e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. The month of September marks the end of the summer holidays, when soaring temperatures begin to wane, signalling more pleasant weather to come. The city is busy as ever, alive with a wide range of activities from trade shows to concerts to sporting events, including the opening of another new horseracing season, arguably Hong Kong people’s favourite pastime. Operated by the venerable Hong Kong Jockey Club, the new season kicks off on 3 September at the club’s Shatin racecourse. To encourage visitors to take in this unique Hong Kong experience, the Jockey Club has set up a dedicated “Tourists Area” with its own viewing balcony and amenities. I highly recommend a visit to the racecourse and aflutter on the horses for fun. A big part of Hong Kong’s fascination lies in its unique East-meet-West culture, manifested in many aspects of daily life. Perhaps most accessible is the legacy of the shops and eateries that dominated the streetscape in the 1950s and 60s but which are gradually vanishing with time. Our feature story on page 14 introduces some of these old shops that have managed to survive: their businesses range from retro artefacts to Chinese garments to old-style photographic services to authentic Hong Kong style food and noodles. Be sure to set aside some time and visit a slice of Hong Kong’s past. Beer lovers will love Beertopia 2017, Hong Kong’s premier international beer festival. The event features more than 500 different beers, including from 13 local breweries, plus other festive activities including food, music and games. Many music events are happening this month. Notable among them is the season opening of the Hong Kong Philharmonic Orchestra with a performance by famed pianist Yuja Wang accompanied by the orchestra. The Hong Kong Phil will also perform other classical masterpieces under the direction of its musical director Jaap Van Zweden. And one of the region’s newest fashion trade shows, CENTRESTAGE, is being held here in the city for the second time, riding on the success of its inaugural event last year. Over 200 fashion brands are showcasing their creations, augmented by numerous activities including runway shows, seminars and networking events. So, it’s another vibrant and event-packed month in Hong Kong – one that more than fills the calendar of any visitor to the city. Whether you are looking to explore the city’s old shops, enjoy a day at the races, embark on a beer adventure or take in concerts of various genres, Hong Kong is your perfect destination. Hong Kong Repertory Theatre: Reincarnation of the Prunus Mume

Tong Tik Sang’s classic The Reincarnation of the Red Plum has moved innumerable audiences. In this edition, the focus is on the other woman in the love triangle — Lu Zhaorong. Lu and Li Huiniang fall in love with Pei Yu at the same time. Should Lu insist on love through possession, or generously offer her corpse to be reincarnated and occupied by another soul? Co-written by Golden Horse Award winner Yuen Kai Chi, this play explores the time and space where humans and spirits intersect.

Hong Kong Sinfonietta: Great Piano Concertos: David Kadouch Plays Saint-Saëns

Join acclaimed pianist David Kadouch as he teams up with the Hong Kong Sinfonietta under the baton of conductor Perry So. Featured are Saint-Saëns’ Piano Concerto No. 2, Beethoven’s Symphony No. 6, ‘Pastorale’, and the Asian première of At the Very End of Old Dreams written by emerging Hong Kong composer Charles Kwong. The Hong Kong Jockey Club: Season Opening

The Season Opening race meeting will be held at Sha Tin Racecourse on Sunday, 3 September. SAFELY LOCKED TO EARTH 長命百歲

PEOPLE ALL OVER THE WORLD use padlocks to keep property safe from thieves. For hundreds of years, families in China protected their most valuable possessions – their young sons – with padlocks worn around their neck or on clothes embroidered with padlock motifs to "lock them to earth;' that is, to ward off the evil spirits believed to be hovering around, waiting to whisk the boys away. 全世界的人都會使用掛鎖保護財產安全，以防被盜。對於中國的家庭來說，最寶貴的“財產”就是兒子，他們會把掛鎖戴在兒子的脖子上或讓他們穿上繡有長命鎖的衣服，掛鎖上寫著“長命百歲”，以驅魔除妖，防止小孩被妖魔鬼怪帶走。

ons were very important to Chinese parents: only boys, not girls, in wellto-do families could take the imperial civil service examinations, and their successes brought continuing wealth and honour to the clan. Poorer farming or fishing families needed boys as a source of manual labour. The whole family worked together to help make a better living, and in later life the parents would be supported by their sons. Sons also were needed to perform the important rituals of ancestor worship as well as to ensure the continuation of the clan (married daughters left home to live with their husbands' family). For centuries China was predominantly an agricultural society; most people lived in the countryside. Lack of good medical care, coupled with a poor awareness of basic hygiene meant, until recent times, that countless infants died before their first birthday. The Chinese attributed this outcome to the presence of evil spirits lying in wait to whisk infants away. Of course, the natural desire of parents was to combat these malevolent forces in nature. So tentative was a child's existence, that until it was 100 days old it was given no name but was referred to only as "baby" or "little

one". For the first month after the birth, neither the infant nor its mother ventured out of doors. At the end of that month, a feast celebrating the infant's survival was held for family and friends. Red eggs were distributed to wellwishers, who were then expected to give the child a small gift. One popular gift was a padlock inscribed with auspicious characters and symbols; it was made either of silver or, for the poorer people, of bai tong (white copper), an alloy of copper, zinc, and nickel that resembles silver. Sometimes the padlock was attached to a silver ring large enough to go over the child's head. Meant to suggest a dog collar, it was intended to fool evil spirits into thinking that the child was an animal and, therefore, of no value. Among the children's garments adorned with padlocks is the small triangular apron called a doudou, which had its origin in a bodice worn during the Ming dynasty (13681644). The mid-nineteenth-century child's doudou shown here is made of silk with a wide opening like a mouth for a pocket. A mother did everything to protect her child and all its garments were covered in designs that not only warded off danger but also provided good luck for the child’s life ahead. Another precaution often used to deter evil spirits from taking your son away was to have them wear booties or shoes embroidered with fierce images. Dragons, tigers, dogs and lions frequently were depicted on the child’s footwear and hat as talismans. Big eyes to spot evil, an open mouth with teeth bared, big ears to hear evil lurking and long whiskers are all characteristics of these creatures. Good natured and benign, yet powerful and dynamic. A symbol of masculine vigour and fertility, the dragon represented the Emperor. Each dragon was depicted chasing the flaming pearl, a Buddhist symbol of enlightenment that represented the emperor’s search of divine truth.

Today, little silver padlocks and children's clothing bearing embroidered padlocks and auspicious symbols may be found in abundance in the antique shops in Hong Kong and the markets of mainland China. he 2017 Sun Hung Kai Properties Hong Kong Cyclothon, now in its third edition, will kick off on the waterfront of Tsim Sha Tsui on October 8. Fast becoming one of the highlight events in Hong Kong’s sporting calendar, this day-long cycling fest is expected to draw thousands of amateur and professional riders from all over the world who will take part in a myriad of competitive races and leisurely rides, cheered on by thronging crowds along the way.

The Cyclothon will start off in Tsim Sha Tsui, Hong Kong’s famed tourist district. A total of 9 rides and races are scheduled, with the morning given way to five cycling activities ranging from the 50 km Ride to the CEO Charity and Celebrity Ride, all done in good, communal fun. The longer rides will take cyclists through some of the most stunning landmarks in the city including Tsing Ma Bridge and Stonecutters Bridge, with Hong Kong’s famed Victoria Harbour as the backdrop. The four competitive races, which include a Team Time Trial, a Men’s Open Race, and a Women’s Open Race will get underway in the afternoon on the 5.15 km closed circuit route that stretches from Salisbury Road in the heart of Tsim Sha Tsui to nearby Hung Hom. And for the first time in Hong Kong, the Sun Hung Kai Properties Hong Kong Challenge, sanctioned as an official UCI Asia Tour Class 1.1 Road Race, will take place with several top UCI World cycling teams expected to join the field. Among them are UAE Team Emirates and ORICA - SCOTT. So, mark your calendar and join the crowd to cheer on the riders as they zip through the streets of Tsim Sha Tsui and beyond!

香港自行車運動 In recent years, an increasing number of people have taken up regular cycling – for leisure, sport and transport – recognising the convenience, health benefits and sheer pleasure of being out and about under one’s own power. It’s a little-known secret that Hong Kong has some of the best cycling in Asia – from easy rides with spectacular views, such as along Tolo Harbour, and extensive cycle track networks around the new towns, to challenging hills like The Peak on Hong Kong Island or ‘The Beast’ over Lantau’s central mountain range, and thrilling off-road riding, such as down Tai Mo Shan. While in the urban areas, most of which are flat and compact, getting around by bike is a convenient and increasingly popular way to explore the city – as long as you are ready to demand your space. While numbers are hard to come by, it is estimated that the city has over 350,000 bicycles, and more than 300 bike shops, with many offering bikes to rent in the new towns such as Shatin, Tai Po and Tuen Mun. There are around 200 km of cycle tracks, mostly in the new towns, with a new cycle track being built to create a continuous route around the New Territories.

百老汇及伦敦城西著名音乐剧于香港首度公演 Priscilla, Queen of the Desert, the party-fun favourite from the West End and Broadway, is making its long-awaited debut in Hong Kong from September 29 to October 22. Arguably the most popular musical to come out of Australia, the screen-to-stage show, which is adapted from the 1994 film The Adventures of Priscilla, Queen of the Desert, has been on a global odyssey of its own. The musical began production in Australia, then made its way to London’s West End, and Broadway before going on to entertain audiences from Europe to Asia, from South and North America to Africa. One of the few musicals to garner both Oscar and Tony awards – for costume design, the show resonates with audiences with its hilarious yet touching story of self-discovery by three artists travelling through the outback of Australia on a battered bus nicknamed Priscilla, dressed in spectacularly glitzy costumes, and performing a string of pop classics. The 10-metre long, six-ton custom-made bus is clearly the centrepiece of the stage, coming to life amidst glittering costumes – of which more than 500 are featured, along with 200 hairpieces, and over 20 pop hits that have audiences dancing in the aisles.

Our culinary journey this month takes us to the pinnacle of fine French and Italian dining at two of Hong Kong’s most iconic restaurants. 本月《東方之珠》的美食之旅帶我們來到兩間香港最具代表性的餐廳，品嚐高級法國及意大利美饌。

'Atelier de Joël Robuchon, a three Michelinstarred restaurant, heads up an impressive list of fine dining French eateries that have made Hong Kong one of the top destinations for French cuisine outside of France. Operated by the famed eponymous French chef and restaurateur, who has more than a dozen restaurants bearing his name all around the world, L'Atelier de Joël Robuchon offers post-nouvelle French food, reverting to the more authentic, simpler French fare, with an emphasis on accenting each ingredient’s flavour individually. Naturally then, we jumped at the chance to try out a wine-pairing dinner featuring the restaurant’s seasonal menu. The elegant black marble entrance, with its subdued lighting, gives off an air of understated opulence. The restaurant is divided into two sections: L'Atelier, comprising a large circular bar with comfortable dining stools and an open kitchen where customers can enjoy watching the meticulous food preparation underway, and Le Jardin, which offers several plush booths and private rooms for customers in search of a top contemporary fine dining experience. We started our sumptuous meal with a tasty amuse bouche, a basket of 13 types of house-made and delicious bread, the most of any L'Atelier, we were told, and a glass of chilled Charles Heidsieck Brut Reserve Champagne. We nibbled on the bread throughout the meal, between the gourmet servings. Our first hors d’oeuvre was Le Caviar Imperial ($390), which is King Crab and avocado cannelloni with imperial caviar. caviar with jelly cube and gold leaves make for a delightful combination of flavours – a real delicacy indeed. Next came La Langoustine – Crispy Langoustine Papillote with Basil ($290); the langoustine is lightly battered and oven-baked in a folded packet to retain the sweet tenderness of the meat. An excellent dry Riesling from Fritz Haag, the Brauneberger JufferSonnenuhr, Großes Gewächs Trocken Mosel, was paired. Le Black Cod with Malabar black pepper sauce and coconut emulsion ($240) was next, paired with a glass of Maison M. Chapoutier St. Joseph Les Granits Blanc, a full-bodied yet fresh white Rhone, perfect with the lightly grilled cod. We were now ready for our entrée, which was the delightful La Caille ($250), free-range quail with foie gras, served with mashed potato and paired with a nice French Bordeaux blend red, from Chateau Le Gay in Pomerol. The foie gras blends well with a delicately cooked quail with its own rich gravy, adding flavour to the creamy mashed potato. We topped off this most delicious meal with La Pomme Verte ($170), a Cinnamon panna cotta with caramelized green apple and sorbet in a delicate sugar pearl, accompanied by a Damilano Moscato D’Asti, a refreshing, medium sweet dessert wine that is easily consumed, as is the chilled gelatin. L'Atelier de Joël Robuchon is without doubt one of our highlight gastronomic outings of the year, in the perfect setting for an unforgettable dining experience that any visitor would treasure. abatini, located in the Royal Garden Hotel and widely acclaimed as one of the very top Italian restaurants in Hong Kong, has been a venerable presence in the city’s fine-dining scene for 25 years and is one of our favourite standbys whenever we are in the mood for traditional, gourmet Italian cooking. So, when we learned that Sabatini was offering a special menu featuring highly prized, in-season porcini mushrooms, we jumped at the chance of an invite. As frequent diners, we’ve grown to love the familiar and welcoming décor of Sabatini, a rustic setting with Roman motifs, arched ceilings and passageways, or nate chandeliers, and shiny polished tiles, which combine to provide a comfortable and relaxed dining experience. The service from the restaurant’s knowledgeable staff is, as usual, attentive and excellent. Sabatini serves a highly popular appetiser buffet lunch – a large antipasti spread of cured meats and seafood, salads, marinated vegetables and soup, a selection of main entrées, and a generous dessert cart from which to choose. The restaurant also proffers an extensive list of fine Italian wines. But, of course, we are here for the mushrooms. Porcini mushrooms, the genus grown widely across the Northern Hemisphere in the wild, are harvested in late summer and autumn, and arrive in Hong Kong fresh at this time of the year. The mushroom is considered the best of the wild types for its meaty texture and nutty flavour, is highly nutritious and healthy, and goes well with risotto, pastas, and meats and seafood, adding flavour and aroma to any dish. Our first plate was Grilled Mushrooms with Seared Hokkaido Scallops and Mixed Salad ($388); the tender scallops and creamy, meaty mushrooms are the perfect warm-up act for the dishes to come. The Chestnut Cream Soup with Porcini Mushrooms and Iberico Ham Foam ($228) was next, and we do like this creative concoction: the

blended porcini mushrooms and chestnut make for a velvety smooth soup, topped nicely with the Iberico ham foam to create a subtly rich flavour. The eagerly awaited Risotto with Porcini Mushrooms, Mascarpone Cheese and Shaved Black Truffle ($438) which came next was all we could expect – a delightful combination of flavours, aromas and texture. It is a dish that we consumed with gusto and would always leave us wanting more. One feature of the porcini mushroom is that it can be dried and kept for off-season use; the drying process intensifies the flavour and the mushrooms can be reconstituted easily with flavour intact by soaking in hot water. That allows mushroom aficionados to appreciate this delicacy all year around; we are happy enough with fresh porcini any time though. Our entree was Pan-fried Veal Chop with Sautéed Porcini and Veal Jus ($538). The veal chop is fried to perfection – the meat is tender to the bite and tastes delicious, and the dish exquisitely showcases the versatility of porcini mushrooms as an accompaniment. Whether to sample a seasonal speciality such as the porcini or just to enjoy an excellent, authentic Italian meal, you can count on Sabatini to deliver time and again. As the melting pot of the world, America has a range of cuisines that reflects its broad immigrant roots. Nowhere is that better represented than at Cheesecake Factory, a highly popular American casual dining restaurant chain that serves up a variety of delicious, hearty Americana dishes to millions of loyal customers. And finally, to the delight of its fans, Cheesecake Factory has recently opened an outlet in Hong Kong, a 9000-square foot spacious facility at Harbour City in Tsim Sha Tsui. The restaurant's décor is easily recognised as archetypical Cheesecake Factory, with its gold hue, opulent dark wood furniture and an eclectic clash of bright and noisy colours to help create that unique dining ambience. To ensure consistency across all its 200 plus outlets, Cheesecake Factory serves the same menu items, each in its trademark generous portion. And that includes cheesecakes, of which there are more than 30 types to choose from. Signature dishes we tried included Factory Nachos – with Spicy Chicken ($166); Fish Tacos ($158); Cajun Jambalaya Pasta ($206) and, Mango Key Lime Cheesecake ($75) – but we were barely scratching the surface of what the restaurant offers. There is also a nice Sunday Brunch from 10am to 2pm, serving tasty items such as Brûléed French Toast, Monte Cristo Sandwich, and Fried Chicken & Waffles Benedict. Given its dictionary-sized menu you can be sure that Cheesecake Factory has something tasty for everyone, which makes it perfect for large groups. Reserve early and join the crowd.

Towada Sushi 十和田総本店 Towada Sushi opened its doors in Tsim Sha Tsui recently, a stylish addition to Hong Kong's burgeoning array of sushi outlets. Towada serves quality sushi at reasonable prices, with fresh seafood flown in daily from Japan. We tried a series of signature dishes for our lunch, including some innovative and seldom-seen options. They include Crab Paste Salad ($68) made from Snow Crab meat and roe, which is light and sweet tasting. The Live Octopus with Ponza ($88) is another appetising dish with its sweet and sour flavour. Towada’s special offerings include sushi with live seafood such as live abalone,

scallop, and surf clam. It also offers a reasonably priced lunch set ($98) that includes the chef’s recommended seasonal sushi choices, plus miso soup and steamed egg. The serving portions are generous and we found the meal represents good value for money. For diehard sushi foodies, Towada offers a Shellfish Sushi Set ($228) and Ultimate Tuna Sushi Set ($288) that encompasses all the sushi flavour you could desire. Tsuta Japanese Noodles 蔦 Japanese ramen is hugely popular in Hong Kong, attested by long queues that routinely form at the city’s ramen outlets. So, it was good news for ramen foodies when Tsuta, of Tokyo, and the first ramen eatery to receive a Michelin star, opened its first restaurant in Hong Kong recently. Tsuta was founded by Onishi Yuki in 2012 in the Sugamo neighbourhood of Tokyo. Yuki, who originally worked in the fashion industry but born to a ramen-serving family, created a unique ramen menu by mixing traditional ramen with truffles. Tsuta’s ramen proved to be hugely hit, setting a queueing record of five hours to get in and garnering accolades and awards along the way. To maintain its high standards, Tsuta, like its Japanese sister, limits its output to 400 bowls daily. The key of Tsuta’s ramen lies in the meticulous preparation of both the noodles and its famous dashi, or soup base, which is made with whole chicken, fresh clams, dried fish, all simmered for nine hours to create a clear broth. The ramen comes in two flavours: Shoyu Soba, with Tsuta’s secret-formula soy sauce, and Shio Soba – a sauce made from Okinawa sea salt and Mongolian rock salt. The simple menu offers basic sobas priced from $98 to $149. A top choice is Char Siu Ajitama Shoyu Soba, which includes Char Siu (pork), flavoured egg, bamboo shoots,

leek and puréed truffle in truffle oil. On the side are rice dishes including Niku Meshi ($35) – diced roast pork, and Ro-su Meshi ($35) – sliced roast pork. Through the use of a DF II MACHINE, the serums penetrate using sound waves followed by iontophoresis, a technique of introducing ionic compounds into the skin by applying a local electric current, and an alginate mask to maximise the thickening, normalization and improvement of the collagen and elastin of the skin, improving pigmentation production, restoring blood ﬂow, and proper oxygenation. We felt totally refreshed and revitalised afterwards. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. GENERAL MANAGER

Fannie Tsang, Resident Manager at Hong Kong Disneyland Resort, shares her thoughts on her hotel career to date and Disneyland’s latest hotel addition, Disneyland Explorers Lodge. 香港迪士尼樂園度假區酒店營運駐店經理曾憲思與我們分享了她的酒店業生涯，還為我們介紹了香港迪士尼樂園度假區的全新酒店——迪士尼探索家度假酒店。

I grew up in Hong Kong but went abroad to Hawaii to study Hotel Management. I fell in love with the hotel industry as a kid when on family vacations we stayed at nice hotels that all looked so glamorous. I started my career at a 5-star hotel in Honolulu at the front desk. Then I worked for another 5-star hotel when I came back to Hong Kong, also another front office position. Then I was invited to be part of the initial hotel team when Disneyland opened in 2005, and, happily, I’ve been here ever since.

My favourite part of the job is the interaction with people, especially our guests, and making sure they have a fantastic arrival experience. Almost all our guests stay here as part of their “Magic Kingdom” experience and from the moment they are here, we want to create that magic feeling for them wherever they go – whether it’s meeting a favourite Disney character or enjoying the ambience of a hotel such as Disney Explorers Lodge. There are three hotels here at Hong Kong Disneyland Resort, with more than 1700 rooms in all. The latest, the Explorers Lodge, offers a highly immersive and delightful ‘adventure and exploration’ theme. We were also able to incorporate into the new hotel’s design lessons learned from the other hotels since they opened, to help maximize guest comfort and experience. For example, 70% of our rooms have connecting doors to help accommodate large groups with sometimes several families traveling together. Disney is famous for its unique culture which reaches everyone and permeates everything we do. The best way to describe our culture is our singular focus to make our guests feel special and “magic”, whether at the park or the hotel, whether they are a child or an adult, and that focus is consistently delivered across all Disney venues the world over. The key to being a good general manager is to really understand the guests’ needs and engage our whole team to meet those needs. And in Disneyland, some of our guests’ needs can be quite special. For example, we often have guests wanting to propose marriage at our hotels. Our cast members delight in helping the guests to make sure the proposal goes off smoothly and romantically – they also have tremendous fun helping too. What I like best about Hong Kong is its food. I love dim sum, but the city offers so much more in terms of types of food and different restaurant experiences. I love to explore and try out new restaurants and cuisines. My three recommendations for tourists in Hong Kong are: Dim sum, of course, and try as many kinds as possible; visit Disneyland is must, as a centrepiece of your vacation, and come often because your experience will be different every time; and finally, visit some of Hong Kong’s scenic points such as the Peak, or explore hiking trails on some of our mountains and islands for unparalleled vistas of our beautiful city.

我在香港長大，之後去了夏威夷學習酒店管理。我很小的時候就喜歡上了酒店業，因為我們一家人去度假時常住在很漂亮的酒店，五光十色的酒店看起來很迷人。我首先是在檀香山的一家五星級酒店擔任前台。然後我回到香港的一家五星級酒店，同樣是擔任前台的職位。後來當迪斯尼樂園在2005 年開幕的時候，我成為了酒店開業團隊的一份子，之後一直在這裡工作至現在。我最喜歡這份工作可以讓我與不同的人互動，特別是酒店的賓客，要確保他們獲得極致的入住體驗。迪士尼樂園就像一個魔法王國，客人從到達的一刻起就成為魔法王國的一部分。無論賓客走到哪裡，我們都希望為他們營造出魔法的感覺，例如與他們最喜愛的迪斯尼人物見面或享受迪士尼探索家度假酒店的氛圍。香港迪斯尼樂園度假區有三家酒店，共有 1700 多間客房。最新的迪士尼探索家度假酒店以令人身臨其境的“冒險與探索”為主題。我們還將其他酒店的設計經驗融入這間新酒店，而將客人的舒適度和體驗提升至最佳質素。例如我們70％的房間都有連通門，令幾家人一起旅行的賓客倍感方便。迪斯尼以其獨特的文化著稱，這種文化伴隨大家成長，也滲透在我們所做的一切當中。我認為我們的文化就是致力於讓賓客感到特別和奇妙。無論是在樂園還是酒店，無論是大人還是小孩，這都是全世界的迪士尼樂園唯一的宗旨。成為一名優秀的經理的關鍵是要真正了解客人的需求，然後整個團隊一起努力滿足這些需求。而在迪斯尼樂園，一些客人的需求可能非常特別。例如，我們經常有客人想在酒店求婚。我們的演員們都很樂意提供幫助，保證客人有一個順利、浪漫的求婚儀式，在這個過程中他們也感到非常開心。我最喜歡香港的食物。我喜歡點心，香港的美食種類和用餐體驗實在太豐富了。我很喜歡探索和嘗試新的餐館和美食。我給訪港旅客的三項推薦：首先當然是盡可能多地品嚐不同的點心；到迪斯尼樂園一遊是假期必不可少的部分，您可以經常來樂園遊玩，因為每次的體驗都會有所不同；最後是遊覽一些香港的景點，例如山頂，或探索山巒和島嶼上的遠足徑，欣賞這個城市無與倫比的壯麗風景。
