INGREDIENTS (AND SUBSTITUTIONS) When a specific gin, rum, or other spirit is featured in a recipe, it has been selected for the unique character and flavor it brings to the cocktail. If you’d like to recreate a drink exactly as intended, we recommend using the listed ingredients whenever possible. That said, one of the joys of home bartending is making each recipe your own, and substitutions are often part of the experience. In many cases, swapping one quality vodka, gin, rum, or whiskey for another will still result in a delicious cocktail. Ingredients such as vermouths, liqueurs, and bitters, however, can vary significantly from brand to brand and may have a greater impact on the final flavor. As you explore the recipes in this book, you’ll naturally discover which ingredients are worth keeping on hand for your personal favorites. Most importantly, have fun with the process. Feel free to experiment with garnishes (or leave them out entirely if you’re short on time or materials), adjust ingredients to suit your tastes, and make each cocktail uniquely yours.
MISTAKES Not every cocktail will be perfect the first time—and that’s perfectly okay. A slightly imperfect cocktail has never ruined a great evening, especially when it’s shared with someone you care about. If a cocktail tastes more bitter than you’d like, try adding a very small pinch of salt. Even a tiny amount can soften bitterness and help brighten citrus flavors. If a drink feels overly sweet, a dash of bitters
can often restore balance without making the cocktail taste bitter. And if the alcohol seems a little too prominent, simply return the drink to the shaker or mixing glass and stir or shake for a few more seconds before serving over fresh ice. A touch of additional dilution can make a surprising difference. Don’t let a lack of specialized equipment keep you from enjoying the recipes in this book. A shot glass can often stand in for a jigger, Mason jars and pint glasses work well for mixing, and a standard kitchen spoon can substitute for a barspoon when needed. One challenge that is difficult to reverse is over-dilution. Once a cocktail has become too watered down, there is rarely a simple fix. If it happens, consider it part of the learning process and try again next time. After all, the best date nights aren’t remembered because every cocktail was flawless; they’re remembered because of the moments shared along the way.

SIMPLE SYRUP: A number of cocktails call for simple syrup. Fortunately, simple syrup is as simple to make as its name suggests. Combine water and white granulated sugar in a 1:1 ratio in a pan over medium heat, stirring until the sugar is completely dissolved. Do not boil. The syrup should keep for about a month in the fridge. You can add a dash of vodka to extend the shelf life.

Place all the liquid ingredients in a cocktail shaker, fill it two-thirds of the way with ice, and shake until chilled.

2 oz. chilled apple cider (unfiltered apple juice)
Combine 1 oz. chilled apple cider, ½ oz. chilled liqueur, and ¼ oz. lime juice in each of two chilled champagne flutes. Top carefully with chilled champagne.
1 oz. chilled Grand Marnier orangeflavored liqueur
Optional: Create a sliced apple fan to garnish by skewering 3-5 very thin apple slices in a stack, then pulling the ends apart like a fan.

TWO ARE BETTER THAN ONE A sidecar is a convenient way for serving any overflow that does not fit in the suggested glass. But for cocktails such as this, the ingredient served in the sidecar serves as an extra measure of refreshment.
NEW POSITION 4 oz. vodka
Shake vodka, passion fruit puree, Vanilla Syrup, and lime juice with ice.
2 oz. passion fruit puree
Strain into two chilled coupes and garnish with limes. Serve with the sidecars of rosé.
2 oz. Vanilla Syrup (see recipe at right)
Vanilla Syrup: Make a simple syrup from 1 cup white sugar and 1 cup boiling water. Slice a vanilla bean in half, and scrape out the seeds. Add the seeds and the pod to the syrup. Let sit for at least three hours, then strain into a sterilized glass jar. Store in fridge for up to two weeks. Yields approximately 1½ cups.
