Greenville's female chefs share their stories story by ARIEL TURNER| photos by WILL CROOKS

A woman’s place is in the kitchen.

It’s a phrase often used sarcastically in modern conversation as a throwback to an era when women either couldn’t or weren’t encouraged to work outside their homes.

Rejecting the original intent, women in the restaurant industry have now adopted that phrase as an unofficial battle cry – a woman should have a prominent place in commercial kitchens.

In fact, of the seven Greenville-based female head chefs interviewed for this story, each one mentioned that phrase, challenging the inference and asking why, then, if women are meant for the kitchen, are there comparatively so few in executive roles?

“There are differences between a man and a woman,” says chef Teryi Youngblood Musolf, culinary director for The Cook’s Station. “But as far as cooking goes, there is no difference in the ability to make something taste good.”

Numbers don’t lie

Of the hundreds of restaurants in the Greenville area, our research indicates there are fewer than 10 female head chefs or chef-owners in the higher-end establishments. This number does not include the soul food cooks and food truck owners, of which there are many more.

Using this framework to evaluate Charleston, one of the most celebrated culinary towns of the South and the United States, The Post and Courier reports there are even fewer – three women currently hold the executive title.

“It’s easier up here,” says Heidi Trull, chef and coowner of Grits and Groceries that is open only for pop-up events for the foreseeable future.

A 30-year industry veteran, Trull refers to the cutthroat nature of the Charleston market and says Greenville’s isn’t as competitive – yet – though it’s certainly no cakewalk.

Census Bureau statistics show that men in the role of “cook or head chef” occupy 78.1% of positions. The gender gap is even wider if the definition is narrowed to true head chefs or even further, chefowners.

“A Fine Line: A Woman’s Place is in the Kitchen,” a 2018 multi-award-winning documentary that encapsulates the challenges facing women who desire careers as high-level chefs or restaurant owners, purports only 7% of head chefs and restaurant owners are women, while an estimated 51% of Culinary Institute of America students are female.

No matter the geographic location, being a woman in a commercial kitchen environment is less common and, by most accounts, often more difficult for many reasons – the well-publicized and pervasive sexual harassment, the frequent disregard of her abilities and authority, the lower pay than male counterparts, and the lack of maternity leave, child care, or benefits.

‘Twice as hard’

“Just be sure that in your summation to tell her the only difference between a male chef and a female chef is that female chefs have to overcome adversity and work twice as hard to earn that title,” said Steven Musolf (chef de cuisine of The Anchorage) in a text to his wife, Teryi, before our interview.

Teryi Musolf fought her way as a self-taught cook through several of Greenville’s kitchens, to ultimately open Passerelle Bistro as executive chef before moving into her current role with The Cook’s Station.

She recalls one day circa 1999 at the former Bistro Europa on North Main Street, walking into the kitchen where she’d worked only a short while and seeing a 70-pound, whole fish on the counter. With the help of the chef next door at Blue Ridge Brewing Co., she figured out how to break it down.

Originally from Greenville, Feeny spent most of her adult life in the dynamic San Diego restaurant and catering scene — she once catered a dinner party for Pearl Jam, and Eddie Vedder asked for her margarita recipe. Feeny eventually moved back home to open Kitchen Sync with her husband and brother.

“I’m actually trying to have a kinder, more gentler kitchen. [Kitchen staff] is so used to people going, ‘I told you to do it that way . . . or get out.’

When she’s not harsh, her authority is often misinterpreted, she says.

“I think that maybe they try to push me a little further or push their agenda a little further. Maybe I seem a little wishy washy.”

Rogers came to Greenville by way of Nashville and Alabama in July 2017 as sous chef at Soby’s New South Cuisine before taking the exec role at Passerelle.

“I think I’ve been told everything in the book. I think, even, like, last week, I had someone say, ‘I’ve never had a Boss Lady before.’ . . . And if you’re a half-way nice young lady they’re just going to, like, push you to the side . . . Even now, when I say I’m the chef here, people are kind of, like, confused a little bit at first, but you have to just overcome it and work harder than the person beside you.”

JENIFER ROGERS “And after that, it was like, I'm doing any damn thing,” she says.

And she did. Moving to The Cazbah and then to Table 301 as pastry assistant because the daytime hours were better for her when her daughter was born, she encountered more than her fair share of resistance. If she properly dressed a beef tenderloin, she was asked, “Who did that?” or “Who helped you?”

Pushing through adversity is the only way Passerelle Bistro executive chef Jenifer Rogers knows how to operate. She and her fiance, general manager Mike Minelli, are on track to take ownership of the bistro from restaurant group Table 301. Their infant son, Michael, joins the family in the restaurant on weekends when they don’t have child care. And while this arrangement is positive for all involved, it isn’t always that way for women juggling motherhood in a male-dominated industry.

“It's a struggle anywhere, to be quite honest, just because it's been so male-driven,” Rogers says. “And the sad part about that is I feel like ladies have to be, like, so aggressive about it.”

‘I’m a bitch’

Having graduated from the CIA in 1987 and worked in high-volume hotel and catering positions before opening Two Chefs Cafe and Market in 1996 on Main Street, chef Judy Balsizer is wellversed in what it takes to be a successful woman in her chosen industry.

“If you don't want to stay in here and do the work with me, then you have to move elsewhere,” she says about past co-workers. “I'm not gonna play those games.”

Adopting more aggressive male-like tendencies is how many women have succeeded in restaurant kitchens. That also has its challenges.

“If a man says it, he’s assertive. If a woman says it, she’s a bitch,” is another phrase each of our sources repeated.

Kitchen Sync chef and co-owner Karin Feeny says her confidence has grown since her years in San Diego’s high-volume restaurant and catering scene in the mid-1990s, but she’s still concerned about perception.

“I try to pick my battles so it doesn't seem like I'm a bitch all the time,” Feeny says. “Whereas I think, you know, a male, he just comes across as being strong, right?”

Balsizer says her husband, Bill, also a chef, can give a direction in the kitchen, and the staff immediately jumps to action. If she says the same thing, she has to give all the background reasons. If, in that circumstance, she were to scream and carry on like a male chef might, she’d be labeled.

Trull says that to succeed in this business, a strong, dominant temperament is key, and after accepting her own leadership style, she makes no apology.

“I’m a bitch. It’s pretty much my personality,” she says.

Balancing act

From female chefs’ perspectives, there are distinct advantages to the balance they bring to the typically male-

dominated industry.

“I found that men and women both have attributes that are very important to a kitchen,” says executive chef Nicci Hughes of Oak & Honey.

Where traditional male-dominated kitchens of 10-20 years ago often included panic-inducing, Gordon Ramsaystyle yelling and instruction, women are more prone to ditch that in favor of encouragement and hands-on teaching, Musolf says.

“Because we nurture, not torture,” Musolf says.

The ability to care for her staff in a more diverse, nuanced way is one of the major assets a woman brings to the restaurant kitchen to help combat the ofttoxic culture, Feeny says.

“We all have to be able to find a reset button,” Hughes says. “There have been bad things done to both sides, you know, and we have to be able to be willing to go in and see a person as a person, not by their gender.”

Musolf, an Upstate lifer, cut her chef’s teeth in the former Bistro Europa, eventually moving to Soby’s on the Side as pastry assistant and then Passerelle Bistro as executive chef before taking her current role. She even at one point staged for two days at Michelin three-star restaurant Alinea in Chicago.

“There were a couple guys that I had on my team that just would not fit, did not want to take direction from a female chef. We had lots of issues with that. There was one that was absolutely cultural, because he told me, ‘In my country, you would be making my coffee.’ So I said, ‘In this country, you can make mine.’”

Harris completed four years of culinary school in her hometown of Mexico City before moving to the United States. She’s worked in various positions in some of Greenville’s most celebrated kitchens — the former High Cotton, Bacon Bros. Public House, and Restaurant 17. She says, despite her experience, her managerial authority and input are often overlooked.

“I think sometimes, even the problem is not that I’m a woman, but sometimes being here in America is also that I’m a Mexican woman, you know, and that adds to the problem. But then I think, ‘Well, there’s nothing I can do about that.’”

COLD CASE ARREST

Greenville police arrest suspect in 1988 murder of Alice Haynsworth Ryan On Oct. 8, 1988, Alice Haynsworth Ryan’s daughter found her 80-year-old mother splayed across her kitchen floor and covered in blood. She had been stabbed multiple times at her home on Woodland Way in Greenville and left to die.

Now, Greenville law enforcement think they have the culprit.

The Greenville Police Department announced it had a suspect in custody for the 31-year-old cold case at a press conference May 6 — 51-year-old Brian Keith Munns.

The announcement comes after renewed success with the department’s cold case investigative unit — in October, the department announced it had solved the 28-year-old murder of Jenny Zitricki, and last month, it announced the arrest of a suspect in the death of infant Julie Valentine from 1990.

Unlike the last two cold cases the department worked on, the suspect in the

murder of Alice Haynsworth Ryan was not arrested using a genealogy service. Instead, the department asked the State Law Enforcement Division (SLED) to re-analyze evidence from the case two years ago, and in doing so, found new DNA evidence to submit to the Combined DNA Index System (CODIS) — the system the Federal Bureau of Investigations uses to track individuals with prior arrests.

“This produced our first big break in the case,” Greenville Police Chief Ken Miller said. “In November of 2017, GPD investigators were notified of a CODIS hit to a matching DNA profile. The DNA profile belonged to a 50-year-old man living in Americus, Georgia, who was also a registered sex offender.”

Miller said the department arrested and charged Munns in February but kept the arrest quiet to allow time to finish the investigation. He’ll remain in the Greenville

County Detention Center without bond until his trial. Walt Wilkins, 13th Circuit solicitor, said Munns would be prosecuted

according to the 1988 statutes, and the solicitor’s office would not be seeking the death penalty.

Munns is being charged with possession of a weapon during the commission of a violent crime, first-degree burglary, armed robbery, and murder.

ALICE HAYNSWORTH RYAN Miller said this case took more than two years to investigate, which is longer than it took the department to investigate and charge a suspect in the Julie Valentine case, and that it was only possible with advances in DNA technology.

“It validates that we should never give up on a case — we should never give up hope, we should never give up our efforts to try and bring justice to those that were harmed and closure for their families,” Miller said.

Alice Haynsworth Ryan was a widow, a mother of three and a socialite — she was the great-aunt of Greenville Mayor Knox White and the daughter of mill president H.J. Haynsworth.

sworth Ryan left her home for chemotherapy treatment — she had been diagnosed with lung cancer several months prior. Her daughter had left her mother’s home for about an hour before returning to find her mother’s car gone and the back door ajar.

Alice Haynsworth Ryan had been stabbed multiple times and was already dead when her daughter found her. Along with her car, several items were stolen from her home.

Now retired Cpt. Don Belue was one of the officers on the scene three decades ago.

Belue said every lead they got at the time was a dead end.

“It was one of those things that you just don’t like to see, and so we were really intent on trying to find the perpetrator of the crime right away,” Belue said. “We thought we were on the track for several days, but every lead we got didn’t pan out at the time.

That continued on for months after that, until it went cold.”

Joe Ryan, Alice’s son, attended the May 6 press conference. After his mother’s death, Joe Ryan became a reserve police officer.

“Sometimes something would pop up — hearsay (about the case),” Joe Ryan said.

“I would say I never gave up. I knew somebody had to [have done] it.”

A GREENVILLE TREASURE

Meyer Center for Special Children—A Greenville treasure for 65 years looks to the future

Working at Shriner’s Hospital in the 1950s, Dr. Leslie Meyer saw children he knew should be in school, but their disabilities led others to believe they were uneducable. He looked beyond the obstacles to create a small school in 1954 with an appropriate environment for them to learn. Today, the Meyer Center for Special Children makes use of advances in therapy and technologies unheard of at that time, while remaining a place a where children are celebrated for what they can do, rather than defined by what they can’t.

In 2018, the Meyer Center served 96 students aged six months to eight years, with disabilities related to Down syndrome, spina bifida, cerebral palsy, premature birth, accidents or illness. The school provides a uniquely integrated approach to early childhood education and intensive therapy, offering physical, occupational, speech and music therapy. Students are grouped by their developmental age and specific needs across nine classrooms, with each child working toward individualized educational goals. Five different curriculums are utilized to meet the varying needs of each classroom.

According to Meta Bowers, who became executive director in January, intensive therapy and education interventions provided early and all in one place make

the greatest impact on narrowing the gap between Meyer Center students and their typical peers.

Our teachers and speech therapists use a variety of therapeutic techniques and tools—ranging from traditional communication boards to advanced retinal scanners for those students who cannot isolate their fingers to point—to facilitate learning and communication,” Bowers said.

Shannon Spurrier, director of develop-

ment, relayed the story of a nonverbal student who, knowing Spurrier’s tendency to get excited when she sees her young friends, used her device to signal “Uh-oh!” repeatedly when she saw Spurrier coming towards her. Her expression made it clear she was teasing, using the technology to show her unique personality.

“One reason our program is so successful is the way we work as a team, with everything under one roof,” Spurrier said.

“If a child learns something new, other staff members will know it, and at the end of the day the parent will know it, so it can be reinforced at home.”

Dr. Meyer, who volunteered as the school’s medical director for more than 20 years, also served from 1974–1976 as board chair of the Community Foundation, which has supported the Meyer Center through the years, including with two Margaret Linder Southern Endowment Fund grants totaling $87,390, according to Bob Morris, president.

“The Meyer Center’s mission aligns perfectly with what Mrs. Southern wanted to accomplish,” Morris said. “Providing the best education and therapy for children with developmental challenges is so important that some families move to Greenville so their children can attend The Meyer Center. But tuition, therapy,

and medical expenses can be a financial catastrophe, so the funds were used to provide financial assistance for families.”

The Meyer Center has also received Capacity Building grants of $9,700 for a strategic plan and $6,000 towards a new outreach video reflecting their renovated facility and current students. To highlight the long-term impact of early intervention on student’s lives, the video features a former student who recently graduated from high school and is now working at South State Bank in Greenville.

The Meyer Center is a non-profit, public charter school serving children from all socioeconomic groups. Although no child is turned away due to an inability to pay, 68 remain on the waiting list, Bowers said.

“Our vision is to enrich the lives of children with disabilities so they reach their maximum potential,” Bowers said. “We need the community’s continued support so that the Meyer Center can also meet its potential.”

Whether it’s an artificial flower at Hobby Lobby or a picture in a fashion magazine, Amanda Illian-Bankhead creates mixed-media art by building upon that which first inspired her.

Growing up with a love for fashion and working as a model for some time, the Greenville artist now blends elements of fashion and fine art to portray her unique style.

“I started clipping out the models in magazines and the dresses, and I would get inspired by whatever they were wearing,” she says, “or not even the dresses they were wearing but maybe just the photography setup with the colors and the textures.”

Most of Illian-Bankhead’s art starts small — a little magazine clipping on a huge canvas. Then, layer by layer, she expands around the clipping, adding variety and complexity.

“I really like mixing colors and materials, whether it be putting fabric in the paint or beads, crystals, rocks, or mirrors,” she says. “I just like mixing a lot.”

Illian-Bankhead loves the freedom she’s allowed within art. “I like the depth that you can create with abstract work — whether it’s materials that are raised up off the canvas or just so much going on that it creates little pockets of depth.”

Noting that some people think abstract art is random, Illian-Bankhead says a lot

more detail goes into each piece than first meets the eye.

“I’ll start with really small brush strokes or really small design, and then I build and my brush strokes get bigger,” she says. “So that when you look at it, you can literally just stare at it for a good five minutes and see so many different things in it.”

Through the depth of her artwork, Illian-Bankhead wants viewers to enjoy the simple action of looking at the art.

“I just like the idea that when you create something, it’s like there was literally nothing there and now you’re creating something and putting something into the world,” she says. “Even though it’s just a painting, it did not exist. And now it does exist.”

In addition to mixed-media artwork, she also does some fashion design. Illian-Bankhead most recently showed off her five-piece collection at Greenville Fashion Week.

When she’s not creating art, Illian-Bankhead can be found working her full-time job as a visual merchandiser, spending time with her husband and 2-year-old son, and earning her master’s in business from Clemson University.

There’s a heartbreaking, poetic essay that accompanies “And You Loom Over Me Like a Mountain,” the new album by Upstate singer, songwriter, and multi-instrumentalist J.S. Terry. It begins, “I awoke to find that you were gone,” but even if he hadn’t written a word of it, you can still feel the pain of loss all over the album.

The music he’s made here with friends like Wesley Heaton (from the Clemson band Daddy’s Beemer) and Jackson Wise (of Apricot Blush) is at once achingly sad and artistically breathtaking. Terry’s mournful voice radiates a sense of wounded confession, which makes the beauty of his music that much more visceral.

It’s a sort of demented style of art-folk, with angular vocal harmonies, with sudden shifts in tone, with bursts of musical madness that leap out of placid acoustic meditation, with nerve-shattering electric guitar noise and orchestral grandeur. The music here doesn’t really resemble much else, and that’s exactly how Terry planned it.

“In my head, I’d never really heard anything like the record I wanted to make,” Terry says.

Luckily Terry had a collaborator in Heaton that he could express the inexpressible to, even if it sometimes sounded odd.

“I had to explain how I wanted the record to be to Wesley, and there were times where

I probably sounded like an insane person,” Terry says.

Instead, what Terry created was a sort of trip through his own personal looking glass, a swirling cloudburst of kaleidoscopic music that’s just as expressive as his lyrics, almost all of which deal with loss.

“I was losing people, either through death or them just not being in my life anymore,” Terry says. “I was losing people who were huge parts of my life. I lost a great friend to a car accident, my grandfather died of a heart attack, I just lost so many people in my life.

So I really wanted the first half of the album to have a lot of feelings of isolation and loneliness.”

It’s only after an ethereal, atmospheric interlude at the halfway point that the sun begins to break through, and the music takes on a brighter feel. There’s a sweeping, epic soundscape (“Weak Eyes”), a ragged acoustic singalong (“The Night Before — Presli’s Lullaby”), and an emotional anthem (“We Run Loose Amongst the Trees, the Sun Rises”) that ends the album on a note of hope.

While it’s a moving experience, the album is also one that is so layered and intricately arranged that it’s not easy to imagine Terry and his friends re-creating it live. But ultimately, he’s fine with that.

“I view these songs as works of art in some ways,” he says. “I’m not trying to come off as pretentious, but an artist isn’t supposed to paint the same painting twice.”

Eleanor Beardsley, a 1986 Furman University graduate and international correspondent for National Public Radio, will be the principal speaker at the Furman University’s 193rd commencement. Furman’s commencement exercises are open to the public. Beardsley began reporting from France for NPR in June 2004 as a freelance journalist, following all aspects of French society, politics, economics, culture, and gastronomy. She has since become an integral part of the NPR Europe reporting team and is based in Paris. Beardsley covered the recent “yellow vest” protests in France, as well as the two waves of terrorist attacks in Paris and Brussels. She has also reported on arriving refugees in Hungary, Austria, Germany, Sweden, and France and traveled to Athens to follow the Greek debt crisis.
