Mesquite has been my home for the past 8 years. We enjoy the amazing views all around us and the climate. Summers get a little warm but the rest of the year offsets the heat and for many folks moving here the days of excessive rain and snow deluge are over. Mesquite is known for the magnificent golf courses, OHV riding, pickleball, hiking and playing your favorite games in our casinos. Mesquite also attracts a large number of kid’s sporting tournaments.
Mesquite is located just 80 miles North of Las Vegas on I-15 and 40 miles South of the Utah border. You can enjoy the peacefulness and tranquility of Mesquite, travel North for a day of shopping or head South to Vegas for some nightlife. Coming back home to Mesquite is the best feeling at the end of the day.

What an honor it is to serve a second time as the Mesquite Chamber of Commerce Chair of the Board, representing Conestoga Golf Club.
I am very thankful and humbled to have this opportunity again, to serve the business community of Mesquite. I am grateful and fortunate to also serve as the Golf Tournament Chair of the Chamber’s Annual Golf Invitational.
The role of the Mesquite Chamber of Commerce is to advocate on behalf of our membership and educate our local business leaders. It takes experienced business professionals on our Chamber Board of Directors to set policy, and a professional, knowledgeable, friendly staff, to operate the many tasks that are required day to day to operate our great Chamber of Commerce. The combination of business acumen of our current leadership, coupled with decades of experience, is a win-win recipe for continued success for years to come for our Chamber and our business community.
Mesquite continues to grow and has become the top destination to live, visit, and start a business. In fact, Mesquite is the top destination in the state of Nevada for growth and was recently recognized for being the safest City in Nevada to live and do business! What great accolades of who we are as a community, and what we have become, due to our business and community efforts. A big thanks to all our first responders in helping to keep us safe, responding to all our community needs, and keeping crime at a minimum!
As the Chair of the Board of Directors for a second time, I have seen tremendous growth collectively as a business community. We have noticed a lot of changes at your local properties - CasaBlanca Resort & Casino and Virgin River Hotel & Casino. Was there an overall theme or vision you wanted to pursue?
When we took over these properties at the end of last year, we saw tremendous potential in them to become premiere destinations for the entire southwest. We spoke in depth

with our guests, and they were very clear with us where they would like to see improvements. I guess you could say our vision is to provide our guests with the amenities they asked us for.
How are renovations coming along at both properties?
We could not be more pleased with the progress on the renovations at both the CasaBlanca and at Virgin River. Thankfully, everything has gone as planned. The construction
has been timely and precise. It’s exciting for me to see it all become reality and be so well received. At the CasaBlanca Resort and Casino, the new showroom is now open and, again, the reviews are great. Our Center Stage once again is featuring live entertainment daily – all for free. We added a giant new 20ft. x 12ft. main screen, a state-of-the-art sound system, new carpeting, wall coverings, sconces, new tables and chairs, and fully reupholstered showroom booths. We also introduced high-limit gaming, 22 non-smoking video poker slot machines, and a classy new bar area to relax and play in. We put it all to the test this New Year’s Eve with a big-time concert and celebration ringing in 2025.
We’re completely redoing our Center Bar and it should be open mid to late January of this year. We converted it into a one-level, double-sided bar. It’s much more inviting, comfortable, and now twice the fun.
The first change arriving guests at CasaBlanca will notice is the new openness and accessibility of the casino floor. It’s now much larger and contains more of the newest and most popular games on the market. No matter which entrance you come in, the new feel and flow of the casino will give you a “Wow” moment.
We’ve completed considerable improvements inside Katherine’s, our award-winning steakhouse. We’ve created a beautiful new lounge and expanded bar area. Designed for guests who don’t have time to enjoy a complete fine dining experience, the lounge will feature new “quick eats” menu options.
As for Virgin River Hotel and Casino, I don’t think there’s a more complete and affordable familyfriendly destination anywhere this side of the Mississippi. Our renovations there are focused on making our most popular amenities even better.
We updated our bowling center and made it more enjoyable with easier access to snacks and drinks. We’ve taken steps to make sure our arcade is stocked with the latest games. Already known for our pet-friendly rooms, we’ve added a “Bark Park” so our furry friends have a place to get outside and play.
In addition to installing brand new carpeting throughout the property in the first quarter of 2025, just wait until you see the complete redesign of the Sports Book inside the Virgin River. When it’s finished, it’ll rank among the most comfortable, state-of-the-art gathering places for enjoying and wagering on athletic events in the Southwest. The expansion will include new oversized monitors along with additional bar seating and a new menu to maximize our customer enjoyment.
Are more renovations planned in the future?
Yes, our overall remodeling plan for the properties is quite extensive and will take time to unfold entirely. I can tell you that 2025 our focus will be on enhancing our guest experiences. That includes a new fitness center in January at CasaBlanca, and its rooms receiving new carpet, flooring, furniture, and digital electronics by midyear. You’ll also notice more emphasis placed
on poolside activities, RV park upgrades, wedding facilities, and our 70,000 sq. ft. of meeting and convention space.
Your properties have become major tourist destinations in the Southwest region. How have you accomplished that stature?
I think it’s important to keep in mind that while we’re busy bringing all of the exciting renovations and upgrades we’ve discussed, we haven’t even touched upon the biggest asset we have which is our incredible team of top-notch personnel who dedicate themselves to creating amazing experiences for guests at our properties. Then you add in our other popular assets including championship golf courses, The Spa and Salon, our renown special events like the Hot Air Balloon Festival and Motor Mania. Once you locate all of those amenities inside of Mesquite, NV – a city with over 300 days of sunshine a year, you see clearly why CasaBlanca Resort and Casino and Virgin River Hotel and Casino present the perfect destination getaways for all ages.

In June of this year, you were hired as the Corporate Executive Chef for CasaBlanca Resort & Casino and Virgin River Hotel & Casino in Mesquite, NV. Can you give us your work history that led you to this position?
My career spans 21-years in the food and beverage industry. I started with Station Casinos in 2003 as a Room Chef and was soon promoted to the position of Assistant Executive Chef and, ultimately, Executive Chef. In 2018, I joined Aramark food services division where I held the positions of Restaurant/Retail Manager, Chef de Cuisine, Executive Chef de Cuisine, and Area Director. he Mesquite Chamber of Commerce is proud to welcome its newest business member to their organization, the Chicago Greek restaurant. A local Mesquite favorite, and a must-try for visitors, the Chicago Greek serves both authentic Greek and Chicago-inspired dishes, from souvlaki skewers and gyros to Chicago Dogs and pastrami sandwiches. The family-owned restaurant recently upgraded its operations by working with energy services provider Southwest Gas to convert from propane to natural gas.
The transition to natural gas has created more flexibility when cooking, enhanced customer service, improved the quality of menu items, and reduced operating costs, noted Chicago Greek’s co-owner, Austin Simon. He also observed the broader benefits of having natural gas service in Mesquite and plans to further expand his restaurant soon.
“Having access to natural gas means progress for our restaurant and our community,” said Austin Simon, co-owner of Chicago Greek. “Natural gas makes it easier for restaurants or similar businesses to operate as it is easy to use, efficient, and more affordable. It’s half the cost for us and it is never going away. Working with Southwest Gas to transition to natural gas was smooth and our customers are already experiencing the difference – we look forward to working with Southwest Gas as we continue to expand our business.”
Meeting the Demand
Founded in 1931 in Victorville, California, Southwest Gas is a dynamic energy company that now serves over two million customers throughout Arizona, California, and Nevada. The Company provides safe and reliable natural gas service while innovating sustainable energy solutions to fuel growth in communities such as Mesquite.
In 2019, the growing city welcomed its first natural gas customer as a result
of the passing of Senate Bill 151 (SB151) in the 2015 Nevada Legislature. Mesquite was the first unserved area in the state to gain access to natural gas under SB151, following the Public Utilities Commission of Nevada’s approval of Southwest Gas’ application to expand natural gas service to Mesquite, sparking economic growth in the area by attracting new and diverse industries.

Fueling Progress
Mesquite is the fastest-growing city in Nevada, according to the U.S. Census Bureau, and has become a top choice for companies choosing to relocate or expand their operations. Southwest Gas’ largest industrial customer in Mesquite is Crown Holdings, Inc., an aluminum beverage can manufacturing facility that employs more than 120 people, and began natural gas service in August 2023. The company is playing an integral role in supporting workforce and economic growth in the community. Without access to natural gas, Crown Holdings would have been unable to enter the Mesquite market. In addition to new industries finding a home in Mesquite, new homes are being constructed with natural gas and long-term businesses have converted from propane to natural gas to fuel their

kitchens, hot water heaters and more, including the Casablanca Resort and the Eureka Casino Resort.

The U.S. Bureau of Labor Statistics projects STEM (science, technology, engineering, and math) occupations will grow by more than 10 percent over the next ten years. TDS Telecommunications (TDS) recognizes the important work being done at the STEAM Center. As part of the company’s annual Week of Giving campaign, TDS provided a $3,000 donation but company associates wanted it to be more than a check presentation to the nonprofit organization. Field Marketing Associate Manager Cindy Powell and Senior Administrator Malia Mullins conducted a high-energy, educational program on internet safety for students.
The program included information on how to be safe online and how to establish safe internet practices.
“We want the next generation to be smart online and be able to use this incredible resource in the right way so they can excel at whatever they choose to explore in life,” said Powell. “We want to thank the Mesquite Works STEAM Center staff and leaders for allowing us to bring this program to students.”
Nikki Meador, Director of Mesquite Works STEAM Center, was grateful for TDS’ time and donation. “We educate children of all ages and run 100% on donations,” said Meador. “The funds will be used for program costs because we keep everything here free for the community to use.”
This isn’t the first time TDS associates taught an internet safety program in the area. Throughout the 2022-23 school year, the Be Safe Online program was featured at dozens of elementary schools.
The former program included a partnership with Utah Tech University students.
The donation and cyber security program are examples of the companywide TDS Cares initiative during the annual Week of Giving campaign. Nevada Bank and Trust was a vision of the late Wes Holt, along with a few other businessmen in Caliente, Nevada in the mid-1970’s. Wes had become an acquaintance of the Chadwicks, from Soda Springs, Idaho, who had experience operating banks. Through this acquaintance grew a lifelong friendship. Mesquite. As the Bank continues to grow beyond its roots, the focus is not much different than Wes Holt’s original vision, that’s to provide financial services to the residents, towns and cities of eastern Nevada. The mantra of “Community Banking, it’s who we are, it’s what we do”
Each month, the Chamber hosts a membership meeting luncheon for our members. The luncheon is held the second Wednesday of each month, with the exception of December in which the luncheon falls on the second Friday of December. The luncheon provides networking opportunities, educational and interesting speakers and sponsorship opportunities for members.
“Best of Mesquite Chamber Awards”
This was an annual luncheon held in January but in 2025, it changed to a dinner event. Members of the Chamber may nominate members in several different categories and then vote for their favorite nominee. The winners are announced at the January dinner and presented with an engraved plaque.

At the November luncheon, Chamber members and non-members are encouraged to show their support by treating a veteran to lunch. In addition to the Chamber’s regular luncheon raffles, Veterans are treated to special raffle drawings and swag
Mingle and Jingle Luncheon
In December, the Chamber celebrates it members and volunteers at the annual “Mingle and Jingle Luncheon.” New Board Members are introduced and Board Members finishing their Board terms are thanked. Members having anniversaries for five, ten, fifteen, twenty and twenty-five years are recognized. The cover of the annual Business and Destination Guide is unveiled. This luncheon is one of the most popular luncheons with members and is highly attended.
As the temperature rises, what could be better than lunch by the pool? Our April luncheon is held pool side at the CasaBlanca Resort. The Chamber typically has a speaker from the Entertainment/Travel Industry as the featured speaker.

“What’s Happening Mesquite” Breakfast
Four times a year, the Chamber hosts a “What’s Happening Mesquite” Breakfast. The breakfast provides the first 15 members who registered in advance to have an opportunity to have a free speaking slot to update the membership on their business and upcoming events.
Annual Golf Reception and Tournament
The Chamber’s annual golf tournament kicks off the day before with a golf reception. The reception offers appetizers, a silent auction, putting, chipping and a horserace contest. The tournament rotates each year to a member course and takes place on the first Saturday in August. Golfers enjoy a swag bag on arrival to their cart, continental breakfast and lunch. The event ends with the presentation of trophies and lots of raffle prize drawings. This event is one of the Chamber’s largest fundraisers and in 2025 Mesquite Chamber will hold its 20th Anniversary Golf Invitational.
“Hope Starts Here” Luncheon to benefit SafeNest
Mesquite Chamber holds an annual fundraiser luncheon in October (Domestic Violence Awareness Month) to benefit SafeNest – Mesquite Domestic Violence Shelter. Attendees are treated to a fabulous luncheon, the chance to win great raffles prizes, make donations to support SafeNest and to learn more from SafeNest in their journey to end domestic violence. SafeNest offers a variety of services to help their clients.
Small Business Saturday
The Chamber participates in the nationwide Small Business Saturday each year on the Saturday following Thanksgiving. The event is hosted by Mesquite Chamber of Commerce and is free to retailers in Mesquite to participate. All of the marketing is done by the Chamber at no charge to the retailers. It is an opportunity for the community to shop small and shop local to supports businesses in Mesquite.

SSCC - Silver State Chambers of Commerce
Silver State Chambers of Commerce was formed in 2021 by founding members the Pahrump Chamber, Mesquite Chamber and Reno + Sparks Chamber. The SSCC serves as a State Chamber for Nevada Chamber Executives to discuss matter of public policy, to collaborate on relevant matters that may impact Chambers’ membership and statewide commerce, to promote Chambers’ activities, statewide tourism, economic development, sustainable jobs and training for statewide Chamber executives. Carol Kolson serves as the 2025 President of the Silver State Chambers of Commerce.
