December in Hong Kong is a joyful time as the city prepares to celebrate Christmas and welcome in the new year, and it does so with gusto and a festive spirit second to none. There is just so much to do before, during and after Christmas, whether it’s shopping, decorating, celebrating or worshipping. Please check our cover story on page 12 for a holiday countdown to 2018, Hong Kong–style, which details a host of the festive activities on offer, including light shows, glittering decorative displays, and a fireworks spectacular on New Year’s Eve. Hong Kong’s urban development has been mostly organic, driven by economic changes and market forces, such as in the continual transformation of neighbourhoods around the city. It’s one more aspect that makes Hong Kong such a fascinating and idiosyncratic place to visit. One ongoing transformation that is the local buzz is in Western District: the areas of Kennedy Town, Sai Ying Pun and Shek Tong Tsui. Our feature story on page 22 recommends a walking tour of the locality that promises to be fun and informative – be sure to give it a try! One of three marquee sporting events taking centre stage over successive weekends – between the Hong Kong Golf Open and International Races at Sha Tin – is the 2017 FIA Formula E Hong Kong E-Prix. The environmentally friendly electric cars were a huge hit with motor-race starved fans in Hong Kong last year. Following up on its inaugural success, the second edition is double pleasure as two separate races will be held over two days – a treat indeed for motorsport fans. The 52nd Hong Kong Brands and Products Expo, one of the city’s oldest and largest outdoor expos, returns for yet another year. The expo, in a run of more than three weeks, is expected to attract large crowds checking out hundreds of brands and products of all kinds. It’s also a great opportunity to find an original souvenir to take home with you. Thronging crowds are also expected at the 15th Hong Kong Food Festival. This highly popular consumer show draws food lovers of all types, with eight themed zones showcasing food cultures from all around the world. There are, of course, still so many more activities on tap for you to explore and participate in during December – from ballet and opera performances to districthopping to take in the general festive atmosphere of the city. 2017 FIA Formula E Hong Kong E-Prix

In June 2017, FIA confirmed Hong Kong’s status as the first-in-Asia host of a double-header electric motor race. Two separate and distinct races will be staged on 2 and 3 December respectively, complete with daily podium finishes in the Tamar Park E-Village. Each day in the Formula E Hong Kong E-Prix will consist of practice and qualifying sessions, as well as a superpole and the race itself.

Hong Kong International Races (Horse Racing)

Revamped ‘A Symphony of Lights’ and ‘Hong Kong Pulse Light Show’

Victoria Harbour comes to life with a double dose of spectacular light shows headlined by a new makeover of the iconic 'A Symphony of Lights'. 毛澤東時代的醫療狀況 During the turmoil of the years of the Japanese war and the subsequent Civil War, doctors were at a premium. The shortage continued throughout the years of the internal upheavals of the Great Leap Forward and the Cultural Revolution. How did the Chinese cope?

t was rare for foreigners to embrace the concept of Communism and put their lives at risk to serve it. One person who did was Dr. Henry Norman Bethune a Canadian physician. Born in 1890 he had served in the First World War and later in the Spanish Civil War. In January 1938 Bethune travelled to Yan’an in Shanxi province in China. There he joined the Chinese Communists led by Mao Zedong. He treated sick villagers as often as wounded soldiers. But Bethune’s service in China came to an early end after he cut his finger while operating on a soldier. Probably due to his weakened state, he contracted septicaemia (blood poisoning) and died on 12 November 1939. His selfless commitment to the Chinese people made such an impression on Mao Zedong that generations of Chinese students were required to memorise the Chairman's eulogy to him:

Comrade Bethune's spirit, his utter devotion to others without any thought of self, was shown in his great sense of responsibility in his work and his great warm-heartedness towards all comrades and the people. Every Communist must learn from him. ... We must all learn the spirit of absolute selflessness from him. With this spirit everyone can be

very useful to the people. A man's ability may be great or small, but if he has this spirit, he is already noble-minded and pure, a man of moral integrity and above vulgar interests, a man who is of value to the people. He became lauded as a hero of the revolution and statues, figurines and other artefacts bearing his likeness became common; all aiming to inspire selflessness in the younger generation. After 1949, when the Communists achieved power, there were a number of purges. One of these was against intellectuals and amongst those who met their end at this time were no doubt a number of doctors. Certainly in the chaos of the Great Leap Forward there was a severe shortage of doctors, particularly those prepared to work in the villages. The idea of the Barefoot Doctor was conceived and was promoted by the Party. They were farmers who received minimal basic medical and paramedical training and worked in rural villages. Their purpose was to bring health care to rural areas where urban-trained doctors would not settle. They promoted basic hygiene, preventive health care, and family planning and treated common illnesses. The name comes from southern farmers, who would often work barefoot in the rice paddies.

The barefoot doctors usually graduated from secondary school and then received about six months of training at a county or community hospital, though training length varied from a few months to one and a half years. Training was focused on epidemic disease prevention and curing simple ailments that were common in the specific area. Barefoot doctors acted as primary healthcare providers at the grass-roots level. They were given a set of medicines, both Western and Chinese, that they would dispense. Often they grew their own herbs in the backyard. As Mao had called for, they tried to integrate both Western and Chinese medicine, like acupuncture and moxibustion. An important feature was that they were still involved in farm work, often spending as much as 50 percent of their time on this – this meant that the rural farmers perceived them as peers and respected their advice more. They were integrated into a system where they could refer seriously ill people to township and county hospitals. Whilst their effectiveness is difficult to assess, they certainly provided great benefits to the farmers. They were lauded in the propaganda literature of the time and

are sometimes depicted as a glamorous profession. More realistic is the attire included in a contemporary pattern book. The one thing they all had in common was a leather bag with a red cross in which they carried their supplies of medicine and so on. Finally, after the death of Mao, China became a more peaceful society where the professions could flourish and medical care improved. The change marked the end of the system although many of the village doctors currently practicing in rural China began their training as barefoot doctors. This includes Chen Zhu, China’s former Minister of Health, who practiced as a barefoot doctor for five years before going on to receive additional training. The barefoot doctor system was abolished in 1981 with the end of the commune system of agricultural cooperatives. The methods of providing medical care evolved but while the new programme relies heavily on lessons learned from the times of the barefoot doctors, it still faces many challenges in providing sufficient, cost-effective care for China’s rural populations. Nevertheless enormous progress has been made since Mao’s time. ■

t is remarkable that Gradini, the restaurant at elegant boutique hotel ‘the Pottinger’, which opened in 2014, has already garnered effusive praise as one of the better Italian restaurants around. Located at the corner of Queen’s Road Central and Pottinger Street in the heart of Central, the décor of both the restaurant and the hotel reflect the location’s heritage of East-meet-West, with an intimate, old-world charm. Under locally born chef Cano Chan, who learned his trade under several famed Italian master-chefs, Gradini serves modern Italian cuisine in which Chef Chan re-interprets classic home-made dishes inspired by the location’s heritage. Meticulously prepared, the food reflects Chef Chan’s philosophy of making sure every dish stimulates the taste, smell and the vision of the guest by using the freshest ingredients and presenting them artistically. Our lunch began with Grigliata di polpo con spinaci balsamico e olio di olive ($158), which is grilled Mediterranean octopus and citrus salad on a bed of hand-picked baby spinach leaves. The octopus is firm but tender to the bite, its citrus seasoning smartly accenting the flavour. Our soup was a delightful surprise, the Crema di funghi porcini alla Toscana ($98) which is foamed porcini mushroom cappuccino. The flavour of the prized porcini mushroom permeates, and the soup tastes rich and creamy smooth.

We were ready for our main courses. First was Slow cooked wagyu braised beef cheeks (Main course of Set Dinner-3 course $588) in which the beef is slowed cooked for 8 hours, and is accompanied with truffled potatoes and seasonal organic vegetables. The meat is so flavourful and practically melts in your mouth. Next was one of Gradini’s signature dishes, Branzino al sale con erbe aromatiche ($468), ovenbaked whole Italian seabass with fresh herbs under a salt crust. After the dish is presented in whole, the layer of salt is removed and the fish deboned, ready to be savoured. The salt covering helps keep the fillet tender. Our third main course was Tagliolini freschi e astice ($388), homemade tagliolini with Maine lobster, fresh tomato and basil. This dish is tried and true, and the lobster goes perfectly with the tomato based pasta. We sampled two desserts: Classico tiramisu del pasticcere ($88), with layers of Savoiardi biscuit flavoured with espresso and Amaretto topped with mascarpone cream and cacao, in which the chocolate flavour adds an extra kick, and Gai daan jai ($98), egg waffles with mixed berries and Hong Kong milk tea gelato, which is a great fusion concoction utilising Hong Kong’s famous egg waffles, Italian style. These desserts are a grand way to wrap up a delightful meal. We recommend you take loved ones or family for an intimate gourmet dinner at Gradinis – it’ll likely be the highlight of your culinary experience in Hong Kong. ■

ugo’s, the venerable restaurant at the Hyatt Regency, has long been one of our favourites, even before it relocated to its current location in the K11 building. Back when Hong Kong’s fine dining scene was more limited, Hugo’s was a popular gathering place for the city’s business and political elite, a reputation it maintains to this day. The hotel’s décor retains much of the old restaurant’s ambience, with French artefacts accenting the rich, dark wood beams and walls. Deep-coloured, leather-upholstered sofas offer an inviting retreat for intimate conversation and eating. We chose lunch at Hugo’s as our tasting journey, but many of the signature dishes that we sampled are also available at dinner. Hugo’s lunch is famous for its trolley-served appetiser and desserts selections, a rarity in the city these days. The array of appetiser and dessert dishes are served table-side in elegantly remodelled walnut Christofle Hors d’oeuvres trolleys from the 1960s. in fact, Hugo’s serving of many of its signature dishes table-side is a distinct feature of the impeccable service, harkening back to a bygone era of luxurious fine dining. The selection of appetisers is positively daunting, despite that the chef rings the changes every day. However, the signature ones – like Mango and Shrimp Salad; Parma Ham and Melon; Home Marinated Dill Smoked Salmon with Lemon; and Sardines and Chicken Terrine – are usually in the line-up. By our count, the doublelayer trolley holds 18 plates, so it manages to deliver as many choices as regular appetisers, but

with the added convenience of not having to walk back and forth. We added another signature soup, the Lobster Bisque ($228) to our tasting. The soup is served and flamed table-side and prepared the traditional way and it tastes just the way we like it – rich, creamy and yummy. It’s sinfully easy to over-indulge on the delicious appetisers, but luckily we were forewarned and kept ourselves in check, ready for some of Hugo’s signature mains. We chose the Roasted US Rib of Beef ($540, lunch) served with potatoes and a French Popover; the meat is tender and flavourful. We also chose the Confit Challandais Duck Leg, Honey Lavender Glaze ($405, lunch) with baby fennel, roasted peach and duck jus, which is another favourite among regulars. Two other mains completed our selection: Pan Fried European Trout ($405, lunch) and Catch of the Day ($405, lunch), which was the seabass. The set lunch, which includes the appetisers, a main course and desserts, is priced from $385 to $540, depending on the selection of the main, which we consider eminently reasonable value. We ended our lunch with the return of the trolley, this time loaded with superb desserts and fruit selections, including Mont Blanc Tart, Strawberry Cheese Cake, Grand Chocolate Cake, and German Hazel Nut Cake, to name but a few. Think up an excuse – any excuse – to treat yourself and your loved one to a special, intimate dinner at Hugo’s. It is not to be missed.■

餐廳基本保留了舊店的裝潢，放置了各式古董擺設，為餐廳添上獨特經典的光芒。餐廳採用深色皮質軟沙發，舒適高雅，適合追求隱私度的人在此享用美饌。這次我們選擇在希戈餐廳享用午餐，但許多招牌菜式在夜晚同樣可以吃到。希戈餐廳設有兩輛餐車，是由胡桃木重新塑造的法國餐具殿堂級品牌 Christofle 的六十年代餐車，用以盛載頭盤和甜品。侍應在桌旁為食客作介紹，這種方式如今已十分罕見。其實這裡的多道招牌菜都是席前調製，是希戈餐廳的一大特色，食客可享受到傳統、奢華的餐飲體驗。頭盤的種類多得令人眼花繚亂，廚師每天會推出不同款式。然而餐廳的招牌頭盤從不缺席，包括：芒果鮮蝦沙律、帕爾瑪火腿配香瓜、自家醃製刁草三文魚配檸檬、沙甸魚和雞肉凍批。我們隨意數了一下，雙層的餐車裝了18 碟頭盤，品種不比一般自助頭盤少，但食客不需要走來走去，十分方便。我們還點了這裡的招牌龍蝦湯（$228），廚師在席前以火焰烹調，做法傳統，口感濃稠柔滑，味道一流。因為頭盤實在太美味，很容易就會吃多，幸好我們聽從建議，控制住了自己。頭盤方面，我們選擇了燒美國牛肋骨肉（套餐價格$540），配上馬鈴薯和法式酥餅，牛肉十分嫩滑美味，令人回味無窮。另一道主菜是油封法國鴨腿（套餐價格$405），伴有蜜糖薰衣草、茴香、燒蜜桃和鴨肉汁，同樣是一道大受歡迎的菜式。另外兩道主菜分別是香煎歐洲多寶魚（套餐價格$405）和精選鮮魚（套餐價格$405），而當天的精選鮮魚是鱸魚。午市套餐包括頭盤、一道主菜和甜品，不同主菜價格由 $385 至 $540 不等，絕對物超所值。餐車再次回到桌旁，甜品時間到了！琳瑯滿目的甜品和水果包括：法式栗子撻、草莓芝士蛋糕、黑白朱古力蛋糕和德國榛子蛋糕等。如果不是什麼特別日子，就隨便找個藉口，和摯愛到此享用一頓特別的晚餐吧。希戈餐廳絕對不會令您失望。■ DECEMBER 2017

Hung Tong 紅糖 The newly opened Kerry Hotel on the waterfront of Hung Hom is already the talk of the town. Its Chinese restaurant Hung Tong has also garnered its share of praise. The expansive restaurant, located on the 7th floor of the hotel, commands a panoramic view of the harbour. Its décor, a rustic urban setting featuring a red brick pavilion, pays tribute to the Hung Hom’s heritage as a centre of trade. Under Chef Ken Yu, Hung Tong serves traditional and refined Cantonese cuisine using locally sourced ingredients. Hung Tong offers a sumptuous dim sum lunch featuring both classic favourites and innovative dishes. The dim sum dishes sampled include: Deep-fried Crispy Tofu with Spiced Salt ($68), Steamed Scallop and Shrimp Dumplings with Asparagus($88), Steamed Wild Mushroom and Chicken Dumplings with Black Truffle ($58), Steamed Wild Mushroom and Chicken Dumplings with Black Truffle($58), Marinated Jellyfish and Greenhouse Cucumber with Vinegar ($88). We also tried several sharing dishes that include the coveted Barbecued Prime Iberico Pork with Maple Syrup ($288), Grilled Eel Tossed with Osmanthus Honey Sauce ($170), Stir-fried Rice Vermicelli with Barbecued Pork and Shrimps ($168), and Soup of the Day ($288) which is always a Cantonese favourite.

25 Nov 2017-13 Jan 2018. This is the second exhibition for Hans Hartung titled Abstraction: A Human Language at de Sarthe Gallery. The exhibition will survey a selection of works from the 40s to the very end of his life in the 80s. As early as 1945 Hans Hartung was regarded as one of the most important abstract expressionists. He was invited to the first Documenta at Kassel, in 1955, was awarded the International Prize at the Venice Biennale in 1960 and had a major exhibition of his paintings in 1975 at the Metropolitan Museum of Art in New York. Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Initial stored value cost per card varies: Child (HK$20), Adult (HK$100), and Senior (HK$20). Simply place the card on the Octopus pad and the fare is automatically deducted. We talked to Adam Hipp, General Manager of Novotel Century Hong Kong, about his career in the hospitality industry 香港諾富特世紀酒店總經理聶毅向《東方之珠》講述他在酒店業的生涯。

我在匈牙利的布達佩斯長大。我的父母都並非從事酒店業，但他們的朋友中有從事酒店業的人。我從14歲開始在餐廳工作，負責洗碗碟和翻烙餅。後來我在一所職業學校上學，之後去了布達佩斯的一個酒店學院。我還在美國科羅拉多州的度假村 Broadmoor 待過一段時間，這是我的課程的一部分。我非常喜歡在那裡工作，於是我決定加入酒店業。我一開始是在布達佩斯的洲際酒店工作，之後加入了 AccorHotels 集團。我在匈牙利工作了八年，當他們問我想不想到國外工作時，我想到雖然我已經結婚，但還沒有小孩，完全可以到國外體驗一番，於是就報名了。

I grew up in Budapest in Hungary. My parents were not hoteliers, but I was around their friends who were. I started working at a restaurant at 14, washing dishes and flipping pancakes. I went to a vocational school, then a hotel college in Budapest. I spent some time in the U.S. at the Broadmoor in Colorado, as part of my study. I really liked it and decided to work in the hotel industry as a career. I started working for the Intercontinental in Budapest. I then joined the Accor Hotel Group, working in Hungary for eight years and when asked if we wanted to work abroad, I put my name up since I was married but did not have any children, and we wanted to explore abroad. A job opened in Hong Kong and my profile fitted the requirements. So for three years I managed IBIS here. Then I had three years in Shenzhen, and now back to Hong Kong to take on my current position, my fifth GM role. I am proud of the renovations we undertook at this hotel. We completely redid the rooms which went smoothly. We’ve just finished the lobby which now has a more open, natural feel for a new arrival experience. The lobby design took its inspiration from Hong Kong’s beautiful parks and outdoors. Many visitors are surprised that Hong Kong is mostly green and has great outdoors. Novotel is a full-service hotel and our location is excellent as Wanchai is in the middle of Hong Kong Island. The infrastructure is excellent and it’s super easy to go everywhere. The Convention Centre is also close by, so we are an ideal business hotel, but lots of leisure visitors like to stay with us too. And since we’ve been here for over 25 years we have great knowledge of the market and understand the needs of our guests very well. Many good things are happening in the city as it transitions from being a shopping paradise to a centre for large events. The Wine and Dine Festival and the Formula E are examples that come to mind. This can only be good for the city and the hotel industry. Social media and the internet have really changed the hotel industry – everything is much more transparent. Feedback from the travel website and social media is an integral part of our daily job. We also use a Whatsapp group for internal communication which I find highly convenient. I believe the key to being a good general manager is the ability to communicate effectively with your colleagues, especially in a multicultural environment with team members from different countries and backgrounds. Hong Kong is an amazing city. What goes unnoticed is just how safe it is, something that I really appreciate. And, of course, there are so many things to do here, especially, as I mentioned, increasing numbers of events. My recommendations for visitors are: visit a dai pai dong or cooked food market and try the excellent food; take the Star Ferry to view the beautiful harbour, and finally, go on a hike along the Dragon’s Back or walk around the Peak Circle and you’ll appreciate just how pretty and green the city is.

後來我看到香港有一個空缺的職位，我也符合他們的條件。於是我在香港宜必思酒店工作了三年，之後又在深圳工作了三年，如今又回到香港，擔任諾富特世紀酒店的總經理，這是我第五次擔任總經理的職務了。我對酒店的翻新工程感到十分滿意和驕傲。我們重新裝修了房間，工程進展很順利，酒店大堂的翻新工程也剛剛完成。現在大堂感覺更寬敞開闊，採用了自然風格，為顧客提供全新的入住體驗。大堂的設計靈感來自於香港美麗的公園和戶外景色。香港大部分面積被綠色植物覆蓋，戶外活動十分豐富，許多旅客都對此感到意外。香港諾富特世紀酒店的服務和設施十分完善，地理位置優越。灣仔位於港島中心，基礎設施充足，無論去哪裡都十分方便。會議展覽中心就在酒店附近，諾富特世紀酒店自然是商務旅客的最佳選擇，許多來度假的旅客也十分喜歡我們的酒店。香港諾富特世紀酒店已有25年歷史，因此我們十分了解市場和顧客的需求。城中正在舉辦很多盛事，因為香港已從一個購物天堂轉變成大型活動舉辦城市。香港美酒佳餚巡禮和電動方程式賽車錦標賽就是最佳例子。這對這個城市和酒店業來說絕對是好事。社交媒體和網絡改變了酒店業，所有資訊都變得更透明了。旅行網站和社交媒體的反饋是我們每天工作的重要部分。我們還會利用 Whatsapp 群組進行內部通訊，十分高效便捷。我認為和同事有效溝通的能力是成為一名優秀的總經理的關鍵。我們的團隊成員來自不同國家，擁有不同的背景，在多文化的環境下，這種能力尤為重要。香港是一個很了不起的城市。但許多人忽略了這裡的安全性也很高，這是我喜歡香港的一個重要因素。當然了，這個城市還有很多值得做的事，特別是我剛才提到的不斷增加的活動和盛事。我給旅客的建議是：去大排檔或熟食中心品嚐風味十足的美食；乘坐天星小輪欣賞維港美景，最後到龍脊或山頂環迴步行徑遠足，讓您更充分地感受這個城市美麗的自然風光。
