Chefs share tips for entertaining during holidays BY GENA JOHNSON

METRO DETROIT — The holidays are a time to eat, drink and be merry. To make the most of the season, the Culinary Studies Institute at Oakland Community College — Royal Oak shared tips on how to make holiday entertaining enjoyable for both guests and the host. “I believe love is incorporated into the

food,” said Angelica Galeana, 24, a longtime cook and first-semester student at the Culinary Institute. “If you’re cooking and you’re in a bad mood, it’s not going to come out right.” A favorite for her holiday dinners and celebrations are pozoles, a traditional Mexican stew. Galeana said green pozoles are from southern Mexico near Acapulco and typically made with chicken while red See CHEFS on page 6A

CLAWSON — Clawson held a special City Council meeting Dec. 8 to interview applicants for the vacant spot on the City Council previously held by now-Mayor Susan Moffitt, and when the time came for a decision, the council unanimously chose Alec Speshock. The candidates up for consideration also included Scott Manning and Glenn Shepard. William Speshock Renshaw was supposed to be interviewed but did not show up to the Dec. 8 special meeting. All four candidates ran in the City Council election in November but were not elected. Speshock has been a resident of Clawson for four years and has been working with the city for two years, according to his application.
