A note from the editor It has often been said that everyone is searching for something.

In this edition, we celebrate some of the things that people have found.

The Central Alabama Sport Flyers have found a way to pursue and enjoy their love of flight without getting in a cockpit.

The model flying club has met in Clanton for years, attracting members Joyanna from across the region.

Love Finding something valuable is always an exciting moment. Owners of consignment shops shared with us their tips on finding treasures among the things for sale in local second-hand shops.

When Autumn Carlisle signed up for online college classes, she never thought it would reconnect her with a teacher from her past. Through the wonders of technology and the internet, the former teacher was able to teach her former student again, even though they now live in different states.

Also in this edition, the Extension Office shares the best and safest practices for home-fermented foods.

Autumn Carlisle in first grade

Everyone has a special adult mentor that impacted their childhood in a positive, meaningful way. Often, it is a teacher that makes a difference in our lives. Teachers have the ability to identify and bring out the best in their students. Favorite memories of teachers can be as diverse as the students. Some teachers go to school games and cheer for their students from the stands, while others encourage unique, hidden talents and help with scholarship applications. For Autumn Carlisle, the teacher that made a difference in her life was Dr. Lisa Embree.

Embree was Carlisle’s first grade teacher in 1999 in Colonial Heights, Tennessee and made a lasting impact on her life.

“My parents were going through a very difficult divorce at the time,” Carlisle said. “They had been fighting over me since the age of three. I still have traumatic stress associated with remembering the details of it. Embree created a safe teaching environment that I didn’t feel threatened in. Every child needs a safe place that he/she can feel comfortable in and talk with the teacher without worrying about fighting.”

Sadly, Carlisle and Embree moved apart over time.

Initially both residents of Tennesse, Carlisle eventually relocated to Jemison and lost contact with Embree.

“I tried searching for her online in social media, but could not find her,” said Carlisle.

Eventually, Carlisle gave up on her search, but she knew that she wanted to become a teacher and make a lasting impact on students the same way that Embree had for her.

“I registered online at Walden University (an online four-year university headquartered in Minnesota),” Carlisle said. “Having online classes has helped me continue my degree during COVID and while having children.”

“About a week after I registered, I received an email that gave the course instructor’s name- Dr. Lisa Embree. I was shocked! I immediately sent her an email and asked her if she was the same Dr. Lisa Embree that taught first grade in Colonial Heights, Tennessee in 1999. She responded Dr. Embree reading Autumn Carlisle’s end of school year letter.

After decades of teaching, Embree remembered Autumn and was happy for the reunion.

“She was so tiny and quiet and had a sweet, sweet spirit,” said Embree.

In response to hearing Carlisle describe her classroom as a “safe environment,” Embree credits students feeling safe to building a good teacher-student relationship.

“I try to help the student understand their own strengths and what areas they need to grow in,” said Embree. “I want

all students to have voice. It is okay to make mistakes and it is necessary to set up parameters, so the students know what is expected of themselves and you (as the teacher).”

Embree also implements small groups within the classroom setting.

“You don’t see small groups as often in high schools, but it is important in all age groups for the students to have that interaction,” said Embree. “They might never ask a question in front of the entire class, but they will feel comfortable asking the eight people in their small group.

Embree also likes to include fun, personal touches to the classroom setting like surveys

of likes/dislikes, identify what extracurricular activities they are interested in and give students quotes to keep.

Embree and Carlisle have not met in person yet with COVID restrictions but chat regularly via email and telephone and hope to reconnect in-person this fall.

“It is rewarding as a teacher to know that my teaching stuck with someone,” said Embree. “It is moving. It is surreal. We are a school family.”

Carlisle will graduate in the spring of 2022 from Walden with her Bachelor of Science in Elementary Education and hopes to teach at Jemison Elementary.

For eons man has desired to take flight. But for many, there are obstacles to this dream — sometimes it is the lack of nerve to fly a plane; sometimes it comes down to the lack of funding.

Yet, for those beguiled by the wild blue yonder, there is another path upward. Many have found it through the hobby of remote control aircraft flying, which is where the Central Alabama Sport Flyers come in.

Imagine, one can fly as free as a bird and yet remain on solid ground. It’s what CASF president Darrell Mims has been doing since he graduated from Thorsby High School in 1970. That’s about when the club started, but back then people flew the model planes on two lines — it was called line control, or U control.

“Mostly you stood out in a circle in the middle of a field with a handle and a pair of lines, and guided your plane around the circle. Of course you could go up and down, inverted and do all kinds of stuff,” Mims said. “That’s the way it all started, but then about 1969-70, radio got more sophisticated, and everybody was going to this type radio.

Everything now is computerized, of course.”

Mims might have been the first person in Chilton County to own an RC plane. Around 1970, he bought a radio model with proportional controls, and before that he had put together wooden planes in some form since age 13.

“The way I got started was, I tried to fly this thing off the ground, and it never would get off the ground,” he recalled. “I told my brother, ‘Pick that thing up and throw it.’ He picked the plane up, ran, threw it, and I’ve been flying ever since.”

Mims remembers purchasing RC kits and fuel from Jeff Miller at the Five and Dime. There, he could find whatever he needed for the hobby. Today, Mims has 10 or more RC planes to keep up.

He traces his love for aviation back to spending time with his father, who owned a life-size plane back in the mid-’60s.

“We used to go out to the airport with him. Charlie Wade was there. We just had a good time on Sunday afternoons just hanging around the airport,” Mims said.

Mims was an aircraft mechanic for 45 years. He earned his aircraft mechanic’s license at Ozark in 1976, but he sticks mostly to the RC world nowadays.

“I have flown, but I guess I’ve just got my feet on the ground now,” he said.

About the CASF The Central Alabama Sport Flyers own a strip of land located at 3704 County Road 47 outside Clanton. It comprises a 975-foot grass runway, clubhouse, restrooms and covered stations alongside the runway for flight preparation and observation.

There are currently about 35 members of the club, and their skill levels range from beginner to expert. They meet most Sundays about 1 p.m. to fly, sometimes staying out until dark. They also have cookouts and even night flights, which obviously requires more skill.

bills and maintenance on club facilities.

“We’ve flown out of pastures, stadiums and all different places, but this is our property here, and we’ve paid it off and it’s ours as long as we want it,” Mims said.

There are different styles of RC planes.

Some have a body made from a foam material; others consist of balsa wood and plastic. Mims prefers the latter because it’s what he grew up using. They primarily arrive pre-manufactured, but some assembly is required due to the fragility of moving parts.

The moving parts that control the direction of the craft are operated by servo motors, which are self-contained electrical devices that rotate to the desired angle.

When it comes to propulsion, some planes are powered by a fan that creates a rush of air like a jet. Others have actual propellers that do the job. Many are batterypowered while others run on nitro fuel, known as “glow fuel.”

Darrell Mims of Clanton has enjoyed flying RC planes for several years.

“Basically, it’s just like you’re sitting in the airplane, and you’ve got left, right, like that, see how it moves?” Mims said while demonstrating the servos on one of his models.

“It can move a little bit, it can move a lot. It’s just like a real airplane.”

With plenty of practice, one can get really good at flying RC planes — good enough to do a few tricks.

“You can stall one, you can flip one, you can spin, roll, whatever,” Mims said, adding a warning to potential new recruits — Don’t get too attached to your plane, because it will eventually crash.

“Sometimes you can repair them,” he said. “It’s not really bad a lot of times. It just takes a lot of patience to put the pieces back together.”

Father-son flights Wade Johnson has flown RC planes off and on for about 35 years, and has done so with his oldest son, Josh, for eight years. Johnson took flying lessons as a teenager but did not get his certification.

“I’ve always been interested in avionics; I’ve always been interested in planes,” Johnson recalled. “As a kid, I’d be at the house, and I’d hear one, I’d have to look up and see it.

I just thought it would be neat to be able to have a scaleddown version, something that I could fly myself because I couldn’t really afford a real plane.” peach living 13

Johnson admitted that for several years he got out of the hobby in order to spend more time with his family, but that soon took care of itself.

“When my oldest son sparked an interest in it, it gave (us) some father and son time teaching him how to fly and letting him enjoy the hobby that I’ve always enjoyed,” he explained.

Johnson has worked for the Clanton Police Department for more than 30 years, and his experience with the Flyers led to the department acquiring a drone. He said the biggest difference is that most drones have a camera attached. When operating the police drone, Johnson wears goggles that enable him to see what the drone “sees” in mid-flight.

With RC planes, however, the operator is usually limited to the naked eye. In fact, it is against FAA regulations to fly them farther than the eye can see.

“With these planes, you can’t fly them out of sight because you’ve got to be able to see it and see what 14 peach living

orientation it’s in in order to control it,” Johnson said.

With advances in technology, however, the planes have gotten lighter, stronger, more affordable and more efficient.

One can purchase an RC plane starter kit for $200 or less, depending on the type of materials used and the size model.

“Pretty much everything’s gone electric now because it’s cleaner, it’s more efficient. Battery technology’s gotten better. Fly times are longer,” Johnson said.

The search for treasure does not always involve digging in the sand.

Many have found gems among the displays of consignment shops and antique stores.

This was the case for Melissa Baker when she found a ceramic figurine of one of the dwarves from Disney’s “Snow White and the Seven Dwarves.”

The figurines were made in Japan in the 1960s, and the first one she found is Baker’s favorite consignment shop find.

Baker, who is an owner of Rustique Relics in Clanton, said now she is on the search to complete the set.

So far, she has found three.

She had this advice for those looking for treasure in a store of pre-owned items.

“If you find something you want, don’t leave it; just go ahead and get it,” Baker said. This happens all too often, you pass something up for whatever reason and you go back to get it to find that it was sold. Be careful around glassware. Most places have a you break, you buy policy in place.”

Brenda Barker, who owns a consignment store in Maplesville, added that she looks pieces over for chips or cracks. She also encourages people to test any electrical items before buying.

No one wants to take what they think is a treasure home, only to find that it is an imitation of the authentic peach living 17

brand they thought they bought.

Baker suggests looking for maker markings, but not all items will have these.

“Google can be your best friend with helping to determine whether an item is genuine or a knock off,” she said. “When looking at old glassware the first thing I do is look for wear on the bottom of the piece; if it’s an old piece, there will often be clear signs of wear on the bottom. forums for individual items usually have a thread for determining if a piece is genuine.”

Whether to restore an antique is often a question. Baker said many shoppers do have a personal preference.

“Some people love the original patinas while others like to restore a piece to mint condition,” Baker said.

There are often simple ways to upgrade an item to fit one’s style.

“If it’s a furniture piece, chalk paint is a good, easy to do option. I like to do a combo of Dixie Belle chalk paint for the base and a stained wood top for everything in my house,” Baker said. “My husband likes to sand down everything down to the wood and stain a piece and finish with polyurethane ...

Adding embellishment features or transfer decals to anything from furniture to suitcases can really change the look completely, ensuring you have a true ‘one of a kind’ piece.

However, Baker said sometimes just properly cleaning an item is all that is needed.

“Sometimes cleaning a piece up makes a world of difference,” Baker said Barker said she does not have a favorite second hand find, but she is always on the lookout for pre-owned items that might have good resale value.

Consignment turned out to be a good business choice for Barker as an addition to her Pixie Dust Boutique.

“My business almost double or tripled once I started consignment,” Barker said. “Consignment is definitely what people are interested in because you can get it so much cheaper than if you bought it brand new.”

Chilton County has a number of places to look for second chance treasures. In addition to Baker’s and Barker’s stores, Bren-Wils in Clanton also carries consignment items.

Tips for home fermenting

Maybe you’ve heard about it on the news, read about it in a magazine or have been some where recently where it was served ... and maybe it made you a little nervous.

The thought of home-fermented foods. The practice of fermenting food and drinks has been around for thousands of years but has in the last 4-5 years resurfaced as trendy in the United States. The first well known fermentation by humans was in the form of beer and wine over 8,000 years ago, but most likely bread was the first fermented food predating the alcoholic beverages. We all have consumed fermented foods at one time or another and did not even realize it. If you have eaten cheese or yogurt or sour cream, soy sauce or tabasco sauce you have eaten fermented foods So, what is fermentation? Technically speaking, it is the conversion of carbohydrates to alcohols and carbon dioxide or organic acids using yeasts, bacteria, or a combination thereof, under anaerobic conditions. In simpler terms, it means using beneficial bacteria and yeasts to preserve food and beverages. Worldwide there are nine categories of fermented food/beverage: bean, grain, vegetable, fruit, dairy, honey, fish, meat and teabased concoctions. Some of the more familiar fermented foods include sauerkraut (fermented cabbage), yogurt (fermented milk) and soy sauce made from fermented soybeans. Some of the new and popular foods include kimchi, made from radishes, napa cabbage, or other vegetables; kefir which is a drink made from fermented milk; and kombucha which is a fermented tea.

Let’s back track to bacteria. Why would anyone ever want bacteria in their food or drink? If you didn’t know it already, our bodies (especially our guts) are already teeming with hundreds of different kinds of bacteria, 20 peach living

some good and some not so good. In a healthy human gut, bacteria are mostly beneficial, and it helps us in digestion, extracting nutrients from food, and defending us from harmful bacteria. Some studies are now showing that our gut flora play a large role in our immune system and also mental health.

The process of fermenting food, also called lactofermentation, is carried out by several strains of “good bacteria” and beneficial yeasts. By consuming foods rich in these organisms, the benefits are transferred to your gut.

This is sometimes referred to as probiotic treatment and improves intestinal microbial balance. Studies have also shown that eating fermented food increases vitamin intake as some micro-organisms produce vitamins during the process, as well as increase the available nutrients our bodies can use. Foods that are fermented are easier to digest.

By now you’re probably wondering ... is it safe? After all, we are talking about leaving food unrefrigerated only to be overrun by bacteria, and then continuing to eat it. U.S. Department of Agriculture research service microbiologist Fred Breidt says properly fermented vegetables are actually safer than raw vegetables, which might have been exposed to pathogens like E. coli on the farm. It’s better than canning them (sauerkraut especially) because when you heat the fermented product it kills all the good microbes which is the reason you fermented it in the first place. Sauerkraut after about 2 weeks needs to

be refrigerated to keep it from becoming soft because it continues to ferment and break down the cabbage tissue quicker. Once stored in the refrigerator it will keep for up to 9 months. This is because the bacteria in lactofermentation are great at killing other unsafe bacteria during the fermentation process. For this reason the Alabama Cooperative Extension System recommends trying recipes from reliable sources such as the USDA, the National Center for Home Food Preservation or when you are doing research make sure anything you search on the web comes from an educational resource and not social media recommendations. Recommendations from other sources can lead to bacterial problems because they may not be using salt or sanitary conditions like you should to prevent bad bacteria from forming.

The Chilton County Chamber of Commerce held a ribbon cutting for the re-grand opening of Maddog’s Grills new location at 200 Town Mart Shopping Center on Thursday, June 3.

The Chilton County Chamber of Commerce recognized members of the West End Neighborhood Watch organization with the Chamber’s Community Spirit Award at their regular meeting on Thursday, June 3. Chamber Happenings

The Chilton Chamber hosted a Meet the Mayor event for Jemison Mayor Eddie Reed on May 18. Community members and city officials met to talk about all that is happening in Jemison and plans for future growth.

The Chilton County Industrial Development Authority and Chamber of Commerce hosted a Chilton County Existing Industry and Membership Breakfast on May 13 at 6th Street Warehouse in Clanton. Community leaders met to discuss and share ideas with other businesses. The breakfast was sponsored by Central Alabama Electric Cooperative.

CALENDAR July 31 Chilton County Arts Council will host an Arts Festival from 9 a.m.-3 p.m. at the Clanton Performing Arts Center, 1850 Lay Dam Road. Vendor applications available at chiltoncountyartscouncil.com.

Oct. 18 A Taste of Chilton County will be held at Senior Connection, 304 Park Drive, Clanton, 5:30-7:30 p.m. This event is sponsored by the Rotary Club of Chilton County and Senior Connection.

Ongoing Cooper’s Cemetery Fund is currently accepting donations for upkeep of the cemetery from those with loved ones buried there. Any contributions would be greatly appreciated.
