MY NAME IS

NEIL LIPSON

Being an attorney in the Denver area has been interesting. Both the population and the number of attorneys has grown immensely. The continued increase in traffic along with the use of cell phones, and talking or texting while driving, has the biggest impact on my law practice. You cannot go a day without seeing a car crash somewhere where a cell phone was involved.

I am passionate about my clients and will fight with the insurance companies to make sure they are treated fairly. I also do everything I can to make sure they get the best medical care.

Attorney, neighborhood activist in Centennial Came for the schools I am 65 years old and have lived with my wife, Rhonda,, in Centennial for 27 years. We raised our two sons, Daniel and Benjamin, in the Willow Creek neighborhood and Cherry Creek school system. Both boys graduated from Cherry Creek High School.

Before, I lived in the West Washington Park neighborhood in Denver for over 16 years. We moved to Willow Creek for the school system, and we are very glad we did.

Fighting for neighborhood I got involved in the Willow Creek neighborhood to try to preserve the quality and safety of the neighborhood. I first got involved in the attempt to prevent a Hooters from going in across from the neighborhood on County Line Road. We were unsuccessful because it is situated in Lone Tree. I next got involved when a developer was attempting to get approval for an (extended-stay hotel) across from the neighborhood on Yosemite Street. The entire neighborhood and surrounding neighborhoods rallied against this proposed hotel.

Our next big trip is to Jamaica with our two sons.

City council candidate profile: Candace Moon Longtime public servant vies for reelection in District 1

Candace Moon wants to keep listening to you.

That’s how the current city councilmember from District 1 characterizes her approach to growth in Centennial, which continues to see new business and housing development amid a years-long Denver metro population boom.

In November 2015, Moon won her spot on Moon the council, succeeding her husband, Vorry Moon, who could not run again due to term limits.

She’s run through a laundry list of public service roles in her life and retired from her post a supervisory immigration services officer with the U.S. Department of Homeland Security in March. She worked at Avaya, a telecommunications company, as a manager and ran a small business with her husband.

She serves on the Centennial Airport Noise Roundtable Committee.

She served on the board of directors for the Arapahoe Highlands Civic Association in her neighborhood for roughly a decade. Moon is also a veteran of the Air Force and Air National Guard.

Council District 1 is the far west part of Centennial, encompassing most of the portion between South Broadway and South Colorado Boulevard.

Here is a look at Moon’s policy positions in her own words. Responses were lightly edited for clarity.

What’s the most important thing you want to accomplish in office?

Managing our growth.

‘Smart growth’ is an often-used buzzword. What does that look like to you?

Defining smart growth, to me, is listening to what our residents are saying, staying abreast of current trends that are showing up in growth and deciding, what are the city’s best options? I think it’s just important first to understand what’s happening and why it’s happening.

What is your approach to transportation and ‘smart city’ initiatives?

I think we need to do something about our transportation. To be solely reliant on gas-powered automobiles at this point is maybe not the way we should be looking at. We need to encourage electronic vehi-

cles. We need to encourage alternate modes of transportation by looking at e-bicycles, scooters, building better sidewalks so people can commute by foot to errands, having better trails. And keeping a strong public transportation system.

The city does work with RTD, and we work with the South Metro Denver Chamber of Commerce and several organizations in south metro area (on transportation).

What is the best way to maintain retail sales tax base in Centennial?

One of things we try to do is encourage businesses to come to Centennial by showing the benefits of living here: the great neighborhoods, the education of the population, the relative age and income of the population. That we are located close to and have businesses that are in the sciences and technology in the city.

If they’re not in the city, they’re very close and adjacent to the city. We have really good schools, supported by two different school districts. One of them has a (career-technical campus), the Innovation Campus, that kids will be able to go to school and graduate and be certified to work in electronics, mechanics, STEM (and other practical fields).

What issue is city council not paying enough attention to?

I think we do pay a lot of attention

to everything. One of the (areas) we need to give more attention to is environment — caring for our environment, caring for our ecology.

Making sure we are keeping our city environmentally safe and clean. We are beginning to talk that way, but it’s an area that, with science changing, we need to look at it more. That would include making sure we have clean areas: that our open spaces are clean and our storm and sanitation (systems) are well maintained.

How can the city best take care of its increasingly aging population?

We have a Senior Commission that is very active in getting programs for seniors. We definitely need diversity of housing for seniors, and public transportation. And we also need to look at mental health care for seniors.

As people age, they move out of their single-family homes, and they have a tendency to want to downsize and still maintain control of their property in the sense that they’re still homeowners and not be subject to rent fluctuation.

I think with housing and public transportation, (the best way for the city is) coordination and advocating with agencies that provide housing and public transportation.

Council ups residential cap for I-25 corridor developments Jones District will see less retail than expected, study says

Two areas in the business-dense corridor along the west side of Interstate 25 will see their allowed space for residential units more than double after Centennial updated its land use rules.

“Centennial has one shot at creating an identity along I-25,” said Jenny Houlne, a principal planner for the city, at its Aug. 5 city council meeting. She told council there has been little to no development in areas with “urban center” zoning since that category was created. A city’s zoning sets rules for what can be built where.

The urban center zoning includes just two areas: the businesses that sit roughly along South Yosemite Street between East Arapahoe Road and Briarwood Boulevard, and The Jones District. That’s a 42-acre — mostly vacant — swath of land on East Mineral Avenue in Centennial just north of IKEA. The Jones District is a historic site that sits in the area of the now-closed Jones International

University, considered to be the first regionally accredited university to exist fully online. It’s also one of the most watched developments in the city, promising towering office buildings and hotel, residential and retail space near an existing RTD light rail station.

Aside from its existing 306 units at The Glenn apartments, The Jones District’s developers have said they want to add about 1,500 more residential units.

That rough total isn’t going to increase based on the city’s rule change, though. With the raised residential cap, The Jones District could not exceed roughly 1,500 units, said Allison Wittern, city spokesperson.

The new rules passed at the Aug. 5 council meeting remove a requirement for ground-floor retail, a change that reshapes, in part, what The Jones District is expected to offer. A study conducted by a retail consultant found that a lack of retail visibility from I-25, lack of frontage along East County Line or Dry Creek roads, and a location without “direct accessibility” create challenges for the chances of “a significant amount of retail” at the development, according to a city staff report.

“There will be viability for some retail but (not as much) due to proximity of Park Meadows and Centennial Promenade,” Houlne told the

council, adding that hotel lobbies, restaurants or retail uses could fill the ground floor in urban centers under the new rules.

The city’s existing rules limited the total amount of residential space to 20% of the floor area of a development, according to the staff report.

Discussions with the development community and research — including from the Urban Land Institute, a network of real-estate industry experts — showed that urban districts should have an average minimum of 40 dwelling units per acre. Based on that, Centennial’s new rules raise the cap, or allowable amount, of residential units for a development in urban center areas to 50% of a development’s floor area.

The research the city cited provides information on “successful and sustainable” transit-oriented developments, which are designed with proximity to transit and walkability in mind.

The changes drew concern from the handful of speakers at the Aug. 5 meeting, which included a public hearing on the proposed changes.

One west Centennial resident feared The Jones District could end up like Littleton Village, a large mixed-use development along Centennial’s border with Littleton near South Broadway.

Councilmember Carrie Penaloza initially opposed the increase for residential, arguing that development of other uses should progress in tandem with residential construction so the city doesn’t “get a bunch of apartments and empty land.”

After a huddle with the city attorney, the council agreed to amend the proposed rules to require that developers include plans that “phase” in residential uses “to coincide with non-residential uses,” said Bob Widner, the attorney. The new rules passed on a 9-0 vote.

The ordinance also allowed for more flexibility in the design of developments and required “cohesive design and a distinctive character” that would set the areas apart from other developments in Centennial.

It also increases the variation in building heights that parts of urban centers can have, while maintaining the maximum of 15 stories.

The ordinance amended Centennial’s land development code, which sets zoning districts and design standards for construction.

Support strong for replacing jail, weaker for courthouse Mixed reviews from citizens’ committee on combined billion-dollar proposal

A proposal to ask voters to fund a new Arapahoe County jail received unanimous support from a citizen advisory committee on Aug. 6, but similar proposals to replace the courthouse and district attorney’s offices were met with more ambivalence.

At the final meeting of the county’s 25-member long-range planning committee, convened in May to study the proposals, every hand shot up when asked if the county jail needed to be replaced.

County officials have called the jail overcrowded, citing record high assaults on inmates and staff, and said that the facility is deteriorating and facing difficult or impossible repairs to critical infrastructure.

The proposal also seeks to expand facilities for mental health and drug rehab programs.

When asked about the need to replace the courthouse and district attorney’s facilities in the face of overcrowding, however, the response from the group was far more tepid.

“I just haven’t heard enough yet with regards to the courthouse to justify the money we’re talking about spending,” said committee member Thomas Tanner.

The cost for a full replacement of all three facilities would clock in at nearly a billion dollars, according to county projections. The cost to

replace the jail alone approaches half a billion dollars.

Public polling conducted by the county largely reflects the committee’s feelings. A survey of 401 county residents conducted between January and July found nearly twothirds of respondents supported replacing the jail, but just shy of half supported replacing the courthouse and district attorney’s facilities.

Some committee members said while they could foresee asking voters to replace all the facilities, much more public education and outreach is needed first.

“I don’t believe we can pass anything without an 18-month period with speakers bureaus and funding for outreach,” said committee member Kevin Hougen, though he said the county should try for the whole shebang this fall with the expectation that the vote would fail,

in order to get the issue in voters’ minds.

Some committee members said there’s room for creativity when it comes to the courthouse and DA building.

“I’d like to see us spend the money on justice reform to figure out a way to not have so many people go to court,” said committee member Brian Arnold.

“The buildings are there 24/7, so c G let’s run two shifts, and then we don’t need a new one,” Gay said. “As a far as the DA’s building, if we can p bunk three inmates in a cell, I don’t g see why we can’t put two lawyers in j the same room.”

Others said it’s clear that all three p s facilities need to be replaced and that the county should go ahead and i put the whole proposal before voters this fall, rather than break up the votes over coming years.

“It’s more cost-effective,” said committee member Carolyn Boller.

“I do have a concern about the polling, though, and the education of the voters, because they’re not always the brightest.”

As far as funding, a proposal to raise sales taxes by 58 cents per $100 met with minimal support from the committee. Most of the committee’s votes were split between a pair of property tax mechanisms that would raise taxes by between $4.28 and $8.43 per month on a home valued at $380,000.

Arapahoe County’s five county commissioners were in attendance at the meeting and asked a handful of clarifying questions, but largely said they were eager to discuss the committee’s conclusions at upcoming county meetings.

Jeff Baker, the chair of the Board of County Commissioners, said the board has until Aug. 27 to make a decision on what, if anything, voters will see on their ballots this November.

“We may not agree on all the elements of the proposals, but the people’s voices need to be heard,” Baker said.

Division Chief Vince Line, who oversees the county jail, said he was heartened by the support for replacing the facility.

“Pursuing a jail now is critical,” Line said.

Sheriff Tyler Brown said that outside of his role as an elected official, as a resident of Arapahoe County, he wouldn’t mind paying higher property taxes to replace the aging facilities.

“As a citizen, I believe I belong to something bigger than myself,” Brown said.

While he said he believes replacing the jail is crucial for the safety of staff and inmates, “I’ll be happy with whatever the commissioners decide on.”

DA calls for measures to curb gun violence Brauchler says firearms laws must have ‘sharp teeth’

In the days following a pair of highprofile mass shootings, one in Ohio and one in Texas, 18th Judicial District Attorney George Brauchler announced a multipronged plan to prevent gun violence in his jurisdiction.

Brauchler The bulk of his approach, announced in a statement Aug. 6, will lean on existing Colorado gun laws to crack down

on illegal firearms transactions. But it also calls for legislation in 2020 that would strengthen penalties for illegal gun possession among felons and revamp the state’s mental-health hold system.

“Our gun laws need to have teeth, sharp teeth,” Brauchler said regarding convicted felons who obtain guns.

He has also requested funding from county commissioners in the 18th Judicial District — which comprises Arapahoe, Douglas, Elbert and Lincoln counties — for an additional investigator who would work with local agencies to probe illegal firearms transactions.

Brauchler chided the nature of national debates over mass shooting and gun violence prevention that flare with each new tragedy. Debate surged nationwide the weekend of Aug. 3 following shootings in El Paso, Texas, and Dayton, Ohio. The shoot-

ings left a combined 31 people dead, the Associated Press reported.

Brauchler’s announcement said his plans rely on “practical measures” that should “be quickly implemented here in Colorado.”

“We must resist getting caught up in a debate of ‘Who is right?’ instead of ‘What is right?’ Rather than getting mired down in controversial and divisive legislation, I am committed to implementing measures in my jurisdiction now using tools the Legislature has already given,” he said.

The announcement did not name any one piece of legislation in particular, but the 2019 state legislative session produced fiery battles in the gun rights arena.

Colorado in April ushered in a contentious red flag law that has spurred talk of recall efforts against supporters like Douglas County Sheriff Tony

Spurlock, who passionately backed the legislation as it worked through the Democrat-controlled state Legislature in 2019. The act is named for fallen Douglas County Deputy Zackari Parrish.

The red flag law allows a judge to order a person’s guns be removed if they are believed to a significant risk to themselves or others. The committee planning to recall Spurlock hopes to begin circulating petitions this fall.

The 2019 bill was not the first attempt at red flag legislation in Colorado. In the previous session, a similar bill was introduced but voted down. Brauchler, a Republican from Parker, supported the prior version but backed away from the 2019 version, citing concerns over differences between the two bills.

‘This night is about them’ Law enforcement, civilians get together on National Night Out

arents, kids and local businesses showed up at Clarkson Park alongside a large law enforcement presence, but it wasn’t cause for alarm.

Under the summer sunset, crowds gathered at parks and common areas across the Denver metro area for National Night Out, including at several places in the Centennial area.

“So many times, we have negative interactions because of a traffic stop” or other incidents, said Duane Fox, an Arapahoe County Sheriff ’s Office deputy. “When we can come out (and) meet them on a friendlier basis and talk about what we do, it’s a great opportunity.”

Fox came to Clarkson Park in west Centennial for the second year in a row for the annual National Night Out event, which aims to enhance relationships between civilians and law enforcement. The sheriff ’s office bomb squad welcomed kids with two of its remote-controlled robots that deputies use to examine potential explosives.

At the Aug. 6 event, a robot handed out suckers from a bucket.

“The kids love it,” Fox said.

Some civilians came for more community exposure, too, such as local businesses and the Model A Ford Club of Colorado, a group that lined up several vintage cars on the grass. A live music group played new and old hits as families ate hot dogs, baked beans, and mac and cheese at long tables.

But law enforcement is still frontand-center in the event’s spirit, as Centennial Mayor Stephanie Piko noted.

“This night is about them,” Piko said.

Arapahoe County sheriff ’s deputies attended several other National Night Out events on Aug. 6, including at Walnut Hills Elementary and Arapaho Park in west Centennial, MorningStar Assisted Living facility in central Centennial and Copperleaf Western Park in the far east Centennial area.

Here’s more on what Brauchler says should be done to curb gun violence in the 18th Judicial District and Colorado, per his Aug. 6 announcement: Brauchler says there are existing Colorado laws aimed at denying firearms “to those in our neighborhoods who should not have them.”

He names felons, domestic violence perpetrators and the dangerously mentally ill as examples of people who are prohibited by law from purchasing firearms.

“But a significant number of them do it anyway,” he said. “Those cases do not always make it to court. I want to see gun sellers and police working together to more vigorously enforce those existing laws.”

Brauchler has assigned his second-in-command within the district attorney’s office, Assistant District Attorney Matt Maillaro, to lead an effort among local and federal law enforcement agencies, the Colorado Bureau of Investigation and holders of federal firearms licenses “to create an enhanced approach to the detection, investigation and prosecution of these crimes.”

Brauchler hopes to find bill sponsors who will take up legislation to strengthen penalties for felons who obtain weapons illegally. He says felons who illegally possess fire-

arms can be convicted of a low-level felony and leave court with probation, multiple times.

“Even less penalties exist if a felon illegally attempts to purchase a firearm by lying to a seller,” he said.

He says felons who attempt to illegally acquire a firearm, successfully acquire a firearm, and those who provide them with the firearms illegally, should face prison time.

He also calls on the Legislature to “fix our broken and ineffective 72-hour mental health hold law. Its failures do not keep us safer and do nothing to help those most in need.”

The announcement pointed to Colorado’s painful history with gun violence, naming the 2012 Aurora theater shooting, the 2017 killing of Douglas County Sheriff ’s Deputy Zackari Parrish and the STEM School Highlands Ranch shooting, which occurred just three months ago.

Each tragedy drew national attention and happened within the 18th Judicial District. The announcement also noted the close proximity of the 1999 Columbine High School massacre to the district.

“There is no debate that we need to keep firearms out of the hands of people who legally should not have them. We need laws on the books that promise punishment of people who knowingly thwart those rules,” Brauchler said. “I urge those who share these beliefs to join me in implementing them.”

‘Ready for new experiences’ in new school year Classes in Cherry Creek district kick off with jitters, community spirit

For adults, it’s a scene that puts nerves on edge and inspires fond memories all at once. For many students, it’s their first step into a new world.

“It’s a little overwhelming — it’s just new,” said freshman Mimi O’Brien after stepping through the doors at Eaglecrest High School on the first day of school.

Older students stood ready in shirts bearing the logo of Link Crew, the group that helps newcomers find their way at the top of a new year. Cherry Creek School District’s classes began Aug. 12.

“I’m just ready for new experiences, but it’s definitely nerve-wracking,” O’Brien said. “It definitely helped when (a student) asked if I needed help because that was my biggest worry, not knowing where my classes were.”

Down the hall, Erik Seaver waited for students next to his ceramics classroom, giving warm greetings to students he knew by name.

A few miles south, a principal helped families navigate the drop-off process at Liberty Middle School and looked forward to progress this year.

“We’re opening our new innovation center this year,” said Kevin Doherty, referring to the Innovation Spaces —

designed to spark curiosity, critical thinking and collaboration — that are nearly finished opening throughout the district’s elementary and middle schools. “I’m really excited about the opportunities for our kids.”

Nerves were palpable for some students walking up to Liberty, and Victoria Graham helped her son, sixth-grader Beckham Graham, find his classes on a map.

“He calls it ‘nerviting,’ ” Victoria Graham said. “Nervous and exciting at the same time.”

The last, final diatribe on an unneeded, unnecessary word

, like, give up.

Once a year for the past eight years, I have written a column about the extra-grammatical use of the word “like” and QUIET its part in the ruination of the English DESPERATION language.

Each column has included the disclaimer that I am an imperfect grammarian myself, and I am not the ultimate arbiter of what is and is not good English.

But I know what I Craig Marshall like, as it were.

I thought by now Smith “like” would have gone away, but I see and hear that

McWhorter’s books — “Words on the Move” — that summarizes the problem: “When Words Stop Being Words.”

It’s natural to hem and haw, and stumble a bit in casual conversations.

Everyone at a dinner table doesn’t speak in concise sentences, like they often do in films.

We stop, we start over, change in mid-word to something else.

McWhorter calls that “easing” language.

But for some, that eased language is all the time.

I have decided to concede to it after a recent experience in a dentist’s chair, which, for many, would be torture enough.

I was reclined in a chair, numbed to the gills, and with a contraption in my mouth. Helpless, powerless.

it hasn’t and now consider it a lost cause.

Therefore, this will be my final diatribe.

I refer anyone who cares about language to John McWhorter. McWhorter is associate professor of English and comparative literature at Columbia University, where he teaches linguistics.

He wrote “The Evolution of ‘Like’: How the ubiquitous, often-reviled word associated with young people and slackers represents the everchanging English language” for The Atlantic (November 25, 2016).

It is far more insightful than I am capable of being, but I simply think “like” is an example of a dreadful verbal laziness.

The assistant began a conversation that included three “likes” per sentence, at a minimum. It was the deep dish of agony, and I told Jennifer that it was worse than the excavation that was going on in my mouth.

I imagined I was hearing dialogue from “Clueless.”

hether you are a business owner, an executive, a manager, or a supervisor with a team of people reporting to you, or you are someone who reports into another person, guess what? You are all still the boss.

That’s right, you are all still the boss. What do I mean by that? I mean that regardless of our role or title, it is ultimately our responsibility to perform at the highest level possible for ourselves and our teams. And we do not WINNING strive for that just WORDS because we have to, we strive for that because we want to. If all we ever do is take orders from those in charge of us or above us in our department or by title, all we will ever do is live up to is their expectations and never our own.

Just think about this for a moment.

Who does the CEO report to? Well if there is a board of directors, the CEO usually reports into the board. If the CEO only took the direction of the board and wasn’t innovative, driven, and inspiring, they probably wouldn’t be the CEO for much longer. And what

about the chairman of the board, who do they report to? They report to the shareholders, don’t they? Well if they didn’t hold themselves to a higher standard and constantly think of ways to improve productivity, revenues, and returns, they probably would be replaced.

Chairmen, CEOs, owners, managers, and all level of personnel within an organization should always be thinking beyond what others expect of them when it comes to performance.

As a matter of fact, all of us, personally and professionally would do well to think about how we can do better and achieve more than we have ever done or have accomplished before. We should always be thinking about how we could raise the bar for ourselves and not wait for a performance review or feedback from others.

Pride of ownership isn’t just relevant for the ownership of a company; pride of ownership comes with owning and being held accountable to ourselves for the job that we are doing regardless of who we are working with or for, or what the job involves. Personal pride doesn’t mean we work more hours than we should, although it could if it means completing something that meets our own standards.

Investing 101: Don’t look for instant gratification

T

he media continues to satisfy our need for instant information, but how much is too much? Many folks tell me they are on information overload.

Also, some news stories can make you feel inadequate if you don’t understand all the acronyms they use. Instead of empowering us as investors, this tweet type of news snippets that appear all day long on your FINANCIAL phone or computer STRATEGIES are not helping, they may actually be hurting your chances of being a good investor.

Legendary investor Warren Buffett defines investing as “… the process of laying out money now to receive Patricia Kummer more money in the future.” My simple definition is to take risk now for future return.

This would indicate that reward is not instant but takes time. This could be the disconnect from what we expect in our daily lives, which is usually instant gratification in everything from our first cup of cof-

Personal pride means that we don’t expect others to do our job. It means we hold ourselves accountable for completing the task or job at hand and getting it right. Personal pride means that once we are capable, we do not have to be told what to do, we know what is required and get it done.

You know the saying, “You’re not the boss of me.” We usually hear that in a facetious or sarcastic tone, or when someone is angry with another person for trying to boss them around. But guess what, unless we take ownership for our actions and become our own boss in all that we do, someone else will really be the boss of us as we lose control of our own future.

Who’s the boss? You’re the boss.

And it doesn’t mean a thing.

“Like,” used correctly, is overused as well.

I tried to get my students to say something else about their drawings than “I like it,” or “I don’t like it,” which are headlines without content.

I gave up on “cool” a long, long time ago. I have likewise given up on “awesome.” I think there is hope that “no worries” and “no problem” will

fee to accessing the internet. Investing is putting money to work over time. This may be why it is so hard to stay committed to a strategy or plan if we don’t feel we are getting rewarded instantly.

Do you look at the stock market more than once a day? Do you look at your investment accounts more than once a month? If so, you too may have fallen in the trap of thinking you should see results quickly.

This can backfire if you make decisions to abandon a certain investment if it has not performed in the first month, quarter or year. This is where knowledge around portfolio construction could be helpful. It can help determine how many short, intermediate and long-term assets you need. It probably doesn’t make sense to look at the long-term holding (meaning 10 years plus) every day or even every month. This could cause you to sell prematurely and miss out on future benefits.

It is important to understand at least the basics before you invest.

Learn about paying yourself first by saving each month off the top of your paycheck instead of waiting to see if anything is left over after you take care of other expenses.

That’s right, you’re the boss. Now I wouldn’t go into work tomorrow and tell your manager that, or go home tonight and tell your spouse that, but I would recommend letting others see that you are driven, you are inspired, and you are attempting to do everything possible to create a brighter future.

After a lifetime of nurturing, teaching and inspiring those around her, Nancy Jane Borg Chilson went home to be with the Lord on August 5, 2019.

A fixture of the Littleton theater and dance communities, Jane helped bring joy to local audiences for over half a century.

Jane is survived by her husband Rex Chilson, as well as her three children.

Meat alternatives grow in popularity Restaurant owners, health expert weigh in on benefits, challenges

one are the days when vegans and vegetarians couldn’t order a hamburger on the menu.

Alternative meat brands such as Impossible Foods and Beyond Burger are popping up in not only sit-down restaurants and grocery stores, but also fast food joints across the country.

They call it the future of protein: the Beyond Burger uses a mix of legumes, oils, rice protein, potato starch and other vegan-friendly ingredients, whereas the Impossible Burger is made from mostly soy. Both substances are processed into a patty or sausage, or ground up into crumbles for recipes such as tacos.

According to Forbes.com, the plantbased craze is on the rise, with 95% of U.S. grocery stores selling plantbased meat products and an increasing number of restaurants adding similar options to their menus.

Wes Moralez, who owns the Brutal Poodle on South Broadway in Denver, decided to start serving the Beyond Burger in his heavymetal-themed restaurant earlier this year. The plant-based alternative looks and tastes like beef, he said, adding that the product fits his clientele.

“Here we have a niche concept that revolves around heavymetal punk rock,” Moralez said. “In that scene, there are a ton of vegans and vegetarians.”

But the growing popularity and limited supply of the products has presented challenges for some restaurants.

That was the case for Curtis Baca, manager of Steuben’s in Arvada.

“We would never be able to get them,” he said of the Impossible Burger. “So we couldn’t keep it on the menu.”

Instead his restaurant serves a plant-based veggie burger that is made in-house. While he doesn’t see many plant-based eaters, the customers who try the burger alternative

Reasons for jumping on the plantbased bandwagon vary, but many people do so for the health and environmental benefits.

Jerry Casados, a plant-based nutritionist from Parker, switched

his diet 12 years ago after several scares with heart disease, high blood pressure and weight gain. Rather than moving forward with more medical tests, he decided to try a strict plant-based diet, combined with medication, for 30 days.

“My cholesterol dropped about 30 points,” Casados said. “My doctor said, ‘What did you do?’ I said, ‘I changed my diet,’ and that’s the last time I saw him.”

Casados, who worked in information technology, went back to school to become a nutritionist and is now off all medication. He and his wife host a yearly summit to inform others on the benefits of plant-based eating.

The approach, he said, is more holistic.

“All your vitamins and minerals are in the plants themselves,” Casados said. “It heals the body in different ways.”

The screening of “American Tragedy: Love is Not Enough,” a new documentary that follows Sue Klebold’s journey from realizing her son was one of the Columbine shooters to her becoming a mental health advocate, is set for Aug. 30.

The film includes suicide loss survivors’ stories and professionals agreeing on a need for a major paradigm shift away from reliance on therapy for mental illnesses toward a more proactive, universal approach to mental wellness, according to a news release.

Suicide, especially among teens, and mental health issues continue to be a daily problem in society. It is the hope of the makers of this film to increase awareness and action to curb this alarming trend, the release said.

Indeed, as Klebold concludes in the film, it was not love that was missing in her son’s life; it was an ability to cope with despair and suicidality.

This topic is particularly urgent given that suicide is the leading cause of death for Coloradans between the ages of 10 and 24, the release said. Since 2006, suicides have risen 70 percent and mental illnesses 52 percent. Status quo is not working.

American Tragedy has been accepted into the Heartland International Film Festival, an academy award qualifying film festival.

Detainees’ art on display in gallery on Santa Fe Drive White teacups bear impressions of flowers from creators’ homelands

The first arts collective with work exhibited in the new exhibit, “Collectivism” at Center for Visual Art, Metropolitan State University’s gallery at Santa Fe Drive and 10th Avenue is the Detainees at Guatanamo Bay Detention Center, which sets a visitor on edge a bit — who knew? A note says that as of May 2018, 40 men remained there.

There are uniform white teacups decorated by prisoners with impressions of a flower of native origin in their country. Plus, we see photographs of those prisoners … Accompanying the white cups is a dazzling display of photographs of individual flowers, from their countries of origin.

There is also a stack of postcards with repeats of those prints, accompanied by pencils and an invitation to write to one of those men. (A glass

The Bible Speaks – Housing It is distressing to hear that many low-income residents of Littleton may be forced to find new housing elsewhere (July 18 Independent). Having a house, a home, is central to our makeup as humans.

It is one of the paradoxes of God that even though He is spirit & present everywhere, He has often chosen to “dwell” in a “house”. He dwelt in the Tabernacle during Israel’s sojourn from Egypt to Palestine & for years thereafter. Later He dwelt in Solomon’s Temple. He had a house, Herod’s Temple, in Jerusalem in Jesus’ day.

During the future millennium, God will again dwell in a rebuilt temple in Jerusalem.

So where does He dwell today? Today God’s house is not a building but a people, the Church. Christians are the temple of God (1 Cor 6:19). Christ lives in us (John 14:20b, Col 1:27) Praise God for that purifying truth. hfsmail@basicisp.net
