ow do people celebrate Chinese New Year, the most important holiday in China and among overseas Chinese communities in Asia? Well, adults and children dress up in bright, red, new clothes; families and friends greet each other, passing out lai see packets; homes are adorned with auspicious decorations, plants and flowers, and posters wishing for luck and prosperity for the year ahead; there’ll be mahjong games and many traditions and customs; and perhaps a lantern festival, a parade, or even a firework show to go to or a CNY gala show to watch on New Year’s Eve. However, for a great part of this lengthy holiday period, Chinese New Year celebrations centre around eating – a cavalcade of meals and snacks and sharing of delicacies and staples.

Customs of meals and dining traditions developed in great variety across China over the centuries, and are continued enthusiastically today and in overseas Chinese communities, particularly across Southeast Asia. Here in Hong Kong, the rich food culture ensures that the city offers practically every Chinese regional cuisine. Several meals during the CNY period are considered especially important, and often provide the leftovers that supply the family thereafter. 在農曆新年期間，有幾頓很重要，所以做菜的人不必為每頓飯而煩惱。其他時間只要吃剩菜剩飯就足夠了。

Easily the most important meal of CNY when family members old and young gather together to welcome in the New Year. A sumptuous meal of meats, fish, other seafood items, plus auspiciously named dishes are served and consumed with gusto. Keep an empty stomach for this meal – you are going to need it. 年夜飯是春節最重要的一頓飯，一家人一起歡度新年。這頓豐盛的晚餐 一定會有肉，魚，還有海鮮，每道菜都會有個吉利的名字，一定要準備 好肚子享用這頓美味——因為一定會吃撐。

New Year’s Day

新 年 第 一 天 Surprisingly, only a few dishes are prepared for the New Year, mostly noodles, rice cake or turnip cake, as families are occupied with greetings and well-wishing (bai nian) with friends and other family members. 令人驚訝的是，這一天只有幾道菜，大多是麵條、年糕或蘿蔔糕，因為 大家都忙和朋友、親戚相互問候、送去祝福。

This dinner takes place on the seventh day of the CNY, and is a custom practised by some regions but not all. The dinner recognises the arrival of Spring. Keep in mind, in China, CNY is commonly referred to as the Spring Festival.

The last big family meal of Chinese New Year takes place on the 15th day of the New Year and is known in some regions as the Lantern Festival. Besides the usual meat-laden dinner, sweet glutinous rice balls (tong yuen) are served. 農曆新年的最後一頓飯是在新年的第 15 天舉行的，某些地區稱為 元宵節。除了大魚大肉外，還要吃一碗熱乎乎的甜湯圓。

Snacks of all different kinds presented in colourful trays are a must. Guests are offered snacks plus Chinese tea during CNY visits. Typical snacks are roasted seeds (pumpkin, watermelon, sunflower), dried red dates, and nuts (walnuts, peanuts). In southern China including Hong Kong, a variety of cakes, candies and sweets such as sweetened lotus roots and seeds, sugared winter melon slices, and deep-fried twists are also served. 彩色托盤中的各種小吃都是每家每戶必備的。農曆新年期間，來 家裡拜年的客人可以享用小吃和中國茶。常見的是瓜子類（南瓜， 西瓜，向日葵），紅棗乾和堅果（核桃，花生）。在中國南方，如 香港，還有各種各樣的蛋糕、糖果和甜點，如甜蓮藕和蓮子、糖冬 瓜片和油炸麻花。

Dumpling 饺

Perhaps the most important and most popular food served during CNY, particularly in northern and northeast China such as Hebei, Shandong, Beijing and Liaoning. Dumplings are served at the New Year’s Eve dinner when the family traditionally gather to make dumplings from scratch, including the dough, as a symbol of family unity and togetherness. Dumplings are also served at other important New Year meals. Eating dumplings is less prevalent in southern China. Still, there are many excellent northern dumpling restaurants that will sell uncooked wrapped dumplings. Check out Ho Hak Shandong in Sheung Wan which makes big, juicy dumplings or Wang Fu in Central, among other places.

Spring Rolls 春

Another popular dish that takes on symbolic importance during CNY, as a way of welcoming spring. The various regions each prepare their spring rolls differently, with the southern regions preferring deep-frying, while northerners tend to prepare wrapped spring rolls or spring cakes. 這是農曆新年間另一種受歡迎的菜餚，作為迎春的一種方式，具有 重要的象徵意義。不同地區做春捲的方式也不一樣，南方多炸春捲， 北方多半為卷春捲或春餅。

Whole Steamed Chicken 清 蒸 鸡 Another ubiquitous dish that is served on every family’s table during CNY. In Central China – including Hubei, Hunan, and Henan – the first dish during the CNY Eve dinner is the chicken soup, followed by steamed chicken. Hong Kong has taken the art of steaming chicken to new heights; the Hakka cuisine offers several mouthwatering dishes such as salt baked chicken or poached or deep-fried whole chicken, served at most Cantonese restaurants. 這是春節家家戶戶餐桌上都有的菜。在中國中部地區(湖北、湖南和河南 等地)，年夜飯的第一道菜是雞湯，然後是清蒸雞。香港將蒸雞的藝術提 升到了新的高度；客家菜有許多讓人垂涎三滴的菜式，如大多數粵式餐廳 都會供應的鹽水雞、白切雞或炸雞。

Fish 鱼 Phonetically, the sound Yu, for fish, also denotes surplus, and is considered an auspicious word. As such, fish is very widely served at CNY throughout China and Southeast Asia. A steamed garoupa garnished with ginger and parsley in soya sauce is a signature CNY dish in southern China. In eastern China such as Shanghai, smoked fish is common, as is Shanghai-style braised fish with wine and soya sauce. 中文裡，“ yu ”這個音也表示富餘，被認為是一個吉 祥的字，也寓意年年有余的意思。因此，魚在中國和 東南亞的大部分地區也是新年必吃食物。清蒸的石斑魚 配上薑和香菜，再淋上醬油，是中國南方春節的招牌菜 之一。在中國東部，如上海，熏魚很常見，還有上海風 味、由酒和醬油燒製出來的紅燒魚。

Another popular dish served during CNY. Many regions prepare noodles as a symbol of longevity (Chang Chun Noodles) to be served on New Year’s Day. On a cold winter's day, nothing warms the body better than a hot bowl of Taiwanese beef noodles, a popular staple in Taiwan during the new year. 農曆新年期間必備美食。許多地區都準備將麵條作為長壽的象徵 （長壽麵），會在新年第一天享用。在寒冷的冬季裡，沒有什麼比 一碗熱騰騰的牛肉麵更溫暖的了，這無疑是台灣新年期間的主食。

Poon Choi 盆

Common in Hong Kong, Poon Choi is a dish comprising stacked layers of food, mostly different meats, in a large pot or basin, or a poon. The practice originated in the clan villages of the New Territories where the whole village would come together for a poon choi CNY dinner celebration, often outdoors. Most Cantonese restaurants offer poon choi during CNY, its price depending on the ingredients used. Most include pork, chicken, large prawn, plus fancier ingredients such as sea cucumber, fish maw and abalone. In 2003, almost 10,000 people gathered and set a world record for the largest poon choi feast at the old Kai Tak airport. Loong Yuen at the Holiday Inn Golden Mile is offering an excellent deal for Poon Choi take-out at $1888 for six people. Alternatively, authentic Poon Choi To Go for 4 to 6 persons at Hyatt Regency Hong Kong, Sha Tin is also a good choice! Lo Hei 捞

Alternatively called Yu Sheng (raw fish), Lo Hei – the prosperity toss to welcome the New Year – is a tradition practised by the Chinese in Malaysia and Singapore and that has spread across Asia, including to Hong Kong. A plethora of ingredients such as raw fish slices, golden crisps, carrot, turnip, pomelo, calamansi, shallot oil and others are prepared and everyone is invited to mix them by tossing them in a large plate – the higher the toss, the greater the prosperity. Rice Cake 年

Glutinous rice cake Or Nian Gao is another longstanding traditional dish served in many parts of China and throughout Asia. Generally, the rice cake is sweet (and red or brown in colour) and to eat it, slices are deep-fried, sometimes in egg batter, to be served to visiting guests. In eastern China such as Shanghai and Korea, it is popular to eat a plain white sticky rice cake that is used to for preparing savoury dishes, often stir-fried with pork. 糯米糕或年糕是中國許多地區以及整個亞洲都有的傳統美食。一般 來說，年糕是甜的（紅色或棕色），會切成薄片用雞蛋液包裹後油 炸，非常美味。在中國東部地區，如上海、還有韓國，通常會吃純 白色的年糕，這種糕通常與豬肉一起炒，製成鹹味菜餚。

Tu r n i p C a k e 萝 卜 糕 One particularly snack item that has become a popular gift for CNY is turnip cake, which is a common dim sum item. In the last 20 or so years, the practice of giving out a large turnip cake topped or infused with dried shrimp or sausages wrapped in fancy packages as a CNY present has becoming popular – chalk it up to Hong Kong’s commercial acumen to transform a common item into a high-margin product. The cake is pan-fried and served throughout the CNY period. An ever-popular CNY dessert, this delicious treat of small glutinous rice dumplings filled with sesame, red bean or peanut paste is eaten all year around. But the food takes on significance during CNY, as a symbol of the full moon, when it is consumed on the 15th day of the Chinese New Year. Most dessert shops in Hong Kong served excellent tong yuen of all kinds. o a first-time visitor to Hong Kong, many street and road names can seem bizarre and bewildering, especially if you only read one of the two languages. But look deeper, and you’ll find the appellations of these streets and roads paint a rich tapestry of Hong Kong’s storied past.

The British arrived in Hong Kong in the 1840s and immediately set about laying down streets and roads. Popular options for names were often people of status or consequence – the British royal family, historical figures, local governors, and – as the road network developed – on to quite minor government functionaries. Most were on Hong Kong Island and Kowloon south of Boundary Street, which had been permanently ceded to Britain. Then in the late 1880s and early 1890s, as Kowloon began to develop, the government drew on other influences, such as the cities and provinces of China and neighbouring countries, particularly Vietnam.

In themselves these naming practices were unremarkable, but then the translation from English to Chinese or vice versa added twists and complications. English names were typically phonetically translated into Cantonese, in renderings that were often cumbersome and difficult to remember. Among the Chinese-origin names, some were phonetically translated from Cantonese into English, while others began in standard Mandarin and were transcribed, mostly using the then-standard Wade-Giles system. Among the tongue-twisters and scratched heads, there are some streets where the English and Chinese names have no apparent relationship at all. Throw in a few inadvertent and eccentric errors along the way and the result is by turns amusing, confusing, hilarious and incomprehensible. So, let’s dive in and immerse ourselves into this delightful morass.

A Queen, a King, a Prince and the Rest 王后、國王、王子、皇室名字

The Queen 皇后大道 The earliest road built on Hong Kong Island was originally known as Main Street, but was quickly renamed Queen’s Road in honour of Queen Victoria, then in the early days of her long reign over the British Empire (1937 to 1901). For the most part, the road marks the original shoreline of Hong Kong Island, stretching from Wan Chai to Sai Ying Pun. Today, Queen’s Road is divided into four sections, Queen’s Road East (Wan Chai), Queensway (Admiralty), Queen’s Road Central, and Queen’s Road West (Sai Ying Pun and Shek Tong Tsui). The King 国王 As Hong Kong developed as an entrepot, the city expanded eastward from Causeway Bay to North Point and onward. The main road that connected them was called Shau Kei Wan Road, for the major fishing village, Shau Kei Wan, at its terminus in east of the island. In 1935, to mark the Silver Jubilee of King George V, part of the road from Tin Hau to Sai Wan Ho was renamed King’s Road. The Prince 亲王 In 1922, Prince Edward VIII, then the Prince of Wales, came to Hong Kong and visited the construction of a major new east-west link in Kowloon, stretching from Kowloon City to Mong Kok. Upon its completion, the government named it Prince Edward Road in his honour. Subsequent extensions of the road, to Choi Hung and to Tai Kok Tsui, were labelled Prince Edward Road East and West, respectively. The Chinese translation for the road unfortunately omitted the great man’s name, Edward, being rendered as the bland ‘Prince Road’. As King Edward VIII, he would reign for less than a year, in 1936, as he famously abdicated his throne in order to marry Wallis Simpson, an American socialite and a divorcee – then a real no-no. The couple did live happily thereafter until, now known as the Duke of Windsor, he died in 1972.

The Governors 总督 As might be expected the governors sent out from Britain to oversee the colony commonly claimed at least one road to be remembered by. Some of the city’s better-known streets are tributes to the early governors. These include Pottinger Street (Sir Henry Pottinger, the first governor), Mount Davis Road (Sir John Davis, his successor), Bonham Road and Bonham Strand (Sir George Bonham), Robinson Road (Sir Hercules Robinson), Kennedy Road, Kennedy Town Praya (Sir Arthur Kennedy), Hennessy Road (Sir John Pope Hennessy), Des Voeux Road Central and West (Sir George William Des Voeux, and others.

Probably the most famous street bearing a governor’s name is Nathan Road, Kowloon’s main thoroughfare, which in 1909 was changed from Robinson Road to remember the recently departed Sir Mathew Nathan, in order to avoid confusion with Robinson Road on Hong Kong Island. Major and minor government and local officials 主要政府和次要政府 以及地方官员 As well as governors, there are streets that honour a variety of major and minor officials and characters, both in Hong Kong and from back in the UK. Wan Chai and Causeway Bay 灣仔和銅鑼灣

Wan Chai was a thriving local fishing village when the British arrived. Many of its street names reflect these roots.

Ship Street was the site of a dockyard. Many who settled in Wanchai in the early days were from northeast Guangdong and Fujian provinces, and the streets Amoy (Xiamen) and Swatow were named for cities in that area, with Westernised English names of that era.

In the 1800s, Jardine, Matheson and Company (Jardine’s) took up much of present-day Causeway Bay (then known as East Point) for its business activities that included godowns and trading. As such, several streets were named after the company and its principals. They include Yee Wo Street (Chinese names for Jardine’s), Jardine’s Bazaar, Jardine’s Crescent, Percival Street (a tai-pan of the company); and Keswick Street (another tai-pan), among others. 灣仔和銅鑼灣：當英國人到達時，灣仔是一個繁榮的當地漁 村。許多街道的名字反映了它的根源。船街是造船廠所在 地。許多早期在灣仔定居的人來自廣東東北部和福建省，廈 門和汕頭街這兩條街道都是以城市命名的，並帶有那個時代 的英文特色。 香港銅鑼灣（當時的東角）的商業活動包括貨倉及貿易，因 此有幾條街道以這家公司及其負責人的名字命名。其中包括 怡和街和渣甸街市集、渣甸坊、及敬誠街等。

Kowloon 九龍 Many of the streets in Kowloon are named after cities in China, and curiously, in Vietnam. Some were major Chinese cities–Shanghai Street, Peking Street, Nanking Street, Hankow Road (part of Wuhan today), and Canton Road, of course. However, the Chinese translation for Canton Road (Guangzhou) was mistakenly changed to Guangdong, the province. The error was allowed to stand.

The names of these streets all follow the Mandarin Wade–Giles translation.

Other streets included Kweilin Street, (Guangxi), Ki Lung Road (Taiwan), Ning Po (Zhejiang), Nam Cheong (Jiangxi).

Several streets were named after cities in Vietnam – Haiphong Road, Hanoi Road, Saigon Street (Ho Chi Ming City) and Tonkin Street, which in Chinese has the same spelling as Tokyo but referred to Tonkin as in the Gulf of Tonkin in Vietnam. Curiously, not that many streets were named after provinces; the only ones in Kowloon are Shantung Street and Gansu Street in the Mong Kok/ Yau Ma Tei and Chi Kiang Street and Kiang Su Street in To Kwa Wan – something of a puzzle.

Mong Kok has perhaps the richest brew of names.

Besides the aforementioned roads that were named after cities, many of which run through Mong Kok, there are also streets named after its business activities – Sai Yee Street (washing clothes), Yim Po Fong Street and Hak Po Street (dying), Sai Yeung Choi Street, Tung Choi Street (vegetable growing; Chinese watercress and water spinach). The Battle of Waterloo is recalled in Mong Kok (Waterloo Road, a main road) and Nelson Street (Admiral Horatio Nelson, Britain’s most revered admiral). A merchant ship, the Argyle, is remembered in Mong Kok’s busiest streets, and of course, there is Boundary Street, which at one time served as a real boundary that demarcated the permanently ceded portion of Hong Kong from the rest.

Longest road 最长道路 At 50 kilometres, Castle Peak Road, which extends from Sham Shui Po to Yuen Long by way of Tsuen Wan, Sham Tseng and Tuen Mun, is the longest road in Hong Kong. The road neither starts nor ends at Castle Peak, a prominent mountain in the northwest New Territories. A trip to the New Territories in the 1950s and 60s would be an all-day affair. Tai Po Road, at around 26 kilometres, is the second-longest and was the only route to Shatin and beyond until the Lion Rock Tunnel was opened. 青山公路由深水埗經荃灣、深井及屯門延伸至元朗，全長 50 公 里，是香港最長的道路。這條路的起點和終點均不在新界西北部 的青山。上世紀五、六十年代的新界之旅需要花費一整天。大埔 公路長約26公里，是獅子山隧道興建前通往沙田及以上地區的第 二長及唯一道路。

Hiram’s Highway 西贡公路 The main road from Clearwater Bay to Sai Kung is Hiram’s Highway (the Chinese name simply means Sai Kung highway).

The road is named after Major John Wynne-Potts of the Royal Marines whose nickname was Hiram as he shared the same name as Hiram K. Potts, an American sausage – go figure. 由清水灣道至西貢的主要道路稱為西貢公路，這條路是以英國皇 家海軍陸戰隊少校約翰・韋恩・波茨的名字命名的，他的暱稱是 海勒姆，與美國香腸 Hiram K. Potts 同名。

Names that don’t match their translation 与翻译不符的名字 There are many streets where the English and Chinese names bear no relationship to each other. Examples include Possession Street, which commemorates the spot in Sheung Wan where the British first set foot on Hong Kong Island. The Chinese translation means literally a gutter, or more kindly, a small aqueduct. Street name by mistake 误取街名 How about checking out Rednaxela Terrace, a side street above Sheung Wan? Rednaxela is, of course, Alexander written backwards. One interpretation had it that a Chinese clerk was writing down the name from right to left, as it is customary in Chinese writing. The mistake stood, perhaps out of amusement.

The Chinese translation was transliteral, which is a mouthful in either language. 上環的小巷列拿士地臺怎麼樣？想不到吧：列拿士地臺是亞歷 山大的倒寫。一種解釋是，一個中國文員按照中國的習慣，從 右到左寫下名字，導致前後相反。這個錯誤保留至今，中文翻 譯是直譯的，在兩種語言中都很拗口。

There are 14 streets traversed by the Hong Kong Tram on its main track stretching from Kennedy Town to Shau Kei Wan: Catchick Street, Kennedy Town Praya, Des Voeux Road West, Connaught Road West, Morrison Street, Des Voeux Road Central, Queensway, Johnston Road, Hennessy Road, Yee Wo Street, Causeway Road, King’s Road, Kornhill Road, and Shaukeiwan Road. or aficionados of Italian food, the cuisine from the Piedmont region of northwest Italy, bordering France and Switzerland in the foothills of the Alps, means rich and savoury dishes, quality wines, white truffles, indulgent desserts and home of the Slow Food Movement. Simply put, Piedmont cuisine is synonymous with exquisite dining. Thus, we were delighted by the opportunity to try a black truffle menu at Castellana Restaurant, an upscale Italian outlet specialising in Piedmont cuisine.

Castellana, which opened in 2019, is a collaboration with Chef Marco Sacco, who brings twoMichelin star pedigree from Italy. Its in-house chef, Fabiano Palombini, has created a menu that serves authentic Piedmont dishes with a contemporary twist, combining authentic Piedmont cooking with quality ingredients from Italy and around the world.

Castellana offers several set menus plus an à la carte menu. This month, Castellana is introducing a special Perigord Black Truffle menu featuring the highly prized truffle. The five-course and sevencourse menus are priced at $1,480 (includes five grams of black truffle per dish; $2,080 with wine pairing) and $1,980 ($2,880 with wine pairing) respectively. Castellana also offers a regular lunch set menu at $298 for three courses or $498 for five courses, both of which are quite reasonably priced.

There is also a “Journey Around the World” menu that offers dishes prepared with various ingredients from around the world ($980 and $1,380 for four or seven courses respectively, or wine-paired at $1,980 and $2,580 respectively) For our meal, we were treated to a selection of dishes from the various menus. We began with Radici di Sedano e Caviale, which is celery root and

Japanese sea urchin with zabaione – the sea urchin is superb, smooth and tasty. A dry and bubbly 2016 Alta Langa Casa E. di Mirafiore paired nicely with the food.

Next was Uovo di Montagna, mountain organic egg with Perigord black truffle. The egg white is meringue steam-cooked and served with the raw egg yolk, topped with large slices of the black truffle – quite a treat.

Carbonara au Koque – homemade tagliolini in au koque carbonara sauce – is excellent. The pasta, topped with cured ham, is savoury and flavourful. The pasta was cooked just the way we like it – soft but chewy, with its texture intact. A superb 2017 Damilano Chardonnay was paired.

For the main course we chose Manzo “Rangers Valley”, which is Australian Wagyu beef M7, topped generously with Perigord black truffle. The wagyu beef is tender and nicely marbled. The accompanying onion and cheese mix plus the beef sauce helped accent the beef flavour and the aroma of the black truffle. A paired glass of full-bodied 2013 Ettore Germano Barolo, made from the Nebbiolo grape variety, hit the spot nicely.

We concluded our meal with a signature dessert, the Gianduja Chocolate Mille Feuille, a light chocolate pastry that was just “ooh!” A sweet and dry 2015 Ca’ Rugate, Recioto di Soave “La Perlara” rounded out the meal perfectly.

We were thrilled with our dining experience at Castellano. The excellent Piedmont cuisine certainly lives up to its reputation. If you are looking for a wonderful dining outlet for a special occasion, Castellano is highly worth considering.■

Penang Nyonya CNY Favourities at Café Malacca 馬來一菜館的檳城風味——農曆新年撈起 This month, Café Malacca, perhaps the best Malaysian restaurant in Hong Kong, is celebrating Chinese New Year with a special offering of Penang Nyonya cuisine. The menu is a godsend to the large Malaysian and Singaporean expatriate community here who may think of Café Malacca as a culinary home-from-home during CNY. This is particularly true for those from Penang whose love and for home-made cooking is second to none. It is also an excellent way for Hong Kong locals to try out the much-touted Penang Nyonya cuisine.

Nyonya, or Peranakan cuisine, originated from the Peranakans, descendants of early Chinese immigrants who settled in Penang, Malacca, Singapore, and Indonesia and then intermarried with local Malays. The food prepared by the women who were solely in charge of the kitchen combined southern Chinese, Malay and other cooking influences. The Peranakans are justly proud of their family heritage, with deep respect and love for their grandmothers and mothers. The old Malay word Nonya (also spelled Nyonya), a term of respect and affection for women of prominent social standing (part ‘madam’, part ‘auntie’), has come to refer to the cuisine of the Peranakans.

The menu served at Café Malacca is primarily Penangbased Nyonya dishes, some available in Hong Kong for the first time – a real treat for foodies like us. Kerabu Prawns – a zesty and refreshing salad of prawn and cucumber slices tossed with sambal belachan, ginger flower and lime – is superb, as is Bakwan Kepiting – a crab and pork meatball soup with bamboo shoots akin to Lion’s Head Meatball.

Inchi Kabin, a Penang-style fried chicken marinated with spices and coconut milk, served with fried bread and special Worcestershire sauce dip, is finger-licking good. The bread is crunchy and tasty.

Also excellent is Assam Prawns, a unique Penang Nyonya dish in which prawns marinated in a tamarind paste are shallow fried. Jiu Hu Char, a lettuce wrap, is another beloved Nyonya dish – the filling is a mix of many shredded ingredients most importantly cuttlefish strips, yambean, carrots, mushrooms, cabbage and many others. Meanwhile, Kiam Chye Ark, a duck and pork leg soup with salted vegetable, ginkgo nuts and mushrooms is savoury and appetising, akin to a Hakka dish.

Curry Kapitan, an aromatic Malaysian Nyonya chicken curry, mildly spiced with a thick semi-dry curry, named for its popularity with colonial British officers, is also excellent. Finally, Nyonya Chap Chye, a mixed vegetarian dish with cabbage, carrots, mushrooms, dried beancurd sheets, cloud ear fungus and glass noodles stewed in preserved bean paste, goes perfectly with rice.

Nyonya desserts are excellent too: we had Pulut Tatai – a glutinous rice cake coloured with blue pea flowers and topped with kaya, a coconut jam; Kuih Bingka – a baked tapioca cake; and Kuih Dadar – pandan crepe roll filled with grated coconut in palm sugar, all temptingly delicious.

At the meal’s conclusion, we were replete and content, a sure sign that the Penang Nyonya cuisine is yummy comfort food, done well.

We should mention that during Chinese New Year, Café Malacca is offering auspicious Lo Hei, served the traditional way. So be sure to stop by and indulge in an authentic and filling Penang Nyonya meal at Café Malacca. We promise you will come away totally sated.

Sumptuous Poon Choi Dinner at Loong Yuen 龍苑中菜廳的豐盛晚宴 Loong Yuen, located in the Holiday Inn Golden Mile, is one of our favourite Cantonese restaurants in town and known for its authentic Cantonese dishes at reasonable prices. To celebrate Chinese New Year, Loong Yuen is offering its annual Poon Choi Special, available as either dine-in or take-out.

Poon choi, or basin food, is a traditional dish that originates in the New Territories where local villagers would get together to celebrate Chinese New Year. To feed the whole village efficiently, the different food items would be prepared and layered into a large basin. At each table, the villagers would then share and eat out of the same dish, starting with the top layer. For a traditional poon choi, the basin is usually laden with chicken, pork, seafood and other expensive ingredients.

This year, Loong Yuen’s Poon Choi special comes in two sizes: for four people ($1,288) or for six people ($1,888). Sixteen food items are featured. These include much-prized Braised Abalone, Sea Cucumber marinated in abalone sauce, Dried Conpoy, Marinated Goose Web, Prawns in Tomato Sauce, Pig’s Feet, Steamed Chicken, Minced Ling Fish Ball, Fat Choy, Mushroom, Bean Sprouts, Turnip – excellent for soaking up the juices, Dried Bean Curd Skin, Roast Duck, and tenderised Pig Skin. As the poon choi was being devoured, we appreciated how eating this way fosters togetherness as everyone is eating out of the same pot, so to speak, and the conversation tends to flow more naturally.

Braised Giant Garoupa Fin with Pork Belly and Bamboo Shoot in Casserole ($498) is tasty and appetising. Steamed Fried Rice with Scallop in Fresh and Deep-fried Garlic ($188) is also superb, and the Simmered Pea Sprout in Supreme Soup ($238) is refreshing and nutritious. We wrapped up the meal with Steamed Red Date Cake (4 pieces; $45), a yummy and auspicious dessert for good luck.

If you want to avoid all the hassles of cooking, perhaps consider visiting Loong Yuen for a sumptuous poon choi meal as lunch or have it as take-out. We highly recommend it.

Hunky Dory It is always a pleasant surprise to discover a new hidden culinary gem. So it was a delight to visit Hunky Dory, serving international cuisine restaurant tucked away in the middle of the Science Park, next to the Tolo Highway.

Located on the garden podium of one of the buildings in Science Park, the restaurant’s frontage opens to a spacious terrace adjacent to a large lawn overlooking the surroundings – perfect for afternoon and evening drinks.

Hunky Dory offers a casual dining cuisine, serving a mix of British, Korean and other international cuisines of appetising and hearty dishes. In the short while since it opened, it has gained a following, attracting diners from the Science Park as well as residents of Sha Tin, Ma On Shan and Tai Po. We sampled a generous and varied selection of its menu, beginning with several sharing snacks that included Nachos ($78), and Fish & Chips ($118). Like every other dish we tried, these were generously portioned.

Hunky Dory offers a wide selection of pastas. We chose the Cream of Mushroom & Truffle Angel Hair ($118) with onion, mushroom, asparagus, parmesan cheese, white wine and truffle cream sauce, and a new dish, Budge Jjigae Korean Mini Army Stew ($118) – sausage, luncheon meat, mushroom, tofu, shin ramyun, Korean Rice cake and Korean chili paste, which is rather tasty.

For the main course, we had to try its Beef Wellington ($188), served with bacon, sour cream cheese baked potato, shallot, thyme, Dijon mustard, mushroom, prosciutto and puff pastry. For good measure, we also had Royale Smoked Salmon Eggs Benedict on Avocado ($108), a real delight and an excellent breakfast dish. For desserts, the S’ mores Dip ($58) – flamed marshmallow served with pecan & peanut, melted chocolate sauce and wheat cracker, fills one up nicely.

OBP “Sool Jip” New Korean Dining Concept OBP“Sool Jip”——全新的韓國餐飲理念 OBP, a quiet Korean bar tucked away down a side entrance off Old Bailey Street in Soho, is a cool F&B concept introduced to Hong Kong by the dining group Westside Hospitality. Specifically, OBP offers Sool-jip, a casual drink-and-eat experience that is popular in Korea, akin to a casual bar with tasty food or a dai pai dong with plentiful drinking.

OBP serves quality Korean drinks such as soju and specialty cocktails, together with appetising snacks and specialty dishes. The décor of the outlet is casual, relaxing and low-key, consistent with its counterparts in Korea and its trendy location.

For drinks, we chose Mak Geol Ee, Dam Un Premium ($180/750 ml), a premium milky rice wine that is naturally fermented and unfiltered.

This premium brand is exclusively supplied to OBP from Korea. The soju, poured into a copper kettle, is smooth and easy to drink, and we drank a lot of it. We also tried a few glasses of Sah Si Tong Eum Ju, ($600/1000 ml) a premium wine originating from the Joseon Dynasty.

For cocktails we tried Dokdo Gimlet ($120), made from green apple shrub and lime juice, and Red Devil 02 ($120), a Campari drink infused with sweet vermouth.

The food is excellent too; a few dishes were new to us. For snacks, Beef Tartare ($168), prepared from wagyu beef tartare, aged soy, fresh pear, dashi jelly and quail egg, is tender and savoury. The Salad ($98) of baby gem lettuce, yuzu dressing, smoked ikura and shallot chips is also refreshing. Honey Butter Corn Ribs ($88) in a homemade honey butter– glaze with parmesan is sweet and tasty, as is Seafood Pancake ($128), comprising prawn, squid, mussel, spring onion house pickles.

We added a main course, a signature dish, Braised Short-Rib ($358) of USDA prime short-rib, house-made soy broth, potatoes, daikon, carrots and pine nuts, which is tender and flavourful, and a fitting end to our session.

n 1277, the Mongol hordes of Kublai Khan swept through southern China. Legend has it that Yi Wong (Duanzong), the boy Emperor, fled to Lantau Island and set up court at Mui Wo (Silvermine Bay). He died the next year in a shipwreck and was succeeded by his seven-yearold brother, Wei Wong (Bing Di), who became the last emperor of the Sung Dynasty.

bamboo matshed inside. The Emperor moved into this makeshift palace. Next morning, the boy had a look around his new abode. The story goes that as he stood there admiring the view, he was observed muttering to himself and was approached by his chief couftier, Loh So-fu.

Wei Wong and his court abandoned Lantau and landed at a spot near the site of Hong Kong's former airport at Kai Tak. They had a large fleet that was badly damaged and the harbour provided a safe anchorage where the Sung navy could repair their junks. The loyal local village headman, Tam Kung, welcomed the Emperor.

Their tiny hamlet was composed of a few mud huts and had little to offer in the way of shelter.

The villagers were so poor that they didn't even possess a temple for the Emperor to stay in.

"l have counted eight mountains," said the child, "so there must be eight dragons hereabout."

On a nearby hill, there was a terrace that had a cave of sorts, consisting of three very large stones: two of the stones acted as walls and above them was a gigantic boulder which formed the roof. Tam Kung and his peasants cleaned up the cave and hastily constructed a

"What is Your Majesty saying?" asked Loh So-fu.

"ln reality there are nine dragons in this locality, Your Majesty," replied Loh So-fu, grovelling at his feet. "l don't understand. I have counted eight mountains over and over again and there are only eight dragons in this locality, " squealed the indignant child. "Is that correct? Where is the ninth dragon?"

"Your Majesty's sacred person is the ninth dragon," explained Loh So-fu.

The conversation was overheard by Tam Kung, the village elder. Kowloon means "nine dragons" in Chinese, and that, according to legend, is how Kowloon got its name.

陸秀夫跪下答道：「皇上，其實這兒有 9條龍。」

The Emperor lived for a short time under the giant rock in Kowloon. The great boulder was later known as the Sung Emperor Terrace, after the child.

Much later, in 1848 – during the Ching Dynasty, shortly after the Opium War, Kowloon Walled City was built nearby and included a fort, a magistracy and a garrison of 150 soldiers. When the British took over the New Territories after the Convention of Peking, under the terms of the lease they were required to preserve this sacred site. The Hong Kong Government built a splendid granite balustrade around the boulder and it became a holy place for pilgrims.

However, during World War Two, the rock, the hill and Kowloon City walls were all demolished by the Japanese and the granite used to enlarge Kai Tak Airport.

Poor little Wei Wong's forces were no match for the Mongols. After a series of defeats, he was cornered by Kublal Khan's fleet and his navy destroyed in a ferocious sea battle in the Pearl River Delta. The boy emperor drowned trying to escape. For the next century China was ruled by the Mongols in a period known as the Yuan Dynasty.

In 1962, the Hong Kong government created a Sung Wong Toi Garden containing a stone tablet made from a part of the Sung Emperor's Terrace that had somehow survived the Japanese occupation. It was carved with the name ‘Sung Wong Toi’ in three large Chinese characters.■

小皇帝不服氣，憤憤地說：「我真不明白。我數完又數，明明 只有 8 條龍，你說對不對？第 9 條龍在哪裡？」 陸秀夫解釋：「皇上正是那第 9 條龍啊。」 他們的對話給譚公聽到了。九龍由是得名。 宋帝昺在九龍的山洞只居住了一段很短的時間。這塊大石就是 後來的宋皇台。 1848 年，清朝發生鴉片戰爭後，九龍這個地區漸 漸發展起來。九龍有一座堡壘，一位地方行政官以及一隊共 150 人 的軍隊。 1898 年，中英雙方簽署北京條約，香港作為英國殖民地 的條件之一，乃要保留宋皇台這個神聖的地方。香港政府以花崗岩 在大石旁邊築起圍欄，這兒成光神聖的遊覽地。第二次世界大戰期 間，大石、山和九龍城牆被日軍破壞，花崗岩則用以擴建啟德機 場。 可憐的宋朝軍隊不歇強大的蒙古軍隊。經過一連串的戰敗，宋 帝昺陷入困境，在激烈的海戰中，他的軍隊在珠江水域遭到痛擊。 小皇帝在逃難時不幸遇溺死亡。此後，中國被蒙古統治，這便是元 朝。

1962 年 , 香港政府建立宋皇台公園，裡面有一塊大石，刻有宋 皇台三字。這塊紀念碑出取自宋皇台附近一塊僥倖保存下來的石 頭。■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
