At just 15, Grande landed her first significant role as Charlotte in the Broadway musical 13. This experience laid the foundation for her career, and she later reflected, “Broadway felt like home. It taught me discipline, hard work, and how to connect with an audience.”

Ariana’s acting career took off in 2010 when she was cast as the lovable and quirky Cat Valentine on Nickelodeon’s Victorious. Set in a performing arts high school, the show was a hit, and Grande’s red-haired, bubbly character became a fan favourite. The series ran for four seasons, and her portrayal of Cat earned her widespread recognition. EAT, DRINK AND BE HEALTHY this Christmas

Christmas catch-ups, work parties, summer barbeques…. the temptations to overindulge at this time of year are endless!

If you’ve found it hard to maintain weight and stick to healthy choices over the Christmas holidays in the past, you are not alone.

Holidays and special celebrations are a wonderful time to bring people together and food is often a focal point. There are many ways to enjoy get-togethers and not totally lose track of your healthy living goals.

Drink water

Drink a glass of water between alcoholic beverages or beverages with whipped cream or marshmallows. Continue to drink as much water as you can throughout the day to stay hydrated and not feel the need to snack.

Maintain your weight throughout the holidays by being careful about your food choices, not only at parties and events, but every day. Don’t try to lose weight over the Christmas season.

Instead, aim to maintain your current weight.

Portion control This is the biggest problem over the festive season. Serve smaller portions of food and eat slowly to avoid overeating.

Continue to have your three regular meals a day, which will in turn help to naturally reduce the serving sizes of your celebratory meals with family and friends.

Exercise

Add some exercise to your day, either before the main meal or in between meals. Going for a family walk, taking the dog to the park or any form of movement will keep you feeling energetic.

Choose lean meats

Use smaller plates

Select lean cuts of meat and limit red processed meats.

Choose foods for your plate like roast meats for protein with a small fist-size serving of carbs like roast potatoes.

Smaller plates help you eat less.

Dish yourself up your own meal, on a small plate where possible.

If others are serving, ask them for a smaller portion than the usual mountainous fare.

Fill up on vegetables Try to fill the dominant part of your plate with vegetables and salads. This season comes with delicious veggies such as sprouts, carrots and leeks.

Eat whole foods

Offer healthy snacks

When it comes to entertaining, think about whether you really need the additional bowls of crisps, lollies, dips and biscuits on top of the large lunch you are about to serve. Consider serving everyone healthy snacks like cut up vegetables.

Snack on whole foods like fruit or veggies instead of fried foods or creamy dips. If you do want to put out finger food, consider bowls of mixed nuts, seeds and lovely dried fruits such as goji berries, pears and apricots, instead of mince tarts and chocolates.

I CREATED ‘MIRACLE’ SKINCARE AFTER MY SON SUFFERED PSORIASIS AND HAIR LOSS DURING CHEMOTHERAPY My name is Georgina Tang, 61, a desperate mum and took beauty courses to learn how to develop skincare after seeing my son struggling with psoriasis and hair loss.

My son, Alessio, who suffers from an auto-immune condition, was undergoing chemotherapy that was causing his skin to crack, bleed and hair loss.

Several trips to the dermatologist for his psoriasis and no improvement from steroid creams, I decided to take matters into my own hands.

My brand Yours Naturally Naturally Yours started in 2014: “This was never the plan. I was just a mum who wanted to do anything I could to stop my son suffering.

Chemotherapy can be devastating for people’s skin and hair. My son was so young, I would have done anything I could to help him.”

I completed courses in how to make skincare and haircare products and started creating new recipes from my kitchen.

“I realised I had the knowledge of how to make the products and I just needed to try it. Within a month of using shea butter balm his skin was clear. It was life changing for him.”

“I had tried so many different products that when this one worked it really felt like a miracle.”

From there I created shampoo and conditioner to aid hair grow, as one night I found hair on his pillow that had fallen out. Devastated I became determined to create the best haircare for my son. It wasn’t long before I realised I had a successful business on my hands.

“When people saw how good his hair and skin looked they started asking me what I was using so I started sharing it with people that were undergoing cancer treatments. I hadn’t ever considered selling it, I just wanted to help people, but soon I left my job to work on the business full time.”

I then started learning more about anti-aging products as my skin was sagging and developed Elixir that has been used by celebrities and white labelled by beauty salons. We now have Elixir Floral – the scented version available.

One of my top tips for working out is wearing an outfit that makes you feel confident and of course, functions well too.

For me, the perfect gym leggings are key—they need to be sweat-proof, squat-proof, flattering on the bum, soft on the skin, they can’t fall down when running and I love when they’re simple enough to get away with wearing outside the gym too.

My favourite gymwear, other than my own brand Bluee, is from Bo+Tee, their pieces are stylish, functional, soft, flattering and always make me feel ready to smash a lifting session.

Hydration

Another tip for health and well-being is staying hydrated.

Not just during workouts, but throughout the day. My go-to is my Stanley Cup, which I take everywhere! It holds 1.2L of water and keeps it icy cold all day long, making it so much easier to stay on top of my hydration (icy water is so key for me to want to drink lots!!).

Journalling

Something I’ve recently embraced to support my well-being and stay on top of my goals is journaling. It’s something I especially think is important in January, as it helps me set intentions, track progress and feel a little more together to start the new year which can often feel a bit wobbly and high pressure.

I’m so excited to have designed my own journal for my brand, Beyond.

Make it Fun

Find workouts or activities you genuinely enjoy. Whether it’s dancing, Pilates, or strength training, loving what you do is the key to staying consistent. Keep things fresh by trying new workouts or fitness classes. Switching it up keeps you excited and challenges your body and brain in new ways.

Listen to Your Body

As women, our energy levels can change throughout the month. Keep track of your

cycle!!! And adjust your workouts to align with it. Lighter movements like yoga during your period and more intense sessions when your energy peaks mid-cycle. Use the different phases of your cycle to your advantage. High-energy days?

Go for a challenging workout or try and hit a new PB. Feeling low? Focus on gentle movements, stretching, LISS or even just a walk outside. The kinder you are to your body, the more you enjoy exercise which means you’re far more likely to sustain a fitness regime in your life and stick to those habits.

Prioritise Consistency Over Perfection

It’s not about doing everything perfectly; it’s about showing up regularly. Little steps every day add up to big changes over time. Start with small, achievable goals and celebrate each win.

Progress, no matter how small, is still progress. And those small wins really do add up!

Fuel Your Body

Focus on nourishing your body with balanced meals.

Plenty of protein, carbs, and healthy fats. Adjust your diet to support the different phases of your cycle, like adding iron-rich foods during your period. I have never been into calorie counting, I think it can actually take the fun out of enjoying foods. Just fill that plate with some protein, carbs and healthy fats and ENJOY your meals, there is no bad food. As soon as you start restricting yourself, you’re much more likely to create a difficult relationship with your body and food.

Workout Around Motherhood

For mums, find creative ways to stay active with your little ones. Short workouts during naps, pram jogs, or even dancing together at home can make a big difference. And bonus, they will grow up in an environment where exercise can be a positive thing, which means they are far more likely to take that feeling towards movement into their own lives.

Don’t Compare Yourself to Others

Everyone’s fitness journey is different. We are all so different, which is actually a superpower. You are you and nobody else can be that. Focus on your own personal progress, stay in your lane and be proud of every small step forward.

I’ve always been a selfcritical person, putting so much pressure to one up myself every year with a new, wild ambition. As I’ve become older and yes, maybe a little wiser, I have come to realise that there is so much growth in the little steps that we take towards our bigger goals. That’s the joy in setting yourself what I call a BHAG. A Big Hairy Audacious Goal. The bigger the better! The truth is, we don’t always take steps forward, sometimes we are forced to take steps back, re-evaluate, and carry on. Sometimes it’s about how we stand in the face of hardship and continue to push through.

For me, the joy is in the setback and what you take from it.

The more you overcome, the more you grow. The bigger the pat on the back. When you catch yourself about to make the same mistake and you decide to take a different course of action, that is the real success. Take a bow, that’s growth!

One thing we tend to do when we begin to reflect, is replay our mistakes, our unresolved conflicts, the times where we disappointed ourselves in the ways we acted, as well as evaluate the relationships we keep in our lives. For those of us who are chronic overthinkers, we can find ourselves in a cycle of self-blame or resentment, then spiralling into a selfdestructive pattern of behaviour. Also, what I like to call, Absolute Carnage.

This is why it’s so important to reflect on the year and practice forgiveness for myself, and for others; ending the year with a clear mind and heart and moving into the new year with intention and a positive mindset. So, why is it so important to forgive yourself? Let go. Get the right mentally. Create space for new beginnings.

Holding onto negative thoughts is like trying to stay afloat with weights tied to your ankles. You’ll eventually get so tired of just treading water, you’ll end up sinking.

By making a conscious decision to let go and let love, you’re freeing yourself from the burdens of your past.

By deciding to practice forgiveness and not be so critical of yourself and others, you’ll reduce your stress levels, anxiety and potentially depression, leading to better mental wellbeing.

You can then begin creating the foundations for a positive space to embrace new

opportunities, love, and happiness.

I truly believe that if you are riddled with negative thoughts, you will project these out to the world and stop yourself from ever reaching your full potential. Just like Roald Dahl said, “if you have good thoughts, it will shine out of your face like sunbeams and you will always look lovely.” The same can be said for bad thoughts. “If you have bad thoughts, these will permeate into the world and will turn you into a prune.

“Big Mouth” By embracing the reality that you have unrealistic or distorted thought patterns, you can turn these negative thoughts into positive actions… just in time for the New Year and a new you!

Forgiveness is the gift that keeps on giving… probably the most thoughtful gift you can give yourself this Christmas. But, like me, do you struggle to cut yourself some slack? Are you your own biggest critic? Let me share some ways in which you can release yourself from the shackles of self-blame.

1. Speak the mistake into existence.

Own it.

Do not try to deny your mistakes, so you can learn from them.

Hold a mirror up to yourself and keep yourself accountable, but don’t judge. Everyone makes mistakes and they will come to be your biggest lessons in life. “The greatest glory in living lies not in never falling, but in rising every time we fall”. – Nelson Mandela

5. Don’t be too hard on yourself.

We are only human. No one is perfect. Striving for perfection is an unrealistic expectation.

And of course, to live is to learn.

Now we’ve done the hard part of looking within, course correcting, apologising and forgiving ourselves, let’s flip this on its head and work on forgiving others and getting over a grudge.

1. Understand what is causing your resentment.

Sometimes we hold grudges, not because of a specific person or action, but more how it made you feel. Once you identify the source and why it’s made you feel that way, it’s easier to move on.

2. Was it really that bad?

2. Feel all the feelings.

Sometimes, it’s far worse in our heads than the reality.

Perception and reality are two very different things. What you perceive things to be, may not actually be.

Don’t feel bad if something has upset you. You’re entitled to feel hurt but understand that those feelings do not define you and don’t let those feelings continue to keep you down. You will develop strong resilience when you learn to let go.

3. It’s all growth.

Yes, ok, we made a mistake. When we step back, assess and acknowledge, do we ask ourselves the important questions?

“Did I learn something about myself?” “Have I identified the triggers or the steps that got me to this point to prevent this from happening again?” “Do I have a clearer understanding of my values and boundaries to maintain a healthy and happy equilibrium?” “Have I built up the resilience I needed?”

If you have come out of the other side of a situation showing self-growth, more resilience and a better understanding of healthy habits, the mistake is a win. You’ve achieved life milestones by working through and overcoming any challenge in life.

4. Say sorry!

If you’ve made a mistake which has kept you up all night, replaying the situation over and over, chances are you may have affected other people too. If anything you have done has impacted others negatively, say sorry. A sincere apology will cleanse your soul and will help you to see the situation in a more positive frame of mind. You’ve owned it and you want to make it right. You never know, the situation may be far worse in your head than it is to others. Often, the words “OMG, don’t be silly, it wasn’t that bad” can put you at ease and can help you to then rationalise the situation.

3. Forgiveness is a decision you make.

You may not always get an apology for how someone has made you feel. They may not even realise they’ve hurt you.

Forgiving others is a form of prioritisation. You’re showing yourself that your peace and happiness is far more important than their accountability. You can’t control others, but you can control you.

My final piece of advice as we walk into 2025 is to focus on setting healthy boundaries, be compassionate to yourself and to others, be grateful for what you have and what you’re yet to receive and celebrate each milestone that comes your way. Life is a story and you’re just about to enter a new chapter, so make it count.

Keeping up with all things life, love, family, kids and keeping it together! @keepingupwithkaterina @misskatslearninglab December, the most wonderful time of the year… literally! With my growing family, I’m constantly looking for ways to be creative, whilst making memories, whilst on limited time and trying to not completely blow the budget that my husband doesn’t even know he’s set! Here are two ways that I’m making my Christmas season easier and super special this year!

Getting the professionals in As much as I’m a real Christmas gal, I tend to have all of the festive ideas but I’ll adimit I’m not very good at practically doing things myself. Last year, I threw away all of my old Christmas decorations including the tree as I wanted all new things for our new house. I’ve seen some lovely decoration designs on Pinterest, but honestly do not have the time or the mental capacity to try and work out how to do it.

That’s when I came across the wonderful Athena at Cherished Events! I am so excited for her to make all of my festive, decor dreams come to life without having to do it myself! Her and her wonderful team come, set up and when you’re ready to have your tree put down she comes to collect and it’s like it was never there. As fun as it is decorating with your family, if I’m being honest, it can sometimes end in an argument, several meltdowns, a mediocre decorated tree and an angry husband. So this year, I’m saving myself the agg and getting the professionals in to create some fuss free magic in my house. Christmas photo shoot This year, especially with the arrival of our little Demi, I really wanted to document and photograph this special time in our life. Having asked my lovely followers for recommendations for photographers I came across Filiz and wow, one look at her page and I was sold. She has some magical backdrops and in the lead up to our session she has been beyond helpful with style guides, advice and all round cheerfully answering all of my 101 questions. In the end, all we have are our memories with our babies and families - and now we’ll have a special set of images to cherish forever. I’m so excited to see how they turn out and will be posting the images on my Instagram so keep a look out! Ingredients 1 Madeira loaf cake • 2 tbsp tbsp No.1 Lemon Curd, plus extra to drizzle (optional) • 6 tbsp Santa Marta Limoncello • 300g fresh or frozen raspberries, plus extra fresh to serve • 250g pack mascarpone • 500g tub Essential Custard • 300ml tub Essential Whipping Cream • 2 tbsp pistachio kernels, chopped

Method Cut the cake into 6 slices, then spread each with lemon curd and make 3 ‘sandwiches’. Cut into quarters, then place in a 2L glass bowl and drizzle over a little extra lemon curd, if liked.

Drizzle the cake with limoncello, then scatter over the 300g raspberries and any juices.

Using an electric hand mixer, gently whisk the mascarpone and custard together until smooth. Spread the mixture over the raspberries, then cover and chill (see tip).

Whip the cream until the whisk leaves a soft trail, then spoon on top of the custard mixture. Scatter the top of the trifle with the pistachios and fresh raspberries.

BEEF WELLINGTON A Wellington is perhaps the most luxurious meat dish if you want to impress at Christmas. Prime beef fillet is clothed in rich mushroom duxelles, sealed in cured ham, then wrapped in buttery puff pastry.

Serves 4 generously Prep 1 hr Cook 40 mins

Ingredients 750g piece beef fillet, the same thickness all the way along • 1 tbsp olive oil • 150g pack shiitake mushrooms • 250g pack chestnut mushrooms • 60g butter • 2 shallots, finely chopped • 80g Merchant Gourmet Whole Chestnuts • ⅓ x 20g pack tarragon, leaves roughly chopped • ¼ x 20g pack thyme, leaves only • 2 clove/s garlic, crushed • 2 tbsp Madeira • 1 sheet filo pastry • 72g pack (6 slices) parma ham • 1 tbsp creamed horseradish sauce • 320g pack allbutter puff pastry sheet • 1 British Blacktail Free Range Large Egg yolk, beaten • Sea salt flakes, to sprinkle

Method Warm a large frying pan over a high heat. Rub the beef with oil, season lightly with salt, then sear on all sides until well browned all over. Allow the meat to sear unmoved on each side to form a dark, caramelised crust for maximum flavour. This should take 1-2 minutes each side. Remove from the heat and allow to cool to room temperature.

Using a food processor (or chopping board and sharp knife), blitz the mushrooms until finely chopped. Melt the butter in the pan used to sear the beef, then add the shallots and sauté over a low heat for 4-5 minutes until softened. Add the mushrooms and increase the heat to medium. Fry for 8-10 minutes, until dry, beginning to brown and all the moisture is released.

Blitz or chop the chestnuts to a fine texture, then stir into the mushrooms with the herbs and garlic. Add the Madeira and cook for 2 minutes, scraping the base of the pan to release the flavour. Transfer into a bowl, cool completely, then cover and chill until needed.

Lay the filo pastry sheet on a large chopping board and arrange the ham slices across the centre in a slightly overlapping single layer. Spread the mushroom mixture or duxelles over the top of the ham into an even layer, brush the cooled beef fillet all over with horseradish, then place along the short edge of the filo on top of the mushrooms.

Wrap tightly, folding the mushroom, ham and filo together around the beef fillet to fully encase it. Don’t worry if the filo sheet splits slightly.

Unroll the puff pastry sheet and using a rolling pin, flatten the pastry (if needed) to create a rectangle large enough to wrap the filling. Place the filo-wrapped beef against the short side of the puff pastry, then brush the exposed pastry with beaten egg yolk. Roll the fillet tightly in the pastry, pinching at the seam to seal. With the seam underneath the roll, fold in the edges as if you were wrapping a gift, using more egg yolk to seal if needed. Transfer to a baking tray and chill for at least 30 minutes (or up to 3 days).

Preheat the oven to 200°C, gas mark 6. Brush the top of the Wellington with egg yolk, then score a pattern into the top with a sharp knife (don’t cut all the way through).

Sprinkle with sea salt flakes, then bake for 35-40 minutes for rare to medium rare, until deep golden. Leave to rest for 10 minutes, then use a serrated knife to serve.

ROAST POTATOES Everyone loves a perfect roast potato – fluffy in the centre, with a crispy outer shell that shatters upon biting, and salted to perfection.

Serves 4 Prep 25 mins Cook 50 mins

Ingredients 4 large King Edward potatoes • 4 cloves garlic • 2 tsp salt • 125g goose fat For the herb salt 3 sage leaves • 2 sprigs thyme • 1 sprig rosemary • 3 tbsp sea salt flakes • ½ clementine, scrubbed, finely grated zest

Method Preheat the oven to 220°C, gas mark 7 and place a large roasting tray in to heat up. Peel the potatoes and cut into quarters (use your judgement with smaller or larger potatoes.

The most important thing is that they’re a consistent size across the batch).

Place the potatoes into a large saucepan of cold water and soak for 5 minutes, then drain away the starchy water. Cover again with about 2L water and add the table salt and garlic cloves, still in their papery jackets.

Bring to the boil. As soon as the water is boiling, set a timer for 6 minutes.

Once the potatoes have parboiled for 6 minutes, tip the contents of the saucepan into a colander in the sink and leave to steam dry for 5 minutes.

Evaporating off as much water as possible creates a crispy outer skin.

Add the goose fat to the empty saucepan and heat until bubbling. Toss the potatoes over a few times in the colander to rough up the edges, then tip into the hot fat.

Clamp on the lid and shake vigorously for a few seconds to coat each potato.

Tip the potatoes and garlic cloves into the hot roasting tin. Using a spoon, separate them so they don’t touch each other. Pour over any remaining fat from the saucepan, then roast the potatoes for 45-50 minutes, turning often so every side becomes crispy.

For the herby salt, use a sharp knife or mini food processor/spice grinder to finely chop the leaves from the sage, thyme and rosemary (discard the woody stems). Add the sea salt and stir well, breaking down some of the bigger crystals. Add the clementine zest, mix again and decant into a small jar, ready to season the potatoes.

Once ready, remove the potatoes from the oven and tip into a large bowl. Season with 2 tsp herb salt, toss well to coat, then serve immediately while piping hot.

If you’re not planning on using the salt immediately (or want to keep the leftovers for another time), spread it out on a small baking tray and bake for 10 minutes at 160°C, gas mark 4 to dry it out, then allow to cool before putting it in a jar. The salt will last this way for up to 1 month. Without drying, I recommend using in 3 days.

“FROM THE MOMENT I PUT ON MY CHEF JACKET, I KNEW THE KITCHEN WAS WHERE I BELONGED” What inspired you to pursue pastry, and how has your journey from Singapore shaped your style?

My journey into pastry began out of necessity. When my father became very ill, I stepped into the kitchen to take over his role so my mother could work to support our family. That experience sparked my passion for cooking and I’ve never looked back. Growing up in Singapore, a culture rooted in the concept of “Kiasu”—the fear of losing has profoundly influenced my approach. It drives me to constantly push boundaries, innovate and stay ahead. I believe in setting trends rather than following them, which means breaking rules and creating from the heart.

Where do you find inspiration for your designs and flavours?

Design is one of the most challenging aspects of my work.

You eat with your eyes first, so a dessert must be intricate, intriguing, and spectacular. As for flavour, it’s the heart of everything I do. Style must never overshadow substance.

I’m drawn to humble flavours, with the right ingredients and textures, I strive to create an explosion of taste that captivates the palate.

How do you balance TV entertainment with maintaining high culinary standards?

My focus remains on delivering exceptional quality in every dish, and my time in the spotlight only enhances my creativity and inspiration. I prioritise and structure my time carefully, ensuring that my primary focus is on the kitchen while making room for TV commitments. Culinary shows and competitions keep me inspired and up-to-date on trends and techniques. They fuel my creativity, which I bring back to the kitchen. My favourite show, Great British Menu, always ignites my creativity. It’s a testament to how passion and talent can elevate food into art.

What’s next for you, and are there any exciting projects ahead?

I have a range of projects lined up, including consultancy roles, food festivals, guest-speaking engagements, and masterclasses.

I am also proud to serve as an ambassador for esteemed brands and to collaborate with hotels on unique culinary concepts.

Each project allows me to share my expertise and continue to innovate within the pastry world.

Cherish Finden recently appeared at Cake & Bake and Ideal Home Show at Olympia from November 27 – Dec 1.

What has been your biggest career challenge, and how did you overcome it?

From the moment I put on my chef jacket, I knew the kitchen was where I belonged. I’ve always approached challenges as opportunities to grow and prove to myself that I can succeed.

I believe in staying positive, tackling things step by step, and never taking on more than I can manage. Some of my proudest achievements like creating an edible hat for Ascot or speaking at Buckingham Palace for the Duke of Edinburgh Award came from embracing challenges with determination and a mission to excel.

One of my proudest career moments was working at Raffles Hotel under the guidance of one of the world’s finest chefs, Peter Knipp, who was my executive chef. He was strict, highly professional and a strong leader I credit much of my success to the lessons I learned from him. During my time there, we hosted 24 world-renowned chefs as part of a culinary promotion, which truly broadened my perspective and transformed the way I viewed the global culinary landscape.

What advice would you give to someone starting in pastry today?

Master your basics. My mother always told me, “Learn how to walk before you run.” This advice is key to building a strong foundation in pastry. Be patient, stay curious, and approach each task with a willingness to learn. This journey requires perseverance, but passion will carry you through.

“MOST PEOPLE REALLY OVERCOOK TURKEY BUT MY TOP TIPS FOR THE PERFECT CHRISTMAS BIRD STARTS WITH

A traditional Christmas dinner must have turkey, no question.

It often has the reputation for being dry, but that is most likely because it’s not prepared or cooked properly. Most people really overcook turkey but my top tips for the perfect Christmas bird starts with choosing the right one. Buy a high welfare bird, my personal choice is always a Kelly Bronze which I always get out the packaging the night before, uncovered in the fridge to dry for the perfect crispy skin. Make sure you remove it from the fridge a good 2 hours before cooking to allow it to come to room temperature, that means it cooks better. When the oven is warmed to 180oC, massage your lovely turkey with some cold pressed rapeseed oil into the skin, and season with sea salt. It can be therapeutic, just what you need on a busy Christmas morning.

A good stocking filler request for the cook, though not the most romantic for sure, would be a meat thermometer. A must have for any cook, they are not expensive starting at around ten pounds, so you can test your meat. Your turkey should have a core temp, in the thickest part of the breast, of 65oC. The turkey is going to be blushing pink, which is slightly under, but we are now going to rest our turkey, wrapped in tin foil for 2 hours, during the resting, the turkey will continue to cook with residual heat and reach a perfect serving temp of 75oC. After resting, pop in back in a hot oven for 5 mins then carve.

The perfect turkey needs the perfect roast potatoes, and a little effort goes a long way with potatoes. I typically use rooster or maris piper and get them peeled and into some salted boiling water to cook for 16-18 minutes, until the potatoes are tender and the edges are just starting to break up. Drain through a colander and spread out onto a tea towel in a single layer and allow to steam dry for 20 minutes. This is important, too many people rush and don’t do this. In a large oven tray, I heat 200g of duck or goose fat, carefully add the potatoes and baste the potatoes with the hot fat. A top tip is to throw a couple of bruised cloves of garlic and fresh sage leaves into the oil too. Now pop into a 200oC. oven for 30 mins, remove, turn the potatoes, baste again and put back in the oven for another 30 minutes until crisp and golden.

It’s the most magical time of the year and as a globe-trotting personal chef, who cooks for royalty and billionaires, I am probably asked most about two things: how do you make your perfect roast potatoes and, any tips for the ultimate Christmas turkey?

A quick tip for that, carve the breast off the bird in one piece and then cut across into thicker slices which will help keep it moist. Delicious.

Now time to pull the crackers, pop on the hats, tell some corny old jokes and raise your glass.
