A CLOSER LOOKat Spearfish
Community is a very commonly used word. But what does it really mean? Google offers up two definitions: com∙mu∙ni∙ty noun
1. a group of people living in the same place or having a particular characteristic in common
2. a feeling of fellowship with others, as a result of sharing common attitudes, interests, and goals
I would like to talk about the second definition; fellowship, attitudes, interests and goals. On the cover of this year’s Connections Magazine is a great photograph of what our summer Friday nights in Spearfish have become – community. Neighbors, young and old, sharing an evening together. Old friends reacquaint, new friends are made and networking occurs among businesses and community leaders. The leaders that grew this event into what it is deserve a huge thank you and handshake for a job well done. We are social creatures, requiring interaction with other people, thriving by banding together into social groups (communities). For centuries ‘community’ has provided protection, sharing of labor and resources, shared values and certainly collective development. It is also very significant in defining the meaning of life. At the end of the day do we really judge the value of our lives by how much money we have made or how many things we have collected? I know that personally I am most satified when I know I have truly affected another person positively, contributed to the community, or simply caused a smile.
What is it that gives you a sense of being part of the community? What is your goal for being part of the Spearfish community? What does it mean to be a good community member? What makes you want to be part of a community? In the past, chambers have been viewed by some as socializing bodies where business people come together to network, which is a very powerful business tool. Any business can benefit from networking for a number of reasons. Networking is more about ‘farming’ than ‘hunting’. It’s about cultivating relationships - creating community. This is a valuable tool to renew old and create new relationships, a way to meet your next customer or referral, even a way to create a relationship with your newest resource. I am honored to serve as the Executive Director of the Spearfish Area Chamber of Commerce. I am even more honored to be able to live in a place as great as Spearfish. To raise my three children with a sense of community and safety.

Being finished with school doesn’t mean a person is done learning. Spearfish has much to offer when it comes to continuing education. The community has many great assets for the publics use to continue learning and growing.
“It is very important to stay up to date and develop your personal and professional self,” said Melissa Barth, Director of the Spearfish Area Chamber of Commerce. “It helps the community as a whole continue to grow and develop.”
Several institutions offer community education and development opportunities including Black Hills State University, the Spearfish Area Chamber of Commerce, Community Education of the Black Hills and many other options throughout the region.
Black Hills State University
Black Hills State University is dedicated to lifelong learning. In addition to nine master’s degree programs in business, education, leadership, science and sustainability, the university offers 20 certificate programs, a graduate certificate program, and continuing education opportunities through a variety of workshops. A Visitor Pass Program is also offered for those who’d like to explore an interest or learn a new skill without formally enrolling or receiving a grade. “I started taking classes through the visitor pass program at BHSU several years ago and have taken thirteen classes ranging from history to psychology to literature to Native American studies,” says Alyce Schavone, retiree. “This program is a hidden secret for self growth. It has certainly reminded me how much I have forgotten. It is good at any age to have a refresher, to integrate with the younger generation and to stay active. I have always enjoyed learning and this has been very beneficial.”
BHSU’s South Dakota Center for Enterprise Opportunity (SDCEO) program has many courses to offer for continuing education as well. The SD CEO Women’s Business Center, provides comprehensive training, education and business assistance, support and counseling for aspiring and established entrepreneurs to foster economic development in South Dakota.

SDCEO offers Ed2Go and GATLIN courses. Ed2Go is a short-term, non-credit online course. It offers 200 high-quality, affordable, instructor-led courses. GATLIN prepares users for employment in today’s top careers with one hundred comprehensive, and self-paced online career trading programs. Along with these programs, SD CEO offers various face-to-face business seminars and workshops that offer hands on training.
Spearfish Area Chamber of Commerce
The Spearfish Area Chamber of Commerce offers business and community education classes periodically throughout the year. Quarterly luncheons have included topics such as Social Security, Affordable Health Care Act and Employment Certification. A new all day seminar began in 2014 which gave businesses the opportunity to get up-to-date with how to keep their presence online vibrant and engaging. Along with these, the chamber has a young professionals group that has been growing at a steady rate over the past several years. This group continues to host a variety of training on values, ethics,

education leadership, communication, finances and more. They are now integrating these skill sets with the students at Black Hills State University and giving support to those students as they transition from student to a career minded employee or business owner. The Chamber also partners with the Spearfish Foundation for Public Education and Spearfish Economic Development in an annual career fair at the sophomore level for the Spearfish High School. Business professionals volunteer to directly visit with groups of students, separated into clusters, by the pillars of industry. This personal interaction gives the local businesses an opportunity to directly visit with the students on the paths they need to follow to succeed.
Community Education Classes
The Career Learning Center of the Black Hills recognizes that learning should be continued throughout our individual lives. Working closely with schools, libraries and chambers throughout the Black Hills, they are able to coordinate the Community Education program and offer a wide variety of classes ranging from duo dancing to gardening to nutrition to computer classes. Each spring and fall, fifteen to twenty classes are offered right in Spearfish at various locations.
Education
Spearfish offers many options for child care, preschool, primary and secondary education. The Spearfish K-12 school system offers one high school, one middle school, and three elementary schools. Also in town are two parochial schools, 10 preschools, and over 40 daycares. Spearfish is also located in a very home-school friendly state.
Public School
The Spearfish School District provides k-12 education. It serves approximately 2,000 students in the Spearfish community and surrounding area. The school has a highly qualified staff that pushes students to succeed in every aspect of education and athletics. The school offers many extracurricular activities for students to stay active and engaged. Spearfish schools are consistently ranked among the top in the state for performance and academic excellence. They proudly achieve a consistent 98% graduation rate. Private School
There are two parochial schools in the city – Spearfish Classical Christian School and Black Hills Christian Academy. Both offer small class sizes with lower student to teacher ratios, although Black Hills Christian has consistently grown over the past two decades. Originating in Belle Fourche in 1992 with only two teachers and twelve students, they have increased their teacher base and now serve over 100 students. People travel from all over the nation to join Spearfish residents in the many marathons and races offered year round. Each year, Spearfish plays host to a Boston Marathon qualifying race, a half marathon, and a triathlon. Along with these, Spearfish offers numerous 5k fun runs and a beer run.
“The races are an incentive for people to get out and about,” said local resident Chris Davis. “We all know we live in a beautiful area here and love to get out and take advantage of that. A huge benefit is that a number of events in our area are for any level of walking or
running. There are many options for race locations, whether in town or out. Another great attribute are the year round outdoor options.”
NHTC Run & Ride
The Northern Hills Training Center strives to provide quality options for people with developmental disabilities to be an active part of our community. Five years ago they began a Run & Ride, benefiting their Healthy Initiatives Wellness Committee. This is a threelegged race that is open to individuals or teams of two to three people. The race begins at the NHTC, continues on a two different routes north of Spearfish and ends by returning to the NHTC. The three legs of the race are a 4-mile run then a 12-mile bike ending with another 4-mile run.
Spearfish Canyon Half Marathon/5K
Be a hero...run for a purpose. This event is an annual fundraiser, which benefits abused and neglected children throughout the Northern Hills. The CASA half marathon travels down scenic Spearfish Canyon, winding along the Spearfish Creek and ending in the Spearfish City Park.
A unique addition to this marathon is the ‘art water station’. As the runners pass by the water station, they pick up paintbrushes with paint on them and make their mark on a canvas as they run by, creating a one of a kind piece of art each year. Add to this the 5k walk/run that meanders down the recreation path, beginning and ending in the City Park, allowing for people of all fitness levels to participate. In 2014, they had a record number of registrations representing 25 states, showing the popularity of marathons in our region. Healthy lifestyles and supporting children in need; can you think of any better reason to run?
Leading Ladies Marathon
The Leading Ladies Marathon is world famous for being the only all women’s full marathon in the United States. The event was started 11 years ago by the founder Elaine Doll-Dunn (pictured above right).

It comes to an end with chocolates and roses in the Spearfish City Park. The theme for this year’s marathon is Cowgirl Up: How Tough Are You?. “As an old cowgirl, I know women need a reason to ride the hell out of fear and find just what they are made of,” said Doll-Dunn.
Black Hills 5K Beer Run
New in 2014, the annual Black Hills 5K Beer Run is organized by Party Time Liquor of Spearfish as a fundraiser for the D.C. Booth National Historic Fish Hatchery. It was created to assist with funding for the Hatchery Helpers program and to help keep the Hatchery open for years to come. The first year for this run proved to be a success with over 200 runners

Six months, six races, and six different courses. The Spearfish Rec & Aquatics Center puts on a series of races over the course of 6 months, with one every month starting in November. Participants can register for a single 5k race, or the whole series.

Three miles east of the Queen City’s quaint business district, a turboprop stuck its nose into the wind and rain of a turbulent Tuesday morning, put the throttle to the stops and took off from Black Hills Airport-Clyde Ice Field.

Airport Manager Ray Jilek watched from his modest command center near the runway and considered the growing popularity of Spearfish’s general aviation airfield.
“With 1,000 operations per month, it’s pretty obvious something is going on here,” Jilek said. “That aircraft leaving right now, if they drove to their operations in Montrose, Colo., it would be 12 hours. But they’re taking off this morning, will do a few hours business in Colorado and be back home tonight.” Jilek’s enthusiasm wasn’t just cheerleading. The airport he runs needs expansion to ignite economic development, he said, and Spearfish and Lawrence County are collaborating to make it happen.
History of Aviation
The state’s busiest generalaviation airfield, tucked on the eastern flank of the Northern Black Hills and centered among the burgeoning energy camps of the Niobrara, Powder River Basin and the Bakken, is named for pioneer aviator Clyde Ice.
Ice, who died in 1992 at age 103, is credited with inspiring World War II fighter ace and future South Dakota Gov. Joe Foss to become a pilot and with counseling Charles Lindbergh before his historic flight from New York to Paris in 1927. That same summer, Ice flew a biplane over the State Game Lodge in Custer State Park so Mount Rushmore sculptor Gutzon
The Black Hills Airport-Clyde Ice Field in Spearfish has played a significant role in history of aviation in the area. Today it is the busiest general aviation airfield in South Dakota.
Borglum could toss out a wreath to then-vacationing President Calvin Coolidge and First Lady Grace. The overture led to the president’s dedication of the massive mountain memorial and a pledge of federal funding for the project, changing Black Hills history forever.
New Horizon
Now, 95 years after Ice traded two used automobiles for his first
airplane, Spearfish and Lawrence County officials want to once again alter the history of Black Hills aviation. The Federal Aviation Administration is reviewing a proposal that would transfer ownership and management of the airport from the county to the city and potentially add a second cross-wind runway, city and airport officials said in October.

Its operations have increased in recent years due to the Bakken oil boom in western North Dakota, Niobrara developments in Nebraska and increasing production in Wyoming’s Powder River Basin, officials said. “Evidently the city feels they are in a better position to support the operations of the airport financially, as well as with some of their equipment, manpower and expertise,” said Jilek, manager for 13 years. “We’re a lot more active than the average person believes just driving by on the interstate.” Spearfish Mayor Dana Boke said the move is not just about the city’s ability to support the facility. She contends it is about helping the airport and the city of Spearfish reach their full potential. “Spearfish is going to be a gateway,” Boke said. “The airport and the new Theodore Roosevelt Expressway leading to western North Dakota are part of that. We’re in the middle of the energy corridor and it’s exciting for this whole area. “The city is probably in a better position to support it, but it’s not so much about supporting the operations as it is supporting the potential,” she added. “It’s a very www.SpearfishChamber.org
well-run airport, a facility that is consistently recognized as among the best in the state. Financially they are in a good position. The county is focused on things other than economic development. We can focus on those things and assist in different ways, and I think it’s a better fit.” Lawrence County Commission Assistant Bruce Outka, a deputy state’s attorney, agreed with Boke. “I would agree with what the mayor of Spearfish said,” Outka said. “The commission would agree that the city is better suited going into the future to take on the managerial duties associated with the airport. With their economic development activities, and the city’s other efforts, it’s truly a better fit.”
Point of Impact
The airport employs as many as 18 full-time employees and, according to state studies, has a $12.86 million annual economic impact on the region.
In addition to transfer approval, the city and county have applied to the FAA for funding of the runway. Over the last decade, the FAA has generally funded 90 percent of airport improvements, with state and local governmental entities sharing the remaining 10 percent, according to Spearfish City Administrator Joe Neeb. Rod Senn of the Rapid Citybased KLJ engineering firm, said a second runway had been in the airport’s master plan for nearly a decade and, if built, likely would be shorter than the facility’s existing 6,400-foot runway to accommodate smaller aircraft. The study required by the FAA would determine the length of configuration of the new runway and no cost estimate has been determined, Senn said. “We are hoping for a sense of direction from the FAA by the end of 2015,” Senn said. “The time-frame for construction remains unknown and would all be dependent on our ability to secure some federal funding.” “We’ve had aeronautical manufacturers look at Spearfish to relocate their operations to this area,” Jilek said. “Larger corporations these days can’t handle it all without aviation support.” – Reprinted with permission from the October 02, 2014, issue of the Rapid City Journal.

The Matthews Opera House has taken on many different faces since opening its doors Dec. 3, 1906. In the beginning it was perfectly designed for stage productions and traveling shows.
The Matthews Opera House has taken on many different faces since opening its doors Dec. 3, 1906. In the beginning it was perfectly designed for stage productions and traveling shows. As time and trends moved on, it became the home for a variety of activities including moving pictures, a shooting gallery, an occasional dance hall, and a place to sew parachutes for WWII soldiers. In the mid ‘50s, and again in the ‘70s, efforts were started by groups of students from Black Hills State College to revive the live theatre performances. Then the summer of 1976, a new favorite hit the stage, “The Phantom of the Matthews Opera House” written by Paul Higbee. The passion of these past supporters has allowed the opera house to become what is today. Today, the Matthews Opera House is the centerpiece of the
Spearfish Arts Center and the home to an active community theater. It is once again an ongoing scene of live theatre, concerts and art events all year long. The Opera House is also a great resource for children’s exposure to the theatre and arts. “It is important for children to experience live theatre and musical events,” said Sian Young, executive director. “When children are exposed early to the theatre, it is something they can carry with them throughout their life.” The Matthews has a children’s theater called the Peanut Butter & Jelly Players. Traditionally, this group provides a summer theater camp to children of the area for a month, culminating in a 3-day production of a play. Children learn the art of performing, back stage tasks, blocking, set building…
the whole package! Due to a very generous anonymous donor, this month-long summer program is free to all the children. Young said that children that are active participants in the theatre have higher academic achievements, higher college prep scores and better attendance in school. The children’s programs that the Matthews Opera House provides are an important asset to the Spearfish community. The unique and historical venue is important to the community members as a whole, as well. “The Matthews Opera House continually challenges the audience with unique performances that bring the world to Spearfish,” Young said. The Opera House brings a vast variety of cultures to Spearfish, so folks can experience Zydeco, jazz, blue grass and electric violins, just to name a few. This brings a renewed energy and vitality to the region, making the community a better place to live. According to the NordTrondelag Health Study, participation in cultural activities was significantly associated with good health, good satisfaction with life, low anxiety and depression scores. “Art and theatre are good for our community and our economy by keeping the money in Spearfish,” she said. Art and cultural activities and experiences are vital to a communities economic wellbeing. They are also a valuable tool for bringing people together, aiding in creating a unified community. The Matthews Opera House is not only limited to art and theatre productions, it is also responsible for one of the most popular events in the area.

Festival in the Park The Festival in the Park is one of the largest outdoor summer arts festivals in the upper Midwest. More than 20,000 people attend this annual event held the third weekend in July. The Festival features over 150 craft, arts and 25 food booths with an emphasis on handmade arts and crafts. It is no surprise that the Corporation for National and Community Service says South Dakota ranks seventh in the nation when it comes to volunteering. There are many different service organizations and volunteer opportunities within the Northern Hills and Spearfish community in which citizens can participate. Examples of the many service clubs and non-profits in Spearfish include: Western Hills Humane Society, Zonta Club of Spearfish, Spearfish Community Coalition, Youthwise, Spirit of the Hills Wildlife Sanctuary, Spearfish Food Pantry, The Good Shepherd Clinic and more!
Spirit of the Hills Wildlife Sanctuary Since the Spirit of the Hills Wildlife Sanctuary was established in 1999, it has grown to become one of the most diverse animal rescues in the nation. Operated by professionally trained volunteer help, donations, and admission fees, the Sanctuary is a non-profit animal charity that upholds the value of all life by providing care for both captive exotic and domestic animals.
Few sanctuaries host such a variety of different species. Although the captive-raised animals will never know their wild homes, Spirit of the Hills is committed to giving them the next best thing: a nurturing, peaceful life, free from exploitation. The sanctuary’s mission is: “To provide a lifelong home for abused, neglected or abandoned animals; to find permanent and loving homes for them when possible and appropriate; and to promote responsible stewardship of the environment and all that live in it through education and advocacy.”
There are a number of ways that folks can volunteer with the Spirit of the Hills Wildlife Sanctuary. There is a need for animal care attendants, the opportunity to care for domestic and farm animals. Training in the care of the big cats and bears is available after proven commitment and managerial approval. There is also a need for Educational Tour Guides; the guides conduct educational tours and presentations. Landscapers are needed to help beautify the sanctuary by planting and watering flowers, weed control, mowing and mulching.

The coalition’s efforts have been focused in the past on tobacco prevention and the push to create smoke free restaurants and public spaces. Today, their efforts include reducing the underage use of alcohol, as well as education and eradication of synthetic drugs, establishing safe disposal of prescription drugs and limiting the accessibility to our youth. “In order for the Coalition to operate smoothly, we need approximately 150-200 volunteers per year depending on the current projects,” said Melissa Currier, Coalition Coordinator. “The Coalition relies heavily on our members to complete the work needed to get our message out,” she said. “Fortunately, all of our members are very devoted to a ‘positive, healthy, and drug free youth’ and have a vested interest in the cause. We always welcome new members who strive to make our community healthier and happier, especially for our youth.”

Spearfish is home to another great organization, YouthWise. Youthwise is a local non-profit communitybased organization providing prevention, transition and diversion services to over 2,775 youth annually in Lawrence County. The YouthWise Diversion program has been recognized by the United States Department of Substance Abuse Mental Health Services Administration making it one of 40 programs in the nation to receive this recognition.

Fellows grow as a result of
Dakota Rising
When Chris Malo with Black Hills Urethane of Spearfish applied to be a Dakota Rising Fellow back in 2009, he didn’t really know what he was getting himself into. “I can honestly say that I came into this program kicking and screaming,” Malo admits. “I was expecting business skills training.”
Six years later, Malo is one of the biggest proponents of the program. He completed his Fellowship in 2012, and he continues to participate and give back to the program. A program of Dakota Resources, the Dakota Rising program is designed to help rural entrepreneurs discover new ways to grow their business. Spearfish was one of the three initial community sites, with Bryan Walker of Spearfish Economic Development Corporation serving as site coordinator.
Two Spearfish entrepreneurs – Malo with Black Hills Urethane and Jim Meyer with Quarq Technologies – were chosen as part of the nine in the first group of Dakota Rising Fellows. Since then, a total of 15 area businesses have been selected as Fellows and have benefited from the program. See sidebar at right for complete list.
Data Shows Program Works
Entrepreneurs with passion, drive, and a will to take their existing companies to the next level are selected and mentored through a three-year Fellowship. According to program statistics and feedback from participants, the process works. “I always thought I had a high chance of success in my business,” Malo said. “What Dakota Rising did was help me grow faster and farther than I ever would have dreamed in a very short time.”
In Lawrence County, total assets of Dakota Rising Fellows grew just over 50% from $1.36 million in 2011 to $2.04 million just three years later in 2013. During the same time period, gross revenue increased about 65% from $2.35 million to $3.87 million, and net profit more than doubled from $109,251 in 2011 to $241,246.
The Dakota Rising program offers some specific business skills training; fellows are connected to a community of statewide resources, mentors and financial experts. But it is much more of personal development program for entrepreneurs. Personal and business growth strategies are developed while working in a small, peer-based cohort group where Fellows, often from different industries and experiences, help one another.

“The benefit of the cohort process is that it creates a very safe environment where you can honestly talk about the issues that you have,” Malo explained. “And your cohorts push you to come up with the right answers and answers that you’re maybe not fully conscious of in your normal day-to-day operations.” All of the 2009 Fellows grew as business people during the program, according to Malo.
“We can pick up the phone and instantly get into a very, very good conversation and get some good advice or just simply vent and try to get some clarity to a situation,” he said.
Cash Grant Isn’t Biggest Benefit
As with most Fellows, what attracted Malo to the program was the cash grant. The Dakota Rising program awards those who apply and are chosen as Fellows each a $10,000 grant after completing one year in the program to support professional growth and business expansion.
While the grant may be what initially attracts applicants, after being involved, most Fellows find that the grant is not the most valuable part of the program. “It’s not just about the money,” Malo said. “I would think of it as more of an educational grant. Someone’s offering you the opportunity to become a much stronger, more diverse business person.”

Dee Sleep with Chicken Creek Communications attended the first community luncheon where the program was unveiled, but admits that as a busy business owner, she didn’t find the time to complete the application. In fact, it took Sleep until the third round of applications before she finally made the application a priority. Like Drumm and Fritz, she was chosen as a 2011 Fellow. “I finally decided that the application process would be valuable even without the cash award,” Sleep said. “Even if I had not been selected as a Fellow, I had at least had the valuable experience of creating a business plan.”
Program Continues to Grow
Since its inception, the program has expanded to five official sites statewide with additional applicants welcome from outside the sites through a Fellow sponsorship. The Spearfish site expanded to include all of Lawrence County in 2013. Sites serve as resources for all potential applicants, applicants and Fellows in the program, which results in even more assistance for growing local businesses. Melissa Barth, Executive Director of the Spearfish Area Chamber of Commerce, took over for Spearfish Economic Development Corporation as the primary program site coordinator for Lawrence County in 2014. “Lawrence County has numerous success stories of Fellows in the program – each one of the twenty involved. Entrepreneurs have a passion and a dream, but don’t necessarily have the technical knowledge or business education to run a business,” said Melissa Barth, Spearfish Chamber of Commerce Executive Director. Malo explained that much of the program’s power lies in its connections and the cohort’s peer-based push towards problem solving. “Business people tend to isolate themselves,” Malo said. “They don’t realize other people are having similar problems. The full benefit of this program is really being able to examine and understand why things aren’t working right and figuring out how to correct them.”

Bay Leaf Cafe
Foodies know that a “bay leaf” can be the perfect ingredient to flavor soups, stews, vegetables and meats. In Spearfish, food aficionados will find a unique restaurant that’s been adding flavor to the community for more than two decades – the Bay Leaf Café. The menu touts a range of items with health – and variety – in mind: from Mediterranean and vegetarian specialties to creative soups, salads and sandwiches. Evening entrees feature an enticing offering of steak, seafood, pasta, Wyoming lamb and a variety of native game including elk, buffalo and walleye.
“We hope that the Bay Leaf Café exemplifies character with the spirit of keeping healthy and energizing food available for people to love and enjoy,” says Taffy Tucker, who established the Bay Leaf Café with partner French Bryan in 1993. Taffy handles the office and French, as president of the corporation, mostly enjoys domain over the kitchen, but keeps his eye on all aspects of the business.
Spice of Life
Taffy, a Deadwood native, and French, who was raised on a dairy and beef farm near Spearfish, met when they were both students at Black Hills State University in the late 1960s.
Although Taffy went to school for a teaching degree, she always had a business sense and started her working career in banking. French had a passion for food early on. As the middle child of five kids, he says he became his mom’s kitchen helper – which he preferred to working outside. He credits his career as a chef to his “love for eating.” The duo were married in 1970 and in 1975 opened their first restaurant in Deadwood – the Franklin Dining Room in the historic Franklin Hotel. They also owned one-third of the Franklin and were part of much of its restoration. As time went on, Taffy and French divorced but have remained friends – and business partners – carrying through with their vision for the Bay Leaf Cafe. They sold their exclusive lease for the Franklin Dining Room to the Franklin Hotel in 1992 (and later sold their ownership of the Franklin Hotel in 2005). In January 1993, they bought what French calls the “ugliest building” in Spearfish at that time. It was the

historic Queen City Hotel built in 1892 one block off Main Street. While Taffy and French knew the building held potential, it was condemned when they bought it and in need of extensive restoration.
They were up to the task. Taffy explains that coming from Deadwood and being life-long residents of the Northern Hill, the building’s historic roots were an important aspect of the new restaurant venture for them. They lifted the building to put a foundation under it. The building was completely revamped inside and out really keeping only the bones of the building. New stained glass transom windows were added to the front of the building and an antique front door was located to bring the front of the building to a historically correct style.

Dining “What you smell when you walk in is what’s cooking in the kitchen that day,” Taffy says. She credits French for the wonderful food, saying, “He loves what he does. The reason the food is so good is because it takes on his attitude of intentionally making it good.” Bay Leaf owners French Bryan and Taffy Tucker were awarded the Spearfish Area Chamber of Commerce 2015 Lifetime Achievement Award for more than 20 years in business.
In the years since the restaurant has opened three apartments have been created from the tiny sleeping rooms that were original to the Queen City Hotel. French currently resides in one of the apartments – which keeps him close to the kitchen. Today, the building is the only remaining two-story false-fronted downtown building in Spearfish constructed before 1900. During eight months of construction, Taffy says their renovation lent itself to great business promotion with a steady stream of people popping in to ask “What are you doing?”
A Love Of Food
In August 1993, during the annual Sturgis Motorcycle Rally, the Bay Leaf Café opened its doors with a commitment to offering a refreshing menu for the region. Over the past 21 years, they’ve lived up to that reputation and take pride in a menu with an eclectic selection of locally grown seasonal vegetables, regional favorites such as trout, walleye, elk and buffalo entrees and delectable desserts. “One of the most frequent compliments we get is that this restaurant ‘doesn’t feel like it’s in South Dakota,’” says Taffy, who says they’ve been very intentional about being different and unique from the atmosphere to their menu.
As examples, she shares that they chose not to have carpet in the restaurant and minimal fabrics to minimize any lingering cooking smells as well as to reduce allergens for patrons. They also do not use airfresheners and have been a non-smoking restaurant – the first in Spearfish – since the day they opened.

She adds, “French reads all of the time and is studying foods and the health attributes of certain foods. Food is his interest.”
In honor of his mother who taught him to cook, French still uses her dinner roll recipe – now with whole wheat. His dedication to the restaurant is evident in those dinner rolls – Taffy shares that every roll served at the Bay Leaf Café is made by French. Another secret weapon in the kitchen is French’s brother Johnny who does all of the food buying for the restaurant – and occasionally assists as chef. Taffy credits Johnny for procuring the best quality food – and price – for their 63-seat restaurant. “One of the most difficult things in this business is competing with national chains and national contracts for food,” she explains.
She adds, “We don’t want to be a big restaurant; we strive for that healthy, bistro feeling; and we are here in Spearfish because we love being here.”
Next door and attached to the café, French and Taffy also own the Carriage Room which is used to host private parties, receptions, special meals for motor coach tours and business engagements. Catering events is an important part of their business. Taffy operates two additional businesses, a step-on guide service for bus tours called Guides To Go and she is an licensed minister who presides as an officiant at weddings in a variety of settings – from the local park to hot air balloons. What’s next for the Bay Leaf Café? Taffy says both she and French are continuing to enjoy what they do. She concludes, “Neither one of us are very good at looking at the end of the rainbow. We enjoy the color of the rainbow where we are.”

The landscape of the Black Hills is one of the most beautiful in the country. The rolling hills, radiant rivers and creeks, and majestic forests are unlike anything most people have seen in their lives. It is not hard to understand why people like Jeff Drumm or Matthew Jackson would want to start their businesses in this area. Jeff Drumm, head brewer and founder of Crow Peak Brewing Company, was one of those people taken in by the beauty of Spearfish and the Black Hills, and wanted to contribute his passion, craft brewing, to the Spearfish community. “I guess I got started because I just enjoyed it,” Drumm said. “I enjoyed the beer, enjoyed the process and it just kind of became of passion for me.”
Drumm’s enthusiasm for craft brewing started back in his hometown of San Diego, CA. “San Diego has a very large craft brewing community,” he said. “I wanted to see that here.” www.SpearfishChamber.org
Drumm and his family moved to Spearfish, in 2004. Crow Peak Brewery opened their doors three years later in March 2007. With a successful start and high demand, the thought of expansion arose. Josh Fritz joined Crow Peak Brewing Co. in 2009.
“I just like good beer,” Fritz said, when asked how he first became interested and involved with craft brewing. In December of 2009, the partners opened their new building to raves of happy customers. “It’s been great!” said Drumm. “I had no idea how this was going to go. It was a leap of faith. We have had incredible support from the local community.”

Matthew Jackson had a different kind of start to his dream. Jackson was raised in the Northern Hills community of Belle Fourche. After beginning college and taking some classes in chemistry, he decided to change his direction from pre-med to enology (study of wine making).

Belle Joli & Jackson Vineyards
“I just got really interested in the whole process,” said Jackson. “We discovered that there were varietals (wine grapes) that would do well in our climate here, so the next step was to plant our first vineyard and keep up with that pursuit.”
Jackson has since turned his operation into a family affair. Jackson Vineyards is owned and operated by Matthew and Choi Jackson, and Dr. John and Patty Jackson. Belle Joli has had an inspiring progression over the last few years. Their first vineyard was planted in Belle Fourche back in 2000, and features 25-acres of land. Following the increase of interest in their product, they opened up their tasting room located in Deadwood. The most recent addition to the Belle Joli Winery family is the Sparkling House located in Sturgis, which opened in August 2014. This is the first champagne house located in South Dakota. The sparkling house is where the stillwines and sparkling-wines are made and bottled. The sparkling house also features a beautiful view of their five-acre vineyard just off the outdoor patio.
Blazing New Trails
Crow Peak Brewing Company has also gained recognition for a few firsts, and not just for their mouthwatering brews. Crow Peak was the first distributing brewery in South Dakota since 1942. Currently, Crow Peak Brewing Co. has a statewide distribution reach, with sales in other neighboring states. “In the long-run we would like to expand our regional growth, as well as to other states like Colorado, Minnesota, and hopefully throughout Nebraska,” Drumm said.
The decision to open a brewery in Spearfish was an easy one, Drumm said. “After moving here and talking to people, some had said a craft brewery was something they could see doing well in Spearfish, especially with the college and the community.”

While Belle Joli is paving the way as the first champagne house in the state, their process of wine making is nonetheless traditional. All of their sparkling wine produced is done in house at their Sturgis facility. “The wine that we’re making is using the same traditions, known as “méthode traditionnelle” or “méthode champenoise,” Jackson said. “The community has been very open to us and very great! It’s good to know that everyone is rooting for us.”
The More the Merrier
South Dakota made products have always been a selling point for tourism and helps boost local economies, and Jackson is no stranger to that need. He is pleased with the amount of wineries and breweries coming to the South Dakota and Black Hills area.

After beginning college and taking some classes in chemistry, Matthew Jackson decided to change his direction from pre-med to enology, the study of wine making. He planted his vineyard near Belle Fourche for Belle Joli Winery back in 2000.
“It would help us a great deal if there were more wineries and breweries,” Jackson said. “The concept of a beer and wine trail would bring a lot more people in.” Drumm also had all but positive things to say about the many local craft breweries opening in the area.
“The craft brewing scene is growing overall,” he said. “South Dakota is starting to catch up with that, and I think the more the merrier. It just adds exposure to the craft beer scene, which is what we want.” The South Dakota craft brewery industry has been steadily growing for the last few years. The latest craft brewery in the Black Hills opened up in Sturgis, just down the interstate southeast of Spearfish. “We were happy to provide input,” Drumm said about working with the Knuckle Brewing Company before they opened.
Both businesses are committed to crafting products their customers will love and keep them coming back.
“My favorite part of this job is people enjoying the beer I produce,” Drumm said. “It’s a product that people enjoy; it makes everything worthwhile to make people happy.”

Encourage Chamber membership by welcoming new businesses to the Spearfish community, participating in membership retention drives and greeting at Gone Fishin’ Mixers.
Taste of Spearfish offers an affordable way to sample culinary features from local restaurants, caterers, and food purveyors in a casual atmosphere. It is generally held on a Monday evening towards the end of January.

Biker Bash Harley Fundraiser
The Spearfish Chamber has been revving up revenue for over 20 years with an annual Harley-Davidson motorcycle drawing. This fundraiser party features dinner, silent auction and the grand prize drawing. Each ticket is a chance for the bike and admits two to the Biker Bash!
