The city has an extensive infrastructure of hiking trails that are well maintained and safe to explore. Our feature story on page 10 recommends some of Hong Kong’s more popular trails. If time permits, you should try to go on one of these wonderfully scenic trails. How about enjoying our great outdoors by walking about a beautiful golf course and watching some of the best golfers compete in the 2017 UBS Hong Kong Open, one of the oldest professional golf tournaments in Asia? This year, Spanish superstar and Masters winner Sergio Garcia will lead a strong field. We guarantee it will not be a good walk spoiled! 2017 UBS Hong Kong Open (Golf Tournament)

Masters winner Sergio Garcia will be headlining a strong field at the 2017 UBS Hong Kong Open. First held in 1959, the open is Hong Kong's oldest professional sporting event and is considered one of the crown jewels of the Asian Tour. Also part of the European Tour, the UBS Hong Kong Open attracts a strong field every year, and is known for producing taut competition and dramatic finishes, and has a rich history of prominent past champions including winners of major championships.

olf fans throughout Asia are in for a treat as the prestigious UBS Hong Kong Open returns for its 2017 edition, bigger and better than ever. With another marquee field featuring top players from across the world, organisers expect large crowds for this year's championship, and hope to beat last year's record of over 46,000 spectators. One of the oldest tournaments in Asia, the UBS Hong Kong Open, which is tri-sanctioned by the European Tour, the Asian Tour and the Hong Kong Golf Association, will be held again at the Hong Kong Golf Club, Fanling from November 23-26. This year, the event takes on added significance as it will kick - off the 2018 European Tour Race to Dubai. Master's Champion Sergio Garcia, fresh from his recent win on home soil in Spain, will headline a sterling field of pros from Europe and Asia, along with 2015 winner Justin Rose, Rafa Cabrero Bello, Tommy Fleetwood, and 2016 Champion Sam Brazel. And, if the past is any indication, another drama filled competition should be in the works. For example, who could forget the pulsating action during the 2011 Open when a very young Rory McIlroy holed out a bunker shot at the 18th hole to win the tournament? SUPER SERVANTS 超級僕人

Chinese servants have generally been replaced with domestic helpers from neighbouring Asian countries. Many look back to the time when families relied on ‘Boys’ and ‘Amahs’ for their comfortable existence.

efore the War a well-to-do European family in Hong Kong would have an army of servants. They were headed by a No. 1 Boy - they are invariably called “boys”, whether their age was sixteen or sixty. He acted as the manager of the household and would help recruit other servants who acted in various roles. He was the equivalent of an English Butler. Major Henry Knollys, in his book English Life in China (Published 1885) noted that they were: “very quick in learning their business, sharp all round, clean, attentive, and for the most part singularly honest, so far that they will suffer no one but themselves to pilfer their masters, and that their own depredations are limited to certain recognised ‘squeezing’ or extortion in commission. Each one makes the general and particular character of his master his special study to a very amusing extent. The first day I engaged my ‘boy’, I had carelessly tossed my hat into one corner of the room, gloves on the bed, a stump of pencil at an acute angle with one corner of the mantelpiece, and a pipe at the other corner. For many successive days I found hat, gloves, stump of pencil and pipe carefully disposed in exactly the same spot and at precisely the same angle.”

Margaret Ough was born 3rd February 1907 at the Peak Hospital in Hong Kong. She lived with her parents in Hong Kong at Craigmin East on the Peak until about 1916. She noted: “there were nine servants; the cook and scullion, coolie No.1 cum gardener, coolie No.2, two sedan chair coolies complete with uniforms, Chinese style, of white with royal blue borders on jacket and trousers and finished with a huge letter 'D' also of royal blue on the back of the jacket. In addition there was head boy No's 1 & 2. An amah, employed for sewing and helping to look after the children, used to come in daily.” For the head of company like that of George Benjamin Dodwell, founder of the trading company which still bears his name the numbers increased. He employed two European governesses and a staff of twenty four Chinese servants, among them ten sedan chair bearers to carry them to the Peak tram, half a mile away from his home on Mount Kellett Road. The servants generally wore black baggy trousers and a white top. The amahs were sometimes referred to as black and whites. One of the hardest jobs was that of the sedan chair coolies. Often there were only two and even a normal size European could be quite heavy. When you had to deal with an overweight gentleman more coolies were needed. Mr Horace Percy Smith who established the company of Accountants and Auditors Percy Smith, Seth & Fleming lived on Mount Kellett Road. He was a large man and it was said that at least six coolies were required to man his sedan chair. The Governor of course had to impress and he had eight chair coolies to man his official chair. They wore scarlet coats, white knickerbockers and straw hats painted scarlet. For those who did not want to have their own chair there were public chairs and the coolies were dressed in blue with blue hats. Today the servants are referred to as helpers and the term amah has fallen out of use. Never mind what they are called many families rely on them to cook, wash, clean and look after the children. Perhaps there are more One-leg-kicks than used to be, but there are many thousand helpers employed in Hong Kong and on a Sunday they teem the streets of Central. ■

sometimes there was only a single Amah and she would be referred to as a yat keok tek or one-leg-kick. Many of the Amahs started off as one and then moved on to specialise. Most came from Guang Dong Province. They were either widows or women who did not want to be married off. They formed a loose mutual aid association and some ended up living together after they retired. Very often some, particularly the baby Amah, became a much loved member of a family and was looked after even when too old to work. The baby Amahs often had a freer life style than if they had married. They would get out and about taking their charges for walks or to school etc. Often they would come together in a park for a chat while the youngsters played together. Because they had come up through a well established system they became very skilful. When, in the 1970s, we had a Chinese Amah she knew exactly what to do for a dinner party and would know someone to come in and help. Everything went off perfectly. She came from a family of servants and her brother was the No. 1 boy for the Chief Secretary.

Arguably Hong Kong’s most famous trail as lauded by various international media outlets, the Dragon’s Back richly deserves its accolades. This hike is essentially Section 8 of the Hong Kong Trail, one of four long hiking trail systems in Hong Kong, which goes from To Tei Wan near Shek O Road to Tai Long Wan (Big Wave Bay). After a quick and relatively steep ascent you’ll reach the ridge of Dragon’s Back from which you can enjoy truly spectacular scenery of the mountains across, the Shek O beach and picturesque golf course below, and the South China Sea beyond. Look for hang gliders hovering above the ridge trying to catch the updraft. Follow the trail which eventually meanders down to Tai Long Wan, a haven for surfers. 龍脊受到許多國際媒體的大力推薦，可說是香港最著名的遠足徑，而它也確實不負眾望。港島徑是是香港四條長途遠足徑之一，龍脊實際上是港島徑第8 段，從石澳道附近的土地灣至大浪灣。往上走一段短而較陡峭的山路後即可到達山脊，您可在此看到綿延的青山、石澳泳灘、下方風景如畫的高爾夫球場和南中國海。懸掛式滑翔機在山脊上方徘徊。沿着遠足徑前進，最終到達衝浪者的聖地──大浪灣。

The type of hike you would never expect in Hong Kong – pristine environment, unspoiled beaches, hamlets and beautiful scenery. This hike follows most of Section 1 and 2 of the MacLehose Trail – which at 100 kilometres is Hong Kong’s longest and most famous trail. Start from High Island Reservoir’s East Dam. Enjoy the great vista of the reservoir before following the trail up the hill and then descending to Long Ke beach, a pristine, white-sand beach. A long, steady ascent up to Sai Wan Shan follows, leading eventually down to the beautiful beaches of Ham Tin and Big Wave Bay – unquestionably Hong Kong’s most beautiful. If you want a good workout that takes in some spectacular scenery at the same time, this would be the perfect hike. Start from Parkview, a luxury residential complex above Wong Nai Chung Gap Road on Hong Kong Island. A strenuous hike up the top of Violet Hill gives you a good view of both the city and south side of the island. A long descent to the bottom of the hill offers a gorgeous view of Repulse Bay. At the bottom, you’ll start the infamous “Thousand Steps” – that seemingly endless flight leading to one peak and then the next, after which you are rewarded with a panoramic view of Stanley and nearby islands. The trail ends at Stanley Gap Road, from where you can take a bus to Stanley Market or the other way back to the city. Hong Kong Museum of Coastal Defence 香港海防博物館 For a view of the harbour from a different vantage point, the Museum of Coastal Defence in Shau Kei Wan on the eastern edge of Hong Kong is a pleasant hidden gem. Perched on top of a rocky outcrop overlooking the narrow Lei Yu Mun entrance to the harbour, it gives a fabulous view of the harbour and the incoming sea channel beyond. The museum tells the military history Hong Kong in the colonial era. 175 Tung Hei Road, Shau Kei Wan. Shek O Lovers Bridge 石澳情人橋 The picturesque beach village of Shek O on Hong Kong Island is another popular destination with photo-op spots abound. The Lovers Bridge, a funky, blue pedestrian bridge connecting Shek O with a small headland is now another social media favourite. The buildings on the way to the bridge are colourful enough and the beach is good for sunbathing. Take Bus number 9 from Shau Kei Wan Bus Terminal to Shek O. ong Kong has lately witnessed a proliferation of South American cuisines, on the back of a global rise in interest. Peruvian food, and the Nikkei style cuisine in particular, has been garnering accolades with its distinctive dishes and heritage. So, we decided to visit Tokyolima, a friendly and bustling restaurant in Central that serves Nikkei Peruvian cuisine, as our next target. Tucked away in a commercial building on Lyndhurst Terrace, Tokyolima is easy to miss as you pass by. But once inside it is surprisingly busy – there is a nice bar for waiting guests to enjoy a drink or two. The layout of the restaurant is open and inviting, its décor is warm and cosy. The staff are super helpful, and knowledgeable. Nikkei Peruvian is not fusion cuisine, as we were emphatically told, but rather a style of cooking derived from Peruvians of Japanese descent who introduced Japanese cooking elements into Peruvian food and dishes. Initially small changes evolved over time to become a distinct cuisine that is increasingly popular outside the country. We were eager to give it a try. Not surprisingly, seafood plays a prominent part in a Nikkei menu, and several of the dishes on the menu caught our eye. We started with sharing appetiser plates, sushi rolls, and the signature Ceviche Clasico ($150) which is seabass lightly marinated in tiger’s milk, onions, coriander and choclo. The appetisers include La Causa ($140), a potato starter with traditional terrine of beetroot causa, prawn tartar, rocoto mayo, prawn tempura and charred avocado; the tasty “Ki-mo-chi” Fried Chicken ($110) which is

chicken prepared Japanese karaage-style; and T-3 ($120), a triple-textured salad with pumpkin, mixed leaf, poached quail egg, tomato, grilled fennel, crispy glass noodles, almond and a sweet Nikkei dressing. Another Nikkei favourite is the Hamachi and Maguro ($130) tuna with shoyu citrus, the freshly sour flavour adding enigmatically to the flavour of the fish. Then sushi rolls came next, again with their own Nikkei twist. We tried two: The Spicy Hamachi ($120 for 6 pieces) with yellowtail tuna, kiuri, shiso, chives and spicy mint sauce, and Magurao Nuevo ($140) with tuna, avocado, sesame, rocoto mayo and tobiko. Compared to regular Japanese sushi rolls, the Nikkei style preparation adds local Peruvian ingredients as seasoning or condiments to enhance the flavour. Our next dish is grilled Octopus ($150) with black olive tapenade, carrot puree and capers – another Nikkei favourite that we also enjoyed. Our main course is Grilled Beef ($320), which is USDA rib eye steak, wasabi butter and roasted padron peppers – the meat is tender and flavourful and was consumed with gusto even after all we had already enjoyed. A Peruvian rice dish followed, capped by some delightful desserts. We would be remiss not to mention the assortment of interesting Peruvian drinks and cocktails that are on offer including Pisco sour, the Peruvian national drink. People were still waiting to be seated even as we were finishing our dinner, certainly a testimony to Tokyolima’s popularity. Make your reservation early and try out one of the city’s more exciting new dining concepts. ■

propos Argentinian cuisine, the first thing that comes to mind is, of course, its juicy, tender steaks. While one can argue endlessly about which country has the best quality beef and therefore steaks, Argentina is certainly up there as one of the top choices. And, as Argentinian wines have gained popularity in Hong Kong these last few years, we are seeing more Argentinian restaurants opened to cater to the demand. One of the more established and successful Argentinian restaurants is Tango Argentinian Steakhouse on Wyndham Street just above Lan Kwai Fong in Central. The restaurant is decorated in a cosy, rustic style with a brick fireplace and brick walls, dark interiors, wooden tables and warm lighting. Tango has a large selection of wines from different regions including, of course, a quality selection of Argentinian wines. We were warmly greeted by the friendly sommelier Andres Torres who, in his own inimitable style, extolled the virtues of Argentinian food and wines as prepared by Tango. We were more than inclined to agree. Tango primarily prepares its food Italian style as Italian makes up the largest ethnic group in Argentina. We began our dinner with several shared appetisers: Chorizo Sausages ($118) – Argentinian Beef and Pork Sausage, Green Onions and Chimichurri ($118); Old Style Provoleta – Classic Melted Provolone Cheese ($148); 1 Carne and 1 Polio Empanada Beef and Chicken – Traditional Argentinian savoury pastry ($68 each); For meatloving foodies like us these dishes are just the kind of hearty, flavourful food we crave. The Shrimp and Scallop Ceviche, Jalapeño Dressing and

Toasted Sesame Seeds, ($158) follows, which helps balance our palate. The appetisers were served with a bottle of 2016 Dominio del Plata 'Crios' Torrontés 2016 ($368), a refreshing, lively white wine from Cafayate in north-west Argentina and one of the highest altitude wine growing regions in the world. We were now ready for the steaks that we came to savour: Bife de Chorizo-Sirloin Steak 16 oz. ($378) and Ojo de Bife – Ribeye 14 oz. ($378), to share and that’s a lot of prime Argentinian beef! Both cuts are juicy, tender and flavourful. And the generous portions are enough to please die-hard steak lovers like ourselves. We chose three side orders: Garlic Fries, Parsley and Garlic Oil ($68), Creamed Spinach and Leeks, Cream and Parmesan Cheese ($68), and Humita Saltena, Spiced Creamed Corn ($68) – just the right mix to provide a nice balance to the meats. An excellent full-bodied red wine, the 2015 Bodega Colomé 'Lote Especial El Arenal' Malbec ($700 per bottle) from the same Cafayate, Calchaqui Valley appellation was served. The Malbec fully deserves its reputation as Argentina’s iconic varietal grape and drinks perfectly with the steaks. We conclude this sumptuous meal with C h u r ro s R e l l e n o s ( $ 7 8 ) , a t a s t y S p a n i s h breadsticks, Mousse de Chocolate ($78) and Frutas en Almibar, Seasonal Fruits cooked in Vanilla and Cinnamon syrup w/ lemon sorbet $78, and we were totally sated. If you are in the mood for a superb steak, good food and excellent wine in a relaxed and casual setting, Tango is just the ticket. ■

Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Initial stored value cost per card varies: Child (HK$20), Adult (HK$100), and Senior (HK$20). Simply place the card on the Octopus pad and the fare is automatically deducted. Airport Express Travel Pass cards are $250 for a single Airport Express journey plus three days' unlimited travel on the MTR, or pay $350 for two Airport Express trips plus three days' MTR travel. Nicholas Smith, General Manager of Kerry Hotel Hong Kong, talks to us about his experience in the hotel industry and the brand-new Kerry Hotel 香港嘉里酒店總經理史密斯與我們分享他在酒店業的經歷以及介紹最新的香港嘉里酒店。 I was born in Wales and went to grammar schools and university in England. I have always been a bit of a nomad, and my travels took me to work at Disney in America as part of my degree in hotel management. I was connected to the hospitality industry at an early age when I would wash dishes at a local pub to earn pocket money, and I stayed in it ever since. I started working for the Savoy Group in London, and moved on to other 5-star hotel groups in various locations including London, Boston and Turkey. I wanted to come to Asia and was fortunate to join the Shangri-la Group in 2008. Since then, I’ve worked at Shangri-la properties in Kota Kinabalu, Shanghai, Shenzhen, and the Philippines before being asked to open the Kerry Hotel here in Hong Kong. The Kerry Hotel only just opened on 28 April this year. It’s a remarkable hotel! With 546 rooms, it’s a large hotel that sits rights on the waterfront in Whampoa overlooking the magnificent harbour. The word that best describes this hotel is “space”. Invariably, our guests are surprised at how spacious the hotel is: we have the largest pillarless hotel ballroom in the city, our lobby is long and spacious, and we have multiple large open-air decks for F&B. leisure and other activities. Even though we are only a short distance away from Canton Road, it has the feel of an urban resort because of the space the hotel provides, which opens up many possibilities to accommodate a broad mix of guests and various types of MICE events. My favourite part of the job is the constant opportunity to interact with different people every day. There is never a single day that is the same. I love talking to our guests and being helpful to them or talking to our own team members to see how they are doing. The biggest challenge as a general manager here is striking the right balance between serving the guests while at the same time keeping the new hotel running smoothly without affecting guest service. I think our team has done an excellent job meeting the challenge and getting that balance right. Hong Kong is a great city to visit. There are so many different things one can do whether it’s the Peak, street markets, or shopping fashion brands. Amazingly, in just 20 minutes you can be completely away from the hustle and bustle of the city and into the great outdoors. The city is also very safe, and given our excellent infrastructure we provide travellers that first-world comfort feeling when they visit here. I love cycling. I organized a charity ride from Shenzhen to Shanghai when I worked in China, as well as from Guangzhou to Hong Kong. I try to ride whenever I can, especially in the morning. My three recommendations to visitors to do in Hong Kong: go and enjoy Hong Kong’s green space, whether it’s hiking the Dragon’s Back or walking around the Peak; visit a night market like Ladies Market or Temple Street; and try out a seafood restaurant such as in Sai Kung, Lamma Island or Lei Yue Mun.
