Changing with the Times LOCAL WEDDING PLANNERS EXPLAIN THE RECENT TRENDS IN CEREMONIES AND RECEPTIONS By Kevin Michell

W

edding trends are always changing, slowly at first as couples often plan their celebrations a year or more ahead of time. But when something catches on everyone rushes to make popular wedding trends a part of their own ceremonies and receptions. With certain trends on the rise over the past year—including the influence of 2018’s royal wedding—and others just on the cusp of becoming ubiquitous, wedding plan-

ners from around Cincinnati shared their thoughts on what’s here to stay and what’s on the way out.

UNIQUE VENUES

One of the biggest changes over the last few years—and one that seems likely to keep going for a while—is finding unique spaces to be wed in and for holding receptions. “The unique venue is still everyone’s desire,” says Elisa MacKenzie, owner of

Fort Thomas, Kentucky’s Elegant Events. “None of them want to get married where anybody else got married.” Indeed, nontraditional venues continue to rise in popularity with fewer religious ceremonies and more desiring to have both the wedding and reception happen at the same location. “When I first started out 15 years ago everything was a church wedding and then you would transfer,” says Dora Manuel, owner of Viva Bella Events based in Oakley. The thrill of having the wedding day take place all in one unique space has led to couples eschewing ballrooms in favor of renting out museum wings, concert

venues, multipurpose spaces like The View atMt. Adams and plenty of outdoor areas. Brigid Horne-Nestor, owner of i-do Weddings & Events in Hyde Park, has planned weddings recently at a hangar at Lunken Airport and on the Purple People Bridge.

NEW ACTIVITIES BEFORE AND AFTER CEREMONIES

Couples have been rethinking the sequence of events leading up to their wedding day over the last year or so by adding a cocktail hour or evening gettogether for all guests after the traditional rehearsal dinner. Sometimes this takes the form of a morning gathering— such as an organized brunch—before the ceremony instead. MacKenzie describes that while afterparties have been popular for the last few years the rise of welcome parties has ticked up in 2019. “Used to be you didn’t do that,” she explains. “I think I did my first one two year ago and now I don’t think I’ve done a wedding without one.” Wedding days can be so hectic and involved that the bride and groom barely get to talk to their friends and family during it, so these welcome parties provide

an opportunity for the bride, groom and wedding party to mingle with guests in a casual setting. This works especially well with guests coming in from out of town for the weekend. There has been an increase in preceremony gatherings on the day of in cases of outdoor weddings. Often, it’s a light refreshment hour in a garden or other outdoor space, where champagne, lighter drinks and nonalcoholic offerings like tea or lemonade are provided. Horne-Nestor also points out that brides and grooms are taking the initiative to offer suggestions or preplanned activities during the day before evening ceremonies or if there’s a lengthy break between the wedding and an evening reception. Often this takes the form of picking out museums or other attractions like the zoo or aquarium so visiting guests can see the sights of Cincinnati. “In some cases, they’re organizing actual tours of those places where a bus comes to the hotel, picks up the guests, takes them to the museum and then brings them back to get ready for the wedding,” Horne-Nestor says.

One of the elements most prone to change are new motifs in decorating both wedding ceremonies and receptions. Two of the biggest emergent trends there are the use of clear Lucite plastic in surprising places and nontraditional plants in decorative floral arrangements and centerpieces. “It’s everywhere,” MacKenzie says of the Lucite trend, noting that there’s been a shift from flower walls and arches to using clear plastic for everything from table numbers and welcome signs to menus and chairs. Meanwhile, pampas grass and wheat are working their way into everything floral, including bouquets. Manuel notices that the puffy, wavy grasses are joining wildflowers and field flowers in expanding floral arrangements, speculating that it’s an extension of the recent popularity of orchids in décor. Now, she’s seeing fewer tight, round bouquets in favor of more wild and organic flowers and plants. Horne-Nestor points out that pampas grass is very easy for florists to work with and gives arrangements a lushness without being too flashy. “It makes centerpiece and different arrangements really multidimensional,” she says, adding that i-do recently planned a wedding with a hanging pampas grass arrangement suspended over the dance floor. Manuel has also noticed color scheme changes in weddings she’s planned with Viva Bella. “We’re starting to see more dark and edgy color palettes,” she says. “We’ve done so many deep blue pattern linens this past year.” Creative lighting and projections have increased in popularity as well. Manuel wonders if Lumenocity and Blink have had some effect on local weddings that’s led to this, as weddings are featuring a lot more dynamic usage of light than spot lighting and brides and grooms are really experimenting with what they can use it to accomplish. “The biggest way to make a huge statement in a space is lighting,” she explains. “You can go so far with a little bit of a lighting budget.” The planners at i-do have seen velvet emerge as a popular material in wedding design between table linens and napkins. It’s a popular fabric with fall and winter weddings especially, Horne-Nestor says.

FOOD FOR THOUGHT

There has been a rise in more elaborate cakes doubling as decorative centerpieces but less popular than ever is the traditional cake cutting. MacKenzie, in particular, has seen less emphasis on the cake in favor now of a wider array of smaller desserts. Dessert buffets and pies—such as those from one of MacKenzie’s favorites, Fork and Pie Bakery in Newtown—are a real recent trend. Horne-Nestor has also seen Graeter’s ice cream incorporated more often. Meanwhile, Manuel points out the in-

creasing need for vegan and vegetarian dinner options. “Vegan menus are going to be really big,” she says, pointing out that planners and caterers are making sure to have food options that forgo meat but rise to the same quality as traditional wedding entrees. “I think that the top caterers in our market have to accommodate that need.”

ceremonies themselves. One of the biggest trends is finding ways to integrate music into the whole day. Horne-Nestor has seen many more unique song choices for walking down the aisle and the procession after the ceremony. “We’ve seen some pretty fun selections where they take a classic rock song and they have it played it on strings—that’s really popular right now,” she explains. “Sometimes, you can just tell the guests are trying to figure out why the song is familiar and then they realize it’s Billy Idol’s ‘White Wedding’ and they’re like, ‘This is so cool!’” She’s also seen a rise in musical announcements for moving people from cocktail hour to the reception proper. Some weddings have used bagpipes or jazz and brass bands to notify and lead guests to dinner, modeled after the popular New Orleans tradition of second-line parades where everyone, dressed to the nines, follows the band to its destination. When the reception happens there tend to be more surprises and delights awaiting guests. “Flash mobs have become a big thing,” MacKenzie says. One of Elegant Events’ September weddings had one where a song


special to the newly wedded couple opened the dance floor and a 15-person flash mob that the groom had hired came out to do a routine and get the dance floor going. “I’ve had a few people request that and that’s new—I haven’t had that requested before and I’ve been doing this a really long time.” MacKenzie is also a fan of seeing brides and grooms splurge a bit more on having prominent and professional bands play receptions. High-profile, high-concept dance floor entertainment is becoming more popular to spend on than elaborate touches of décor. Another form of that Horne-Nestor has seen at i-do surprising impromptu performances through the reception, such as The Three Waiters. “They pretend to be three of your servers and then they burst into song and do this little opera performance which is awesome,” she describes. “It’s a little surprise for the guests.” Both Horne-Nestor and MacKenzie have noticed the inclusion of painters and caricature artists as additional entertainment. representing the night experienced by the bride, groom and all the guests. Another interesting trend Horne-Nestor has noticed is creating scents for receptions. “People have an idea of what kind of

smell they want emanating when guests enter the room,” she explains, “whether it’s a certain floral smell or we did one over the holidays that had cinnamon and pumpkin pie notes in it.” n

Rehearsal Dinner Decisions A RESTAURANT OR CATERED EVENT VENUE EACH HAS DIFFERENT ADVANTAGES FOR COUPLES By Eric Spangler

o you’ve picked out your wedding and reception venues and now it’s time to choose a location for the rehearsal dinner. But should you have the rehearsal dinner in a restaurant or at another venue with catered food? It’s a great question and there’s really no wrong answer, say experts. Heidi Kolby, owner and lead wedding and event planner at 44th & Luxe Events, says couples she

works with are using both locations for their rehearsal dinners. “I see a lot of popular restaurants downtown that have private event space and then I also see some smaller venues downtown that people will then hire local catering staff,” she says. But the trend may be starting to shift more into venues with catering, says Kolby. “I’ve been seeing more and more people renting out smaller venues—like The Skeleton Root is one in (Over-the-Rhine),” she says. “I’ve seen a lot of people kind of going more of a cool venue space vs. kind of a traditional restaurant deal.” Not that restaurants have fallen out of favor for rehearsal dinners with today’s couples. Kolby says many of the couples

she works with have their weddings and receptions in downtown Cincinnati. “A lot of people have their rehearsal dinners at Nada or the Backstage Event Center or LouVino, places like that,” says Kolby. The advantage to conducting a rehearsal dinner at a restaurant is the planning is much easier because everything, including the food with preset menus, linens and

tables are already in that restaurant, she says. “You don’t have to go through a wide variety of things,” Kolby says. That’s certainly the case with The Newport Syndicate in Newport, Kentucky. The event center has multiple private event spaces available for rehearsal dinners and the food, beverages and alcohol are all handled on-site, says Samantha Haas, one of the event coordinators at The Newport Syndicate. “We do all of our own in-house catering” and bar services, she says. In addition to the entrees and side dishes on the various

menu options, The Newport Syndicate also provides an assorted petite dessert option, says Haas. “That tends to get good reviews,” she says. With multiple private event spaces The Newport Syndicate can handle a range of different size rehearsal dinner, Haas says. “I do private events starting as low as 20 guests and I’ve done events as large as 600 guests,” she says. Another popular Northern Kentucky spot is also able to cater several hundred guests. Ken Rouse, catering director for Pompilio’s restaurant in Newport, Kentucky—which

has been in business for 86 years—says the sky is the limit in terms of the number of guests he can accommodate with his catering services. “I’d say it’s unlimited,” Rouse says. “I haven’t had any request I’ve had to tell them no so we’ve done some big ones—several hundred.” He says couples can choose almost any thing on the Italian restaurant’s dinner menu for their rehearsal dinner. That includes the always-popular chicken

Parmesan, chicken Alfredo on fettuccine and lasagna, Rouse says. Desserts include tiramisu, cannoli or gourmet cookies, he says. Even if an item isn’t on Pompilio’s menu

Rouse says he can always make it. “We’re family owned so we’re not a chain stuck to any certain guidelines,” he says. “If they want prime rib we’ll get ’em prime rib and make it for them.”

That flexibility is one of the main advantages to having the rehearsal dinner catered, says Kolby. “You can kind of design the menu based on what you’re looking for,” she says. “There’s a little more flexibility.” That flexibility is important because some couples whose families are from different regions of the country like to have a rehearsal dinner that incorporates foods from each of those regions, Kolby says. One recent wedding she planned included a couple whose family was from the South and the Chicago area. “It was fun in the sense that it was kind of all of the bride’s and groom’s favorite meals from both those places they grew up,” she says. “So it was a little more special.” Another trend is incorporating local food and beverages, says Kolby. “The big thing there is that a lot of people want more customized food and beverages,” she says. That includes the locally brewed Rhinegeist beer vs. domestic beers and food from local restaurants such as Gomez tacos, Kolby says. “I think a lot of venues that are doing well kind of can help accommodate those requests of the bride and groom,” she says. n

The Dos and Don’ts of Wedding Catering LOCAL CATERERS SUGGEST COUPLES KEEP FIVE THINGS IN MIND WHEN PLANNING THE MENU FOR THEIR BIG DAY By Corinne Minard

or many couples their wedding may be the first time they’ve ever had to book a caterer. We spoke with Mavis LinnemannClark, owner and self-proclaimed fearless leader of The Delish Dish, a Covington, Kentucky-based boutique custom catering company, about the dos and don’ts of wedding catering for those diving in for the first time. Do have an idea of what you’re looking for. While couples don’t need to have a menu planned out already, LinnemannClark advises couples to have an idea of the food and atmosphere they want. “Is it going to be casual? Is it going to be more formal? How do you want your guests to feel when they arrive and how do you want the food to reflect that?” she says. “We can kind of help people make menus from there.” Knowing this can also help you narrow down your list of possible caterers. While The Delish Dish customizes all of

its menus, other caterers may start with set menus that can then be personalized. Do be aware of the budget. LinnemannClark says couples should remember that many things go into catering outside of the food, which can elevate costs. “I think it’s always a good idea to realize that they’re bringing the restaurant to you, wherever you’re at,” she says. “We’re bringing all the food with us and setting it all up, then lots of cooking on site and then serving it all and cleaning up and making all the dreams happen without anyone knowing what’s happening behind the scenes.” The Delish Dish is a full-service catering company, so services like staff, bartenders and linen and plates can all be included in the final number. Don’t try to DIY. While some couples

may try to do some things themselves Linnemann-Clark says that it’s usually not worth it. She’s seen couples try to provide their own appetizers, set up their own tables and even provide their own plates. According to her, it rarely goes well. “A lot of people tend to DIY, then they get to that day and they think that it’s going to be easy and it’s like a nightmare,” she says. For example, she’s seen couples not plan for enough food during the cocktail hour. It’s also just not fun to be doing some of these tasks the day of your wedding. “People say, ‘We’re going to bring our own plates and stuff,’ and they always forget. Always. And then day of they have to run around and go get stuff,” she says. “People say, ‘Oh, we’re going to set it all up and break it down ourselves,’—like tables and

chairs and stuff. No one wants to do that in the hour before their wedding.” Do be open to new ideas. Your caterer knows what’s possible and may be able to suggest something for which you didn’t think to ask. Linnemann-Clark says that The Delish Dish has been creating custom stations for couples, like a root beer float bar or a chicken and waffles station, and combining them to create unique menus.

“They’ll have a pierogi bar, a salad bar and a taco bar, which is not something you would ever think to put together,” she says. The Delish Dish has also created custom grazing tables—a table featuring meats, cheeses and crudité, often placed on parchment paper instead of plates for a more relaxed feel—and minidessert stations instead of a cake. Don’t wait to book. Linnemann-Clark

recommends booking six months to a year in advance. “We’ve already booked 15 or 20 weddings for next year and we only do two a day. So we already have a couple days we’re blacked out,” she says. It’s particularly important to book ahead if you’re getting married in one of the four busiest wedding months of the year—May, June, September or October. n

Nitya Sreevalsan & Matthew Nichols HILTON CINCINNATI NETHERLAND PLAZA MAXIM PHOTO STUDIO While attending the University of Cincinnati the couple had attended a couple of events at the Hilton Cincinnati Netherland Plaza and loved how beautiful it was, says Nitya, who grew up in West Chester and is now living in St. Louis, Missouri. “So when we were looking at venues that would be able to accommodate the size of wedding we were going to have we thought it was kind of a shot in the dark,” she says. “We didn’t really realize we would be able to have our wedding there. It’s a dream location.”

Summer Schneider & Jonathan Krasnov PINECROFT AT CROSLEY ESTATE MAXIM PHOTO STUDIO The couple was looking for a venue that would allow them to have an outdoor wedding ceremony and a tented reception, says Summer Schneider, of Taylor Mill, Kentucky. “When we saw photos of Pinecroft we fell in love with the landscape and liked the idea that we could spend the entire day at the house getting ready for the wedding,” she says. “We wanted to have the reception in the same place as the ceremony because we were going to have a lot of out-of-town guests and we wanted to keep it simple. We also wanted an outdoor wedding in July and thought an air-conditioned tent was a necessity.”
