Hello Extension Friends and Season’s Greetings!

Aside from the chill, this is one of my favorite times of the year. A time for celebration and family; joyful giving, gratitude, and hope.

Last month, we thanked our outgoing executive committee board members Robert Kaplan, Amy Erlwein, and Klu Padu, each of whom led CCE Sullivan through two of the most unusual years we have experienced together as an organization and a community. I thank them from the bottom of my heart for their steadfast leadership and mentorship as we have so far, successfully weathered the global disruption of the pandemic.

In addition, we welcome returning board member Dara Smith, and new board members, Michael Bel, Freda Eisenberg, Gary Silver, and Justin Sutherland. With a variety of skill sets from finance, to agriculture and food systems, to community based volunteerism, health and wellness, education and youth development, and more, I’m looking forward to working with the latest iteration of leadership at CCE Sullivan.

DAIRY INDUSTRY STRATEGIC PLANNING PROCESS FOR DELAWARE, SULLIVAN, AND ORANGE COUNTIES: FAQ Submitted by Ashley Tully, Ag Program Coordinator

What is the Project?

Cornell Cooperative Extension of Delaware County has been successful in obtaining funding from NYS Department of Ag and Markets to conduct a Dairy Industry Strategic Planning Process for Delaware, Sullivan and Orange Counties over the next 18 months, in collaboration with CCE of Sullivan and Orange counties.

Why the Project?

• The last two years have seen a rapid change in farm demographics within these three counties, especially as external factors not previously present such as thinning milk markets and production quotas have come to bear.

• We believe that left to market forces alone, the dairy industry would not likely choose to source milk from this region.

• Despite these demographics, the dairy industry remains a very important economic engine for this area, one worth fostering.

motivated to identify all of the ways that the counties in this region can support maintaining a viable dairy industry, and analyze, summarize and prioritize these strategies in a plan for each county and the region. This will be done via a strategic planning process.

What is YOUR role in this Process?

• We are seeking local dairy farmers and key agency personnel to serve on the Dairy Task Force for each county.

Members are committing to approximately four (4) meetings over the next 12-18 months.

Dairy farmers will be compensated for their time spent at these meetings. We are looking for Task Force members who have a positive attitude about supporting the local dairy industry, who are willing to be creative in developing local solutions, and excited about being part of process to accomplish this, and willing to collaborate with others in doing so.

What will the Strategic Planning Process look like?

• We are implementing a planning process that is locally driven in each county, engaging local stakeholders, especially farmers in the process. The process will be facilitated by a professional consultant who will engage these stakeholders in a Dairy Task Force in each county, as well as across counties over the 12-18 months. The consultant will lead the task force members through a process of identifying and evaluating all possible strategies that could be implemented in each county and across the region to support the local dairy industry.

What Does a Checkup Involve?

Wells should be evaluated annually by a licensed or certified water well systems professional.

• A flow test to determine system output, a check of water level before and during pumping (if possible), pump motor performance (amp load, grounding, line voltage), and pressure tank and pressure switch contact.

• An inspection of well equipment to assure it is sanitary and meets local code requirements.

• A test of water for coliform bacteria and nitrates, and anything else of local concern. Typical additional tests are for iron, manganese, water hardness, sulfides, and other water constituents that cause problems with plumbing, staining, water appearance, and odor.

Additional tests may be recommended if water appears cloudy or oily, if bacterial growth is visible on fixtures, or water treatment devices are not working as they should.

Introduction to Organic Certification- October 14th: There were 35 registrants for the Intro to Organic Certification course taught by NOFA NY Director, Jessica Terry. She detailed the NYS Organic certification process, regulations and standards, marketing, projected costs, and funding availability.

Wholesale Market Readiness for FarmersOctober 28th: Liz Higgins, Ag Business Management Specialist with Cornell University, and Michelle Proscia, Agriculture Educator with CCE Sullivan educated 22 registrants on how farms can prepare for selling on the wholesale market. This includes, labeling, recordkeeping, standardization of product, and marketing.

FARM TO SCHOOL ASHLEY TULLY

October was Farm to School Month. As part of this nationwide effort to promote Farm to School, CCE and Sullivan County students participated in educational programing about nutrition and local agriculture while hosting events focused on eating more NYS food.

On October 21st, TriValley, Livingston Manor, Sullivan West, and Roscoe School Districts participated in the “Big Apple Crunch” challenge founded by FarmOn! Foundation, to show how big their student’s bite can be. At 2pm, students across these school districts took a bite into their NYS apples. Students also learned about different varieties and easy recipes for cooking with apples.

stations where they heard directly from farmers and food service providers about where their food comes from and why nutrition is important to a healthy and happy life.

As part of the Farm to School effort, CCE has worked with Livingston Manor and Roscoe Schools, to purchase local produce and meat from the Catskills Food Hub. In 2021, with additional food processing equipment, these school districts have increased their food processing power and purchased over $14,000 of local farm products for their student body.

CCE Nutrition staff were also busy partnering with local school districts, Sullivan Renaissance, and the SNAP-Ed program teaching students about the veggies grown in the Catskills Edible Garden and how to create healthy and nutritious meals using seasonal ingredients.

Winter squash was developed from wild squash originating in the region between Mexico and Guatemala.

ONE CUP OF COOKED WINTER SQUASH IS LOW IN CALORIES AND FAT.

Winter squash differs from summer squash in that it is harvested and eaten in the mature fruit stage when the seeds have matured and the skin has hardened into a tough rind. At this stage, it can store well during the winter!

1 butternut squash (about 3 pounds) 1 pint vegetable broth 1 apple, diced 1 small onion, diced 2 tablespoons butter 1/2 teaspoon salt 1/3 teaspoon cinnamon 1/4 teaspoon cumin 1/2 cup milk 1 teaspoon oil

1. Cut squash in half lengthwise, scoop out seeds.

2. Coat with oil. Place cut side down on a rimmed baking sheet. Poor a little bit of water around the squash.

3. Roast at 400 degrees F until soft. about 40 minutes.

4. Cool. Scoop out meat, discard skin.

5. Transfer to a bowl and puree until smooth.

6. Saute onions and apples in butter.

7. Add squash.

8. Flavor with salt and pepper.

9. Add stock and milk. Bring to boil. Burr mix.

10. Flavor with cinnamon and cumin.

11. Serve!

CCE Sullivan Spotlights

Farm Spotlight TREES OF THE WOODS FARM Owned by Doug Woods, operated with his wife Joan, and children Bristol and Canaan, Trees of the Woods Farm is located in Callicoon, NY. Comprised of approximately 80-acres, the farm was established in 1974 by Doug’s father. The farm offers a variety of Agrotourism activities, including pick your own strawberries in June, pumpkins during the fall, and cut your own trees in December. The farm manages a variety of livestock, and pets, including sheep, goat, pigs, donkeys, and chickens.

Trees of the Woods Farm opens to the public for cut your own sales the Friday after Thanksgiving and weekends through December. Varieties available include Blue & Norway spruce, Canaan Firs, White & Scotch Pines. You can also purchase holiday wreaths and fresh eggs yearround. They are currently cultivating a blueberry and apple orchard of over 5 acres, that will be available for you-pick in years to come.

MISUNDERSTANDINGS AND BLOWUPS WHEN CAREGIVING Submitted by Bonnie Lewis, RN Dependent Care Educator

feel guilty. Give yourself a ‘Do-Over’.

Caregivers may encounter unpleasant scenes when their care partner is under stress. Using these tips, with the conscious commitment to enter your care receiver’s reality, you may avoid an emotional blowup. Remember that any meaningful communication includes empathy and understanding.

1. Walk around the block in your care-receiver’s shoes.

What is it like to be that person today?

2. Listen to the feelings behind your carerecipient’s word.

What could you say to acknowledge them? (“You sound like you’re feeling sad.” Or “I can see this is frustrating for you.”)

3. Pay attention to your care-receiver’s body language. What does that language tell you? Is it different from the carereceiver’s words?

4. Down-shift to a pace that matches your carereceiver’s. What can you do to remain calm and patient while waiting for him or her to do something that you could do much more quickly?

5. RESIST the urge to correct your care-receiver or tell him or her not to feel that way. What can you do or say instead?

No matter how hard you try to stay centered, calm, patient and loving, the combination of being tired, stressed, sleepdeprived and frustrated will eventually catchup to any caregiver. After your blowup, after your frustration lifts, you may

Back up, start over, and say what you wish you had said.

• Let go of guilt. Use this phrase: “Even though I __________, I still love and accept myself.”

• Don’t say I’ll never do that again. You’re human and you may.

However, you can cut down on the frequency and intensity of your verbal blow-ups by having strategies in mind for coping with your anger and frustration.

Here are techniques that you can use to stay centered and compassionate: a. Count to 10 b. Breathe deeply c. “It Could Be Worse” journaling book d. Meditation, guided imagery, or self-hypnosis e. A gratitude notebook f. Any inspirational book g. A calming hobby or craft h. A brisk walk i. Call a friend j. Spiritual and/or religious reminders k. Recite the Serenity Prayer (or use the personalized prayer shown in the picture)

IMPACT OF COMPLETE STREETS DESIGNS Submitted by Wanda Cruz, Healthy Communities Coordinator

For many years all of our roads have been designed with only motor vehicles in mind. Complete Streets designs are intended to create safe and alternative forms of transportation that take into consideration pedestrian, cyclist and individuals of all ages and abilities. The design also promotes health, social economic development, connectivity and much more.

Since 2016 CCE Creating Healthy Schools and Communities worked with municipalities within our catchment areas which included: Bethel, Fallsburg, Liberty, Mamakating, Monticello and Thompson in adopting Complete Streets Policies and implementing projects related to such policies.

It was great to see a young child accompanied by an adult or older youth at the Town of Mamakating Park, accessing at no cost one of the Town of Mamakating bike repair stations.

It filled my heart with joy when Donna Consolo from the Town of Mamakating Parks and Rec. Dept. sent me the picture to the right.
