Well hello, summer! You’re back!

It’s hard to believe spring is already behind us, and what a spring it was.

We had the absolute pleasure to be judges at the Business NSW Awards for the second year, where we got to rub shoulders with some of the Central Coast’s elite business people. Well done to all the nominees and winners on the night

We have continued our partnership with Star 104.5, joining Gina & Matty at schools across the Central Coast for their ‘Back to School’ broadcasts. We were also live with them broadcasting from Brian Hilton when they gave away a car to a very deserving Danielle - congratulations!

You’ll continue to catch us live on air on Friday mornings covering what’s on for the weekend ahead with our Central Coast Weekender segment.

Looking ahead at what summer has to offer, we are so excited about the events our region will experience over these months, the calendar is chock full! Whilst Nikki is jetting back to South Africa over this period to spend some muchneeded time with her family, Tash will be (mostly) local with hers.

This issue is our BIGGEST issue yet, packed to the brim with some extra special content, especially within the wellness section for all those NY’s resolutions.

LEGEND, TERRIGAL

When the neighbouring cafe is telling their customers about how good your toasties are... I guess you know you do bloody epic toasties! And it goes without saying the coffee is legendary here too. Excuse the pun. But also, jokes aside, we reckon it is actually the best coffee on the Coast. Safe to say that Pine Tree Lane in Terrigal has welcomed Legend with open arms. It might be the little sister to their West Gosford cafe, but there’s nothing little about this brilliantly buzzing spot. @legend.terrigal

ACAI BOY, OURIMBAH

All your acai and dessert dreams in one, our very own late-night dessert bar has opened in Ourimbah. Head in until 10pm, seven nights a week to get your fix and from midday on weekdays or 10am over the weekend for your early acai treat.

Our colouring in competition saw a flurry of young artists submitting their masterpieces. Our judging panel had such a hard time picking, so we wanted to feature a few standout favourites! A massive thank you to all the students and parents who took the time to enter, we are so proud of everyone’s incredible efforts

Meet Wynnie Blenheim, our amazingly talented nine-year-old cover star.

Wynnie, a Year 3 student at Central Coast Grammar, let out a huge “AMAZING!!! I can’t believe it!” when she found out she’d won.

Her entry took hours of hard work, and despite feeling tired the night before it was due, Wynnie pushed through, showing great perseverance to ensure it was finished and submitted on time.

She loved adding her own flair to Brent’s artwork, or in her words, “Biffy-ing it up!”

Art is one of her favourite subjects, and she was already a massive fan of @biffybrentano’s work, she even has one of his cockatoos hanging in her bedroom. She’s also an avid fan of dancing, the beach, soccer, Oztag and, of course, her family and friends.

Congratulations Wynnie, we are so proud of you!

No morning feels quite right without my daily stop at The Daily Coffee Brew Coffee’s always on point, the toasties are to die for, and the friendly team never fails to brighten my day. I leave with a big smile and my cup filled.

BamVino Deli and BamVino Cellars at Erina Heights have my heart The enormous selection of cheeses, meats and international wine and spirits always impresses. Their knowledge and cheeky taste tests never go astray. My go-to - their truffle manchego cheese and a bottle of Malbec.

Terrigal’s Miki Finn has something for every occasion which is a blessing and a curse. Even if I pop in just to chat with the lovely owner, Kelly, I always walk out with a new outfit. I have an addiction to matching sets (yes, I could have worse addictions) and the girls always know just how to feed it.

Fill my appetite

With cocktails that are too easy to drink, Asian Fusion that is extremely tasty, and a killer playlist, Coco Bar and Dining in Terrigal is the perfect spot to kick back, cocktail in hand, with the sound of the ocean nearby.

Summer’s here! And that means so is one of our favourite activities - trips to the beach. Enjoy our top tips and favourite pup friendly spots

We’re spoilt for choice with dog friendly beaches on the Central Coast, both on and off leash. So, for the perfect beach day with the pups enjoy this handy guide.

Shade and water: you’ll need plenty of it; we suggest avoiding the hottest part of the day. We take collapsible water bowls and an extra beach umbrella so there is enough shade for all Pro tip: digging a hole helps keep bellies cool on the sand.

Furry pups? If your dog has a long coat like us, a microfibre towel saves the car seats. Once home a good blow dry prevents hot spots developing.

Be a good hooman: Don’t forget extra poop bags and keep your pup out of the protected dunes.

Always keep control of your pooches to ensure the beach stays fun and safe for everyone.

Perfect for a late afternoon romp. The calm water offers ideal padding conditions for dogs and their people.

Terrigal

Beach

Start with an early morning dip, then enjoy an on-leash stroll from the lagoon to the local cafes for brunch.

North Shelly Beach

Ideal for a long, leisurely walk with a coffee in hand. We love the northern end with its rock shelf there are always plenty of other dogs to meet and play with.

Coasties Weekend Walk

GLASSON TRAIL

KINCUMBA MOUNTAIN

3.7KM, 1.5 HOURS RETURN

Located within Kincumba Mountain Reserve you'll find Glassons Trail, a moderate hike. Although take "moderate" loosely; we completed it with a five and two year old in tow, with (mostly) minimal whinging about wanting to be carried! Always a win.

This is an acceptable 3.7 km out-andback trail that takes you through varying terrain and landscape. The kids particularly loved spotting the Burrawong aka "Grug" trees along the way and pulling up for a picnic perched on the top of some boulders about midway through the walk, just before reaching the overflow car park and just after taking in the vista at the Crawford Lookout.

At the top of the trail, you'll come to the vast grassed picnic area at Honeman’s Rock where you'll also find the mud-brick buildings of the old Kincumba Mountain Kiosk A unique venue established in 1985, which used to cater for intimate weddings, functions and events. Despite it no longer being in use, it's a fascinating building nonetheless. Up here too, is where you'll find the loos.

If you’re doing this sans kids we will say this - the solitude on this trail is a treasure, it’s rare that you’ll encounter others along the path, making it a true haven for those seeking a peaceful, uncrowded walk. X-rays to physio, blood tests to specialist medical attention, the Central Coast’s first walk-in emergency clinic offers fast, comprehensive care

When Coasties caught up with local emergency specialist Dr Matthew Ingram, he was gearing up for another busy shift. He knew, without a doubt, the people he was about to help would need urgent care but would have non-life-threatening problems and could be cared for safely and efficiently outside of the hospital setting.

That is a scenario staff in emergency care everywhere face every day with patients, but it’s also a scenario the EUC team are helping with here on the coast. Nine local emergency medicine specialist doctors have teamed up to bridge the gap between the emergency department and the tricky hunt for a same-day GP appointment with the Central Coast’s first walk-in Specialist Emergency and Urgent Care Clinic at Tuggerah.

“We’re all locals we’ve all been there when a kid gets hurt on the footy field, or we misjudge a gardening moment and end up cutting ourselves instead of the roses,” Dr Ingram said.

“And we know how stressful it is when something’s not lifethreatening but definitely can’t wait a few days.”

The clinic is open seven days a week, 365 days a year for walk-ins. Patients are greeted by a senior emergency nurse within minutes, given immediate attention, and treated by an emergency specialist doctor onsite. Need an X-ray? Done. A pain management plan, prescriptions, blood tests, or physio? You got it. All of this, right there, on the spot. Talk about peace of mind, right?

“We’re here to help people quickly, because no one enjoys waiting, especially when they're in pain or discomfort,” Dr Ingram said.

Since opening the EUC has helped more than 1,000 locals get back on their feet without the need to shuffle between appointments or wait! At most, on a busy day, patients might wait 15 to 20 minutes Pretty impressive, right?

Healthy Slow-cooked Pulled Pork

With over a decade of experience working with top brands, Camilla brings her passion for health and longevity to every recipe. Get ready to enjoy her delicious pulled pork which is dairy, gluten and refined sugar free!

Protein:

1 kg pork shoulder (from Saratoga Meats)

Dry Rub Ingredients:

3 x tsp of fennel seeds

1.5 tsp black peppercorns or cracked pepper

3 x tsp of pink himalayan salt

1 x tsp groung cumin

1 x tsp cinnamon

3 x tsp smoked sweet paprika or hot paprika

2 x ground chillis (optional)

Slow Cooker Ingredients:

½ diced tinned tomatoes

⅓ cup apple cider vinegar

3 x tsp balsamic vinegar

1 tbsp of coconut nectar or maple syrup

2 cloves garlic minced

2 bay leaves

Method:

Grind the dry rub ingredients in a mortar and pestle, rub all over meat and marinate in the fridge overnight (or 4+ hours)

Sear the meat in a pan on all sides in coconut oil and put into slow cooker

Add the slow cooker ingredients and stir

Cook on high for 6 hours

Get two forks and separate meat, returning to the juices

Cook on low for one more hour

To Serve:

We suggest either homemade coleslaw and wraps, or serve alongside some brown rice, quinoa or sweet potato wedges.

Simply add a dollop of guacamole or any condiment that tickles your fancy and you’ll have one brilliantly delicious meal
