Incredible Keto Lasagna
Continuing our low-carb theme, we encourage you to try this tasty lasagna recipe. Who says you have to give up your favorites?
lasagna "noodles" Non-stick spray 8 oz. cream cheese 3 lg. eggs, lightly mixed 2 c. mozzarella, shredded
1/2 c. Parmesan cheese, freshly grated Salt Freshly ground black pepper
Preheat oven to 350°. Spray baking sheet with non-stick spray. Melt cream cheese, mozzarella, & Parmesan in microwave, watching carefully. Start with 30 seconds, stir, and continue until melted. Remove from microwave, add eggs & mix thoroughly. Season to taste with salt & pepper. Spread mixture on prepared baking sheet & bake 15-20 minutes until golden brown and mixture is set. Let cool. filling 1 Tbsp. extra-virgin olive oil 1/2 med. yellow onion, chopped 3 cloves garlic, minced 1 tsp. low-sugar tomato paste 1 lb. lean ground beef or Italian sausage 3/4 c. no-sugar-added marinara 16-oz. ricotta cheese
11/2 c. mozzarella, shredded 1/2 c. Parmesan cheese, freshly grated Salt Freshly ground black pepper 1 tsp. dried oregano Pinch of red pepper flakes, crushed (optional) Freshly chopped parsley
Heat oil in large skillet, add onion, & cook until soft, about 5 minutes. Add garlic & saute another minute. Add tomato paste & mix thoroughly. Add meat, salt, & pepper, & cook thoroughly. Drain. Add marinara, heat through, season to taste with salt, pepper, & red pepper flakes. Cut cooled noodles in sections to fit in a 8"x8" baking dish. Spoon a small amount of sauce in the bottom of the dish & place a layer of noodles on top. Spread 1/3 of the ricotta cheese over the first layer of noodles, top with meat & 1/3 of the mozzarella. Repeat layering twice more & top with the Parmesan cheese. Bake until cheese is melted & sauce is bubbly, approximately 30 minutes. Cool slightly, garnish with parsley, cut, & serve. cbboise.com

This time of year, we start itching to get outside. Perhaps you've already taken a hike and know the protocol for wet and muddy trails. If you don't, check conditions first, and follow the rules. Boise's Ridge to Rivers Partnership makes it a point to inform and educate so we can all enjoy our beautiful foothills.

his time of year, even with the mild winter we've had, cabin fever tends to run high. Most of us can't wait to get outside. As tempting as it might be to lace up the boots or jump on the mountain bike and just head out, be sure to check the trail conditions first. Even a mild winter can impact which trails are safe to use and which are still too muddy for traffic. As the snowpack melts, trails can become saturated with runoff. Any kind of use under these conditions can lead to trailside vegetation loss, trail widening, and damage to the COLDWELL BANKER TOMLINSON
waterbars designed to divert water away from the trail. To help hikers and mountain bikers determine which trails are safe to use, the Ridge to Rivers Partnership posts daily trail condition reports on both their website and their Facebook page. Consulting one of these will help ensure a good trip for you and protection for the trails. This time of year, sandier trails will be your best bet. Check the trail maps available on the website for trail names and locations. The site also includes informational videos and proper trail etiquette. Respectful use of the trail system is vital
to maintaining the foothills and ensuring that our future generations are able to enjoy them. The Ridge to Rivers Partnership was formed in 1992 and operates under a Memorandum of Understanding between the City of Boise, the Boise National Forest, the BLM, Ada County, and the Idaho Department of Fish and Game, with the City as the lead agency. The Partnership's success is based on sharing both expertise and funding, making the most out of both. Bringing together those with specialized knowledge and many passionate volunteers
PAGE 9 creates the workforce needed to keep the trails in top shape, while pooling the funding from the various resources ensures efficient use of taxpayer dollars.
The Ridge to Rivers trail system is managed by a small, dedicated staff of trail professionals. Additionally, volunteers spend around 2,000 hours a year helping with the maintenance and repairing seasonal damage.
Because many of the trails cross private land, the full system of interconnected trails and open space would not be possible without the cooperation of the landowners involved. We encourage you to get out and explore, whether you are a regular visitor, or a hiking or mountain biking novice.
