COCONUT & LIME CAKE

Ingredients

Cake:

175g (6oz) unsalted butter, softened

175g (6oz) self-raising flour

3 large eggs, beaten

300g (10oz condensed milk

55g (2oz) dessicated coconut

finely grated zest and juice of one lime

1tsp baking powder

pinch of salt

Icing:

90g (3oz) condensed milk

grated zest and juice of half a lime

Method

1. Preheat the oven to 170°C, or 150°C for fan ovens, Gas Mark 3.

2. Grease and line a 2lb loaf tin with baking parchment.

3. Place all the cake ingredients together in a large mixing bowl or food processor, beat until pale and smooth. Pour the mixture into the loaf tin and cover the top with a strip of baking parchment to ensure the cake does not get too brown whilst cooking.

4. Bake for 55-65 minutes until a skewer comes out clean when inserted into the middle of the cake.

5. Whilst the cake is cooling, make your icing. Combine the lime juice and condensed milk and mix thoroughly. When the cake is fully cooled, pipe the glaze on top, you will need to pipe as it will be too thick to drizzle!

6. Finally sprinkle the lime zest on top to garnish!
