That Autumn Chill Is In the Air

Did you feel that ‘nip’ in the air the other day? My oldest daughter and I used to have this personal tradition, just between the two of us. Whomever felt that first nip, that first moment when we knew for sure that autumn had arrived, we would call the other. This year no one called anyone because neither of us wanted to admit that summer is coming to an end.

Although the Autumnal Equinox, September 23rd this year, has a date and a time, fall really comes in stages. It is that first morning you notice the neighbor’s Burning Bush begin to change from pale green to amber on its way to firey burgundy. It is the first moment we realize we need another blanket on the bed. It is when we understand that the fuzzy hairs on our horse’s fur coat need to be taken seriously. And dozens of other little things that remind us autumn is coming.

Over the next two months the countryside is going to come alive with color in the form of changing leaves, pumpkins in the fields, crisp cornstalks and little red wheel-borrows along garden paths waiting to be filled. And in among all those changes we are going to try to fit as much living as we can into what remains of this warm season. We have no shortage of options as to how to spend the rest of our free time so check the local on-line calendars and just try to keep up!

On page 15 of this Round Up you can find out all about Ponderay Neighbor Day. This is an all play, true family event that’s free to the public. Not only is there something for just about everyone to enjoy, it is also a great place to learn about what the City of Ponderay is up to in the coming years.

Hickey Farms is at it again with an even bigger and better harvest celebration through the month of October. Picking your own pumpkin is just the beginning. Check out the ad on page 15 and find Hickey Farms on Facebook.

Again this year, as advertised, we have our coloring contest over on page 19. Kids 10 and under are welcome to participate. As usual we will have prizes for the winners and all the entries will be on display in the store between October 31 - November 15 for viewing.

The Farmers Markets are still going strong in the area even as the gardens are slowly being put to bed. This is the time of year when we ‘hurry up and get it all done’ so we can play more later. We know when the colors have finally left the landscape, burnt orange and red giving way to bright blue against crystal white we need to be shut down and ready for the long winter filled with its own playground. And we do love to play in the winter.

So even as I have felt that nip in the air I plan to enjoy every moment of the coming seasons and try not to rush them! Happy Autumn

Home Remedies of Days Gone By

Once upon a time in the world there were not many doctors.There were, however, health practitioners of a sort whom collected all manner of information on how to cure most any ailment. From secret stones to herbs and chants, ‘remedies’ came in many forms and some of those healing avenues have been a bit odd.

In one case an herbal practitioner by the name of Aunt Sadie was called upon to treat a child suffering from Scarlet Fever. The local doctor had given up as there were no antibiotics at the time. Aunt Sadie, undeterred, spoke lovingly to the little girl and gave her a drink of a special brew. Then Aunt Sadie announced that the child’s name should be changed so that the Angel of Death would lose sight of his next customer. Aunt Sadie then proceeded to pray for the little girl baptizing her in the name of the Father, The Son, and the Holy Ghost using the newly minted name of Mary Ann. Sadie referred to the little girl as brand new and bound to grow up and marry. In fact, Aunt Sadie expected an invitation to that future event. Within the day little ‘Mary Ann’s’ fever dropped and she soon recovered. Mind over matter? We may never know.

Stories abound of elder men and women in communities dating back to the 1920s and 30s who could stop bleeding. In most cases they didn’t even need to be near the bleeding victim. Some however did need to touch the patient and often quoted scripture upon which the bleeding would stop. In the event this did not work an old Native American remedy for bleeding was to go out in the barn or shed and grab a big gob of cobweb and lay them on the wound.

Do you remember charcoal-and-pepsin tablets for stomach ache? Or the famous garlic infused gum of the ‘asaphidity bag’? This gem was made of asafetida, a resin from an asiatic plant in the parsley family. The resin was fine as were the often sweeter spices kneaded into it such as cloves and ginger. But when garlic was added to the mix this concoction was believed to keep the wearer from contracting any common winter diseases. It may have been the garlic that kept any sickness away or it may have been the smell that kept the general population at a distance. Who knows?

There is just something about those old remedies and the mysterious aunts, uncles, and neighbors whom administered them. We seem to have lost something precious in the healing process. Did these practitioners cure us or did our minds and bodies plus their compassion a part, we may never know.

The Horse’s Counter Offer- Eliminating Unwanted Behaviors

Every year I have people who call or email asking for help because of dramatic and dangerous behaviors they experienced with their horse. From bolting to backing while mounting up, to herd bound aggression, to pulling back when tied to a hitching post or in a horse trailer, each incident led to building anticipation as to when the next traumatic event would occur.

Frequently when horses initially try to tell humans they are having a problem, they are ignored if their behaviors are not intimidating enough to be believed or addressed. A common response is, “Oh he just does that.” Horses do not randomly act dramatic; there is always a reason, even if the underlying root cause is not apparent.

If the horse’s small unwanted responses are repeatedly ignored by the human, their mannerisms evolve into increasingly dangerous behavior. People will comment, “All of a sudden he did _________.” In reality, there are always warning signs of a horse’s developing stress, fear, resistance or insecurity beginning perhaps months, weeks, days or hours before the actual unwanted event occurred.

Being a prey animal, horses operate on “fear-based survival.” If unsupported by the human, the horse has to withstand an experience however he deems necessary, which usually involves excessive and fast movement.

This leaves the rider apprehensive and at the mercy of the horse’s decisions.

A substantial contributor to unwanted scenarios is due to people misinterpreting horse behavior by filtering their perceptions with human-based emotions. This can cloud their perspective and interactions with the animal and creates a lack of leadership in the partnership. This increases the chance of accidents or overwhelming scenarios for both the human and the horse.

The time to build trust and respect with the horse is not at the pinnacle moment of stress when he is having an emotional, mental and physical meltdown. So how can riders improve the relationship with their horse and decrease unwanted behaviors? A good start is to address both their own and the horse’s interpretation of pressure and timing.

Pressure is a primary way people communicate with horses, whether it is spatial or physical. Riders need to remember to use a sliding scale of energy when interacting with the horse to learn what intensity it takes to receive an acknowledgment.

One basic way to begin assessing the horse’s response towards physical pressure can be while standing on the ground; experimenting with drawing the horse forward a step or two just using the lead rope.

If the horse’s response to the direct pressure of the rope is “heavy,” if he does nothing, or pulls his head away or downwards, rather than softly stepping forward to create slack in the taut rope, then the concept of how the horse interprets pressure needs to be addressed.

If defensive or avoidant towards minimal tension in the rope, the resistance from the horse will magnify as more pressure is used to communicate.

This leaves the rider without an effective way to influence and support the horse throughout the ride. Whether using the lead rope, rein, seat, or leg, the horse should offer a stress-free, soft and immediate response towards physical pressure.

A superficial quick “fix” riders attempt to use with a resistant or “heavy” horse is the use of severe equipment that gives the illusion of improved physical control of the horse. Tack does not control the horse, his brain does. If the horse’s mental concern towards pressure is ignored, he will respond with an increased defensiveness towards harsher equipment, which is solely designed to physically contain the horse, but not improve his interpretation of pressure.

The first goal is to clarify physical pressure as a positive “tool” when communicating with the horse. This allows a person to influence a horse’s thought, which will then affect his physical behaviors and movement.

Next is learning how to direct the horse’s thought without his entire body moving. This teaches his brain to be clear as to what his “job” is, then to offer specific movement when asked.

Riders are often shocked when they realize the horse is automatically “leading with the hindquarters.” This occurs when the horse offers movement with his rear feet as soon as the reins are picked up, without ever mentally addressing or committing to what the rider has asked. If the horse’s thoughts are not focused on the task at hand, his body has very little chance of offering soft, willing and confident movement through the scenario.

Why does it matter if the horse can address the human’s input, softly look where he is going and adapt his energy? How safe would a person feel driving a car with a loose steering wheel or a gas pedal that only had one speed? Yet people ride 1,000 lb. emotional prey animals with hardly any steering and way too much gas pedal.

Horses continually have “counter-offers” to whatever is asked of them. It is the human’s responsibility to address each thought/behavior the horse offers. Through a process of elimination, the horse can learn how to search until he focuses on the original task. If allowed instead to fixate on his thoughts, the horse will be unable to consider the human’s input. Timing is another crucial factor that challenges even the most experienced of riders.

Logs are plentiful in most mill yards and log buyers are being conservative with pricing. In fact, a few sawmills are still not buying private logs in order to reduce inventories. Compounding the situation is the fact that lumber prices have fallen significantly since last fall and remain at levels well below a year ago. More recently, cedar prices have moved further downward. The United States, Mexico, Canada Agreement - USMCA Where Are We Today?

NAFTA, the North America Free trade Agreement, came into force back on January 1, 1994. The impetus for a North American free trade zone began with U.S. President Ronald Reagan, who made the idea part of his 1980 presidential campaign. After the signing of the Canada–United States Free Trade Agreement in 1988, the administrations of U.S. President George H. W. Bush, Mexican President Carlos Salinas de Gortari, and Canadian Prime Minister Brian Mulroney agreed to negotiate what became NAFTA. Each submitted the agreement for ratification in their respective capitals in December 1992, but NAFTA faced significant opposition in both the United States and Canada. All three countries ratified NAFTA in 1993 after the addition of two side agreements, the North American Agreement on Labor Cooperation (NAALC) and the North American Agreement on Environmental Cooperation (NAAEC).

Passage of NAFTA resulted in the elimination or reduction of barriers to trade and investment between the U.S., Canada, and Mexico. The effects of the agreement regarding issues such as employment, the environment, and economic growth have been the subject of political disputes. Most economic analyses indicate that NAFTA has been beneficial to the North American economies and the average citizen.

When president Trump came into office he sought to replace NAFTA with a new agreement and has achieved this with the USMCA. The United States, Mexico and Canada have reached an agreement to benefit American farmers, ranchers, and agribusinesses. While agriculture has generally performed well under NAFTA, important improvements in the agreement will enable food and agriculture to trade more fairly, and to expand exports of American agricultural products.

America’s dairy farmers will have new export opportunities to sell dairy products into Canada. Canada will provide new access for United States products including fluid milk, cream, butter, skim milk powder, cheese, and other dairy products. It will also eliminate its tariffs on whey and margarine. For poultry, Canada will provide new access for United States chicken and eggs and increase its access for turkey. Under a modernized agreement, all other tariffs on agricultural products traded between the United States and Mexico will remain at zero.

The top priority for America’s dairy industry in this negotiation has been for Canada to eliminate its program that allows low priced dairy ingredients to undersell United States dairy sales in Canada and in third country markets. As a result of the negotiation, Canada will eliminate what is known as its milk classes 6 and 7. In addition, Canada will apply export charges to its exports of skim milk powder, milk protein concentrates and infant formula at volumes over agreed threshold, which will allow United States producers to expand sales overseas.

For the first time, the agreement specifically addresses agricultural biotechnology to support 21st century innovations in agriculture. The text covers all biotechnologies, including new technologies such as gene editing, whereas the Trans-Pacific Partnership text covered only traditional rDNA technology.

Specifically, the United States, Mexico, and Canada have agreed to provisions to enhance information exchange and cooperation on agricultural biotechnology trade-related matters.

Significant Commitments to Reduce Trade Distorting Policies, Improve Transparency, and Ensure Non-Discriminatory Treatment for Agricultural Product Standards Building on NAFTA, the United States, Mexico, and Canada agreed to work together in other fora on agriculture matters, improve transparency and consultations on matters affecting trade among the countries.

NAFTA remains in force pending the ratification of the agreement. The agreement still awaits ratification in both Canada and the U.S. It is expected that this process will be completed by fall of 2019.

Weed of the Month : Corn Spurry

It sure goes quickly…summer, that is. We’re looking into the face of September—already on the doorstep of fall. That’s not all bad, as hunting season and football will soon be upon us. It also opens up another window for weed control, as we should have a few good rainfall events under our belt by the end of the month to wake the drought stressed vegetation from its temporary semi-dormancy. Fall can be a great time to get extended control of both noxious weeds and nuisance native weeds in both pasture and turf sites, with certain herbicides. Get in touch with the Bonner County Weeds office to help tailor a fall weed control plan to best suit your situation.

Weed of the month is Corn Spurry (Spergula arvensis), an interesting specimen in the carnation family. I’ve had a few samples of this dropped off at my office over the course of this last season (and had it reported to me for the first time three years ago), so I figured I would share it in one of my installments, as it may become more of an issue going into the future for growers. It’s an annual from Europe that infests most western states in the US to some degree. It’s not a state or county listed noxious weed, just an agricultural nuisance. Identification is relatively easy, especially once you have seen it for the first time; fleshy stems bolt to about 1 foot tall with cord-like leaves arranged in whorls up the stem. Flowers are white and very small, less than a quarter of an inch wide. The flowering phase varies since Corn Spurry can be either a winter annual or summer annual—I’ve had it reported [and confirmed] as both in Bonner County. Almost reminds me of a submersed aquatic weed that happens to grow on land; that was my first impression.

Generally, Corn Spurry is introduced via contaminated seed; thus it is primarily found in seeded pastures and crop lands. Being an annual, it only spreads by seed, so you’re good if you knock it out as soon as it shows up.

This one is a pain to deal with—it gets tangled up and clogs mowing and hay harvesting equipment. It also has an unpleasant odor, on top of the fact that it may be toxic to livestock if large amounts are consumed (more apt to happen from contaminated hay due to the weed itself being unpalatable).

Prevention is the control measure of choice, by far. Actually, prevention is the control measure of choice for all weeds, but it’s not always possible with certain weeds having a well-established seedbank across the entire locale. With the cases of Corn Spurry that I’ve been made aware of, the common denominator is contaminated seed. Know your source! Ask questions when you purchase your crop seeds. If prevention eludes you and it does show up in your crop, there are a couple of options. In a stand of pasture grasses, an herbicide treatment with chlorsulfuron (trade names include Telar®, Glean® and generics) should take care of it. If it came in with a broadleaf seed batch, it may be best to go the mechanical route and start over—work the field as soon as you notice it to make sure it doesn’t create a seed bank. Either way, Corn Spurry is an expensive issue if you fall victim to an infestation.

Again, fall is a great time for controlling weeds. Get them out of the way to where the perennial grasses have a head start in the spring—the results are satisfying. I will focus my November installment around a turf weed, as you can make treatments on a lawn up until it’s snow covered or frozen solid.

That thought was shudder worthy, I’m not ready to even think about snow or ice (unless it’s in my glass). Soak up the last remnants of summer!

BC Gardeners Hold Plant Sale and Fall Classes by Ann Warwick Fall is a great time to plant flowering perennial plants. The BC Gardeners Association will hold a plant sale on Friday, September 13, from 9am to 6pm, in front of the main entrance to Bonner Mall. Flowering plants are featured, but berry plants, house plants and possibly some fall vegetables will be included. Come early for the best selection.

The Bonner County Gardeners Association will begin the Fall Home Horticulture Series of classes on Wednesday, September 18. Each class takes place on Wednesday evenings from 6 to 8pm. The location is Suite F in the Ponderay Events Center building at 401 Bonner Mall Way. Cost for each class is $10.

Here’s the schedule: September 18: Landscaping with Native Plants, presented by Gail Bolin and Bob Wilson. Learn the advantages of a garden featuring plants that are habituated to our climate, and that, once established, need little care to thrive.

September 25: Saving Seeds from your Garden, taught by Manuela Eiring.

Discover how to save seeds from those special plants and how to store them for best results. You will learn some important considerations in selecting plants for saving seeds.

October 2: How to Grow your own Garlic, with Janae Dale. Garlic is one crop that is planted in the fall. Janae will teach the class what soil conditions are needed for wonderful garlic, when to plant and how, and the calendar of garlic growing.

October 9: Season Extenders, presented by Nancy Hastings. Your garden does not have to end with the first frost! There are ways of prolonging the garden season with a few simple tools.

WASTE NOT THAT GARDEN WASTE Fall is approaching, and with it, the garden begins to prepare for winter.

Garden veggies have given all they can to our larders, and the flowers that delighted us all summer are fading away. We begin to think of the annual garden clean-up, when we cut back perennials and remove vegetation from the food garden. What do we do with all that green material? Please don’t say you take it to the dump! Not only does that material decompose among plastic, metal, and other non-organic materials, it produces odors and methane gas. Would it not be better to put all that material to a good use?

Fall is an ideal time to start a compost pile. The materials are available and free. Whether one has a formal bin or just a heap, putting a mass of green matter in a compact space will jump start the new compost project, and more is better. If your own garden does not produce enough waste to make a good sized pile, your neighbors are likely to be glad if you take theirs.

I begin with a base of material that is slower to break down, such as raspberry canes. I cut them into short (12” or so) pieces and put them at the bottom of the pile. Next, add all the green vegetation you can get your hands on.

Stomp it down to compact it somewhat, then add water, and more water, and more green matter. Add your kitchen waste, except meat, dairy and grease, to the pile. Kitchen waste is generally nitrogen rich and will stimulate the composting. Add some manure and bedding if you have it. More water, stomp again. After a few days of keeping the pile moist, it should start heating up in the center. Check it on a cold morning, and you may see steam escaping. This is a really good sign, as it means the pile is decomposing fairly rapidly.

Keep adding material as it becomes available. A large compost pile is good in the fall, as the more there is, the less likely the heap will freeze completely. Even after it snows, keep adding kitchen waste--if animals are a problem, cover the pile with chicken wire or other light fencing to deter them. Let it snow and freeze and sit there all winter, and by spring, you will have some wonderful compost to add nutrients and soil conditioning to your garden. And, it is free!

Being Prepared is Half the Battle

It would appear that the mainstream media takes great pleasure in scaring the daylights out of people about every ten minutes. If it’s not a flesh eating bug, it’s a rogue asteroid. If not that then the economy is about to implode.

When that saw wears thin they remind us we are overweight, not getting enough sleep, have a parasite living inside of us, or aliens are on the way via a planet on a colision course with Earth.

Although it can be a challenge to keep all the various crises we are faced with in check, keep in mind that except for the aliens and the asteroid, we actually can be fairly well prepared for most anything we may experience.

And this does include flood, tornado, wildfire, earthquake and the occasional snowstorm. But being prepared is half the battle.

Here in north Idaho and north western Montana we have been known to experience all of the above so we know we should take precautions to care for our family, animals, and home to the best of our ability when a crisis hits.

The reason everyone talks about preparedness this time of year is because it can be very, very difficult to get help if something goes wrong way out on the back 40 in the winter months and we do not have access to both health care and proper tools. So for those of us needing a reminder to get this part of our life in order, here we go.

We DO live in an earthquake zone. Although they do not happen very often and are usually about 4-5 on the Richter scale our quakes have all the potential of the big boys down south to reach a 7 or better.

It is going to snow. It may be a couple of feet or it may be 5 feet deep when it is all said and done.

We are going to have destructive wind events. Things are going to fall over, smash cars, hit livestock, and possibly come through the roof.

We are going to lose our electricity at some point.Our local power companies are great at getting repairs done but the potential to be without power for several hours or days does exist.

The First Aid Kit: Everyone needs two: one for the car/truck, and one for the house. And I would recommend one for the barn as well. Animals can be wounded as well as people in an event.

The Fire Extinguisher: Everyone needs one in the home, the barn, the boat and the truck, no exceptions. If you have never used one, go to the local fire station and ask for help.

The Medicine Chest: From ibuprofen or other anti-inflamatory medica tions to epi-pens, inhalers, burn creams, antiseptic washes and creams, to rubbing alcohol for sterilization and clean gloves, this chest needs to be well stocked and easy to get to.It should also have instant cold packs and a couple of rolls of vet wrap. That stuff will hold everything from a bandage to a splint.

Water: Every person and pet in the home should have access to at least 2 gallons of fresh water per day. This can be held in a few gal lon containers for easy access in a hurry or with a low cost clean barrel with a spigot out in the garage or in the greenhouse. The need for clean water will never go away and it always seems to be among the first things we need in an emergency. Rotate it out every couple of weeks or so.

Food: Think less about beans and rice and more about the normal foods you and your family eat. Keeping canned fruits and vetables, meats, canned beans, sauces and quick bread mixes will allow for heating foods on the wood stove, or even cooking on the grill. Be sure to have a few comfort foods in the pantry for game night when the lights go out. Hot chocolate mix, nuts, graham crackers and even over the fire popcorn can be fun!

Snow Removal: If you live anywhere out side of the city limits, back on a country road; if you are handicapped in any way, if you don’t have a heated driveway or a way to remove your own snow your self, you need to find a reliable snow removal person. Do it before winter because if you are not already on the client list you may be snowed in for a while. And it won’t be the snow plowers fault.

This goes for roof care as well. be sure you know the snow load of your home and outbuilding roofs. This is easily discovered from your contractor.

Wood heat? Make Sure Your Chimney Is Clean: Every year during the wood burning / home heating season lives are lost to homes that caught fire from faulty or poorly managed chimneys. This is serious and if you are new to wood heat be sure to consider this very simple safety measure. Consider having a professional chim ney sweep inspect and clean your chimney and the condition of your stove or fireplace.

Extra Fuel: Although keeping gasoline on hand in 50 - 100 gallon barrels is mostly a farm need from the past it never hurts to have a couple of 5 gallon cans filled for those surprise emergencies.

The Naturopathic Path to Primary Care

When I first started practicing naturopathic medicine in Idaho close to 30 years ago, I dove right into the licensing efforts with the hopes to be able to practice to the full scope of my education as a primary health care provider.

It has been quite a tumultuous, disappointing journey. As Idaho has been an unlicensed state surrounded by licensed states, there are many different kinds of naturopathic doctors, whose interests clashed during these licensing efforts. Over the years I have met many skilled naturopaths who didn’t have the training that I had. That’s what kept me going to keep trying to find a compromise.

However, our efforts to have a grand-fathering clause in a bill that passed legislation failed miserably to the point that the licensing board got shut down.

The bill lingered for about 10 years until legislators, upon reintroduction of and further resistance to the bill, withdrew it completely. Unfortunately that led to even naturopathic labs like US Biotek (food allergy and environmental testing) or Genova (functional medicine testing) not offering their services to us anymore, while midwives, nutritionists, and nurse practitioners were still able to do so. Very frustrating to say the least!

So you can imagine how exciting it was to finally get a naturopathic licensing bill through legislature. While insurance coverage does not automatically cover newly licensed providers, it usually follows if insurance companies are willing. If you treasure having a covered natural health care option you might want to contact your insurance and ask them to provide coverage for naturopathic care equal to other primary care providers once the bill becomes active next June.

Not only will this licensure broaden health care options and affordability, it will also increase the breadth of practice of NMD’s. Being able to prescribe from a pharmacy legend and order labs and imaging tests will eliminate the necessity of multiple provider visits and allow us to practice according to the full scope of our training. As I was not able to order basic labs anymore I have had to send patients to another provider for a visit in order to order even basic labs – not only time consuming but expensive!

In order to prescribe as part of primary care, those of us who have graduated a long time ago have to retake the brand new pharmacology exam, as we have not been able to prescribe for so long. While I can remember 100s of botanical scientific names, the pharmaceutical names keep escaping me.

Ponderay Neighbor Day is a free public event filled with live music, food vendors, pony rides, a petting zoo, crafts and other kid-friendly activities.

This year’s event, which is held on the Harbison Field off Emerald Industrial Drive behind Hoot Owl Restaurant, commemorates the city’s police department, which has served the community for 25 years.

Live music will be headlined by Bum Jungle, with the opening act by the Liabilities. Kids activities include a climbing wall, inflatable amusements and a trout fishing pond. The event is from 1 to 6 p.m. and parking is available off Emerald Industrial Drive.

Ponderay Neighbor Day was initiated by the City of Ponderay and Friends of the Pend d’Oreille Bay Trail to provide an opportunity for local residents to familiarize themselves with the location of a proposed railroad undercrossing that would provide safe access for pedestrians and bicyclists to Lake Pend Oreille and the shoreline trail. Last year, the city also invited input on ideas for the Field of Dreams recreation complex and community facility.

Those two projects will be showcased again this year. The city’s booth will unveil the proposed plan for the 50-acre Field of Dreams, while Friends of the Pend d’Oreille Bay Trail booth will share information about the proposed undercrossing and the shoreline trail.

Residents who stop by the Mini City Hall at Ponderay Neighbor Day to learn about the city’s recreation plans will be entered into a free raffle for a $300 gift card for Quinn’s Hot Springs, four tickets for the SPORT scenic train ride, an Ozark Trail high performance cooler and numerous hand-crafted ornaments from Tis the Season Ornaments.

The city and Bay Trail booths at Ponderay Neighbor Day will give people an opportunity to learn about these projects in advance of a Nov. 5 ballot measure in Ponderay, which will ask Ponderay voters if they would approve a temporary (five-year) 1 percent sales tax to help fund the two projects.

In this issue we are going to take a look at an important person in American cooking History : Fannie Farmer We are talking about Fannie in this issue because she is credited with establishing the uniform measuring system we use in kitchens today. Fannie was certainly not the first cook to use measurements in cooking but she took it past a ‘pinch of this and a dash of that’. As you will see there was far more to Fannie Farmer than accurate measurements. Enjoy!

Fannie Farmer was born on 23 March 1857 in Boston, Massachusetts, United States, to Mary Watson Merritt and John Franklin Farmer, an editor and printer. Although she was the oldest of four daughters, born in a family that highly valued education and that expected young Fannie to go to college, she suffered a paralytic stroke at the age of 16 while attending Medford High School. Fannie could not continue her formal academic education. For several years she was unable to walk and remained in her parents’ care at home. During this time Farmer took up cooking, eventually turning her mother’s home into a boarding house that developed a reputation for the quality of the meals it served.

At the age of 30, Farmer, now walking (but with a substantial limp that never left her), enrolled in the Boston Cooking School at the suggestion of Mrs. Charles Shaw. Farmer trained at the school until 1889 during the height of the domestic science movement, learning what were then considered the most critical elements of the science, including nutrition and diet for the well, convalescent cookery, techniques of cleaning and sanitation, chemical analysis of food, techniques of cooking and baking, and household management. Farmer was considered one of the school’s top students. She was then kept on as assistant to the director. In 1891, she took the position of school principal.

Fannie published her best-known work, The Boston Cooking-School Cook Book, in 1896. Her cookbook introduced the concept of using standardized measuring spoons and cups, as well as level measurement.

A follow-up to an earlier version called Mrs. Lincoln’s Boston Cook Book, published by Mary J. Lincoln in 1884, the book under Farmer’s direction eventually contained 1,850 recipes, from milk toast to Zigaras à la Russe. Farmer also included essays on housekeeping, cleaning, canning and drying fruits and vegetables, and nutritional information.

The book’s publisher (Little, Brown & Company) did not predict good sales and limited the first edition to 3,000 copies, published at the author’s expense. The book was so popular in America, so thorough, and so comprehensive that cooks would refer to later editions simply as the Fannie Farmer Cookbook, and it is still available in print over 100 years later.

Farmer provided scientific explanations of the chemical processes that occur in food during cooking, and also helped to standardize the system of measurements used in cooking in the USA. Before the Cookbook’s publication, other American recipes frequently called for amounts such as “a piece of butter the size of an egg” or “a teacup of milk.” Farmer’s systematic discussion of measurement — “A cupful is VIGNETTE MODERN ROMAN SHADES measured level ... The Grizzly Bear of North America by Kathy Osborne

He is big. She is protective. He will kill other bears. So will she. He can weigh as much as 1500 pounds depending on habitat and food supply. She can fight like she does. He doesn’t always hibernate in warmer climates. She does and bears her young during that time. He will kill her cubs if he is hungry.

And grizzly cubs sometimes don’t survive. Once out of the den they ignore their mother in the wild. Adult grizzlies can assume a kill, even from wolves and don’t mind consuming carrion. And they don’t seem to mind snagging new fawns hidden in the grass if discovered. Fawns have no scent. Not only will grizzlies consume the calves of other hoofed wildlife they will also kill livestock, especially the infirm and the young.

This is the character of the North American Grizzly Bear, Ursus arctos horribilis. He is big, he is beautiful, and he is not to be trifled with. Often brown to buff in color with a concave face, he is most easily recognized by the hump on his back over the shoulders. It is not uncommon for this bear to stand at about 8’ tall and his growl is disturbing to say the least. When Lewis & Clark first came in contact with the Grizzly, as they mapped the Northwest, it was not so much a surprise as a serious wake up call. The Native Americans had warned the Corps about the bears but there’s nothing like experience to convince.

Lewis wrote in his journal of going out alone to scout and choosing to camp for the night. He prepared camp and then shot a buffalo. As “he watched the buffalo fall, a grizzly descended upon Lewis and the kill. Lewis raised his gun to shoot but discovered he had not yet reloaded. With no trees or other protection nearby Lewis ran for the river and jumped in. The bear followed but inexplicably did not continue after Lewis.” This changed Lewis’ view of the predator and he often marveled that not one of the company was lost to bears during the journey.

Grizzly is the traditional name given to the brown bear of North America and is a reference to the “grissled” look of the often white or beige tipped fur. While there are less than 1000 grizzlies in the lower 48 states where they are protected, they remain numerous in Canada and Alaska. They also tend to be larger in Alaska. It is estimated that 70-100 live in the North Idaho area. Many more live in Montana and Wyoming. Grizzlies can run up to 30 miles an hour and while they typically won’t climb trees they are not at all challenged by tearing one to pieces to get the bugs or prey that has climbed up. Although just rubbing up against trees is common, one of the ways a grizzly male will mark its territory upon emerging from hibernation is to take a bite out of a tree.

Most of the time wildlife, including bears, will move away from humans as they approach the shared space. This is usually not the case when the bear is consuming a kill or if the bear has cubs nearby, or if the bear has been surprised. To find food, grizzly bears have heightened senses. Bears see about as well as humans do, and they see in color. On August 9th The Boundary County Farm Bureau hosted a public safety/predator tour in the Bonners Ferry area to address the problem. Included was a tour of locations where people have had encounters with grizzlies or in some cases lost livestock to them.

While the focus of the federal government and the Endangered Species Act List is to restore healthy numbers of grizzly in the recovery areas, it also appears that the human bear interaction potential also must now be addressed.

A man was driving and saw a truck stalled on the side of the highway that had ten penguins standing next to it. The man pulled over and asked the truck driver if he needed any help. The truck driver replied, “If you can take these penguins to the zoo while I wait for AAA that will be great!” The man agreed and the penguins hopped into the back of his car.

Two hours later, the trucker was back on the road again and decided to check on the penguins. He showed up at the zoo and they weren’t there!

He headed back into his truck and started driving around the town, looking for any sign of the penguins, the man, or his car. While driving past a movie theater, the truck driver spotted the guy walking out with the ten penguins.

The truck driver yelled, “What are you doing? You were supposed to take them to the zoo!” The man replied, “I did and then I had some extra money so I took them to go see a movie.”

Haskaps - A New ‘Super’ Fruit

In 2001, a research project was begun by the University of Idaho to develop a new berry for the U.S. fruit market. Japanese and Ukrainian plants were crossed to produce cultivars of Lonicera caerulea, or ‘haskaps’.

By 2007, 43 varieties had been created at the research station in Bonner County. When the research station closed in 2008, the project was abandoned. The collection of over 800 plants was acquired by Legacy Farms and the project was completed in 2015.

The luscious, mouth-watering fruit has exceptional health benefits and when mature, the plants are high yield and low maintenance. They will, indeed, be a wonderful new addition to the U.S. fruit market.

State of the Real Estate Market: Prices Continue to Rise Jim Haynes, Associate Broker, Realm

Real estate prices continue to strengthen both nationally and regionally (See real estate statistics table on this page). Nationally, median1 home sales prices were up 4.7% for the seven months ending July 31 over the same seven-month period the previous year. The three northern Idaho counties all experienced significantly higher appreciation. Boundary County median home sales prices were up 18.1% year over year. Kootenai County and Bonner County both experienced 11% increases. The number of homes being sold is down nationally for the same seven-month period when compared to a year earlier by 5.2%. Locally, it was a mixed bag with Kootenai County selling 2.8% less homes this year than last. Bonner County experienced a decrease of 10.9% in homes sold while Boundary County experienced a whopping 23.6% increase in the number of homes sold.

Nationally, the upward trend in prices is attributed, in large part, to the tight inventory of houses for sale. Over the last three years the national year over year price appreciation has averaged 3.9%. Month-to-month inventories have averaged just over four months over that time. Six months of inventory is considered healthy. The inventory in Boundary County is 4.0 months and in Bonner County it is 5.2 months. Kootenai County is lower than the national average at 3.1 months of inventory. All three counties have inventories significantly tighter than one year ago. This tight inventory has put upward pressure on prices resulting in price increases in the three northern Idaho counties that are two to three times the national average over the same period. Another indicator of a strengthening market can be seen from the days it takes for property to sell or days on market (DOM). In the three northern Idaho counties the DOM has declined 7% over the last year to 65 days. This is just about half the number of days it took to sell a home five years ago in north Idaho.

What does this mean going forward? Nationally, real estate prices should continue to increase modestly given the tight market and improved interest rates (currently 3.8% for a 30-year fixed rate mortgage compared to 4.5% one year ago). Locally, indicators are that we will continue to see near double digit increases in prices. Inventory continues to be a challenge and north Idaho continues to be a bargain when compared to other western states. In north Idaho the median sales price is near $310,000 while in the western region of the US the median home sales price is approaching $425,000. If you are considering the purchase of a home now is a good time as interest rates continue to remain near historic lows. Inventories of properties are tight so consult your real estate professional to help you find the property that is right for you.
