So much has happened since our last issue, where do we even start?

We celebrated our one-year Coasties-versary in April and what a year it’s been.

We are so proud of what we have managed to achieve, alongside our wonderfully talented and supportive team, and you guys - our Central Coast community.

Thank you - we say it every single issue, but boy do we mean it.

Enough of the mushy stuff, let's talk about what our winter issue brings to your hot little hands and keen reading eyes

You will notice a bit of a theme in this issue. Sustainability. Something very close to our hearts, we wanted to showcase the local legends throughout the Central Coast who are making eco-conscious decisions at the forefront of their business goals. We are big advocates for sustainability and endeavour to learn as we continue on our business journey.

As the colder months set upon us, don't forget to rug up and get out exploring this region. We have shared some new openings and plenty of events to look forward to. And while you're out there, don't forget to tag us!

We couldn't go past the sustainable and local sourcing gem of a café, Triple Two in Somersby for our eco issue brunch feature

Food

Recently voted the best café in Somersby and for very good reason: the food is fun and fresh.

Weekly specials like Spanish chorizo and goats cheese quiche complement those café crowd pleasers like house baked pork sausage rolls and eggs benny rolls.

We particularly enjoy the focus on healthy, family-friendly options, read: you won’t find frozen nuggets here!

Coffee is by our local Coasties faves Glee Coffee Roasters. Need we say more.

We are also most definitely here for the epic one-off smoothie creations like Oreo Espresso and Wake Me Up Before you Vovo.

The power duo that is Justin Hyland, co-found of Mumbo Jumbo's and Eddie De Souza, from Bar Botanica, are at it again.

We introduce: LongBrows Jungle Bar.

Justin had a vision, and boy, has he managed to bring that vision to life! Alongside his wife, they have created a paradise inside a shopping centre.

Think South America x Tiki cocktails, DJs and dancing. This venue has your weekend plans covered.

Everything about LongBrows, which is located in the outside dining precinct at Westfield Tuggerah, screams Tiki Bar fun. Welcome to a palm tree sanctuary with floor-to-ceiling wallpaper and fresh fronds sticking out from every corner of this moody space.

Walking into the Tiki wonderland you're greeted by the open bar-style kitchen where you can order from their South American street food inspired menu.

As you head through the seating area, high tables or seated booths with rattan furniture (matching the jungle bar decor) are on offer This is where the true magic happens. Their cocktail list is perfectly curated and ensures your Tiki jungle bar experience is one to be remembered. NO detail has been spared - right down to the glassware the cocktails come in - each with its own unique flair.

An upstairs loft has a bar and tables, perfect as a private function space for your next work party or event. This overlooks the main venue down below.

During the day and into the evening, this venue caters to everyone. With a kid's menu serving a classic quesadilla or chicken strips as well as an outdoor seating area, it makes for the perfect postshopping family lunch.

Your girls’ shopping trip can now end with a delicious lunch and cocktail or two or, if you drag a non-shop-loving companion with you; they can now keep themselves happily occupied, eating chicken wings and working their way through the cocktail list.

From 9pm the real fun starts with DJs on Friday and Saturday nights playing right through to midnight. Like we said, LongBrows Jungle Bar is like nothing Tuggerah has ever seen before.

We caught up with self taught cook Tristan Fraser, AKA the one and only Rigatoni for Toni, who shared his favourite winter warmer recipe.

SLOW-COOKED LAMB RAGU PAPPARDELLE

Method

Preheat oven to 160℃. Heat the lamb fat in an oven-proof pot at mediumhigh. Season the lamb necks well with salt and pepper and brown all over. Remove the necks from the pot and set aside.

Turn the heat down to medium, in the same pot toss in the garlic, stirring briefly Add the onion, carrot, celery, hard herbs, pinch of salt and cracked pepper Sweat for 10 minutes

Ingredients

Serves 4 - 6 generously

4 tbsp lamb fat (use drippings from roasted lamb bones used for bone broth)

2-3kg Full Circle Farm lamb necks (whole or chopped) salt and cracked pepper

6 garlic cloves – crushed gently

Sofrito mix – 1 large carrot, 4 celery sticks, 1 large onion diced (can be done in a food processor if you’re time poor)

A few sprigs fresh rosemary, thyme, oregano

2 bay leaves

500 ml dry white wine

500 ml lamb bone broth** (This can be substituted with chicken or beef bone broth)

400g tin organic Italian plum tomatoes

750ml organic Italian passata **

1 handful of fresh parsley leaves

100g (per person) pasta of choice – we recommend fresh, handmade pappardelle

** Best home-made if time allows!

Turn up heat, add lamb necks back in, tossing with the sofrito mix. Pour in white wine. Reduce for 10 minutes, add in the bone broth, tinned tomatoes and passata. Bring to the boil. Once boiling, take off the heat, cover with lid. Place in preheated oven. Allow to slow-cook for at least four hours. After four hours remove pot from oven, scoop out lamb necks, shred meat off the bones. Return meat to the sauce, stir well to combine. Add in parsley and al dente-cooked pasta tossing with tongs to coat. Serve. Garnish with fresh grated Grana Padano.

If you need somewhere suitable for y kids or pooch, The Tame Fox has covered. They have an outstanding m allowing you to enjoy breakfast, brunc lunch alongside a coffee, juice or somet from their bar. Soaking up the suns while the kids play under the trees at playground is our fave.

On the run or heading for a picnic? Salt Deli will stop you in your tracks. Their ra of gourmet cheeses, deli meats, antipasto is worthy of any picnic baske you prefer something ready-made they epic grazing boards or order from t ciabatta sandwich, filled croissants toasted sourdough menu, where y biggest problem will be deciding which to try first.

Ok let's talk dinner. Bamvino where they believe wine enjoyed with good food and good company is one of life's necessities! We couldn't agree more. The well-thoughtout wine list to accompanies their pizza and antipasti menu. If you’re around on a Friday lunch, we highly recommend their ploughman’s platter special that includes two glasses of wine or beer.

Marble Bar & Grill is truly the place to be if you’re craving a steak, with some of the best cuts of beef available. Their menu is filled with some joyous Italian favourites, a three page wine list that staff can expertly match to your meal choices. A full dining experience.

Hidden within Fountain Plaza is Remi & Co where local produce is combined with the best imported products to make your pasta, pizza, cheese and wine experience truly Italian.

And then there's Yume Japanese! Yume, meaning ‘dream’, bringing the taste and flavours of authentic Japanese cuisine, including Teppanyaki Bookings are highly encouraged.

And lastly, you cannot go past our friends at Six Strings Brewing Co for a frothy ale and mouth wateringly delish eats from the popular Moobi Valley menu.

FULL CIRCLE FARM

A pasture based, regenerative farm located in Dooralong Valley where the food produced doesn’t destroy the planet, but actually improves and regenerates it. From the soil to the sky, Shannon and Kylie Kelly, along with their young children, have created a haven of sustainable farming.

They produce grass-fed and finished beef, pasture-raised chicken, and pastured eggs, all of which have as many nutrients as possible. Full Circle Farm has created a highly sustainable cycle so we can relax knowing we are supporting a local family whilst getting top quality products.

Sustainable by nature April and Heath have created a sanctuary of eco-friendly vintage design, unique fashion and eclectic sounds, online and at their boutique in Long Jetty.

By specialising in second hand items, Tiki La La promotes the idea of reusing and recycling. Their impressive collection of homewares are all sourced from their travels, saved from going to landfill and instead create a stunning addition for our homes. Each piece has a story to tell.

KALULA SWIMWEAR

Kalula's mission is to liberate, support and transform how full busted women look and feel in swimwear, all whilst promoting conscious consumerism. They do not participate in fast fashion; instead, Kalula’s high quality fabrics are developed with recycled nylon, which means that instead of manufacturing new fabrics, they use materials that are readily available and that could otherwise go to landfill.

Each release is a limited edition to purposefully maintain uniqueness, reduce waste, engage a skilled workforce and ensure sustainability is a priority.

In addition, their packaging, bikini liners and stickers are compostable, the branded wrapping is made from recycled paper, the bikini liners and stickers are biodegradable, plus the swing tags and thank you cards can be planted to grow beautiful wildflowers! Kalula hasn't missed a trick.

RIGATONI FOR TONI

Founder and Creative Director Tristan Fraser's passion for eating seasonally, sustainably and locally is how Rigatoni for Toni was born. During the lockdown of '20 his idea became a reality as he started

rolling out dough for takeaway pasta nights at his good mates' café in Avoca (Like Minds). Since then the collaborations have continued, the menu expanded to more than just pasta and the eco focus been ramped up. The vision of being an entirely sustainable takeaway option taking flight

Sourcing his produce locally, ethically and regeneratively goes without saying, but Toni has stepped it up a notch and also uses bio-degradable packaging along with researching suppliers and companies' sustainability practises before utilising their products. All this making for the most incredibly, superb and mouthwateringly delicious meals.

COCO PARLE HAIR GALLERY

The inclusive hair salon not only helps you look and feel beautiful, but minimises the impact on the planet whilst doing so. The team has incorporated eco-friendly practices into every aspect of their work.

They partner with an organisation called Sustainable Salons, who collects their hair, plastic, chemical, foil and paper waste, and have diverted over 370,000kg of metal from landfill, recycled over 400,000kg of paper and kept over 350,000kg of plastic in circulation. Talk about some serious impact!

The handmade pieces, most named after the suburbs they've originated from, all come with a personally written backstory about the origin of the materials. There’s much more than meets the eye with your new serving platters, candle holders and chopping boards.

Timber is a durable and long-lasting resource with so much character, but sadly much of it can end up in landfill. Secondlife Recrafted mitigates some of that unnecessary waste by instead creating stunningly unique homewares for us to enjoy

When out with the kids, my family’s Friday evening spot is The Haven Kiosk, Terrigal the lobster and prawn roll, fish burger and oysters are excellent. Sit by The Haven and bring a bottle of your favourite drop and you’ve got yourself the perfect picnic.

Likemind Avoca's garden is our go to for a coffee and pastry on Saturday morning. We also love the mini farmers markets on Wednesday arvos. Plus their café has proudly seen zero food waste for the past nine years! Likewise with Burnt Honey at Copa where you won't find paper coffee cups - either dine in, BYO cup or borrow a mug.

On the first Sunday of every month, we meet at Macs Beach Cafe to enjoy local music, burgers for dinner and enjoy a couple of cold beers or wines with mates.

At just 16 years of age, Saskia has been making a positive impact on the environment since she was a young child. Her mother founded Take 3 for the Sea when Saskia was only one, so she has been involved in environmental activism from a young age.

Saskia's passion for protecting the environment continued when she was a member of the Green Dream Team at Holgate Public School. Their mission was to protect turtles by reducing small plastics and raising awareness about climate change and the impact of plastics.

In our hunt for an eco-warrior, we found so much more. A pianist, an artist, a dancer and a lover of nature.

2019 saw Saskia write and deliver a speech at the School Strike for Climate protest in Gosford, demonstrating her dedication to environmental advocacy. Despite her passion for environmentalism, Saskia was awarded a scholarship for Central Coast Grammar School for her talents as a pianist

Aside from her dance and piano talents, she also has exceptional artistic talent. Hand-drawing and painting pictures of birds during her time on Masthead Island (a remote island off the coast of Gladstone).

That’s where, in April of this year, she spent two and a half weeks and set up her own rehabilitation clinic to care for these beautiful birds As part of a team on a clean-up mission, she spent hours cleaning sticky Pisonia tree seeds from birds' feathers and helping newly hatched baby turtles find their way to the sea.

In 2021 and 2022 she attended the Take 3 Youth Summits where she caught the attention of the international brand FJÄLLRÄVEN. They were so impressed by her commitment to their values that she was later named one of their Australian Youth Ambassadors. As part of her work as a Youth Ambassador, she has written an article that tackles society's fast fashion addiction.

Saskia's dedication to environmental activism is truly inspiring, and we can all learn from her commitment to positively impacting our planet.

PEARL BEACH TO PATONGA WALK

The Patonga to Pearl Beach Walking Track is a stunning 3.8 km walk located in the Bouddi National Park. The track is a part of the Great North Walk and takes about one to two hours to complete, requiring a good level of fitness. It offers a unique experience of exploring our beautiful coastal scenery.

Beginning at Patonga, following the coastline, offering stunning views of the Hawkesbury River and the surrounding bushland. The path is well-maintained and includes a few hills that can be challenging but are definitely worth the effort

Aside from the native wildlife you can spot along the way, another highlight of the Patonga to Pearl Beach Walking Track is the picturesque Pearl Beach, which is perfect for a refreshing swim or a picnic lunch. The trail also offers a glimpse of the beautiful rock formations and caves that are unique to this area.

There are no facilities available on the track, so it's essential to pack all necessary supplies.

The Patonga to Pearl Beach Walking Track is a must-do for anyone looking to explore the stunning natural beauty of the Bouddi National Park.

May signals the arrival of the magnificent whale migration on the Central Coast, and we've got the inside scoop on the top whale watching spots.

Every year between May and November, humpback whales grace our region's waters as they journey from Antarctica. It's a truly majestic spectacle, and lucky for us, the Central Coast offers some exceptional vantage points.

Here's our favourite spots to catch a glimpse of these awe-inspiring creatures, with the added bonus of a few nearby cafés so you can grab a warm drink while you're at it.

Captain Cook Lookout, Copacabana

Although it requires a bit of a trek, this is one of the best vantage points on the Coast.

FIGHTING FAST FASHION

Upon gaining an awareness of the impacts of fast fashion a few years back, Coasties co-owner and editor Nikki Tiedeman decided to take a stand.

What exactly is fast fashion? Think brands that produce high volume, low quality, cheap garments which leads to over consumption and a "throw away" culture and approach to clothing.

The question has to be asked; "How can i be possible to produce t-shirts for a mer $5, without creating human rights issues underpaying factory workers or harmin the environment?"

Fast fashion's impact on the environment i scary when you start to dig deeper. Exces waste of worn and unworn items has led t massive "fashion graveyards" and item ending up in landfill. It's said that less tha 11 per cent of brands have recycling policie in place. When it comes to thei "sustainability practices" misleading an vague information is rife. In 2019 th industry was responsible for eight to 10 pe cent of the world's carbon emissions.

All this, painting a pretty dreary picture an begging the question of how to even star tackling the issue?

Ever the optimist and a firm believer in many small steps leading to big leaps, our very own Coasties co-owner Nikki decided do her little bit.

The plan to go a year without buying any new clothes (with three exceptions to this rule - being undies, swimmers and shoes). And, only allow herself to buy from op shops and vintage stores. That was two and a half years ago and she is still going strong.
