Spreading Kindness February is always the perfect time to reflect on our goals for the semester and find ways to make an impact in the communities we serve. This year, we made sure to take some extra time for joy and spreading kindness. On February 17th, Random Acts of Kindness Day, we hosted the DelightFul Challenge where we committed to spreading 500,000 acts of kindness at campuses across the country. While this may seem like a lofty goal to some, we knew our teams would be more than up for the challenge.

It was so amazing to witness this event in person as our teams thought of new ways to spread joy and make a difference in our campus communities. Whether it was handing out flowers, donating meals, or inspiring compliments, the mood was electrifying. From our leaders to our students, I am so inspired by the effort put forth to create joy through DelightFul. As we used this time to spread kindness, we also took special care to reflect on our cultural celebrations in February - Black History Month and Lunar New Year. I hope you enjoy reading this edition of the Chartwells Monthly and join us as we continue to spread joy.

Making Way for Indoor Farms with Farmshelf The concept of locally grown produce will take on new meaning as we expand our strategic partnership with Farmshelf. Campuses nationwide will start to incorporate more of these educational smart farms that produce hundreds of pounds of leafy-greens and herbs annually, grow two-to-three times faster and use 90% less water than traditional farming. As students take more and more interest in where their food comes from, these indoor farms invite students to touch, feel and participate in the growing process and take an active role in their dining experience.

This month we celebrated DelightFul, the third signature event in our JoyFul series. For the February 17 DelightFul Challenge, we committed to serving up 500,000 random acts of kindness. Taking place simultaneously across the country on Random Acts of Kindness Day and virtually MC’d

by Chef Jet Tila, our campus teams paid it forward to their students and communities. These recipients were then encouraged to perform their own acts of kindness. It was a win-win all the way.

Colossal Cookies SUNY PLATTSBURGH

For a grand total of 2,980 acts of kindness, the team at SUNY Plattsburgh showed up for DelightFul by creating snack packs for their local blood drive. They continued by sharing free coffee coupons and student-written Valentine’s cards for a local nursing home, 50 cookie platter drops, and finally by giving each associate a jumbo cookie with words of kindness.

The team at Northwestern paid it forward with Random Acts of Kindness in their communities. In total, they completed more than 3,000 acts, ranging from writing notes of kindness on stuffed animals to be sent to the local Lurie Children’s Hospital to packing 300 tote bags of school supplies for Kingsley Elementary School.

Through their partnership with the San Fernando Valley Rescue Mission (a shelter for those facing homelessness), we provided meals and toys to 26 families. They did a surprise cookie drop to two Northridge Fire Departments. And we finished with over 2,500 acts of kindness, they partnered with My Friend’s Place, a local Los Angeles nonprofit, for a campus-wide clothing drive.

Coloring Smiles NORTHEASTERN UNIVERSITY

Our team at Northeastern kicked off their DelightFul day with a hot chocolate and muffin breakfast for their campus first-responders, complete with campus therapy dog, Cooper.

Celebrations continued throughout the day with a color station for Color a Smile charity, cold brew coffee samples, donut and coffee breakfast for associates, and a cotton candy art station – totaling more than 6,800 acts of kindness.

Jarvis Joy LAMAR UNIVERSITY

Lamar University in eastern Texas spread joy for DelightFul with 2x Superbowl Champion Jarvis Green of the New England Patriots. Jarvis joined our team with his shrimp and seafood company, Oceans97, for a day full of shrimp boils, caricatures and autographs.

Bountiful Bouquets ADELPHI UNIVERSITY

The dining team at Adelphi University joined forces with the Center for Community and Student Engagement to host “The Kindness Corner,” giving flowers to students, writing letters to their essential workers, and donating to their food pantry – totaling more than 1,000 acts.

Happy Lunar

New Year!

Asian cultures around the world celebrate the Lunar New Year with their own vibrant traditions.

In China, “Chunjié” is a large public celebration with dragon parades, lion dances and fireworks. In Vietnam, they celebrate “Tết Nguyên Đán” or “Tết” with bánh chưng (sticky rice cakes) and by visiting loved ones. In Malaysia, they enjoy yee sang, or raw fish and shredded vegetables known as “prosperity salad.” In Korea, they celebrate “Seollal” enjoying dishes like Dduk-Guk and playing games like Yut Nori.

Even with distinct traditions, they all cherish family and wish one another prosperity during the Lunar New Year. Here’s how our teams are celebrating — two with celebrity chefs.

Celebrating Tét UNIVERSITY OF CHICAGO

UChicago Dining was thrilled to host critically acclaimed Chef Thai Dang for a Lunar New Year station takeover on February 1 and 2. The takeover at The Kitchen station of Woodlawn Dining Commons featured Chef Thai Dang’s four signature dishes. The fun options were Gỏi Đu Đủ, a salad of papaya with jerky and Tương ớtv (hot chili sauce), and Cánh gà chiên, his famous crispy chicken wings. For his main courses, Chef prepared Ga N” Ong, or five-spice chicken, and Cà Tím Nướng Mỡ Hành, a grilled eggplant dish with scallion and pickled shallot. “Celebrating Lunar New Year by sharing Vietnamese cuisine with the public is awesome,” he says.

Holiday Dishes TEXAS A&M UNIVERSITY

Texas A&M Dining team partnered with Chef Jet Tila for their Lunar New Year celebrations on February 1. Chef Jet took over The Commons Dining Hall and Sbisa Dining Hall by sharing some of his favorite traditional dishes, including three steamed dumplings: Chicken Lemongrass, Kale and Vegetables, and Edamame. He also cooked up drunken noodles with beef, Szechuan green beans and egg rolls. Special shoutout to Schwan’s Company, whose delicious ingredients helped highlight his dishes.

Excited about the holiday, Chef Jet gave away autographed copies of his cookbook “101 Asian Dishes You Need to Cook Before you Die” The Soaring Phoenix Lion and Dragon Dance Association ended the festivities with a traditional Lion Dance.

History Month

Black History Month honors contributions of African Americans, from civil rights pioneers like Harriet Tubman and Martin Luther King Jr. to current leaders in industry, medicine and academics.

We are celebrating rich and diverse cultures, traditions and histories and acknowledging the important contributions of our Black and African American communities. On our social media platforms we were thrilled to feature Byron Williams, the Vice President of Operations for UChicago Dining, and Kwasi McManus, Resident District Manager for the University of Chicago. “I was born and raised in Washington, D.C. I was always taught that integrity, hard work, honesty and perseverance were key core values and pillars.

“I am originally from Cleveland, Ohio.

I am really proud of my upbringing; my mom and dad did everything they could to make me realize that there was a bigger world outside of me.

One thing that I am most proud of as we talk about Black History Month is my father’s contributions to community. He is one of the co-founders of Satchel Paige Little League Baseball, which honors a Negro League baseball player, Satchel Paige.

It provided and afforded young Black men across the city the opportunity to play baseball. In 1999 we had the opportunity to play baseball in Cuba with the Baltimore Orioles, and this was a lifetime experience I will never forget.

My mother always made sure that in the summertime I was always able to go to a summer camp or have some type of experience. I got to go to space camp, and it was amazing to be around young people who were interested in learning.

And for a week it felt really cool to be smart. To try and build rockets and try to understand propulsion at a very young age, and to see a world that was much bigger and that most people didn’t have exposure to. It’s just a reminder of my mom really looking to give me those opportunities to succeed in a bigger world.

Every Friday was essentially Soul Food Friday. We would support our local Black-owned businesses throughout Washington, D.C. One thing that I’m really proud of with Chartwells is our impact not just on the students but also the Southside community. Helping to create opportunities for minority-owned businesses that bring economic development to some of these underserved communities is something that is near and dear to my heart.”
