Welcome to the October issue of in.Design!

With the independent Hotel show this month and the sleep event in november, we’ve decided to focus on the hospitality sector for our next two issues. And as media partners for sleep, we’ll be looking at this show in a lot more detail in our november issue! This event is a great excuse to visit London, even if hospitality is not a sector in which you specialise - hotels lead the way in so many interiors trends you’re sure to pick up some great ideas!

And if you do work in hospitality, David Morris, creative director of international hospitality interior designers studio Proof, is someone you should be aware of - follow his week in in.His Life.

in in.Vogue we see what’s trending in hospitality furniture, and everyone we spoke to seems to agree that earthy tones and natural materials are back, whilst in hospitality lighting the increasing popularity of LeDs are a major trend, as are the use of metals, especially copper and warm tones.

And finally, Philip Harrison describes in in.Brief how they created the design and branding for barbecue-inspired family restaurant Firejacks.

Lessons In Love…

Sleep, Europe’s hotel design and development event, has announced that over 150 exhibitors will be showcasing their collections at what will be a packed show this year!

A

n event which is globally acknowledged for ideas, installations and experiences that tap into the pulse of the hotel design industry, Sleep’s theme for 2017 is Loyalty: Lessons in Love.

This is a concept reflected by this year’s exhibitor mix, 30% of which have stayed loyal to Sleep year-on-year, returning to reveal new products and showcase their most renowned collections. This year will also be more international than ever before with exhibitors coming from Italy, France, Germany, Portugal, Denmark, Holland and the USA, and other countries. A Week In The Life Of David Morris David Morris is Creative Director of leading hospitality design practice Studio Proof, whose portfolio includes award-winning hotels, F&B spaces, spas and residential projects. David takes pride in creating designs with an original aesthetic, without gimmicks or house style, and his background in branding helps him to combine the science and art of great design, working with his clients on everything from architectural interventions to Do Not Disturb signs Monday Today is my turn to do the school run. I get my boys there early for their Sports Club before heading to the office. This is one of my few chances to drive my car – it’s an opportunity I always relish. Once I reach the studio, I meet with the team and plan the week ahead. We’re a small and dynamic practice, headed by myself and Chris Holmes. The office itself is a hub of activity with sketches, material samples, and points of inspiration covering every available surface.

Bonnington Gardens – and brainstorm a new pitch we are working on. Being a Monday, it’s a late one in the office writing a fee proposal and checking shop drawings from a joiner on one of our projects.

Tuesday I arrive on site early at the Royal

Chris begins by briefing us on a new residential project in an affluent area of London before I tell the team about a recent research trip to New York, where I also picked up our Casual Restaurant Finalist Award for Grand Café in NH Collection Grand Krasnapolsky Amsterdam from Hospitality Design Awards.

Chris and I pop out to lunch at our favourite hidden oasis, Italo – a great little café located in the guerrilla gardener paradise that is

The Grand Café in NH Collection Grand Krasnapolsky Amsterdam Lancaster London hotel to oversee the installation and critical height settings of the beautiful ‘OLed’ light fixtures by Blackbody, which help pronounce the reception desk, and Nemo’s ‘Crown Plana Maga’ chandeliers that dominate the lobby area. We work around the hustle and bustle of the hotel’s guests and staff, as we have been doing for the past two years since the project went on site.

It is currently the largest hotel refurbishment being undertaken in London and has been a phenomenal journey, with 412 guestrooms

housed in an 18-storey mid-century tower, a newly structured lobby and façade, as well as dining venues and large functions rooms. This is the perfect sort of project for me, as it involved us in the entire process from branding and brief development to artwork selection, from the website to the bathrooms.

It is now 70% completed and as I stand in the new triple height lobby space, surveying the light installations and plotting the next steps for the introduction of the huge new carrara marble staircase, which will

represent 300m2 of the stone, I feel elated.

It’s wonderful to be able to see a project come together and this one has been a real thrill.

Wednesday I get to City Airport to catch an early day-return flight to Amsterdam for a meeting with a potential new client who has seen our work at NH Collection Grand Krasnapolsky.

Afterwards, I drop into the hotel for a spot of lunch at the Grand Café. We completed

The Mirror Bar at the Landmark Hotel the public area’s refurbishment last year and it’s always special to come back to projects after they’ve been completed to enjoy the space as a customer. It’s great to be able to live the experience that you helped to create. After lunch, I grab the chance to catch up with an old friend Remco Groenhuijzen, the General Manager at Sofitel Legend The Grand, and have a quick cocktail at one of my favourite bars, The Lobby Nesplein, before heading to the airport.

Thursday Back in the office this morning for a conference call with an Italian furniture

manufacturer who is seeking out a partnership with us on a new furniture range aimed at the luxury hotel and residential sectors. We are basing the collection on a few of the pieces we have made over the last few years, and I’m relishing the opportunity to expand upon them and hark back to my original training in product design at the London College of Furniture.

I return to the Royal Lancaster for a meeting with hotel’s Food & Beverage team to discuss menus in the new dining spaces; it is important for us to bear the dining options in mind when creating the restaurant and bar

spaces of projects as what is being offered naturally has a huge impact on our layout, scheme, furnishings and the way we map out the back of house areas.

After this, I lead a small group of journalists around the newly completed guestrooms – we have designed each around the wraparound windows, and on this early Autumn evening the dimming light casts a beautiful glow over Hyde Park’s changing leaves, bringing a serenity to the space.

The Royal Lancaster, London samples of bespoke carpets we’ve designed for a project, followed by a trip to Kensington to meet with the owner of one of London’s largest luxury residential blocks.

We spend a productive morning going over our plans for upgrades to both the brand and public spaces in detail and discussing the building’s rebranding.

I call the office to check in with Chris whilst making my way to The Landmark Hotel where I’m meeting my friend and fantastic branding consultant, Kenny Laurenson. We find ourselves in the Mirror Bar, which Studio Proof refurbished back in 2010, and get to talking. I often meet up with Kenny and other knowledgeable friends in the industry to cross-fertilise ideas on projects and discuss brand development within the hospitality sector. I find this breeds great creative results and means that we’re always able to keep our fingers on the pulse.

Saturday The weekend means a drive down to my old shipwright’s cottage in Whitstable with the family. We bought the property a few years ago and it needed a lot of loving renovation. It was certainly an interesting experience being my own client, and I had to consider ways in which to balance the ever-changing demands of two growing boys with my own aesthetic wishes.

We go to the Turner Contemporary in Margate to see a retrospective on Turner before heading to the Sportsman pub in Seasalter – a lovely Michelin-starred spot on the seafront – for oysters and a leisurely lunch. We take a wind-blown walk on the beach afterwards. For me, weekends in Whitstable are the perfect antidote to the fast-moving, high pressure reality of London and the work week. I’m truly lucky to be able to get away from it all and spend time with my family in such a calming

and grounding environment, and feel that these beachcombing weekends always reinvigorate me.

Sunday After our wonderful and hearty breakfast at the Windy Corner Stores & Café has digested, we head to the seafront courts for a game of tennis. The fresh morning air is crisp and the sound of the waves on the shore can be heard between volleys. When we’ve had enough, we pack up and drive back to London where I take my time to cook a big meal for our family dinner. Once enjoyed by all, I check my work emails and draft a blog I’ve been asked to pen for a design website.

I spend a mellow hour before bed rifling through my extensive vinyl collection, letting the smooth sounds of Beck and The Boards of Canada wash over me.

Bright Ideas The right lighting not only entices clients into an establishment, it makes them want to cosy up and stay put! Some of the industry’s best designers and makers tell Juliet Davies what they’re seeing trend in today’s hospitality sector.

ondon Design Week has been and gone, and Artifact Lighting definitely impressed with an innovative display!

“our factory-inspired Fusion range, combining matt colours with polished copper accents, was a huge hit with visitors with the industrial style still going strong, while modernist designs were also proving popular among contemporary hoteliers,” said emily Taylor, Sales & Marketing, Artifact Lighting (artifact-lighting.com). “With many boutique hotels opting for a relaxed, rustic style, metallic tones such as copper and brass are a subtle way to add a touch of class to complement raw materials and natural colour schemes. “our Copper Wall Lights have been used in many guest rooms as bedside lamps. The Coolicon Wall Light is a more minimalist take on the trend for luxury hotels, while at The Harbour Inn, in Bowmore, they combine our more industrial design with simple, modern pieces to create a welcoming interior.”

Interior designers are pushing the boundaries more than ever before, always looking to create unique interior schemes for hotels that offer something different, and inevitably lighting is an essential part of that.

“It’s not just enough to come up with great designs that look the part, suppliers need to demonstrate both technical capabilities and flexibility when it comes to manufacturing and design. You have to be able to offer the full package - or someone else will!” said Will Chelsom, Managing Director, Chelsom (chelsom.co.uk). “Sustainability is something which is obviously key throughout the industry and will continue to become more important.”

Chelsom’s latest collection, edition 25, has been designed with sustainability as a key consideration.

20 : in.Vogue product innovations showing they take sustainability seriously without compromising on design,” added Will. “With ever increasing requests for LeD lighting solutions, suppliers have had to incorporate a lot of expertise in to such requests, because in some cases LeDs are not necessarily the be all and end all, so it’s important to always strive to find an effective and innovative lighting solution and to ask if there is a smarter way.”

For example, Chelsom have taken standard products with fabric shades and incorporated the latest e27 retrofit lamps from osram which provide great colour temperature, provide plenty of light output, instant start, are the same size and shape as old incandescent lamps and have dimming capabilities. For other products such as task lighting or reflected lighting Chelsom have used integral LeD chip boards behind diffusers for good directional light which can be dimmable and therefore much more functional.

Harriet Daniels, Founder and Creative Director of Tigermoth Lighting Ltd (tigermothlighting.com), told us that using lighting as a statement feature in interiors is a long term trend which has been especially noticeable in the hospitality industry.

“A clever combination of architectural and decorative lighting has been used to great effect in recent years to create a sense of drama and atmosphere in bars, restaurants and communal areas in hotels,” she explained. “We are seeing an emerging trend where designers are extending this concept to individual rooms, with a greater emphasis on great quality decorative lighting. The inclusion of luxurious finishes and a variety of textures add a note of

“The popularity of dim to warm products is supported by a growing demand in this market for products with a warmer CCT that don’t compromise on performance and high output as required for larger, more open spaces.”

Luke Thomas, Design Director of John Cullen Lighting (johncullenlighting.com) agrees that LeDs are fantastically versatile.

“We are seeing a real demand for our Contour linear LeD tape, which is frequently being used to create subtle lighting effects such as uplighting behind banquette seating, providing a soft glow under a bar overhang or for adding drama to shelving,” he said.

“Colour temperatures of 2700K or the warmer 2400K give an inviting and relaxing feel to the space. We tend to find that there is little demand for colour changing lighting which can feel less glamorous when applied to luxury interiors. With the Contour tape as a soft backdrop, Polespring LeD downlights with a 10 degree beam can be used to create a drama on bar tops or the centre of dining tables.

“There seems to be a resurgence in the artdeco style for interiors, and this is reflected in the decorative lighting used. Brass is commonly used and often paired with wood or another metal finish to compliment. The brass can be used to reflect light and gives a warming effect to the light. Fluted glass is also popular and creates a sparkle effect when light is directed towards it.”

The best hotels and restaurants create aspirational spaces whilst feeling like a home-from-home. Juliet Davies talks to the experts to find out how they achieve this.

atelliet group (satelliet.co.uk) travel the world to keep on top of the latest styles and trends.

“We are seeing a move away from urban industrial unfinished and rough styles back towards the traditional and more luxurious feel, with increased use of natural materials, velvets, cottons, wool, and real leather,” explained Satelliet Director Harvey ockrim. “Colours are pastel shades like light greys, stone, teal, light green and earthy shades.

“Furniture with a mid 20th century vibe is very much in demand but with a 21st century twist. outdoor space is now used by the hospitality sector as a source of revenue, and for this reason more focus is on the design with large sofas and chairs being incorporated to give a more opulent atmosphere.

“We are also experiencing an increase in the use of steel frames with upholstered seats and backs to add comfort. Clients are also upgrading to advanced stitching detail on seams and quilting stitch on upholstery, either on the inside or outside back.”

Harvey has also noted that bentwood is starting to come back into fashion, but this time frames are being lacquered or painted in different colours.

Liam o’Donnell is the director of Valdivian Furniture (valdivianfurniture.co.uk), a British furniture manufacturer that specialises in bespoke, hand crafted contract furniture.

“You can expect to see a range of textures that mirror the earthiness of the outdoors with hospitality furniture making use of natural materials,” he said. “expect fabrics that emulate woody tones and textures in addition to materials like rattan, cane and abaca. Interior design within a hospitality setting is becoming more in-tune with the way people live, demonstrating their aspirations and values. “Sustainable designs featuring natural, earthy tones and raw materials such as leather, brickwork, untreated wood and concrete give an ‘inspired by nature’ concept and a sense of wellbeing,” continued Michael. “These materials, including natural, organic finishes and indeed plants and foliage, are being incorporated more and more into the décor.”

And it’s not just about the food and drink.

“Technology is currently the buzz word in interior design,” Michael explained. “In today’s connected society, it is important for hospitality operators to remember that customers use a growing number of electrical devices on a daily basis. Therefore, consider charging outlets, which can be conveniently and unobtrusively incorporated into table tops, booths and poseur shelfs.

“Additionally, make your customers feel right at home, with the use of ‘table tablets,’ to check their newsfeed and emails or play the latest games. However, it is also important that hospitality operators include ‘technology free’ areas for customers who want to concentrate on social gatherings with friends or family.”

Peter Joehnk and Corinna Kretschmar-Joehnk are co-managing directors of JoI-Design (joidesign.com), and whilst they think the trend for cosy living rooms in hotel lobbies is still here, Peter strongly believes the lingering obsession with ‘vintage style’ is growing less

important (and has already saturated the mass market).

“In the future, we’ll be seeing a new category of living room lobbies that follow another big trend, individualisation,” he said. “So lobbies will remain young-spirited, creative, and highly social, but each one will be personalised to attract different kinds of clientele.”

Corinna added, “In one of our latest projects, Capri by Fraser Berlin, we used a specific

concept, ‘layers of history,’ which was inspired by the archaeological excavation visible below the glass lobby floor. our goal was to find a new expression of modern times, versus looking backwards. We created a vibrant, playful living room with iconic modern furniture, which guests have noticeably enjoyed!”

Pattern Power The overarching ethos in care homes is that they are places where elderly people, some with with complex health needs, live. It is their home, and quality of life matters.

T

here are approximately 416,000 people living in care homes (Laing and Buisson survey 2016) and with some fees being in excess of £1,000 a week, residential homes or care facilities now have to provide quality care in surroundings more redolent to hotels than what many would consider a ‘traditional’ care home.

A Roaring Success Slow the pace, take a step back and gather around the fire. It’s a primordial instinct we have as humans to congregate and share fables and experiences around the warm light of a flickering flame. Philip Harrison, President and Managing Director of Harrison (www.harrison.hn), describes how they created the design and branding for Firejacks.

F

or centuries, the communal hearth of the village served as a place to meet, eat and interact with neighbours and relatives whilst fulfilling or daily chores. In today’s world, we are commanded by the web, email and social media, often left longing for that little bit more time and the simple life.

We founded Harrison over 31 years ago, with the aim of creating new hospitality concepts and re-inventing existing brands, as well as delivering the projects on site in a seamless service. In the last thirty years, the hospitality sector has evolved beyond recognition and is continuing to change right in front of our eyes. In the eighties, eating out was seen as a formal occasion.

Today the hospitality sector is booming – its contribution to the UK economy has grown faster than any other since 2008. This growth has opened up new opportunities for Harrison allowing us to diversify and increase innovation.

Creating engaging experiences is an important element of any hospitality concept and doesn’t just stop at design, therefore we updated our business strategy to become a full-service design consultancy including interiors, branding, menu development, recruitment and employee training, so brands can deliver a unique and distinctive

of community, celebration, imagination, warmth, trust and variety.

The concept needed to be fresh, familyfriendly, and appeal to different age groups, offering a relaxing choice of spaces to match customers’ needs, as well as create moments and memories for years to come. In addition, we had just 12 weeks to respond to the brief and create the concept before the restaurant opened to the public.

Working with The Restaurant Group is always an exciting opportunity, and this was the first time the company had asked us to create the branding as well as the design for a new concept. Having examined the brief, the target market, and the values the restaurant needed to epitomise, we brainstormed words that best reflected The Restaurant Group’s idea, with ‘warmth,’ ‘social,’ and ‘theatre’ coming out as core themes. Using these words as a basis, we examined how families and friends historically interacted

with each other – around a fire.

Over the centuries, fire has been the centre of the home and community – from cooking to cosy nights in, the element offers a warm environment and brings people together, encapsulating everything the new restaurant needed to achieve.

In addition, we conducted research into key drivers for families when choosing a restaurant, by examining current

international and national casual dining trends and customer insights.

From this comprehensive research, key insights included the importance for intergenerational families to ‘rediscover’ coming together and creating new memories. For this audience, authentic cooking via an open kitchen is an important element, as is breaking up the space into different zones so it appeals to all generations. Bringing the outside in, and incorporating a feminine space were other fundamentals.

Combining all the different elements from the research and our own creativity, we came up with a barbeque restaurant and kitchen concept. We felt this fitted the brief, as traditionally having a barbeque creates a relaxed environment allowing people to appreciate the simple pleasures of sharing great food with friends and family whatever the occasion.

From concept to doors opening, we had a limited time frame to deliver the design and

branding, including creating a distinctive personality, values and a tone of voice for the brand, while making sure the materials were available and contractors didn’t compromise on the design’s quality. Despite this we were confident we could achieve all of this and more, as we have the internal infrastructure to manage short-term scales without impacting the quality of design.

We appointed a senior designer to lead and manage the development, while an experienced project manager drove

The restaurant’s design was underpinned by the idea of bringing people together to rediscover and share conversation. What makes it stand out from other restaurants is it is feminine, bright and airy. Fire and flames is a central theme of the restaurant creating a homely, warm, light and welcoming environment. Expanding on this theme, we incorporated an open kitchen that not only placed fire at the centre of the restaurant but created a sense of theatre, as well as bright colours generating a strong and visual impact, and a more contemporary look and feel. In addition, we used fabrics that created a feminine atmosphere removing the masculine stereotype associated with barbeques.

Bringing the outside in, we used a number of natural materials that would historically have been used on the exterior. In addition, we included an external terrace creating an al fresco dining experience and an environment where people could come together, and an expansive window at the front of the restaurant, ensuring the space remained bright during the day – something which is very different to other casual dining restaurants. We finished the restaurant by incorporating sharing tables for large groups, and developing a sauce station to encourage experimentation.

In terms of branding, we organised a workshop which focused on the restaurant’s proposition, its target audience, brand personality, tone of voice, and what made it distinctive. Key themes emerged from this, including entertaining, and creating memories, which also carried on the theme of the restaurant design, placing fire and

warmth at its heart, creating a sense of community. Incorporating all these elements, we came up with the name and strapline: Firejacks, Meat-Fire-Friends.

The tone of voice of the brand embodied rediscovery, experience, memories and nostalgia. These ideas form the heart of everything Firejacks does, from the way it communicates with customers, to its service style, interior, language, website and social media. The tone of voice and

brand personality extended to the menu, which is simple and focuses on quality meat products, while customer service emphases on engaging with customers, offering a warm welcome and having a good product knowledge.

Firejacks opened in August 2017, and has so far received an extraordinary response.

The restaurant is beating all expectations, while customers have commented about how much they enjoyed the experience,

New Year, New Ideas Building on the success of the last three years, the January Furniture Show continues to develop as the UK’s premier furniture and interior furnishings event.

T

he January Furniture Show will be a bonanza for buyers in every furnishing sector; interior design, hotels and leisure, contract, and retail.

With a fresh look the 2018 show returns to Birmingham’s NEC for four days from 21st to 24th January. Planning for the 2018 show is well advanced, and will see over 500 hundred major, new and developing brands show their latest collections to over 21,000 visitors.

Navigation around the show will be easier, with more focused product types in each hall. Halls 1 and 2 will be named Premium Design, and will feature high-end and contemporary UK and International brands, including Duresta, Michael Tyler, and Tetrad in Hall 1, and Ekornes, Italia Living and Ego Italiano in Hall 2.

Hall 2 also plays host to an extended Flooring Showcase, featuring hard and soft flooring, as well as being home to the Fabric Pavilion - which will feature exclusive and sumptuous fabrics in fresh palettes.

Interior flourishes will fill Hall 3 with lighting, mirrors, art and soft furnishings. It will also house some of the biggest UK names in interior furnishings including Libra, Pacific Lifestyle, and Gallery Direct.

Halls 4 and 5 will house large cabinet,

bed, and upholstery companies, whose mainstream collections fill thousands of UK homes. German experts in bedroom storage, including Weimann and Rauch, will show alongside some of the biggest UK producers

including Buoyant, La-Z-Boy, and Vogue Beds.
