Please check out our cover story on page 10 on Join the Summer Fun for more details. If you have youngsters, the city’s excellent public transport system mean you can all focus on having a good time. The many public children’s playgrounds offer hours of fun, and they are all free. There are also many venues offering organised and free-flow play activities such as water parks, trampolines, iceskating. And, of course, the kids will love Hong Kong’s great outdoors, whether it’s the beaches, country parks or islands. Please go to our feature story on page 14 for our top picks for kids to do in Hong Kong. You’ll also want to visit two of the city’s biggest consumer fairs this month: the Hong Kong Book Fair and the Ani-com and Games Hong Kong. The Book Fair attracted over one million visitors last year and is one of the largest of its kind in the world. You’ll find books of all kinds for reading pleasure, including, of course, those for children. And the Ani-com and Games itself is a haven for comics, animation and games fans to explore. It’s not only the kids who’ll have fun, though. Anyone looking to soak up the party atmosphere will want to visit the Lan Kwai Fong Beer & Music Fest, with beer brands from the world over on tap, accompanied by sizzling beats and interactive games. For those who enjoy a good joke or two, the Melbourne International Comedy Festival Roadshow will make its home in Hong Kong temporarily, with a slew of artists out to tickle your funny bone. The city has its usual range of concerts and performances on offer. New in town is the Belt & Road World Choir Festival, which features more than 2000 talented musicians and singers from 20 countries. The First Concertmaster of the Berlin Philharmonic Noah Bendix-Bagley and a laureate of the 2009 Queen Elisabeth Competition will collaborate with one of his former principal teachers, Christoph Poppen, to perform a programme of Mozart Violin Concertos for the Hong Kong Sinfonietta’s popular concert series, Know Your Classical Music. SHAMIAN: A SERENE OASIS IN THE HEART OF GUANGZHOU 沙面：廣州市中心的寧靜綠洲

While the rest of Guangzhou reinvents itself at a reckless pace, a tiny corner of the city, formerly known as Canton, is resolutely focused on the past. 當廣州的其它地方不斷飛速發展的時候，城中一個小角落卻試圖將時光倒流。

n 1859, after the turmoil of the Second Opium War, the foreign traders returned to Canton to find that the factories where they used to reside and do business had been totally destroyed. After some debate on where they should be reinstated, an area to the east of the old site was leased to the British. The area was of little value being largely a mud flat with few buildings. Here the British created a reclaimed island by building a sea wall to enclose it and form a canal to separate it from the Chinese city. One fifth of the island was designated as a French concession and the remainder as a British concession. Here a western-style neighbourhood developed, quite in contrast to the congested Chinese areas on the other side of the canal. With wide avenues lined with trees it was a quiet oasis amid the hustle and bustle of the overcrowded suburbs. The buildings were naturally in the western style and included churches, one Anglican in the British section and one Roman Catholic in the French section. There was a club and an indoor swimming pool, both still standing. Taken over by the Japanese during the last War it reverted to the foreigners after the surrender. But soon the Communists expelled everyone and the island sank into obscurity. However, there was little redevelopment and

many of the old buildings remained. Now refurbishments over the last thirty years have returned many of these stately mansions to their former splendour. The enclave is now a designated heritage site, and the city fathers are keen to promote its history and European connections. Shaped like an egg sliced lengthwise, the island is encircled and bisected by shady avenues. Five short roads cross at right angles, with the eastern end being the French area. Pastel-coloured mansions lined the avenues, built in the classical Italianate style with deep verandas, each with their own garden. On the ground floor was an office and warehouse, with accommodation above for senior staff. Furnished in the English manner, the houses were spacious and cool in the summer, but chilly in the winter. The sites facing the canal were less popular and so the buildings here were used as housing for junior staff and warehouses. The island was linked to the mainland by two small bridges, with guards to prevent the Chinese from crossing, unless they had a pass. At 9pm the gates to the bridges were locked and the curfew announced by a deep boom from a very long horn.

Leisurely morning’s stroll round the island is to step back in time to when Shamian was home to the wealthy and privileged. Coastal steamers brought tourists and businessmen up the Pearl River from Hong Kong and Macau, and anchored alongside where the White Swan Hotel now stands. Passengers disembarked at Deacon's Steps, with the offices and godown of the august trading firm, Deacon & Company, immediately opposite. Close by was another venerable company, Jardine Matheson, first established in the Canton factories in the 1820s and now with offices around the world. Though their headquarters moved to Hong Kong in 1841, the company had a ‘beautiful house’ on Front Avenue, now Shamian Nan Lu. The traveller and writer Isabella Bird stayed here in 1879, remarking, ‘The settlement, insular and exclusive, hears little and knows less of the crowded Chinese city at its gates. It reproduces English life as far as possible, and adds a boundless hospitality of its own, receiving all strangers who are in any way accredited, and many who are not.’

The area to the south of Front Avenue was designated for public gardens and it was here that the Shamian Lawn Tennis Club and Croquet Lawn opened in August 1877. The French had their own public garden, complete with a bandstand, laid out by the banks of the river. Central Avenue, now called Shamian Da Jie, divides the island. In the French area is the distinctive turreted red brick building that was the Imperial Maritime Customs House. Just beyond, on the corner, is the little daffodilyellow ‘Our Lady of Lourdes Chapel’, built in 1890, and still in use. At the end of the avenue is the cheery yellow Anglican Church, one of the first buildings to be erected in 1865. With its plain whitewashed interior, ceiling fans and simple wooden benches, it draws a full congregation for Sunday morning services held in Cantonese and English. Shamian’s gilded age lasted until the middle of the twentieth century. Now the businesses are Chinese run, and fortunate families occupy each mansion. Its current heritage status preserves it as the quiet oasis it originally was; a welcome escape from the crowds of the city. ■

fter a while living in Hong Kong, some rather special things can become taken for granted, such as just how spoilt for choice the city is in its fine dining options. A visit to Mott 32 though, an upscale dining hotspot in Central serving Cantonese cuisine with a modern touch, is a refreshing and rewarding jolt to that complacency. Since it opened a few years ago, Mott 32 – the name is a nod to the first Chinese convenience store on Mott Street in New York City’s China Town – has attracted the city’s business and social elite, garnering coveted dining awards along the way. The glitzy restaurant, located in the basement of a bank building, exudes an air of opulence upon entry, with a cadre of hostesses to welcome the guests. The large space is stark and striking, the décor a blend of New York industrial and a modern interpretation of Chinese imperial, fittingly for a basement. Mott 32 serves principally Cantonese cuisine, including its prized dim sum dishes, augmented by a complement of classic Sichuan and Beijing fare. Under Chef Lee Man Sing, the restaurant combines traditional Chinese cooking methods with an intense emphasis on choosing and sourcing quality ingredients from the world over to create unique, contemporary dishes. For our lunch visit, we were served a combination of dim sum and Cantonese dishes, including its signature char siu, the Barbecue Pluma Iberico Pork, Yellow Mountain Honey (HK$295, limited daily), which is every bit as good as advertised – the sweet, tender and succulent pork practically melting in the mouth.

A smattering of dim sum dishes followed: Hot & Sour Iberico Pork Shanghainese Soup Dumplings (HK$95/4 pcs) – a twist on the traditional xiaolongbao, filled with a spicy sauce, Soft Quail Egg, Iberico Pork, Black Truffle Siu Mai (HK$70/2 pcs), South Australian Scallop, Garoupa, Caviar & Gold Leaf, Egg White Dumpling (HK$95/3 pcs), and Australian Wagyu Beef Puff (HK$75/3 pcs). These dishes all tasted excellent, their ingredients a perfect expression of Mott 32’s emphasis on ingredient selection. To wrap up the meal we were served Prawn, Crispy Rice Paper, Asparagus (HK$115), Homemade Cold Tofu, Beancurd Skin, Black Bean, Chili Sauce (HK$105), and Signature Smoked Black Cod (HK$260). The wonderful thing about dim sum is that it allows the sampling of so many dishes, each a bit different, and all tasty. Like a kid in a candy shop, we were spoilt for choice. We finished our meal with a dessert, Glutinous Pancake, Green Tea, Cashew Nut (HK$80/4 pcs), by which time we were fully sated. If you wish to top off your visit to Hong Kong with a special meal, a visit to Mott 32 could be just the ticket.■

卅二公館於數年前開業，餐廳以全紐約第一家唐人便利店的街號命名，多年來吸引了眾多城中名人，更獲得不少美食獎項。這間時尚華麗的餐廳位於一幢銀行大廈的地庫，一進門就能感受到餐廳的奢華氣息，光是接待處就有好幾位服務生隨時準備迎接賓客。餐廳內部空間十分寬敞，設計師將紐約工業風格和中式宮廷元素完美融合，將地庫打造成風格獨特的中餐廳。卅二公館主打粵菜，包括一系列人氣點心菜式，餐廳更推出不少經典四川菜和北京菜。卅二公館在主廚李文星的帶領下，從世界各地精選高品質食材，配合傳統中菜烹調技巧，創作出多款獨特、新穎的菜式。我們在午餐時間到達餐廳，品嚐了一系列點心和粵菜，其中包括這裡的招牌菜蜜汁頂級西班牙黑毛豬叉燒（HK$295，每天限量）。這道享負盛名的菜式果然名不虛傳，黑毛豬味道香甜、嫩滑多汁，在口中化開，香氣縈繞口中。接下來是幾道點心菜式：酸辣小籠包（HK$95/4件）為傳統小籠包注入新意，黑豚肉松露鵪鶉蛋燒賣（ HK$70/2 件）、金箔黑魚籽賽螃蟹餃（HK$95/3件）和黑椒牛柳酥（$75/3件）味道同樣出色，充分印證了卅二公館對食材的高度重視。之後我們還品嚐了脆皮鮮蝦露筍腸粉（$115）、麻辣凍豆腐(HK$105) 及煙燻黑鱈魚(HK$260)。吃點心的好處就在於你可以什麼都試一點，有機會品嚐更多款式。我們就像小孩到了糖果店一樣，選擇實在太多了。最後的甜品時間我們選擇了綠茶腰果薄罉（HK$80/4件），著實令人心滿意足。如果您想在香港享用一頓特別的中菜，來卅二公館準沒錯。■

apanese cuisine is highly popular in Hong Kong, driven in part by the common affinity for seafood and appreciation of quality among both peoples. Hundreds of restaurants serve a wide range of Japanese cuisines across the city. It is commonly held that Japanese food is the second-most popular cuisine in Hong Kong, after Cantonese, and even before other regional Chinese styles. Clearly, we are spoilt for choice as far as Japanese food is concerned. One top option is Kaetsu, an elegant establishment at the Grand Hyatt, and one of our favourites. So, our scheduled lunch at Kaetsu made for an eagerly anticipated visit.

The secluded restaurant’s unassuming entrance contrasts with the elegance of the interior. The design is contemporary, with clean lines and an earthen tone, themed in wood, stone and clay. In addition to its regular tables, Kaetsu also has a large sushi counter, the Teppanroom – serving grilled teppanyaki items, and a private room to round out the facility. Kaetsu serves a range of Japanese fare including sashimi and sushi, as well as tempura and the teppanyaki. Our aim was to try a bit of everything. As with most discerning Japanese restaurants the emphasis is on the ingredients and their provenance, quality and freshness, especially when it comes to fish. We had a most enlightened discussion with Kaetsu’s friendly chef on that topic, which we would summarise as “buy the best, deliver it ASAP, and keep it fresh” – and we would certainly concur.

Our lunch started with an appetiser which is Yam Jelly, Jyunsai, Tonburi, Wasabi Sauce, Hanahojiso ($80), which is light and refreshing and a good palette cleanser ahead of the meal proper. This was followed by Fruits Tomato Aspic, Sea Urchin,

Botan Shrimp, Crab Meat, Sea Grape ($320), a combination that worked deliciously well. Each ingredient retains its distinctive taste and yet the meld of flavours comes across above and beyond. Next, our grilled dish was Grilled Kumamoto Wagyu A4 Sirloin, Houba Leaves, Miso Paste ($540). The prized Kumamoto beef, Japan’s finest, is marbled and tender, the sirloin cut helps bring out the beef flavour – it was a real treat. As an interlude, Okinawa Mozuku Seaweed, Okra, Ginger, Vinegar Soy Sauce ($80), a light vegetable dish served its purpose well, and we were ready for the next signature item, which was tempura – Blue Prawn, Kisu Fish, Eggplant, Sweet Corn, Mangaji Tagarashi Tempura ($300). The tempura is excellent – light and crispy batter, fresh seafood and vegetables and perfectly fried. Our final main was Nigiri Sushi, Aosanori Miso Soup, along with sushi including Chu Tuna ($115/ piece), Aniname Sushi ($70/piece) and White Shrimp Sushi ($80/piece). We finished our meal with two desserts – Shizouka Musk Melon ($160), Warabi Mochi ($60), both of which were yummy. Hong Kong’s Japanese food culture is highly developed, and you’d be remiss not to give it a try. 日本菜在香港向來大受歡迎，其中一個原因是香港人和日本人大多喜歡海鮮，對食物質素同樣有着極高要求。城中設有數百間日本菜餐廳，

提供豐富的日本料理。許多人認為，日本菜在香港的受歡迎程度僅次於粵菜，只論人氣的話，甚至連其他省份的中菜也稍顯失色。正因為香港的日本菜選擇眾多，我們對日本餐廳的選擇就更為挑剔了。位於君悅酒店內的鹿悅日本餐廳一直是我們最愛的日本餐廳之一，這次有幸到此品嚐美味佳餚，實在令人期待。餐廳門口頗為低調，與內部優雅精緻的裝修形成鮮明對比，餐廳採用現代風格的裝潢，線條清晰，選用大地色系，以木、石和泥土作主題。除了一般的餐桌以外，更設有大型壽司吧，以鐵板燒烹調時令食材的 The Teppanroom 以及一間包廂。鹿悅主打一系列日式美饌，包括刺身、壽司、天婦羅和鐵板燒等，我們當然希望盡量品嚐更多款式。日本菜餐廳大多十分注重食材來源、質素和新鮮度，特別是魚類。熱情的餐廳主廚為我們詳細介紹了食材選擇的要求，總的來說，就是要買最優質的食材，縮短運輸時間以及保持新鮮。這頓午餐以美味前菜揭開帷幕，長芋羹、蓴菜、地膚子、山葵餡和花穂紫蘇（$80）清新爽口，令人胃口大開。接下來是水果番茄、海膽、牡丹蝦、蟹肉和海葡萄（$320），各種食材配合得恰到好處，既保留了食材本身獨特的味道，融合後更將味道提升了一個層次。下一道菜是A4 熊本和牛西冷朴葉味噌燒（$540），熊本牛肉在日本頗受歡迎，牛脂分佈平均，肉質嫩滑，廚師選取的腰脊肉味道特別濃郁，牛魔王們絕對大呼過癮。沖繩水雲、秋葵、生薑絲、醬油醋（$80）是一道輕盈的蔬菜菜式，在品嚐下一道招牌菜前為我們提供了一段美好的間奏。藍蝦、沙鮻魚、茄子、甜粟米、万願寺辣椒天婦羅（$300）以薄薄的炸漿包裹着新鮮海產和蔬菜，香脆美味。最後一道主菜是青紗海苔麵豉湯，配上三款握壽司：中拖羅壽司（$115）、鮎魚壽司（$70）和白蝦壽司（$80）。壓軸登場的是兩道甜品— 静岡蜜瓜（$160）和蕨餅（$60），同樣令人滿意。香港的日本美食文化已十分成熟，訪港期間絕對不可錯過鹿悅日本餐廳的時令佳餚。■

Forbidden Duck 鴨大哥

Forbidden Duck is a concept restaurant recently launched by wellknown Hong Kong “Demon Chef” Alvin Leung. As the name suggests, the restaurant specialises in duck, and Peking duck in particular; it also serves dim sum and other Cantonese dishes. A giant duck at the front door greets visitors. The interior is spacious and Forbidden Duck uses an open kitchen, giving a friendly and open feel. Lunch is mainly a dim sum affair. We picked out some favourites, including Barbecue Pork Milk Bun with Crystal Sugar ($48), Pesto Duck Spring Roll ($42), Chicken Feet with Abalone ($78), and a very nice Barbecue Yunnan Black Pig ”Char Siu” ($108). Then came the signature dish, Peking Duck ($468/ whole and $248/ half). The skin was crispy and crunchy, and the meat tender and moist, a must for good Peking Duck. A second dish was prepared from the same bird – Mongolian Style Duck ($80). To round out the meal we also had Seafood Rice in Aromatic Duck Soup ($180) and Lobster and Vermicelli with Black Truffle Har Mi XO ($308) which was quite a treat, before our dessert came. Forbidden Duck is bound to develop an enthusiastic following given its pedigree, so give it a visit before booking becomes difficult.

鴨大哥是由香港名廚“廚魔” Alvin Leung 開設的新餐廳，顧名思義，餐廳主打北京烤鴨，同時提供多款點心和粵菜。餐廳門口有一隻負責“迎賓”的大鴨子，內部面積寬敞，廚房設透明大玻璃，顧客可近距離看到廚師工作的情況，給人開放親切的感覺。這頓午餐以點心為主題，我們選擇了一些最受歡迎的款式，包括：墨西哥牛奶叉燒包（ H K $ 4 8 ）、羅勒鴨絲春卷（ H K $ 4 2 ）、鮑魚鳳爪（HK$78）以及美味的雲南黑土豬叉燒（HK$108）。接下來招牌菜式北京烤鴨（每隻HK$468，半隻HK$248）隆重登場。烤鴨外皮香脆，鴨肉嫩滑多汁，這是北京烤鴨的精髓。而另一道以鴨肉製成的菜式是蒙古式炒鴨崧（HK$80），同樣令人欲罷不能。之後我們還品嚐了海鮮鴨湯泡飯（HK$180）和廚魔黑松露 XO 龍蝦粉絲煲（HK$308），最後當然還有美味甜品作結。廚魔開設的餐廳向來備受追捧，所以在鴨大哥變得一席難求之前，趕緊來嚐鮮吧！

Dim Sum Library

Hong Kong, offering arguably the world’s best Cantonese dim sum, is witnessing an evolution of this popular cuisine as restaurants increasingly offer innovative dishes, using ingredients from other cuisines prepared using traditional dim sum methods. We visited Dim Sum Library, located in the upscale mall Pacific Place, a welcome addition to this burgeoning trend. We sampled a potpourri of the restaurant’s signature dim sum dishes. They included Black truffle Har Gau – Shrimp Dumplings ($58/3 pieces); Black Garlic Siu Mai Pork Dumplings ($58/4 pieces); Hokkaido King Crab and Sea Urchin Spring Rolls ($88/4 pieces), which we’ve never tried before; Seared Foi Gras with Osmanthussmoked Coddled Eggs ($88) – also something new; Wagyu Beef Puff with Black Pepper ($88/3 pieces) – a house specialty; and a very interesting Dan Dan Xiaolong bao ($68/3 pieces), in which the spicy Sichuan dan dan noodles sauce is used to season the pork filling. Other dishes we tried included Yunnan Black Truffle Crispy-skin Chicken ($195/half); an aromatic Iberico Pork Fried Rice with Sakura Shrimps and Fennel Seeds ($168); and Crispy Aubergine Tossed with Salted Fish and Chinese Chives ($128). The desserts served included Lava Mango Rolls Coated with Roasted Almond ($48/3 pieces) and Tofu Panna Cotta ($42), both refreshingly light and tasty. Dim Sum Library also offers a full slate of cocktail drinks which, to our pleasant surprise, complement the dim sum dishes rather well. Dim Sum Library leads the pack of the next generation of innovative Chinese restaurants. Be sure to give it a try.

香港的粵式點心可說是全世界最出色的，近年來香港掀起一場點心革命，越來越多餐廳致力提供新穎獨特的點心菜式，這些創意點心大多採用不同地區的食材，結合傳統烹調手法製作。這次我們來到位於金鐘太古廣場的 Dim Sum Library，看看這創意點心的表表者如何化腐朽為神奇。我們品嚐了 Dim Sum Library 一系列招牌菜式。包括黑松露蝦餃（ $58/3 件）、黑蒜燒賣（ $58/4 件）和海膽蟹肉春卷（ $88/4 件），這三款創意十足的點心都是我們從未吃過的，令人驚喜。鵝肝桂花燻糖心蛋（ $88 ）同樣是一道別出心裁的新穎菜式。而黑椒和牛酥（$88/3 件）則是餐廳的自創招牌點心。擔擔湯包（$68/3件）裡面的豬肉以四川擔擔麵湯汁調味，是十分有趣的搭配。其他菜式包括雲南黑菌手斯脆皮雞（ $195/ 半隻）、香氣四溢的櫻花蝦茴香豚肉炒飯（$168）和魚香脆茄子（$128）。我們選擇的甜品是香芒流心脆杏卷（ $48/3 件）和茶盅豆腐乳凍（ $42 ），兩款甜品香甜清新，令人回味。除了點心之外， Dim Sum Library 更提供大量特色雞尾酒，著實令人驚喜。引領新派中餐廳點心潮流的 Dim Sum Library 是您訪港旅程中不可錯過的一站。

acau’s thriving dining scene continues to expand with new quality restaurants adding to the city’s already impressive line-up. Highlights of a trip to the enclave now include not just gambling and entertainment, but also a memorable dining experience. The Brasserie at the Parisian Macao, a French restaurant at the recently opened casino-hotel complex, caught our attention.

We would have liked to try out some of the downhome French dishes that are on the menu. That means a return trip is in order, something we look forward to.

The Brasserie offers all-day dining for its guests, and, under French Chef Daniel Brolese, serves contemporary dishes with an authentic French flavour, café style. The restaurant is large and spacious, its décor modern cool, informal and inviting, and its service attentive, and delivered with panache.

斷擴展。如今旅客們前往澳門不僅僅是為了賭博和娛樂，難忘的用餐體驗也是旅程的亮點之一。巴黎人法式餐廳位於近年新開幕的賭場和酒店澳門巴黎人內，是我們這趟澳門之旅的主角。

Amidst lively conversation with our gracious host, we were served with a series of delightfully tasty dishes. Our meal started off with raw Gillardeau Oysters ($62 per piece) and Salade Nicoise with Seared Yellowfin Tuna, Lettuce, Black Olives, French Beans, Red Onion, Tomatoes and Egg ($108), which we shared with gusto. Then came Steamed Mussels a la Crème in White Wine, Shallot and Cream Sauce ($158, appetiser portion), a favourite dish of ours, as the sauce makes for delicious bread dipping. For our soup, both Lobster Bisque with Cognac Cream ($98) and French Onion Soup ($88) were tempting, so we sampled both, much to our delight. The restaurant offers a wide selection of meat and seafood courses for mains. We chose the Steak au Poivre, Pan-Fried US Prime Fillet Mignon with Cognac Creamy Pepper Sauce and French Fries ($278) and Prime US Beef Ribeye Steak 350 grams ($368). Both meats were tender, with each offering the right texture and flavour for its cut of the beef. For dessert, we chose Baked to Order Orange and Passionfruit Soufflé with Vanilla Ice Cream ($78) to share and it proved a fitting end. It goes without saying that our meal was accompanied by an excellent selection of nice white and red wines.

The store was designed in collaboration with Mavis Yip, KianYam, and Kwanho Li – designers of Mlkk Studio. The curvilinear form of the pebble wash sculptural piece dominates the space, offering a relaxed and comforting ambience. We were told that Aesop strictly required that all fixtures come in odd numbers, a testament to its tight design ethic. Aesop offers specialised facial treatments at its stores in Central and Tsim Sha Tsui. Most notably, each serves only one client at a time, providing maximum privacy and ensuring full immersion in the treatment. Meticulous attention is paid to the design of the treatment room, where coral red and bronze elements complement the crescent-shaped spotlights, exuding calm and serenity. Prior to the appointment, a facial therapist undertakes a consultation to determine the client’s precise skin condition and help select the best products and facial treatment, which lasts 60 or 75 minutes. Skilfully applied by the therapist, Aesop’s skin care products allow your body to relax, your skin to be restored to its natural firmness and suppleness. ‘So Near Yet So Far’ by NI Youyu at Perrotin ‘Billy Apple® Six Decades 1962–2018’ at Rossi & Rossi 24 May - 14 Jul. This is the first solo exhibition of the Chinese artist NI Youyu in Hong Kong. This principle is grounded in Ni’s studies at the Fine Arts College of Shanghai University, where he specialized in Chinese paintings. Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Since 2009, a group of teachers and students at the Hong Kong Institute of Vocational Education (IVE) have been developing a series of solar cars named SOPHIE in Hong Kong. Their aim is to develop a greener vehicle that can convert renewable solar energy into electricity more efficiently for use. The SOPHIE team and their fourth-generation solar car, SOPHIE IV, participated in the "World Solar Challenge" in 2013 for the first time and was the third runner-up in the 3,000-kilometre race from Darwin in the Northern Territory of Australia to Adelaide in South Australia. In 2015, SOPHIE IV became the first solar car to run on a highway in Hong Kong. In addition to displaying the fourth-generation SOPHIE, through video programmes, physical parts and interactive exhibits, this exhibition provides a comprehensive overview of the applications of various technologies in solar cars and car body design. 2/F Exhibition Hall, Hong Kong

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun - Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The first phase of opening includes 11 heritage buildings, the new art galleries and auditorium, and the Parade Ground and Prison Yard. Beginning 10 May 2018, online booking will be accepted for the Tai Kwun Pass, which will provide access to the site from 29 May 2018 onwards. Pass-holders will be guaranteed entry to Tai Kwun. GENERAL MANAGER Torsten van Dullemen, Area Vice President, Operations and General Manager at The Excelsior, Hong Kong shared with us his career and thoughtful perspectives on the hotel industry. 香港怡東酒店總經理及地區營運副總裁范禮傑與我們分享他的職業生涯以及他對酒店業的看法。

I grew up in a small town in the Netherlands. My parents would take me to this little Italian restaurant and one time the restaurant owner was short of help. My father volunteered me. I liked it well enough and continued to work there. Subsequently, I decided to go to hotel school and began my career as a chef at one of the very first Michelin-starred restaurants. But I very quickly found my way to working in hotels. I joined the Hyde Park Hotel in London. Since then I’ve worked in Rome, Milan, the Caribbean, London again, Thailand, India, Manila and Hong Kong. In the process, I’ve worked for the Mandarin three different times, each time coming back facing new challenges. I now look after three hotels: The Excelsior, as GM, and I oversee the Mandarin Sanya and Mandarin Guangzhou. The Excelsior is an icon, open since 1973. The hotel has been extremely well supported by the local community over the years. It is fantastically located in Causeway Bay, known for world-class shopping and dining, and entertainment in nearby Wanchai. Our success is down to the fact that we’ve managed to deliver the fundamentals incredibly well: guest comfort, dining, value for money – and done so consistently over the years. My favourite part of the job is its diversity. I sometimes feel like the mayor of a city. I love working with my colleagues looking after the Excelsior operationally, while being more strategically involved in the other properties I oversee. There is enormous job satisfaction when you can put a tremendous part of yourself into the job, be allowed room to be creative, and align what you do with the company’s value system. There is no set management style to becoming a good general manager. I’ve worked with several very good GMs with contrasting styles. So, in my view, you need to be yourself and be able to motivate the team, help align them, and support your colleagues to be successful. Hong Kong is one of the four or five great cities of the world, a truly global city, and will remain one given its connectedness. And it’s a great place to be – its sophistication, the Asian hospitality, its natural outdoors, its East-meets-West heritage. It’s a great place to raise kids. My favourite part of Hong Kong is its natural outdoors: I am a triathlete. Here I can swim in the sea all year round; there are so many beautiful hiking trails; and I can even ride my bike around. My three recommendations for tourists: 1. For first timers to Hong Kong, take the Star Ferry and appreciate how magnificent the city’s harbour and skyline are. 2. If you can, find a local friend or get a guide. Have them take you around. Be sure to walk the city, and appreciate Hong Kong’s rich heritage and all it has to offer. 3. For long distance guests, I recommend using Hong Kong as a base to visit another city, such as Bangkok, Manila or Tokyo, so you can get the most out of your travel to Asia.

1. 如果您是第一次訪港的話，記得乘坐天星小輪，欣賞這個城市壯麗的海港和天際線景色。 2. 可以的話，結識一位本地朋友或找一位導遊，讓他們帶您四處逛逛。步行探索這個城市，參觀豐富的歷史遺跡，體驗精彩的城市生活。 3. 我建議長途旅客以香港作為中心，探索其他亞洲城市，例如曼谷、馬尼拉和東京，充分體驗亞洲文化。
