So You Want To Be A Chef?

“There he was, lying on the floor, not breathing, turning blue. Bryan, my best friend in the entire world, looked as if he were going to die. He was fighting to stay alive, fighting to breathe, fighting for his life. All I could think about while I watch Bryan lie there was that it was my fault. Yes! It was my fault! He was about to die…all because he chose to eat my spaghetti sauce.” This is the opening line from a speech Billy delivered in 2017.

Billy Bowyer loves to tell his story of becoming a chef to inspire others to want to pursue their passions in life. He read an article early on in his career by Dr. Dennis Waitley entitled, “Pursue your passions and the money will follow.” This convinced him if he gave everything and sold out to become a chef eventually, he would make it, and that he did!

Fast forward 32 years after he started his career, Billy has accrued several accolades. He appeared regularly on a local TV station performing cooking shows for over a decade, authored a cookbook, won several state and national awards, graduated with honors in culinary and catering, and taught cooking classes for 2 colleges. While these are “okay” accomplishments in his words, he feels the crowning achievement to his success is the homeless feeding ministry he started in 2002 which is still active today.

“Chef Billy”, as many know him, started his career in 1988 as a dishwasher making $3.35 per hour. He jokingly explains why he chose his path to becoming a chef.

“Before cooking for Bryan and his family I had been working in the restaurant business for a little over a year now learning how a kitchen runs, so they assumed I could cook. And by learning how a kitchen runs, I really mean I was a dishwasher. I quickly realized this was not the career path for me. Did I want to become a chef, why? The chef doesn’t do one thing…wash dishes. My friends and family thought I wanted to be where the action was, the excitement, learn to create dishes; NOPE…I just didn’t want to wash dishes anymore.”

With all the successes Billy has had it was a road paved with potholes. Yet, he truly feels each setback, adversity faced, and troublesome time was a blessing in disguise. This did two things; first, it solidified his commitment to becoming a chef. Second, it taught him how to help others overcome adversity as well.

He remembers back to his first job as a chef. He was a mere 21 years old.

Very young by industry standards to hold such a position. He was hired to help open a restaurant, something he had not done before but he was very ambitious and willing to face the challenge. He tells the story of opening day, 30 minutes prior to the doors opening for lunch.

“I learned to cook, hadn’t killed anyone yet, and got my first job as a chef.

I was only 21 years old and thought I was taking over the world. It was grand opening day, and everything was going as planned until my AM kitchen supervisor comes running out of the kitchen screaming; “the kitchen’s on fire.” My first thought; “one of the eyes on the stove is too high.” I’m the chef so I must keep it all together; I have stayed to be cool, calm, and collective. I walk in, assess the situation, then my boss yells in; “what’s going on in there” … “the kitchen’s on fire” I yell as he sees me running out. A gas fitting had come too loose and the entire back wall of the kitchen was engulfed in flames. I decided I wanted to become a chef, at this point…I’m starting to question it just a little bit” Billy laughs while he tells this story and says, “most people would have quit after almost killing their best friend and then having a kitchen fire the first day.”

This was a defining moment for him. He had a choice, “do I push through so we can open, or do I quit, give up on my dream and walk away.” Well, we know he continued on to become a great chef.

Bedford Building Our Youth’s Self Esteem I remember hearing a quote that said, “The Youth are 40% of our population, but they are 100% of our future.” If this statement holds true then we need to make sure that we spend time developing our youth to succeed us. We live in a world that works overtime to tear down their image of themselves and leave their self-esteem in the gutter. Here are seven ways that we can build our Youth’s Self Esteem: 1. Love Them.

Not just in word but in deed. They need to feel that we have their best interest in mind. This is the ground out of which the following ways will grow. Our love for them should not be something that they question. They should feel safe and trust us because they know deep down in their heart that we Love them.

2. Talk To Them.

You cannot create a meaningful relationship via text, messenger, DM, or email. We have to communicate WITH our children in such a way that they can’t mistake our intentions. A face to face conversation is the best way to do this because they get a chance to understand our body language, tone of voice, and facial expression that drives home the true meaning of our feelings.

3. Embraced Them.

It is really hard to misinterpret a hug. If the first two things are done then the physical affirmation is only natural. Starting from their childhood, have an awesome responsibility of showing them how much they are worth to us. Embracing them not only when they accomplish something good and not only when things are not so good but at any time is a great way to drive home our unconditional love for them.

4. Teach Them.

As they go through life and grow through life we have a mandate to teach them. When we were in school the teacher would show us the required learning, walk us through the process of coming up with the desired answer and then test us to see if we learned the information.

We not only have to school our children but we have to test them to make sure they are learning the lessons while the stakes are low.

5. Correct Them.

There has to be some level of correction for our children to understand that we really care. Hebrews 12:6a KJV For whom the Lord loveth he chasteneth. When you care about a child you would rather lovingly correct them than have the world do it. You would rather do it in such a way to develop them than the world’s way of trying to destroy them.

Billy likes to equate speaking to becoming a chef. Of course, if you hear him speak you may see one of his talks where he uses a recipe, a cooking technique, or a humorous story about being a chef to convey his points.

But he points out, just as he had to decide he wanted to become a chef and then face the trials and overcome them, along with honing in his skill sets in people, leadership, and technical training, you must do the same things if you want to become a speaker.

Billy did not set out to become a speaker. Let me emphasize, he DID NOT set out to become a speaker as he asserts. He states, “it was not on my radar, a desire, or anything I wanted to do.” He felt as if he had nothing to say or could bring no value to others.

Of course, just like his career as a chef, his speaking career started out rocky but began to flourish over time. The first time Billy was asked to speak was to welcome an audience. He had won a contest as a paper delivery boy. When the lights came on and he saw the people, he passed out and a clown had to carry him out. YES! You heard right, a clown. Billy was the honorary ringmaster for the Clyde Beatty Cole Brothers Circus.

He says, “nothing like waking up on the shoulder of a clown.” His second time speaking went just as bad. Highschool speech class…he threw up on himself. His teacher was his wrestling coach, so he got a bye for the rest of the year.

Now Billy, a Board-Certified Master Life Coach with two master’s degrees, has spoken in 24 states, over 40 cities, and 2 countries. He has spoken on multinational television broadcasts as well as mentored speakers. He has also spoken in front of almost 1 million people. He truly loves to tell his story of what God helped him to overcome not only as a chef but as a person.

Billy tells of the time he was asked to speak which catapulted him into speaking. “It was Dothan Alabama.

Larry Patz asked if I would speak for a church service. I simply replied, ‘no thank you.’ And Larry asked if I would pray about it.” Of course, Billy prayed about it. He shares that he felt he had to do it. He called his pastor and exclaimed he had never written a sermon or spoke successfully in front of a crowd. His pastor reminded him of Moses, so Billy reluctantly agreed. The rest is history!

With his accomplishments, it may seem Billy grew up with a picturesque life. However, this is not the case. Many of his family members were in prison due to drug-related charges. He was bullied because he was born with severely clubbed feet which caused him to wear braces much like the movie “Forrest Gump” until he was 13. He rarely made friends because he moved frequently, attending as many as four schools in one year.

Due to a diagnosed learning disability, Billy had to attend “special” classes and was told in high school not to attend college because he would never make it. Billy had the epiphany; “you can become bitter or better”, therefore he chose to see his obstacles as steppingstones. This is when he realized he had something to talk about and could bring value to others.

Billy shares his thoughts on becoming a successful speaker. “First to become a successful speaker or chef for that matter, you must decide it’s what you are going to do. You must know, not think, it is what you are supposed to do. I hear many people say, “I think this is what I am supposed to be doing.” While this seems to be a no-brainer, many people stay on the fence and never sell out to what they are doing.

Be sure to hone your skills. As a chef, I constantly developed recipes. As a speaker, you should be writing and developing talks, daily. Practice, but do not merely practice, practice perfectly. You hear, “practice makes perfect.” It’s a lie! Perfect practice makes perfect so make sure you practice your talks perfectly. Lastly, work to deliver talks. As a chef my food was no good if I cooked it but could not serve it. Work to speak weekly so you can get your story out. Food is of no use if it stays in the refrigerator or pantry.

Your story is no good and can help no one if you keep it to yourself and do not share it.”

10 Public Speaking Tips For Introverts By default, I am a self-proclaimed introvert. How about you? If you are an introvert, you know that, already. You dread the day when you stand in front of an audience even if the size is just 5 breathing souls and a dog. As a matter of fact, just the thought of it makes you cringe and want to go hiding. But, chances are, if you want to promote your business to the next level, you’ll have to stand in front of a podium once, or twice.

That’s the very reason why we’re discussing this topic today. You need to eradicate the fear, and focus on how you can deliver your speech in an effective manner. It might not be perfect like some people will expect, but, the important thing is — you can deliver the goods. Yes, you’re shy and nervous, but with some tips, you might even enjoy the talk yourself, and learn some things you can’t get from other experiences.

As a micro business owner, you are the ambassador of your brand, and chances are if you want to be successful, you’re going to have to stand behind a podium or two in your career. But if you are an introvert, and the very thought of speaking to a group of people makes you want to hide, what should you do? In truth, people who are fantastic public speakers are not super human, they simply work hard and know how to emphasize what they already do well. You can do this, too!

Susan Cain, author of Quiet: The Power of Introverts, provides 10 public speaking tips for introverts that can dramatically change your experience for the better: 1. Preparation is key.

Spend time putting your speech together so that it flows logically and is made more vibrant with stories, examples, and props, such as images. For inspiration, try watching other great, yet relatable, speakers on video. You may even want to read the transcripts to see how they crafted their speeches. When it’s all done, practice saying your speech out loud until you can give it over fluidly and comfortably.

2. Accentuate the positive.

Get in touch with your strengths and weaknesses as a public speaker. Don’t try to change yourself or be something you’re not. Focus on what you do best- whether you have a great sense of humor, or you’re a good story teller, or you know how to clearly break down and explain complex ideas.

3. Invest in your audience.

Think about what your audience wants to hear. What problem do they hope to solve? What hopes do they have? Give them what they want and need. You’re audience needs to have a reason to listen. In your opening remarks strive to relate to them and focus on relaying not just your message, but the reasons why they need and should want to know about it.

4. Get in touch with your on-stage persona.

No matter how you slice it, public speaking is a performance. Even if acting is not something that comes naturally to you, you should try to get in touch with your on-stage persona. In the process, you may discover a more extroverted part of yourself that you didn’t know was there, and the whole experience can end up feeling liberating and exhilarating instead of anxietyridden.

5. Get comfortable with the environment.

Check out the location where you will be speaking before the event happens. It will help you to feel more comfortable and secure when the big day arrives. Another suggestion would be to plant a few supportive friends or family members in the audience who can throw you an encouraging look or two as you are presenting. Just realize that you may get so caught up in the speech that you may not actually see them! Still, it could be a comfort to have them there.

6. Pay attention to your appearance.

Be sure not to overlook a key confidence booster on the day of your speech: your attire. Think about how great you feel when you’re groomed and crisp in your favorite tailored outfit; when you look great, you feel great. On the other hand, if causal dress is allowed, maybe that will make you feel more comfortable and engaging. Audiences will initially judge you based solely on your appearance, so make an effort to dress in a way that conveys the messages you want to.

7. Start with a smile.

Research has shown that the act of smiling- even artificially- can actually make a person feel more happy and at ease. So, put a big smile on your face when you begin speaking. Many people in the audience will probably smile back at you, too. This will make you feel relaxed, confident, and connected.

8. Start off with a story.

A story is a great way to get your speech going. Not only does it have the potential to peak initial interest, but it can also help set your audience in time, place and mood. Emotions are the touchstones to speech success, so tug on a string of feelings to get your audience invested early on. Also, wrapping up your speech with an afterthought on your opening story is a nice way to bring the experience around full circle while providing a satisfying close for your audience.

9. Let others do the talking.

Keep the communicative theme going and consider asking questions directly to your audience.

Not only will asking questions to the crowd get you some active participants, but it will help ease any nerves you have by sharing the spotlight. If time allows for it, consider preparing a role-play scenario that, through audience participation, could exemplify one of your points in real time.

10. Schedule some down time.

Public speaking can be a serious energy drain especially if you are an introvert. So one of the most important public speaking tips for introverts is to make sure you’ve got some alone time scheduled both before and after an event that will allow you to recharge and process the experience.

Don’t Ignore The Spider... Part IV 6. Instruct Them.

Now I know that some of you may ask, “Why are you saying ‘Instruct” them when you’ve already written about ‘Teaching’ them?” There comes a time when we have to step back and act in an advisory position due to the amount of age they have gained. I know this can be challenging but it is necessary for their own development. They have to make their own mistakes but even when asked, we have to provide instructions.

7. Reward Them.

What’s the use of all of this work without a reward? We need to teach them that once they have achieved their goal, then that’s the time to appreciate their accomplishment. Showing them how to be proud of their accomplishment sets the stage for them to do the same for others once they have reached their goals as well. I don’t mind coming to your party because I know that one day you will come to mine.
