How do you know he is…the one? You may have been asked this question by your parents, your friends, even yourself. The answer isn’t always perfectly clear; he may or may not be ‘ideal’ on paper; you may have known him for only two months or perhaps you’ve been hanging in there a good five years; he may be a cowboy while you were visualizing a business man. The so-called ‘signs’ aren’t always there, but somehow…you just know.

At Ceremony, we feel the same way about our Great List of vendors that we recommend. We take this vendor collective very seriously, which is why we don’t put arbitrary consideration requirements in an antiquated form. We don’t have a scholastic checklist to help us come up with an ‘A’ grade. We don’t even have a job application type form to fill out. You see, when it comes to choosing our Great List of recommended vendors, we believe there is no specific formula for choosing who we invite to join our family. Probably not unlike you, we take a looksie at Facebook, we inquire with their friends and colleagues and, most importantly, we get to know them by social networking the old-fashioned way (in person). In the end, we go with our gut. We just…know.

You will find that some of these recommended vendors have refined their businesses over the past twenty years, while others bring fresh ideas after having recently started their own businesses. Many of our recommended venues are on the AAA Five-Diamond Resort list; others include charming private estates and everything in between. What they all have in common is that we have a mutual respect for each other; we each genuinely want to see the other succeed; we envision a future together. Do those relationship qualities sound familiar with someone you know?

CUT is the only factor of a diamond that is determined by the human hand. It has nothing to do with the shape of the stone, rather the symmetry and proportion. If cut poorly, the stone will be less brilliant.

When planning, anticipating, or even daydreaming about your wedding, you look at thousands of pictures to see exactly how your big day might someday look. Yet have you ever wondered how brides know to choose the perfect photographer who thinks of all these clever ideas? Or perhaps how brides seem to have time to orchestrate such elaborate photo shoots, executed flawlessly down to the last detail? Chances are, they didn’t.

One burgeoning trend in wedding and engagement photography is the use of a stylist: someone who “creates a cohesive look (through fashion and props) that will tell the client’s love story,” says Wilmarose Orlanes, a stylist who recently partnered with photographer, Caroline Tran, and special event planner, Ngoc Nguyen Lay, to create a one-year anniversary shoot for Ngoc and her husband. This hot-air balloon shoot illustrates how a stylist is essential to a creative and cohesive photo shoot.

“Anyone can go shopping and pull together a bunch of things they like. It’s making the styling look effortless that takes skill,” says Caroline. Because this type of shoot takes so much time and effort, it requires couples to thrive in creativity, attention to detail and time (something often lacking in the wedding planning process). This is where a stylist is the perfect addition to your wedding planning team.

“Sometimes it takes only one thing to inspire an entire shoot,” said Wilmarose. “Small details, like finding out that Ngoc loved kids books... all sparked a fire that was as powerful and bright as the one that fueled our hot air balloon ride.” This is the role of a stylist, to contribute stylistically and conceptually to a photo shoot beforehand, pulling together props, ideas, the couple’s personality, and sometimes even locations to make the photo shoot; and the photographer, to tell the couple’s story.

To be “hands on” during the shoot is also essential for the stylist, as an extra eye for every detail. Some couples worry that with a stylist, it becomes less “spontaneous” and thus less romantic. Yet the result should be the exact opposite. “What’s romantic is the story that goes with the shoot,” said Ngoc, “if you can look at a picture and know something about a couple that you don’t actually know, that’s a good photograph. And that’s what the stylist helps do.”

How many dishes does a couple get to sample at a tasting?

We always warn our couples that they better come hungry! Our tastings vary based on the event, however, for pretty standard tastings we have them try 10-12 hors d’oeuvres, 2 salads, 2 entrees, and a dessert or two. If they are also doing a specialty cocktail, we will have those prepared, too. All of our portions are full-size and are presented to our guests in the exact manner they will be presented on their wedding day.

What is your favorite wedding menu?

Gourmet burgers and fresh-cut French fries! Guests get so excited when they see they are getting something other than chicken, mashed potatoes, and a vegetable medley. To finish it off, we served each guest a trio of mini milkshakes.

What do you do when a groom and bride (literally) have different tastes as well as distinctively different cultural backgrounds?

We do a fusion menu! This actually happens quite often. It is actually a lot of fun for us, because it gets us thinking outside of the standards, and allows us to create some pretty spectacular combinations.

This fusion can be displayed with multiple interactive stations highlighting both the brides and grooms individual requests. Or, we can do a seated dinner where we blend tastes and/ or cultures together on one plate. There is always something for everyone.

What trend do you get asked for the most?

We are still getting a lot of requests for miniature versions of people’s favorite foods. Who doesn’t love having multiple selections of their favorite foods in bite size form? We are also receiving a lot of requests for “farm to table” style menu selections. We fully support this movement and love working with the local farmers to purchase fresh, organic produce and proteins. Although these items are more expensive, it really makes a difference. One of our most popular “farm to table” items is our Jarred Heirloom Tomato salad. It is a locally organic salad consisting of heirloom tomatoes, avocado, charred citrus, smoked oil, and baby parsley, served in a latched hermetic Italian jar.

What is your favorite ingredient to add to a cocktail?

One of our new favorite items is whipped cream vodka. It is a great way to have a creamy taste, without having to use the heavy, calorie-ridden cream to beverages. One of our favorite drinks is the Creamy Orangesicle Martini.

What is the biggest misconception regarding wedding catering?

The food will be cold and rubbery. For many companies this is true, but we actually cook onsite and do not believe in ‘hot boxing’ food for hours before service time. It is very important for couples to ask where the food is made and how it is transported.

Please provide some great rehearsal dinner ideas.

Pick the cuisine from your honeymoon location and serve that at your rehearsal dinner. It is a fun way to further the excitement of the next day and the honeymoon that follows.

Do or Don’t?

Late night food truck? DO! What a fun way to end your evening. Again, something that is unexpected always gets the ‘oohs and aahs’ from the guests.

Just make sure you are working with a reputable one. It would be terrible if they didn’t show up.

Champagne toast? DO a toast, DON’T do the champagne! Most people don’t drink it. Do a fun specialty drink instead.

Cupcakes instead of cake? DON’T! Been there and done that.

How do you assist a couple in creating their menu?

First, we sit down with them to determine what their likes and dislikes are and how they envision their special day. Next, we present a menu based on the first meeting, make necessary adjustments and then have them in for a full tasting. It is during the tasting that we can really customize the menu to their wants and needs. All of our tastings are personalized and only include the couple, their family, and their coordinator.

Family style dinners? Don’t! One of the biggest misconceptions about family style dinners is that they cost less. FALSE! What is the most peculiar dish you’ve served at a wedding?

Split entrée of pine nut and basil seared gardein with lobster mushroom beurre blanc and peppercorn encrusted portobello fillets atop a bed of whipped potatoes with a yellow tomato béarnaise. It ate like the perfect chicken and beef filet menu, however it was entirely vegan. Guests couldn’t stop raving about the quality.

What trend do you get asked for the most?

First has been the shift to offering fun, exciting, maybe even a bit exotic foods throughout the entire event. Also, early 50% of our clients are opting to have a fun late night snack. Another more surprising trend has been a move from what were once considered “special dietary concerns” into a menu for all the guests’ enjoyment. Vegan meals, when done with creativity and care, leave even the most devoted carnivore with a new appreciation for what else is out there. Weddings are a great place to introduce folks to new flavor experiences!

How many dishes does a couple get to sample at a tasting?

At our quarterly “Taste of NYFC,” clients are invited to an open house of sorts where musicians will entertain, the tables and room will be beautifully decorated by some of our favorite florists, fanciful linens will adorn all the tables and our culinary team will wow them with “tastes” from our entire menu. In total, we will typically have 30 to 40 different items for them to enjoy – however this is not about tasting “their” menu – this is about gaining an understanding for the high level of quality and presentation that they can expect once we design their perfect menu. They can additionally arrange for a 1:1 private tasting to fine-tune their personal menu.

What is your favorite ingredient to add to a cocktail?

Alcohol! Not even picky sometimes. But seriously, we love to incorporate “fresh” into everything we do so fresh fruit juices make a huge difference.

Does your catering company have any unique presentation options for serving food at a wedding?

If it can be done, we can do it. Orchestrated, choreographed, with entertainment or without. Our most “unique” is providing the correct ratio of servers to guests, making sure the kitchen can get the food out in a timely manner and that the service is impeccable. Shame that this would be considered unique I guess.

Do or Don’t?

What is your favorite wedding menu?

As caterers who double as event designers, our favorite wedding menu is that one that perfectly reflects our client’s vision. As we tell every inquiring wedding client, “This is your event, not ours.” Options are limitless.

What do you do when a groom and bride (literally) have different tastes when it comes to their menu? And for couples with distinctively different cultural backgrounds and guests?

When someone quipped, “variety is the spice of life,” there was a reason they utilized a food reference. Split entrée’s are an easy solution – however if true variety is the order of for the day, offering a grazing or station event is the way to go. The dining becomes a part of the party. Guests can mix and mingle, chefs will be preparing unique dishes to order at display cooking stations and once the dancing begins, the party will have already been in full swing.

Late night food truck: Absolutely not! Tried many times and it has frustrated so many clients, we’ve begun discouraging it. While the street food concept is here to stay and some of the food is absolutely fantastic, the experience typically does not compliment the event. Instead, we created our own Late Night Bites menus offering many of the same dishes but prepared in concert with the rest of our clients’ expectations. There are no long lines, no inconsistency from guest to guest and no separating guests from this fantastic environment you’ve created so that they can go stand in a parking lot or field somewhere.

Cupcakes instead of cake: Cupcakes are still a part of the whole but not the only alternative. A lot of folks are opting for a “ceremonial” cutting cake and then offering fantastic mini-dessert displays for guests to enjoy.

Family style dinners: Depends on the venue. A lot of people love family style but you must have the room for the right size tables. But don’t think that family style means less money – especially if it’s off premise catering where everything needs to be brought in for the event and service.

Everyone knows about the standard “Our Wedding” photo album.

Most likely you grew up thumbing through your parents’ or grandparent’s books, laughing at mom’s eighties sleeves or awing over how young your grandmother looked. For a long time that was the only way to cement the special day. The sounds (laughter, crying, clinking of glass) – and motions (the veil in the wind, Uncle Joe’s zany dance moves) were only vaguely replicated and invoked. However, that’s all changed. Now instead of just getting frozen snapshots, brides are increasingly turning to wedding videographers to capture their day in all its vivid life and color.

“It’s important to capture the most moving moments, like the bride’s parents seeing her for the first time or the kiss at the end,” says Gor Gevorkyan, wedding photographer and videographer for Royal Gor. “Video does that in a way that photography cannot.”

And, in case you were wondering, it’s not like handing an iPhone to your cousin with the record button on. Brides who hire videographers can expect a stunning end product that flawlessly run through the highlights of their day. Videographers give the same precision and care to editing wedding videos that filmmakers give to movies or commercials.

“When done right the resulting DVD is awe-inspiring,” Gevorkyan says. He suggests reviewing a videographers work prior to booking and getting a sense for their ability. Once you feel confident, book them knowing you’ll get a treasured memento of the day – one that captures every aspect.

Your photographer should give you a little direction here and there, get you in the best light, etc., but mostly it’s about letting you be yourself and having a good time with each other. During the engagement session, there is no pressure. It’s a great time to take a break from the hectic wedding planning and just have fun!.

When we photograph our couples, we start two to three hours before sunset, earlier if we’re in the city, later if we’re at the beach. That’s the best light of the day! The session usually takes about two hours and we photograph as much variety as we can, sometimes with a change of clothing. When we go out of town, we usually shoot much longer, depending on where our couple wants to go. In New York we typically start around noon in Central Park, hit the Brooklyn Bridge at sunset and usually end up at Times Square with the awesome lights in the evening. Along the way, we’ll grab some food, ride the subway, walk around, shop and everything you’d want to do with your favorite person in a great city.

The main thing is to let your engagement session be a fun experience! Plan something a little different and enjoy your time together. You’ll have an unforgettable day and the images to prove it!

If you’re like most brides, music means a lot to you and your fiancé. “We had one couple who had very diverse musical tastes,” Muchnij recalls. “The groom liked this unique music. He wanted his guests to experience something that they hadnever heard before. Knowing the groom wanted something different, Muchnij’s team crafted an eclecticlive infused mix for the groom that was played throughout dinner. Need Some NRG? NRG (yes, it is a play on the word ‘energy’) isn’t one of those entertainment groups that come around often. They are chameleonlike, performing every musical genre from the twenties to Lady Gaga.

Their repertoire is endless. If you want Broadway show tunes, no problem. Love Frank Sinatra? They’ll fly you to the moon.

Looking at NRG now, with their stunning costumes, flawless musical execution, and instant charisma, it’s hard to believe the entire company grew out of one duo.

“It was my wife and I,” says Andy Salmonsen. “We were playing gigs and we just blossomed from there. We added three girls then some more musicians and before you knew it, we had the ability to perform a thirty-five person orchestra.” Besides just growing in numbers, NRG stayed on the cutting-edge of the music industry by adapting to each style.

“Our strength is really in our diversity,” Salmonsen says. “We have a wide array of performers. Each of them have different strengths and they bring that to NRG.” It’s true, a notion confirmed by one look at their lineup. They have a Puerto Rican drummer who brings the sensual pulse of Latin music for brides wanting a tango. There’s the former Miss Mississippi who can sing ‘Il Bambino’ like it’s closing night at the New York opera. Rounding out the band even more is their horn player, a musician who cut his melodic chops with Ray Charles. Beyond their impressive resumes, NRG is mostly known for its chemistry. Years of playing together and their close-knit community makes for some dynamic performances.

“We really are a family,” Salmonsen explains. “And that translates. We appreciate each other and we appreciate each and every family we play for. When we’re singing ‘Butterfly Kisses’ and we see a dad dancing with his little girl who just got married, we have to hold it in. Because we are right there in the moment with you.”

And that’s what makes NRG meaningful. They don’t go on and on about their celebrity clientele or brag about the big-name gigs they’ve played. They focus on the heartfelt moments and their gratitude at being able to facilitate them.

“Those are the times that stay with us,” Salmonsen says. “That’s why we do this.”

There are the princess brides – they want the whole Cinderella horse and carriage bit. There are the trendy brides. But for the more, shall we say, restrained class of bride there is something else. Vintage cars and classic limos. Sleek vehicles that add style to any wedding. With Kate Middleton herself arriving at her wedding in a vintage Rolls Royce, it’s an entrance any elegant bride would want.

“The car can really make the day,” says Sherry Walters of Classic Limos, a Southern California vintage limousine company.

“There are so many ways to incorporate the vehicle into the wedding, from photos to grand exits and entrances.”

Classic Limos itself boasts a fleet of fourteen cars collected from various parts of America and Canada. Its crowning piece is an original 1927 Packard, one of the few in the world available for hire.

When reserving a vehicle, there are a few things to consider, from making sure the limo you rent is mechanically safe to having the driver show up on time.

“Select a licensed and insured limo company,” Walters suggests, noting that more than 90% of the vintage limo companies in Southern California operate without a PUC limousine license and valid insurance. She also encourages brides to see the car prior to the wedding day to ascertain its condition and to work with a company that promises arrival times.

“Being late is the number one complaint against limo companies,” Walters says. “Choose a company with an on time guarantee that will email you in advance.”

For stylish brides who have a penchant for nostalgia, the vintage car is the way to go.

Meeting for the first time at their friend’s engagement party, Kelly waited patiently in front of the restaurant for Erick and called him when she first arrived. He didn’t answer right away, so she waited for him, in anticipation. Moments later he walked right past her while calling her cell. Kelly picked up the phone and said, “Turn around.” As soon as he spotted her, she said into her cell, “I’ve been waiting out here for five minutes,” and hung up the phone with a smile on her face.

Albemar had it all planned: he would propose to Vanessa at a restaurant with a gorgeous Tiffany engagement ring and have a willing waitress record it all on video. LOVE STORY

It was love at first sight for John (part-time college student and full-time homemaster) when he met Jia (a Pro-AM Latin dancer) at a friend’s karaoke outing. He was mesmerized by her beauty and thought she looked like an angel, with an illustrious aura surrounding her. Not being much of a risk-taker in the world of dating, John quickly sought his friend’s advice so he could woo this girl of his dreams. By their third date, he asked her to be his girlfriend and they have been living happily ever after, ever since.
