SOUTHFIELD — The Southfield City Council voted 5-2 in favor of a proposed data center site plan at its Dec. 15 meeting. The data center would be placed on a vacant parcel of land along a stretch of Inkster Road between 11 Mile Road and Interstate 696. The site plan includes two stories, a substation with generators and a screening wall facing the nearby residential properties. The data center would also be on a closed loop water system and utilize 100 megawatts of power. There would be no ground water usage. The center is also projected to create 35 engineering jobs. At the meeting, Metrobloks Chief Investment Officer Jeff Mandel said the data center would not affect residents’ utility rates, as the center will be paying for its own upgrades and usage.

LATHRUP VILLAGE — The Michigan Natural Resources Trust Fund Board has recommended that the Michigan Legislature approve approximately $45 million in recreation development and land acquisition projects. This includes a recommended $400,000 award to Lathrup Village that would be used to support outdoor recreation improvements. City Administrator Mike Greene said Lathrup Village went through a six-month application process for this award. “This is truly a significant investment,” Greene said. “We’re excited to enhance the city’s outdoor recreation.” If approved, Lathrup Village plans to use the award to replace the aging playground at Lathrup Village Municipal Park with a new universally accessible play area, which would include poured-in-place flooring. The award must be approved by the Michigan Legislature and signed by Gov. Gretchen Whitmer before the city is able to use it. Lathrup Village will know if the funding was approved by fall of 2026. Upon approval, playground construction would begin in 2027.

Chefs share tips for entertaining during holidays BY GENA JOHNSON gjohnson@candgnews.com

Julie Selonke, right, a professional chef and graduate of the Culinary Studies Institute at Oakland Community College, shares a moment with a student. “I fell in love with teaching as much as I fell in love with food,” Selonke said.

METRO DETROIT — The holidays are a time to eat, drink and be merry. To make the most of the season, the Culinary Studies Institute at Oakland Community College — Royal Oak shared tips on how to make holiday entertaining enjoyable for both guests and the host. “I believe love is incorporated into the food,” said Angelica Galeana, 24, a longtime cook and first-semester student at the Culinary Institute. “If you’re cooking and you’re in a bad mood, it’s not going to come out right.” A favorite for her holiday dinners and celebrations are pozoles, a traditional Mexican stew. Galeana said green pozoles are from southern Mexico near Acapulco and typically made with chicken while red pozoles are commonly eaten in northern Mexico and made with pork. The meat is the centerpiece of the dish and topped with vegetables, which can include onions, cabbage, cilantro, radishes, lime and avocado. “There are so many toppings,” Galeana said. “We like to joke and say that it is the salad in the soup.” The seasonings include chiles, spices, whole oregano, cumin, clove, black pepper and salt. A chicken or beef bouillon further enhances the flavor. Hominy — a white corn — is also added. Galeana prefers cooking with whole spices because the freshSee CHEFS on page 11A

for six years, but this was the first time the event was partnered with Target. The Police and Fire departments were scheduled to do a second Heroes and Helpers with 20 more children at Meijer Dec. 16, after press time. Tarana Stewart was at Heroes and Helpers with her 11-year-old daughter, Ayana Hayes. Ayana was diagnosed with an auto-immune condition and had spent 23 days in the hospital before being discharged right before Thanksgiving. Stewart said it was a big confidence booster for her daughter to be chosen to participate. “She’s my oldest, and she is so loving and giving,” Stewart said. “To have that confidence to be like, ‘I deserve this,’ is a form of self-care for her. It’s healing.”

Ayana said it felt special to have been chosen to participate in Heroes and Helpers. She said she had fun shopping with the officers, and that she was grateful for everything. “I’ve never been picked for something like this before,” Ayana said. “I had a lot of fun.” Ayana’s purchases included snacks, selfcare items, pajamas, a blanket, jewelry and Mini Brands. She also got gifts for her sister and cousin. Stewart said programs like Heroes and Helpers are what the holidays are all about. She said the kids participating were able to let their imaginations come to life without the possibility of being told no. “It just brings out their joy and imagination,” she said. “It keeps them young.” Southfield Chief of Police Elvin Barren said the Police and Fire departments pride themselves on being community driven and focused, especially when it comes to children.

He said events like Heroes and Helpers can help with providing resources to families. “We know that some families are in need of additional resources, and we want to absorb some of that burden,” he said. “We can be sure to provide our children with a wonderful holiday season.” The spirit of giving did not end with Heroes and Helpers. The Southfield Police Department, Southfield Public Library and

other agencies conducted the annual Holiday Sleigh of Giving Dec. 13 at the Southfield Public Library, 26300 Evergreen Road. The gift-giving event was geared for children ages 4-12. “We enjoy seeing the smiles on their faces and the excitement they have when they receive the gifts,” Barren said. item to children in foster care or who were in the hospital. National Council of Jewish Women, Michigan, President Amy Zeskind said it feels incredible to see Wrapped in Love reach 20 years. She said it could not have been done without volunteers or the agencies participating. “You can’t do a program for this length of time without dedicated people,” Zeskind said. “Our volunteers, staff and the organizations we give to work like spokes on a wheel to make this happen.” Every year, volunteers involved in the Wrapped in Love program make approximately 600 tied fleece blankets that are then distributed to agencies and hospitals throughout southeast Michigan. Zeskind said they budget for 600 blankets but have sometimes made more or less depending on the needs of the organizations that are provided the blankets. Blankets are made every Monday from 10 a.m. to noon at the National Council of Jewish Women office, located at 26400 Lahser Road, Suite 306, in Southfield. New volunteers are welcome and do not need experience. People who wish to find out more on volunteering are asked to go to ncjwmi.org or call (248) 355-3300, Ext. 0. Materials for the blankets are purchased from funds using grants, tributes and donations. Call Staff Writer McKenna Golat at (586) 498-1059.

Roberts will be supervising the patrol division while Huston will supervise the detective bureau. Huston said becoming a sergeant was something he had always wanted for his career. He said he hopes to be a good leader and continue to make the Lathrup Village Police Department a trusted part of the community. Huston said his family is a big part of who he is and what he does. “I’m a big family guy and I want my kids to look at me and be proud of who they see,” he said. “I want them to realize what they can achieve if they work hard at it.” Roberts said he is looking forward to the leadership aspect of being a sergeant. He

said he is excited to take this next step in his career. “I want to be somebody the other officers can look up to and not be afraid to call if they need help, on or off duty,” Roberts said. McKee recommended that Zang be the new chief of police. He said Zang is the highest-ranking officer within Lathrup Village. “He’s run the detective bureau for nine years,” McKee said. “He has done a fantastic job, and I think he is the right person at the right time for this job.” Zang has been in law enforcement for 18 years. He said it was an honor to be recommended for the position of police chief. He said he thinks he and McKee have brought the Lathrup Village Police Department into a respectable position, and he hopes to continue that trajectory in his new role.

ness of ground spices is difficult to determine. The dish is typically served with tostadas, which are crunchy and flat. Galeana likes the El Milagro tostadas, available at most grocery stores that sell Hispanic food. She said the stew is simple, easy to make, and has been a crowd pleaser at her home. “It takes putting love in small ingredients,” she said. Galeana has been cooking most of her life. She started working in the industry at age 16. “I have been cooking since I was 8 … when I was tall enough to reach the pots and pans and things from the cupboard,” she said. Galeana said she knew a lot about cooking and preparing foods in the Mexican tradition, but she wanted to learn more. She

has been working at an upscale Italian restaurant. “It opened up my mind to learn new things,” Galeana said. She said she’s always studying the craft, from beautifully plating a dish to incorporating different spices and preparing foods from other cultures. Galeana strives to “whip up something on the fly,” as professional chefs do. It was with this in mind that she enrolled in the program to study to be a chef. Mike Dakoske is also a first-semester student in the culinary program at OCC. He describes himself as primarily a vegetarian, and he suggests preparing vegetables cooked properly for holiday entertaining. “Watch that you don’t overcook vegetables,” he said. Dakoske suggested a technique used at the vegan restaurant where he used to work. Wash the vegetables and slit the top to allow air in, keeping the vegetable whole. Put on a baking sheet, season with oil and salt and pepper, and then roast the vegetables for about 45 minutes or until they have

as possible in advance to make the event go smoothly. A scalloped potato dish is an easy dish to serve when entertaining. The chef suggests prepping it in a casserole dish and then putting it in the refrigerator. The extra time will enhance the flavor. “They probably taste better after hanging out in the refrigerator for a few days,” she said. The day of the event, put the casserole dish in the oven and bake. Top with crumbled pretzels in melted butter for crunch and serve. Selonke also recommends enlisting others to bring a dish of their choice. “As host, it’s lovely to spread the workload a little bit, and that can enhance the enjoyment,” Selonke said. “When you do the major items that may be difficult for people to bring — the roast, the turkey — invite people to bring a side or some other component. … You have an opportunity to get yourself put together and not look disheveled, (but rather) like the consummate entertainer.” Call Staff Writer Gena Johnson at (586) 498-1069.

trepreneur who also opened multiple restaurants, such as Brown Bomber’s Chicken Shack in Detroit. Barrow Jr. said everything is built around his father and his values. He said food can evoke strong memories long after people leave a restaurant. “Food is a through line in all of our lives,” Barrow Jr. said. “It’s how we celebrate, how we mourn and how we all come together.” Barrow Jr. said it feels surreal to see his childhood dream of opening a restaurant become a reality. A ribbon cutting was held Dec. 9 for the Joe Louis Southern Kitchen Southfield location. The first location opened in 2021 at 6549 Woodward Ave. in Detroit. Barrow Jr. said he and Cannon love Southfield and that it’s a vibrant community. He said it was the obvious choice for a second location. Cannon said being a part of and giving back to the community is a focus for him. He said he believes the restaurant will give people a great experience. “Bringing Joe Louis Southern Kitchen to Southfield is such a privilege, because it’s an iconic name to bring to the city,” Cannon said. “I think this is going to educate people on what Joe Louis stood for and why he has so many statues and monuments.” Born in Alabama in 1914, Louis moved with his family to Detroit when he was a child. Louis became the heavyweight champion in 1937 and held the championship until 1949, which is the longest period of

some char. Then take the vegetables out of the oven. “People would just walk by and grab them,” Dakoske said. “They taste like candy.” Dakoske, 53, has more than 30 years of industry experience. He works at a high-end restaurant in downtown Detroit where he is responsible for cold foods, appetizers and desserts. He believes going to school and studying to be a chef makes a big difference. “I would highly recommend anybody in the culinary industry go to school,” Dakoske said. “I’m on the other side of it now. I believe in the value of school.” Julie Selonke is a professional chef who has been teaching at OCC for 14 years. Her career spans nearly 30 years. Council members Charles Hicks and Ashanti Bland voted no on the site plan. During the meeting, Bland said she was concerned about potential pollutants coming from the site. “Compounded, I don’t think it’s a risk I want to take,” she said.

Hicks said that hearing from residents would add value to the project for Metrobloks. He said that a meeting could still be done as the data center goes through the stages of operation. “If you want to do business and collaborate with the city, having a town hall is awesome,” he said. “You can hear where the public is coming from, and they hear from you.” He said this may help bring some middle ground, clear up confusion and align everyone to move forward.
