atrick Dempsey personifies California cool with a house and garden full of kids, dogs, donkeys, chickens and organic vegetable beds—a far cry from the sterile hospital world he inhabits as Dr. Derek Shepherd on

“Grey’s Anatomy.” His life out west is pretty idyllic and one most men would dream of (especially when “back to nature” is fused with a couple of very cool cars).

Our cover subject represents what we are trying to do in every issue. We like to celebrate the contradictions in life: good guy with a bit of an edge; an intellectual who can still hop on a motorcycle at the end of the day. You get the idea. It is the “mix” that makes it more interesting. Why be predictable? T

his past summer, Michael Voltaggio leaked the juicy news: He would be rolling out a sandwich shop…within a week…a few doors down from his Melrose Avenue fine-dining project, Ink. “We’d been unloading and unpacking [for Ink], and our sous-chef was complaining that we didn’t have enough space, and the lease was available,” explains the 33-year-old toque. “We thought it would be a waste to use it just for storage.”

Following a 15-day build-out whirlwind, Ink.Sack proffered its first four-inch heroes (“four inches small, as some would say”). Of course, this is a Voltaggio operation, so the $4 to $6 menu still reads like a glossary of au courant fare: the chicken is chicken mousse, the beef is a tongue “reuben,” and the pork is pork cheek bánh mì. To make Ink, his “modern L.A. restaurant,” a reality, Voltaggio found a friend and business partner in world-class art collector and former CAA co-founder and Disney president Michael Ovitz. In particular, they were interested that the interior’s aesthetic—now comfortably saturated with graphite tones and exposed woods—wouldn’t obscure the pieces on the walls: a print by Chuck Close, charcoal by Tilo Baumgartel and a one-of-a-kind knife stencil by Matthew Brannon, among others. “Michael put together a catalog and handed it to me and said, ‘Choose whatever you want.’”

The other artistry resides on the plate. At the extant eight-seat omakase bar from Hamasaku (the location’s previous incarnation), it’s chef’s choice for up to a dozen courses, two seatings per night. Everywhere else, the à la carte menu items are meant to be shared.

A few of those signatures will appear in Volt.Ink (Weldon Owen, $40), his first recipe book, out about a month past Ink’s September 16th opening. Through Voltaggio’s consulting collaboration with Williams-Sonoma alongside his brother (and noted chef) Bryan, he was introduced to publisher Weldon Owen. “With WilliamsSonoma, it wasn’t ‘Here’s a blender, smile!’ We wrote recipes. I went to the grocery as if I were the customer. It was great for [this] book and menu testing.”

And while some dishes call for gadgets like dehydrators and thermal immersion circulators—he was the chef at The Bazaar by José Andrés, after all—for “Pulpo alla Gallega, Buttered Popcorn, Piquillo Paper,” the farthest you’ll have to reach is into the desk drawer for a hole punch. The four-passenger sedan has a top speed of 125 mph and will accelerate from zero-to-60 in 5.9 seconds. Anaheim-based Fisker Automotive explains, “in real-world driving,” the Karma can travel the equivalent of 100 miles per gallon. A true plug-in, its lithium-ion battery powers the car for 50 miles. After that, the internal combustion engine gives energy to the electric motors for another 250 (so much for range anxiety). And it’s not just Earth-friendly in the way of fuel consumption; the Karma’s top-line interior option uses animal-free materials like faux suede and salvaged California wildfire hardwoods— enough for Leonardo Di Caprio, the first to buy one, to trade in his Prius. his dish has roots in Britain, where oysters are typically wrapped in bacon, broiled, and served on toast. But in the States, it is seen as a sort of upscale version of the familiar pastry-wrapped frank known as pigs in a blanket, except, well, the pig is the blanket. These angels are the most

popular appetizer on the menu at Anchor & Hope. Unlike the Brits, we deep-fry the baconwrapped oyster, which not only cooks the bacon quickly but also makes it exceptionally crispy. The pronounced mustard flavor in the rémoulade works beautifully with the

smokiness of the bacon. This rémoulade recipe is a good one to have in your arsenal.

It’s perfect for shrimp cocktail or as a dipping sauce for deep-fried seafood.

Angels on Horseback with Rémoulade Makes 24 pieces; serves 8-12

2 large egg yolks ¹⁄³ c. canola oil ½ c. chopped celery ¼ c. chopped fresh flat-leaf parsley ¼ c. chopped fresh tarragon Juice of ½ lemon 2 T. ketchup 2 T. Worcestershire sauce 1 T. Dijon mustard 1 T. whole-grain mustard 1 T. malt vinegar 1 T. minced garlic 1 t. sweet smoked paprika ½ t. celery salt 1 T. capers, rinsed

gradually add the celery, parsley, tarragon, lemon juice, ketchup, Worcestershire sauce, both mustards, vinegar, garlic, paprika, celery salt, capers, and gherkins and process until well incorporated and smooth.

Pour the oil to a depth of about 3 inches into a deep fryer or deep, heavybottomed pot and heat to 375°F. While the oil is heating, wrap a half bacon slice around each oyster and

To make the rémoulade, place the egg yolks in a food processor and process for 1 minute. With the machine running, add the oil in a slow, steady stream, processing until emulsified. Then, with the machine still running,

secure with a toothpick.

When the oil is ready, working in batches to avoid crowding, add the wrapped oysters to the hot oil and fry for 2 to 3 minutes, or until the oysters are golden and the bacon is crispy. Using a slotted spoon, carefully transfer the oysters to paper towels, then keep them warm while you fry the remainder.

Arrange the oysters on a platter, drizzle with the rémoulade, and serve right away. •

his dish has roots in Britain, where oysters are typically wrapped in bacon, broiled, and served on toast. But in the States, it is seen as a sort of upscale version of the familiar pastry-wrapped frank known as pigs in a blanket, except, well, the pig is the blanket. These angels are the most

popular appetizer on the menu at Anchor & Hope. Unlike the Brits, we deep-fry the baconwrapped oyster, which not only cooks the bacon quickly but also makes it exceptionally crispy. The pronounced mustard flavor in the rémoulade works beautifully with the

smokiness of the bacon. This rémoulade recipe is a good one to have in your arsenal.

It’s perfect for shrimp cocktail or as a dipping sauce for deep-fried seafood.

Angels on Horseback with Rémoulade Makes 24 pieces; serves 8-12

2 large egg yolks ¹⁄³ c. canola oil ½ c. chopped celery ¼ c. chopped fresh flat-leaf parsley ¼ c. chopped fresh tarragon Juice of ½ lemon 2 T. ketchup 2 T. Worcestershire sauce 1 T. Dijon mustard 1 T. whole-grain mustard 1 T. malt vinegar 1 T. minced garlic 1 t. sweet smoked paprika ½ t. celery salt 1 T. capers, rinsed

4 gherkins, chopped salt and ground pepper

gradually add the celery, parsley, tarragon, lemon juice, ketchup, Worcestershire sauce, both mustards, vinegar, garlic, paprika, celery salt, capers, and gherkins and process until well incorporated and smooth.

Pour the oil to a depth of about 3 inches into a deep fryer or deep, heavybottomed pot and heat to 375°F. While the oil is heating, wrap a half bacon slice around each oyster and

To make the rémoulade, place the egg yolks in a food processor and process for 1 minute. With the machine running, add the oil in a slow, steady stream, processing until emulsified. Then, with the machine still running,

secure with a toothpick.

When the oil is ready, working in batches to avoid crowding, add the wrapped oysters to the hot oil and fry for 2 to 3 minutes, or until the oysters are golden and the bacon is crispy. Using a slotted spoon, carefully transfer the oysters to paper towels, then keep them warm while you fry the remainder.

Arrange the oysters on a platter, drizzle with the rémoulade, and serve right away. •

urning off Pacific Coast Highway, Patrick Dempsey maneuvers his silver Mercedes SLS AMG into an isolated corner of the Malibu Lumber Yard parking lot, releases the gullwing door straight into the sky and hops out. He’s just returned from the Montreal 200 race (he finished in 11th place after getting hit from behind just 15 minutes after the green flag). “We had a great start at Daytona, finished third after 24 hours. And after that, [we] had a disastrous season,” says the 45-year-old actor.

“I’m driving better than I ever have but don’t have the results to show it.” Dempsey Racing, a four-man team assembled in 2005, is a contender on the Grand-Am circuit, making appearances on the big tracks at the Indy 500 and Le Mans, where Dempsey clocked in at 190 mph in a Ferrari 430. With lawyers and agents over his shoulder, though, he’s more careful about admitting his off-track records. “Well, the Mercedes is pretty fast.” (Top speed in the AMG is electronically capped at 196.7 mph.)

Currently filming the eighth season of “Grey’s Anatomy,” the show’s producers allow Dempsey to drive despite the enormous insurance risks. In fact, his alter-ego Dr. Shepherd is a large part of the reason he’s able to compete. In a racing program that costs between $8-9 million annually to run (“depending on how many cars you crash,” he adds), sponsors were attracted to McDreamy’s visibility. The remaining sponsorship and prize money goes to—where else—Seattle Grace’s real-life counterpart: the Children’s Cardiac Center.

His other beneficiary is The Patrick Dempsey Center for Cancer Hope and Healing in Maine, his home state and where his mother is recovering from her fifth bout of ovarian cancer. Dempsey’s chronic worry and uncertainty over her condition prompted the creation of a center, now run by his sister, that offers “patient navigators” to mediate between doctors and distressed relatives.

His crash pad back east is an 1834 ship captain’s home in the sleepy island town of Harpswell, which he says reminds him of his childhood. As a teenager, Dempsey held the state slalom ski title. One day, to practice his balance, he picked up a unicycle. His high school shop teacher—a former Green Beret who organized a local vaudeville group on the side— took notice of his student’s coordination and suggested Dempsey start juggling for the group. “Yeah, I kind of ran away with the circus,” says Dempsey of dropping out of high school to head for New York to act. “I don’t recommend it for everyone. “I’VE ALWAYS LIKED DOING THINGS OUT OF THE NORM,” SAYS MARK, WHO WAS DETERMINED TO BUILD A NEW HOME AS AN HOMAGE TO THE ORIGINAL

interior designer Jamie Bush, they came up with a set of rules to establish its design. “We debated how one surface would meet and interact with another, what would appear to float and what would not,” says Andrea. The planning process alone took three years, and the foundation work another three (including two years to install a network of pillars beneath the house to anchor it to the bedrock). “At some point you realize complaining won’t make it faster and you just learn to deal,” says Andrea, who wanted the kitchen and its adjoining dining area at the center of the house. Another consideration was the multi-functionality of walls as visual screens, built-ins and to hide the SMART panel in the kitchen.

In all, from blueprint to completion, construction took a little longer than your average new-build. But that’s fine, says the upbeat couple. “Even though we didn’t move in until 2008 [a decade after buying the property], we learned to be patient and that getting every detail right was worth it,” says Mark.

He’s right; the finish is beautiful. The edited selection of materials—slate floors, redwood panels, stone walls, steel beams—repeated throughout the house lends simplicity and warmth. “We acquired the wisdom of minimizing and not being too busy,” says Mark. The neutral canvas allows for rich, textured interiors with shots of color. There’s a play of serious, museumquality vintage pieces with contemporary ones, together with ethnic and handcrafted elements that reference the couple’s love of travel, plus dashes of pure caprice. “It really expresses who we are,” says Andrea.

When Mark’s not in his study or Andrea in the Bulthaup kitchen, they decompress in the family room, in front of the TV. “One of my tests for choosing the furniture was whether I could take a nap in it,” Mark jokes. However, their love of skiing, fishing and hiking is always leading to new adventures in the surrounding countryside.

The couple, married for 28 years, appears content in the new-old home. Adds Andrea, “It feels like a piece of art set in nature—like living in a dream.” •

ntering Mark and Andrea Meyerhofer’s home in the foothills of the Sierra Madre Mountains is like stepping back in time. But this mid-century marvel has a secret: It’s actually a 21st-century creation.

They relate this tale while perched on the white leather Poltrona Frau Kennedee couch in the living room, fittingly sipping 7-and-7s (whiskey and 7-Up). The family purchased the timberframed house that once stood on this plot in 1998. “We fell in love with its simplicity, and as lovers of nature, the way it opened up to the backyard,” says Andrea. Mark, an electrical engineer, and Andrea, a fund-raiser for Childhelp for the prevention and treatment of child abuse, set about tweaking and extending the home themselves but realized the disrepair ran too deep.

Decamping to a small rental along with their two sons (Kurt, now 22, and Chris, 20), the couple let professional architects move in to remodel—bumping out the kitchen and adding a family room.

A year in, disaster struck. “We discovered an alluvial sediment that flowed down the mountains over centuries and collected beneath the lot, leaving unstable silt,” says Mark. “There was no choice but to demolish the property and start from scratch.”

While a grim prospect for most, it was one the couple embraced as an opportunity. “I’ve always liked doing things out of the norm,” says Mark, who was determined to build a new home as an homage to the original.

And not just in looks, either. Andrea and Mark insisted on the sort of detail that would have made Frank Lloyd Wright proud.

“The post-and-beam construction of the first structure demanded a high level of perfection and finish,” says Mark.

’ve been asked, time and again, “Who should I buy right now?” It’s a tough question to answer (especially not knowing the inquirer and his or her tastes). Even though I advise on private and corporate collections professionally, art is and always should be a subjective, personal experience.

And because I never advocate purchasing an artwork solely on the basis of value appreciation (I bullishly believe, however, that fine art accrual will always be a financially rewarding undertaking if you follow your instincts), I offer no sure bets for those in search of the next big dot-com with a paintbrush, or Groupon equivalent.

ALEX PRAGER has a profound love for dress up, and it shows.

Featuring wigs and vintage clothing, her photography of impossibly styled female subjects has an old Hitchcock-Hollywood glamour to it. At the same time, however, there is a very fresh and weighty, dramatic feel to her compositions. The self-taught Prager, who works from her studio in Silverlake, possesses a naturally keen eye for mise en scène, using key lighting to balance her subjects, all while giving viewers a secret glimpse into a story that is either just beginning or just ending. Her photography always seems to remind me of David Lynch and Edward Hopper in both the vibrant color palettes, which are at the foundation of

Chicago-born AMANDA ROSS-HO has been firmly ensconced in the L.A. art scene for a while now, and her name has recently been on the rise. The past few years, I’ve found myself always eager to see what she’ll do next. There’s often a lighthearted humor to her creation, especially when she plays with scale (as seen with My Bag, or Inbox, 2007, the oversized cat litter box piece recently exhibited in the “Human Nature” show at LACMA). She tops this quality with a deliberately soothing, flat color palette, wherein she explores negative space with a certain moody gravitas. My favorites among Ross-Ho’s works are her signature hand-drilled peg boards, over which she layers imagery and text to create a type of blueprint of her visual discourse. The phrasing of these graphics and text (in print and/or hand-drawn) seems to pose some sort of riddle to the viewer, and in doing so, her pieces are simultaneously striking and embedded with a enigmatic resonance that closely examines what is seen and unseen. MARK BRADFORD has, without question, become one of the hottest L.A.-based artists to emerge on the global contemporary scene, and the attention is well deserved. As a native Angeleno who first started painting signs for his mother’s beauty shop, Bradford now has a studio warehouse in Leimert Park, where he creates large-scale Abstract Expressionist works by stacking textures, paint and paper, then deconstructing them, layer by layer.

Bradford likes to “unearth” images by continuously adding and subtracting. This process eventually varies surface textures,

and they appear to be aged by decades; compositions often look like scarred, futuristic, color-coded maps. He likes to use found materials—your basic discarded L.A. advertising detritus of flyers, posters, leaflets, signs—adding extra depth to the DNA of the work, and also excavating layers that exist beneath the surface. There is a power to these compositions that hits you from the first time you see them. And it has caught on: People are fighting to acquire his works, and every time I see one come up, it goes almost instantly. They’re very identifiable in collections, and there seems to be a permanence to these pieces which continues to indicate that Bradford fever isn’t going to taper off any time soon—if ever. pinocchioisonfire.org.

Currently one of my favorite working artists, MARK RYDEN is a painter’s painter with heaps of skill and an intense style all his own, drawing inspiration from the subconsciously familiar accents of Bernini to the landscapes of Beirstadt to mid-century magazine covers. From his home/studio in Eagle Rock, he paints pictures incorporating everything Gothic, Baroque, Surrealist, Modern and beyond. And through extensive historical research, Ryden brilliantly combines influences to explore nature, fantasy and dreamscapes, often with virginal creatures at the center of focus, and a certain dark whimsy permeating the picture’s story.

Because he is a classically trained painter who does very few pieces per year (working meticulously with finishing strokes executed under a magnifying glass), his artwork is often hard to come by.

Many collectors have begun to scramble, and have started grabbing onto his drawings as well (in fact, five original ones unveiled by

the Michael Kohn Gallery at Art Basel last December all sold on opening night). Adding to his growing attention, Taschen is releasing a collectors’ edition tome of his work this fall, and he has his first major show since “The Tree Show” coming up in March, 2012. An iconic Angeleno, fixture of the Venice art community, and overall consummate great guy/talented artist/complex genius, RAYMOND PETTIBON continues to be one of my favorites, local or otherwise. I discovered Pettibon’s work when I moved to L.A. in 2000 after graduating from college, and I was first drawn to the raw grit of his illustrations. They were all things punk rock: unvarnished, unfiltered and unwieldy. Furthermore, his work often creates a conversation with the viewer—sometimes geo-political, sometimes sexually provoking and other times just plain ambiguous or comically self-deprecating. He consistently has a gifted way of expressing mystic truths through winding text in, around and over imagery that leaps off the paper. What I especially like about Pettibon is that he is prolific, and because he’s addicted to his craft, there is a healthy amount of original work in the marketplace. This enables a collector to pick out and assemble multiple pieces containing the various goto Pettibon subjects (Gumby, Surfers, Baseball Players, Hearts, Bibles, Animals, Trains, Planets, etc.). I recommend a mix of everything. They’re like potato chips; just one never really satiates. It’s about the sum, so get your hands on four or five minimum, and hang them all on one wall together (at varied levels, salon-style). ou may not know the name of this one stretch between 54th and 56th Streets in Newport Beach, but perhaps you’ve seen it on a few archival covers of Surfer, or in the innumerable photos taken of it in the early 1980s. The year-round break earned many monikers back then—Kodak Reef, Hottest Hundred Yards, Studio 54, Echo Beach—for the scene was a popularity incubator that would influence surf culture for years to come.

Zinka nosecoats were only the tip; there were fluorescent polka-dot twin-fins, ketchup-and-mustardhued stripes, rainbow wetsuits, wild hairdos. Hello, 1980s! Groms and pros sporting audacious New Wave looks shattered ’70s style with each run on curling glass. On land, crowds gathered to watch what writer/ former pro Jamie Brisick deems a “veritable skate park”—all while photographers snapped away.

Some lensmen, like Mike Moir, would tread water patiently beside the crashing barrels. He was there to capture the surfers—not the waves—and, in the shot, as many brand labels as possible on their sticker-studded shortboards. In this “surf ghetto,” logos were like meal tickets; wave riders were paid by companies per photo (cover shots, $500; small images, $10).

Thirty years later, compiling a most telling history and photo-essay in The Eighties at Echo Beach (Chronicle, $35), Moir and Brisick reflect on the important life and culture behind what came to be known as the “photo surfer”—low-key locals who would be future stars. Among them: Danny Kwock, Preston Murray, Jeff Parker, Richie Collins and John Gothard. Tom Curren and a young Kelly Slater hung out and surfed the break, too. Echo kids had to fight for technical status, but time has settled the challenge.

Designers and new brands had a de facto runway, giving birth to Costa Mesa’s “Velcro Valley” as businesses grew. Long before his scribbled signature adorned T-shirts on every early ’90s teen, Shawn Stüssy was shaping boards and Richard Woolcott launched Volcom. Quiksilver’s American roots, planted by Jeff Hakman and Bob McNight, began here (“Echo Beach” was a loud, jockey uniform-reminiscent line).

The successes of Rip Curl, Peter Schroff, Lance Collins, Bob Hurley and Mark Rich would continue to affirm that the trendsetting power of Echo Beach was anything but a castle in the sand. •

Next month, Sebastian Copeland will embark on a transcontinental crossing of Antarctica’s 2,300-mile ice sheet over an estimated 85 days. The UCLA Film School graduate has captured countless scenes of his frozen adventures (last year, Copeland and partner Eric McNair-Landry kite-skied across the Greenland ice sheet, covering an astounding 370 miles in a 24-hour period) providing evidence of a degrading climate. The Sedna Foundation, Copeland’s notfor-profit organization, is the perfect vehicle to address the area’s temperamental ecosystem where Arctic oil-drilling endangers the polar bears, arctic foxes and migrating whales of this frigid expanse. MIKE HORN YOUNG EXPLORERS PROGRAM Mike Horn scores one for the kids with his Pangaea Young Explorers Program. Started in 2008, the four-year-long journey spans the seven continents, covering an estimated 100,000 miles on a solar-powered, 115foot sailboat. The multi-part expedition comes after Horn’s harrowing 2006 trek to the North Pole in the region’s forbidding permanent darkness. In September, 2010, Horn enlisted some eager students for a coastal cleanup at beaches in Encinitas and La Jolla. His real-life education began in the big city landing the role of David, the gay teen, in Harvey Fierstein’s original, Tony award-winning Torch Song Trilogy. After Dempsey’s film debut in 1985 with the comedy Heaven Help Us, the rising star quickly became the go-to boy next door of the 1980s with dramatized teen hits Can’t Buy Me Love, Some Girls and Loverboy.

He never completely disappeared, but for the better part of the ’90s, Dempsey’s career hit its nadir with a handful of made-for-television movies and supporting roles.

says matter-of-factly. He became a father (daughter Tallulah Fyfe was born in 2002), started racing, and he was landing better gigs (Sweet Home Alabama, 2002).

His comeback was officially sealed as Dr. Derek Shepherd on ABC’s new hit show, “Grey’s Anatomy,” with subsequent roles in Enchanted, Valentine’s Day and Transformers: Dark of the Moon (which topped $1 billion at the box office).

Two years ago, Jim Jordan, one of Dempsey’s sponsors at Mazda, handed the actor a copy of Garth Stein’s best-selling novel The Art of Racing in the Rain. “It’s all my passions in one story. It’s about a race car driver and has a lot to do with battling cancer and surviving life,” he says.

Dempsey purchased the rights to the book and on this particular afternoon, he has a meeting with Universal to finalize a director, hoping to have the adaptation completed within the year. Filming will take him back to his on-screen home: Seattle.

It’s one of the only projects Dempsey will allow to take him away from his family, an Irish clan which now includes 4-year-old twin boys Patrick Sullivan and Darby Galen. They live just down the road from the Lumber Yard in a modern Frank Gehry masterpiece—the architect’s first project for friend and painter Ron Davis.

Built in 1972, it’s the perfect fusion of Japanese and vernacular elements…with the addition of an Airstream in the backyard that doubles as a guest room (“sort of a nod to Shepherd’s place, you know?”).

It’s also a nod to Dempsey’s first-rate car collection, which started with a 1963 356 Porsche convertible. “I bought it off the street in Santa Monica from a woman who was doing ADR for Top Gun. My sons will appreciate it one day,” says Dempsey. He’s also looking to expand his watch collection: “If you win the 24 Hours of Daytona, you get a Rolex. I don’t want to buy one. I want to win one.” •
