s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City.

As May approaches, Hong Kong continues on a hopeful path towards opening up our city for international travel, the positive news our hospitality industry has long awaited. With the level of new Covid-19 cases remaining stable and low, and steady vaccination efforts ongoing, the city is making plans to ease inbound travel restrictions. As we go to print, the government has agreed with Singapore to create a travel bubble and arrangements with several cities in Mainland China are also under discussion. With luck, we should be welcoming visitors back to Hong Kong by the end of this month. Still, some social distancing measures remain in place and masks must be worn in all public places.

Encouragingly, more events and activities are resuming.

For prudence, though, we suggest that you contact your concierge for details of the latest updates and restrictions.

The month of May remains an agreeable time to explore the city’s great outdoors. There is no better way to do that than hiking. Our Spring hiking edition showcases a myriad of trails for you to explore – some are well-known and popular, while others are more out of the way and less frequented, but all offer scenic views, sylvan environments, and an uplifting experience. Please go to our Feature Story on page 10 for more details.

Our series introducing the city’s evolution continues.

This month, we herald Hong Kong's seminal and glorious maritime history, without which the city would never have thrived as it has. From humble backwater fishing villages to one of the world’s great sea-faring capitals today, our maritime past and present is a story worth telling and remembering. It is a tale of geography, a great harbour, fortuitous timing, and above all, generations of hardworking seamen, merchants, labourers and entrepreneurs who gave Hong Kong its soul. This month, Le French May, the city’s major cultural festival celebrating French arts, music and food, returns with a full slate of programmes. The two-month festival arrives just in time to embrace the returning of normalcy.

French GourMay is the one and only major festival in Hong Kong and Macau dedicated to gastronomy à la française, organised under the umbrella of the French May Arts Festival. Wan Chai Waterfront Promenade The exciting development of the harbourfront continues apace with the recent opening of The Pierside Precinct, from the Hong Kong Convention and Exhibition Centre to Wanchai Star Ferry Pier. It’s now possible to walk a full 5.5 kilometres alongside Victoria Harbour, from Shek Tong Tsui almost to Causeway Bay. The new section sports a minimalist design of smooth concrete and elegant wooden furniture, but morphs westward into the wackier experience of grand and bright cartoon designs by local artist Chocolate Rain at the former Wanchai Public Cargo Working Area.

he history of Hong Kong is inextricably linked to the sea, maritime trade and its glorious harbour. From the colony’s foundation through to its maritime heyday, Hong Kong’s raison d’etre was as an entrepot between east and west, from which it flourished into one of the great maritime capitals of the world. Vibrant Victoria Harbour, teeming with vessels and water-based activity of all kinds, exuded an Oriental mystique that attracted travellers from around the world. While the harbour is much quieter now, Hong Kong’s port remains one of the world’s largest and the city is still an important maritime centre.

The maritime history of Hong Kong, in which a few scattered backwater fishing villages became one of the world’s great ports, is a fascinating tale. It is a story of favourable geography, fortuitous circumstances, and above all, industrious and enterprising people who, in little more than a century, built the seaborne trade legacy that all Hongkongers can be immensely proud of. We are happy to recount their story. So, let us trace and relive the glorious maritime history on which modern Hong Kong is founded.

The Beginning 開始 – 广东体系 The Canton System From the mid-18th to mid-19th centuries, during the Qing Dynasty, trading between European nations and China expanded and became increasingly unruly. The imperial Chinese government responded by designating the city of Canton (Guangzhou) as an exclusive enclave for China’s trade with the West, aiming to secure better control. The banks of the Whampoa River were chockful of docks, piers, godowns and trading houses, with trading ships arriving from all corners of the world, thirsty for China’s tea, silk and ceramics.

The First Opium War between the United Kingdom and China, from 1839 to 1842, and the subsequent Treaty of Nanking effectively abolished the Canton System, opened other trading ports, and eliminated the trading monopolies of the thirteen local cohongs.

Canton’s decline was hastened by a large fire along the river that destroyed many of the warehouses. As part of the treaty, Hong Kong Island was ceded to the UK in perpetuity, and many of the British and Chinese merchants promptly moved their operations to Hong Kong, kickstarting Hong Kong’s rise as a thriving trading port.

Location, location, location

In hindsight, it is easy to see that Hong Kong was blessed with prime location, excellent geography, and the timely arrival of the British. At the mouth of the Pearl River Delta, Hong Kong was endowed with a large, deep, nicely sheltered harbour and other coves and bays along its meandering coastline in the lee of the island’s mountainous terrain.

While people living in Hong Kong had long conducted rudimentary river and littoral trade with neighbouring villages and cities, from the 1830s, the British recognised Hong Kong’s great geographical advantage, and began to use Hong Kong’s harbour as a “roadstead” where their vessels could shelter.

Upon taking over the island, Britain quickly set about making Hong Kong the hub of its Far East trading operations, building basic port facilities, and putting in place the wherewithal for its new acquisition to prosper.

早期發展 – 香港成熟 Early Development Hong Kong’s coming of age The early years of Hong Kong’s maritime development were not all smooth sailing. The colonial government faced myriad issues creating a functioning city – including construction of utilities and the establishment of a working waterfront, especially through land reclamation that allowed for building dockyards and piers. The administration needed to attract both foreign trading companies and local merchants, and have them work symbiotically. It was a constant challenge to accommodate the tens of thousands who flocked to Hong Kong to supply the needed labour. And then there was piracy – a constant menace to merchant ships along the coastal waterways. Over the decades, these challenges were all overcome and Hong Kong began to take off as a vibrant, thriving port city. 香港海上發展的初期並非一帆風順。殖民政府在創建正常運作的碼頭時面臨着 無數問題——包括公用事業的建設和海濱的建設，特別是通過填海造地來建造 船塢和碼頭。政府需要同時吸引外國貿易公司和當地商人，讓他們共生共存， 此外為成千上萬湧入香港的勞動力提供食宿也是個挑戰；然後是海盜——對沿 海水域的商船構成持續的威脅。經過幾十年的努力，這些挑戰都慢慢解決，香 港開始成為一個充滿活力、欣欣向榮的港口城市。

Hong Kong’s Heyday 香港的鼎盛時期 – 主要的转口港 a leading entrepot If Hong Kong's nineteenth-century emergence as a maritime trading centre had been impressive, the best was still to come. It was the halfcentury from the 1920s to the early 1970s – excepting three years of wartime Japanese occupation – that saw the plucky colony reap the rewards of its effort thus far. Aligned with expanding global trade, and always with a view to developments in its mighty neighbour China, Hong Kong grew and prospered, entering international consciousness as that far-flung speck of land that stood tall in global economics and trade. Shipbuilding Did you know that Hong Kong was once a major shipbuilding centre? In the early 1900s, two of Asia’s leading shipyards were located here – the Hong Kong & Whampoa Dock (in modern Hung Hom) and Taikoo Dockyard (now Tai Koo Shing), the former being where some of the world’s largest cargo vessels and warships were built.

The frenetic harbour scenes of yesteryear were a mesmerising sight, with vessels large and small jostling for space and right of way in Victoria Harbour. Majestic ocean-going liners regularly visited Hong Kong, docking at the Ocean Terminal in Tsim Sha Tsui; cargo vessels of all sizes were either docked at piers or moored offshore, to be offloaded by barges and smaller vessels, typically the ubiquitous Hong Kong junk with its iconic sail and high poop deck; scores of ferries of all types criss-crossing the harbour from morning till night – the primary means of transport for people, goods and motor vehicles between Hong Kong Island and Kowloon. There might be an American aircraft carrier moored in the middle of the harbour, just off Wan Chai, while its crew enjoyed R&R ashore, all while thousands of little fishing boats and sampans darted around the busy harbour. It must have been quite a scene to behold.

Above all, what has sustained Hong Kong as this maritime colossus for so long is its people, who in under two centuries built Hong Kong into this great port and trading hub. In the mix were British, other European, and American traders, local Chinese merchants, shipowners, and above all hundreds of thousands of Chinese workers and labourers, serving as coolies, longshoremen, clerks, seamen and officers, and every other role. It is estimated that well over half a million people in the city were engaged in the maritime industry in the 1960s. The evolving port 不断发展的港口 Over the centuries, Hong Kong’s seaborne and river trade underwent tremendous change. That was especially true as Hong Kong became a light manufacturing hub, known for its textiles, plastics, toys and electronics. Then when manufacturing relocated to Guangdong and greatly expanded, Hong Kong continued to serve as the export hub. With rise of containerisation in the 1950s, Hong Kong consolidated its smattering of dockyards, piers and mooring facilities and created its modern container port in Kwai Chung. The Kwai Chung container port was consistently ranked one of the busiest from the 1980s to the early 2000s, until ports in China took up more of that business directly.

Through it all, as a port and a maritime centre, Hong Kong took in its stride successive great shipping revolutions – the transition from merchant sailing ships to steamers to diesel-powered cargo ships to modern container ships; navigational technology changes; from being a centre of building ships to one that demolished them, then to one of ship-owning; from providing seamen and port labourers to a business hub for marine-related services. Hong Kong’s abiding talent is to adapt and reinvent itself, at lightning speed, always finding the next maritime opportunity to survive and thrive.

香港是现代的航运枢纽 Today, Hong Kong still looks to the sea for much of its business activity, but its role has changed substantially, yet again. As the city no longer manufactures products on any scale, and as newer ports were built in Shenzhen, Guangzhou and other cities to directly export goods made in China, the port traffic has stabilised. Still, the port remains one of the busiest in the world, supplemented by a thriving river barge trade between Hong Kong and the Pearl River Delta cities. As Hong Kong’s role as a finance and services hub continues to grow, its focus has turned to maritime services in finance and insurance, as well as ship management and ship-owning.

Though still magnificent, Victoria Harbour is much quieter and less frenetic today – numerous cross-harbour road and rail tunnels, built since the 1970s, have largely supplanted ferry traffic; container ships no longer glide through the central harbour. Still, the great harbour remains beautiful day and night, its scenic views boosted by the occasional flotilla of yachts dotting the water.

Of course, there is still enough traffic to remind us of the glory years. While it may no longer be the city’s economic heart, undoubtedly, Victoria Harbour remains the spiritual foundation of Hong Kong.

Hong Kong Maritime Museum 香港海事博物館 – 一颗不为人知的宝石 A hidden gem in plain sight For an in-depth and fascinating look at the marine-related history of Hong Kong there is no better place to visit than the Hong Kong Maritime Museum. Prominently located in the heart of the city at Central Pier No. 8 on the Central Harbourfront, the museum’s three-storey building houses a large collection of permanent themed galleries and special exhibitions showcasing ancient ship models, rare paintings and scrolls, photographs, artefacts, and other cultural heritage objects. The exhibition features two narratives – the maritime stories of Hong Kong and the sea-borne interactions between Hong Kong, South China, East Asia, and the rest of the world, taking visitors on their own exciting voyage of maritime discovery, spanning 6000 years of Hong Kong’s seafaring and trading heritage.

The Hong Kong Maritime Museum weaves a fascinating and informative tapestry of the rich heritage of Hong Kong’s relationship with the sea, showing how it connects directly back to the present – and beyond. Highly recommended for a half-day visit.

Lamma Island, just south of Hong Kong Island, known for its quaint villages, daipai-dong style seafood restaurants, beaches and scenic hikes, is a favourite weekend destination for locals and visitors alike. Start your hike at Yung Shue Wan. After strolling along the village streets and past souvenir shops, follow the path to Sok Kwun Wan. You’ll pass Hung Sing Ye Beach before ascending a small hill with panoramic views of the sea and the island. The descent to Sok Kwun Wan, passing through the local village is equally enchanting. Reward yourself with a delicious seafood dinner before going back to the city directly from the pier.

Spectacular views of Hong Kong’ s most scenic reservoir, dotted with islands ─ a perfect Instagram spot. 极好──最美丽的水塘、点缀着岛屿，是完美的 Instagram 景点

Located in Tai Lam Country Park, Hong Kong’s second largest, the reservoir was constructed after World War II by damming four sides of the valley. The result: a reservoir dotted with emerald islets, remnants of former hilltops. The hike, starting from So Kwun Wat Tsuen village near Tuen Mun, is relatively easy, rising steadily from the village. The paved path eventually merges with Section 10 of the MacLehose Trail.

Your destination is the “Reservoir Islands Viewpoint” with its panoramic view of the reservoirs and the little islands below. Plenty of signposts mean it’s hard to get lost.

Return the way you came, or if you’re still up for exercise, head down the trail and follow the Tai Lam Chung Reservoir Loop, a 21-kilometre level path around the reservoir.

Arguably Hong Kong’s most famous trail, lauded by international media, the Dragon’s Back richly deserves its accolades. This hike is essentially Section 8 of the Hong Kong Trail, one of four long hiking trail systems in Hong Kong, and goes from To Tei Wan near Shek O Road to Tai Long Wan (Big Wave Bay). After a quick and relatively steep ascent you’ll reach the Dragon’s Back ridge from which you enjoy truly spectacular scenery of the mountains across, the Shek O beach and picturesque golf course below, and the South China Sea beyond. Look for paragliders hovering above the ridge trying to catch the up-draft. Follow the trail which eventually meanders down to Tai Long Wan, popular with surfers.

The type of hike you would never expect in Hong Kong – pristine environment, unspoiled beaches, hamlets and beautiful scenery. This route follows most of Section 1 and 2 of the Maclehose Trail – which at 100 kilometres is Hong Kong’s longest and most famous trail. Start from High Island Reservoir’s East Dam. Enjoy the great vista of the reservoir before following the trail up the hill and then descending to Long Ke beach, a pristine, white-sand beach. A long, steady ascent up to Sai Wan Shan follows, leading eventually down to the beautiful beaches of Ham Tin and Big Wave Bay – unquestionably Hong Kong’s most beautiful.

After the beaches you’ll need to go back up the hill and follow the Section 2 trail to reach Pak Tam Au.

Framed by its scenic waterfront promenade and the lush, hilly Ma On Shan Country Park, the new town of Ma On Shan is an increasingly popular visitor destination. In particular, Ma On Shan Country Park offers a wide range of hiking experiences, from the arduous ascent of Ma On Shan peak to more moderate trails traversing the park. One popular hike that offers gorgeous views of the town and Sai Kung to the east runs from the entrance to the Country Park in to Sai Kung, passing through the Ngong Ping and Pyramid Hill before descending to Sai Kung town.

Start at the Country Park BBQ area then follow the Ma On Shan Country Trail towards Ngong Ping, a narrow and flat grassy plateau that affords excellent views of both Ma On Shan and Sai Kung. Proceed to the summit of Pyramid Hill before descending towards Sai Kung, exiting the trail at Chuk Yeung Road the Sa Sha Road back to Sai Kung. On a clear day, you can seemingly see forever.

If you want a good workout that takes in some spectacular scenery at the same time, this would be the perfect hike. Start from Parkview, a luxury residential complex above Wong Nai Chung Gap Road on Hong Kong Island. A strenuous hike to the top of Violet Hill gives you good views of both the city and south side of the island. The long descent then offers the gorgeous vista of Repulse Bay. At the bottom, you’ll start the infamous “Thousand Steps” – that seemingly endless staircase over one peak and then the next, leading to the reward of panoramic views of Stanley and nearby islands.

The trail ends at Stanley Gap Road, where you can take a bus to Stanley Market or the other way back to the city. Be sure you are in good shape before you attempt this hike – and it’s definitely worth the effort!

Take Bus No. 6 from Central to Wong Nai Chung Gap Road Petrol Station bus stop; walk 10 minutes up Tai Tam Reservoir Road to the starting point of the hike which is Section 1 of the Wilson Trail. 在中環乘坐6號巴士到黃泥涌峽道油站，往上步行10分鐘到達大潭水塘 道，這裡便是衛奕信徑1段，也是這條遠足徑的起點。

ong before staycation became a household word, thanks to the Covid-19 pandemic, the Hong Kong Gold Coast Hotel, a resort hotel located on the waterfront of Tuen Mun Gold Coast, has long been a favourite weekend retreat for visitors and local Hong Kong residents alike. The hotel is set up perfectly for staycations, offering plentiful play areas and activities for children, lush gardens for relaxation, a long sandy beach next door, and a scenic waterfront plus marina that makes an idyllic setting. To satisty its guests, the hotel also offers a robust line-up of dining outlets, capped by its steak house, appropriately named Gold Coast Prime Rib, and our culinary destination this month.

Located on the lobby floor, the Gold Coast Prime Rib is spacious and nicely appointed. The expansive view of the marina complements the restaurant’s contemporary steakhouse style décor which exudes a relaxing and friendly ambience.

The restaurant’s menu is classical American steakhouse, serving up a selection of USDA beef cuts, Australian lamb chops, seafood items plus favourite American starters and sides. The relaxing ambience had already helped amp our appetite, and we ordered accordingly. For starters, we had New Orleans Crab Cakes ($138), served with remoulade sauce and butter lettuce. The crab cake is a favourite standby – tender meat lightly fried to perfection.

French Onion Soup ($98) is another classic soup that we always enjoy; this one is also nicely prepared – flavourful broth, thick cheese layer and plenty of onions.

For our main, we ordered several to compare. We had to try the restaurant’s signature Gold Coast Prime Rib Sets, which is pan-fried prime rib. We had the Signature

Cut (8oz/$518), medium rare. Other cuts include the Starter Cut (5oz/$358) and the Jumbo Cut (10oz/$608).

Each set includes a choice of a salad, soup or dessert and the prime rib is served with seasonal vegetables, Yorkshire pudding and gravy. The beef is juicy, tender, and flavourful. We were particularly partial to the crusty end-cut.

We also wanted to try a properly grilled steak, for which we picked the USDA Choice Ribeye (10oz/$418), served with seasonal vegetables, steak fries, Bearnaise sauce and pepper sauce, and grilled medium rare, of course. We like ribeye for its stronger flavour, and the meat was grilled tender enough. For our wine to accompany the beef, we had a nice medium-bodied 2016 Australian Hollick Wrattonbully Shiraz.

We also ordered Grilled Norwegian salmon steak (8oz/$248) served with seasonal vegetables, boiled potatoes and champagne sauce to round out the selection. For desserts, we opted for Traditional Apple Crumble with Vanilla Ice Cream ($138), its generous serving to be shared.

The restaurant boasts a good selection of wines and cocktails to choose from. We should also mention that it also offers a Kids’ Menu and an Afternoon Tea Menu.

The Gold Coast Prime Rib is just the place when you or your family are in the mood for a nice, relaxed steak dinner while soaking in the lovely ambience inside and the tranquil views of the waterfront. We highly recommend you give it a try.■

Occupying two levels, Rubia offers two separate dining experiences. The ground floor is a Spanish taberna (tavern) where guests are served snacks or sharing plates over favourite drinks – a pub ambience perfect for social gathering. Upstairs, the restaurant provides a proper dining space for lunch and dinner.

Spanish cuisine is one of our favourite comfort food choices. Couple that with delicious drinks and we knew we were in for a treat. Rubia’s chef, Martin Carrasco, is a Catalan who grew up near Barcelona and honed his culinary skills both in Spain and overseas. The menu, which sources a variety of Spanish ingredients augmented by other regional seasonal items, reflects Chef Martin’s multi-layered experience.

For our dinner, we started with Padron Peppers, Pinch of Salt ($75), which is fresh and tasty. The tapas came next and they were all delightful and delicious.

Sustainable Tuna Tartare Our Way ($198) is a real treat.

We liked the texture and savoury taste of tuna tartare, with just the right seasoning. Roasted Vegetables Coca with Anchovies ($78), a popular Catalan flatbread (coca) vegetable dish, is another pleasant surprise. The salty anchovies offer a nice balancing flavour to the bread and the roasted vegetables. Lazy Omelette with Gambas Al Ajillo ($90), which is omelette not flipped and topped with minced sweet onion, mashed potato and prawns cooked

in garlic sauce, is another yummy comfort food that we like a lot.

For our main, we had Rubia Gallega Boneless Ribeye ($499), served with patatas fritas in 100% extra virgin olive oil, Piquillo peppers, butter lettuce with mustard dressing. The ribeye is pan-fried in a hot skillet. Rubia Gallega is a cattle breed from Galicia in northwest Spain; the cows graze on the meadows of Galicia for up to 8-12 years and are known for their intensely flavourful and marbled meat. The meat was indeed succulent and deeply satisfying in its flavour.

Still in the mood for comfort food, we ordered the popular Huevo Rotos ($73), which is Spanish broken eggs with mushroom and chorizo. For good measure, we added Chorizo Iberico Potato Salad ($55), which was also excellent.

Rubia serves an eclectic collection of Spanish gin and, surprisingly, Hong Kong–made gin cocktails. We had the Perfume Tree, Hong Kong ($150), which is gin infused with Bergamotto, tonic, fresh lemon peel, rosemary and pink peppercorn, served in a block ice cube. The Spanish gin we opted for was Nordes Atlantic Galician Gin ($115), with oakwood tonic, bayleaf, fresh lemon peel and cardamom, which is nicely fresh and fruity.

Rubia is an excellent place to hang out after work or to indulge in yummy Spanish comfort food while soaking up the vibrant Soho scene. It also offers an excellent 2-for-1 happy hour deal. Do give it a try.■

Chilli Fagara 麻辣燙 Chilli Fagara, located in the heart of Soho, has been one of the city’s stalwarts for Sichuanese cuisine ever since it opened some 15 years ago, garnering culinary awards aplenty. We were there to try out its Spring Lamb Special Menu plus other seasonal dishes.

Tucked in a quiet enclave on Old Bailey Street, Chilli Fagara is known for serving both authentic and innovative Sichuanese dishes. Its consistent quality has earned the restaurant a loyal following. We were certainly looking forward to the occasion.

Our meal started with an appetiser – Lotus Root Slices with Sichuan Sauce ($68), followed by Cumin Lamb Skewers ($178) – the meat pieces were tender and flavourful.

A dumpling dish, Little Lamb Dumplings ($98) was next. The dumpling is house-made and prepared from scratch – from the dumpling skin to the minced lamb, and the quality showed. The next dish was a classic water-boiled Sichuanese dish, but with a twist. The laboriously named dish, Our Spice-infused Broth Garnished with Floating Chillies, Potato Noodles, Bean Sprouts, Chinese Leeks and Cloves with Lamb Meatballs ($238) is the first time that we tried a lamb meatball.

The meatballs were excellent – tender and tasty, with a slightly firm texture – count us impressed.

We had to have the restaurant’s signature dish, Homestyle Ma Po Tofu ($108), which is every bit as good as billed. Also excellent is the Honey Garlic Spareribs ($138) which nicely rounded off our satisfying meal.

We should mention that for Mother’s Day, Chilli Fagara is offering a kid-friendly Warp-at-Home Chilli Dumpling Kit ($128), which is a perfect and fun-filled present for any mum. The dumpling kit includes fresh ingredients to make 10 dumplings filled with marinated minced pork. It also has wrapping and cooking instructions and its signature Ma sauce. New Botanical Afternoon Tea at Statement 全新 Bontanical 下午茶 Statement is an elegant dining outlet located at Tai Kwun, the city’s latest heritage and arts hub in Central. The restaurant occupies the second floor of the former Central Police Station, a heritage building that has been lovingly preserved. The elegant colonial building provides the perfect setting for Statement, which serves high-end modern British cuisine.

We were there to sample Statement’s new offering of its Botanical Afternoon Tea set. Hong Kong’s fondness for afternoon tea is longstanding; the popularity of the experience has been amplified as more restaurants and cafes serve up a dizzying array of scones, savoury delicacies, desserts and fancy teas.

Statement’s Afternoon Tea is in collaboration with Ruinart Champagne. The set starts at $288 per person (for a minimum of two persons) or $388 per person with a glass of Ruinart Blanc De Blancs Champagne. Alternatively, you can also order purple Butterfly pea flower tea and Tanqueray gin. And for extra $500 per person, you will also be served Osetra Caviar Served with Plum and Mimosa Garnish.

The presentation is striking: a spirally metallic tray engraved with Ruinart’s insignia, and a hot Instagram object. Savoury items comprise replenishable finger sandwiches that include Roast Turkey; Short-Rib Pâté and Cream Cheese; Cucumber, Celery and Dill; Beetroot, Carrot and Pesto; and Smoked Salmon.

The raisin scones are made with rose perfume, Cornish clotted cream, and homemade rose and peach jam and raspberry jam – all of which are excellent. Then the bite-sized desserts are surreptitiously filling. They include Bittersweet Chocolate Cake, Salted Caramel with Rose Macaron; Cinnamon and Carrot Shortbread Cake; Blueberry, Lemon and Lavender Cupcake; and Passion Fruit Mousse and Biscuit Crumble.

Lung Fu Pao 龍虎豹 This recently opened Japanese restaurant in upper Soho is destined to attract attention in more ways than one. Firstly, the name of the restaurant, Lung Fu Pao is familiar to many a local resident.

Lung Fu Pao, which means dragon, tiger, and panther or leopard, alludes to an adult magazine popular in the 1980s and 90s, since discontinued. The restaurant’s décor as well as some of its serving plates depict frank photos from past magazine issues, offering an interesting diversion for diners.

None of that takes away from the food it serves, which is quite good. The restaurant serves contemporary Japanese eats that include sashimi, sushi, maki (rolls), temaki, kushiyaki (skewers) and shared plates, plus a large collection of sake, Japanese beer, highballs, wines, whiskies and more.

An open kitchen dominates the restaurant space; diners can eat and drink sitting either along the long kitchen counter or at the tables beside it. The outlet is busy and lively, and food is quickly prepared and served.

For our meal, we had a generous sampling of the menu items.

They included a tasty plate of Dried Codfish w/ Jalapeno Mayo ($448), Snapper Carpaccio ($148), Scallop Sashimi ($148/3 pieces), Fatty Tuna Sashimi ($128/3 pieces). Sushi items we tried included Salmon ($38/2 pieces) and Halibut ($58/2 pieces).

The skewers that followed included Shishito Pepper ($28), Egg Plant ($18), Mushroom ($18), Ox Tongue ($58) and Pork Belly ($48). We then wrapped up our meal with maki rolls, which are sushi and raw vegetables wrapped in seaweed. Both the Dragon Roll ($158) – tempura prawn, spicy tuna, snow crab and flying fish roe, and Tiger Roll ($138) – soft shell crab, cucumber, salmon, flying fish roe are good and come in nice portions.

We also tried a couple of cocktails, which included Kitty Juice ($130) – mezcal, pineapple and shiso, and Kabuki Mule ($125) – roku gin, cucumber and ginger ale – both are intriguing.

Lung Fu Pao is probably the city’s first self-described raunchythemed restaurant with audacious interior design. It’s a lively gathering place serving good casual Japanese food and drinks, and highly worth a visit. Give it a try.

CAPTAIN CAINE – FOUNDER OF THE HONG KONG POLICE 堅恩上尉 Arthur Hacker tells the story of Captain William Caine and his contribution to Hong Kong's fascinating history. 亞瑟 克赫細說堅恩上尉的故事，窺探香港奇趣引人 的歷史。

t is said that an early visitor to Hong Kong once asked a local Chinese the name of the colony's governor. "Major Caine!" was the instant reply. In fact, Captain (later Major) William Caine, of the 26th Regiment of Foot (the Cameronians), was not the governor but played a substantial role in early Hong Kong.

Caine founded the Hong Kong Police Force, had fought in the Opium War, became Hong Kong's first Chief Magistrate in 1841 and was, among other things, responsible for law and order in the new British colony. Caine Road, in Mid-levels, is named after him.

He was born in India where he became a boy soldier in the armies of the British Raj. As a military man and a colonial administrator, he spent almost half a century serving in Asia. After he retired as Lieutenant-Governor of Hong Kong, he eventually took ship to England.

Following the British occupation of the island, the population shot up dramatically. Many of the newcomers were undesirable and created a crime wave.

Caine remarked that: "nine-tenths of our Chinese subjects and about half our low European inhabitants have been in the most depraved condition."

Unfortunately, Caine initially had little knowledge of British common law and hadn't a clue about Chinese law, but he did his best. He

had to borrow soldiers from the garrison to act as policemen, which caused numerous problems. ln desperation he would often be seen late at night patrolling the streets himself. It was four years before London agreed to provide a Captain Superintendent of Police and at last Caine was able to devote his time to his other administrative duties.

At the time, Hong Kong's expatriates formed a tiny, disgruntled, hotchpotch community where the stern upholders of Victorian morality couldn't fail to rub shoulders with dubious entrepreneurs, opium dealers, pirates, crooks and con-men, this civilian community was so small that saints and sinners couldn't avoid each other and inevitably quarrelled.

William Tarrant was a model civil servant. He was efficient, hardworking and incorruptible. He has been described as "more honest than politic" and this admirable trait brought him into direct confrontation with Major William Caine.

Tarrant had discovered that Caine's compradore (Chinese assistant), Lo ln Tin, was demanding a squeeze from the stallholders of Central Market in the Major's name. This was known as "Caine duty money".

Being a good, honest, if naive, civil servant, Tarrant reported the crime to his superior.

Instead of being praised for his diligence, Tarrant was suspended from office for "conspiring to injure the character of Major Caine."

Questions were raised in the Houses of Parliament and almost two years later the case against Tarrant was dismissed. Lo ln Tin fled the colony and the Secretary of State, Lord Grey, ordered the Hong Kong Government to pay Tarrant two years’ wages in compensation. This was done, but the Government refused to reinstate Tarrant in the civil service.

Tarrant was justifiably upset. He used his back pay to buy a newspaper called the Friend of China. For the next decade, the embittered Tarrant used every opportunity to revile Caine in his newspaper. In 1859, Caine, now the exalted Lieutenant-Governor, was about to retire to England.

Tarrant printed a scathing attack on Caine. It was published the day before Caine was due to leave Hong Kong.

Caine postponed his departure and sued Tarrant for libel. With Machiavellian cunning, he retained the services of every lawyer in Hong Kong and Tarrant was forced to conduct his own defence in court. He was found guilty and sentenced to one year's imprisonment and fined fifty pounds. There was a storm of righteous protest, both in Hong Kong and London, against Caine's ungentlemanly conduct. Tarrant was released after six months in prison and the fine was paid by public subscription.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. ‘Ready\Set\Fulfill’ at de Sarthe Gallery Until 8 May The emerging sport of FPV drone racing features prominently both as live performance and as recorded video work. The races advance a conversation about humanity’s relationship to speed and progress at large. They exemplify Philosopher Paul Virilio’s concept of “dromology,” (the science or logic of speed), a term he coined positing that the development of society and culture is akin to a race—with the fastest competitor being the most successful. Further still, drone racing also collapses the boundaries between man and machine. As pilots wear immersive VR headsets to pilot the drones via onboard cameras, their vision becomes the drones’ vision and their movements become the drones’ movements.

‘JOHN YOUNG : SPECTRUMFIGURES’ at 10 Chancery Lane Gallery Until 29 May This Spring in Hong Kong and during Art Basel HK 2021, John Young will be exhibiting a group of abstract paintings entitled Spectumfigures, as well as a small group of works he created thirteen years ago — 1967 Dispersion; a recollection of the 1967 riots in Hong Kong, the time he departed the then British colony. Spectrumfigures, a series of spectrumbased coloured abstracts that celebrate the evolution of consciousness in the younger generation of Hong Kongers in the twenty-first century.

The dispersion of radiant light through a prism produces a plurality of colours that mark this generation as spirited and bearing many qualities.

Flagstaff House Museum of Tea Ware 茶具文物館

Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. It contains the KS Lo Gallery with its permanent exhibition of rare ceramics and seals from the Song and Ming dynasties. Weekdays (closed on Tuesdays except public holidays) 10am-6pm, Free. Train enthusiasts can imagine arriving into Hong Kong by rail in the golden age of train travel at this charming little museum located in Tai Po Market. The permanent exhibition of Hong Kong's rail history includes photographs, old coaches, samples of tracks, and a full-size model of an electric train compartment.

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
