A highlight of June here is the Dragon Boat (Tung Ng) Festival, an venerable tradition still widely celebrated across Chinese communities worldwide.

The centrepiece of the celebration is, of course, racing of colourful, long dragon boats by enthusiastic rowers, and the eating of glutinous rice dumplings.

Here in Hong Kong, we get two bites of the cherry in celebrating the festival: first, on the official festival date, which is a public holiday; then followed by the Hong Kong Dragon Boat Carnival, a three-day extravaganza of high-level, intense racing competition featuring racers from all over the world and a slate of events and activities along the harbourfront including dragon boat displays, water games, thirst-quenching cold beer and plenty of music. If you happen to be in town, be sure to catch one of these dragon boat races and join in all the fun.

The weather in June is balmy, with lots of sunshine and clear skies as the prevailing south-westerly winds bring in clean air from the South China Sea – the perfect time to explore Hong Kong’s great outdoors.

One fun way to do that is to visit the furthest reaches of Hong Kong, which, with a total land-and-sea area of only about 2,700 sq km, is compact for a large city.

But you’ll be amazed at the geographical diversity of what lies at Hong Kong’s boundaries. Our cover story on page 10 leads you to pristine beaches, cliff-strewn islands with fabulous rock formations, quaint fishing villages and seaside get-aways, as well as ecologically sensitive wetlands – all just a short ride from your hotel in Hong Kong.

The city is always chock full of tradeshows and fairs. This month, the June Hong Kong Jewellery & Gem Fair is the headliner, as it maintains its status as one of the top jewellery sourcing events in Asia, featuring a large line-up of exhibitors. And if travel is your thing, you may want to attend the 32nd edition of International Travel Expo (ITE) in conjunction with the MICE Travel Expo, now in its 13th edition. Expect tourism associations, hospitality providers and travel operators to show off the best of their wares to stimulate your travelling desire.

On the music front, the Hong Kong Ballet presents a unique production featuring some of the best contemporary choreographers titled Wheeldon, Ratmansky, McIntyre and The Beatles. It promises to be a lively and vibrant performance with 12 of the Beatles’ classic songs featured.

From watching pulsating dragon boat races, to exploring the far corners of Hong Kong, to attending premier trade shows or checking out the city’s vibrant music scene, there is so much to do and see in our city. So, enjoy, and we wish you a memorable visit to Hong Kong.

Ancient court dances are one of the long-lost treasures of China. Resplendent, exquisite and ceremonious, they showcase not only China’s aesthetic achievement through the art of dancing but also her traditional culture through rite, music, etiquette, costume, poetry and song. The Hong Kong Dance Company joins hands once again with the Classical Dance Department of Beijing Dance Academy to present this beautiful performance, which recreates, with extensive reference to archaeological archives, a representative collection of Chinese court dances of different times.

Chinese Opera Festival 2018

Traditional yet innovative, the Chinese Opera Festival presents performances by top virtuosi and maestros in the field. Hong Kong Dragon Boat Carnival

Hong Kong’s Central Harbourfront turns into a giant three-day festive celebration as thousands cheer on pulsating dragon boat racing action and enjoy the non-stop carnival activities. The CCB (Asia) Hong Kong International Dragon Boat Races features a long weekend of intense, top-level races by some of the world’s best dragon boat athletes in the heart of Victoria Harbour. FIGURES OF THE REVOLUTION 革命人物塑像

A

s the chattels of an old China hand went under the hammer, my wife sat feeling quietly confident. Two-thousandyear-old Han dynasty sculptures and Tang horses were fetching just a few hundred Hong Kong dollars each. The lot of seven figurines from the Cultural Revolution, a mere twenty years old, would surely go for a song. How wrong could we be? When the lot came up, a young Chinese man suddenly joined in the bidding. Up and up it went until the auctioneer, bewildered by this unusual turn of events, lost track and had to start all over again. Finally we won the day and my wife carried off the lot for a then-staggering HK$2,700. Now twenty years on, each single figurine would cost as much, and more, as all seven did then. Interest in Mao memorabilia is growing fast and icons from the 1960s to the mid-70s are becoming collectors' items.

When the Cultural Revolution took off in 1966, its aim was to destroy the ‘Four Olds' – old customs, old habits, old culture and old ways of thinking. Traditional, world-renowned styles of Chinese porcelain were outlawed, replaced by figurines of Mao and popular folk heroes of the time. One favourite was the model – and, some say, mythical – soldier Lei Feng, who died when a telegraph pole fell on his head. Another was Ouyang Hai who, when

a horse hauling a gun carriage was scared by an oncoming train and could not get off the track, used all his might to pull the horse off. Although a collision was avoided he got knocked over and was killed. Female idols included Mao's second wife Yang Kai Hui, who was executed by the Kuomintang in 1930, and the revolutionary hero and intellectual Liu Hulan.

Youth learning from the peasants, the farmers and the fishermen who fed the rest of the country, was another common theme. The occasional foreigner makes an appearance too. Some were supporters of Mao, from other communist countries, especially those in Africa, or minority groups within China.

There were even figurines of Canadian doctor, Norman Bethuen, who arrived in China in 1938. Though his stay was short, before he succumbed to a wound received during a surgery, he became a revolutionary hero for saving the lives of many Chinese party members and soldiers.

Figures from the revolutionary operas and ballets, which showed the struggle between oppressors, like the evil landlord and the people, were also popular. All were intended to inspire people with the glories of the revolution.

low, as the average person couldn’t afford to own one. Figurines were produced at three main centres and a number of smaller ones around the country. The most important was Jingdezhen where the kilns had been famous for centuries for fine porcelain fired at very high temperatures. Next was Tangshan – remembered today for the devastating earthquake that struck in 1976, where whiteglazed figurines of Mao were made, and then sold mostly at Foreign Language bookshops in major cities and Chinese Emporiums in Hong Kong. The Shek Wan pottery factory outside Foshan, near Guangzhou, which had made Ming porcelain, was turned over to making revolutionary heroes, glazed in blue or black and fired at lower temperatures.

Genuine figurines are not easy to find.

After the Cultural Revolution ended in 1976 everybody was angry. They had had enough of Mao’s policies and when the Gang of Four was convicted later that year, most figurines were smashed. Not many still exist except for those in private collections. Prices are rising since there are many collectors in Hong Kong, Macau and even the Mainland.

In Hong Kong, elderly dealer Uncle Szeto has seen prices rise as more local Chinese customers come to his shop on Hollywood Road. He also sells to collectors in the USA and Taiwan who have been known to pay up to HK$40,000 for a special piece.

Twenty-five years ago all his figurines were sold. Today, if he could get them they would sell for up to HK$5,000 each, while copies go for a tenth of that.

Now most of the figurines on sale have been made in the last ten years. Though it can take an expert to tell a fake by the colour of the glaze, the expression on the faces is easier to detect. After the Communist takeover in 1949, and during the 1950s and 60s, everyone was in a happy mood, smiling and optimistic.

Then in the Cultural Revolution the soldiers and folk heroes wore fervent expressions to show loyalty to the party. This is a good way to tell a genuine one, since the fakes have a softer appearance.

After the Cultural Revolution, attitude changed. In the words of Deng Xiao Ping, "To get rich is glorious". Even better if it’s done collecting Mao memorabilia. ■

Northeast Corner 最東北 Tung Ping Chau – geological wonder. Tung Ping Chau, in the northeast corner of Hong Kong in Mirs Bay, a stone’s throw from the mainland of China, is as far as you can get from the city. This oncethriving fishing village, now virtually abandoned, is the only island in Hong Kong composed of sedimentary rocks. As part of the Hong Kong Geopark, the island has become a popular weekend retreat. You can visit its famous rock formations – including spectacular cliffs and wave-cut platforms, check out the coral, or go diving. There are a couple of Chinese temples as well as plenty of trails for hiking on this small but geologically complex island. Take a ferry from Ma Liu Shui pier near the Chinese University of Hong Kong, available only on Saturdays and Sundays plus public holidays.

ong Kong’s current boundary was demarcated when Hong Kong island and the part of Kowloon south of Boundary Street were ceded to Britain in 1841 and 1860 respectively followed by the leasing of the New Territories and outlying islands with the surrounding waters in 1898.

The teritory’s extent is not large by any measure. And of the total 2,755 sq km, 60 percent is sea. The most separated points reachable by road are Sha Tau Kok in the northeast and Tai O Village on southwestern Lantau Island, a mere 85 km drive. Yet, as we explore the various corners and edges of Hong Kong, we are amazed at the geographical diversity contained in such a small area.

Due East 最東端

High Island Reservoir 萬宜水庫

Sai Kung East Country Park – High Island Reservoir Dam, Long Ke, and Tai Long Wan –pristine beaches. One of the most picturesque areas in Hong Kong, on the eastern edge of the Sai Kung Peninsula, the pristine beaches of Long Ke and the four beaches along Tai Long Wan (Big Wave Bay) – including the expansive, white sand Ham Tin Beach, are the pride and joy of Hong Kong’s great outdoors.

Start at the East Dam of the High Island Reservoir (accessible by taxi from Pak Tam Chung Bus terminus), which is the start of Maclehose Trail Section 2, and follow the trail to first Long Ke, then Tai Long Wan, after a moderately arduous hike.

Southeast Corner 最東南

Tung Lung Chau – rocks galore. Tung Lung Chau, an island just off Clearwater Bay in Sai Kung District, is another compact geological island jewel. Ferries from Sam Ka Chuen in Kowloon and Sai Wan Ho on Hong Kong Island provide weekend access. A hike around the island can feature an ancient fort, the oldest and largest pre-historic stone carving in Hong Kong, and some of the best rock climbing spots in the territory. 東龍洲-岩石景觀。東龍洲是位於清水灣附近西貢區的島嶼，同樣是地質瑰寶。可於週末從九龍的 三家村或港島的西灣河前往。在小島上遠足，您會看到東龍洲炮台，香港最古老和最大的史前石刻，以 及一些最佳攀岩地點。

Due South 最南端 Lamma Island – chilled and welcoming. This idyllic island, well-known to tourists and locals alike as a respite from the bustling city, lies at Hong Kong’s southernmost fringe, beyond which lie only islands belonging to China. Take a ferry to Yung Shue Wan from Central Ferry Pier number 4. You can stroll around this quaint village and then follow a relaxing and scenic hiking trail across the island to So Kwu Wan. Southwest Corner 最西南 Southwest Corner: Tai O Village, Lantau Island – quaint fishing village. Lantau Island, Hong Kong’s largest, occupies the southwestern corner of Hong Kong, with Tai O village on its western shore. An ancient fishing village and now a popular tourist attraction, Tai O is where you can hire a boat looking for Hong Kong’s famous Chinese pink dolphins, visit the many stilted houses built over the water, and catch a glimpse of what village life was like in the past. Take Lantau Bus number 1 from Mui Wo or Bus 11 from Tung Chung. 大嶼山大澳-古樸漁村。大嶼山位於香港西南端，是香港最大的島嶼，而大澳則位於大嶼山西岸。 大澳是一個歷史悠久的漁村，如今已成為大受歡迎的旅遊景點。您可以在這裡租船來尋找香港著名的中 華白海豚，參觀棚屋，一睹舊日漁村風貌。在梅窩乘坐1號大嶼山巴士或在從東涌乘搭11號巴士。

Due West 最西端 Castle Peak; Gold Coast – urban retreat. Hong Kong’s westernmost boundary is near Black Point off Castle Peak, home to a power station and off limits to visitors, but Castle Peak itself is accessible. The tall peak and the area surrounding it, both known as Castle Peak, boast a rich history. Castle Peak Road, which runs from Sham Shui Po to the northwest New Territories, is the longest road in Hong Kong. An arduous hike to Castle Peak (the mountain) rewards the intrepid with panoramic views of the South China Sea. Or visit Gold Coast Yacht Marina, and its beach nearby for a relaxing afternoon. Bus 962B from Causeway Bay to Gold Coast Hong Kong Hotel.

Northwest Corner 最西北 Northwest Corner: Ha Pak Nai and Lau Fau Shan – wetlands and beautiful sunset. Lau Fau Shan and nearby Ha Pak Nai are fishing villages on Deep Bay, across from Shenzhen. This alluvial plain is known for its wetlands (nearby Hong Kong Wetland Park and Mai Po Nature reserve). Floating rafts cultivating oysters and scallops still dot the bay, but the area is now better known for its seafood restaurants and a famous sunset. Round out a pleasant all-day tour by visiting Yuen Long for its temples and villages, the Hong Kong Wetland park, Nam San Wei – a beautiful wetland reserve, and then Lau Fau Shan/Ha Pak Nai in the late afternoon. Take MTR to Yuen Long, then Minibus 33 to Ha Pak Nai or Kowloon Motor Bus 65 to Lau Fau Shan.

Due North 最北端

Lok Ma Chau and Sheung Shui – rural serenity set against a skyscraper forest: A generation ago, Lok Ma Chau was a sleepy village bordering Shenzhen. Today, it is a major cross-border transport interchange and control point. There is still an observation point atop a small hill where you can gaze at Shenzhen’s gleaming skyscrapers, where formerly were only rice paddies. The old rural village is still there, surrounded by rice fields and fish ponds. A nice walking trail from Lok Ma Chau to Ho Sheung Heung lets you immerse yourself in Hong Kong’s vanishing rural life. Take Kowloon Motor Bus B1 from Yuen Long MTR Station to Lok Ma Chau.

处处寻 Much of Britain’s colonial influence remains, sometimes in surprising form. 香港至今仍保留不少殖民地特色， 有時還會令您大吃一驚。

he two decades since Hong Kong returned to Chinese sovereignty is a fraction of the preceding 154 years of British governance that ended in 1997. During that time, the British built roads, ports and all the city’s buildings, introduced laws – in English, developed commerce, and imported their own culture – food, music, language and customs. Not all of Hong Kong adopted a stiff upper lip: Hong Kong absorbed change in its stride, but as a predominantly Chinese society, it added its own local characteristics. As the city where East meets West, Hong Kong reflects the uniqueness of this fusion of cultures – wildly successfully, we may add.

These influences imbue daily life here: English remains an official language; the legal system, the backbone of our governance, is founded on English common law, as is our notion of the rule of law; the civil service runs on British administrative structure and practices; and the city’s educational system still largely follows the British model.

Importantly, our key institutions – churches, hospitals, charities and civic clubs – still operate mostly as they ever did, remaining important pillars of Hong Kong’s civil society.

The Brits who held sway here over the years, and the Royal Family they served, live on in the names of roads, buildings, hospitals, schools and parks. Hong Kong Island and Kowloon were particularly anglicised. Queen Victoria’s reign coincided with the rise of British Hong Kong, and her name features strongly. The (substantial) walk along Queen’s Road, from Wan Chai (Queen’s Road East) to Sai Ying Pun (Queen’s Road West) traverses the heart of the city. Also named after her were Hong Kong’s largest urban park, its magnificent harbour, its most famous peak, numerous other streets, and even a prison.

Governors left their mark too – Kowloon’s iconic Nathan Road was named after the governor who laid it out. Two of Hong Kong’s most popular hiking trails,Maclehose and Wilson, were named after later governors. During your stay, make the detour to this spot alongside Causeway Bay Typhoon Shelter. Every day at noon, a small battery gun is fired by a representative of Jardine Matheson, one of the earliest British hongs.

Though sailors no longer set their chronometers by it, you can witness a small but iconic slice of the pomp and ceremony that rang through the British Empire. Ding Ding and Double-decker bus. Hong Kong’s beloved ding ding (tram) still serves Hong Kong Island’s commuters, as it has since 1904 when the tram cars were made in England and shipped to Hong Kong. The tram’s leisurely pace offers relaxed sightseeing of the colourful sights and sounds of the streets of Hong Kong.

Double-decker buses are ubiquitous, with around 5000 of them operating in the city, almost all comfortably airconditioned. Perhaps take a Big Bus tour to one of several well-known tourist landmarks. Colonial buildings add a distinctive architectural flavour amidst all the modern skyscrapers. A number of these historic buildings have been preserved. A colonial building tour of Central and Sheung Wan can include St John’s Cathedral, Hong Kong’s earliest church, the Court of Final Appeals Building, the Former French Mission Building, Flag Staff House – now the Museum of Tea Ware, and the Dr Sun Yat Sen Museum, among many others. Notably, the University of Hong Kong is home to many beautiful colonial buildings. Finally, visit Murray House in Stanley, a magnificent building that was once an officers’quarters in Central relocated to Stanley and rebuilt, stone by stone. Refined Cantonese and Shanghainese dining is the focus of our culinary adventure this month. 本月《東方之珠》的美食探索之旅主題是以精細著名的粵菜和上海菜。

e’ve long wanted to try Celebrity Cuisine, a Michelin-starred Cantonese restaurant tucked away in Central. So, we jumped at the chance when it came. Helmed by leading chef and restaurateur Cheng Kam Fu, who learned his culinary skills as a private chef to one of Hong Kong’s tycoons, the restaurant has garnered widespread accolades for its innovative Cantonese dishes.

The restaurant is well appointed and designed for privacy and comfort, with friendly and attentive service.

Chef Fu is highly selective in his ingredients and in the way the dishes are prepared, personally picking out meats and produce from wet markets and insisting on how they are sliced or cut.

The set menu has two options: a basic set for $488 per person, and a more elaborate version for $688 per person. Both, we thought, are quite reasonably priced considered the quality of the ingredients served.

For our tasting, we chose the higher-priced one, of course,

We started with Double-boiled Pig Lungs and Almond Soup. Don’t let the name put you off – that soup is delicious and tastes velvety smooth and yummy.

Bird’s Nest Stuffed in Chicken Wing is next, which is one of Chef Fu’s specialties. Bird’s nest is an expensive ingredient highly prized by the Chinese for its health benefits. For this dish, a generous portion of bird’s nest is stuffed into a large chicken wing, which then is seasoned and deep fried. The chicken wing is crispy, yet the bird’s nest retains its moisture and flavour.

Chef Fu was kind enough to showcase another of his signature dishes not in the set menu – Sautéed Pig’s Tripe with Bitter Melon ($280). We were told only the tip of each pig’s tripe is used for this dish, so a few pigs are sacrificed for this delicacy – and the meat taste crunchily chewy, which is quite a feat.

Lobster with Supreme Broth was next – succulent lobster meat still in the shell seasoned with sweetly flavoured broth, and baked. That was followed by Abalone with Goose’s Web. This is a real treat for abalone connoisseurs; the dried abalone comes from Japan, which generally produces the finest abalone for gourmet consumption. We were impressed by the high quality of the ingredients used.

Our last main was Steamed Giant Grouper Home Cooking Style, which is always the zenith of a Cantonese meal – tender but firm meat steamed just right with the sauce adding the perfect flavour.

Chef Fu treated us to another signature dish, the classic Sweet and Sour Pork ($180), which we consider one of the best Sweet and Sour Pork dish in the city – the secret lies in the pork being sliced rather than cubed, coated with succulent batter, and perfectly fried.

We wrapped up our meal with Special Fried Rice, which is exquisitely fried, and the Red Dates Tea with De-yolked Egg and Root of Silvereed Cinquefoil, by which time we were completely sated.

Our visit to Celebrity Cuisine fully lived up to our expectation of a truly special gourmet meal. Make it yours as well – and be sure to book in advance.■

名人坊高級粵菜隱藏於中環蘭桂坊酒店內，很久之前我們就想造訪這間米 其林星級餐廳了，難得本月可一嚐滋味，我們當然不會錯過這個機會。

名人坊的老闆及行政總廚鄭錦富以前是一位香港商業大亨的私廚，練就了一身好 本領，因此餐廳創意十足的高級粵菜多年來獲獎無數，口碑載道。

餐廳設施齊全，隱私度高，溫馨舒適，服務更是細緻殷勤。富哥對食材和烹 飪方法要求十分嚴格，每天親自到市場挑選新鮮食材，對於肉類的切法也有特定 要求。 名人坊十週年誌慶套餐有兩款選擇：雙龍薈（每位$488）及菜式更豐富的龍 鳳配（每位$688），基於兩個套餐的高質素食材，實屬物超所值。而我們這次則 選擇了價格較高的龍鳳配套餐。 首先登場的是杏汁燉白肺湯，別被名字嚇到，湯底口感順滑，清甜美味。下 一道菜是燕窩釀鳳翼，這是富哥自創的菜式之一。眾所周知，中國人認為燕窩對 健康大有裨益，因此價格十分昂貴。富哥將份量十足的燕窩釀入雞翼中，經過調 味和油炸，雞皮香脆，而裡面的燕窩的水分卻沒有流失，十分美味。 熱情的富哥為我們推介了另一道套餐上沒有的拿手好菜—涼瓜青炒肚尖 （$280），師傅說每隻豬的豬肚尖只有很小一部分，因此製作這道菜式需要用上 好幾隻豬，難怪肉質如此爽滑，令人垂涎。 緊接着的菜式是上湯 焗 開邊龍蝦，龍蝦以帶甜味的醬汁焗製，肉質鮮嫩多 汁。 喜歡吃鮑魚的話別錯過鵝掌扣鮑魚，師傅選用了優質日本干鮑，食材質素之 高實在令我們驚訝。 最後一道主菜是巧手海上鮮，海鮮向來是粵菜之精粹。魚肉結實而嫩滑，火 候恰到好處，醬汁更是將魚肉的味道提升了一個層次。 此時富哥再為我們加了一道香脆咕嚕肉（$180），這同樣是名人坊的招牌菜 式，被認為是城中最好的咕嚕肉。富哥說，其它廚師大多會將咕嚕肉切成塊狀， 但這道菜的秘訣在於將咕嚕肉切片，外層裹上生粉，炸至金黃色即可。 最後，乾爽美味的富哥招牌炒飯為這頓午餐畫上圓滿句號，而是日精選甜品 則是名人蛋人參果紅棗茶，我們大呼滿足。 名人坊高級粵菜名不虛傳，絕對不枉此行，記得提前預訂。■

ie Fei Society, located in Central just steps away from Lan Kwai Fong, serves refined Shanghainese cuisine. In the late 1940s the city saw a large influx of refugees from Shanghai escaping the civil war, many of them rich merchants and industrialists who brought with them the Shanghainese food culture. Thus, the cuisine became a staple of the city’s preferred dining choices. Over the years, Hong Kong’s Shanghainese food gently shifted towards the local palate, favouring lighter and subtler flavours. This transformation is evident at Xie Fei, where the dishes are prepared under the guidance of Consultant Chef Zhou Yuan Chang using his nouveau cuisine style, incorporating healthy ingredients and traditional Shanghainese methods.

A trio of main dishes followed: Stir-fried River Shrimp ($238) – another classic dish that looks simple but requires just the right degree of stirfrying to bring out the tender texture of the shrimp; Braised Sea Cucumber with Spring Onion ($358) – a signature delicacy in which the braising softens the sea cucumber texture; and the highly anticipated Braised Abalone with Pork Belly in Brown Sauce ($238 per person) – the large Australian abalone chews easily and succulently in the sauce.

The spacious restaurant’s décor is modern and comfortable, featuring a large public dining area with tables and benches decked in crisp table cloths and several private rooms.

Before desserts we ended our meal with two dim sum dishes: Xia Fei Steamed Shanghai Minced Pork Dumpling or xiao long bao ($60/ 4 pieces), and Turnip Pastry with Conpoy ($54/ 3 pieces).

That popular pork dumpling provides just the small carbo rush to complete the meal.

We began our meal with several classic Shanghainese appetisers: Marinated Cucumber in Homemade Sauce ($78), Marinated Pigeon in Chinese Yellow Wine ($148), and Shredded Crispy Eel in Sweet Ginger Sauce & Chinese Yellow Wine ($138) – all of which were refreshingly tasty and traditional. We noted the typical Shanghainese use of sugar and Chinese plum or yellow wines for seasoning.

Stir-fried Sweet Bean with Ham Cube ($188) was served next – the pea taste pleasantly sweet and the ham cube complementing the flavour well.

Another familiar dish – Salted & Fresh Pork Soup with Bamboo Shoot & Tofu Skin in Casserole ($248) followed; soup casserole is a staple of Shanghainese cuisine, with a savoury taste that nicely contrasts with the lighter appetisers.

For our last main, we tried something different – Sichuan Stir-fried Diced Chicken with Dried Red Chilli ($238), one of the best-known Sichuan dishes and one of our favourites. The chicken pieces are tender and yummy, with the spicy ma-la flavour adding that extra zest to the meat.

But we do have a sweet tooth for Shanghainese desserts and made room for three: Pan-fried Mini Glutinous Rice with Lotus Paste, Dried Grape, Longan and Lotus Seed ($108), Red Bean Paste Pancake ($58) and Mini Glutinous Rice Balls in Osmanthus Sweet Wine Soup ($42/person).

The ifc mall, one of Hong Kong’s premier shopping destinations, has always been discerning in its choice of tenants. Dear Lilly, located on the mall’s podium floor, fits right in. The striking décor of the restaurant – a romantic floral theme setting designed by Australian interior designer Ashley Sutton, certainly catches the attention. We sampled Green Fairy ($118), a refreshing rum-based beverage featuring yuzu, pineapple, coconut water and basil; Mad Enchantment ($128), a fruity and limey Swizzled Père Magloire VSOP Calvados and Lillet Rouge; and Orient Express ($138), Glenmorangie Whiskey, Dubonnet, Aperol with mandarin bitters.

The signature dishes we sampled included a nicely appointed Mezze Platter, ($178); Slow Cooked Octopus, Roasted Pepper Salsa, Seaweed Hummus, Rocket; Curly Kale Salad, Quinoa, Dry Seeds, Red Radish, Orange Vinaigrette ($128); French Cornfed Chicken ($168); Puttanesca Pappardelle Olives, Capers, Anchovies, Olive Oil, Parmesan ($188); and for desserts, Berriolette Dome, Chocolate Streusel, Berries, Fluid Gel ($78); and Apple Yuzu Cremeux, Hibiscus and Passion Mint ($78).

10 Shanghai 十里洋場

10 Shanghai, located in the trendy Lee Gardens mall in Causeway Bay, is a welcome new addition to the local dining scene. This large and spacious restaurant specialises in Huaiyang cuisine, which encompasses cooking styles from Jiangsu, Zhejiang and Shanghai, along the Yangtze River, and is known for meticulous preparation and refined presentation of its dishes. That is amply demonstrated at 10 Shanghai, an elegantly decorated restaurant featuring Chinese-style setting with a contemporary touch; we especially like the classical moon-gate design that frames the dining area.

We sampled a slate of the restaurant’s signature dishes. Our cold starters were: Aged Shaoxing Huadiao-brined Chicken ($88), Sliced Crunchy Cucumber Served with Sesame Sauce ($68), and Smoked Soft-boiled Eggs with Black Truffle Pearl ($48/2 pieces). The hot dishes include Dongpo’s Pork Pagoda with Dried Shanghainese Cabbage ($238), served with Chinese pancakes – a real visual gem; Crispy Lobster Pastry & Silky Turnip ($168/2 pieces); Pan-fried Xiao Long Bao ($60/4 pieces) – an original and delicious rendition; and Scallion Oil Noodle with Abalone ($98/person). We added Jiangsu River Shrimp sautéed with Crab Roe ($298), a classic Shanghainese dish, and for dessert, Glutinous Dumplings in Fermented Rice Soup ($42/person) to our sampling to round out a most satisfying meal.

Serving excellent food at reasonable prices, 10 Shanghai more than met our expectations. Be sure to give it a try.

The treatment starts with cleansing of the face, then with further extraction and bacterial disinfection, plus a Diamond Microdermabration treatment. Then the skin flakes are vacuumed away, followed by applications to the face Bright Skin Masque and Lotus Detoxifying Overnight Treatment. The resultant is immediate as the skin feels much smoother and firmer.

We were pleasantly surprised to find that the effects of the skin treatment lasted quite a few days, a testament to its pedigree and efficacy. Face Spa offers reasonable prices for such personalised treatments, and rates as one of the best non-hotel associated spas. It’s a worthy choice to relax and treat yourself after a busy and stressful day. ‘So long as they are wild’ by Catherine Opie at Lehmann Maupin 17 May—7 Jul. Lehmann Maupin presents So long as they are wild, a solo exhibition of recent work by Catherine Opie. For the Los Angeles-based artist’s first solo exhibition in Hong Kong, Opie will present a series of photographs shot in one of the United States’ most revered and naturally beautiful locations, Yosemite National Park in California. Opie is known for her ability to create photographs that unite contemporary themes and issues with a classical aesthetic that expands upon her exploration of the tradition of photography as well as the greater art historical canon. ‘So Near Yet So Far’ by NI Youyu at Perrotin May 24–Jul 14. This is the first solo exhibition of the Chinese artist NI Youyu in Hong Kong. Showcasing 12 pieces, the exhibition gives a comprehensive view of the artist’s diverse creations. Ni Youyu’s practice does not apply demarcation to antiquity and modernity, nor does it concern itself with the task of reinventing paradigms. This principle is grounded in Ni’s studies at the Fine Arts College of Shanghai University, where he specialized in Chinese paintings. ‘Play Around the World’ by Florentijns Hofman at Whitestone Gallery May 25 - Jul 1. Best known for large scale urban installations like Rubber Duck (2007) and Hippopo Thames (2014), this is Hofman’s first solo presentation in an Asian gallery space. Hofman will debut a new series of works Inspired by Line, his line drawings, and Play around the World, re-scaled ceramic sculptures from his previous much-loved public installations. Since 2009, a group of teachers and students at the Hong Kong Institute of Vocational Education (IVE) have been developing a series of solar cars named SOPHIE in Hong Kong. Their aim is to develop a greener vehicle that can convert renewable solar energy into electricity more efficiently for use. The SOPHIE team and their fourth-generation solar car, SOPHIE IV, participated in the "World Solar Challenge" in 2013 for the first time and was the third runner-up in the 3,000-kilometre race from Darwin in the Northern Territory of Australia to Adelaide in South Australia. In 2015, SOPHIE IV became the first solar car to run on a highway in Hong Kong. In addition to displaying the fourth-generation SOPHIE, through video programmes, physical parts and interactive exhibits, this exhibition provides a comprehensive overview of the applications of various technologies in solar cars and car body design. 2/F Exhibition Hall, Hong Kong

Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun - Centre for Heritage and Arts. The CPS compound comprises16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The first phase of opening includes 11 heritage buildings, the new art galleries and auditorium, and the Parade Ground and Prison Yard. With the aid of interesting hands-on exhibits and advanced equipment coupled with lighting effects and environmental decorations, the exhibition introduces astronomy and space science in a vivid approach. GENERAL MANAGER Duncan Palmer, Managing Director of The Murray, Hong Kong, a Niccolo Hotel, shares his thoughts on his career and the new luxury hotel he now manages.

The Murray, Hong Kong, a Niccolo Hotel 的董事總經理彭德勤與 我們分享他的職業生涯，以及他現正管理的全新豪華酒店。 I am an Englishman and grew up as one of five children. We travelled a lot and, when staying at hotels, I quite enjoyed the breakfast and all that fancy silverware and thought what a life that would be. I was educated at Cambridge and then London, after which I decided to join the hotel industry as a career, where I have worked ever since.

All my experiences have been with luxury hotels. I first worked in London, then Dubai, before joining the Mandarin Oriental in Hong Kong to help open the Excelsior. This was followed by stints in Macau, Manila, Bangkok and Jakarta.

Then I returned to the UK, worked for the Savoy group managing the iconic Connaught. I then joined Great Eagle Group, managed the Langham in London, the Langham in Hong Kong, was responsible for planning of several Langham hotels across the world, went back to London again before I was appointed by the Wharf Group in 2016 to help develop and manage The Murray.

The Murray is best described as a contemporary, chic hotel – with an air of sophistication, serving the very top of luxury hotel market. We are a standalone luxury hotel located in the heart of Central with five bars and restaurants that act as one of the social gathering places for the community.

The Murray enjoys a distinguished architectural heritage. As part of our redevelopment, we took advantage of the high ceilings and opened up the public spaces. We created very large windows, each measuring 1.9 by 1.8 metres, which complement very well the 45-degree angled façade of the building. Each room has two of these windows, offering spectacular views of parks, green hills and open space. The result is a distinctive luxury hotel and a building that we are proud of, a tribute to the community from our Chairman. We want a stay at the Murray to be a truly special experience for our guests.

My favourite part of the job is to be part of this team which aims to make Murray an iconic hotel not only in Hong Kong, but the world, and I have the responsibility to make it happen. I enjoy it when I get good comments from guests on what we’ve done.

A good general manager needs to be able to articulate to colleagues a common vision for the hotel and provide clear guidelines as to how to achieve it. It’s like climbing the Matterhorn, where you need an approach plan and for everybody to know their roles and be 100 percent engaged to drive towards that singular mission.

Hong Kong is an exciting city. I like the speed of things and the energy of Hong Kong people. It’s easy to get around – the public transport is great. Best yet, we have this wonderful combination of city, green hills and water.

My recommendations for visitors to Hong Kong: 1. Put on your walking shoes and explore Hong Kong’s hills, beaches and outdoors.

2. Get on the water – take a ferry or get on a boat 3. Enjoy Hong Kong’s epicurean delights – we have great dim sum and afternoon tea, and more.

The Murray 是一間現代、別緻的酒店，處處散發出高雅氣息，市場定位是 提供頂級服務的豪華酒店。The Murray 是一間獨立豪華酒店，位於中環核心地 帶。酒店內設有五間酒吧和餐廳，為顧客提供社交聚會場所。 The Murray 是一幢傑出的建築遺產。作為重建計劃的一部分，我們充分利 用了建築物的高樓底和公共空間。我們設計了超大窗戶，每扇窗都有1.9乘1.8 米，和大廈表面呈45度角。酒店每個房間都有兩扇這樣的窗戶，可遠眺公園和 青山，景觀開陽。這是一間出色的豪華酒店，一幢令我們感到驕傲的建築物， 也是我們的主席獻給社區的禮物。我們希望為下榻 The Murray 的顧客提供真正 獨特的體驗。 我喜歡這份工作因為我是團隊的一份子。我們的目標是令 The Murray 成為 一間標誌性酒店，不只是在香港，而是在全世界，我有責任實現這個目標。當 顧客對我們的工作表示讚許的時候，我感到十分開心。 一位好的總經理需要有能力向同事傳達我們對酒店的共同願景，以及對執 行方法提供清晰的指引。就像攀登马特洪峰，你需要有一個清晰的戰略，每個 人都清楚自己的角色，朝着同一目標投入百分百的努力。 香港是一個令人興奮的城市。我很喜歡這裡的快節奏和香港人的能量。香 港的公共交通十分發達，去哪裡都很方便。這裡有着大都市的繁榮，也有令人 神往的青山綠水。 我給訪港遊客的建議：

1. 穿上運動鞋，探索香港的高山、海灘及豐富的戶外活動。 2. 乘搭渡輪或小船，體驗香港海上交通 3. 享受香港豐富的美食，這裡有美味的點心、下午茶等等。
