Before we get into the guts of this issue, as chefs we are always moaning about the lack of talent available as more and more hotels and high end restaurants open, not just in Bangkok and Thailand but also around the world. Quite often I host or meet chefs from other international destinations here on recruitment missions to pick up talent, and by and large they are very eager to recruit Thais into their kitchens. Anyone who says Thais are lazy and don’t want to learn, well ’I'll buy you a beer and give you a tissue in sympathy. There are more and more chef schools opening in Bangkok and Culineur with Antony Osborne, ex Raffles Hotel Singapore, at the helm, you just know the training and curriculum is going to be top notch. It’s a student centric set up that lets the students drive their education, a reversal on traditional teaching styles.

So Sofitel with its many food and beverage outlets has joined the team as a media partner. A hotel that is more and more becoming a “player” in the F&B scene in Bangkok, we are thrilled to introduce them to you and highlight their impressive offerings.

Speaking of Thai talent, Champ Phanichkul owner and Executive Chef of Patisserie Rosie is a shining light, trend setter and visionary of the future. Successful chefs find their own way in their career and make their own direction forward. Champ is a great example of this, self-taught, career direction changes and determination to success at what he loves doing.

The Michelin Guide has been released with some new one star chefs as well as the latest two star, or is that one star each, or just shining stars. Which, either way you look at it, the Sühring Brothers are going from strength to strength and really doubling down, pardon the pun, on their reputation in the Bangkok market. Get to know them a bit better and their fascinating story towards success.

Iconic, hero, master, legend, culinary god, teacher, mentor, walks on water……. errrrr…..have I missed anything, Thomas Keller. I remember buying his French Laundry book when I was young and being totally inspired by him, still am. Timeless, classic, fashionable, trendsetter – how often do you hear those words together to describe an individual. Nothing else to say.

There is a lot going on in Bangkok, restaurants and chefs with new concepts and the continued emergence of local sustainable Thai ingredients. More and more local culinary stars are coming to the forefront which only breeds excitement. Michelin has launched its second edition which has again stirred a hornet’s nest, everyone has an opinion but who’s opinion is right? Exciting times ahead in the New Year!!!

ANTONY SCHOLTMEYER Born and raised in Melbourne, Australia, Anthony has worked his way up from his first apprenticeship in his father’s restaurant at only sixteen years of age and has continued this journey as a Chef ever since.

He has just taken up the role of Executive Chef at Capella Bangkok, a pre-opening luxury hotel on the Chao Praya river. Antony was previously the Executive Chef and Chef de Cuisine at Okura Prestige where he received One Michelin Star for Elements restaurant where he conceived and implemented the concept of French Cuisine with Japanese influences.

Prior to this Antony was Executive Chef at The Sukhothai Bangkok as well as InterContinental Hotels in China and Penha Longa Hotel just outside of Lisbon, Portugal, a Ritz Carlton managed hotel.

PIERRE ANDRE HAUS Chef Pierre-andré Hauss was previously at Grand Millennium Sukhumvit, Bangkok Thailand and Le Meridien Phuket Beach Resort, Thailand as Executive Chef and is now responsible for Western food production and food presentation for Thai airlines.

PISIT JINOPONG Chef Pisit‘s much in demand culinary skills and creativity, both Asian and Western, comes from his 26 years of experience at five luxury star hotels and resorts around Thailand and overseas such as the Myanmar, Singapore, Hong Kong, PRC Macau and Maldives Island.

His various positions have included Executive sous chef, Chef de Cuisine and now Executive chef of Anantara Golden Triangle, Chiang Rai. His culinary experiences are not only in daily operation but also taking part in Bangkok Chef Charities and guest chef for many luxury hotels in Europe and also part of Thai chef association.

ARNAUD DUNAND SAUTHIER Chef Arnaud has over 15 years of experience in fine dining, and having worked with the most res-pected culinary extraordinaires worldwide, including Guy Martin; Marc Veyrat in L’Auberge de L’Eridan; and Emile Jung at Crocodile. He also spent three years at Maison Lameloise in Bour-gogne before venturing to Le Crillon in Paris under the leadership of Jean-Francois Piège. LAURENT GANGUILLET My thoughts as an eight year old kid given a box of pastries on an hospital bed "this is so good, I have to learn how it is done", as well as my Mom's delightful baking, catalysed at an early age my decision to become a pastry chef and my curiosity and love for travel pushed me to join the hotel world!

Originally graduating as a patissier - confiseur - glacier and later as a baker in my home town of Neuchâtel, Switzerland, my first job took me to the Swiss mountain resort of Gstaad where circumstances enabled me to join a hotel kitchen. After working a few years in the position of Pastry Chef at the world famous Gstaad Palace Hotel iand after a stint in the Channel Islands curiosity took me to Ryadh, Saudi Arabia. At the RyadhI began to understand the commitment and hard working ethic of chefs from Asia which encouraged me to join the newly opened Shangri-la Bangkok.

4 years later, my career took a decisive turn when I jumped on the opportunity to join The Sukhothai Bangkok as part of the pre-opening team. That was 27 years ago, the rest is history…

THITID TASSANAKAJOHN Growing up surrounded by delicious home-cooked meals, have contributed largely to his passion in cooking. Upon the completion of his Economics degree from Chulalongkorn University, he took off to USA to pursuit his dream at the prestigious Culinary Institute of America (CIA). The top-score graduate continued to receive an MBA in Hospitality from Johnson & Wales University.

During his time in New York, Thitid worked at several Michelin-starred restaurants, including Eleven Madison Park, The Modern and Jean Georges. Not only does he have a passion for food, but his enthusiasm in wine also led him to become a Certified Sommelier (CS) from the respect Court of Master Sommelier. His experiences and vision have driven him to elevate Thai cuisine and give it a stand among world’s leading cuisines. Now the rising young chef is running one of the most exciting kitchens in Bangkok, Le Du (14 in Asia’50 Best Restaurants 2018 and 7 in Top Table2018), as well as always as reliable comfort Thai food at Baan.

GREG MEADOWS South African born he began his career at the Savoy in London before moving onto The Beau Ri-vage in Lusanne and after a time at the Grosvenor House in London Greg was presented with the opportunity to move to Bangkok to work at the fabled Oriental Hotel under the supervision of the legendary Kurt Wachtveitl Later he moved onto Antigua and then Hongkong to manage the St James’s Club in Antigua and Hongkong Club in Hongkong. After opening the Conrad in Hongkong he joined The Sukhothai as GM and afterwards opened Conrad in Thailand before re-joining the Sukhothai in Bangkok Greg hopes that throughout his career that he has managed to inspire people to be passionate about hotel keeping and he believes in mentorship and is fortunate to have had many mentors to contribute to his success Now teaching students all over the world about hotel management in todays ever changing world drawing on his life experiences.

Options for German food in Bangkok are few and far between, but two brothers are changing that. At Sühring, they’re leading the way with a brand new take on their regional German cuisine.

Identical twin brothers Thomas and Mathias are at the helm. It’s almost impossible to tell the brothers apart, so they always make sure to wear different color shirts to make it easier for everyone. “We are pretty much the same”, they say. “We grew up doing everything together, so it made sense for us to follow the same career path and open a restaurant together”.

Thomas and Mathias weren’t always working side by side. They moved in different directions for several years, working in various countries around Europe before coming back together in Bangkok. An opportunity brought them both to Thailand around ten years ago when Thomas was working at an event at the famous Le Bua State Tower and was invited back for a permanent position. He told them he would only take the job on the condition that his twin brother could join him. “Actually, I said that because I didn’t plan to come. I wanted them to say no”, he laughed. But they didn’t. As fate would have it, they both went on to work there, taking the reins at the Mezzaluna before eventually opening Sühring.

They wanted to make their mark on Bangkok’s culinary scene. “We wanted to bring our roots to our audience, but as an updated version, with our own style”, Mathias explained. In 2017, this earned them a ranking as 13th on Asia’s 50 Best Restaurants list, and this year, they’ve been bumped up to 4th. “It’s quite amazing to have fulfilled our dream”, Thomas added. It’s not in Germany, as we imagined, but after 10 years in Bangkok, this is our home now.”

The brothers spoke of being “very humbled ” to have received a Michelin star after being open for just one year and in November of 2019 it was announced that they garnered their second Michelin star, making them one of just four restaurants in the county to receive such an honor. This recognition propelled the restaurant into the spotlight, triggering an influx of new patrons.

“We saw an increase of customers coming in the restaurant since last December and we think that the guide has helped the restaurant to achieve consistency in terms of covers”, Mathias said. When it comes to quality, presentation, and service, consistency is one of Michelin’s most important requirements and their relationship as twins seem to have helped them to achieve their goals. “We have worked together as twins for a long time now and we can say that it had brought us only good things”, they said. As foreign chefs in Thailand, their biggest challenge is communication, as they both struggle with the local language. However, this hasn’t hindered their love for the country. “We are having an amazing time in Thailand and it’s now the country we call home”, shared Mathias.

Surprisingly, the twins don’t have a history of cooking German cuisine professionally. Instead, they’d spent their careers cooking other cuisines. “When we started out, people in Germany weren’t proud of their own heritage”, Thomas explained.

“Sausage and sauerkraut weren’t things that were put on a menu. They were seen as poor man’s foods and people weren’t interested in cooking or eating them”, he said. For this reason, the idea of cooking German food was intimidating for the twins.

Thomas shared that even when people asked him to cook it, he felt uncomfortable. “I wasn’t proud of cooking Spätzle, mashed potato with pork knuckle, or anything like that. I was scared to cook German food because of its reputation”, he said.

Their aim was to change people’s perception of German food, showing them that it can be as adventurous and elegant as any other cuisine. “When the time came to open Sürhing, people told us not to do German cuisine, but for us, it was all or nothing”, Thomas said. “We knew it was a unique concept and that nobody had done it before. That’s why we did it. We wanted to go back to our roots and rediscover the foods we grew up with, preparing them in more fun and refined ways.”

Mathias added, “While most other cuisines around the world have been updated over the years, German food has stayed the same. It was time to make it more contemporary and to bring it into today’s world.”

One example of this is ‘labskaus’, a dish consisting of sausage, beetroot, herring, pickled cucumber, topped with a fried egg.

This dish dates back to the 17th century, but the brothers have reinvented it with their own modern twist, adding extra touches like marinated beef and delicate garnishes. Another is their lamb dish. Before serving, a knowledgeable sommelier presents a selection of knives in a sleek wooden case, sourced from German knife makers, Nesmuk. Guests are asked to select their weapon of choice from a range of different types of wood handles.

Suhring’s menu changes every week, so guests can have a different experience each time they visit. The brothers tend to collaborate rather than dividing responsibilities between them. “When one of us has an idea, we brainstorm it together, then work with our team to bring the dish to life. A lot of work goes the preparation of the dishes but we try to let the ingredients shine ”, they explained.

“If we have to mention one signature it would be the “Brotzeit” as it is present in both our menus”, Mathias said. “It 16

is a very traditional way of eating in Germany. We would put some bread, cold cuts, spreads and pickles on the table to enjoy after a long day of work or for a family gathering”. This dish is perhaps the only one at Suhring which bears a faint resemblance to Thai food, as it is meant to be shared and eaten in a similar fashion.

Despite Suhring’s quintessentially German dishes, they don’t struggle with importing ingredients from Europe to Thailand. They say that farming methods

in Thailand have evolved over the last ten years, enabling them to source around half of their ingredients locally. Another thing that makes this restaurant stand out is the setting. Entering Sühring doesn’t just feel like stepping into someone’s home, that’s exactly what it is.

The brothers live in the building with their families, with Mathias living upstairs and Thomas in a bungalow at the back of the building.

The house was built in the 1970’s, and the brothers have kept the original structure.

However, they added a Winter garden, enclosing the Thaistyle terrace with glass so guests can enjoy the view of the tropical garden from inside. They say it reminds them of their grandparents’ home, where they regularly spent summers throughout their childhood. This influence is a strong foundation for Sühring, as the brothers inherited their skill and passion for cooking from their grandmother.

Mathias says that it was important for them to have complete control over the atmosphere of the restaurant. “We spent so many years working in fine dining restaurants, and we something different. While we still wanted to provide fine food, we wanted to do it in an environment that’s more relaxed and personal”, he explained. “We picked out

everything ourselves, from the food down to the decoration and layout of the restaurant”.

Thomas and Mathias never expected Sühring to become quite as popular as it has, with some guests even flying into Bangkok for the Sühring experience. They’re especially happy to receive good feedback from fellow Germans. “We can feel that when they come here, they are proud of their heritage,” Thomas said through a grin. “They say that even in Germany, there is no restaurant like ours”. The brothers currently have no plans to expand the brand. Instead, they intend to focus their time and energy on constantly evolving their concept and improving the experience for the guests who visit their restaurant. · Chef 17

The long wait is over, and we can all breathe a collective sigh of relief. Anticipation has been at an all-time high as we eagerly awaited the results of the second edition of the Michelin Guide Bangkok, Phuket and Phang-Nga 2019. The winners were announced at a press conference that took place on November 14, 2018, and culminated in a Gala Dinner held at the Park Hyatt Bangkok, which proved to be the hottest ticket of the year for food enthusiasts and industry leaders.

Not surprisingly, all the restaurants that received their stars last year retained them, and 10 new stars were awarded this year for a total of 27 stars across the country. No one received the highly coveted; yet elusive, 3-star rating, but there are now 4 restaurants with 2 Michelin stars and 23 restaurants with 1 Michelin star.

Despite the fact that the guide broadened its reach to include Phuket and Phang-Nga for the first time, only Phuket’s farmto-table restaurant PRU managed to secure 1 star, while there were no restaurants in Phang-Nga that received recognition.

Sühring, in Bangkok, was the big winner as they moved from a 1 to 2-star rating and joined the ranks of last year’s winners Gaggan, Le Normandie and Mezzaluna.

Crab omelet specialist Jay Fai still holds the title as the only 1 star winner in the “street food” category, while newcomers Canvas, Gaa, Methavalai Sorndaeng, PRU, R-Haan, Ruean Panya, 20

Saawaan, Sorn, Suan Thip and Le Du all received 1 star for the first time. “It’s truly a great honour to be recognised by Michelin,” shared Chef Thitid “Ton” Tassanakajohn from Le Du, “It makes me and my team even more committed to working hard to meet the expectations of our guests. The most important thing is to make sure everyone who comes to the restaurant has a good experience”.

Gwendal Poullennec, International Director of the Michelin Guides, stated; “This year’s guide is a reflection of the growing talent in Thailand’s culinary scene with many new restaurants added to the selection, including 13 specialising in Thai food, reinforcing Thailand’s reputation as a go-to destination for gastronomy.”

Whether you agree or disagree with the winners, what can be said is that there does seem to be a cross section of diversity represented on the list. Stars have been awarded to street food vendors, small shop houses, and independent venues along with 5-star restaurants in high-end hotels. The culinary scene in Thailand is one of the most eclectic in South East Asia, and German, French, Indian, Japanese and European restaurants along with traditional and innovative modern Thai restaurants are all represented on the list. There’s little doubt that the arrival of the Michelin guide has had a profound effect on the gastronomic scene in Thailand since its arrival and will continue to do so in the years ahead. · Chef

Watching Thomas Keller make hollandaise sauce for 17 minutes (one of the 36 lessons that make up his online Masterclass cookery course) tells you a lot about what it takes to be a three Michelin starred chef. He exudes a calm authority as he works with meticulous ease and laser-like concentration. As he whisks three egg yolks to a perfect frothy consistancy in a double boiler, pulling the metal bowl on and off a pan of simmering water with practiced efficiency to maintain the optimum degree of heat he says, ‘This is just requiring a lot of patience and a lot of awareness’.

It’s required a lot of patience and awareness for Keller to achieve and maintain his position at the pinnacle of America’s dining scene, holding three Michelin stars for more than a decade at both The French Laundry in the tiny town of Yountville in Napa Valley California and Per Se in the Times Warner Centre in New York. In 1990, he walked away from his first New York restaurant Rakel (a Wall Street favourite and critical success with the New York Times saying, ‘Mr. Keller has the sensitivity of a sculptor’ and that the restaurant merited ‘enthusiastic recommendation’) when the owners decided to dumb down the fine dining concept following an economic downturn.

After relocating to LA and spending several years working as a consultant, an executive chef and even launching his own olive oil business, Keller stumbled across The French Laundry.

He spent two years funding the project and finally opened in 1994. He then waited four years to open his second restaurant, Bouchon, a classic Lyonnaise-style bistro (one Michelin star since 2007) a few doors from The French Laundry.

Keller’s now presides over a group of 10 establishments that includes restaurants, bakeries, cafes and a takeaway spread across Yountville, New York and Las Vegas. It’s a substantial achievement, especially when you also consider that Keller has also written five almost biblical-length cookbooks that have sold over a million copies, publishes his own magazine Finesse, consulted on the animated movie Ratatouille, has led the American Bocuse d’Or team to Gold medal glory and since 2015 has had Grill restaurants onboard Seabourn’s fleet of luxury cruise ships. However, compared to some of his three Michelin starred peers such as Ducasse, Robuchon and Ramsay all of whom have expanded their empires across the world, Keller has been measured in building his business.

So, for there to be two new Keller restaurants on the horizon, The Surf Club in Miami and The TAK Room in the new Hudson Yards development on New York’s west side, is big news. So, what does it take to pique the usually cautious Keller’s interest and get him to undertake a new restaurant project?

‘The answer is it has to be either compelling or historic,’ says Keller who plans to revive the ‘continental’ style restaurant he remembers from his youth, places like The Stork Club, The Colony, The Blue Fox and The Brown Derby (his mother ran similar establishments in Palm Beach, Florida) that served roast beef, schnitzels, lobster Thermidor and pasta primavera, in both locations. ‘Part of the Miami charm was the history of the Surf Club. It was a place that was open in the mid 30’s, it was actually one of the most famous restaurants of its time in the world. It had that sensibility, it had the history, it had the feel, it had the energy of this kind of restaurant.

Hudson Yards is the Rockefeller Center of the 21st century. It’s a one-off. It will never happen in my lifetime again. So, to be able to be part of a project like that is extremely compelling.’

Although news of the two projects emerged at around the same time and are due to open within a year of each other (The Surf Club is scheduled for later this month with the TAK Room following in spring 2019) in typical Keller style, the ‘continental’ concept has been gestating for quite some time and has a surprising history behind it.

‘I started working on developing the menu for this with the lead chef for our restaurants in 2008-2010. It was a slow process because we weren’t really rushed with it,’ says Keller who was first approached about Hudson Yards by Related Companies, who he partnered with for Per Se, in 2006. ‘By 2014 we had realized the opportunity to do our first beta test of the concept.

When we closed the French Laundry for a remodel we opened a pop-up restaurant Ad Lib at a country club near us. We coined the acronym ELF for energy, loud and fun. It was just that kind of restaurant. Good music, quick paced service, food that was recognizable, and one that people really enjoyed. There was nothing new, it was just about quality products and quality execution.

‘Right around that same time I entered an agreement with Seabourn to open restaurants on their three ships at the time. They were 40 seat restaurants and we called it The Grill by Thomas Keller. It’s funny, because ten or 11 years ago Heston Blumenthal and I were negotiating with Seabourn to do that same space as the restaurant by Thomas Keller and Heston but we could never come to an agreement. The Grill on Seabourn is that restaurant that we did at Ad Lib and a precursor to what we’re doing at Surf Club

and at Hudson Yards - the music, the cocktails, that whole kind of Hollywood glamour thing of the 50’s and 60’s’.

Right now, it seems it’s all plain sailing for Keller, but the chef has had to negotiate some choppy waters. In December 2014, eater.com published a damning review of Per Se, calling the food ‘tired’ and the experience ‘just what you’d expect from a high-end shopping mall’. But it was nothing compared to New York Times critic Pete Well’s 2016 coruscating diatribe that demoted the restaurant from a maximum four stars to two and criticized everything from a failure to replace a dropped napkin to ‘intransigently chewy’ lobster, summing up with ‘Is Per Se worth the time and money? In and of itself, no’.

‘It made me sad, not for myself of course, but for my team. It was devastating to them to receive a review like that. But I said to them, the New York Times is not coming back here for at

least seven or eight years so we’re a two-star restaurant in their eyes for the next seven or eight years. The only way that we can be successful here is to diminish the credibility of the New York Times and therefore the person that wrote the article, and the only way to do that is to give an experience to our guests that walk into this restaurant and when they leave they go, “What the hell was that person talking about?”’.

Keller views the whole idea of judging and rating restaurants with a healthy dose of cynicism. Despite the French Laundry topping the World’s 50 Best List in 2003 and 2004, he calls the idea of being number one in the world ‘totally absurd’. ‘If you’re in the top 10 or the top 20 worldwide - or the top 30 that’s pretty extraordinary when you think about it. I mean, do we really need a number one every year? I don’t know. It creates an imbalance in what we all do’.

Keller also refuses to be defined as a west coast chef, despite making his name there. ‘We’re not talking about California cuisine or East Coast cuisine, that’s not part of our lexicon. We talk about a true basis of what we do in a philosophical way that’s really based on the way that I think about food. A large majority of it’s based in classic French cuisine and trying to make sure that we’re able to execute it better than they did 100 years ago, or 50 years ago because we have better ingredients, we have better skills, we have better equipment, we have better technology’.

Despite his close ties to France (he spent a year in the early 80’s staging around some of the finest restaurants in the country including Taillevent, Guy Savoy and Le Pré Catelan in Paris and was personally asked by Paul Bocuse himself to lead an American team to the Bocuse d’Or, ‘, ‘In all honesty, if Paul called you and said, “I want you to do this,” you would have a hard time saying no’), Keller is at heart an American chef.

During our interview, he talks eloquently and in detail about the history and evolution of American cuisine, from the French Pavilion at the World’s Fair in New York in 1939 to Jacquie Kennedy bringing the first French chef to the White House and the influence of major figures such as like Julia Child, Chuck Williams (of Williams Sonoma), and Robert Mondavi and his own close ties to the country’s indigenous produce and the people behind it.

‘I don’t call them suppliers, I call them partners. Building relationships with those farmers, those fisherman, those foragers and those gardeners is really the foundation for any great restaurant. That’s why I’ve rarely done anything outside of our country because ingredients are such an important part of what we do. I’ve been offered things in London and been very flattered by some of the people who’ve offered it to me, but there’s just no reason for me to go there. Anything that I would do there would be something that other people have done. The chefs in the UK have already built relationships with those farmers and fisherman and foragers and gardeners to get the best ingredients. How can I expect to leap-frog over ten of my colleagues just because I’m Thomas Keller?’

For many chefs around the world, three Michelin stars is the ultimate goal, something Keller has achieved twice over, and yet, although he sees the Michelin guide as ‘credible’, Keller doesn’t define himself in their terms alone.

‘Michelin didn’t come to our country until 12 years ago. My entire life before that was not based on anything about Michelin, other than looking at those great chefs of the past years and trying to live up to a little bit of the example that they set. Whether you’re a three-star chef, or a one-star chef or a no-star chef, the fact that you’re giving your guests a memory that they take with them, for hopefully a long time, that is the true meaning of success, irregardless of accolades or rewards. It’s really about that ability to nurture others in a way that gives them a great sense of comfort, of joy, of excitement and affection.

I think that’s really what we try to do mostly, as chef’s, is nurture people.

How do you summarize what it takes to be a three-star chef? I think it’s a true sense of wanting to make people happy’. · Chef 43

RECIPE

ROAST CHICKEN — POULET RÔTI

BY THOMAS KELLER Ingredients ·· Two 2 1/4- to 2 1/2-pound chickens ·· Brine (see the recipe for the Brine at the end of the main recipe) ·· Kosher salt and freshly ground black pepper ·· 2 tablespoons canola oil ·· 2 teaspoons chopped thyme leaves ·· 1 cup Chicken Jus warmed (see the recipe for the Chicken Jus at the end of the main recipe) ·· Fleur de sel When I roast a chicken, one of my favourite things to cook at home, I usually just salt it thoroughly and put it in a hot oven, but at the restaurant we like to brine our chickens, which results in very juicy, uniformly seasoned birds, with deep brown, crispy skin. The brine does dehydrate the skin, though, because the salt pulls moisture from it as it adds flavour. If you see that the skin is beginning to brown too quickly, lay a sheet of foil over the bird to deflect the heat without trapping steam and moisture.

Roast for 40 minutes, checking the birds every 15 minutes and rotating the skillets if the chickens are browning unevenly.

After 40 minutes, check the temperature of the birds by inserting an instant-read thermometer between the leg and the thigh: The temperature should read approximately 155°F. (The chicken will continue to cook as it sits, reaching a temperature of about 165°F.)

When the birds are done, remove from the oven, add the thyme leaves to the skillets, and baste the birds several times with the juices and thyme leaves. Let sit in a warm spot for about 10 minutes.

TO CARVE: Cut the twine between the legs of each chicken and pull on one end; the entire piece will pull away easily. Cut each bird into 4 serving pieces. Remove each leg by cutting through the joint where the thigh joins the body.

Slice off each side of the breast, leaving the wings attached to the breast meat; cut off and discard the wing tips.

TO SERVE: Arrange one piece of breast and a leg on each serving plate and top with about 1/4 cup chicken jus. Sprinkle with fleur de sel.

CHICKEN JUS Variations on the same principle, at Bouchon stock and jus are distinguished from each other by ingredients, cooking time, and uses. A stock uses primarily bones and is cooked longer than a jus. A jus is made with abundant bones and meat and is

cooked for a shorter time, resulting in a rich broth that’s ready to be used as is. A stock, because of its long cooking time, tends to be more complex and three-dimensional and is thus a foundation for various sauces.

1 gallon water 1 cup kosher salt ½ plus 2 tablespoons honey 12 bay leaves ½ cup garlic cloves, skin left on, smashed 2 tablespoons black peppercorns About ½ ounce (3 large) rosemary sprigs ·· About ½ ounce (1 large bunch) thyme sprigs ·· About 2 ounces (1 large bunch) Italian parsley sprigs ·· Grated zest and juice of 2 lemons (for chicken only)

Combine all the ingredients in a large pot, cover, and bring to a boil. Boil for 1 minute, stirring to dissolve the salt. Remove from the heat and cool completely before using.

To use for a rack of pork, refrigerate the pork in the brine for 24 hours; rinse and dry the pork before cooking. To use for 1 to 2 chickens, refrigerate the chicken in the brine for 6 hours; rinse and dry the chicken before minutes, or until the bones are well browned To finish the jus, pour it into a saucepan cooking. but not dried out. and simmer it to reduce to 4 cups. Dear Rosie In a city like Bangkok, food trends come and go fairly quickly, especially for desserts, but Patisserie Rosie stays true to their ethos. “For us, flavours always come first,” said Champ Phanichkul, executive pastry chef and owner of Patisserie Rosie. “Nowadays, there are so many places that make food that just looks good on camera, but is not nourishing to the body and mind.

If your food is Instagram material then great, but the truth is, only when the food tastes great and evokes a certain sense of nostalgia do people come back again and again.”

Having worked in the food industry for more than 10 years and trained in a traditional kitchen in Australia, Champ decided to take on a new challenge for himself: as a pastry chef. “As a chef cooking in a traditional kitchen setting, I felt like you only use your instinct; aside from the big adrenaline rush, the environment is fairly stressful so I couldn’t be a detail-oriented person 46

at all. I wanted to become a pastry chef so I could slow down, be more creative and prove to myself that I can be more precise,” For Champ, creating each recipe takes time, almost like creating a masterpiece. “I travelled to France and sampled all of their pastries. Then there was a lot of trial and error, for 4 5 years, before I said OK, we’re ready to open up the shop,” he said. The initial idea for Patisserie Rosie was to create a new type of dessert experience for the Thai market. “A lot of Thais are really addicted to sweet flavours, but they might not know it. Some people add sugar to everything! You see that pretty regularly, even on the street: people add tons of sugar to their noodle. And when you mention dessert, most people just think ‘sweet ‘but it can be more complex than that.

At Patisserie Rosie, we try to balance all flavours: sweet, sour, salty and sometimes bitter. This we combine with new techniques and, of course, beautiful presentation.”

Introducing a new approach to cooking can pose a challenge, especially when having to build the kitchen team from the ground up. “One of the biggest challenges was the fact that maybe others are not as careful as you’d hope them to be; it’s normal for people to want to take shortcuts, especially when you’re making dessert, because everything requires so much time and accuracy,” Champ said. “As a leader in the kitchen, it’s important to teach your team to step up their game, you have to teach them why just good is not enough and show them an example of something perfectly executed. Otherwise, they’ll see no point of improving.”

For Champ, learning to trust the team is also a big part in 48

making the kitchen work. “In the end, you can’t really taste everything all the time, so it’s a lot of letting go and putting trust in your team. I’m really lucky that some of the team members have been with us since the opening of our shop.”

Some recipes also require components that need to be made ahead of time, so Champ has to adjust to the new way of planning as well. “A lot of mousses and crust recipes you need to freeze or bake ahead of time, so it really taught me how to plan ahead more than when I was in a traditional kitchen,” When it comes to ingredients, Champ takes a less-is-more approach, but quality always comes first. “We use mostly imported ingredients because if you want to make French

desserts, there’s no compromising by using local Thai butter or milk. They just can’t be substituted,” he said. One ingredient that Thailand has a competitive edge over, however, is sugar “Sometimes we use Thai sugar because it has nice and neutral colors unlike European sugar. We’re actually one of the biggest sugar exporters in the world.” Sometimes he looks to Asian for other ingredients such as yuzu orange, matcha or sakura essence from Japan. “In the Pamplemousse cake, we trade grapefruit for yuzu to make mousse, because grapefruit can be quite bitter. Even though yuzu is sour, it still has a sweetness to it that makes the cake balanced.”

For those new to the industry, Champ has some simple advice.

“In Australia, there’s a saying ‘Harden the f*ck up,’ you know?

Are you tough enough to be in this industry where the reward is small but the work is hard? A lot of cooks seems to lose their way when they start a business, they’re distracted by all the awards and recognition chefs get these days. But for us, cooking is simply a tool to bring people together. I believe that food should still have a utilitarian purpose of fostering the body and mind. I want to make something that’s timeless and share the happiness in the form of food for a long time, despite the awards and mentions that we might get,” Champ said. “I’m happy where I am because I couldn’t imagine doing anything else, so for me all the work that goes into this little patisserie is worth it.” · Chef 49

ROSE COCONUT CREMEAUX WITH YOGHURT, VANILLA, LICHYES AND BABY CORIANDER LEAVES

ROSE COCONUT CREMEAUX IN THE THERMOMIX Ingredients ·· coconut milk 600 g ·· cornstarch 60 g ·· sugar 100 g ·· carrogenat iota 1.2 g ·· vanilla seeds 2 u ·· rose water 10 g Method 1. Put all ingredients in the thermomix and cook all together for about 8 minutes at 105 degrees and speed 6.

2. Cool down and add in the rose water.

3. Store covered in the refrigerator.

RAW COCONUT CRUMBLE Ingredients ·· Egg white 300 g ·· Cake flour 60 g ·· sugar 70 g ·· coconut powder 60 g Method 1. Put all in the ingredients and mix in the thermomix without temperature for 2 minutes at speed 4.

2. Bake in the oven at 100 degrees centigrade for about 25 minutes.

3. Cool it down at store at room temperature.

3. Pour 60 gr into a plastic glass (make 3 holes in the bottom.

4. Bake at full temperature in the microwave for about 1 minute.

Kricket: An Indian-Inspired Cookbook

What’s the USP? A collection of over 80 modern and classic Indian recipes from Kricket restaurant in Soho.

Who’s the author? This is the debut book from young British chef and restaurateur Will Bowlby who trained with Rowley Leigh at the much missed Le Cafe Anglais before relocating to Mumbai for two years to work as a head chef. He then travelled the subcontinent, learning about regional Indian cuisine. Kricket originally opened in a shipping container in Brixton in 2015 before relocating to Soho in

2017. Bowlby has been named national chef of the year by the Asian curry awards What does it look like? Good enough to eat. Photographer Hugh Johnson has brought Bowlby’s simple, colourful and impactful food to life while restaurant interiors and kitchen action shots give an insight into what it’s like to dine at Kricket.

Chapter headings are illustrated with line drawings by Myoung Chung and lend the book extra style and elegance.

Killer recipes? Just flip through at random and you’re bound to find something you’ll want to

cook, from a classic Old Delhi (butter) chicken to more modish creations like bone marrow and cep kulcha (mini naan bread) or chanterelles in malai (lightly spiced cashew nut and green mango) sauce with fresh peas and pea shoots.

What will I love? The sheer variety and inventiveness of the recipes aside, there’s an informative introduction, suggested seasonal menu plans and a whole chapter of delicious sounding cocktails including smoked tarbooz made with vodka, whisky, watermelon juice and cinnamon syrup What won’t I like? If you have

purist tendencies when it comes to Indian cooking, this is not the book you are looking for.

Should I buy it? Pierre Koffmann, who wrote the book’s foreword, loves Will Bowlby’s food so it’s a no-brainer. £26, Hardie Grant

Goat

by James Whetlo What’s the USP? Everything you wanted to know about the UK’s most undervalued and underused protein but were afraid to ask, plus 70 odd recipes covering just about anything and everything you could possibly do with a goat, gastronomically speaking of course.

Who’s the author? James Whetlor is a former River Cottage chef (Hugh Fearnely Whittingstall wrote the book’s foreword) the and now founder of Cabrito which supplies goat meat to catering butchers and restaurants around the country.

What does it look like? With it’s ominous horned goat head cover, you might mistake this for a book of black magic spells (and if you read it backwards, it actually is) but open it up and you find something far more benign with images of Whetlor cuddling a goat, munching on a goat burger and preparing a hay barbecue.

The food has been imaginatively and attractively styled and shot and the book has a fresh, bright and elegant look.

Killer recipes? Whetlor has gone out of his way to demonstrate the versatility of his beloved animals and the variety of dishes is impressive from kid shank, apricot and pistachio tagine to schnitzel and Greek-style orange and leek sausages. The author has roped in a number of high profile chef friends to contribute their own recipes too, including Neil Rankin from Temper (goat tacos) and Hugh FH himself (kid, lentil and labneh salad).

What will I love? The extended 30 page introduction goes into depth on the subject of goats covering their place in history, goats and modern farming, goat as served in restaurants, their use in the leather industry and the farm Africa charitable project that has

used goats to help rehabilitate local ecosystems in rural eastern Africa and which Cabrito give part of their profits to (including 50 per cent of the royalties from the book).

What won’t I like? Yes, its a single ingredient book so theoretically might have limited appeal.

Should I buy it? Currently, the male offspring of diary goats are simply destroyed but could become a sustainable and ethical source of low fat, high protein meat. Buying this book and putting goat on your menu will help that become a reality. That’s a pretty good reason to pick up a copy. £20, Quadrille

BOOK OF THE MONTH

First, Catch

What’s the USP? When is a cookbook not a cookbook? When its a ‘hymn to an early spring meal’, all 226 pages of it. This is food writing in the purest sense, a series of extended essays ruminating on the process of cooking a single meal; a sort of exercise in culinary mindfulness.

Who’s the author? Thom Eagle is the head chef of Little Duck: The Picklery, a ‘fermenting kitchen and wine bar’ in East London (unsurprisingly, there is a fair amount on fermentation in the book) and writes the food blog ‘In Search of Lost Time’. First, Catch is his debut in print.

What does it look like? A novel. Forget glossy photographs, this is all text interspersed with some black and white line drawings of pots, pans and assorted ingredients by artist Aurelia Lange.

Killer recipes? Here’s the thing, Eagle says ‘recipes are lies’ so there aren’t any.

At least not in the list-of-ingredients-followed-by-a-method format that we all know and love. Instead, they are snuck in by stealth, so for example, a recipe for quick cured lamb loin, complete with measurements for the simple salt and 54

sugar cure appears spread over three pages at the end of chapter one, ‘On Curing With Salt’ and one for salsa verde is nestled quietly in chapter 10 ‘On Wild and Domestic Celeries’.

What will I love? Eagle is a thoughtful sort of bloke with a particular view on all things culinary which gives the book a distinctive tone. When was the last time

you heard someone say that they ‘go out of their way’ to visit old salt-pans’? Eagle has travelled from Kent to Sicily to look at the damn things, trips which have helped him, and now in turn his readers, ‘appreciate the importance of salt throughout our history’.

What won’t I like? Eagle is very self consciously ‘a writer’ (he studied American Literature at uni) and consequently there is a fair bit of ‘food writing’ to get through; raw vegetables aren’t seasoned but ‘subjected to the violence of lemon and salt’ which you’ll either think is incredibly creative writing or just plain irritating, depending on your taste in literature.

Should I buy it? It maybe a little pretentious and overwritten, and it’s debatable whether the ‘stealth’ recipes are an improvement on the traditional format, but Eagle has genuine insight into the practical and philosophical sides of cooking, as well as extensive knowledge of international cuisines and culinary history, making First, Catch well worth reading. £16.99, Quadrille

There is only one Venice, a beautiful city whose fame as a meeting place for artists, writers, royalty, the very rich, as well as lots of very ordinary Europeans, has long been the stuff of legend. The majesty of this glorious city is well documented, but there is another icon which symbolises Venice and that is the Bellini, a distinctive cocktail made from a frothy combination of white peach juice and Prosecco. The drink was first invented in 1930’s by the legendary Guiseppe Cipriani, founder of the word renowned Harry’s Bar and named for the Italian artist Giovanni Bellini. If you haven’t had Prosecco as an “ombretta” (evening cocktail) you haven’t really experienced Venice!

A few years ago I learnt the art of making these Prosecco cocktails under the watchful eye of the head barman at the world-renowned Hotel Danieli. As it was January and peaches were out of season, he encouraged us to try instead the Mimosa, a blend of Prosecco with fresh Sicilian mandarin juice We then tried the Rossini, a blend of Prosecco and fresh strawberry puree.

Prosecco is a light fresh sparkling wine, low in alcohol and intensely aromatic. The DOC is for a dry white wine labelled Tranquille (still), or for the sparkling wines labelled either Gentile or Frizzante (slightly sparkling) or Spumante (fully sparkling). The driest wines are labelled brut, and the sweeter ones “extra dry”. Prosecco is bestdrunk young and should be served well chilled. Prosecco used to be both the name of the grape and the wine but in 2009 the wine laws of the region were changed and the grape is now known as Glera. That year the classification for Prosecco was raised to DOCG Denomination of Controlled and Guaranteed Origin level the highest quality level for Italian wines.

The wine is made sparkling using the cuve close (or tank) method whereby the second fermentation takes place in a large tank prior to filtration and bottling under pressure.

The DOC applies to the region, which runs 33km from the town of Congegliano to the picturesque village of Valdiobbiandene in the Treviso province of Veneto. There 58

are over 3,364 grape growers in the region, farming a total of 7,549ha who work with 438 co-operative wineries. The region also has 178 producers.

Prosecco producers worth taking a look at include:

Prosecco as a wine style, first became popular in the 1970’s in Germany, a country with a long tradition of sparkling wine consumption. The popularity of Prosecco then spread to America both North and South with Brazil one of the biggest markets for their wines. The Far East too is proving to be a boom market for Prosecco producers as the lighter style of sparkling wine is an extremely good match for Asian and Japanese foods.

The house of Bisol is one of the region’s historic names and this family owned estate has been making wine since 1542. Originally from Treviso the family worked for generations in the region as viticulturists. They founded their modern winery in 1875 and were one of the first companies to specialise in the production and selling of wines made from their own vineyards. The Bisol family now own 50 ha of vineyard in the regions making them one of the biggest landowner, which means they have total control over their winemaking from vineyard to fermentation. As a result, they are considered to be one of the top producers in the region.

The global financial meltdown sparked the Prosecco phenomenon. During the boom times consumer got a taste for drinking bubbles, when austerity hit and belt tightening was de rigeur, the arrival of Prosecco was a game changer.

Prosecco, almost unknown 12 years ago is now the sparkling wine of choice at many family focussed celebrations such as weddings, christenings, graduations, etc. This value Italian sparkling wine, is fruity and light is now the drink of choice for those in the market for the “pop” factor.

Recent figures show that Prosecco are currently driving the sparkling wine category in the UK, sales of Prosecco increased by +17% in 2017. Another interesting fact comes courtesy of the Consorzio Tutela Prosecco DOC. The Consorzio, a private company, represents the interests of a number of Prosecco producers. Last year they conducted a marketing survey on 8 million UK consumers, the results showed that 56% of Prosecco purchases make in the UK retail sector are by men. Globally sales of Prosecco are expected to reach 400+ million bottles by 2020. In the same year, UK sales are expected to increase to 8.3 million cases.

The success of Prosecco as a sparkling wine category shows no sign of abating, the category is about to expand with the introduction of a brand new wine style, Prosecco Rosé. This year on May 9th, the Prosecco DOC Consorzio agreed to change the wine law to allow producers to make Rosé wine by mixing the white Glera grape with a maximum of 15% Pinot Noir to create Prosecco Rosé as a DOC wine. The category will only be allowed for the fully sparkling “spumante” style and not for the frizzante style. The “frizzante” style with less pressure that is sealed with a string rather than a wire muselet is also due to be phased out of production within the next few years.

BISOL

As well as owning a significant amount of vineyard land, the Bisol family also have 16 of the cru vineyards, which means they can specialise in the production of single vineyard wines. The most famous of the cru vineyards in the region is Cartizze a special vineyard area on a hill of red sandstone overlooking the town of Valdiobbiandene that yields the best and most expensive wines from the region. This is where Bisol farm the grapes for their premium wine “Superiore di Cartizze” Brut.

They key to quality of the Bisol wines lies not only in the base wine but also in their production method. The consistant quality of their wine is achieved by the blending of three different still wines each from the same Prosecco grape but each vinified in a different way. The fourth component to the blend is either a small percentage of Chardonnay or Pinot Bianco .

The different fermentation styles are Traditional (standard fermentation of clean must at a low temperature in stainless steel tanks), Battonage (cap left in situ and stirred for higher alcohol content), Arabile (traditional style of Prosecco fermentation where the fermentation goes dormant in winter and re-starts when the temperatures rise in Spring). A typical blend would consist of 50% traditional ,25% Battonage, 20% Arabile and 5% Chardonnay or Pinot Bianco.

The resultant wine is more complex with the blending process cutting out vintage variation and giving consistency of style. The blended still wine is then fermented for a second time in a large tank and bottled under pressure immediately prior to dispatch.

อาหารเยอรมั นในกรุ งเทพฯนั้ นหารั บประทานได้ ยากมาก แต่ พี่ น้ องฝาแฝดสองคนกำ �ลั งจะเปลี่ ยน มุ มมองของอาหารเยอรมั นในกรุ งเทพที่ ร้ าน แต่ พี่ น้ องฝาแฝดสองคนกำ �ลั งจะเปลี่ ยนมุ มมองของอาหาร เยอรมั นในกรุ งเทพที่ ร้ านจุ๊ ง Sühring ็ นเจ้ าของ พี่ น้ องฝาแฝด Thomas และ Mathias เป ้ ่ ้ ร านอาหารนี มั นยากมากที จะแยกเขาสองคนออก จากกั นเขาเลยพยายามที่ จะใส่ เสื้ อคนละสี เพื่ อให้ ็ นคนเดี ยวกั นเลย คนอื่ นๆจำ �เขาได้ “เราเหมื อนเป ั คร บ เพราะพวกเราโตมากั บการทำ �อะไรเหมื อนๆกั น มั นก็ เลย make sense ว่ าเราจะทำ �งานในสายอาชี พ เดี ยวกั นโดยการเป ิ ดร้ านอาหาร” แต่ Thomas และ Mathias ก็ ไม่ ได้ มี ประวั ติ การ ทำ �งานด้ วยกั นมาตลอด พวกเขาเคยไปตามทางของตั ว เอง ทำ �งานในหลากหลายประเทศในยุ โรปจนมาเจอะเจอ กั นอี กครั้ งในกรุ งเทพฯ และโอกาสก็ ได้ เข้ ามาถึ ง เขาทั้ งสองคนซึ่ งดึ งเขามาที่ ประเทศไทยเมื่ อ 10 ีป ก่อน Thomas เคยทำ �งานอยู่ ที่ เคยทำ �งานอยู่ ที่ อี แหวน อี ก งานอี เว้ นของ Le Bua State Tower และได้ ถู ก ็ นพนั กงานประจำ � เขาเลยบอกว่ าเขา เชิ ญกลั บมาให้ เป จะมาทำ �งานประจำ �ต่ อเมื่ อฝาแฝดของเขาได้ มากั บเขา ด้ วย เค้ าเลยบอกว่ าเค้ าจะมาทำ �งานประจำ �ต่ อเมื่ อ ฝาแฝดของเขาได้ มาทำ �งานกั บเขาด้ วย“ ความจริ งผม 64
