The best comfort food you may not know you could make (NC) We could all use some delicious comfort food these days and tasty pierogi fit the bill. This Eastern European dumpling-style meal boasts a scrumptious filling of cheese and mashed potatoes, with a savoury twist in the form of nutrient-rich mushrooms. Hearty and flavourful, this dish is easier to create than you might realize and worth the trip to the grocery store Prep time: 30 minutes Cook time: 18 minutes Makes: 40 pierogis Ingredients: Pierogi dough: • 3 cups (750 mL) all-purpose flour • 2 cups (500 mL) full fat (14%) sour cream Filling: • 1 tbsp (250 mL) salted butter • 1 cup (250 mL) finely chopped onion • 1/2 lb (8 oz) crimini mushrooms, finely chopped • 1/2 tsp (2 mL) each salt and pepper • 1 1/2 cups (375 mL) mashed potatoes • 1/2 cup (125 mL) shredded cheddar cheese Garnishes: • 1/2 cup (250 mL) sour cream • 1/4 cup (80 mL) sliced chives • Sautéed button mushrooms Directions: Pierogi dough: I n a l a rg e b o w l , s t i r together flour and sour cream with a wooden spoon until the dough begins to come together.

Turn the dough out onto a well-floured surface. Knead gently with your fingertips for 2 to 5 minutes taking care not to overwork it.

Knead until the ingredients are blended and the dough is slightly smooth on the outside.

Gather into a ball, wrap in plastic, and let rest for a minimum of 20 minutes.

Filling: Melt butter in a large skillet over medium-high heat. Stir in onion and cook for 3 minutes.

Mix in mushrooms, salt and pepper.

Cook stirring for 5 minutes until mushrooms and onions are caramelized.

In a medium-sized bowl mix together cooked mushrooms, mashed potatoes and cheese until well combined.

Making pierogi: Use a rolling pin to gently roll out 1 tbsp (15 mL) of dough into a 3-inch round disk on a wellfloured surface. Repeat to make around 40 disks. Keep covered as you work so they don’t dry out.

To fill, hold dough disk flat in your palm and spoon 1 tbsp (15 mL) of filling into centre. Fold the round in half to enclose the filling.

Seal the pierogi by pinching the edges together with a fork. Repeat process to make around 40 pierogi total. Keep pierogi covered until they are all filled and ready to cook.

Fill a large pot with water and bring to a boil. Drop the pierogi into the boiling water in batches of 5-8, stirring occasionally. Once they float to the top, cook for another 3 minutes.

With a slotted spoon, remove pierogi from the boiling water.

Melt butter in a non-stick skillet over medium-high heat.

Without crowding the pan, add drained pierogi and cook until golden brown on both sides, around 1 minute per side.

Serve either as individual bites for an appetizer or in a bowl for a full meal. Garnish with sautéed button mushrooms, a dollop of sour cream and a sprinkle of diced chives.

Michael J. Morris More than 20 years ago now when I was editor of Insider, the faculty newsmagazine at College of the Rockies I was writing about our duty to serve and participate, and referred to Frank Coulter who had been a member of the public school board in Chapleau for at least 17 years.

At a function honouring Frank for his service, I asked him why he had stayed on the board so long.

He told me that "Mr. Shoup told us we had a duty to serve and this is one way I could do it."

He was referring to John Martin 'Jack' Shoup, who was the principal and teacher at Chapleau Public School for 31 years with a leave of absence so that he could serve in the Canadian Army in World War II. Mr. Shoup had also served in World War I, and as Ian Macdonald recalled participated in the famous battle of Vimy Ridge.

According to Wikipedia the Battle of Vimy Ridge fought between April 9 and 12, 1917, was the first occasion when all four divisions of the Canadian Expeditionary Force participated in a battle together and thus became a Canadian nationalistic symbol of achievement and sacrifice. A portion of the former battleground serves as a preserved memorial park and site of the Canadian National Vimy Memorial.

Ian, the retired head of the department of architecture and professor emeritus at the University of Manitoba, and always available for research assistance, who attended Chapleau Public School, said Mr. Shoup made the observation about the artillery barrage that preceded the attack on Vimy Ridge. He observed then that "he can still hear it to-day," and that would have been in 1951 or 1952.

After World War I, Mr. Shoup continued his teaching career which he started when he was 17 in the Sudbury area and came to Chapleau in 1927 as principal and teacher at the John Martin public school. He retired "Jack" Shoup in 1958.

This past year unveiled a dark and tragic chapter of Canadian history. Having witnessed the discovery of the multiple unmarked burial sites at former residential schools, our hearts are aching from grief, loss and regret. We know that expressing our sympathies is not enough. The reality is cruel to grasp. However, despite our collective shock and disbelief, we must acknowledge our nation's shameful legacy as it sends a concrete reminder of the necessity to reflect on how Canadian society treats Indigenous people, and what steps are taken toward building a better relationship.

Celebrating and supporting Indigenous culture is one of those steps. In fact, it is a fundamental approach to reconciliation with Indigenous peoples, which for the last two years has been shadowed by the frustration of inaction.

Since the COVID-19 pandemic brought cultural gatherings season to a grinding halt, most of the Indigenous festivals and powwows cancelled their annual celebrations, with some having shifted to the online mode. In both cases, though, it resulted in costly consequences for everyone involved – the organizers, sponsors, participants, vendors, and the local communities, and created additional hurdles in our efforts to continue moving forward on the path of reconciliation.

Thus, there has never been a more critical

June 1st marks the beginning of National Indigenous History Month. To commemorate National Aboriginal History month, various events and activities are being held across Algoma—Manitoulin—Kapuskasing, which is proud to be a home for 17 First Nations communities. Every community hosts its own unique festivals and powwows, accentuating strong Indigenous cultural traditions and customs.

For example, the first weekend in June marks the 30th anniversary of Aundeck Omni Kaning First Nation's annual powwow, organized under auspices of “healing our spirit through culture.” As culture is central in Indigenous approaches to health and well-being, it is an important moment for us to reinstate our support and dedication to ensuring the protection and betterment of traditional, spiritual, and cultural healing and wellness activities for First Nations, Inuit and Métis peoples.

Other powwows and celebrations across Northern Ontario have been announced as well, ensuring that there will be an abundance of opportunities to share knowledge and celebrate Canada's thriving Indigenous cultures. June 6 is a day of great importance for the Anishinabek Nation communities to celebrate - the Anishinabek Nation holiday in honour of the historic proclamation of the Anishinaabe Chi-Naaknigewin (constitution).

Of paramount significance is June 21, National Indigenous Peoples Day, the summer solstice that

A particular highlight of this year's festivities organized by Wikwemikong Heritage Organization is Wiikwemkoong Annual Cultural Festival (aka the Wiikwemkoong Powwow), which will be taking place at Thunderbird Park on July 30 and 31 within the framework of the 60th Anniversary Celebration. This annual event is considered to be the largest and oldest powwow in Eastern Canada as well as one of the major powwows on the continent. Dancers come from all over North America dressed in their finest regalia, attend this celebration to dance in perfect harmony with the beat of the host drum. It's an amazing sight to see, important knowledge to learn and insightful experience to understand Indigenous identity.

Do not miss a chance to join these celebrations in support of reconciliation initiatives.

Take time to acknowledge our cultural diversity, learn more about the rich history, support Indigenous tourism and honour the heritage and valuable contributions of First Nations, Inuit and Métis peoples across Canada. We all have a great deal to do in order to dismantle discrimination, oppression and prejudice that remain entrenched in Canadian society.

Our commitment to knowing true history with all the past wrongs, along with aspirations for equality, non-discrimination, and respect for human rights, are fundamental to rebuilding Indigenous nations and creating a new shared future.

Buddy told me that Mr. Shoup was the only person, other than them, who attended the first meetings, and he encouraged them to continue with the plan. Of course they did and the rest is history.

In 1960, he was honoured by being named King of the Chapleau Winter Carnival.

He became a charter member of the Chapleau Rotary Club in 1951, sat on the board of Lady Minto Hospital, and taught Sunday school at Trinity United Church. He was also on the Trinity United Church board..

Although I have been retired for 22 years now from the faculty of College of the Rockies,

my thoughts always return to school at this time of year, and when I came across a copy of Insider, I decided to share a bit about Mr. Shoup, who with his counterpart John McClellan at Chapleau High School defined education for the better part of 30 years in Chapleau.

However, on a very personal basis, Mr. Shoup was a great friend of my family. As many readers will recall, my mother Muriel (Hunt) Morris taught with him at Chapleau Public School for years. He also brought the Sudbury Star every day to our house for my grandparents Edythe and George Hunt, on one of his walks, always with his stick.

After my grandfather Harry Morris died in 1957, he also assisted my grandmother Lil (Mulligan) Morris and made sure she was OK. They both lived on Elgin Street. He assisted other citizens too.

King of the Carnival 1960 And so, as the Chapleau Sentinel observed when he died, Mr. Shoup was a "devoted and highly respected" citizen. Mr. Shoup not only told his students they had a duty to serve and participate -- he did it at all levels.

Offer solutions Instead of telling your loved one they must stop driving immediately, suggest ways they can get behind the wheel more safely. For example, ask them to avoid driving in poor weather conditions or stressful situations like rush hour. This will help them maintain some of their independence.

If your relative is in complete denial and their driving is out of control, you may want to consider anonymously reporting them to your local driving authority.

Weather Summary for Ontario May 2022: Abrupt Shift to Summer-like Weather for Many.

Destructive Thunderstorms Strike the South.

Temperatures and Precipitation After what seemed to be an endless stretch of below normal temperatures, southern and northeastern Ontario were suddenly thrown into full summer heat from May 10 to 15. Several locations across southern and northeastern Ontario had record high temperatures during this stretch with many stations reporting temperatures into the thirties. Petawawa was the hot spot this month reaching 35.5oC on May 13. In Ottawa, each day from May 12 to 14 exceeded 30oC. Three consecutive days surpassing 30oC had never occurred here so early in the year. The heat took a break but returned on May 21 over portions of southern Ontario with temperatures once again in the high twenties or low thirties. This heat played a part in fueling the destructive thunderstorms that day, described in more detail in the Significant Events section. The month closed with hot weather across much of southern and northeastern Ontario, with temperatures once again breaching the 30 degree Celsius mark.

Although there were these hot periods, the large number of near normal and below normal days across the south and the northeast resulted in the month as a whole being between 1 and 3 degrees Celsius warmer than normal. Across the northwest, temperatures were near normal with no significant cold or warm spells during the month.

Precipitation this month for the most part was near to below normal, with parts of far northern Ontario receiving less than 50% of the normal May value. The location that received the greatest departurevfrom normal was unfortunately the location that needed it the least: northwestern Ontario. Precipitation values were as much as 175% of normal values. Recall that this same area in April received 200 to 450% of normal values for that month. As a result, this area is very sensitive to any additional rainfall. Some areas are experiencing their wettest April-May period on record, such as Kenora Airport which reported 277 millimetres of precipitation during that time span. This is substantially higher than the 238.5 millimetres reported back in 2007, which is the second highest total for that twomonth period.

Ice Conditions in the Great Lakes May brought an end to the 2021-2022 ice season on the Great Lakes. The last of the ice in the North Channel of Lake Huron melted on May 1st leaving Lake Superior as the only lake with ice for the rest of the month. This ice was mainly contained in Thunder Bay, Black Bay and Nipigon Bay. By May 10th, ice began fracturing

in Nipigon Bay, followed by Black Bay on the 13th. The remaining ice in the three bays was completely melted by the 21st, leaving the Great Lakes ice free. The total accumulated coverage (TAC) for the Great Lakes for this season was 12.6%, registering just above the climatological median of 10.7%. The 2021-2022 ice season ranked as the 26th highest TAC over the last 50 years and the season was slightly longer than normal with ice forming one week early and the season finishing one week late.

Significant Events May 12-13: Rain and Thunderstorms across Northern Ontario A low-pressure system moving across the upper Great Lakes brought significant rainfall and thunderstorms to some areas of northern Ontario.

The greatest rainfall amounts were observed in Kapsuskasing with a total of 60 mm reported. In northwestern Ontario, rainfall amounts ranging from 30 to 50 mm were reported, exacerbating local flooding concerns for many communities currently under a local state of emergency.

May 15: Heavy Rainfall and First Tornado of the Year A cold front, extending from a lowpressure system crossing Hudson Bay, brought heavy downpours and thunderstorms to parts of eastern Ontario. General rainfall amounts of 20 to 45 mm were observed, the greatest amounts falling in Kemptville. In addition to the heavy rain, the first tornado of the year occurred in Casselman. No damage was reported from this landspout tornado, and so it has been given a default rating of EF-0 on the Enhanced Fujita scale.

May 21: Derecho Crosses Southern Ontario A derecho, a long-lived, widespread line of thunderstorms, crossed southern Ontario, passing approximately along the Highway 401 corridor before continuing through Quebec. This storm has resulted in at least ten fatalities, and multiple injuries. Significant damage was reported along the storm's path, including uprooted trees, downed hydro poles as well as structure damage, particularly in Uxbridge and Clarence-Rockland, east of Ottawa. A local state of emergency has been declared in both these

communities and eight additional communities across southern Ontario. Investigation teams from Western University's Northern Tornadoes Project (NTP) have confirmed that a tornado affected the community of Uxbridge, with a preliminary rating of EF-2. Two EF-1 tornadoes have also been identified near London. The team from NTP has also determined that damage in southern Ottawa was caused by a downburst, with winds up to 190 km/h. They are continuing to assess damage reported. Wind gusts of at least 100 km/h were observed throughout the path of this storm.

Over a million hydro customers were left without power, in some cases the outages lasted for several days, resulting in school and business closures.

Outlook for June Southern Ontario and the Nickel Belt will see above seasonal temperatures through the first week of the month, while northern and farnorthern Ontario are likely to experience near or slightly below seasonal temperatures. Towards mid-month, the province is expected to enter a cool pattern. Mainly near normal precipitation is expected for the province through to mid-month.
