outh is very much a focus of Spring – bunnies, chicks, baby birds, young tender plants come to mind – and that might be said for this issue of AT HOME, too. Our featured homes include one with numerous amenities to delight the young children in residence, one that has much to offer any visiting children and one that has had a recent rebirth and now feels youthful again. Thanks to their owners for providing us a visit. What says youth more than a tree house? Did you have one as a child? I always wanted one but our home had trees that were too small and immature to handle a house among the leaves. The Green at Home article lets us live vicariously through the wonderful imagination and creativity of the builders of some enviable and very fun outdoor spaces reachable only by ladder. Spring brings thoughts of love and we have that covered with a delightful young couple sharing their elegant yet relaxed wedding with us. Meet the Wilands and be charmed. In Garden to Table, Jan Wesley introduces us to a growing phenomenon … backyard coops. Chickens that produce fresh eggs and an eco-friendly compost material have become the newest addition to backyards. And not just in rural areas. We’ll learn all about the various structures for the hens and where to purchase them. Jan includes recipes using the eggs, too. Recipes are also a prime feature in Wine & Dining as we meet up with Mark Pollard, the newest addition to the staff at Charleston Cooks! He’ll have us “Cookin’ Southern and Lovin’ It” with his yummy recipes for some classic good eats. The spirit of youth is present in the magical transformations that Lindsay Oehmen performs on somewhat shabby furnishings. You can see their new look in our Simply Unique feature. “T
he Layered Garden: Design Lessons for Year-Round Beauty from Brandywine Cottage” by David L. Culp could be considered an inspirational or “coffee table” book. The photographs of David’s gardens at his home, Brandywine Cottage, are so stunning they could be framed. Page after page of beauty in different seasons and environs: from a sunny vegetable plot to a “ruin garden” growing on and around the remaining walls of an old barn, to the shady side of a hill. However, once you read a page or two of “The Layered Garden,” you probably will not stop until you have finished the book. The conversational style and examples from the author’s own garden make the book a perfect guide for even the novice gardener. While I may dream of having a garden like Brandywine Cottage, I am a realist and know that most of us do not have the time or space to garden as David does. However, what I can do is take the practice of layering – which lets the gardens at Brandywine Cottage exhibit beauty all year – and apply it in some fashion in my garden. If successful, instead of having to plan outdoor events only during the two-week peak of my garden, I can expand its beauty throughout the year. While Brandywine Cottage is in Pennsylvania and has to deal with long snowy winters rather than hot dry South Carolina summers, the plan for the garden is fundamentally the same. The way Brandywine Cottage is divided into separate gardens is an advantage to small-scale gardeners such as myself. We can pick one small area or environment and make that our layered garden adventure. David has learned to work within the limitations of his land and environment while not letting it limit the beauty of his garden. He uses very little water, no pesticides, and fertilizes only sparingly. He does make use of organic matter to “feed” his garden on an annual basis. Rather than spending time watering and fertilizing the lawn portion of the
garden, he overseeds annually. Near the end of the book David does a wonderful job of taking individual plants and discussing their attributes and how to best use them in your particular garden. His amazing knowledge of hellebores, especially snowdrops, is displayed in the beautiful illustrated chapter on these shadeloving plants. In conclusion, if you need a coffee
table book you can’t go wrong with this purchase, but you will miss a wonderful experience if you don’t read the book and follow your inspiration from there. That’s exactly how I felt while watching Mark Pollard, general manager and lead chef instructor, in the kitchen at Charleston Cooks! on North Main Street in downtown Greenville. A longtime foodie, Mark had previously worked in appliance sales and as a corporate chef with White’s Appliances Inc. He joined the crew at the Greenville location of the Maverick Kitchen store last November. A Clemson University graduate, Mark has also been a personal fitness trainer and a strength and conditioning coach at Clemson. He holds an 8th degree black belt. This fellow is versatile. Where he seems to be the happiest, though, is in the kitchen creating some of the best-tasting food around. Wine&Dining CLASSIC SHRIMP AND GRITS Creamy Stone Ground Grits 2 tablespoons unsalted butter 1 cup stone ground grits 4 cups water 1/2 teaspoon salt 1/2 cup heavy cream 1/2 cup cheddar cheese, shredded Hot sauce, such as Texas Pete, Tabasco or Sriracha Place the butter, grits, water, salt and cream in a saucepan over medium heat. Cover with a splatter screen if possible. Stir often, scraping the bottom of the pan to loosen any bits of grits. Cook the grits until all the water is absorbed and they are al dente, about 30 minutes. Add the cheese and stir until melted. Season to taste with salt and hot sauce. Keep warm until ready to serve. TIP: If the grits get too thick, add more cream or some milk and cook stirring over medium heat until the liquid is absorbed.

Shrimp Gravy 1 1/2 pounds (21-25 count) shrimp, peeled and deveined 1 tablespoon Lowcountry Seafood Boil Seasoning 2 tablespoons unsalted butter 1/2 cup country ham, julienned 1/2 yellow onion, peeled and diced 1 clove garlic, peeled and grated 1/2 bell pepper, ribs and seeds removed, diced 1 tablespoon all-purpose flour 1 cup shrimp or seafood stock In a small bowl combine the shrimp and Lowcountry Seafood Boil Seasoning. Set aside. Place the butter in a sautĂŠ pan. Spread the country ham out in the same sautĂŠ pan. Place the pan over medium heat. Cook, without stirring, until the ham is brown on the bottom. Once the ham is brown, flip the ham and add the shrimp. Spread the shrimp out in an even layer. Cook until shrimp are pink 1/2 of the way up the sides. Remove the shrimp from the pan. The shrimp should not be cooked through at this point. Add the onion, garlic and bell pepper and stir to combine. Cook, without stirring, until the onion and pepper are brown on the bottom. Add more butter if needed to cook the vegetables. Once the vegetables are brown, add the flour and stir until toasted, about 1-2 minutes. Add the stock slowly and simmer until the mixture will coat the back of a spoon. Remove the pan from the heat. Add the shrimp back to the pan. Stir to combine. Allow the shrimp to sit undisturbed for 2 minutes. This will finish cooking the shrimp. Season the shrimp gravy to taste with salt and pepper. To serve, mound the grits on serving plates, create a well in the center and divide the shrimp and the gravy among the wells.

Wine&Dining LOWCOUNTRY SPICED GREEN BEANS 1 1/2 pounds green beans, stem end trimmed 1 tablespoon Dijon mustard 1/2 teaspoon Sriracha 2 tablespoons white wine vinegar 1 teaspoon light brown sugar Olive oil 3 whole garlic cloves, peeled 3 tablespoons lowcountry seasoning Heat a large pot of water to boiling over medium-high heat. Add salt to the water until it tastes salty. Add the green beans in small batches and cook until al dente. Remove from the boiling water and
place in ice water. Remove green beans from ice water and place in a colander. Pat dry with paper towels. In a small mixing bowl, combine Dijon mustard, Sriracha, white wine vinegar and light brown sugar. Set aside. Heat a large sautĂŠ pan over medium heat. Add enough olive oil to cover the bottom of the pan. Add the garlic cloves. Fry until browned on all sides. Remove garlic cloves from the pan. Quickly add lowcountry seasoning. Cook until fragrant, about 30 seconds. Add green beans and toss to coat with seasonings. Add Dijon mustard mixture and browned garlic to the pan. Toss to coat green beans. Season to taste with salt and Sriracha.
SWEET POTATO BISCUITS WITH HONEY BUTTER 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 teaspoon kosher salt 1 tablespoon white sugar 6 ounces cold butter, cut into 1-inch chunks 3/4 cup buttermilk 1 sweet potato, peeled and grated 4 tablespoons unsalted butter, melted 1/2 cup honey Preheat oven to 350 degrees. Line a baking sheet with a Silpat. Combine flour, baking powder, baking soda, salt and sugar in a large bowl. Cut in butter using a pastry cutter or two knives until mixture resembles coarse meal. Add buttermilk into the flour mixture a splash at a time and stir until just combined into soft dough. You may not use all the buttermilk. Place dough onto a floured surface. Using floured hands, divide, stack and press the dough 3-5 times. Roll out dough on a floured surface to about 1/2-inch thickness. Cut out rounds of desired size. Place biscuits on the lined baking sheet very close together and to the side of the pan. Bake until golden brown, about 20 minutes. In a small bowl, combine the butter and honey. Drizzle the honey butter over the warm biscuits.

BOURBON PECAN TARTS Pie Crust 1 stick unsalted butter 1 1/2 cups all-purpose flour One pinch salt Whole milk, about 2/3 cup Stir together the butter, flour and salt in a mixing bowl. Using a pastry blender, cut the butter into the flour until the butter is the size of peas. Add milk one splash at a time to the flour and stir. Continue adding the milk until the dough forms a ball. Wrap the ball in plastic wrap and flatten into a disk shape. Chill dough about 10-15 minutes. Filling 1 cup white sugar 3 large eggs 1/2 cup light corn syrup 1/2 cup dark corn syrup 2 tablespoons unsalted butter, melted and cooled 1 teaspoon pure vanilla extract 2 tablespoons bourbon 1 recipe piecrust 2/3 cup pecan halves Preheat oven to 350 degrees. Line a sheet pan with 12 silicone muffin cups or grease 12 traditional muffin cups. In a mixing bowl, whisk together the sugar and eggs until light and fluffy, about 1 minute. Add the corn syrups, butter, vanilla and bourbon. Whisk until well combined. Remove the dough from the refrigerator and cut into 12 pieces. Using floured fingers, press each dough portion into a muffin cup. Using your hands, break the pecans into small pieces and divide among the muffin cups. Top the pecans with the filling to 2/3 full, about 3 tablespoons of filling in each cup. Place pan in the oven and bake until the filling is set, about 25-30 minutes. ho doesn’t love a tree house? They are true pieces of Americana, symbols of our childhood and simpler times.Tree houses are fun, often quirky, small structures that leave a lot to the imagination. Rarely are they intended to be the focal point of a home’s landscape. However, for a handful of guys around town, the tree house has become a true architectural challenge. In tackling a backyard project like this you sometimes need a little friendly competition to get you motivated. For me it started with my neighbor Matt McClain’s inspiring idea: build an entire tree house from reclaimed materials. And make it beautiful. Of course, building a tree house from scrap is not an entirely new concept, but McClain took it to a whole new level, including a functioning old mercantile door and a wall of windows. With a rusty tin roof and covered front porch, it truly is a little house up in the trees. It sets the tone for the entire backyard. As a father and an architect, I couldn’t resist the challenge of building a salvaged and reclaimed tree house in my own backyard. What used to be an overgrown and underutilized space has been transformed into a family oasis centered around the tree house.Thanks to a woodshop of leftover wood scraps, milled lumber from two fallen trees, and building materials from two renovations, I had just about everything needed to get started. My design evolved based on the materials I found; the freedom was exhilarating and the end result is a unique, ad hoc play fort that my kids love. What’s more, it will add interest to my backyard for years to come. This style of creative salvage design quickly spread. Chris Stone, a fellow woodworker and architect friend, was soon inspired. Chris set out with his son to transform the family’s existing tree house using a neighbor’s abandoned timber play-set and discarded construction materials, and they created what he calls his “urban adventure contraption.”

Each element was inspired by observing how his children played with found objects, which he then incorporated into the overall design. Both McClain and I have since been commissioned to design and build tree houses utilizing salvaged and reclaimed materials. Like us, our clients are inspired by the challenge and take pride in making use of things that would otherwise have gone to the landfill. We’ve used wood pallets, timbers, old fencing, construction lumber, exterior siding, found hardware, repurposed windows, fallen limbs, even parts from old play sets. During each build, the tree house design evolved based on the materials at hand. If you find something isn’t the right size or quite the right fit, you improvise.The resulting tree houses have truly become the heart of the backyard landscape. Building a tree house is not for everyone. First and foremost it’s important to know how to build a sound structure; but if you have the basic skills, it’s all about knowing how to rethink and reuse found materials in creative ways. And have fun! After all, it is for the kids, right? ah

The 2012 Inspiration home, built by Milestone Custom
Homes in The Manor at Hollingsworth Park, lived up to its name, wowing hundreds of visitors and raising more than $26,000 to support the Greenville Humane Society and Susan G. Komen for the Cure. “In addition to raising funds for worthy causes, the purpose of the Inspiration Home was to showcase how modern technology and creative design can enrich a homeowner’s living experience every day. This 11,000-square-foot home does just that, with creative and thoughtful touches at every turn. Linda McDougald, principal and lead designer at Linda McDougald Design | Postcard from Paris Home, enjoyed working with Milestone and other contributors on a home created to spark ideas people can re-create in their own homes.
“It was a fresh approach to traditional,” McDougald says. “Warm colors are typically used in this area, but we went with a cool palette, with clean lines, Carrara marble in the baths, white Caesarstone in the kitchen. It was a different approach that is livable but a bit more sophisticated.” The iHome is located on a spacious lot in the gated Manor, a luxurious neighborhood that gives residents the privacy and safety they want along with an ideal location in the heart of Verdae, with its sidewalks and 20-acre park. The master-planned Verdae community was designed to incorporate a variety of neighborhoods and, in the future, a convenient retail district. “We’re excited about the development,” McDougald says. “It’s so incredible that Greenville has this beautiful place within the city where people can build, complete with a park and their own Y.”

Milestone Custom Homes owners Jerry Fay and Chris Rogers pulled out all the stops for the iHome, filling it with unexpected and ingenious features. The exterior welcomes with natural Indiana limestone – the first home in the Upstate to use this material – along with Cypress Forest Brick. The front door is custom Spanish cedar, and the floor offers a warm backdrop thanks to antique French oak hardwood placed in a cathedral pattern. The beautiful material was then hand-scraped for a softly aged look. The foyer and study feature heavy wainscoting and custom built-ins, and a hidden door in the foyer leads to a “secret room” that will surprise family and friends.

ay you want to uproot your suburban New England lifestyle – and many of its trappings – and transplant it onto a steeply sloped waterfront lot in the upcountry of South Carolina. Where to start? The smart play is to hire an architect who can conquer the terrain, a builder who can execute the vision, and a designer skilled at blending old and new to pull it all together. The owners of this Cliffs at Keowee Springs charmer achieved this trifecta beautifully. Atlanta architect Stephen Fuller had his work cut out for him in situating the home on the lot, which cants quickly down to the lip of Lake Keowee, in such a way as to maximize views of the water while also maximizing privacy. The homeowners had already bid farewell to one site when neighbors popped up on either side, and this was even after the house had been drawn up and staked on the lot, so privacy was job one. “Steve was very astute at getting all that, getting it on the property but also putting you in a direction that you’re just going to see pretty things,” the homeowner says. Fuller says one of the biggest challenges was the topography approaching the home from what would one day be the driveway, and where and how to place the garage. Because homes of this size often must accommodate multiple vehicles, he explains, homeowners often give up on an aesthetically pleasing garage and accept a row of doors as a necessary evil. Instead, this design elevates and turns the garage away from the approach, and uses a breezeway both to link the garage with the house and separate the drive from the steep drop waiting on the other side. 70 | a t hom e

The idea of a detached garage first gave these New England natives pause, but the end result has proven to be as functional as it is beautiful. A grand setting deserves a grand entrance – easier said than done on this steep lot. The landscape design is the work of J. Dabney Peeples, Design Associates Inc., with tweaks here and there from the homeowner, herself an avid gardener.

“What could have been a hard, invasive structure competing with the house turned out to be a really strong arrival court, and that will only get better with age as the landscaping matures,” Fuller says. For our New England native homeowners the idea of a detached garage took some coming around to, but the resulting breezeway has proved to be beneficial for unloading cargo or quick stops home. Once the topography had been successfully negotiated, the team turned its attentions to the interior. The homeowners recognized the need for drama in the way of high, grand ceilings and expansive windows, but – being somewhat small of stature – didn’t want to feel dwarfed in their own home. They appreciate Fuller’s approach to balancing their request for “interesting ceilings” with a cozier feel for the actual living spaces.

The homeowner is particularly taken with architect Stephen Fuller’s play on her request for interesting ceilings, and with designer Christy Johnson’s knack for lighting fixtures.

“You do want that breathtaking experience when you first arrive, but then for day-to-day living it should be comfortable,” Fuller says, explaining how he accomplished this with the thoughtful incorporation of millwork, paneling, chair rails and bookcases to draw the eye down. “Different perspectives occur in the same room for different purposes.” The lady of the house tasked her designer – Christy Johnson of Fowler Interiors – with pushing her beyond her décor comfort zone, but she also issued a challenge of her own in the form of several pieces of furniture she wasn’t willing to part with, one being the family dining room table. The homeowner didn’t know how the French piece would fit into the English cottage concept she was going for in the new space; what she did know was she loved the table and it wasn’t going anywhere. “The dining table was a wonderful, large piece of furniture that she already owned,” Johnson says. “Even though it wasn’t quite the ‘style’ of the architecture of the house, I believe that it helped the dining room to feel collected over time rather than like a furniture showroom.” The lower level is home to two guest suites, which the homeowners’ adult children have claimed as their own, and a media room and billiard room overlooking a patio that in turn overlooks the water. Here the couple has essentially re-created their Massachusetts family room, a gesture their children appreciate. Johnson says because the furniture was good quality and offers a nice blend of leather and woven fabrics it works to lend a masculine feel to the media room.

The key to making beloved pieces work within an updated design scheme, Johnson says, is mixing materials, which she did to great effect throughout the home. In the kitchen, for example, she pairs stained cabinetry with painted and distressed islands (yes, there are two), and polished nickel meets iron meets weathered brass. “(The kitchen) would have a completely different feel if all of the metal finishes were the same and all of the cabinets were the same,” Johnson says. The homeowners say the building process – which took nearly two years – was a positive one, thanks to the relationship they developed with Gus and Belinda Rubio of Gabriel Builders and their attentive approach to the needs ah of their clients.

A
mid-century modern ranch home – 4,650-square-foot with five bedrooms and five baths – was built on 26 acres near downtown Greenville in 1950 for C. Douglas Wilson. A prominent Greenville businessman who worked in the insurance, mortgage, and real estate business, Wilson was a widower and built this home with his second wife. He died in the 1970s, and his wife lived in this home alone for a number of years. WIn 2009, my husband Ed and I purchased this home, which currently sits on approximately one acre and backs up to a six-acre nature preserve with mature trees. From the late 1970s until 2009, routine maintenance was non-existent. For 10 of those years, the home sat vacant. The roof leaked. The paint peeled. The dining room floor and kitchen exterior wall framing were infested with (BELOW) The hardwood floors, ceilings and wood paneling were sanded and refinished, and the granite fireplace surround polished in the 15' x 30' living room. (OPPOSITE) A new stone patio enhances the outdoor space both on the upper level and the lower level of the home's rear exterior. The garden takes on a distinct Asian feel that provides a sense of serenity.
termites. Windows no longer opened and closed. The paint, inside and out, dated from before the Nixon administration. The home sat unheated and uncooled for many years. The good news is that it was a perfectly preserved, high-end, mid-century modern ranch. The home was designed in 1949 by Harold Cooledge (1922-2011), a Harvard educated chemical engineer who changed careers after the Texas City Disaster in 1947 to pursue a career in architecture. Cooledge later taught at Clemson University for more 40 years. He was the chairman of the architecture department for many years and had several architecture history books published. It is believed that our home was one of the first that Dr. Cooledge designed. He was an apprentice to Frank Lloyd Wright, and the similarities of this home to Wright’s prairiestyle homes are stunning. The house came with an incredible amount of documentation: the original blueprints, the original project specifications, and a book of receipts that documents every keg of nails, shipment of lumber, and hour of labor worked. Just the construction receipts are over $50,000, an amazing amount of money to build a house in 1950. Receipts of every long-distance telephone call made on behalf of the contractors sourcing out-of-town materials while building the home were included as well.

Structurally, the house is built incredibly well. The floors are poured concrete, over steel mesh, supported by steel beams, supported by brick walls. There are no piers or poles in the finished basement. The inside and outside walls are Tidewater Cypress from the South Carolina lowcountry. Cypress is used in a lot of Frank Lloyd Wright’s homes. The only issue that we have with Cypress is that both woodpeckers and carpenter bees love it! The woodpeckers have been scared away; however, the carpenter bees again appeared in the Spring. The home had many rotted wood doors and windows. We made the decision to use commercialgrade aluminum and glass storefront doors and windows where the original ones were rotted from moisture that penetrated after the paint peeled. Commercial storefront windows and doors provide a very appropriate look on a mid-century modern ranch, and they offer energy efficiency at a very reasonable cost. The Wilsons loved to entertain, and they built a home with all of the latest amenities. Central air conditioning was installed, the first time ever in a South Carolina residence. Harry Truman in the White House received central air conditioning the very same summer. There is off-street parking for over 20 vehicles. The basement contained a commercial walk-in cooler, the size used by a moderate-sized restaurant, which we transformed into a wine/beer cellar. The adjacent room used to be a second kitchen, used by the servants to prepare food for large gatherings and their own meals. In its place, we constructed a built-in bar and shelving. The shelves are made from the original doors that separated what are now a home office and the living room. We felt it was important to utilize the doors in a creative way within the house and the bar shelves do that perfectly. The home originally utilized radiant heating in the finished basement area, kitchen and bathrooms. There were coils installed below the larger windows. The home used a strange forced-air method of heating for the rest of the home. A gigantic commercial-grade boiler used an air handler to blow air across radiators. After a month of ownership, an $875 gas bill arrived, forcing us to change the heating and cooling to current-technology systems. All of the original aluminum ductwork was replaced with high-efficiency, insulated ductwork and a foot of insulation was blown in the attic, resulting in much lower utility bills. The windows were a mechanical awning-type and they were in a sad state of repair. We originally wanted to restore the windows, but the cost and the inefficiency from a heating and cooling perspective convinced us to replace them with thermally insulated Pella Architect Series windows.

The original windows were left in the breakfast nook. This beautiful room with doors to the porch and unique, individually painted tiles on the ceiling needed its windows to remain undisturbed. Originally the estate grounds occupied 26 acres. A full-time gardener and live-in servant comprised the staff. The home has a separate servants’ quarters with its own private entrance. Servants call buttons were located throughout the home, including a button on the dining room floor at the head of the table. When termite damage was found in the dining room, that unique feature had to be covered; however, we were thrilled to find the same wood floor as was originally used throughout the house. The wood was found in a wood yard approximately three hours away. It would truly take a trained eye to tell that the dining room wood floor has been replaced. Likewise in the kitchen, there was a great deal of termite damage. While installing the new VCT tile in the kitchen, the contractor removed the kickplate from the cabinets and said “Ma’am, could you please come here and look at this?” Where the kickplate had been removed, you could see outside – termites had eaten straight through. This was devastating to us as we were set on keeping the kitchen’s original cabinets. Luckily,
we were able to find a talented cabinet-maker who took the original drawers and hardware from the cabinets before they were removed. He then made the necessary identical, lower cabinets, incorporating all of the original, salvageable parts. New countertops were also now a necessity. We chose a boomerang-patterned Formica countertop that fit the house quite well. We also purchased the period-style stainless trim which made the kitchen look as original as possible. “If you run into issues when renovating an atomic ranch, just remember why you had purchased the home in the first place,” says Ed. “If you had purchased the home due to the original style, it would be unfair to the house and yourself to take the ‘easy way out’ and put in granite countertops. Everything is still out there – it’s just a matter of finding it.” We purchased the countertops via Home Depot and the metal trim via the New York Metal Store on the Internet. The kitchen is certainly not without modern conveniences. Ed wanted a time-period stove and I wanted something more modern. Luckily, Ed saw a Wolf stove with an infrared grill that he really loved and we are both happy. Each day as we look out to the Richland Creek retention pond and enjoy the sight of geese, egrets and ducks, we think back to the renovation period and just “laugh it off ” as it was so worth the time and investment to live in such a delightful home with truly beautiful surroundings. ah

ood was unruffled, ordered and tidy when I grew up in Greenville, eating from plastic green plates at Lake Forest Elementary, with meatloaf and green beans and a yummy yeast roll isolated into three triangles. I was like many who knew nothing about who had cooked it or grown it, how it was put together or where any of that happened. Then, one summer, my mom sent me on my first farm stay. I was chased by a bull and pecked by the hens while trying to take away their eggs, and food instantly went from dull repetition to an exciting challenge! The farm in Ohio belonged to the sturdy grandmother of my cousin Lou Ann. One day we teased a cow, which we soon learned was a bull; consequently, without hesitation, we decided to pick on someone smaller. Before breakfast, we were sent on our mission to gather eggs from the typical wood shed coop, full of cackling, feather flying, and cockamamie cacophony. Equipped with sharp beaks, spurs and toe nails, the mother birds defended their young ferociously! We pretended to be super heroes but the Dynamic Duo barely managed to collect six eggs for our breakfast. We brought the eggs to the kitchen, the grandmother smiled with a bit of a giggle, and we triumphantly gulped down our trophies with the pleasure of two clever foxes. The walk from kitchen door to the hen house completely connected the dots in my food education: the deliciousness of an egg began in the coop with a chicken. SPR I N G 2 0 1 3

GardentoTable Chickens and coops come in a lot of varieties. You can buy them from sources ranging from Wal-Mart to Neiman Marcus. You could build one yourself, or if not, visit your local egg farmer. Before you get started with backyard chickens, check with your city or county to be sure they approve of your coop. You should know that chickens can live up to 10 years and will lay eggs for at least five of those years. They need protection from sun and rain as well as predators like hawks, raccoons and foxes. They are social creatures and need some company, so at least three would be a minimum. To get two eggs a day, you would need to have three hens. The inside of the coop should be kept clean and free from sharp objects like screws or nails; it should give each bird at least 4 square feet and access to roam the lawn. Food and water should be always free from debris, so hanging types work well. Whether a Well-Appointed Manor, Suburban Agrarian, Sustainably Green, the Blue Light Bargain or the do-ityourself camper, selection of the coop and breed is all about your lifestyle. Indeed, having your own steady stream of fresh, organic natural eggs – free of antibiotics, hormones and other unnatural additives – warrants a backyard coop and with so many options in breeds, there is sure to be one right for you.
THE SCOOP ON BUYING A COOP • THE WELL-APPOINTED MANOR: Inspired by the Le Petit Trianon at Versailles and the memory of Queen Marie-Antoinette, the only queen to have imposed her personal taste on Versailles, a chicken house, like the one created for Neiman Marcus, really makes a statement. Like the Queen, the owners of this coop have insisted on living the way they want to live. Neiman’s Fantasy Christmas Catalog priced the “Beau Coop” at $100,000. Furnished with a complete library for the human visitors, artwork on the walls and a dangly chandelier, the multi-level dwelling has a broody room, nesting area and “living room” and comes with two planters for vegetables by the front door. Graciously, the purchase includes a donation to help save endangered breeds, and some

5 expert help to get started. The elegant farmer needs a fancy chicken, and although Neiman’s Fantasy Catalog leaves the selection of breeds to the experts, a Polish Silver Lace (1) or a white Silkie (2) chicken could very well be at home in extravagance. Silkies, renowned for their peaceful, pleasant disposition, interact very well
with children. They lay a fair number of cream-colored eggs, about 100 per year, but production is often interrupted due to their extreme tendency to go broody – a period where the hens feel the need to sit on an egg to incubate it – and this home has a special room just for brooding. The pretty Polish Silver Lace Chicken, which actually came from the Netherlands, is usually friendly. But, they can be easily frightened because the crest on their head limits their vision. Their white eggs are noteworthy and delicious. Even if you live in Chanticleer, the neighbors shouldn’t oppose a beauty like this. • THE SUBURBAN AGRARIAN: If the Neiman’s Beau Coop is not in your budget, you can check out the Agrarian line at Williams-Sonoma. From beehives to chicken coops, W-S has it all. I am sure Lou Ann’s grandma would be laughing, but it is better to raise your own food when you can and a coop is a good thing for the environment and for teaching your children, whether you build it yourself, or order it online. The mobile chicken unit, or M.C.U., is an idea widely attributed to Joel Salatin, a holistic animal husbandry farmer who attended Bob Jones University. He is a self-described “Christianlibertarian-environmentalist-capitalistlunatic-farmer” who has been a major inspiration to small poultry farmers across the world. Moving the coop rotates the grazing areas to provide fresh forage to animals while allowing the caretaker to distribute manure and keep the yard clean. Williams-Sonoma Alexandria Chicken Coop & Run, a practical and mobile unit, is available in two colors, sage green or barn red, priced from $499.95-$1,249.95. W-S offers other styles, too. One made of reclaimed redwood, the Rustic Coop, costs $399.95-$759.95. These come with a white glove service – they assemble it for you – but they do not come with chickens. An Easter Egger chicken (3), a breed from South America, could be the matching pair, laying blue, white or pinkish eggs, naturally. Imagine all natural blue and pink eggs (4) with matching dishes and napkins for the next baby shower!

• SUSTAINABLY GREEN: Peter Zander’s Front Yard Coop (5) was the first solar powered, self-propelled chicken coop that merged green technology, all-natural locally grown food, and a dashing design together with a sense of freedom for the backyard chicken owner. The deluxe “Full Monty” Coop’s motor operates from the solar panels on the top. It gradually moves the coop 16 feet per hour, and gives caged chickens limitless free range space across your lawn while supplying them fresh grass, fresh bugs and limiting the impact from the birds on the greens. It takes up about the same space as a swing set, 4 ft. by 8 ft., a cozy space for about six chickens. If the coop bumps into something, it automatically turns itself around and moves in another direction. The coop holds food and water for days, dispensing it automatically, and it incorporates an electric fence that repels predators. A fraction of the Versailles mansion version, the Zander coop costs $3,925. Dr. Seuss may disagree, but I’ve not found a true green egg. Yet, a sustainable coop deserves a sustainable breed, and many are in danger of extinction. The Plymouth Rock, or Barred Rock (6), dates back to New England 1869, and is a good choice for saving an endangered species. Chickens, like the kind Lou Ann’s grandmother raised, are hard to find these days – like the sturdy “OldType” Rhode Island Red, an iconic symbol of American agriculture, or the Buckeye chicken (7), that shows no fear of people and can give any cat a run for the money on catching mice. • A BLUE LIGHT BARGAIN: The economical Prairie Home Poultry Hutch from Wal-Mart sells for $240, and it is only the beginning of a plethora of choices, but few are mobile. Going the pre-fab discount version, the best buy seems to be the “Corn Row” about $520, for two to three birds. It does have a wheel, so rotating the pasture is easier. White glove service not available, so be ready to assemble on your own.

the engine, the fuel tanks and all the metal under the floor and salvaged it – regaining $130. He recycled the cabinetry into nesting boxes, and put wire mesh in place of the floor to allow the manure to fertilize the ground below it. He secured automated water tanks and feed containers and got to work filling them with a special diet, nongenetically engineered grain, a very rare treat for chickens in the Southeast. Most hens are fed a genetically engineered grain, due to the cost of transportation, but traces of GMO’s (Genetically Modified Organism) can be found in the meat and the eggs, and increases health problems, especially allergies, not to mention vast destruction to the environment. So, I buy eggs from Rich without any worries, and can testify they are really delicious. Although it is heavy, Rich moves the Henn-a-bago twice per week to allow his hens to free range in fresh pastures. Around the pasture he encircles a large electro-net fencing system energized by solar power to keep away predators. “The fertility increase can be seen up to two years after the birds have pastured in an area,” Rich says, looking at the rows of produce where stronger, more vibrant plants thrive directly in the spot where the Henn-a-bago once sat. “This is on-the-farm fertility at its best!” And the chickens really like camping. Rich Davis raises New Hampshire Red, Golden Comet, Americana, the Easter Egger and Welsummershen hens. But the Golden Laced Wyandotte (10) may try to reclaim the Henn-a-bago by birthright; in fact, they tend to be very vocal, uttering soft clucks on a regular basis and seem to be telling the story of their origin traced back to an unknown fowl called Winnebago. “Mother and Child Reunion” need not only be a Chinese soup with chicken and eggs, but should rather be about taking your child by the hand and offering them the amazing experience to raise their own food. Nurturing a dog is good training, but raising your own chickens, well, what could be more fun than plucking an egg from the nest? Even if you can’t have your own coop, you can still teach your children about chickens and eggs by visiting a farm like Earth Perks. Your kids will never forget it. SPR I N G 2 0 1 3

MOTHER AND CHILD REUNION (CHICKEN AND CORN EGG DROP SOUP) 1 whole hen (preferable) or 4 chicken quarters cut up 1 carrot, cut up into large chunks 1 stalk celery, cut up into large chunks 1 onion, cut into quarters 1 teaspoon black peppercorns 1 teaspoon kosher salt 2 tablespoons soy sauce 1 tablespoon Hon Mirin (you can substitute with sake) 2 cups fresh corn 2 tablespoons cornstarch dissolved in 1/4 cup water 2 eggs 6 scallions, chopped 3 cups cooked rice
At Glory Ranch family farm, the children helped nurture the chickens. Instead of getting an allowance, their mom gave them a chicken, and they helped sell the eggs at the farmers markets.
Place chicken, carrot, celery, onion, peppercorns and salt in a large pot. Cover with water. Simmer for 3 hours. Remove the chicken and take the meat off the bones, cover and set aside in fridge for later use. Put the bones back in the soup pot and simmer for at least another 2 hours. Strain soup and put the stock back in the clean pot. (If desired, stock can go in the fridge at this point for future use.) Bring stock up to a boil and add soy sauce, mirin or sake, and corn. Add cornstarch mixture and allow to boil for a few minutes to thicken. Turn off the heat and stream the eggs in slowly while stirring the pot with a fork in an S like motion. Once all eggs have been stirred in add the chicken back in and you are ready to serve. Place a spoon full of rice in a bowl. Pour soup with chicken over top. Sprinkle on scallions and then drizzle a drop of sesame oil and Sriracha if desired.

SPRING POACHED EGG AND ASPARAGUS Serves 4.
MERINGUE Meringue was already known in the middle ages and considered part of the classic French cooking, really was invented by a Swiss pastry chef from Meiringen, town from which the pastry takes its name.
100 grams of egg whites (about 4 eggs) 1 pinch of salt A few drops of lemon juice 200 grams of powdered sugar A few drops of real vanilla essence Carefully separate the egg white from the yolks and put the whites, with a pinch of salt, in a container or Kitchen Aid style mixer. Beat the white, while adding 1/2 the amount of sugar needed in the recipe and the few drops of vanilla essence, till they are very firm. Then add the rest of the sugar, one spoonful at the time, and incorporate it with the beaten eggs, delicately mixing with a down to up movement to incorporate as much air as possible. Add the few drops of lemon, then put the fluffy pastry in a pastry bag and squeeze out little mounds of about 2” to 3” on a flat pan covered with oven-parchment paper. Put the meringues in the oven and let them slowly dry for about 2 hours, the meringues should not cook but just dry and retain their white color, if you notice that they start coloring, lower the heat in the oven and, if you notice some humidity build-up in the oven, open it lightly while continuing the drying.
1 pound Bio-Way Farm asparagus, trimmed and peeled 4 large eggs Good Extra-virgin olive oil, for drizzling 1 ounce Parmesan cheese, thinly shaved Fine sea salt & freshly ground pepper Bundle asparagus together using kitchen string. Place in the basket of an asparagus pot filled with 1 inch water. Microwave or cook on the stove, cover, and bring water to a boil. Steam asparagus until slightly firm, 2-4 minutes. Fill a large saucepan with 4 inches of water and bring to a boil. Reduce heat to medium. When water is barely simmering, break 1 egg into a small heatproof bowl. Gently tip bowl, sliding egg carefully into water. Repeat with remaining eggs. Cook until whites are set but yolks are soft, under 150 degrees, about 2-3 minutes. Using a slotted spatula, transfer eggs to paper towels to drain briefly. Divide asparagus among 4 plates, and top each with an egg. Drizzle with oil, place very thinly sliced pieces of Parmigiano-Reggiano cheese on top, if desired, and season with salt and pepper.

shley Wood Wiland gives immeasurable credit to her mother, Celia, for eliminating the need for Ashley’s involvement in the minute details of wedding planning. Because of that insightful approach, Ashley felt more relaxed and loved every moment of the night that she and Kenneth became husband and wife. Ashley wanted a wedding that was “understated, timeless and classic.” Once she and her mother had established the basics, Celia took over with the help of wedding planner Mandy Powell … and mission accomplished. Let’s follow Ashley and Kenneth along with their family and friends through a lovely evening celebration at the bride’s family home in Spartanburg.
Kenneth and Ashley – he from Aiken, she from Spartanburg – first met as freshmen at Duke University, but it was New York City that brought them together as a couple. They re-connected while flying home to visit family and promised to have dinner once they returned to the city. Six weeks later a dinner began the road to a proposal. A little more than a year after they began dating, a sunny Sunday afternoon in May found them on a picnic in Central Park. A stroll through the nature preserve led to a one-knee proposal from Kenneth. SPR I N G 2 0 1 3

LaborofLove Preparing for their dance to a special version of “Somewhere Over the Rainbow,” father and daughter practiced on the striking black and white checkerboard dance floor that was a surprise for Ashley. She credits her father Keith and uncle Chris for overseeing all of the lovely elements on the grounds of the home.
Waking in her room, overlooking the beautifully landscaped yard where in a matter of hours she would be celebrating her marriage, was a dream come true for Ashley, Miss South Carolina in 2004. All of the beautiful floral arrangements, including the bridal and bridesmaids bouquets, were in a soft, natural color palette and designed by Greg Foster of Spartanburg.

Following a honeymoon in Capri, Italy, Ashley returned to her position as director of corporate strategy at Saks Fifth Avenue and Kenneth resumed his work as an architect at Oliver Cope, a New York architectural firm. In their free time the couple enjoys exploring Central Park, learning to cook together, attending music and art events, and traveling “home� to South Carolina to visit their families. atrick Cox, owner of coxphotography.net, likes to tackle new skills, taking on Spanish one year and guitar the next. But some projects stay with him much longer. First there was photography, which began as a creative outlet while he worked as an automation engineer in vision systems and robotics. His technique and vision led to an ever-expanding clientele, and his work has graced the pages of top publications including National Geographic and the Wall Street Journal. His newest passion, designing and creating leather bags and journals, has people clamoring for a piece of his craftsmanship, but he insists it will remain a side project. “These are a labor of love,” says Cox, showcasing a display of large and small bags in the window of his West End studio. He picks up a shapely pouch of deep red leather reminiscent of red velvet cake, and then a slouchy leather bag with intricate stitching. Two women walk by and check out the bags, immediately drawn to their practicality and beauty. Cox smiles and points out the smudges on the window. “That was just cleaned this morning,” he says. Arts&Antiques “The foot traffic is constant, and if there are fingerprints on the window where people have been looking, that’s a good thing.” The artistic adventure began two and a half years ago when Cox was seeking high-quality albums for his photography. He found most albums to have flimsy materials and shoddy workmanship, and he wanted to create something better. Using the best leather along with other natural materials like wool, canvas and unique buckles, he began creating, and found that many people appreciated his designs. About eight months ago, he had some extra leather from his journal projects and decided to make a bag. He didn’t check out YouTube or look for a book about working with leather – he just dove in. “I didn’t want to learn from others,” he says, pointing out that the influence of other people can show up in photography, leather work and other fields, and he likes to keep his ideas pure and original. So he learned by doing, trying different techniques and picking up an arsenal of hard-to-find tools along the way. He spends approximately four to sixty hours per bag, completing each step by hand. In the five months since they have been for sale, he estimates he has sold more than 100 bags, including 32 in one weekend over the holidays. In addition to attracting attention in his store window, the bags are

available on his etsy store (at esty.com search patrickcoxleather). He also takes commissions, and is currently working on custom-designed projects such as an attaché case for an accountant and a duck hunting bag for an outdoorsman. Prices run about $35-$70 for a small pouch or clutch to between $200-$700 for large bags, depending on materials and labor. “I don’t cut corners,” he says. The process begins with Cox finding out about each client – their personality, what they do, what they are looking for and

how the bag will be used. Cox designed the featured piece as a camera bag, with dimensions perfect for holding two Leica cameras – he’s an ambassador for the product – along with a flash. Once he knew the size and shape he wanted, he began sketching (1) and deciding on what type of leather to use. He seeks out suppliers to find the same leather used by top clothing designers, and he appreciates pieces that have what others call imperfections but he considers beautiful. He has approximately 70 or 80 hides and says each can make one or two bags. Next comes cutting and sewing (2), two aspects of the craft that are challenging due to the strength of the leather. He’s had to find special tools (3) to accomplish his design goals, many ordered from Osborne Leather Tools, established in 1826. He uses a slab of Honduran mahogany to work on, and a small rake-shaped tool, which he hits with a mallet, to make straight lines to guide his stitching (4). He always uses linen thread (5), four to eight cord, for its strength, and he prefers lock stitch (6), which creates a long-lasting product. The thread is often run through beeswax to help it penetrate the leather, and he also uses a beeswax product as a protectant.

Other tools score a line on the leather, cut edges, or make the edges smoother. Though he doesn’t expect perfection – “I don’t want it to look mass produced,” he says – he does want a certain amount of symmetry. A favorite tool looks like a small pizza cutter (7), and is sharp enough to make quick work of cutting straight lines. Part of the process is trial and error, such as when he recently created a large duffel bag. While he loved the style and the leather, when he put the bag down, it didn’t hold its shape, so he’s going back to the drawing board to find a solution. indsay Oehmen, a 32-year-old fashionable, petite mom of two girls, isn’t exactly the person that comes to mind when you think of someone who deals in worn, battered, weathered, old furniture. But step inside her recently opened shop, Vintage Made Modern, and you’ll find equal parts studio, workshop and boutique – it’s where all the magic happens. Located on East Washington Street in Greenville, Lindsay will show you exactly how to turn old furnishings into glamorous, gorgeous new pieces that exude elegance and sophisticated chic using a simple coat of paint. A local Carolinian, she has lived in Chicago, Boston, Atlanta and New York. After attending famed FIT (The Fashion Institute of Technology) in New York City, she dabbled in fashion merchandising and buying, so she comes naturally to all things stylish. Although her design influences are some of the nation’s highest profile decorators, such as Charlotte Moss, John Saladino and Scott Sanders, she aims to give her clients a high-end look at an extremely affordable price. In fact, she says, “teaching clients the techniques to renew and renovate their old pieces is my ultimate passion. I hope my store will serve as a source of inspiration to help clients visualize as well as actually create transformations. Vintage Made Modern is the exclusive Upstate distributor for the Annie Sloan line of Chalk Paint, which is imported from England. The paint has developed somewhat of a cult following
due to its ease of use, pleasing palette of colors, quick dry capabilities, and low VOC. This wonder product requires no priming or preparing, and the paint adheres to wood, iron, MDF (particle board) and even leather. It works as an interior as well as exterior paint – perfect for patio sets. Thirty-two lovely colors are available and you can also custom mix the paint with Oehmen as your color consultant -- just
bring in a pillow or swatch that you’d like to match. An added bonus: there is no black paint in the Annie Sloan line, so the colors never get muddy. “Our clients learn to ‘upcycle’ everything from chandeliers, kitchen cabinets and lamps to vanities, armoires, chairs and desks. When you add in dining room sets, dressers, mirrors, picture frames, side tables and even candlesticks, there’s nothing you can’t improve with a coat of Annie’s chalk paint,” Oehmen says with a laugh.
