all is upon us and I always find it exhilarating. The change of season is one of the most beautiful here in North Carolina. And there is no better place then Asheville to see the pops of color in the blue ridge mountains and enjoy the crispness in the

air. Not to mention a little spa time at the world renown Grove Park Inn, mentioned in our 3 days in….. Asheville. It’s a wonderful time to spend outdoors hiking and horseback riding. I always associate fall with trail riding. As a child growing up I would go on the Thanksgiving Hunt with the Fairfield County Hunt Club. It was a fabulous time riding through the country side and jumping the stonewalls with the hounds.

That memory was the influence behind this issue’s fashion editorial, Unbridled. I love the sophistication of the Etcetera fashions against the barn backdrop. See how Natalie Gladden our makeup extraordinaire created these beautiful looks in the new Beauty section. Also, new this

All our CGs will enjoy a crisp fall hike followed by a little spa time then out for

some great vino with dinner. Just two blocks from downtown is the Bunn House Hotel. This luxury boutique Inn is situated in a 1905 brick mansion with a rooftop deck and a contemporary feel inside. All of the luxury appointed rooms have a terrace or balcony and a much appreciated Nespresso coffee/espresso machine.

On a slightly larger scale is the equally luxurious, Omni Grove Park Inn. (once home to F. Scott Fitzgerald) Here you can soothe your soul in the subterranean spa paradise.

the perfect plum that will be trending this fall. To recreate this look, first you will need to apply your customized moisturizer, then a smoothing primer in your T-zone to balance out your skin. Next, you will apply a mattifying foundation for an all-day wear, set the foundation with a loose setting powder. For the eyes you will apply a neutral color all over the lid, a light almost white shadow in the inner most corner and for the pop of color apply a small amount of plum to the outer most corner of the eye. Finish the eyes off with a brown eye liner on the top and bottom, smudged out with an eyeliner brush, then apply a coat of your favorite black mascara. Next, you will apply a matte bronzer to your forehead around the hair line, under your cheek bones, and under the jaw line for a light contour. Then you will apply blush to apple of your cheeks and highlight above your cheek bones. To finish the look all you need is that perfect liquid lip in a matte plum.

On Saturday, October 21st the Vieux Carré transforms into the “Boo Carré” after dark for the Krewe of Boo Halloween parade, notorious since 2007 with world-class floats. Or you can visit Le Petit Théâtre, New Orleans’ oldest playhouse for a performance. Alright, we admit this place is haunted, too.

ave you heard this one before?

Two classy-looking guys dressed in business casual attire meet at a new

cleverly concealed prohibition styled bar in the back of a well-known shopping center on Park Road in the Montford area of Charlotte. One, a tall bald gentleman, takes a sip of a perfectly aged whiskey, one of a couple hundred expertly curated whiskeys, scotches and bourbons in this bar. After the sip, the man looks at his older, impeccably-dressed best friend (who is sipping a flavorful, refreshing cocktail) and says “what happens when you take a former touring musician who owned a successful recording studio and later got into the wine business and put him with someone

who worked in the service industry and became a chef before spending time with a local alternative rock band and later becoming an award-winning mixologist?” The two men, Conrad Hunter and Stefan Heubner, look at each other and share a knowing laugh…

Rest assured this exchange never happened, but nevertheless, if you are lucky enough to meet the two owners of dotdotdot you will note an easy rapport, the kind where one finishes the other’s sentences and they have their own common jokes. That testifies to their long friendship and the comfort level they have with each other.

How Heubner and Hunter met is as interesting and multi-layered as one of the many aged Scotches they have on premises. Huebner has been immersed in the hospitality industry since the age of 16 working jobs located in the back of the house and eventually including time spent as a

Huebner, deciding to take a break from his culinary career to follow a passion for music joined an alternative rock band which toured up and down the Eastern seaboard. Eventually the band wanted to put their songs down and make a CD and would end up in Hunter’s White Room studio and a friendship was born.

As both men’s music careers whined down, Hunter wanted a change and entered the wine industry as a wholesale rep while Huebner began bartending for extra money. It was at this point both men found their true passions. For Hunter, this meant opening Foxcroft Wine Co., becoming a wine expert and also developing a passion for single malt scotch and all distilled spirits while Huebner discovered his culinary background allowed him advantages with discerning flavors and how different flavors can be blended to create new tastes. Soon, Heubner was excelling at mixology and started tenures at Cosmos Café and Heist Brewery while simultaneously winning many mixology contests along the way. When Hunter needed someone for dotdotdot it was only natural he turned to his friend Heubner.

“We bonded over music and stayed in touch,” said Heubner regarding his friendship with Hunter. “We also went down parallel paths regarding the end of our musical careers and our gradual branching out into the wine, spirit and culinary worlds. It’s great that we could do this new venture together.”

3 cups Reduced-Sodium Chicken Broth 1 16 oz. Can Crushed Tomatoes 1 16 oz. Can Diced Tomatoes 1T

Finely grated Parmesan

Freshly squeezed Lemon Juice

Instructions: In a large soup pot, melt the butter and olive oil over medium heat. Add the onion, carrots, celery, garlic cloves, salt and pepper and cook 15 minutes, stirring occasionally until vegetables have softened.

Add the broth, canned tomatoes, tomato paste, and the 1 T. sugar to the pot. Increase heat to medium-high and bring to a boil. Then, reduce heat to low and simmer uncovered 30 minutes.

Remove pot from heat, stir in the heavy cream and basil and let rest 20 minutes.

Working in small batches (3 to 4 cups at a time, depending on blender size), puree soup in a blender until smooth.

Return to pot, and simmer over low heat for 5 to 10 minutes until warm. Stir in the parmesan cheese, lemon juice and and additional 1 t. sugar. Season with salt and pepper to taste.

Instructions: In a large soup pot, cook the bacon over medium-high heat until crisp. Using a slotted spoon, remove the bacon and let cool on a plate lined with a paper towel. Crumble and set aside.

Pour off a majority of the bacon drippings from the pot, retaining approximately 2 tsp in the pot. Add the butter to the pot and melt it over medium heat. Add the onion, bell pepper, garlic, salt and pepper and cook 5 minutes. Add the corn and the potatoes and cook 2 additional minutes, stirring often. Stir in the chicken broth, cover and cook 15 minutes, or until the potatoes are fork tender.

Uncover and remove from heat to cool 20 minutes.

Measure 2 cups cooked soup vegetables and put in a medium-sized bowl. Transfer the remaining soup mixture to a blender, along with the milk. Puree for 15 seconds, until relatively smooth (a few bits are acceptable). Pour back into the soup pot and stir in the reserved cooked soup vegetables and the roasted chicken. Marinated Apples Ingredients 1/2 c Apple Juice

1/4 t Salt

2 T Lemon Juice

Dash of Nutmeg

2 T Apple Cider Vingegar

2 Large Red Apples (preferably Red Gala), cored, unpeeled

2 T Vegetable Oil 1 1/2 T Brown Sugar 1 t Dijon Mustard 1/2 t Ground Cinnamon 1/4 t Freshly Ground Black Pepper

2 Large Granny Smith Apples, cored, unpeeled 1/2 c Creme Fraiche Fresh Mint Leaves (to garnish) Additional Ground Cinnamon (to garnish)

Instructions 1. In a medium-sized mixing bowl, whisk together all ingredients except the apples to create your marinade; set aside.

2. Slice the apples into 1/4 inch wedges and transfer to the marinade. Refrigerate, covered for several hours (or overnight).

3. To serve, fan the marinated apples in small serving dishes, and top with a dollop of the creme fraiche.

Garnish with a few mint springs and a sprinkling of ground cinnamon.

Roasted Vegetables and Toasted Bread Ingredients 1 Stalk Leek, (approximately ¾ cups prepared, see below)

2 T Olive Oil, plus an additional 2 T for Toasting Bread

Cold Water

¼ t Salt

1 c Butternut Squash, peeled, seeded and 1-inch diced (*I prefer to buy pre-washed, peeled chunks!)

¼ t Freshly Ground Black Pepper

1 c Mixed Wild Mushrooms (such as Cremini, Maitake, and Enoki) 1 c Raw Beets, spiralized (I buy mine spiralized from the local grocer to save time!)

2 c Italian Bread (from an Italian Round Loaf), 1-inch cubed ½ c Pecan Pieces, toasted Fresh Burratta

Instructions 1. Preheat the oven to 425 F. 2. Prepare a water bath for the leeks by filling a medium-sized mixing bowl three-quarters full with cold water. Slice off the dark green ends of the leek and the very base of the white stalk; you should have about one-third of the leek remaining intact. Thinly slice this remaining pale green part of the leek and place in the prepared water bath. Using your fingers, separate the rings from each sliced portion and let rest 15 minutes. Remove with a slotted spoon and place into a colander (do not drain, as the dirt/suit will transfer with the cleaned leeks). Rinse 4 or 5 times under cold water and set aside to drain.

3. On a large baking sheet, toss the olive oil with the butternut squash, salt and black pepper. Roast for 10 minutes, then add the prepared leeks and wild mushrooms. Roast an additional 5 minutes and transfer to a large mixing bowl. Add the raw, spiralized beets and set aside.

4. On the same baking sheet as used to roast the vegetables, toss the remaining 2 T olive oil with the cubed bread. Bake for 10 minutes, tossing once during baking. Remove from the oven and let rest 10 minutes.

5. To finish the dish, gently toss the toasted bread “croutons” with the vegetables. Transfer to a long platter and drizzle the salad with the prepared Thyme Honey Mustard Dressing (recipe below). Top with the toasted pecans and fresh burrata.

Thyme Honey Mustard Dressing Ingredients 2 T Grey Poupon Deli Mustard

2 t Shallot, minced

2 T Honey

1/4 t Salt

1 T Fresh Thyme Leaves

1/4 t Freshly Ground Black Pepper ¼ c Extra Virgin Olive Oil

Instructions In a small mixing bowl, stir together the mustard, honey, fresh thyme leaves, shallot, salt and pepper.

It is the only non-royal house in England to hold the title of palace. Blenheim is one of England’s largest houses, built between 1705 and 1722 on 2,000 acres of landscaped parklands.

The palace is also the birthplace and ancestral home of England’s most notable Sir Winston Churchill.

A fun fact is in the 19th century, the palace was saved from ruin by funds gained from the 9th Duke of Marlborough's marriage to American railroad heiress Consuelo Vanderbilt.

nothing is more anticipated than the annual two-week long Blowing Rock Charity Horse Show (“BRCHS�). Not only does this beloved horse show represent one of the highest rated Hunter Jumper horse shows in the state, but nestled in the rolling Blue Ridge mountains it also offers a well-timed relief from the scorching summer temperatures and a chance to reconnect with old friends. Each year in late July, competitors rent picturesque mountain-side villas and compete at the highest level, all the while surrounded by best friends, beautiful horses and charming smalltown restaurants and boutiques. For equestrians on the show circuit, I imagine that BRCHS evokes feelings quite similar to attending a favorite summer youth camp.
