Greetings from Bangkok. This issue of Chefs Magazine Thailand is packed full of interviews and articles from chef stories to hot and important topics such as food waste.

Coffee Works has an interesting program for its coffee production. Part of the movement of growing and using more local ingredients that is promoting sustainability, they have partnered with growers in northern Thailand that gives its coffee a very distinct flavour while also guaranteeing its quality with the freshness.

There is an in depth interview with Chef Jamie Wakeford who is doing some nice cooking at Olta with his modern British cuisine. He gives an insight into what it is like working in both locations and the challenges of operation two restaurants at the same time.

Chef Ton is our featured “Talk to the Chef” this month. Not much really needs to be said about him and his importance to the Bangkok culinary scene. If you haven’t tried his cuisine you should soon.

Sofitel So is very active with chef Kenny Karlsson’s plans on taking restaurant Red Oven to the next level of dining. He shares with us his inspiration and plans for the future.

There is the annual So Amazing Chefs gastronomic event planned for September 2019 that features eight Michelin Stared chefs. This must be a first for Bangkok to have this many stars under one roof.

Sustainability, recycling, reducing air miles that food travels, reducing land fill, becoming plastic free. These are very real issues that is making headlines around the world and is a massive problem, not just in Thailand. We all need to do our bit to help solve these problems for the next generations to come. Read how Hotel Belmond Mount Nelson’s Chefs are dealing with this global problem.

I really enjoy vegetables and having the chance to create interesting menus with only them is exciting. Have a look how Italian Chef Pietro Leemann has won a Michelin Star with his creative cuisine that highlight the flavours and textures of these seasonal ingredients.

There is also a great story on Piedmonte, prized white truffles and its density of Michelin Stared restaurants.

There has been many new restaurants and hotels opening over the past year. The continued focus of local sustainable Thai ingredients is starting to give us more and more amazing ingredients to work with. This will help to alleviate the global problem of sustainability. The more we support the local growers the better the quality will become. It’s a win win situation.

Bangkok’s food culture is a tourist attraction in and of itself. On every corner of every street, you’ll find Thai “cooks” selling premade or made-to-order dishes from their hawker cart; each dish carefully balancing sweet, salty, spicy and sour flavours. Drawing locals and tourists alike to their stalls for breakfast, lunch and dinner.

While these conveniently located vendors present punters with a plethora of choices, it has also over the years created the stigma that being a chef in Thailand – regardless of whether you’re cooking on the street or in a kitchen – is by no means an esteemed career choice. It’s a “common job”.

In the past decade, however, thanks to a new generation of Thai chefs, this perception has made a 180-degree turnaround; the humble cook has metamorphosized into an honourable industry leader paving the way for Thai chefs and lifting Thai cuisine up onto the global playing field. From working directly with Thai farmers and sourcing local produce to honouring Thai traditions and flavours, no detail is left untouched. In turn, drawing the attention of prestigious awards including the Michelin Guide which launched its first edition in Thailand in 2018, as well as Asia’s 50 Best Restaurants. In this year’s edition of the hallowed list, five out of the eight Bangkok restaurants are helmed by Thai chefs representing Thai cuisine.

Among this new generation is Thitid Tassanakajohn, chef-owner of Le Du who made his way up the ranks after graduating from New York’s Culinary Institute of America. “I’m lucky to be part of the new upcoming generation”, says Thitid, who also goes by ‘Ton’. “It’s good for Thailand, for the Thai restaurant industry, and chefs in the future as well because they see that Thai chefs can make it by cooking thai food not 11

because of cooking European food or French. ‘Oh Thai chef? Cook Thai? They can be successful’. That’s what the new generation can see and that will make people want to cook Thai food more and be proud of cooking their own heritage.”

Like many chefs, Ton found his passion for cooking while helping his mother and grandmother in the kitchen. After being encouraged by his family not to pursue a career as a chef, he graduated university with a degree in economics and worked in a bank for just one month before packing his bags for New York to attend culinary school – and later train as a sommelier at the Court of Master Sommeliers.

Upon his return to Thailand six years ago, the fresh-faced chef opened his one michelin-starred restaurant – and number 20 in Asia – in the City of Angels to offer diners a different version of Thai cuisine to the one that they are used to. “I want people to accept Thai food more – in a different way. Thai food has always been popular, but I want people to see Thai food as a fine dining experience. That it could be something better.”

Although it might sound French, the name is derived from the Thai word for season; so it should come as no surprise that locally sourced seasonal Thai ingredients are the focus here. Using his classical French training from world-class US restaurants including Eleven Madison Park, The Modern and Jean Georges, Ton masterfully presents diners with French-influenced dishes that are rooted in Thai traditions.

The secret to Thai cuisine is its ingredients; a crucial factor that has been overlooked and underappreciated by many Thai chefs, as well as the customers. “When I came back [to Thailand] six years ago, I noticed every restaurant in Bangkok was promoting only imported ingredients. And even Thai diners, they only appreciated lobster, foie gras, wagyu beef. That’s a shame. We are a country that is so rich in agriculture. Then we eat everything imported. People look at the local ingredients and think it’s cheap. Thai food is cheap. Local ingredients are cheap. It’s cheap because people make it cheap.”

Over the past six years Ton and his team have been working with farmers, growers and foragers across the country to improve

agricultural standards and, ultimately, their produce. “If you want something good, you need to put in the effort to work with the farmers, to get them to understand, and also money as well because they have to produce it differently.

“People here in Thailand, we take it for granted that we can grow everything almost all year round. Sometimes we forget the season and we push everything too far in terms of nature. We try to grow things that are not supposed to be in season. At the end of the day, I think it’s bad for the variety of the food.

“Like all over the world, we have a thousand vegetables that we can eat in Thailand. But everyone only eats carrot, broccoli, bok choy and that’s it,” explains Ton. “Sometimes I use a vegetable and some Thai people don’t know we have this in Thailand, they don’t even know the name.”

The menu at Le Du changes with the seasons. Not only do Ton and his team base their dishes on seasonal ingredients, but also the feeling of the season itself. Each summer – and by far the hottest months of

the year in Thailand – his signature Khao Chae, consisting of shrimp and pork balls served with pickled radish, pork powder and a scoop of cooling jasmine ice cream is a highlight, while his signature River Prawn reinvents traditional Khao Khluk Kapi, consisting of organic rice cooked with fragrant shrimp paste and pork jam and served with perfectly done river prawns, is a prominent feature throughout the year.

Ton admits that receiving a Michelin star was a dream come true for him but notes that it’s an even bigger opportunity for Bangkok’s dining scene. “It’s one of the ultimate recognition for chefs and to have that to ensure that Bangkok is ready for Michelin Guide, that takes the standard of the whole city in terms of the dining scene. Now people see Bangkok as a dining destination, not just for street food.”

Currently the entrepreneurial chef has his hands full with his series of family-style Thai restaurants including Baan, BackYard by Baan as well as Baan in Taipei. When he’s not running his mini empire, Ton loves to go to Jay Fai, his favourite restaurant of all time. Not only is Jay Fai the ‘Queen of Street Food’ but she’s also a long-time family friend, “It’s like eating at her house. And the ingredients are super good.”

Although not Thai, Ton gives credit to David Thompson of Nahm as well as chef Bo from Bo.Lan for paving the way for Thai cuisine. He also offers valuable advice to aspiring young Thai chefs looking to follow in their footsteps: “Now being a chef is something very cool.

It’s a good thing that it’s more popular, but then the new generation might see it as being too easy to be a chef. They think you just go to culinary school, then can come out and open a restaurant. That’s not how it works in this industry. You have to go to work [with] who you want to be, who you look up to. Work in the best restaurant that you possibly can, and have patience. It’s a shitshow but it will pay off someday if you have enough patience.” Chef

A Thai Co The Big Island versus the Big Mango

Sun, sea, and sand on a tropical island paradise has always been a no-brainer combination for a holiday destination.

But can the same be said when trying to run and operate a restaurant?

Covering an area of 576 sq km, Thailand’s largest island, Phuket, has long been attracting locals, tourists, and expats alike to flock to its shores to experience its white sand beaches, dramatic karst islands, and frozen coconut cocktails. Home to 89,072 permanent residents, the island welcomes an additional 5.3 million tourists each year. And while its dining scene doesn’t quite rival the Thai capital of Bangkok (yet), it has been making waves in the industry. In December 2018 the Michelin Guide

announced the addition of Phuket and neighbouring PhangNga province to its Thailand edition, with PRU being the first restaurant on the island to be awarded a Michelin star.

In stark contrast, the sprawling metropolis of Bangkok – 1,569 sq km to be exact and home to 10.35 million people – is known for its vibrant street-food culture, colourful nightlife, ornate temples and towering skyscrapers that fill its neverending skyline. In 2018, Forbes named Bangkok the most visited city in the world with 17

20.5 million travelers visiting the Thai capital in 2017, according to the Mastercard’s Global Destination Cities Index. But it’s not just its number of visitors that has been making international headlines; Bangkok has long been dominating the Asia’s 50 Best Restaurants Awards too, with progressive Indian restaurant Gaggan taking the top spot for four consecutive years. Despite it being knocked down to number two this year, Bangkok remains well-represented with a total of eight restaurants making the coveted list. Not forgetting Bangkok also boasts four two Michelin-starred restaurants and 22 one Michelin-starred restaurants, putting it on the map for international foodies as a fine-dining destination.

So is the grass really greener on Thailand’s biggest island for a chef, or is it just covered in sand? Alternatively, is Bangkok a chef’s dream destination, or is it just more polluted? According to Jamie Wakeford, chef-owner of Bampot in Phuket and Olta in Bangkok, “they both have their challenges.”

Scottish-born Jamie and his wife Helen both started working in the hospitality industry with the aim to travel the world. After working his way up the ranks at various establishments across the UK, and with internships at both Heston Blumenthal’s Fat Duck and Gordon Ramsay’s Maze under his belt, the couple left the

homeland to see the world, with Asia being their ultimate goal.

Their first stop was Baku in Azerbaijan for 2 years, before heading to Shanghai, followed by Phuket in 2013.

“In Phuket you rub shoulders with all these millionaires, so before I knew it I had a seasonal beach club. That’s where I met [my business partner]”, relates Jamie. Four months later, the beach club closed as planned and in early 2015 Jamie and his newfound partners opened the doors to modern European bistro, Bampot, in the northern part of the island in Cherngtalay. Fast forward four years and one Michelin Guide listing later, the wellestablished team opened their second venue, Olta, serving up modern British fare to Bangkok punters in the leafy-green Suan Phlu neighbourhood.

While Bampot and Olta share the same DNA, there are several undeniable differences; most notably the market. “There was a lot of adjustment at Bampot when we opened. We originally did something quite similar to the menu [at Olta], but it just wasn’t received at all. I had a screaming match with someone in the first week because we didn’t have French fries on the menu and he was just berating me. So there was a lot of adaptation. In Bangkok we can do what we want to do. The market is much more open here.

“There’s a bigger talent pool in Bangkok. And the chefs that come through are really good, but there’s so many places.

They can leave and go get another job anywhere. In Phuket the marketplace for recruitment is a constant battle with the hotels and service charge. "

“The hard thing in Phuket is you have this amazing high season and you make a good amount of cash and then in low season you spend it. So what you see is a lot of places go, go, go and then they just close and disappear.” For Bampot, high season typically sees an 80-20 split of tourists to expats and locals, while in low season the market inverts to see 70% expats and locals to 30% tourists. “In Bangkok the demographic is fascinating. We had mainly expats the first couple of weeks at Olta, now it’s 70% Thai, with repeat visits from locals.”

Over the past four years, a wave of change has swept over the island. Development is rife, particularly in the northern part of the island, bringing with it a new breed of restaurants. Award-winning local favourites such as PRU, Acqua, and Suay are but a few elevating the dining scene on the island; and rumour has it there are 20 28

many more set to follow in their wake.

Despite this surge in development, sourcing ingredients in Phuket proves difficult. “You would think that it being closer to nature that you’d have more produce, but it doesn’t have that infrastructure,” explains Jamie.

Surprisingly, local vegetable suppliers grow only some of their produce on their grounds in Phuket and source the rest from markets in Chiang Mai. Fish also proves difficult to source, as it took Jamie and his team two years to find a quality fishmonger.

“We also import a little bit more than we would [at Olta] because the market wants it. They want those recognisable cuts and grades of meat. It’s a lot easier in Bangkok, you’ve got much more selection. The price point is also better in Bangkok so you can pass that on to the guests.

“It’s frustrating because the produce is

so good in Bangkok. It’s good in Phuket but it’s not as good as it could be. Phuket is difficult, but it’s starting now. I think it’s about a year out until we have a similar level of supply in Phuket. It’s hard to find anything different. Creatively it gets quite difficult because your raw ingredient isn’t there, there’s no new things coming in, coming out.”

While Bangkok proves to be the winning conundrum in terms of sourcing produce, it ties with Phuket when it comes to recruiting.

“There’s a bigger talent pool in Bangkok. And the chefs that come through are really good, but there’s so many places.

They can leave and go get another job anywhere. In Phuket the marketplace for recruitment is a constant battle with the hotels and service charge.

“They both have their challenges recruiting but if you can get good people, train them well, pay them properly, structure development for them, you can keep them.”

Admittedly, the dining scene was only one of the contributing 22

factors that lead Jamie and his business partners to open a restaurant in Bangkok. The other was the lifestyle. In 2017 Jamie and Helen welcomed their first child, and in Bangkok there is not only more for a young family to do, but life is also a little bit easier. “Things like Grab, being able to have your groceries delivered, access to a gym that is not extortionate and part of a hotel, things like that we’d just been missing. We’d been on an island and were getting a bit sleepy – a bit retired almost.” With the family’s new home located only a short walking-distance away from Olta – in the Suan Phlu neigbourhood – and an abundance of international schools and childcare facilities to choose from, they now have everything they need right on their doorstep.

While Jamie and his business partners have plenty of plans in the works, he does offer one piece of advice for chefs looking to open a restaurant in the Land of Smiles: “It’s difficult to do business in Thailand, whether you’re in Bangkok or Phuket. But it’s easier having two.” Chef 23

“I need to set standards and involve myself in training the staff. I have 33 chefs to take care of. It’s a little less cooking and more thinking in my head, creating new things, and setting standards.”

The tall Swedish man was busy wiping the counters, checking the tom yum baked fish, one of the specialties for Saturdays By the Bay, a monthly event at Red Oven. A table of guests waved him down and he quickly came back to them with Thai seafood dipping sauce, a crucial condiment for dining with seafood. Made of garlic, lime juice, oyster sauce and heaps of chilies the sauce is one of the 400 items available at the buffet restaurant. Each dish in the large open dining area has its own particular taste, flavor, and ingredients. The diversity makes the guests happy and challenges the white dressed chef.

Once he’d helped his patrons, the Chef De Cuisine, Kenny Karlsson, sat down to talk about his background, his love for the restaurant, and why Bangkok is one of the best cuisine hubs in South East Asia.

“I always loved to cook,” Karlsson began.

“My grandmother taught me since I was very young. We baked pies, quiches, and everything.”

Starting off in the kitchen led him on a path through Uppsala University where he studied Restaurant and Hospitality.

His schooling had him wait tables, work in the kitchen, and do all the jobs necessary to bring a restaurant to life. After the first year, cooking called to him.

The outside world beckoned to him too.

He traveled to Australia for a year where he worked in the industry.

“Growing up in Sweden, people stay in Sweden. My mom always said if you are a chef you can wander the world and learn new things. She always encouraged me to go travel,” Karlsson said.

His return to Sweden and graduation had him apply for a position at So Sofitel in Bangkok. Located in the heart of the city, the hotel was a long way from home, but he got the position and was on a plane to the other side of the world.

The capital of Thailand is a cuisine hub for the region. “I think Bangkok has always been a city with a pulse. At this moment

there are 12,000 restaurants,” Karlsson said. “People love to go out more here.

They always go out with family and friends.

It is so easy here. There are restaurants and bars on every corner. There are so many choices.”The city’s wide variety makes it a paradise for chefs like Karlsson. Western, Chinese, Japanese, Indian, French and other cuisines mix together creating a dynamic scene great for emerging chefs like Karlsson.

From 2013 to 2015, Karlsson stayed with So Sofitel working in the Red Oven.

He learned and helped the restaurant blossom. In 2015 he moved to Brassiere 9 in the Silom district. The restaurant serves traditional French fare with a twist. While there he was employed as the Executive Chef. A position that allowed him to grow and understand how important management was.

“I learned a lot from my previous job,” Karlsson explained. “I need to set standards and involve myself in training 27

the staff. I have 33 chefs to take care of. It’s a little less cooking and more thinking in my head, creating new things, and setting standards.”

Now Karlsson has returned to his original restaurant to bring those new standards to the Red Oven. His return to Red Oven a month ago has him bringing his new experiences to his old home. He hopes to implement a new style of thinking to the establishment which encompasses everything from the layout to the dining.

The Red Oven's space has an internal logic to it. The areas, western, Japanese, Thai, etc. are spaced out to allow the patrons to graze upon the food. The open floor plan allows both staff and customers to freely walk about and there is plenty of seating space. There is an open and bright area toward the north of the building and then a more intimate space towards the south. This allows guests to choose their dining room. In addition in the north is a row of large windows that take in the sun and give a view of the majestic Lumpinee park.

The staff at the Red Oven is as large as the dining area. There are between 50-60 members in the establishment in total.

“The Japanese kitchen has eight chefs, the Thai kitchen has six, the cold kitchen has ten and the western kitchen has ten,” Karlsson said listing off his kitchen employees.

Having that big of a staff can be a burden on even the most experienced chef and Karlsson admitted that his first years in the country were hard. He had to adjust to the workflow and to step back, to begin to delegate tasks to others.

Managing people demands a different approach from what his traditional French instructors took.

“When I was young I had two French chefs. They taught me really French style. They taught us the hard way. They would even throw things at us sometimes. If I did that here they would run,” Karlsson said with a laugh.

The times of corporal punishment in the kitchen are fading luckily.

But with a large workforce there are still cultural issues to deal with along with having to come up with new ways of managing with people.

“Sometimes if I show my staff something, they will say they understand but they don’t understand,” he said. “If they don’t understand they won’t want me to show how to do things 28

correctly. They don’t want to lose face. It’s a Thai thing.”

While there are downsides to having to navigate the culture of face, and sometimes things being misinterpreted, for Karlsson there are also many positives.

The staff has had very, very minimal turnover. There has only been one departure of the 50+ employees in the last four years according to Karlsson.

“I have a very good connection with my staff. If you are good to them, they are loyal to you. If I don’t treat them well, they will be gone.”

The relationship with the staff becomes even more important since Karlsson means to implement changes. The competition in the city is fierce. There are over 35 hotels with buffets in the city, according to Karlsson. This makes it necessary to create new promotions and new ideas to lure new guests and retain the old.

“We want to do more live stations. I want to do foie gras, beef tartare on a tableside, maybe have a salmon station where you cut the fish in front of guests. Today when you go to a restaurant you don’t want to sit there. I want it to be more interactive with the guest.”

The patrons at the restaurant are diverse with many coming from out of town but also a strong local scene. Demographically, the crowd encompasses everyone, Thais, Westerners, Japanese, etc. all regularly flock to the Red Oven. The diversity in guests and the diversity of cuisines is a unique challenge, but in a city like Bangkok, Karlsson aims to make extraordinary moves in the dining world. Chef

The man who managed to convert a generation of Italian meat lovers to vegetable fine-dining fanatics was Swiss Chef Pietro Leemann. With his bold approach and creative recipes he managed to expand a nations appreciation of vegetables, bringing the centre stage of the dish instead of “supporting role”. More over, by using his formal training skills and well-honed cooking techniques, he pushed the boundaries of vegetables’ adaptability even further, thereby elevating the humble, earthy vegetable to the lofty realms of award winning fine-dining.

It’s one thing to earn accolades for fine dining, its another to do it for what was then considered a “niche” cuisine - yet even more notable to be a pioneer of an increasingly important dining movement.

For it Chef Leemann has earned his share of awards: In 2000 chef Leemann was honoured with Pellegrino Artusi prize for the quality and unique nature of his cuisine. In 2010 he received the Città di Fabriano award.

Not one to rest on his laurels, the Chef is tireless in his own research and development, having written several books on not just cuisine and food culture but also philosophy (more on Asian Taoism influence on him later).

He has also founded with his friend and co-author Gabriele Eschenazi the first international festival of vegetarian culture and cuisine, “The Vegetarian Chance”, now successfully in its fifth edition. In 2015 he established Joia Academy, an

indipendent institution created to disclose the vegetarian culture values from a nutritional, healthy, agricultural, social, philosophical and psychological point of view. Leemann, the patron saint of vegetarian fine dining is leading his Green Crusade!

Roots in Technique Having trained under some of the greats, including Angelo Conti Rossini and later Fredy Girardet di Crissier in Switzerland, the master of nouvelle cuisine that defined the dining movement in the early 1980’s, Chef Leemann learned how a dining movement can push parameters of traditional cuisine. After moving to Italy he worked with the “godfather” of Italian cuisine Gulatiero Marchesi.

“Whilst Fredy Girardet had taught me rigor in the workplace and insistence on absolutely respecting the parameters of quality, it was Marchesi taught me to ‘think’ about cooking.”

“It was a magic time!” the Chef explains.

“The quality of restaurants reached great heights and there was dynamism in cuisine. Yet, I was not happy. Cuisine seemed to be fenced in culturally and territorially.”

At that time it was France, with it focus meat based menus and emphasis on heavy sauces using butter and cream, that was considered the bastion of grand cuisine. “Everything else was peripheral and secondary.”

He continues “I started to become interested in other directions, people

were starting to speak about vegetarian cuisine and biological farming. I became a vegetarian myself.”

Devouring piles of vegetarian cook books too, the Chef fed his seeming insatiable thirst for knowledge on the vegetarian approach, deeming his own style as a “kitchen architect”. And then the Chef discovered Asia!

Asian Calling!

“I landed at the Shanghai airport one rainy autumn day. The cab driver tried to add an extra hundred dollars to my fare to take me into town. I soon learned as a young Chef that the reality was quite different from the legendary Asian I had imagined! My first impulse was to escape.”

But perseverance got the better of the Chef

and he enrolling at the great Tsuji School for courses in Japanese and Chinese cooking in exchange for his knowledge of Italian and French cuisine.

“I immersed myself in that world and learned the language, practiced Tajiquan, studied and ate a great deal.” He quickly learned “a country’s gastronomic culture and recipes are determined by geography and climate - it’s a different approach to life than in Europe.”

Asian-influenced ‘Natural Cuisine’ Influenced by cultural differences he discovered while cooking in Asia, looking at the unique ways two cultures can treat the same ingredient, he developed his personal philosophy of ‘natural cuisine’ (Alta Cucina Naturale) based around 35

Referring to another great Italian Marco Polo and his travels that brought new knowledge of a little known world, the Chef discovered not just new ingredients, cooking techniques and philosophy but most of all learned how ingredients change their very characteristics after they are naturally and organically assimilated in different cultures. “It is interesting also to see how the same ingredients lead to similar results: they make pasta with wheat flour in China the same way they do in Italy. Chili peppers are fermented with beans in South America to round out the chili’s taste much the same way they are fermented with soy in China to obtain a hot pepper paste that is quite similar, even if no one has ever transmitted this information! We are living in a time of great cultural exchange, encouraged by the frequency of travel and easier communication that takes place through the television and Internet, accelerating the tempo. These exchanges are quickly changing the way of eating in both Asia and Europe.”

The world of coffee isn’t just about the beans. It’s not just about the caramel chocolate smell that wafts into the nose after a fresh pot is brewed. Nor is about it the jolt of energy from a shot of espresso.

The world of coffee is about the people that help support the industry and nourish it.

Thailand’s Integrated Tribal Development Programme is composed of a group of people that nurse and aid that world.

The history of the company begins with Michael Mann, a 2nd generation Thailand expat whose parents worked in agricultural development with hill tribes in Thailand. Mann’s father originally came to the country in 1959 and as part of the church. The mission worked in agricultural development and in 1960, the first coffee beans in Thailand were planted.

Mann would see his father’s growth and after studying in California he returned to the Land of Smiles in 1990 to continue on developing the area. Many of the farmers were in extremely impoverished and lacked citizenship to Thailand.

“The villagers wanted to get out of

poverty,” Mann said about the time. “We helped create gravity fed water systems to provide water. We’d surveyed the town and they needed water and sanitation.

The region was well known for growing opium and when the first coffee beans came to fruition the price was a low four to five baht per kilo.

One of the major problems was the inability to dry and process the beans correctly. The farmers became indebted to middlemen as they were unable to store the beans for extended periods of time.

In conjunction with CoffeeWORKS, one of Thailand’s largest roasters and B2B coffee suppliers, Mann began to help the farmers learn how to honey process the beans. There are three principal methods of processing coffee, natural, washing,

or honey processing. The latter gives the beans a fruitier more distinct flavor and while the pulp and seed are removed some or all of the mucilage remains.

“It’s difficult, you have to constantly rotate the seeds in the sun,” Mann explained.

Mold can be set up and fermentation can set in. But if done right it can add body, sweetness and really enhances the cup.”

The added flavour along with the ability to store the beans for a longer time initially increased of the beans produced. It took several years for the process to work itself out through. The hill tribe farmers couldn’t risk experimentation and so CoffeeWORKS bought the beans regardless of how they turned out. Allowing for crucial educational development in the production process.

“They were doing all these different experiments with the natural pulp processing and we were doing the cupping and roasting analysis,” Dale Lee CEO of CoffeeWORKS said.

This development along with other infrastructural developments implanted by the ITDP has helped the farmers flourish.

“The price of Thai coffee is higher than world cost,” Mann said.

“We now work with 35 villages of 400 families and 200 tons of

coffee. We started at 4 tons of coffee initially.”

The introduction of Starbucks into the country has been another boon for the farmers. The international company has implemented quality control.

“Sixteen or seventeen years ago Starbucks opened the first coffee shop. When they opened the quality of our coffee wasn’t up to standards,” Mann said. “After 2-3 years with all the quality controls implemented we were able to get into Starbucks.”

Since Starbucks started buying beans from the northern farmers more and more beans are getting on the market. Initially, Starbucks started at just 1 farm.

“Now there are five or six villages that are work with Starbucks,” Mann said.

The ITDP is working with Lanna café (the company being formed in in 2001). The café is part of the Fairtrade Labeling Organization which ensures strict quality control. Several key points are part of the café and organizations practices including producers receiving fair prices, a restriction on child labor, sustainable production is encouraged and all aspects of trade and production are open to public accountability.

The growth of the coffee has also seen a corresponding growth in education and welfare. The ITDP, a registered nonprofit organisation in Thailand, has helped develop four schools in the north.

“Usually water is the first need,” Mann said. “Then comes agriculture, income, and then education and health.”

With all five essentials taken care of, the farmers are facing more complicated problems now. Climate change is impacting on the seasons. “Pricing isn’t stable,” Mann said. “It’s good now but it might haunt them in the future, through trade agreements with other countries.”

The world is uncertain. Slowly does it The sleepy town of Alba, in Italy’s northwestern Piedmont, with its gently undulating hills cushioned with a placid fog, is a picture of serenity. It is no surprise that in this listless land was the very birthplace of the now worldwide culinary movement “Slow Food”.

Fittingly, the region’s languid pace and its reliance on age-old cooking methods as well as it’s rich heritage of agriculture, ancient vines and monastic wine making methods is the very essence of the Slow Food philosophy: sourcing only naturally ripened, locally sourced food and a culinary respect for tradition.

Yet for a few fleeting weeks every year, the region is roused from its soporific slumber as hoards of gastro-fans stir up a culinary frenzy here. From all corners of the world Gourmands gather during October and November to catch the seasonal hunting of a unique gastronomic gem: the famed white truffle of Alba.

This aroma of this heady-scented tuber ‘tartufi bianchi’ fills the streets as Chefs cook dishes that best showcase the delicate musty flavours and perfume of this most prized, elusive ingredient. At dawn,

the best Chefs line up to meet the local truffle hunters, the trifulau, to ensure the best of the day’s treasure trail.

Whether used simply shaved to bejewel a humble plate of perfectly al dente local pasta, such as Alba’s native Tagliolini, or served with a rich cheese or meat-filled Agnolotto another native pasta dish, or studded into locally produced salamis, truffles both the rarest white and more readily available black varietal, are ubiquitous. It seems at every hairpin turn in the sweeping hills of the region, truffles dominate every menu.

A rich density of Michelin-starred restaurants Chefs’ worldwide have come to value this buried treasure - and valuable these truffles certainly are: gram for gram one of the highest costing ingredients. A-list Alba Set in the very heart of Alba is the region’s culinary chart-topper, three Michelin-started Piazza Duomo, and number 15 on S.Pellegrino’s World’s 50 Best list. Considered a culinary Mecca, Chef Enrico Crippa has created his own style of contemporary Italian cuisine incorporating Piedmont’s native ingredients, many of which are grown on its own gardens, at the foot of the fine vines of the Ceretto winery - all under the same ownership. Their lands are amongst the most fertile: 160 Hectares of prime Estate vineyards, including a coveted 11 hectares in the finest Barolo DOCG and 8 in Barbaresco DOCG ensure their wines are consistently ranked amongst the finest worldwide (including the single estate Barolo Brunate 2013 with its robust yet softened tannins that I sampled as well as the sublime and more feminine Barbaresco Asili 2009 single vineyard) and their 46

agricultural produce is equally impressive. The greenhouse and plots house some 400 botanical and horticultural plant varietals, all carefully cultivated, and many based on ancient and unusual varietals. These appear in spectacular yet simple dishes like the starter dish on the “Lange Now” tasting menu, of “Cardoon and Cardoon” - an ancient thistle vegetable similar in texture and taste to a artichoke / celery cross. Appropriately many dishes reflect a dazzling, almost vegetable-dye colour palette. Colour and textures were apparent to all my senses as I ate on one of just 11 tables (or one of “11 mini-restaurants” as they are deemed) under a fresco painted by none other than the prize-winning artist Francesco Clemente.

This is a masterclass in contemporary artistry. No surprise when I learned of the Chef’s training in Japan and it’s rich heritage of horticultur as well as his techniques honed at kitchen of the ultimate

kitchen professor and godfather of Italian cuisine Gualtiero Marchesi as well as Frenchman Michel Bras.

The Female Chef Pioneer: First of the region’s Michelin-stars The original Michelin started restaurant is in contrast steeped in tradition. Relais & Châteaux properties are renown for their gastronomy and Relais San Maurizio a, former Cistercian monastery dating back to 1691, is no exception. The monks knew a thing or two about terroir and picked their spot well: a microclimate exists here that allows for a rich terrain with abundant supplies of organic vegetables and an array of pungent herbs, all grown in it’s own organic garden. As well the hotel’s own Truffle Bisto, the Relais houses one of Piedmonte’s heritage restaurants: the very first to be awarded not one but two Michelin-star back in the early 1970s, when the stars in the region were not nearly as prevalent as they are now.

Pioneers of fine cuisine and fine wine pairing in the area, husband and wife team Guido Alciati (front of house) and Lidia (a talented cook) opened Guido da Costigliole in Langhe - now in the hands of their sons - back in 1961. Long before the Slow Food movement became a trend, this couple were the forerunners, practicing what is now preached: serving food made carefully from pure ingredients, selected from local suppliers and paired with the fine wines from the same region. The couple hosted top names in politics, film as well as a inspiring other visiting chefs who would dine here, like Gualtiero Marchesi, Antonio Santini and Giorgio Pinchiorri, later patron of Florence’s famous Enoteca Pinchiorri. Perhaps these chefs identified the bold creativity of Lidia, who served a fixed daily menu and a fixed price - but was far from fixed in her approach as she “invented” what is now a popular dish enjoyed worldwide, the Agnolotto. Her agile 47

fingers worked as scales (she never weighed or measured) and as a kitchen implement, hand-rolling, kneading and pinching the filmthin feather-light pasta case. She revolutionised what was a humble dish of pasta stuffed with left overs (hence never did two plates of Agnolotto ever taste the same) to instead, pre-cooking 3 meats, pork, rabbit and veal, all separately and then mixing them according to her own recipe and own style of pinching the pasta parcels dubbed “plin” to capture all the flavours into one delicate morsel. I tasted two varieties: the “napkin” style (al tovagliolo) simply cooked in plain water, and presented equally starkly, enveloped in a crisp white napkin, unadorned with sauce or broth to better allow the simple yet rich flavours shine. Old Traditions, New Generation Today, decades later the mantle has been successfully passed to the next generation, with Luca Zecchin at the helm, the young chef Lidia personally trained.

“I use the techniques Lidia taught me, and also the respect for local ingredients and methods that blend them, like the native veal soaked in local wine” the Chef told me as he explained his daily changing menu, changing according to the freshest offerings 80% are locally sourced. Lidia’s own son Hugo heads the kitchens of the Guido restaurant in town and two other sons Andrea and Piero are front of house, one at each branch.

“We were taught to use heart and passion as the principle ingredients in hospitality. That’s the lesson our parents passed down to us and

we carry that responsibility and privilege” Andrea told me as he sat with me at the end of a multi course tasting menu with paired wines, surrounded by carefully curated modern art in contrast with the ancient stone of the vaulted monastic dining room.

“I am the wine list”!

A bold statement originally made by Guido but he put his money where his mouth was, pairing the plates himself and racking up rare and sought after wines in his vaulted cellar. Today, three cellars that were once the monastery’s chilling rooms, cradle a cornucopia of over 3,000 labels (around 40,000 bottles in total) lovingly selected to showcase the best of the region and far beyond. Indeed, the area is also home to some of Italy’s most prestigious wines, including the DOC Barolo, Barbaresco, and Barbera varietals.

These wines, displaying earthy notes of nutty chocolate, hint at the

Alba of course is the hometown of much loved hazelnut-chocolate breakfast spread Nutella! A versatile ingredient, the hazelnut is used by chefs in their sweet and savoury dishes alike: sticky sweet torrone nougat from Alba is best paired with Moscato di Asti or Passito, a richlyflavored, silky wine made from dried Moscato grapes or as a savoury enhancement, blended into dips or crushed to add texture and depth atop vegetables or meat crusts.

At the Chef’s Table

Food wastage is a daily issue for Chefs in their kitchen, but rarely does it get brought in an engaging way by a Chef to the very centre of the Pass let alone to the forefront of the public’s mind. Even more rarely does a Chef succeed in having luxury consumers lining up to “taste waste”! But one bold Chef, at the legendary 5* Hotel Belmond Mount Nelson in Cape Town is managing to do just that.

Waste Centre stage - literally!

“Chefs should stop cooking like Chefs!” chants the Chef speaker, rallying the enraptured crowd. Taking Waste centrestage, literally, right here under the bright lights in a packed amphitheater in Cape Town - as well as figuratively in his kitchen - is Chef Dion.

I’m at a Luxury Travel conference of invited guests from the crème of international hospitality professionals rubbing shoulders with the finest hotels, restaurants and lodges in Africa and around the globe. This savvy crowd comprise some of the most sophisticated luxury brand representatives, more accustomed to slick presentations on meeting the discerning expectations of the very highest calibre clients.

But this down to earth Chef has them eating out of his hand it seems! They can’t get enough as he regales them with kitchen tales and shocks them with waste statistics: “Did you know that from 4 chickens, 1 kg of perfectly usable waste is regularly just discarded, that hundreds of kilograms of waste, simply thrown into the garbage that could otherwise be used for edible goods.

For too long fashion has dictated that onion skins, potato peel, fish bones, cartilage and other off cuts have not been up to scratch. Cooking as a Chef, up to 50% of a fish is discarded into trash. But we all know: the meat near the bone is the tastiest. If 52

we follow traditional methods, we are throwing all that flavour away. What a true waste! We consume without really looking at what we are consuming, we are so far removed from the reality of the farmer - all the blood, sweat and tears, and time that they put in to creating glorious fresh produce. In our kitchens, by putting Waste first, we are rediscovering the whole product and maximising it’s use to appreciate an ingredient in its entirety. We are not doing anything new, we are simply doing what we are supposed to: use everything as nature intended.” This hits home to an audience increasingly making choices professionally and personally motivated by environmental and moral concerns especially here in Cape Town where the recent drought has had a radical effect on the tourism, the restaurant trade and the lives of so many - causing a radical rethink on issues such as sustainability and wastage.

From Tasting menu to Wasting Menu!

The day after his rapturous presentation, I join the Chef at his usual place of work Cape Town’s Belmond Mount Nelson, affectionately named “the Nelly”. It’s hard to imaging here, in gentile surroundings of the city’s finest Grand Dame hotel, a veritable institution of tradition, heritage and elegance, that has famously seen Presidents and movie stars pass through its gilded doors, that something radical is cooking up! Executive Chef Chef Rudi Liebenberg is the pioneer of a movement that is converting

his kitchens, in a colonial enclave of gentrified elegance, into a hub of radical creativity. Here the Chefs are loosening their stiff whites and in turn, letting their creativity loose, experimenting with unconventional methods and new recipes.

We discuss the approach that inspired the sensation of the WasteTasting menu:a five-course menu made from the unwanted parts of fruit and vegetables, meat and fish used in their own kitchens served on popular Saturday lunchtimes and at the prime position of The Chef’s Table. Not just the idea but the quality of the food has Cape Town’s Gourmands gasping and the most discerning clientele with a taste for only the finest in life here at The Belmond Mount Nelson, lining up! The future of Luxury it appears is actually rather humble.

Fashionably rejected - a shifting trend I’m about to taste a selection of his canapés: small bites from his tasting menu of “Waste Products” creatively converted to fine dining, like the spicy lamb samosa, mini pies and blinis using vegetable remnants and meat off cuts which are smoked, dehydrated and braised to make the fillings.

“We call it ‘fashionably rejected’ - we take products that for so long have been acceptably the norm in so called ‘proper’ kitchens to reject and discard. Instead of following the fashion pack, we are being left field: we are salvaging unfashionable rejects to create amazing flavoured foods. That’s our challenge, that’s our

mission, that’s our anti-fashion call!”

Trashy to Tasty “Respect the whole Process” is the ethos: take an ingredient and look at it differently as a Chef. That is the message touted by the Chef. For too long good food has been associated with the finest cuts, the top tier, the highest grade, the choicest cuts. No longer.

The kitchen call here in South Africa is challenging the traditional notions of quality.

So shunned cauliflower and broccoli stalks become atjar (a fermented pickle), cordials are made from ginger trimmings or pineapple peels and carrot tops are transformed into pesto, aubergine skins are made into pickles. Lettuce leaves and charred leeks become creamy cold soups, tendons are served crispy with whipped beef fat and mushroom flavouring, trout scraped from the bone makes a tender tartare and trout tempura is created from the collar of the fish, finished with lemon skin salsa. And to finish how about some baguette ice-cream?!

Unconventional Renée Magritte the surrealist artist, could not have said it better himself: “A carrot is not just a carrot”. These words plaster the walls of the kitchen and depict an altogether more radical movement in creative culinary art. Dion continues: “Chef’s shouldn’t see though a regular Chef’s eyes: but instead, as what all an ingredient could be.”

“Enough is enough. It’s time for a change. But not for changes’ sake - instead we are addressing a real issue: food waste. As Chefs, we are taking an opportunity to look at food differently; to re-examine, re-educate, re-evaluate.”

We are no longer handling ingredients as we “should” be and are expected to be as fine food Chefs. Instead, we are experimenting with techniques to create better tasting food using unconventional ingredients and what is usually considered “waste” product.

Stop cooking like a Chef!

Chef Dion spoke with some melancholy as he told me “Chefs have forgotten why they became Chefs, you are only a master once you have mastered the art of utilising a whole cauliflower in one swipe!”

His recipes do justice to such simple ingredients.

“Respect an ingredient. Stop looking at it through a Chef’s trained eyes, and instead through a different perspective. Peel away the layers: see what lies underneath. With the cauliflower take the leaves that are usually discarded, finely shed the outer leaves and blend with the heart of the same cauliflower to make a textured kimchi!” This is the sort of basic food recycling that the Chefs are utilising in one of the highest grade restaurants in this fine dining environ.

Reverse thinking “For too long we have been trained to use ingredients in a set method, the traditional way. We are stepping away from that: take traditional methods but use the ingredients more boldly.

What we are doing now in reverse thinking.” Yes we top and tail a vegetable in the traditional way, setting aside the finest florets and prime loins of meat separately. But unlike the norm, these aren’t prepared first: we turn our attention primarily to the off cuts. That way the fun and culinary wizardry creativity starts with the off-cuts from the get go!” Thus waste is now at the very heart of his kitchen.

“It was only when we put the waste above the table that we understood the challenge - but also the opportunity!”

Chefs are no longer hiding unwanted food under the chopping surface - all waste is kept strictly above board! He continues “Looking at what would otherwise be in the bin, and think how to use it best in our cooking leads to an exciting creative process one that is healthy for all Chefs to encounter.”

“Here at the Hotel, one of the most chic in the City, we take waste and make it magic! Look at the mass of discarded orange halves

from the daily breakfast buffet used to make morning juice - these are usually thrown out to the trash - instead we are blitzing the remnants, heating through and reducing down with sugar and lime to make a homemade marmalade that we are the serving at our afternoon tea! We are using the same citrus to make relishes, what we call “archers” for our citrus in the dinner menu. Now isn’t that ‘all day dining’ spun on its head?!” laughs Chef Dion.

In an industry where perfection is the norm, the method of utilising traditionally undesirable products still manages to raise an eye brow. The hotel is using this approach to encourage creativity amongst their young Chefs as well as setting a brand new, unconventional trend in food preparation, it takes the wisdom of the past, the teachings of traditional culinary arts, whilst something new.

Grandma Knows best “My great grandma Ouma Violet knows best!” laughs Chef Dion as we sit on the leafy terrace of the Belmond Mount Nelson on a balmy afternoon. “From since I was 4 year’s old she taught me how to respect the ingredient and how to create magic with just the little we had.

Growing up we were taught to be frugal because we didn’t have much and simply had to survive. Every ingredient was used top to tail. Anything that was (rarely) not prepared for eating was discarded into recycling units in the garden to make compost. We didn’t grow up with the culture of a ‘trash can’! Here at the hotel too, what we really cannot use, we use in the hotel’s own worm farm!”

The lessons he learnt went beyond frugality but inspired his passion and palate as a Chef: “She could turn a cheap marrow that grew in the back garden into a spice flavoured explosion that took my palate on a journey I still can’t forget. So my Ouma gave me my first hit of the food drug and I was hooked! After that I trained - in a class 14 girls and me! At that time cooking was not seen as the rock star career it is now, so you can imagine the grief I got from fellow mates at school doing cookery instead of woodwork!”

The Chef’s bold determination and defiance of the norm has defined his approach as a Chef. As I walked out of the kitchens and the words written large on its walls, I can’t help but agree that sometimes looking at things from another perspective, like when a “carrot is not just a carrot” makes you be able to pull culinary rabbits out of a hat! In this book, Masterchef UK's Theo Michaels pays homage to his family heritage, championing traditional dishes and sharing his own modern cooking. Theo grew up in North London, America and Hertfordshire, but there was always Cypriot food on the table. Food is entwined within his Greek/Cypriot culture, not only for its taste or fuel, but the fact that having a meal forces you to stop, sit down, and spend time with people. That's the real magic. CYPRIOT LAMB SHANKS IN STICKY SAUCE arni kormou tis kyprou SERVES 4 • • • • • • • • • • • • • • • • • • • • • • • • • • • • • •

4 lamb shanks 2 onions, sliced 4 garlic cloves, chopped 1 tablespoon smoked paprika 1/2 tablespoon ground cumin 1/2 tablespoon ground coriander 1/2 tablespoon ground cinnamon a pinch of cayenne pepper 1 cinnamon stick 1/2 teaspoon ground cloves or 5 whole cloves 250 ml/1 cup red wine 3 tablespoons pomegranate molasses 1 tablespoon Greek honey 3 dried bay leaves 100 g/3/4 cup pitted ready-to-eat prunes (or apricots) 500 ml/2 cups passata/strained tomatoes salt and freshly ground black pepper olive oil, for cooking 2 tablespoons toasted pistachio nuts, chopped, to garnish a generous pinch of dried rose petals (see Tip on p.165), to garnish freshly chopped coriander/cilantro, to garnish (optional)

Preheat the oven to 180°C (360°F) Gas 4.

Season the lamb shanks generously and brown them in hot olive oil in a lidded ovenproof pan until coloured all over, then remove from the pan and set aside.

In the same pan, fry the onions slowly for about 10 minutes until they have coloured and turned a deep golden hue, then add the garlic and cook for a few more minutes.

Add all the spices and stir through to coat the onions, then add the wine. Cook with a lide and cook over a high heat to reduce the wine by half. This will concentrate the flavour of the sauce.

Finally, add all the other ingredients and return the lamb shanks to the pan, bottom-side down, so the bone is sticking up. Slowly add about 500 ml/2 cups of water, just enough to cover the meat (the bones can stick out). Bring this to a simmer, then cover and place in the preheated oven for 2 hours.

Once done, remove the pan from the oven and let it rest for 10 minutes before removing the lid.

Serve the lamb shanks sitting upright, with a few ladles of the juice poured over. Garnish with the pistachios and rose petals, as well as some freshly chopped coriander, if you like.

Ingredients for the Amaranth Chips Method for the Herbs flavoured oil • 200 gr of amaranth seeds • 13 gr of instant dasci • 1,200 of water • oil for frying Method For the Amaranth Cook the Amaranth as a risotto with water and instant dashi for about 40 minutes without salt it.

Once cooked, spread it out between two sheets of baking paper and let it dry.

When its completley dried, break it in irregular pieces and fry in hot oil.

Ingredients for herbs flavoured oil • 500 gr of Parsley dragoncello • 1 liter of olive oil ( Occhipinti)

Boil the aromathic Herbs for less than a minute, blitz in a blender and filter the oil with a colander and paper.

Ingredients for the sauce • Herbs flavoured oil • Barolo vinegar • White and black sesame • Nori algae finely chopped • Katsobushi • Candied ginger and its juice To Serve Clean the Leaves and Flowers. Season and mix with the Herb oil, plate, and garnish with flowers.

Sole Sauce

1 Sole fish Ask your fishmonger to prepare for pan frying 50g flour 10g good quality curry powder

Method Start with the prepared Sole fish and dry with clean cloth or tissue.

Dust in the flour and curry mix Remove any excess Place in a pan with medium to high heat, you should hear a sizzle when it hits the pan.Dependent on size 3-4 mins per side.

At eight minutes add 75g butter, when the butter foams start to baste by carefully spooning foaming butter over fish. Do this for around one minute then remove the fish to a resting tray.

Keep the butter on a medium heat until it starts to turn darker, a light brown with a hazelnut smell (beure noisette) remove from heat add juice of one lemon, 10g capers, 10g parsley chopped, serve with charred lemon and a green salad.

Grouper & chu-chee curry

• Chopped Dried chili 10 ea • Chopped Shallot 3 tbs.

• Chopped Garlic 3 tbs.

• Chopped Galangal ½ tsp.

• Chopped Lemongrass 1 tbs.

• Kaffir lime skin ½ tsp.

• Chopped Coriander root 1 tsp.

• Shrimp paste 1 tsp.

• Salt ½ tsp.

Ingredients for the Chu-chee curry • Chu-chee curry paste • Rich coconut milk 250 g .

• Coconut milk 500 g.

• Palm sugar 100 g.

• Fish sauce 100 g.

Method Grind all the ingredients thoroughly Add the rich cocunut milk and stir into the chu–chee curry paste.

Add the coconut milk, palm sugar and fish sauce and reduce on a medium heat about 15 minutes Blend and strain Steam the Grouper for 5 minutes per 100 g portion and serve with rice 61

3 pounds of at least 3 different kinds of fish fillets 1-2 pounds mussels 1 pound squid or crab 1/4 cup olive oil 1 cup thinly sliced onions 2 leeks, white and light green parts only, thinly sliced 1/4 fennel bulb, thinly sliced, or 1 teaspoon of fennel seeds 2 cloves garlic, crushed 2 large tomatoes, roughly chopped 2 red capsicum 1 bay leaf 3 sprigs fresh thyme One long, wide strip of orange zest 1/2 teaspoon saffron threads 2 teaspoons salt 1/4 teaspoon freshly ground black pepper 500 ml white wine Directions for Sauce Rouille: 1 Tbsp hot fish stock or clam broth 2 cloves peeled garlic 1 small red hot pepper 1/2 teaspoon salt 1/4 cup soft white bread, pulled into bits 1/2 cup olive oil

Put hot fish stock or clam broth into the bottom of a blender.

Add garlic and red hot pepper, salt and bread. Blend until very smooth. With the blender still running, add olive oil slowly and stop the blending as soon as the oil disappears. At serving time pass Rouille in a little bowl along with the bouillabaisse. Each serving is about 1/2 a teaspoon that you stir into your soup. Use gingerly like Tabasco.

Method Heat 1/4 cup of olive oil in a large (6-8 quart) pot on medium high heat. When the oil is hot, add the onions, leeks, and fennel. Stir to coat the vegetables with the olive oil. Cook on medium heat until softened but not browned, about 10-15 minutes. Add the crushed garlic, chopped tomatoes, chopped capsicum, bay leaf, thyme, saffron, salt, white wine and orange zest. Cook until the tomatoes are soft and broken down.

Then cut the fish fillets into 2-inch pieces. Bring 2 cups of water to a boil. Lay the fish pieces over the vegetable mixture and pour over with 2 cups of boiling water. Bring everything to a boil, and cook, uncovered, for about 5 minutes. Add the mussels, squid, and/or crab, pushing aside the fish so that the shellfish is now covered in liquid, and boil for 10 minutes more, uncovered.

400g salmon meat (scraped fro the spine bone 10g sesame seeds freshly toasted just before mixing 100g shallots finely diced 10g salt fine 10ml mirin 2g sesame oil 5ml dashi 5g white pepper ground

100ml confit belly olive oil, (which was reserved from the confit process) 80ml lime juice 10g salt 8g sugar 2g Xanthum gum 4g with pepper ground 5g curry leaves finely chopped

Method

Remove all the meat from the spine of the salmon, (triple check that all the bones are removed).

Gently chop the meat into a coarse texture, (do not chop into a paste).

Place the chopped meat into a mixing bowl and add the rest of the ingredients.

Mix well and adjust seasoning according to your taste.

Place the oil, lime juice, salt, sugar and Xanthum gum into a blender and blend until emulsified.

Mix in the curry leaves.

500g salmon trout belly 200g coarse salt 200g granulated sugar 100g wakambe seaweed, (blend into a powder) 20g dill chopped finely 20g coarse white peppercorns 500ml olive oil

Method I n a mixing bowl combine the salt, sugar, seaweed, dill and white peppercorns and mix well.

Completely cover the belly with the mixture and allow to cure for 2hrs.

Carefully remove the cure, getting as much salt and sugar off as possible.

Place the cured belly into a 3rd pan.

Bring the olive oil to 70°c and pour over the belly.

Cover the 3rd pan with foil and allow to sit for 1hour at room temperature.

Gently remove the belly, reserve the oil for the dressing.

Flake the belly into chards making sure that all the bone are removed.

Serving suggestions Best served with toasted stale sour dough cruets, and fresh mixed bitter greens

Nick Kim*** (New York, USA)

He kick-started his culinary journey across Europe, spending most of his formative years working alongside Masa Takayama at Ginza Sushi-Ko in Los Angeles. As one of the masterminds behind the success of Shuko in East Hampton and New York City, he has been awarded numerous accolades including three Michelin stars and a four-star review from the New York Times.

Paul Liebrandt** (New York, USA) Best known for his two Michelin-starred restaurant Corton in New York, Liebrandt was considered one of the important pillars of the Big Apple’s culinary scene. The documentary entitled A Matter of Taste — Serving Up Paul Liebrandt to learn why this genius was named the youngest three-star chef by The New York Times, the best and the brightest by Esquire and best new chef by Food and Wine.

Rob van der Veeken* (Eindhoven, Netherlands)

A culinary teacher with a lineup of up-and-coming protégés, he is the head chef at the famed De Karpendonkse Hoeve. Situated in Eindhoven the restaurant is renowned for holding its Michelin star ever since 1979. Helmed by Chef Rob, De Karpendonkse Hoeve continues to achieve new heights with his new culinary creativity.

Simon Scott* (Castres, France)

แล้ว แต่ผมอยากให้ผู้คนได้เห็นว่าอาหารไทยนั้นถือเป็นภัตตาคารชั้นเลิศชนิดหนึ่ง” ถึงแม้ว่ามันจะฟังดูเหมือนภาษาฝรั่งเศสแต่ชื่อของเขานั้นเป็นคำ�ขวัญมาจากคำ�ว่าฤดู (Le Du) ในภาษาไทย ฉะนั้นมันจึงไม่แปลกเลยที่ร้านจะสรรหาวัตถุดิบตามธรรมชาติ ต่างๆเพื่อมาทำ�อาหาร โดยใช้ความสามารถที่เขาได้ฝึกมาจากร้านอาหารชั้นนำ�ใน สหรัฐอเมริกาเช่น Eleven Madison Park, The Mordern และ Jean Georges. Ton ได้ นำ�เสนออาหารที่มีกลิ่นอายความเป็นฝรั่งเศสผสมผสานกับรากแห่งความเป็นไทยได้ อย่างยอดเยี่ยม ความลับของอาหารไทยนั้นอยู่ในวัตถุดิบ ปัจจัยสำ�คัญที่ถ้าเกิดว่ามองข้ามไปจะ ทำ�ให้ไม่เป็นที่ยอมรับในกลุ่มเชฟคนไทย รวมถึงลูกค้าด้วย “ตอนผมกลับมา (ที่ ประเทศไทย) เมื่อ 6 ปีที่แล้ว ผมเห็นทุกร้านอาหารในกรุงเทพฯนั้นสนับสนุนแต่ การนำ�เข้าวัตถุดิบจากต่างประเทศ และแม้แต่ร้านอาหารไทยก็ยังสนับสนุนเมนู ล็อบสเตอร์ ตับห่าน ซื้อเนื้อดิบ นั่นมันน่าละอายมาก เราเป็นประเทศที่มีการเกษตรที่ ดี แต่เรากลับรับประทานวัตถุดิบที่นำ�เข้ามา ทุกคนมองวัตถุดิบท้องถิ่นว่าเป็นวัตถุดิบ ที่คุณภาพไม่ดีราคาถูกและทำ�ให้ผู้ที่รับประทานนั้นดูไม่มีมูลค่า

เดือนธันวาคมปี 2018 ทาง มิชชิลิน ได้ประกาศให้ภูเก็ต และบริเวณจังหวัดพังงา ให้ติดอยู่ในการจัดอันดับใน ประเทศไทย โดยมีร้านอาหาร PRU บนเกาะเป็นร้าน แรกที่ได้รับรางวัล Michelin Star ในทางกลับกัน ในเมืองหลวงที่ใหญ่โตอย่าง กรุงเทพฯ ในพื้นที่ 1569 ตารางกิโลเมตรที่มีประชากรอาศัยอยู่ ถึง 10.35 ล้านคนนั้น มีชื่อเสียงในด้านอาหารริมถนน สีสันยามค่ำ�คืน วัดอันโอ่อ่า และตึกสูงเสียดฟ้า โดย ในปี 2018 Forbes ได้ตั้งให้กรุงเทพฯเป็นเมืองที่มีผู้มา

เที่ยวมากที่สุดในโลกถึง 20.5 ล้านคนประจำ�ปี 2017 ตามข้อมูลจากดัชนีจุดหมายปลายทางท่องเที่ยวของ Mastercard แต่ตัวเลขนี้ไม่ใช่เพียงอย่างเดียวที่ใช้พาด หัวข่าวถึงเมืองนี้ กรุงเทพฯนั้นได้รับรางวัล 50 ร้าน อาหารที่ดีที่สุดในเอเชียมาอย่างยาวนาน โดยมีร้าน อาหารอินเดีย Gaggan ติดอันดับหนึ่งมาถึงสี่ปีซ้อน แต่ถึงแม้ว่าจะตกมาอยู่ในอันดับสองสำ�หรับปีนี้ แต่ก็ ยังมีร้านอื่นๆในกรุงเทพฯอีก 8 ร้านที่ยังทำ�ให้รายชื่อ ร้านอาหารนั้นเต็มไปด้วยร้านจากกรุงเทพฯ และอย่า 77

ลืมว่านกรุงเทพฯนั้นมีร้านอาหารที่ได้รางวัล Michelin Star 2 ดาว ถึง 4 ร้าน และ ได้รางวัลระดับ 1 ดาว อีก 22 ร้าน ทำ�ให้เมืองนี้ขึ้นชื่ออยู่ในแผนที่ต่างๆสำ�หรับร้าน อาหารที่โด่งดังให้นักชิมทั้งหลายตั้งเป้าหมายกัน ถ้าเช่นนั้นสำ�หรับเชฟในประเทศไทยแล้ว เกาะที่ใหญ่ที่สุดของประเทศคือเป้า หมายหลักหรือเปล่า หรือว่ามันเป็นแค่คำ�ล่ำ�รือที่ปกคลุมไปด้วยทราย หรือว่าจะ เป็นกรุงเทพฯ ที่มีฐานลูกค้าเยอะ หรือว่าเมืองจะมีแค่สิ่งปนเปื้อน อ้างตาม Jamie Wakeford เจ้าของร้านอาหาร Bampot ในภูเก็ต และ Olta ในกรุงเทพฯ กล่าวว่า “ทั้ง สองที่มีความท้าทายของมัน” ชาวสก็อตแลนด์ Jamie และภรรยาของเขา Helen ได้เริ่มทำ�งานได้อุตสาหกรรมการ แพทย์โดยมีความฝันว่าจะได้เที่ยวรอบโลก ทั้งคู่ทำ�งานจนได้รับตำ�แหน่งและชื่อ เสียงมากมายในสหราชอาณาจักร รวมทั้งยังได้รับเข้าทำ�งานกับ Heston Blumenthal’s Fat Duck และ Godon Ramsey’s Maze ทั้งคู่จึงตัดสินใจออกจากบ้านเกิดเพื่อไป

“เราต้องปรับเปลี่ยนอะไรหลายๆอย่างที่ Bampot ในช่วงเปิดร้าน เราเคยทำ�เมนูที่ คล้ายกับที่มีใน Olta แต่มันไม่เป็นที่นิยมเลย ผมยังเคยยืนถกกับบางคนในสัปดาห์ แรกเรื่องที่ว่าเราไม่มีเฟรนส์ฟรายขาย ฉะนั้นเราจึงต้องปรับอะไรหลายๆอย่าง แต่ใน กรุงเทพฯ เราค่อนข้างจะทำ�อะไรก็ได้ เพราะมีกลุ่มตลาดที่กว้างและหลากหลายกว่า สิ่งที่ยากสำ�หรับภูเก็ตคือมันมีช่วง high season ที่คุณจะทำ�เงินได้เป็นกอบเป็นกำ� เพื่อ ที่จะนำ�มาใช้ในช่วง low season ฉะนั้นคุณจะเห็นหลายๆร้านที่เปิด ขาย ขาย ขาย แล้ วอยู่ๆก็ปิดตัวลง” สำ�หรับ Bampot ในช่วง high season จะมีลูกค้าชาติกับลูค้าในประเทศในอัตราส่วน 80 ต่อ 20 ในขณะที่ช่วง low season มีลูกค้าต่างชาติเพียง 30% ต่อลูกค้าท้องถื่น 70% “ในกรุงเทพฯ กลุ่มประชากรนั้นน่าสนใจมาก เราเคยมีลูกค้าต่างชาติเป็นส่วนใหญ่ใน สัปดาห์แรก ตอนนี้เรามีลูกค้ากลุ่มหลักเป้นคนไทยถึง 70% และส่วนใหญ่เป็นลูกค้า เดิม”

ใน 4 ปีที่ผ่านมามีการเปลี่ยนแปลงเกิดขึ้นบนเกาะเยอะมาก การพัฒนาต่างๆโดย เฉพาะทางเหนือของเกาะ ทำ�ให้มีร้านอาหารเกิดใหม่หลายรูปแบบ ร้านที่ได้รับ รางวัลมากมายอย่า PRU, Acqua และ Suay เป็นร้านหลักๆที่ยกระดับการทานอาหาร บรเกาะ และมีข่าวลือว่าจะมีร้านอื่นๆตามแนวเดียวกันมาอีก ถึงแม้ว่าจะมีการพัฒนาที่รวดเร็ว แต่การสรรหาวัตถุดิบบนภูเก็ตนั้นไม่ใช่เรื่องง่าย “คุณคิดว่าเพราะอยู่ใกล้ธรรมชาติแล้ว คุณจะมีวัตถุดิบมากขึ้น แต่มันไม่ได้เป็นอย่าง นั้นเลย” Jamie ได้อธิบายไว้ ที่น่าประหลาดใจคือ ผู้ผลิตพืชผลท้องถิ่นที่ภูเก็ตนั่น ปลูกผลผลิตเองบางส่วน และอีกส่วนได้ถูกนำ�เข้าจากเชียงใหม่ ปลาก็เป็นอีกวัตถุดิบ ที่หายาก Jamie และทีมงานใช้เวลา 2 ปีเพื่อติดต่อกับนักหาปลาที่มีคุณภาพได้ “เราได้นำ�เข้าวัตถุดิบเยอะกว่าที่เราทำ�ใน Olta เพราะตลาดต้องการ พวกเขาต้องการ คุณภาพและการตัดของเนื้อที่เป็นเอกลักษณ์ ซึ่งมันหาง่ายมากในกรุงเทพฯเพราะมี ตัวเลือกมากมายในราคาที่ดีกว่า จึงสามารถส่งต่อให้ลูกค้าในราคาที่ดีกว่าด้วย”

“มันช่างน่าหงุดหงิดเพราะผลิตภัณฑ์ในกรุงเทพนั้น คุณภาพดีมาก ในภูเก็ตก็ดีแต่ยังสามารถดีได้อีก ภูเก็ต นั้นยากแต่เราก็เริ่มต้นมาแล้ว ผมคาดว่าน่าจะต้องใช้ เวลาอีกสัก 1 ปีถึงจะมีตลาดวัตถุดิบที่ใหญ่เพียงพอใน ภูเก็ต มันเลยยากที่จะทำ�อะไรให้แปลกใหม่ ความคิด สร้างสรรค์ถูกจำ�กัดเพราะว่ามันหาทรัพยากรไม่ได้ มัน ไม่ได้อะไรใหม่เลย” ในขณะที่กรุงเทพฯนั้นชนะเลิศในเรื่องของการหา วัตถุดิบ การจ้างงานนั้นถือว่าเทียบเท่ากับที่ภูเก็ต “ใน กรุงเทพฯมีตัวเลือกบุคคลากรที่ใหญ่กว่า และเซฟหลาย ท่านที่มาก็มีคุณภาพมาก แต่ร้านอาหารก็มีมากเช่นกัน พวกเขาสามารถออกหรือเข้ามาร่วมงานกับใครตอน ไหนก็ได้ ส่วนในภูเก็ตการว่าจ้างนั้นเป็นการต่อสู้กัน กับธรุกิจโรงแรมและ service charge” “ทั้งสองที่มีความยากในการจ้างงานที่ต่างกัน แต่ถ้าคุณ จ้างคนดี ฝึกพวกเขาดี จ่ายพวกเขาดี และวางหน้าที่ให้ พวกเข้าดี พวกเขาจะอยู่กับคุณไปตลอด” ต้องยอมรับว่าธุรกิจร้านอาหารเป็นเพียงแค่ปัจจัย 80 28

หนึ่งที่ทำ�ให้ Jamie และหุ้นส่วนมาเปิดร้านอาหารใน กรุงเทพฯ อีกปัจจัยหนึ่งคือไลฟ์สไตล์ ในปี 2017 Jame และ Helen มีลูกคนแรก และในกรุงเทพฯนั้นมีกิจกรรม และบริการที่รองรับให้ชีวิตครอบครัวลูกอ่อนให้ใช้ ชีวิตง่ายขึ้น “บริการเช่น Grab ที่สามารถสั่งของมาส่ง ได้ สามารถเข้ายิมที่เป็นบริการของทางโรงแรม มัน เปนสิ่งที่พวกเราตามหา ที่ผ่านมาเราอยู่กันแต่บนเกาะ ทำ�ให้เราอ่อนเพลียและเหนื่อยล้า เราเกือบจะเกษียณ แล้วด้วยซ้ำ�” ทั้งคู่สร้างครอบครัวและหาที่อยู่ที่ใกล้ กับร้านอาหาร Olta ในเขตสวนพลู ซึ่งบริเวณนั้นก็มี โรงเรียนนานาชาติ และสถานรับเลี้ยงเด็กมากมาย พวก เข้ามีสิ่งที่ต้องการอยู่แค่ประตูถัดไป ถึงแม้ Jamie และหุ้นส่วนมีงานอีกมากที่ต้องทำ� แต่ เขาก็ได้ให้คำ�แนะนำ�เล็กๆสำ�หรับเชฟที่ต้องการมองหา ทำ�เลการเปิดร้านอาหารในสยามเมืองยิ้มว่า “มันยากที่ คุณจะเลือกทำ�ธุรกิจในประเทศไทย ไม่ว่าคุณจะอยู่ที่ กรุงเทพหรือภูเก็ต แต่มันจะง่ายขึ้นถ้าคุณมีธุรกิจอยู่ทั้ง สองที่” Chef

สิ่งที่เรียกหาเขาอีกอย่างคือโลกภายนอก เขาเดินทางไป ที่ออสเตรเลียและใช้เวลา 1 ปีทำ�งานในอุตสาหกรรม อาหาร “คนสวีเดนก็ต้องโตในสวีเดน, แม่ของผมบอก ว่าถ้าผมได้เป็นเชฟผมจะสามารถเดินทางไปรอบโลก เพื่อค้นหาสิ่งใหม่ๆได้ แม่สนับสนุนให้ผมเดินทาง เสมอ” Karlsson เล่า เขากลับมาที่สวีเดนและหลังจากสำ�เร็จการศึกษาเข้า ได้บรรจุงานที่ So Sofitel ในกรุงเทพ โรงแรมใจกลาง เมืองแห่งนี้อยู่ไกลบ้านเกิดของเขามาก แต่เขาก็ได้รับ ตำ � แหน่ งงานและขึ้ น เครื่ อ งบิ น ข้ ามเพื่ อ ข้ ามมาอี ก ฝั่ ง ของโลกแล้ว เมืองหลวงของประเทศไทยเป็นศูนย์รวมอาหารจาก นานาประเทศ “ผมคิดว่ากรุงเทพฯเป็นเมืองที่มีชีวิต ใน ขณะนี้อยู่ร้านอาหารทั้งหมดกว่า 12000 ร้าน” Karlsson กล่าว “ที่นี่ผู้คนชอบออกมานอกบ้าน พวกเขามาพบปะ ครอบครัวและเพื่อนฝูง ฉะนั้นมันจึงง่ายมาก ทุกมุมตึก มีร้านอาหารหรือบาร์ และตัวเลือกอื่นๆมากมาย” ด้วยความหลากหลายนี่เองทำ�ให้กรุงเทพฯเป็นเมืองใน ฝันของเชฟอย่าง Karlsson ร้านอาหารตะวันตก อินเดีย จีน ญี่ปุ่น ฝรั่งเศส ต่างๆหลวมรวมกันเป็นความมีพลัง ซึ่งเหมาะกับเชฟหน้าใหม่อย่าง Karlsson จากปี 2013 ถึง 2015 Karlsson ทำ�งานอยู่ที่ So Sofitel

ทำ�งานใน Red Oven เขาได้เรียนรู้และช่วยให้กิจการ เบ่งบาน ในปี 2015 เขาได้ย้ายไปทำ�งานที่ Brasseire 9 ในย่านสีลม เป็นร้านอาหารฝรั่งเศสที่มีความแปลกใหม่ ที่นี่เขาได้บรรจุเป็นหัวหน้าเชฟ ตำ�แหน่งที่ทำ�ให้เขาได้ เติบโตและเข้าใจความสำ�คัญของการบริหารครัว “ผมได้รู้หลายอย่างจากงานที่ผ่านมา” Karlsson อธิบาย “ผมต้องตั้งมาตรฐานและเข้าถึงการฝึกลูกทีม ผมมีเชฟ 33 ที่ผมต้องดูแล มันเป็นงานที่ได้ทำ�อาหารน้อยลงแต่ ต้องคิดมากขึ้น เพราะต้องคิดสิ่งใหม่ๆและมาตรฐานๆ ใหม่ๆ” Karlsson ได้กลับมาที่น้ารอาหารเดิมเพื่อนำ�มาตรฐาน ใหม่ๆมาใช้กับ Red Oven เขาได้กลับมา Red Oven ประมาณเดือนกว่าๆพร้อมกับประสบการณ์ใหม่ เขา หวังว่าจะได้ใช้รูปแบบใหม่นี้เพื่อปรับปรุงและพัฒนา ร้านตั้งแต่โครางสร้างร้านไปจนถึงอาหาร พื้นที่ที่ Red Oven ที่หลักการการจัดวาง พื้นที่ต่างๆเช่น ตะวันตก ญี่ปุ่น ไทย และอื่นๆ ได้ถูกจัดวางแยกจากกัน เพื่อให้แขกได้ชื่นชมอาหาร พื้นที่เปิดโล่งทำ�ให้ลุกค้า และพนักงานสารถเดินได้อย่างสะดวกและยังมีที่นั่งมี มากมาย พื้นที่ด้านเหนือจะเปิดโล่งและสว่างในขณะ ที่โซนทางใต้จะมิดชิดกว่า ลูกค้าสามารถเลือกห้อง อาหารได้ ยิ่งไปกว่านั้นโซนเหนือที่เปิดกว้างยังมีหน้า 83

ต่างขนาดใหญ่พร้อมที่จะแสดงวิวของสวนลุมพินีที่สวยงามอีกด้วย พนักงงานที่ Red Oven นั้นมีมากพอๆกับพื้นที่ร้าน โดยมีทีมงานทั้งสิ้นประมาณ 5060 คน “ครัวอาหารญี่ปุ่นมีเชฟ 8 ท่าน ครัวไทยมี 6 ท่าน ครัวเย็นมี 10 ท่าน และครัวตะวันตก มีอีก 10 ท่าน” Karlsson ได้ไล่รายละเอียดของพนักงานครัวของเขา การมีทีมงานที่ใหญ่ก็เป็นภาระที่หนักหน่วงให้กับแม้กระทั่งเชฟที่มีประสบการณ์ สูง Karlsson เองยอมรับว่าการทำ�งานในช่วงปีแรกๆนั้นยากมาก เขาต้องปรับเปลี่ยน ระบบและวิธีการทำ�งาน รวมทั้งต้องถอย ต้องปรับงานให้เข้ากับเพื่อนร่วมงาน การบริการคนงานต้องใช้ความสามารถอีกด้านหนึ่งนอกเหนือจากทีมฝรั่งเศสที่เขา เคยร่วมงาน “ตอนผมยังเด็กผมมีเชฟฝรั่งเศส 2 คน พวกเขาสอนผมความเป็นฝรั่งเศส และสอน แบบยากลำ�บาก พวกเขาโยนภาระมาให้ผมบ้างในบางครั้ง เวลาไหนที่ผมทำ�งานส่วน นี้พวกเขาก็จะไม่ยุ่ง” Karlsson เล่าพร้อมกับหัวเราะ ช่วงเวลาที่คนจะโดนกดขี่ในครัวได้หมดลงไปแล้ว แต่การทำ�งานกับทีมที่ใหญ่และ หลากหลายวัฒนธรรมนั้นก็ยังคงมีปัญหาอยู่บ้างจนบางครั้งต้องคิดวิธีการบริการ แบบใหม่เข้ามาช่วย “บางครั้งเวลาผมแสดงบางอย่างให้กับทีมงาน พวกเขาจะบอกว่าเข้าใจแต่จริงๆแล้ว ไม่เลย” Karlsson กล่าว “ถ้าพวกเขาไม่เข้าใจพวกเขาก็จะไม่กล้าถามให้ผมแสดงวิธีที่ ถูกต้องเพราะกลัวเสียหน้า มันเป็นนิสัยของคนไทย” 84

จากที่โดนหัวเราะเยาะ - กลายเป็นถูกยกย่อง “เปิดร้านมังสวิรัติ - ถูกหาว่าบ้าไปแล้ว!” เชฟปีเอโทร ลีแมนหัวเราะ "แต่นั่น มันยี่สิบปีก่อนและร้านอาหารอิตาเลียนทำ�อาหารแค่สูตรดั้งเดิม ไม่มีใครคิดหรือ ใส่ใจเรื่องการควบคุมน้ำ�หนัก, การรับประทานอาหารธรรมชาติ หรืออาหารเพื่อ สุขภาพ แต่ทุกวันนี้ทั่วโลกหันมาใส่ใจเรื่องสิ่งแวดล้อม วัตถุดิบเลี้ยงและเติบโต มาอย่างไร และมีทางเลือกเรื่องสุขภาพมากขึ้น อาหารมังสวิรัติไม่ถูกล้อเลียนอีก ต่อไป ผู้คนชอบความเป็นธรรมชาติมากขึ้น ขณะที่ร้านอาหารส่วนใหญ่ก็จะมีเมนูมังสวิรัติให้เลือก ไม่ว่าจะเป็นเมนูพาสต้า, ริ ซอตโต้, ซุป และสลัด นำ�มารังสรรอย่างประณีตและสวยงาม ให้เป็นที่ชื่นชอบทั้ง ผู้ที่ทานมังสวิรัติและผู้ที่ทานเนื้อ ยิ่งไปกว่านั้น วิวัฒนาการการในการรับประทาน อาหารก็กว้างขวางมากขึ้น มีคนที่หันมาทานมังสวิรัติหรือทานเจมากยิ่งขึ้น ร้าน Joia ที่กรุงมิลานเป็นร้านอาหารมังสวิรัติระดับเอ็กซ์คลูซีฟและเป็นร้าน

มังสวิรัติร้านแรกที่ได้ดาวมิชลิน (และยังคงได้ดาวมาจนถึงปัจจุบัน) และเป็นร้าน มังสวิรัติร้านเดียวในอิตาลีที่ได้ดาว ถือเป็นร้านอาหารมาตรฐานระดับภัตรคาร fine dining ร้าน Joia เปิดมาแล้วกว่า 29 ปี ถือเป็นร้านมีเอกลักษณ์ส่งเสริมการกินผัก สีเขียว, รักษามาตรฐานและอาหารแบบยั่งยืนที่เชฟลีแมนเป็นผู้บุกเบิกและเป็นที่ ยอมรับอย่างกว้างขวาง ปีเอโทร ลีแมน เชฟชาวสวิสเซอร์แลนด์สามารถเปลี่ยนคนอิตาเลียนที่รักเนื้อให้ หันมาชื่นชอบมังสวิรัติแบบ fine-dining ได้ ด้วยความกล้าคิดกล้าทำ�และความริเริ่ม สร้างสรรค์ เชฟทำ�ให้ทุกชาติใส่ใจในการทานผักมากขึ้น ทำ�ให้ผักเป็นอาหารจาน หลักแทนที่จะกินเป็นเพียง "เครื่องเคียง" ยิ่งไปกว่านั้น เชฟมากประสบการณ์และมี เทคนิคทักษะความชำ�นาญสูง ได้สร้างสรรค์เมนูผักออกจากกรอบได้อย่างน่าทึ่ง ทั้ง ยกระดับแต่ละเมนูผักให้เป็นจานมาตรฐาน fine-dining สิ่งหนึ่งที่ได้เรียนรู้จากการได้รางวัลสำ�หรับ fine dining คือคนส่วนใหญ่ทั่วไปจะทำ�

อาหารแบบพิจาจารณาการทำ�อาหารแบบ "เฉพาะกลุ่ม" เลยทำ�ให้ผู้บุกเบิกริเริ่มอะไรใหม่ๆมีความโดนเด่น เชฟ ลีแมนได้รับรางวัลมาแล้วมากมาย ไม่ว่าจะเป็นรางวัล Pellegrino Artusi ในปี 2543 ในด้านคุณภาพอาหารและ เอกลักษณ์การปรุงอาหารยอดเยี่ยม ในปี 2553 เขาได้ รับรางวัล Città di Fabriano และรางวัลอื่นๆอีกมากมาย เชฟไม่ เ หน็ ด เหนื่ อ ยที่ จ ะทำ � การค้ น คว้ า และพั ฒ นา อยู่เสมอ เชฟได้เขียนหนังสือหลายเล่มไม่ว่าจะเป็น หนังสือเกี่ยวกับการทำ�อาหาร วัฒนธรรมการทำ�อาหาร หารเท่านั้น แต่ยังเขียนหนังสือแนวปรัชญาอีกด้วย (เขาได้แรงบรรดาลใจจากลัทธิเต๋า) เขาและเพื่อนนัก เขียนอย่าง Gabriele Eschenazi ได้เขียนหนังสือเกี่ยว กับการทำ�อาหารและวัฒนธรรมการกินมังสวิรัติของ นานาประเทศร่วมกัน ชื่อ “The Vegetarian Chance” 90

โดยสารเพิ่มอีก 100 เหรียญเพื่อที่จะไปส่งในเมือง ผม ได้เรียนรู้ว่าในฐานะที่เป็นเชฟอายุน้อย ความเป็นจริง กับสิ่งที่เคยจินตนาการเกี่ยวกับเอเชียไว้ค่อนข้างแตก ต่างกันอย่างมาก! มีหลายสิ่งกระตุ้นให้ผมหนีจากจุด นั้น แต่ด้วยความมานะพยายามที่จะเป็นเชฟที่ดีขึ้น ก็ ไปสมัครเรียนทำ�อาหารญี่ปุ่นและอาหารจีนที่ โรงเรียน Tsuji เพื่อเป็นการแลกเปลี่ยนประสบการณ์ความรู้การ ทำ�อาหารแบบอิตาเลียนและฝรั่งเศส “ผมทุ่มเทกับโลกใหม่ เรียนภาษา ฝึกไท้เก๊ก เรียนรู้ กิน และสัมผัสประสบการณ์" ผมเรียนรู้อย่างรวดเร็ว ว่าวัฒนธรรมการทำ�อาหารของแต่ละประเทศและตำ�รา อาหารถูกกำ�หนดโดยสภาพภูมิประเทศและอากาศ – เกี่ยวข้องกับการดำ�เนินชีวิตมากกว่าในยุโรป ชาวเอเชีย มีอิทธิพลต่อการทำ�อาหารแบบธรรมชาติ

(Natural Cuisine) ขณะที่ทำ�งานที่เอเชีย เขาค้นพบว่าวัฒนธรรมที่แตก ต่างมีอิทธิพลอย่างมาก สองวัฒนธรรมสามารถใช้ วัตถุดิบเดียวกัน เชฟจึงมีปรัชญาส่วนตัวเกี่ยวกับการ ทำ�อาหารแบบธรรมชาติ (Alta Cucina Naturale) โดย ใช้ผลิตภัณฑ์ออร์แกนิค ไม่ใช้เนื้อสัตว์ อ้างถึงตำ�นาน ชาวอิตาเลียนอย่าง Marco Polo การเดินทางของเขา ทำ�ให้เขาได้เรียนรู้รอบโลก เชฟไม่ได้ค้นพบเพียงแค่ วัตถุดิบใหม่ การปรุงอาหารและปรัชญา แต่ได้เรียนรู้ว่า วัตถุดิบเปลี่ยนคุณลักษณะได้อย่างไรหลังจากที่เกิดโดย ธรรมชาติและเป็นสิ่งมีชีวิต ถูกนำ�ไปปรับใช้ในหลาก หลายวัฒนธรรม "มันน่าสนใจอย่างมากที่เห็นวัตถุดิบ เดียวกันให้ผลลัพธ์ที่ต่างกัน คนจีนใช้แป้งสาลีทำ�เส้น พาสต้าแบบเดียวกันกับที่ทำ�ในอิตาลี

ในอเมริกาใต้ใช้พริก Chilli peppers หมักด้วยถั่วได้ รสชาติที่คล้ายกับพริกหมักถั่วเหลืองในจีน ได้พริก แกงรสชาติที่ค่อนข้างคล้ายกัน หรืออาจมีใครถ่ายทอด ข้อมูลให้กัน! พวกเขาอยู่ในยุคที่มีการแลกเปลี่ยนทาง วัฒนธรรม มีการเดินทางไปมาหาสู่กันมากขึ้นและการ สื่อสารที่ง่ายขึ้นกว่าเดิมผ่านโทรทัศน์และอินเตอร์เนท ทำ�ให้ทุกอย่างเร็วขึ้น การเปลี่ยนแปลงอย่างรวดเร็วนี้ เปลี่ยนวิถีการกินทั้งในเอเชียและในยุโรป" การเปลี่ยนประสาทสัมผัส ในขณะเดียวกันเชฟรับรู้ว่าวัฒนธรรมที่แตกต่างใช้ใน การสัมผัสการทานอาหาร “ยกตัวอย่างเช่นในญี่ปุ่น เริ่มจาก รูปลักษณ์ กลิ่น สัมผัส รสชาติ และเสียง แต่ในยุโรปและอเมริกา จะ เน้นรสชาติและกลิ่น ตามด้วย รูปลักษณ์และเนื้อสัมผัส 91
