Spinach & Fig Salad with Goat Cheese & Caramel Dressing

Ingredients

For the salad

4 cups baby spinach leaves

3-4 figs

2 oz goat cheese

1/4 cup pecans

For the caramel dressing

2 tbsp olive oil

2 tbsp balsamic vinegar

2 tbsp Complete Collagen Plus

1 tbsp Dijon mustard

Sea salt and freshly ground black pepper, to taste

Method

Whisk together the olive oil with the balsamic vinegar, Complete Collagen Plus, mustard and a pinch of salt and pepper to make the dressing

In a large salad bowl combine the spinach leaves with the figs and pecans

Top with the goat cheese and drizzle with a generous amount of dressing. Serve immediately.
