THE WINEMAKING PROCESS

BIOLOGICAL DIVERSITY: From the restoration of Wine Creek and the healthy spawning locale for Steelhead trout and Coho salmon to the diverse garden complete with beehives and chickens, a thriving ecosystem is created to contribute to vine health and foster quality vines.

SELF-SUSTAINABILITY: Off-farm inputs are limited, and fertility is generated through composting winery pomace and estate livestock manure. Extensive cover cropping supports soil health, strengthening the farm and embracing crop diversity. Additionally, renewable energy procedures and innovative water-conservation practices are implemented.

Revolving around balance and transparency, the terroir shines through in every bottle. Hugh Chappelle employs a low-input approach, using a light touch to bring out the true expression of the varietals. He blends, co-ferments and implements phased harvesting and oak and acacia barrel aging, allowing the wines to achieve remarkable complexity while staying true to its origins.
