The auction was being run in aid of ‘Finlay’s Fund’, an organisation set up to support Finlay Sangster, a young man based in Stonehaven where The Bay is located. Finlay lives with Cerebral Palsy, and the fund was set up in 2009 to help with his support needs. The result was an amazing £2,500 raised for Finlay! £900 secured the original lot, with Calum securing a second signed bottle which also sold for £900! One of the bottles is on its way to the Faroes to Hanson Jógvan (owner of Gadus). Calum topped up the amount raided from the whiskey with the money donated in his shop for carrier bags. Gail Sangster, Finlay’s mother, said: “Calum’s kindness and the generosity of his customers has allowed us to support Finlay through the purchase of various pieces of equipment to support daily living and pay for private therapists to support physio sessions. Calum has supported and sponsored events, donated his bag charge and now he’s organised this exciting auction. We can’t express how grateful we are for the continued support and the genuine interest he takes in Finlay and his progress. We are so very lucky to live in such a fabulous town surrounded by the best community and the best fish and chips! I’m glad the bids came in from the Outlander fans as well as the whisky fans.“ Calum Richardson, Owner and Chef at The Bay, added: “Finlay is an inspirational young man who’s achieved a great many things despite the significant challenges he has experienced in his life. At The Bay, we’re fortunate to be given the opportunity to regularly cater for film and TV sets, Outlander being one we’ve done a couple of times now. The team over there are really friendly, and that of course includes Sam himself. He was kind enough to sign two bottles of his amazing whisky for us, and we thought this would be a nice way to help raise some much-needed funds for young Finlay. Sustainorble! Norwegian Seafood Council Launches Campaign to Deliver Sustainability Message

T

he Norwegian Seafood Council (NSC) is rolling out an educational programme to help fish and chip shop operators to have more knowledge and information about sustainable fish, and to support them in communicating this to their customers. Kick-starting the campaign, ‘Fish & Tips: A guide to sustainable frying and business’, is a three-part video series designed to communicate the importance of sustainable fish and business operations, and to provide friers with all the tools they need to communicate to their customers the great value they are getting in every portion. As well as exploring fish origin and produce sourcing, the videos cover topics such as oil management, sustainable staffing and customer communication/marketing. The videos have been created following a recent survey of fish and chip shop operators – carried out by the NSC in partnership with the National Federation of Fish Friers (NFFF) – which revealed that 88% of fish and chip shop owners find the issue of sustainably sourced fish especially important, but the majority struggle to communicate this to their customers . Additional research shows that only 24% of those who regularly eat fish and chips would know what to look for in a sustainable fish offering when visiting their local outlet, and 74% of Brits want fish and chip shops to do more to educate them about the sustainable credentials of the fish they sell .

The videos showcase best practice from fish and chip shop operators, providing the steps operators can take to improve their sustainability credentials, and to start effectively communicating this to customers. Owner of The Cod’s Scallops, John Molnar, who features in the videos, says: “This is all about transparency at sea, and for my business, this is an asset. For the Norwegians, their production is 100% above board. I’ve seen it, and I can tell you how this fish is caught and how it is processed: all caught, processed and frozen within six hours.” “Consumers should be aware that by purchasing from a sustainable shop, they are contributing to the future of our oceans and its fish stocks,” adds Hans Frode Kielland Asmyhr, UK Director, Norwegian Seafood Council. “We hope the initiative will support operators to consider the origin of their ingredients, while also giving their customers insight about what goes into a typical fish and chip meal.” Norway is home to the world’s largest cod stock, and over 37m meals containing Norwegian seafood are served worldwide every day. For many years, Norway has been at the forefront when it comes to maintaining and regulating sustainable fisheries. In Clark’s Shoes! We spoke to Steve and Andy Clark twin brothers who run The Kingfisher, Keswick after they chose Mallinson’s for their new range Q1: How long have you owned your shop? We took on the business in 2010. Our father ran a popular and successful butcher’s shop nearby for many years and we still make our famous Cumberland sausage to an age-old secret recipe. Keswick is a popular, busy tourist destination as well as being home to 5,000 hungry residents year-round. We pride ourselves on serving the highest quality food as our reputation is everything. Q2: Why did you change your range? Unfortunately, we had a fire at the shop, so we had no choice! Q3: How many ranges had you owned or worked on before buying your new Mallinson’s range? Salvation! “You’ve got to invest to keep your standards high,” says Gennaro’s

G

ennaro’s Fish & Chips in Great Western Road, Glasgow, is a completely different business today from what it was last year, from the way it fries its food, to the speed at which it serves customers, to how easily it trains staff. And it’s all thanks to investing in a four-pan high efficiency Kiremko frying range. “During the peak of the pandemic, orders increased by 100% and our old two pan range struggled to cope, especially with the increase in home delivery orders,” says owner Salvatore Di Rienzo. “So, we needed a new machine, a faster one, a more up-to-date one.” Whilst the additional capacity of having two extra high efficiency pans was anticipated, what really surprised the team was the difference blanching and finishing chips made as opposed to cooking straight through. Salvatore comments: “Before we cooked our chips straight through and they would take about seven minutes. Now we’re double frying them so no one is ever really waiting any more than two minutes. It’s a faster service which has cut down waiting times and means we can serve more customers.” Blanching is also producing a better product, says Salvatore as fresh chips are always guaranteed. “We can do smaller portions but faster so we don’t have a chip box full of chips waiting to be served that might go soft or dry. Chips go out fresh and we’ve had a lot of customers comment and say they prefer the way we do our chips now.” With four high efficiency pans consuming less energy and built-in filtration keeping the oil fresher for longer, Salvatore has seen some big cost savings with his new Kiremko, adding: “I would say we’re saving a good 30-40% in gas while oil I would say we’re saving at least 25%.” Buying the latest frying range with the most up-to-date technology is also having a vast

improvement on training, with Salvatore now able to up-skill staff more easily, fast-tracking some to become friers. “One of our staff started almost a year ago as a kitchen porter and now he’s a frier. If we hadn’t have bought a Kiremko there’s no way after a year he’d be at the stage he is now. Because the timings and temperatures are all pre-set, staff can just drop a basket, push a button and when it starts ringing that’s the food ready – and it’s the same consistent product each time. Staff can even fry now while battering the fish or the sausages.” With the savings Gennaro’s is making in gas and oil and the increased revenue the business is now generating, Salvatore says investing in a new, modern range – along with a full refurbishment of the premises – has helped give his business an element of security during a challenging time for the industry. “You have to look at your range purchase as an investment and not a cost, because we’re already recouping that investment,” he says. “Over time, in any business, you’ve got to invest to refresh it and give it a new appeal. Your customers are changing all the time and there are new places opening up constantly which means the competition just gets tougher so you can’t rest on your laurels. “When you hear the news that says all these shops are going to close down those are the shops that are really just left behind, they haven’t invested the money or done the marketing that they really need to be doing. You’ve got to invest to keep your standards high.”

Kelly’s Heroes! Women in Fish and Chips Brings Shops Together at a Crucial Time

T

he Women in Fish and Chips (WiFC) conference took place recently week bringing female fryers and managers together to share business ideas. Key topics included how to deal with rising costs including the suggestion of an industrywide £10 minimum price for fish and chips. “We must work as an industry to raise the value of fish to keep our businesses running profitably and sustainably,” said Kelly Barnes, co-owner of Krispies in Exmouth. Other topics included how to ‘green’ your business, from The Bay Fish& Chips’ Owner, Calum Richardson. Tips included looking into the journey of every product in your business, from responsible fishing and farming, to using biodegradable and sustainable packaging options. Kaylee Herbert, Director of Harlees, a fish and chip shop chain across Dorset and Wiltshire, explored how to take better care of your ‘back end’ with the use of Google Forms and Flow Training. Other speakers included Chantelle Wright, Owner of Wrights Fish and Chips in the USA, Andrew Crook, President of the NFFF and Julie Waites, Executive Director of FASFA. This was the first physical WiFC conference to take place since the pandemic began. Kelly Barnes, said, “It was great to finally get together, face to face, to share our stories after such a long time.” Calum Richardson added, “It’s great to see JJ Foodservice going beyond being just a wholesaler to bring the industry together at an important time.” The JJ Foodservice event was co-sponsored by Kerry Foods.

he Kings and Queens of the kebab industry were crowned recently at the tenth annual British Kebab Awards, celebrating their £2.8 billion contribution to the British economy. Once again, I attended representing the Fish & Chip industry to take in the incredible atmosphere. The British Kebab Awards, sponsored by Just Eat, were held in the ballroom at the Park Plaza Westminster Bridge Hotel, with an audience of over 1,200 guests including more than 150 MPs and Lords. Guests were treated to a cocktail reception with a three-course Anatolian-style meal. They included - Sir Lindsay Hoyle MP, speaker of the House of Commons, Nadhim Zahawi MP, Secretary of the State for Education, David Lammy MP, Shadow Foreign secretary, Lord Karan Bilimoria, President of CBI, Kate Nicholls, CEO of UK Hospitality, Andrew Kenny, Managing Director of Just Eat, Paul Scully, Business minister attended and addressed the event. I attended with NFFF President Andrew

fter a 2-year hiatus What’s Cooking? 2022 returned and was batter than ever! Over 70 exhibitors turned up to The Royal Highland Centre, Edinburgh recently to showcase their products and services to Henry Colbecks customers and the Fish & Chip Industry as a whole. Customers attending What’s Cooking? 2022 where treated to a range on food samples, entertainment and advice from industry leaders during the daylong event as well as it being a great opportunity for networking and support. My favourite had to be the gigantic but incredibly tasty Big Als burger prepared for me by the Kepak team on their impressive food to go stand. The team were demonstrating that by adding new profitable items to your menu you can attract new customers. Suppliers for packaging, oils & fats, frozen at sea fish, equipment, frying ranges and frozen foods flocked in from across the UK and Europe to attend the Edinburgh trade show. The event was well attended by

customers from both Scotland and England as well as attracting interest from potential new customers and suppliers. Here at Chippy Chat & Isle of Ely Produce, we were once again out in force this time sampling the new Agrico chipping variety Babylon to the thousands who turned out on the day. We were ably assisted by The Real Fresh Chip Co who can supply fresh pre-cut chips to shops across Scotland. Real Fresh were frying Babylon pre cut samples all day and the reaction from the event was very good indeed! Calum Richardson owner at the Bay,Stonehaven said “The Real Fresh Chip Co definitely puts the customer first. It’s great to have a supplier that listens, wants to improve and give advice. Having chips prepared for us this way gives the business more flexibility and more storage. With the volume that we were going through space was becoming a serious issue. We tried Babylon with them today and they

tasted really good. They fried well looked great and had a great colour. “ Colin Cromar owner of the Fish Hoose near Fife said “I didn’t realise until we started using The Real Fresh Chip Co just what a boon it would be to the business. The aim will be to carry on and extend the good work promoting chipping potatoes at their hugely successful open days, and through the ‘Field to Frier’ award. The Chip Ambassadors will become part of an UK wide group of shop owners and fryers who will promote best practice for potato buying, storing, and of course frying. The

chain will also include key growers too like PJ Lee & Sons, and A. L. Lee Farming Company, as IOE looks to nurture the relationships they have grown across the whole supply chain over the last forty years. Oliver Boutwood Isle of Ely Produce Director said. “It was great for us to be at What’s Cooking in Edinburgh trialling Babylon via the Real Chip Co. It is important for shops all over the UK to try for us to get the results we need for the trial.” Alex Moore National Sales Manager for Agrico says: “It is nice to see Babylon going on tour and be tried by so many shops. RY I.T. 2022 truly was a wonderful trade show and a welcome return for Friars Pride and the fish and chip shop industry. The trade show, with caterers and fish and chip shops in mind, took place in the breath-taking rolling Malvern hills at the Three Counties Showground on 6th of March. And what a day it was! People flocked from far and wide to the exhibition ready to network with suppliers, try the latest innovative products, and take advantage of the incredible offers exclusive to the event. A Long-Awaited Reunion for Suppliers and Shop Owners FRY I.T. 2022 boasted an impressive number of returning and new suppliers with over 70 stands. Anything a fish and chip shop could want, was all there in one place – we had FAS fish, frozen goods and sauces, packaging, drinks and even frying ranges and Epos systems. It wasn’t just suppliers making an appearance; we had the NFFF and Chippy Chat from trade media who brought prestige to the event, while NEODA shared information about National Fish and Chip Day – which is fast approaching and takes place on the 27th May. Among the many incredible returning exhibitors were Drywite, Rammi, JFK Gadus, 42nd Street, Middleton Foods, Innovate, Kerry Foodservice, Pacific West and Quorn Foods, to name just a few! We also had some amazing new exhibitors to the show that certainly made a welcome introduction such as Meijer Potatoes and Moving Mountains. More Than Just an Exhibition FRY I.T. never fails to impress, and this year was no exception. We had incredibly informative sales representatives dotted across the hall ready and happily willing to answer any of your queries and questions about the products and deals on display. Friars Pride was founded on the core tenant that we are a family company, with you all as beloved members and it was so wonderful to finally be reunited with you all face to face. I.T’s a Knockout! Meijer attends FRY IT 2022

M

eijer Potato UK recently made their first appearance (next to Chippy Chat) at one of the biggest annual shows for the fish and chip shop trade – FRY IT 2022 in Malvern, Worcestershire. A prime opportunity for us to engage with the vital link in the food industry chain, the end producers. For all the time spent on variety development, and our dedicated growers producing seed and ware potatoes, if the crop we produce doesn’t work in the fryer – it’s just not worth it! Armed with a stack of free samples to give away – tasty part-cooked chips produced for us by the talented team at www.cheshirefarmchips.co.uk – we awaited the arrival of shop owners and staff from all over the UK……..and what a day it was! Firstly, the knowledge shared with us from the 1400+ show visitors is vital to our process, as we strive to bring the best varieties to the market. It was amazing to already hear so much positivity for our late season potato Lady Anna. Great feedback on fry quality, combined with a superb texture and taste, were consistent comments throughout the day – the only complaint was that you couldn’t get enough of them! Secondly was the enthusiasm to learn more about our newer products. Lady Terra crops earlier in the growing season, with a lighter yellow flesh and good dry matter for the time of the year. Its efficiency for both growers and end users mean it’s potential is clear to use both straight from the field and throughout the winter.

Finally, it was great to hear the reception for our brand new maincrop variety, Lady Jane. It’s bred from premium chipper Agria and was developed with Meijer’s core values of robustness and sustainability firmly in mind. It needs 25-30% less seed than similar varieties, is strong growing so uses less water and fertiliser, and has strong resistance to potato blight - reducing chemical use. Positive for farmers, but also you, as these lower growing costs will help massively with pricing in these difficult times. It's been a pleasure to hear this week from those who have offered feedback on our sample bags. Heather at Mistley Fisheries in Essex tried both Lady Anna and Lady Jane – she commented ‘both potatoes are great for frying! Personally, I like the Lady Anna, it contains more moisture inside but is still very crispy outside’. We hope everyone enjoyed the taste of the Meijer Potato range, and we look forward to seeing you all again at FRY IT 2023!

Happie to Help! Judging at the 2022 National Pie Awards! By Austen Dack

ast month I represented the Fish & Chip industry and helped to judge the National Pie Awards, held annually in Melton Mowbray. My partners in crime on the Steak and Ale section were Combie Cryan co-owner of the excellent Melton based Round Corner Brewing & Adrian Boswell, a fine foods buyer at Selfridges A gluten-free vegetarian pie called ‘Mooless Pie’ came out as the Supreme Champion or ‘Pie of Pies’. The pie beat off stiff competition from a record 976 pies of all types to win the most prestigious award in the pie world. Made by Pieminister of Bristol, the pie is being hailed as a ‘Pie for Everyone’ by Chairman of the British Pie Awards Dr Matthew O’Callaghan: “Up to now Gluten Free Pies were always compared unfavourably with other pies. With this pie Gluten Free Pies are now equal to any other pie. Being Vegetarian and Gluten Free, Pieminister’s ‘Mooless Pie’ is an ‘Everybody’s Pie’ be they vegetarian or meat eater. The pastry was crunchy complimented by the moist filling which had ‘bite’ and the balance of flavours in the pie was just right.” The casing of the pie is a gluten free pastry with the filling composed of Jackfruit ‘Steak’, Craft Ale, Carrot, Onion and seasoning & Tomato Puree. Bristol based Pieminister was founded in 2003 by Tristan Hogg, Jon Simon and Romany Simon. Small beginnings and farmers markets led to a pitch at the prestigious Borough Market and then the Glastonbury Festival which put Pieminister on the culinary map. Innovations in vegetarian and alternative pies increased their loyal following until now they employ over 300 people. A record 151 judges (including me) chomped their way through the pies in St Mary’s Church in the Melton Mowbray. Some 23 classes cover Pork Pies, Steak & Ale, Game, Vegan, Gluten Free, Dessert, Vegetarian etc. The Supreme Champion piemaker is invited to the British Fair in Japan with Flight and Hotel expenses paid courtesy of the generosity of Hankyu Department Store of Japan. The Newcomer Award goes to Dickies’s Pies of Radstock. The Young Piemaker Award goes to Paul Curran (16yrs old) of WeeCook, Carnoustie The winner of the best fish and chip pie category was Paul’s Proper Pies for their Cheeky Beef & Fondant Potato Pie, closely followed once again by The Cod’s Scallops with their Vegan Minced Bean & Onion Pie. Finally, after a hard day’s judging Combie gave me an excellent beer or two for the train ride home, including Frisby which is sold at a number of award winning fish and chip shops! Support For Ukraine Watching the heart-breaking scenes of the attack on Ukraine unfold makes us feel quite helpless here in the UK. Yet, one small gesture we can make is to address a basic need and contribute to food aid efforts.

housands of Ukrainians have fled their country to find a safe place with sympathetic neighbouring countries, many are at the border with Poland where donations of everyday items, from clothing to toiletries and food are being donated – our great friends at Oakland, the supply chain specialists, have organised a food relief effort in which we can show our support for those in need. A plea for food from suppliers across the industry to aid people who’ve had to flee from Ukraine has been issued by Dean Atwell, Chief Executive, Oakland International Ltd: “We have today issued a call for support from the UK and Ireland food sector to assist our European friends so badly affected by the invasion of Ukraine. “Oakland is prepared to fund up to 50 trucks and drivers to take essential food items to the Eastern border of Poland and possibly into Ukraine if we can get through. “We are involved in a sector which is famous for responding fast and achieving impossible targets – I am hoping that we can all publicise this request for support and rally together to get all 50 trucks dispatched between Wednesday and Friday this week.” Charles Coleman, Sales Director, The Sausage Man UK Ltd: “When the call went out from Oakland for food donations for the people of Ukraine, we were very keen to support this initiative. I’m proud to say that we will be sending seven pallets of produce from The Sausage Man, including a selection of German style Beef and Turkey Burgers, Krakauer Bacon Frankfurters, and to accompany these, Baguettes and a range of mustard, mayonnaise, and burger sauces. Banking on Paul! Chippy helps out again with local foodbank

P

aul Hay, the owner of Fish ’n’ Fritz, Weymouth’s award-winning Fish & Chip shop, has made last year’s pandemic food donation to Weymouth Foodbank an annual thing. The business has made another donation of 60 fruit and vegetable boxes. The first donation came about at the height of the COVID lockdown when Paul discovered Weymouth Foodbank’s incredible work in the local community. Distributing over 50,000 meals annually to families across Weymouth from their three outlets Weymouth Baptist Church, Westham Methodist Church and St Francis, Littlemoor. Helen M tells us more about how Weymouth Foodbank operates “Demand for food has more than doubled over the last 2 years. Given the increase in size of operation in the last 2 years, we needed to find somewhere to store and distribute food to the satellites. We were fortunate to find a large warehouse space in Albany Road on the Granby Industrial Estate. All food donated by individuals and corporates is sent to the warehouse (known as the “hub”) for checking and storing. Food is supplied to the three satellites from here.” Fish ’n’ Fritz works closely with organisations in the community, including ‘The Bus Shelter Dorset and The Lantern Trust, all part of the community ethos behind Fish ’n’ Fritz. For many years Paul has been promoting and accepting ‘Suspended Coffee & Meals’ from customers who want to do something for people who are less fortunate than themselves. This, over time, has equated to 1,000’s of hot drinks and meals. It was his work with these community groups that led to these donations to Weymouth Foodbank. Paul Hay explains how his donation has become

an annual thing “The work Fish ’n’ Fritz does in the community is very important to the team and me. Discovering the gap the Foodbank filled and how tirelessly Helen and her team work to help people to put food on their families table inspired me to make our fruit and veg box donation an annual thing. Now, more so than ever, with the ‘Cost Of Living Crisis’ affecting even more people, it’s important to step up and help where we can.” Fish ’n’ Fritz fruit and vegetable boxes are aimed at families, couples and singles. Ticket to Fried! Michael’s Toronto Beatles Chippy Still Thriving

I

t all started when Michael Fresco was 14 years old. Working at a fast-food joint in Montreal, he turned fresh-cut potatoes into delicious French fries and found he was hooked on cooking. Over the years, that passion only grew. “When I met my future wife, I invited her over for my veal scaloppini,” he says. “She was shocked to realize hey, this guy’s an amazing cook!” In 2010, Michael put his culinary talents to work. A friend was selling her fish and chips shop in Kensington Market, and Michael made an offer. With only eight seats inside, the place felt like a sweaty shoebox, but the fish and chips were so popular that Michael opened a second location on St. Clair West. Then, in 2016, when a 2,400 square foot space opened down the street on Augusta Avenue, Michael grabbed it. “We closed the deal and the very next day, Fresco’s was open for business again,” Michael recalls. He opened his doors to Kensington Market

with his own unique Beatles themed twist to quality English style fish and chips and delicious Quebec style Poutine Fried with Love Now, you can eat your fish and chips – and all the other goodies made in the open-air kitchen – in style. There’s air conditioning, long wooden tables, a big patio for people watching, and a cool ’60s/’70s vibe right down to the music playing and the art on the walls. Along with three other cooks, Michael is behind the counter frying to his heart’s content. All the food at Fresco’s is made with love, and it tastes like it. The fish comes in two different batters: a traditional light tempura and one that Michael invented. His secret? “My Miss Vickie’s Batter is made by crushing up the salt malt vinegar chips to give the fish a better crunch that lasts a lot longer for takeout.” Fresco’s serves everything from haddock, cod and

halibut to more unique varieties such as shrimp, crab cakes, calamari, salmon and house-made lobster bites. Va-va Variety Because there’s so much to love at Fresco’s, you’re sure to come back. “After so many years selling fish and chips, I wanted to introduce my customers to another protein,” Michael says. He now offers various foods, all fried in separate fryers to keep it tasting authentic. Also on the menu: chili, chicken wings and sandwiches, as well as tons of vegetarian options such veggie chilli, deep-fried pickles, onion rings, poutine and kale salad. To make sure the food never tastes greasy, Fresco’s uses non-hydrogenated oil that is religiously filtered on a daily basis. Michael finds his joy at Fresco’s. “I love feeding my family and I love feeding strangers,” he says. “In so many industries, people come to you with a problem – whether that’s a toothache or a dent in their car – and they’re miserable that they have to pay lots of money to get it fixed. Here, people come in hungry and excited for food, and I have a whole kitchen. It’s so easy to make them happy.” Since opening, Fresco’s Fish & Chips has used the highest quality oil available. Low
