Nestled in Colorado’s iconic Grand Valley, Palisade is a destination where bold flavors meet one-of-a-kind experiences. From laidback patios overlooking fruit orchards to craft spirits and elevated dining, the only thing more unforgettable than the views here is what’s on your plate.
Here, agriculture is not background scenery, it is the heartbeat of the community, and it shows up in every bite and every sip.
MORNING MOMENTS & SWEET STARTS
The scent of fresh baked pastries, breakfast burritos, and locally roasted coffee fills downtown each morning. Begin your day at one of 3 downtown coffee hot spots: The Milky Way, Slice O’ Life Bakery, or The Artful Cup (hidden inside the Blue Pig Art Gallery!) It is the perfect stop before a hike, a bike ride, or a leisurely day exploring tasting rooms.
ELEVATED EATS & FARM-FRESH FARE
Palisade offers both relaxed and refined dining that reflects its agricultural roots:
At Fidel’s Cocina & Bar, bold flavors, thoughtfully curated mezcal or tequila flights, and craft tacos bring a fresh, elevated taqueria experience to downtown that’s perfect for lunch or dinner, while El Rey Mexican Food brings authentic Mexican cuisine with generous plates and welcoming hospitality that make it a favorite quick stop for locals.
In a scenic vineyard setting, Caroline’s - the signature restaurant at Colorado Wine Country Inn - focuses on fresh Colorado lamb, beef, game, and seasonal produce prepared with a classic French influence, ideal for a special evening out.
For handcrafted comfort in a lively setting, Palisade Pizza & PourHouse serves up perfect pies and local brews that satisfy every appetite.
Elegant yet inviting, Maison La Belle Vie Winery & Eatery pairs all-day casual bistro dining with sweeping vineyard views. A must-visit for anyone celebrating a sunset dinner or lunch with friends.
Open Friday through Monday, 13 Brix Cider Bistro’s indulgent orchard to table cuisine meets house crafted cider in a setting that feels distinctly Palisade.
The valley’s craft beverage scene is robust and rooted in local pride. All offering unique fare to pair perfectly with your libation of choice.
Brews: Palisade Brewing Company brews inventive small batch beers with Colorado character, perfect for an afternoon flight after cycling or hiking.
Spirits: Just a few doors down, Peach Street Distillers crafts award-winning bourbon, gin, and fruit brandies that honor the valley’s agricultural bounty, creating spirits with a sense of place. Nestled between pear and peach orchards, Clark & Co. Distilling is located right along the slow moving bend of the Colorado River. Float right up! Our shaded patio or rustic tasting room provide the perfect atmosphere to sit back, relax, and unwind.
Cider: Talbott’s Cider Company transforms orchard harvests into crisp, refreshing cider that pairs perfectly with live music, iconic views, and warm valley evenings.
Plus nearly 40 area wineries, each with their own unique commitment to exceptional, high desert, wine and hospitality. Pull up a chair and let the wine and the winemaker tell their story!
Talbott’s Cider Company
A GOOD OL’ FASHIONED BAR - BAR
Nestled in the heart of downtown, The Palisade Livery Saloon, affectionately known to locals as “The Liv”, stands as a testament to the enduring spirit of the American West. This iconic watering hole has garnered international acclaim, becoming a must-visit destination for travelers seeking an authentic dive bar experience.
WHY PALISADE?
Whether you’re sipping cider beneath orchard trees, sharing tacos downtown, or toasting with vineyard views, Palisade invites you to savor every moment.
Here, meals reflect place and season. Produce comes straight from valley orchards, chefs embrace the heritage of the area with farm-to-fork ingredients, and makers craft bold flavors rooted in Western Colorado soil.
COME HUNGRY. STAY AWHILE.

PALISADE Comes Alive on First Wednesdays
Palisade comes alive on the first Wednesday of each month with a unique and festive blend of live music, interactive art, drum circles, belly dancing, gourd painting and the welcoming bustle of local businesses opening their doors for residents and visitors alike.
PALISADE COMES ALIVE
As the Bookcliffs begin to glow and the sun dips in the west, melodic rhythms begin to fill the air throughout Palisade’s charming downtown Plaza, offering everything from acoustic folk to upbeat jazz and soul.
At the heart of First Wednesday is creativity and community in motion. Generative drum circles form, inviting anyone with a rhythm in their heart to pick up a drum or a tambourine and join the beat. The inclusive energy encourages both seasoned players and curious beginners to participate, creating a shared musical experience.
Nearby, local and visiting artists contribute to live art installations, bringing color and imagination to life before the eyes of an enthusiastic audience. Watching a blank canvas evolve into a compelling work of art—layer by layer, brushstroke by brushstroke—is a highlight of the evening.
“...artists contribute to live art installations, bringing color & imagination to life...”
Local eateries are open, serving up delicious meal’s while local art galleries like The Blue Pig Gallery and Craig Gallery showcase inspiring works from regional artists.
The Artful Cup, located inside the historic Blue Pig Gallery building, serves up delicious beverages and baked goods while hosting Artful Presentations, which feature regional storytellers, poets, historians, fifth generation growers, artist demonstrations and keynote speakers each month.
First Wednesday in Palisade is a testament to the power of community and life-long learning, where art, music, and local pride converge to create an unforgettable experience. It’s an invitation to celebrate creativity, support small businesses, and connect with the vibrant pulse of a town that knows how to embrace the magic of a shared evening.

PALISADE PLUNGE
>>> Before You Take The Plunge
• BE PREPARED TO PEDAL. A LOT. The course has black diamond sections and there are a lot of quick ups and downs, blind corners, sandy road beds, extreme exposure and even though the total descent is over 6,000 ft. calling it a ‘Plunge’ is VERY deceiving.
• START FROM SHIRTTAIL unless you’re an advanced + rider and prepared for “epic brutality.”
• BRING LOTS OF WATER. Think you’ve got enough? Pack more. There are no water stations along the way.
• GET AN EARLY START. The full ride will take 5-6 hours for most experienced riders. It is not uncommon for afternoon temperatures to be in the high 90’s during the summer months. July and August temperatures can even reach the low hundreds.
Stats From Mesa Top
• START: MESA TOP TRAILHEAD
• MILEAGE : 32 MILES
• ELEVATION GAIN : 1,745FT
• ELEVATION LOSS : 7,730FT
• ELEVATION HIGH : 10,780 FT
Stats From Shirttail
• START: SHIRTTAIL POINT TRAILHEAD
• MILEAGE : 23 MILES
• ELEVATION GAIN : 1,470FT
• ELEVATION LOSS : 6,591FT
• ELEVATION HIGH : 9,800 FT
• SHUTTLE SERVICE is highly recommended. It’s an hour+ drive up to retrieve your vehicle.
• HONOR THE HARD WORK that went into building the trail and keep yourself safe. Do not ride the trail during, or recently after, inclement weather.
• THE BIKE MATTERS. Janky bikes will get destroyed and leave you stranded. E-Bikes are prohibited.
• STAY THE COURSE. Do not attempt to take shortcuts or utilize access roads as they may take you further from your destination. Cell service is limited to non-existent.Pay attention to trail signs and use a GPS communication device.
The Plunge is closed from Dec. 1st - May 1st every year.

Palisade Rim Trail
This moderate hiking & biking, dog friendly, trail allows you to customize your experience by taking the lower (<4 mile) or upper (13 mile) loop. Petroglyphs and splendid views of the entire valley below included. Parts of the trail come close to cliff edges. Under the wide Western sky, agriculture in Palisade is shaped not only by sun, soil, and water, but by the people whose hands bring the harvest to life.
Each season begins before dawn, as farmworkers step into the fields with quiet determination. Tree by tree, row by row, they plant, prune, and tend with care learned through experience and strengthened by pride. Their work is deliberate and skilled, guided by an understanding that healthy orchards and abundant harvests are built over time, through patience and consistency.
For many Hispanic migrant agricultural workers, this dedication carries a deeper meaning. The months spent in Palisade—often seven to nine at a time—represent sacrifice as much as opportunity. While they work here, families
remain hundreds or thousands of miles away. Birthdays, milestones, and even moments of loss are sometimes shared only through phone calls and video screens. Technology helps shorten the distance, but it does not replace presence. Still, these workers persevere, motivated by a powerful sense of responsibility and love for those waiting at home.
The fruits and vegetables grown in Palisade are, in many ways, expressions of this commitment. Each peach or cherry reflects long hours in all weather, steady hands balancing ladders, and the endurance required to meet the rhythm of the growing season. The result is food that nourishes families across the country and sustains a local economy rooted in agriculture.
There are often misconceptions about seasonal agricultural workers, particularly those participating in the H-2A visa program. These workers are here legally, through a
process that requires farmers to demonstrate a genuine labor shortage, recruit U.S. workers first, meet strict wage and housing standards, and comply with federal oversight throughout the season. For the workers themselves, the program represents lawful employment, stability for their families, and an opportunity to contribute meaningfully to their communities—both here and back home.
Behind every peach and cherry
is a
season
of
dedication, sacrifice and care.
Beyond the fields, a strong sense of community forms among the workers. Shared meals, conversations after long days, and small celebrations create a second family during the harvest months. These bonds offer comfort, resilience, and mutual support, helping individuals face the challenges of physical labor and emotional distance.
Palisade’s agricultural success is inseparable from these human stories. The harvest does not end when fruit is packed and shipped; it continues in the lives it supports and the dignity it deserves to uphold. By recognizing the people behind the produce, the community honors not only its agricultural heritage, but the shared values of hard work, care, and respect that make Palisade thrive.
