

per game. With Onago, Schuessler and Zabel, the Golddiggers return a trio who combined for 34.2 points and 15.1 rebounds per contest. Zabel was second on the team in rebounds, while Schuessler led the team in assists and Onago was tops in steals.

“I think we definitely can,” said Schuessler, about making up the production lost with Griffin’s graduation. “We’ve been playing together for so long. Ben carried a big load, but we can step it up. We’re ready to take those points and fill those and take on his rebounding as well.”

There’s always going to be a hole to fill when the senior class leaves, Onago noted, but there’s a collective sense that Clear Creek could be just as good, if not better, in 2021.

That said, Schuessler recognizes

two organizations can work together — something that happens regularly — and the idea for the trail was born.

Quanbeck envisions the trail as a place for science classes to learn about native plants, climate, land changes and more. Plus she sees the trail as a place for a reflection with a mindfulness component, and both

January 6, 2021 the presence that Griffin was in the paint for the Golddiggers. But that just means that he, Onago and Zabel will have to pick up the slack, as well as their teammates, such as fellow seniors Cooper Frey and Jett Howard, to account for Griffin’s lost contributions.

Be it scoring, rebounding or assists, Schuessler recognizes that his offensive production will be a byproduct of his defensive presence in head coach Scott Haebe’s system.

“With the work that I’ve put in, I see a lot more scoring out of me,” Schuessler said. “Through defense, I’ll get more steals and transition points. That should be an increase in assists and points for me.”

And with that, along with another year of seasoning for Onago and Zabel, the Clear Creek Golddiggers have a ready-made nucleus to carry the team into 2021.

But as Haabe points out, it’s the leadership attributes that this trio brings that is just as key, if not more

so, in paving the way for the Golddiggers.

“They’re going to have to be the focal point,” Haabe said. “They’ll have to step up and play well. It’s not necessarily scoring points or statistically playing well, but working hard.

It’s important for the senior leaders to work hard, buy in and that kind of stepping up and leading by example. … We have a number of seniors who don’t have a ton of experience. We’ve got two really good freshmen and a sophomore coming in who could see considerable varsity time. But the kids will learn from them.”

In other words, Schuessler, Onago and Zabel need to set the tone.

Zabel concurred though he did note that it will be important for him, Onago and Schuessler to do all that they can to spread the points and rebounds lost with Griffin now gone.

“The leadership between me, Reese and Seattle definitely has to be higher than a normal season,” Zabel

learning and counseling stations are in the works.

Robertson hopes to get community support and a grant to pay to build the trail, and she wants to hire students to do the work.

“What MYN is all about is creating meaningful opportunities for youth,” Robertson said, “so they try things, and are a part of community improvements and activities. Being able to pay (the student workers) would be awesome.”

Shay said getting students outside on school grounds can motivate them to get involved in the county’s

outdoor recreation and can lead to career paths.

A big motivation for creating the trail was to provide equitable access to all students, Robertson said.

“If you can be at school, you have this option of this wonderful, beautiful trail, even at the end of the day,” Robertson said. “Students can participate without the need for transportation. The point is all students have access to it. This, I think, will be a good way to inspire kids to take advantage of outdoor hiking and enjoying trails in the community.”

Braving the elements Conifer man says walking 38 miles is a small price to pay to help Make-a-Wish kids

Aaron Jarrett walked 38.2 miles through the night on Dec. 23, and while the feat may seem crazy, he says it’s all for Make-a-Wish Colorado.

Jarrett braved zero-degree temperatures and high winds for 12 hours — still, it’s all about Make-a-Wish Colorado.

Jarrett carried a 30-pound pack and powered through pain throughout the walk — to help Make-a-Wish Colorado.

Jarrett, 54, of Conifer has made it a mission to raise money for the nonprofit for 30 years because the foundation grants wishes to termi-

“It’s just an opportunity for (tribal representatives) to come in and speak to us about their history, position and beliefs,” Wheelock continued.

The land as a history book Crystal C’Bearing, deputy director of the Northern Arapaho’s tribal historic preservation office, described how the Arapaho once lived in bands ranging from Canada to Mexico, and how Colorado became a hub for several tribes. They hosted ceremonies and gathered plants for medicines.

“A lot of our youth think our reservation is the only thing we’ve got,” she continued. “They don’t realize that we were all over this continent.

They don’t connect to that.”

C’Bearing described taking a group of youth to Colorado for a basketball tournament and showing them the site of a council tree, saying, “We want the kids to have that connection to who we are. The land is our history books; it tells the story.”

More importantly, she said, the tribes still use the land to gather and pray. The ceremonies haven’t been eliminated, and she hopes these gatherings can be an opportunity for people to share their cultures and histories, and build better relationships.

“It’s the perfect time to educate not only our tribe’s community but also the citizens of Colorado about the history,” she said. “ … It’s not pretty how things came to be. We have to have some tough conversations along the way, and that’s the only way we’re going to heal.”

Chester Whiteman, Cheyenne coordinator of the Culture Program of the Cheyenne and Arapaho tribes, said that the name Mount Evans causes a lot of intergenerational trauma among his community and that the peak’s name needs to be replaced to begin the healing process.

“This isn’t the only incident or atrocity that’s happened to our people,” he said, referring to the Sand Creek Massacre. “ … I would appreciate a good, hard push to change this name.”

Fred Mosqueda, who is Whiteman’s counterpart from the Arapaho Tribe, said he’s excited to see how much support the Mount Blue Sky petition has gained since it was filed. He added that he’s looking forward to working with Clear Creek and other counties on this issue.

Along with Wheelock, both Commissioners George Marlin and Sean Wood thanked the representatives for sharing their experiences and perspectives, with Marlin saying, “It’s a real service for all our board members to understand what happened.”

Wheelock said it was one of the best meetings he’s attended in his four years as a commissioner in terms of being helpful and educational.

Whiteman and his colleagues appreciated the commissioners’ willingness to listen, saying, “I know we can’t change history, but we can change how we handle the future history.”

An Army veteran, he brings along friends and his kids to join in the challenge.

Last year, he and his oldest son did a marathon in Pueblo for Make-aWish, raising almost $10,000. Jarrett finished 19 miles while carrying 100 pounds.

Two weeks ago, Jarrett had hoped to complete 50 miles, walking in the San Luis Valley where he was raised. He and his daughter, Layne, a 2019 Conifer High School graduate,

along with friend Eric Hubbard of Evergreen decided to walk at night with Jarrett’s wife, Teri, driving behind in a vehicle with supplies.

“We decided we were going to raise awareness for these two little boys,” Jarrett said. “We wanted to do something, especially since fundraising events got canceled because of COVID. I know it’s a tough time to ask for money, but these boys deserve our help.”

The three started walking at 4 p.m.

Dec. 23, and Jarrett said the cold temperature and brutal wind made the walk difficult.

“We did not prepare as well as we should have,” Jarrett said, noting that the water bladders they carried

froze quickly, so they needed to stop for water from the vehicle. At 4:30 a.m. they ended their journey.

“This is one of the more difficult things I’ve ever done,” Jarrett said, “but you put a ruck on and keep walking.”

The Jarretts agreed that while the walk was daunting yet fun, it’s nothing compared to what families go through when a child has a terminal illness. They hope the public will step up and donate to their efforts.

What’s next for Aaron Jarrett?

He’s contemplating a 100-mile ruck walk — to benefit Make-a-Wish Colorado.

How to elevate your baking game Making bread at a mile high can be tricky, but with experience comes wisdom

Nothing brightens a home quite like the warmth and smell of baking bread, but life at a mile high means baking the perfect loaf can get a bit tricky.

“High-altitude baking is definitely a skill that takes time to develop,” said Chelly Klann, the founder of the Good Food Project, Project Bake and Edible Revolution — a trio of Denver-area nonprofits dedicated to teaching kids and adults the finer points of cooking and baking.

But before understanding how to bake at high elevation, Klann said bakers should understand bread in general.

“Bread is a whole zen experience,” she said. “You can’t rush it. Cooking is an art — you just throw stuff in a pan and taste it as you go — but baking is both an art and a science.”

Bread is also “the purest food,” Klann said, built on just flour, salt, water and yeast.

Home baking exploded this spring during the early days of COVID-19 shutdowns, with flour and yeast flying off shelves as fast as toilet paper.

Klann said she thinks that had to do with a renewed focus on personal skills when people are cooped up.

“Bread is aspirational,” she said.

“Lots of people say someday they’d like to learn French, or play the piano, or learn to bake. Suddenly people had time for things. Everything takes longer this year, and bread fits right in with that.”

But many home bakers in Colorado soon discovered the trouble that comes with high elevation.

“Dough rises quickly here, but it deflates quickly too,” Klann said.

Loaves and wishes

She offered a few pointers: First, high-elevation dough needs more moisture.

“It’s better to have sticky hands than dry dough,” she said. “If your rolls turn out like hockey pucks, it’s because there’s not enough water in them.”

Next, increase the temperature in the oven, by as much as 25 degrees over what standardized bread recipes call for. That may also bring down baking time by several minutes.

Also, Klann said many home bakers simply don’t knead the dough enough.

“People ask if you can overknead bread, but you’ll get bored long before that happens,” she said.

Perfecting sourdough — bread made with fermented flour using naturally-occurring yeast — is worthy of an entire article, or even a book of its own, Klann said.

“It took me the better part of a year to get good at it, and I turned out some bad sourdough in that time,” she said. “It’s a pretty steep learning curve.”

“Find a recipe that came out OK one time, and make it over and over until you’re good at it,” she said. “If something goes wrong, you’ll figure it out quicker.”

Bread baking is also influenced by ambient conditions, she said, including outside weather, humidity, temperature and other factors.

“This might sound weird, but try keeping a bread journal,” Klann said. “Is it 100 degrees in your kitchen? Is it raining? Is it cold out?

You think you’ll remember, but you never do, which is where writing it down comes in. Don’t fret — you’ll get there.”

Fine ingredients

For those looking to step up their bread baking game, ingredients can make a big difference, said Beth Ginsberg, the owner of Englewood’s Trompeau Bakery, which specializes in classic French breads and pastries.

“Grocery store flour can be weeks old, and it can sit in your cabinet a lot longer than that,” Ginsberg said. “Here at the bakery, we’re using fresh, high-gluten flours, which also have a much higher moisture content that dissipates the older it gets. We’re also using live yeast, not the dried stuff, which is a lot more finicky but produces some really wonderful bread.”

Trompeau sells smaller amounts of high-end flour and yeast to home bakers wanting to give the good stuff a try, she said.

Rande Smith, Trompeau’s head bread baker, said he hasn’t adjusted any of the bakery’s recipes to adjust for high elevation, but that’s because he works dough by feel.

“Every batch of flour is a little different,” Smith said as he dumped a sack of flour into a jumbo mixer.

“It comes from wheat, which of course is a plant — wheat from different places, from different years will all have slight variations. Some absorbs more water, for instance, or responds to yeast differently.”

Smith said even without fancy

ingredients, home bakers can improve their bread by avoiding common mistakes like letting the dough get too warm.

“People wake up their yeast with warm water, but you really don’t want the dough that warm,” he said. “Even a stand mixer like a Kitchenaid can warm it up too much.”

Good dough shouldn’t register higher than 75 degrees, he said, and many good recipes call for letting dough rise overnight in the refrigerator.
