Local Band Reaches Homes in South Holland Signed Up For The Stars For Flood Alerts Properties in South Holland have been signed up to an updated flood warning system. The telephone-based operation has been devised to target residents more effectively and significantly improves the increasingly ineffective flood warning siren system. The new system does not mean that there is any increased threat of flooding in our area. South Holland District Council has been working with its partners, the Environment Agency, Lincolnshire County Council, Lincolnshire Police, Lincolnshire Fire and Rescue and the Internal Drainage Boards on the Lincolnshire Local Resilience Forum (LRF). The LRF is currently running its ‘We’re prepared for coastal flooding in Lincolnshire, are you?’ campaign which urges people to take action to reduce their risk of flooding. The campaign is, in particular, encouraging local communities to work together to produce a Community Emergency and Flood Plan. SHDC will be supporting its

communities in producing these plans. In addition, the Environment Agency recently signed-up potentially vulnerable properties in the South Holland to its free Extended Direct Warnings flood warning service. This means all homes and businesses at risk of flooding from main rivers or the sea that were not already registered to receive warnings from Floodline Warnings Direct will now do so unless they opt out. Recorded telephone messages were sent to tell people their phone number had been added to receive the service.

A Story To Tell have been extremely busy since recording their second EP “Lost Boys”. They have played live at the BBC Introducing festival, recorded their first music video for single “Lost Boys” that has received over 3000 views on Youtube and is set to be played on Bryan Stars youtube channel. They have also played sell out shows at the o2 Academy in Sheffield and Nottingham Rock City. Now the 5 piece pop punk band from Spalding have entered into a competiton to support one of England’s favourite pop bands

Councillor Roger Gambba-Jones, SHDC Executive Member for Operational Planning, said: “I hope residents and businesses see this as a very positive commitment to the well being of those who live and work in our district. “It is a significant improvement on a system that has served us well over many years, but one that has not been able to keep up with the strong growth our district has enjoyed in recent years.”

Cash for South Holland Swimmers More than £1,000 has been donated by South Holland District Council members to support a swimming club and its Olympic hopeful Chloe Hannam.

Most of the money will help pay for the club’s swimming championships and part of the £1,100 sum will help provide equipment for Chloe.

Holland and beyond, ranging from learners to county, midland, national and an international disability swimmer. Ages range from four to 17, plus some adults.

Twenty-two councillors have each contributed £50 from the council’s Designated Members Budget scheme to back the South Lincolnshire Competitive Swimming Club and 15-year-old Chloe in her quest for glory.

Councillor Angela Newton said: “These championships encourage people to learn to swim and embrace the water. This is an opportunity to help provide something for young people and give them a positive focus.”

A club spokesman said: “The money donated by South Holland District Council has helped fund the club’s championships and enabled us to invite a special guest to our presentation evening in January, which will be an inspiration to all our swimmers.”

Holbeach RAFA Thanks Tesco

We have had a number of readers contact us regarding possible signal problems with the o2 Mobile network in Holbeach. If you are suffering then please contact o2 as these reports have said they were not aware of any issues, as only a small number had contacted them and therefore suggested it

could be a problem with handsets. We would urge anyone who is having problems contact o2 on 212 from their phone to report it and maybe something could be done to improve coverage.

150th Celebrations End With Record £4.8M Payout The photo’s above were taken at Tesco Stores, Holbeach on Monday 5th December, when Frank and Jean Sauntson presented the Tesco Store Manager with a certificate on behalf of the Holbeach Branch of the RAFA [Royal Air Force Association] to thank Tesco for their help with this years Wings Appeal in allowing them to collect in their store. The amount collected in the store was £1216-00.

Thousands of Lincolnshire Co-op members in the Southern area of the county are sharing a dividend payout of more than £434,000, including an extra bonus celebrating the Society’s 150th birthday. Members who came to the Society’s AGMs voted to approve a special one-off Big Birthday Bonus this year. It adds up to £1 of dividend bonus per £1 of points they’ve collected. It means that the Society’s 16,383 members in the Southern area, which includes Spalding and Long Sutton, will share in an extra £217,364 on top of the £217,364 they’ve received during the year, a total of £434,728. Community groups have also benefited from the 150th celebrations. 8 groups in the Southern area successfully applied for Big Birthday Award grants and received a total of £24,500. Lincolnshire Co-operative is owned by its 205,000 members across the trading area of Lincolnshire, North Lincolnshire and Nottinghamshire. The total dividend payout shared by eligible members this year is £4.8m. As well as the Big Birthday Bonus for members, colleagues who work for the Society receive an extra profit share. This half year, eligible staff were paid a bonus of 110 per cent of a weekly wage.

News Holbeach Suffering Problems with O2?

£23 million was invested in improving Lincolnshire Co-op services including a major

refurbishment at Sutton Bridge Foodstore, a refurbishment at Holbeach Funeral Home and relocating both Spalding Post Office and Travel branch from the Winsover Centre. Another way the Society shares profits with members is by giving grants and donations to good causes in their communities. In total, 1,177 groups shared in £632,000. This includes the Big Birthday Awards pot which was distributed to celebrate the Society’s 150th year. In the Southern area, groups which received Big Birthday Awards included St John the Baptist C of E Primary School in Spalding which received £5,000 towards new sound and lighting equipment for shows and concerts regularly given by the school. Other groups to benefit included Holbeach Parish Council which was awarded £5,000 towards creating a suitable tarmac surface for the Goalforce area in Carters Park so youngsters can play sports there all year round. The Friends of Chain Bridge Forge in Spalding was given £5,000 to create a guidebook and video to complement the future living history museum about the 19th century forge. Lincolnshire Co-operative’s Chief Executive Ursula Lidbetter said: “150 years ago our founders set out to improve the everyday lives of ordinary people. We hope that in our 150th year, we have done them proud.”

Support your local shops! The next few years are going to be very difficult for our local shops and businesses with your support we can help them through this. The Holbeach Christmas Fayre was bigger and better this year and in my opinion, the best yet! So forget the internet and shop locally in Holbeach so that we can keep our valued independent stores long into the future. I hope you picked up your free Holbeach Shopping bag at the Christmas Fayre, keep using it, so that you can continue to advertise Holbeach as the place to go shopping. A steering committee has been set up to look at the long term strategy for Holbeach looking at development over the next twenty years – no easy task bearing in mind the current economic climate and the likely impact on future housing and retail growth. The strategy’s main aim is to regenerate the town centre, attract funding into the town, propose where future housing will go, provide improved infrastructure and set priorities for investment in the town. There will be a formal consultation with all residents of Holbeach in the summer of 2012, but in the meantime an ‘interactive’ website is being launched in the next few weeks, to allow you to comment on ideas and plans as they come forward, so that we can take account of your comments and amend and add to proposals as we go along. Minutes of steering group meetings, who is on the steering group, priorities for the next 20 years and draft proposals will all be on the website and updated after each

meeting. Details of the website will be announced in the local press.

Budgets are now being prepared at District and County level along with an incentive from central government to freeze council tax for another year, which has got to provide some cheer for council tax payers. I will update you in February with more detail. Advice - Know Your Rights When Buying A Secondhand Car by Diane Clay The Office of Fair Trading (OFT) is warning people about problems they might face when buying a secondhand car. The most common problem is that the car turns out to be faulty. Other common problems include the seller giving wrong information about the car or not telling people about problems the car’s got. People also often find that they’re not happy with the service they receive when buying a secondhand car. The OFT has the following tips to help you when buying a secondhand car from a dealer: • before you buy, ask the dealer the right questions such as what mechanical, history or mileage checks have they done? • any car that you buy from a dealer should be: - of satisfactory quality

- fit for purpose - and as described if it isn’t, then it’s faulty • if you discover that the car is faulty, go back to the dealer as soon as possible. If they’re not able to help you, contact Consumer Direct on 08454 040506 • warranties are an additional benefit and do not replace your rights • cheaper cars might be available from auctions or private sellers but you have fewer rights than if you buy from a dealer.

Cancellation/ withdrawal

• Do not agree or sign anything unless you are absolutely sure that you wish to go ahead with the purchase. • If you are paying for the car by cash, there is no cooling off period. • You would normally be legally bound from the moment you both agreed the deal. • If the deal is subject to finance, but you have not signed a finance agreement, neither party is legally bound until the finance agreement has been signed by both parties. • If you have signed a finance agreement but the finance company has not yet approved it, you may be able to withdraw if you act very quickly. Telephone the finance company immediately and follow it up with a letter confirming withdrawal. Beware of signing any document that states that you have examined the car and found it satisfactory in all respects.

Unfair commercial practices and criminal offences

In some cases, if you bought the car from a dealer and you have a problem, the dealer may be guilty of committing an unfair commercial practice. This is a criminal offence. The dealer will have committed a criminal offence if they give a false description, sell an unroadworthy car, alter the mileage reading or pretend to be a private seller. If you think that any of these might apply to your situation, before taking any action against the seller, you should report the matter to Consumer Direct on 0845 404 0506. Also, in the case of personal injury, you should take legal advice on your claim.

How to solve your problem

Once you have decided what your rights are, contact the dealer. It is the dealer and/or the finance company and not the manufacturer who is responsible for dealing with your complaint. Follow the steps below: • stop using the car • collect all your documents together, including your sales invoice, guarantee or warranty and/or credit agreement • if someone has been injured or if you feel a criminal offence has been committed, you should contact Consumer Direct on 0845 404 0506 before going back to the dealer

• contact the dealer and the finance company (if applicable) as soon as you discover the fault. Take the car back, and ask to speak to a manager or the owner. Alternatively, write to the manager or owner, enclosing a copy of your sales invoice. Keep a copy of your letter. Explain your problem calmly but firmly and ask for a full refund, a repair, a replacement, or compensation and set a time limit • if the cause of the problem is in dispute, it may be necessary to obtain an expert opinion. This could be obtained through a trade association or the AA or RAC, or from anyone suitably qualified who is willing to put their findings in writing. • if you are still dissatisfied, or you do not want to accept arbitration, write to the dealer and/or the finance company repeating your complaint and the steps that have been taken. Say that you will give them fourteen days to sort out the problem or you will consider legal action. Send your letter by recorded delivery with a copy to the head office. Be sure to keep copies of all letters • if the dealer makes an alternative offer (for example a replacement car), you can either accept or continue to negotiate. Be realistic in what you will accept. You may not get a better offer by going to court • if the dealer doesn’t reply to your letters, refuses to do anything, or makes a final offer that you are unwilling to accept, your only other choice is to go to court. If you are claiming the cost of repairs, make sure you have obtained sufficient evidence to prove your claim, for example, expert reports and photographs before you allow another garage to repair the car. Remember, court is your last resort. You also need to find out if the dealer is solvent. It is not worth suing a person or a firm that has no money. If you have lost money on a faulty car, don’t waste more money on a case you cannot win.

Buying a car from a private seller - what the law says

If you buy a car from a private seller, you won’t have the same rights as when you buy from a dealer. You will only be able to take action against the seller if: • the vehicle doesn’t match the description they gave you, eg they told you it had only one owner when it has had several. The seller will be responsible for giving you a false description, even if they believed it to be true • the seller broke a specific contract term, eg by saying that the car would have an MOT and it did not • the car is unroadworthy. It is a criminal offence to sell an unroadworthy car. A car is unroadworthy if its brakes, tyres, steering, or construction make it unfit for the road. An MOT certificate does not mean that the car is roadworthy • the seller was not the legal owner of the car and did not have a right to sell it. Be very cautious of a seller who wants to meet you away from their private address, whose name is not on the log book or who is vague about answering your questions. They may be a dealer pretending to be private seller which is a criminal offence. The OFT has also produced a short film about what to look out for when buying a secondhad car. William Stukeley School, Holbeach The Friends of William Stukeley School in Holbeach have kick started their fundraising year with a clear aim of raising £3000 to enable them to purchase outdoor play equipment for the pupils of the school. The children of the school via the school council were asked what they would like the Friends to raise money for and along with the staff came up with the suggestion of outdoor play equipment to suit all of the children whatever their age. So the Friends now have a clear goal in mind and with the help of staff, parents, carers and children of the school are determined to raise the cash.

to include a family night, bingo, ice skating rink and numerous activities which will also be open to the Holbeach community, the chairperson of the Friends, Janice Smith said that over the years we have helped to fund a variety of activities for the children including school trips, books and other classroom activities, whilst this has been great and beneficial to everyone this year we decided to have a clear goal and aim high. The children and staff have requested outside play equipment and we will do all we can to support and fund this request. It will involve a lot of work and also the support of the parents, carers, staff and pupils but we also know that with the support of the wider Holbeach community that this is do-able!

Wisbech Grammar School A carefully crafted response to a classic question has earnt global recognition for a past pupil of Wisbech Grammar School. Kieran Golding (19), who completed his A Level examinations in the summer, entered the United States-based Kids Philosophy Slam while a member of the school’s philosophy club and he has won the title of 2011 international winner for his 500-word essay on the set question, ‘Does the end justify the means?’. The Leverington teenager, who is currently applying to read medicine at university, argued both sides of the case and, rather than answering the question, he broke it down and

expressed it in a different kind of way.

He argued that there are two conflicting systems when people think. On one side is selfishness, which means prioritising your own needs, and the other side involves upholding the social agreement – and selfishness is the dominant feature if the end justifies the means.

Headmaster Mr Nicholas Hammond, who runs the philosophy club, said: “I think it is a fantastic individual achievement for Kieran and it is really important that students have the opportunity to engage with philosophy at school rather than it simply being the preserve of universities.”

Kieran said that he had enjoyed being a member of the club and he had found that it is possible to continue the interest and apply it in your everyday life. In addition to reading books on philosophy he had regularly watched the BBC 1 programme, ‘The big question’, on Sundays

School News Ayscoughfee Hall School December saw a successful month on the football field with the school winning the small school tournament at the Primary School Football Festival. On a cold and blustery day on the Sir John Gleed School playing fields, the team overcame the elements, playing stylish football. They won all five matches without conceding a goal and managed to score 22 goals themselves. The team now go through to the full county tournament. Not to be out done, the school netball team managed to win all of their games in the Spalding Primary School Netball League. In school, the Christmas celebrations and activities were enjoyed by all of the children. The infants performed their nativity plays with enthusiasm and confidence and the choir performed in the town centre, in the Broad Street Methodist Church and at Baytree. Both the choir and school band gave a performance for children, staff and parents during assembly. Events were rounded off with Christmas parties and a staff pantomime and culminated with the traditional service of carols and readings in Church. The year 3 and 4 children participated in a Viking and Roman day for their history studies. They dressed in costume for the day and learnt about the gruesome medical practices of that age as well as re-enacting a real life battle. Parents were also invited to an open afternoon to view the design technology models and creative, colourful displays which the children of all year groups had been developing throughout the term.

Focus on Moulton Mill

13 Years of Work Pays Off Villagers in Moulton who have spent 13 years masterminding the restoration of their local windmill have finally seen their Restoration dream become reality. In 2003, the first phase of the project to return Moulton Windmill to a full working flour mill driven by wind sails got nationwide attention when it featured in the BBC’s search for historic buildings to save, championed by Griff Rhys Jones. Since then the local villagers who run the project on a volunteer basis have been hard at work fundraising for the final phase of restoration and making the shutters to attach to the sails. The project was completed when the Sails were delivered to site on Thursday 17th November and then hoisted into position on Monday 21st November. This makes the mill the tallest in the UK - standing at over 100ft and it will be the first time anyone alive has seen the mill with sails. The last sails blew off 117 years ago. Janet Prescott says that restoration of the windmill, which was listed in 1967, is hugely important to Moulton and the neighbouring villages. “The tower is a much-loved landmark, as well as playing a fundamental part in the heritage of this area. Many people felt very passionate about getting it back to being a proper working mill, it is already an important visitor attraction,” said Janet, who is Mill Manager as well as Project Manager. “We’ve been grinding our own flour for some time but until the sails were back in place, we were having to use electric power. ” Moulton windmill was built in 1822 and last used wind power in 1894 when the sails were destroyed in a great storm. Now restored, the 100’ ten-storey tower mill will be the tallest working windmill in the country. On the weekend back in November when then sails were put into place and used for the first

time, it was emotional for all concerned. Janet Prescott commented; ‘ This has truly been history in the making, no one alive had seen sails on this mill and it was a special day indeed to see them turn again.’ -Janet Prescott

History This colossal tower mill has the distinction of being the largest surviving windmill not only in Lincolnshire, but in the whole country. It can claim to be the largest complete windmill, built in about 1822 by Robert King. The sails were removed in 1895 after gale damage, when a steam mill with a two sack Turner roller milling plant was installed in the adjoining granary, steam power also being applied to the original stones. Serious milling ceased many years ago although a small roller mill and kibbler probably see occasional use.The tower is 28 feet 9 inches in diameter at ground level and 12 feet diameter at the curb, both internally. The basement contains the engine drive gearing which then ascends to the great spur wheel by way of a vertical shaft. The elevated ground floor is spacious enough to contain a proper partitioned miller’s office.

However, by putting a few things into consideration, it can be easier to find and commit to a new opportunity. One of the very first things you should consider is getting a job that you will enjoy doing. There is nothing worse than accepting a job you are so sure you won’t enjoy as this can even hinder your productivity. Although the kind of work you get may not be what you have been dreaming off, if it is something you can enjoy doing then it is worth accepting. Where to Look for a Job?  There are lots of places you can find vacancies but you need to identify where you would like to work? Are you prepared to re-locate? Potential employers can view your profile and see how valuable your colleagues, classmates and other connections view you and your work. Be Proactive – A Job May Not Always Come to You Looking for a job can quickly become an energy-sapping and frustrating experience if it doesn’t lead to any results. It’s time to get proactive, take back control and make things happen for yourself. But where do you start? Follow our five steps to help you become more proactive when looking for a job. Research It’s important to concentrate your energy on jobs that you really want. Don’t get caught in the trap of applying for anything you come across. It’s a waste of your time and you’ll end up putting less effort into the application and get knocked back anyway. Ask people you know You should always begin your job search by thinking about the people you know already. Think about family, friends, teachers, past employers, even your neighbours. Ask around, you may find that someone knows someone that knows someone who works in the industry you want to get into, and they might just be able to help you get your foot in the door. It will be a person that employs you and it will be your relationships with people that drive your career forward. Networking is simply the term used for meeting people and keeping in touch with them. There are a huge number of ways you can network, but when looking for a job your networking efforts should focus on the kind of people who can either employ you directly or give you access to those who can. Start by thinking about where those people might be, what they will be interested in, and how you can connect with them. For example, if you want to work in fashion, start attending fashion shows, join fashion interest groups online, and get involved in fashion-related conversations on social media. Retirement Planning Many people have personal or occupational pension schemes. When were these reviewed with regards to charges, risk, performance and suitability? On the 8th December 2011, Trustnet, an independent fund data provider, had fund performance figures for 447 pension funds in the Cautious Managed Sector. Over 3 years the top fund had a return of 68.8%, the worst fund in the sector delivered just 7.1%. On a fund of £10,000 that could mean the difference between £10,710 and £16,880 in just 3 years. Whilst there is more to fund selection than pure returns, it is clear that should you be in a sluggish fund, then the difference could be staggering. When approaching retirement it is vital to look at your policy options: tax free cash, joint-life, guarantee periods, indexation. Most will have an ‘open market option’ allowing the policyholder access to the whole of the market place to obtain the highest retirement income possible. Many companies also offer enhanced annuities based on the health of the individual, and these can provide substantially higher income that the in-house annuity, so shopping around is a must. The value of pension investments can go down as well as up and you may not get back what you put in. Savings & Investments With interest rates being at record lows it can feel hard to make a decent return on your money. If you haven’t already done so for the 2011/12 tax year then ISA allowances should be investigated before April 6th. They can provide a tax efficient home for up to £10,680 per person in this tax year and you should also review the rate of return you are receiving on existing ISAs. These could be transferred to an alternative provider paying a better return. On non-cash holdings, such as investment ISAs, investment bonds, unit trusts and OEICs much of the previous pension paragraph will apply. You should definitely be reviewing risk, charges and performance on an ongoing basis. The value of savings and investments can go down as well as up and you may not get back what you put in. Conclusion By being pro-active and by taking control of your financial plans they will definitely be more to you than just ‘good intentions.’ Whilst dragging yourself to the treadmill or leaving the fudge cake in the fridge can take lots of determination and willpower, being in charge of your money can be as easy as ABC. We’ve all experienced bad pet behaviour in one way or another; muddy paws on the counter tops, dog drool on the sofa, excessive sqwarking, biting, scratching, chewing, the list goes on… So, what better time for a fresh start and to rid your pet of their bad habits than the New Year? Pets, like humans, need to be taught and socialised. Most pet behaviour problems come down to just a few catalysts – Misdirected Energy Activity does for pets what it does for you; calms them down, lets them sleep better and makes them kinder to others. A great number of behavioural problems are simply down to pets not getting enough exercise which means they release their energy in other, less desirable ways.

A learned response Very often, pets’ bad habits can be as a result of the home. Nervous behavior could be a reaction to the pressures and tensions of the people around them. Your pet does empathise with you and any preoccupied, angry or hysterical behavior can rub off on them. Not only that, your pet can learn bad behaviors because you inadvertently reward the behaviour. For example, if your dog is pawing his bowl around the floor and making a racket when dinner is due, he’s hoping it will speed up being fed. If you feed him whilst he does this, his undesirable behavior will be reinforced and rewarded. He learns to associate being fed with causing a commotion.

“Punishing your pet for fear-based behaviour can make it worse” Fear and Aggression Fear and aggression are often confused because these different emotions can present themselves in very similar behavioural acts. Figuring out which emotion motivates the bad behaviour is important. Punishing your pet for a fear-based behavior can make it worse. Fear is the likely motivation if your pet becomes agitated when it is alone or tied up. Genetics can also play a part. A pet with a nervous, highly-strung temperament is more likely to have fear-based behavior than a pet with a calm, placid temperament.

Consistency is key All pets are individuals and some may catch on quicker than others. Don’t get discouraged if your pet’s behaviour doesn’t change overnight. As long as you stay consistent with your training methods, your pet will likely understand you sooner rather than later. Remember that positively reinforcing good behaviour is just as important as pointing out and modifying bad behaviour. Pets respond much more readily to training techniques that focus on the positive rather than the negative, so don’t forget to incorporate lots of fun and praise into your training methods.

Responding to bad behaviour In order for your pet to understand you when you catch them playing up, you need to remember the correct way to respond. While a normal “human” response to an unpleasant discovery would be to shout and declare your anger, your pet can interpret this reaction and body language as excitement; meaning they may actually think you are praising the behaviour. To respond properly to bad behaviour: • Come to their eye level – or bring them to yours. If your pet misbehaves, have them at eye level. • Be very expressive. Don’t be afraid to frown at your pet. Most pets are capable of picking up on facial expressions, and most get the idea if your body language expresses your unhappiness for their actions. • Speak softly, but sternly. Use a tone of voice that is low but not loud when you tell your pet that they have done something wrong. Be as “matter of fact” as possible, but keep it short. You will be amazed at how effective it can be! • Place your pet in their basket/cage. After you’ve conveyed your dissatisfaction, place your pet back in their basket or cage. Allow them to stay there for a few minutes alone and then go back and interact playfully with them -- they should know that you are no longer upset with them and that they are now being good.

With a little work, patience, and love, your pet should be acting like an angel in no time. Your effort will be rewarded with a beautiful, intelligent, and well-behaved pet. One New Year’s resolution you can say you managed to keep!

Recipes Starter  Serves 4 Smoked chicken salad with mango dressing

Ingredients: 2 x smoked chicken breasts 1 x bag salad leaves 4 tbsp mango chutney Splash white wine Handful fresh coriander leaves to serve Method Divide the bag of salad leaves between 4 serving plates. Thinly slice your smoked chicken breast and divide between the plates. Thin out your mango chutney with a splash of white wine, drizzle over the chicken when you are ready to serve. Sprinkle with fresh coriander – and enjoy!

Main Course  Serves 4 Pan fried pork loin with white wine & mushroom risotto on butternut squash The great thing about this dish is that all the elements can be prepared in advance and brought together at the last minute to serve. It is an ideal dinner party dish that will have your guests believing you have slaved over a hot stove all day! Puree Ingredients: 1 x medium butternut squash Olive oil (not extra virgin) Sea salt 2-3 sprigs of fresh rosemary (leaves only, finely chopped) or 2tsp dried Puree Method Peel, slice and de-seed the squash. Lay the slices on a baking sheet, drizzle with olive oil, sprinkle with sea salt and rosemary and roast in a hot oven (200C or fan 180C) for approx 35 minutes until tender and a little charred at the edges. Allow to cool. Place the cooled squash into a food processor and puree (adding a little water or stock if too thick). Pass the puree through a fine sieve to remove any bits of skin or stalk from the rosemary. Season with freshly ground black pepper (remember you salted it before cooking). At this point you can cover and refrigerate the puree for up to 4 days, or re-heat gently to use immediately.

Risotto Ingredients: 1 medium white onion 2tbsp olive oil 350g risotto rice 150ml white wine 1 litre approx vegetable or chicken stock Salt & black pepper Small handful fresh herbs finely chopped (parsley, chives & thyme are good) Risotto Method Sweat the onion in a little oil over a medium heat until soft but not browned (around 10 minutes). Tip: adding a pinch of salt to the onions helps them to release water and therefore not colour so easily. Add your risotto rice and stir to coat with the oil, then add the wine. Increase the heat slightly and let the risotto bubble until most of the wine is absorbed. Add the stock to the risotto, one ladle full at a time, stirring regularly until the rice is tender and the risotto looks creamy. Season with salt & black pepper (watch the salt if you have used a stock cube). Stir in the chopped herbs and put to one side, keeping warm.

Pork Ingredients: 12 x thinly cut pork loin steaks (boneless), 3 per portion, trimmed of excess fat Splash oil (vegetable or sunflower) Freshly ground black pepper 1tbsp fresh rosemary leaves very finely chopped (or 1tsp dried) Pork Method Season your pork loin steaks with salt, pepper and the finely chopped rosemary. Heat a griddle or sauté pan with a splash of oil until quite hot but not smoking. Add the pork and leave to cook without moving them for approx 3-4 minutes (they should be golden and just starting to caramelise). Flip them over and continue to cook for another 3-4 minutes until cooked through. Overcooking at this stage will make the meat dry, so if you are at all unsure, simply cut into one of the steaks and make sure your juices are running clear, not pink. The meat should be moist and juicy, not dry and stringy. To assemble the dish, re-heat the puree and put 2-3 tablespoons or so in the centre of each plate. Add the risotto, using a mould or a ring for presentation if you like, then place your pork steaks on top. Sprinkle over fresh herbs or a few sautéed mushrooms for decoration.

Once Christmas is over, it’s easy to feel a little lost. We’ve eaten to excess, we’ve got stressed with the shopping and we’ve obsessed over making sure that for one day of the year, everything is perfect. By the time January comes around, it can feel like we need a bit of a boost to get going again. So how can we meet the new year with a spring in our step?

Amidst the seasonal rush we managed to cram in some enjoyable get togethers; an early Christmas meal with extended family from all over the country (eighteen of us in total!) plus a couple of festive evenings with friends. I even got to have a couple of celebratory nights out myself; one with the girls from work and one with the PTA ladies. Christmas Eve was primarily a quiet one. After putting out a mince pie and milk for Santa, a carrot for Rudolph, and sprinkling magic reindeer dust in the garden to guide the sleigh to our house an early night was in order in anticipation of the big day - and what a day it was! Like most children an over excited and wide awake Abigail was up at the crack of dawn jumping up and down on our bed “Mummy, Daddy, is it morning? Has Santa been yet?”

Downstairs Abigail was delighted that the food and drink was gone (all but a few crumbs) and under the Christmas tree presents were spilling out across the floor. Gift wrap was flying everywhere with me desperately trying to make a list of who had bought what, whilst at the same time attempting to take pictures of the glorious event, and all before 7am. Unwrapping over, it was time to wrestle the toys from their boxes, this is a major operation in itself, install batteries where required and to build anything that needs constructing - definitely Dad’s job! Christmas day afternoon we headed off to friends to spend an evening, a sleep over and Boxing Day. Abigail and her friend enjoyed playing together, on the whole amicably, with their latest additions to their toy boxes. Hectic or what?! Still, they’re only young once, and after all Christmas is all for the children. Now, time to relax and spend the remainder of the holiday in comparative peace and quiet before its back to the usual routine. Oh, hang on a minute, there are thank you letters still to be written and posted; where did I leave that list?.........

Fencing – All You Need to Know

There are 3 main categories of weapons used, each having their own style and independent set of rules. Foil. A fast slim weapon, with the point used in a thrusting manner aimed at the opponent’s body. Historically developed from the Short Sword, used to attack the vital organs of the heart and lungs. This is the quickest and deadliest of the 3 weapons.

Fencing is described as the only recognised European Martial art. It has its roots of course from the barbaric past time of the rich and elite of dueling with real Swords, to settle matters of honour. As a sport it has all the usual benefits of the other martial arts, It will keep you fit both physically and mentally. Fencing has one very important benefit over other martial arts. It doesn’t matter how strong you are, or how heavy or tall you are, Fencing is a sport that anyone can try. It doesn’t matter how young or old you are, as you are not put into weight categories. With a sword in your hand you will be on equal terms with the next person. Male and Females, young and old compete on an equal footing, quite rare in most full contact sports. Fencing is a sport of skill, grace and technique. Fencing has been provided in Spalding since 1994 with the Custodians Fencing Club based at the Castle Sports Complex. The Clubs name reflects the fact that they are the local Custodians of the Art of fencing. A new addition to Fencing in the area is the Spalding Swords which set up only last month. Spalding Swords have taken over the teaching of fencing to juniors from the Custodians for ages 7 years of age to 13 years of age. They have full access to the Custodians extensive range of equipment, and again are based at the Castle Sports

Epee. A thicker and heavier weapon than the foil, but used in a similar fashion , thrusting the point to inflict wounds anywhere on your opponents body, particularly their sword arm. Historically developed from the rapier, the classic dueling weapon, but eventually replaced by the Short sword that was faster, lighter and deadlier meaning you were more likely to survive a duel against an opponent with an old rapier. Sabre. The cut and thrust weapon historically favoured by the cavalry, but without the horse. This weapon brings in another dimension of being able to slash with the blades edge as well as using a deadly point. It is used to cut and thrust at the opponent’s body and head. All the weapons are modern fencing weapons that have a small electric charge running through them. These are attached to wires that are in turn attached to a recording apparatus. When the sword hits the opposing fencer, a light and a buzzer indicates that a hit has

Fencing masks made of strong steel wired gauze, and strong bullet proof type jackets all add to make fencing a fast and furious but safe sport. Yes you do get bruises from time to time, but those are normally felt the day after, not at the time with so much adrenaline pumping through your veins.

Bentley   Continental GT JUST THINK of the things you could do with £136,000. You could buy a house; you could even start a new life and never look back. It owes this to advanced noise-suppression technology that includes acoustic glazing, under-floor shields and hidden anti-vibration panels. The cabin is trimmed with soft-touch leathers, a full range of wood veneers, cool-touch metals and deep-pile carpets – all

hand-made in Bentley’s workshops at Crewe in Cheshire. The attention to detail even extends to applying a UV stabilizer to the wood veneers to protect from bleaching, ensuring they can be enjoyed as new for decades to come. Other simple yet practical functions include a powered boot as standard, Electronic Park Brake with Move Off Assist and newly designed, leather-lined door stowage bins with an integrated bottle holder. Also, Continuous Damping Control (CDC) constantly monitors the car’s attitude and poise. By adjusting the suspension settings hundreds of times a second it can provide a remarkably supple ride at low speeds and increased control as the needle climbs. It can also lower the car for enhanced stability at the highest speeds. I don’t need to tell you that Bentley is a legend, so why not continue to make history with the brand? Money is probably the only obstacle for most people, but if you are one of the lucky few who are doing well and whose business has perhaps just won a new contract, why not indulge yourself? Of course, if you can’t afford new, save up and go second-hand – the Continental GT will still look the business many years from now.

Oscar’s Outings This month has been really exciting - I have been on holiday to one of may favourite parts of the UK Yorkshire. I know I am lucky as my owners always take me on at least one dog-friendly holiday a year. We have been to Yorkshire before but this time we explored different parts.

www.t witter.com/oscaradventures and exploring all around the area - even in the cold winter, walking on Scarborough beach was loads of fun and you’d be surprised how many other people were on there. Even in the biting cold, there were a couple of keen surfers in the sea!

The accomodation was perfect for pet owners and families as it was a log cabin in The Yorkshire National Park. There was all sorts of activities on site - woodland walks, bat walks, even the Park Rangers run events to show you how to build shelters, look after yourself in the forest plus there are bikes available to hire.

Christmas has come and gone, I love this time of year as I get taken on lots of trips visiting family and friends as well as extra long walks. Not all dogs like to travel, so make sure if you take your dog out they are made to feel safe and secure with either a dog guard or harness, there’s nothing worse than slipping all over a car. Always pack water as we do get very thirsty when walking around and a spare towel can come in handy for muddy paws.
