Favored

O

by Andrew Towe

ne night I was praying and God said to me, “Tell my people to get ready to walk in a greater realm of favor.”

Favor can be defined as “Something done or granted out of goodwill, approval, or undeserved access.” I believe that you are reading this article today because God wants to release a new mantle of favor on your life. There is a set appointed time for favor. “Thou shalt arise, and have mercy upon Zion: for the time to favor her, yea, the set time, is come”(Psalms 102:3). I am

to put him to death. They finally decided to sell him into slavery. Being favored does not exempt you from trouble. There are times people will try to keep you down and even profit from your adversity. Joseph was brought as a slave into Egypt. However, the Bible constantly affirms that “The Lord was with Joseph…” Whenever you are in your darkest moments, God is always with you. He is working everything for your good. When Joseph was sold as a slave to Potiphar, he quickly began to rise to the top of the servants because he was favored. Even when you are in a terrible situation, your favor will cause you to rise to the top. No demon, no person, and no situation will be able to hold you down. Potiphar’s wife lied about Joseph when he resisted her advances and he was thrown into prison. However, once again Joseph rose to favor even in the prison.

The life of Joseph is one of the best examples of a life filled with favor. In Genesis we see that his father loved him more than any of his brothers. He gave him a coat of many colors, indicating being the chief heir. However, Joseph was not the oldest brother. Favor will elevate you to positions that you should not qualify for, but obtain anyway. His brothers hated him for it and conspired to kill him. It is vital to understand that everyone will not celebrate your favor. In fact, it invites persecution. His brothers stripped him of this coat and threw him in a pit. I can only imagine the pain Joseph must have felt as his brothers ignored his cries as they plotted

One night Pharaoh had a dream that no one could interpret. The butler suddenly remembered Joseph. Pharaoh “hastily” called him out of the jail and into the palace. God gave Joseph the interpretation and he was made second in command over Egypt. This was God’s plan all along! I believe some of you are suddenly coming out of your situation. God is bringing you from the lowest point and raising you to the forefront. You are favored!

convinced you are being setup right now to live in the favor zone.

In prison, Joseph interrupted a dream that the butler would be restored and he requested that the butler remember him. Nevertheless, the butler forgot about Joseph. Some of you today feel forgotten, but God has not forgotten you.

The Balance of Fear

hat is fear and what does the Bible tell us about it? If you turn on your favorite Christian radio station, you have a pretty decent chance of hearing one of the many songs recently released about fear. It may be a song reminding us that fear is a liar or another breaking up with fear. It’s like everyone is finally realizing what the enemy has known all along. Fear is one of the greatest, if not the greatest, obstacle to the church. So, back to the question. The dictionary defines fear as “To be afraid of someone or something likely to be dangerous, painful, or threatening.” Now this can be the case for many people. Fear is often portrayed as evil or something bad. However, in biblical terms there are two different types of fear. The first of these two types is Godly fear, this type of fear should not be our “torment” but should be valued beyond all measure. This fear is what keeps us in spiritual grace with the Lord. The Bible tells us in Psalms 128:14, “How blessed is everyone who fears the LORD, Who walks in His ways. When you shall eat of the fruit of your hands, you will be happy and it will be well with you. Your wife shall be like a fruitful vine within your house, your children like olive

8 // October 2018

plants around your table. Behold, for thus shall the man be blessed who fears the LORD.” In the beginning of the verse it says “How blessed is everyone who fears the Lord.” God is clearly letting us know that the only fear we should have is the fear of God and his almighty power. The Bible tells us in Proverbs 22:4 “The reward of humility and the fear of the LORD are riches, honor and life.” We are told in this verse that we will be rewarded for fearing the Lord. This first kind of fear is a gift. It is an understanding of our relationship to our Lord and Savior. The second type of biblical fear is evil. It is the evil that paralyzes us. In the movies, it is monsters or boogie men. In reality it is whatever cripples us from doing what pleases God. It robs us of our potential and leaves us living lesser lives. The fear of evil can take on many forms. It can be as simple as being afraid of the dark or it can be fear of something more real like loss. Regardless, fear can replace God at the center of our thoughts. It is the same fear that caused the disciples to fear the storm with Jesus in the boat. John 4:18 tells us, “There is no fear in love, but perfect love casts out fear.” When we keep God at the center of our thoughts, His authority overshadows anything the enemy could bring against us. Through putting him first we show Satan that he has no power over us. The chains of fear are broken at even the thought of God and his merciful ways. Matthew 10:28 tells us, “Do not be afraid of those who kill the body but cannot kill the soul. Rather, be afraid of the One who can destroy both soul and body in hell.” This verse sums up everything I have been sharing. We have no reason to fear anything in this world because we fear the only power that should be feared, Our Creator, Savior, and God. In closing, Paul puts it perfectly in 2 Timothy 1:7 when he writes, “For God has not given us a spirit of fear, but of power and of love and of a sound mind.” This is my favorite verse to read when I am under attack by the enemy. It reminds me that the battle between these two kinds of fear is not a battle at all. Jesus has already won.

DOW 100,000? DOW 1,000,000? MONEY MATTERS WITH DR. ANDREW LEE

Dr. Andrew Lee is professor of English at Lee University. He also serves as a coordinator for Dave Ramsey’s Financial Peace University. He and his wife Esmerelda have three children.

I

’m writing this article for the October issue, and October has traditionally been one of the “scariest” months for the stock market (it’s Halloween, after all). In fact, October often shows a decline in at least some of the stock market indexes, with the worst example being the “Black Monday” crash of October 19, 1987 when the Dow Jones Industrial Average (DJIA or simply “The Dow”) plummeted by over 22% in one day. So I thought, ironically, that October would be a good time to share some optimistic news about the stock market. Here it is: the Dow, which stands at around 26,000 points as of this writing, will reach 100,000 points in fifteen years if it averages 10% annually (including dividends) starting now, which is its historical average since 1926. Moreover, in approximately 38 years, the Dow would hit 1,000,000 (yes, one million) if it continued that 10 percent annual return. For the naysayers who point to 7.75% annually as the historical return of the Dow since 1926 (which excludes dividends reinvested), it would still hit the 100,000-point milestone in eighteen years instead of fifteen. I realize the Dow is a list of merely 30 stocks, and that it doesn’t really represent the entire stock market. But nevertheless, the Dow is a useful measure of the larger markets, for as the Dow rises, so too typically do stock indexes like the S&P 500, Nasdaq, and the Wilshire 5000 since these most often (but not always) correlate over long periods of time. Certainly, there will be years when the market has a negative return, and perhaps even loses 30 percent or more in a single year. But over longer time periods, the

10 // October 2018

market tends to revert to its historical annual average return (hence the term “historical average”). So when is the “best” time to invest in the stock market? For those who have been eagerly hoping for the answer to this burning question, write this down quickly! Here are the top three times to invest in the stock market, ranked in order: (1) many years ago (2) yesterday (3) today. You get my point—the time is “now.” Trying to time the market and “sit on the sidelines” until the “big drop in stock prices” happens is a mistake. Think of the many people who pulled their investments out of the market during the 2008-09 “crash” and sat on the sidelines for the past decade waiting for the right moment to “jump back in” the market. They have missed a chance to more than triple their money over the past ten years (ouch). And here’s another fact: the stock markets overall go “up” about 75% of the time. By this, I don’t mean to imply that markets will be “up” three out of every four days. In any given year or period of years, anything is possible and unpredictable. But historically, the markets rise much more than they fall. So the odds are, your investments in the overall market will grow over time, especially over longer periods of ten years or more. I sell neither stocks nor mutual funds; as the saying goes, “I have no dog in this hunt.” But if you have money set aside for a long-term goal—such as retirement or kids college—and you kept it in a bank account or under a mattress for the next ten, twenty, or thirty years, you may regret that decision when the Dow hits 100,000. Proverbs 12:5a—“The plans of the righteous are just . . .”

Gò0dNews for Parents

The Father Allows he day arrived and along with my golf bag and clubs, I carried all the associated anticipation, excitement, and butterflies I normally experienced before a competition. It remains a highlight in my golf career. By virtue of a top ten finish in the South Carolina Junior Championship, I qualified to play in the first annual Georgia/South Carolina Junior Team Match competition. Unknown at the time, Georgia fielded a stellar team. Two Georgia players went on to win two of golf’s

majors, the PGA Championship and The Masters. One other played the PGA Tour and the others became accomplished amateur players. I was the only South Carolina player to remain in golf. It’s a nice history, but not the story. The match was held at Houndslake Country Club in Aiken, South Carolina, an hour from my home. Mom and Dad accompanied me. Dad caddied for me but was not allowed to give me advice, nor was I allowed to ask him. Particular in my memory, the match reached the fourteenth hole, a downhill par-five, an easy threeshotter with a lake lurking around the second shot. The lake guarded the green against a risk-taking, rewardseeking player deciding to go for it in two. Having

played a sufficient tee shot, I stood at the moment of decision. Down in the match, I needed a birdie. Remembering, time slows in my memory. My movements possessed a hesitation replete with indecision and desire for advice. Dad stood calmly while I fidgeted and fretted. We traded eye contact and my body language begged for an answer from him. None was forthcoming. We knew the rules. From this instant, my memory echoes. Symbolism and crossroads root deep in reality. There, my Father stood, loving, supporting, allowing. And there, I stood, treading in all the freewill allotted me. I drew upon all the resources living inside me, all that had been given to me. I knew, not by some common sense of knowing, beneath the superficial consequences of any decision I made, my Father was present. Dependence and freedom played me equally, each with its own allure and reason. Logic is not wisdom’s only guest. Freewill, the seemingly illogical and elusive, extreme edge of loving, a love reaching for joy while risking pain through the giving and receiving, is wisdom’s guest, too. This moment pervaded defining, and anything defined well is defined long. Imprinted on my eternity, this moment with my Father present, silent in word, seared its meaning through wisdom’s allowance. I knew my Father would always be there, loving, allowing, and waiting for my return. Dad is gone now, but not from me. His presence remains. He lives within me. I am my Father’s son. I returned from where He allowed me to go, the untethered reaches of love. Someone may ask, “Why would God allow this to happen?” Because God lives at the extreme edge of love, too, waiting for our return. “Those who have ears to hear, let them hear” (Matthew 11:15, NKJV). t’s inconvenient. It will cost you money. It will push all your buttons (the bad ones, that you want noone to touch). It will intrude on your precious alone time. It will drive you crazy when you sit down in the evening and ponder it’s dysfunction. It will rarely work perfectly and will occasionally cause you to lose the odd night’s sleep. But, you need it and more importantly it needs you! Community. Community may be one of the current generation's greatest challenges in today's society. Maybe it has been a struggle for every generation. Maybe it’s the challenge we all have of being human. The temptation to live as an island is never far away. I know me, and you know you, and we know each other. Neither of us doubt our fragility, insecurity, or our desires to be seen and known; but, for some reason we doubt this word community—but it won’t leave us alone. It’s always around the next corner...in every room, coffee shop, golf club, school and church. Community takes discipline. It takes the discipline to engage in it when you don’t feel like it and the discipline to see and know another when you would rather curl up in a ball and climb into bed. The discipline to welcome another family with a totally different set of unique contributions into your home for a meal in the middle of another action packed week. Community takes initiative. It takes the initiative to organize gatherings and parties celebrating milestones and accomplishments and to reach out consistently

and communicate with others. It is the initiative to be attentive to the needs and struggles of those around you, and meet those needs with a smile, and a word of encouragement, or an act of service. Community takes courage. Community requires you to have courage to share the real you. It requires the courage to face your fears and bare your scars with others, courage to have disagreements, to forgive, and the courage to know someone else’s brokenness and choose to walk with them anyway. Community takes sacrifice. It is the sacrifice of time, money, and the sacrifice of your desires and dreams potentially for someone else's. Community requires love. Let’s face it. Most things in this life come down to love. It is the greatest of all and the requirement of Jesus. What I really want to say today is that it’s your turn and it’s my turn. The very essence of community relies upon participation. Your participation. My participation. If we don’t participate, then not only do we miss out on being seen, known, and celebrated - but everyone else that is a part of the community that we desire to be a part of also misses out. They miss out on you. They are starved of your brilliance, your character, and your unique and needed contribution to the community. It’s your turn. It’s my turn. It’s our turn. About The Author

In 2007, Jeff surprised someone else, his wife, by telling her that he wanted a career change. “She thought I was having a mid-life crises but I felt that God had a more purposeful work for me to accomplish.” Jeff and his wife prayed for a year and waited for God’s direction. During this time his wife convinced him to take Larry Burkett’s “Career Direct Assessment” exam to see what God might reveal for direction. “God used this process to help us focus on what He had gifted me with to serve His purpose”. Jeff’s assessment conclusions were three fold: Ministry, Sales, and Coaching. As only God could arrange things, Jeff’s FedEx route had a semi regular customer that asked him if he wanted a job. “I didn’t even know what the guy’s business was. Gò0dNews for Health & Fitness by Megan Stockburger

f you are like most people, it is hard to avoid sitting these days. Many of us work in front of a computer, commute in a car to work, sit for meals, and even during our leisure time at home! A new survey by Ergotron, a global manufacturer of furniture and mobility products, found that the average American spends up to 13 hours sitting every day! Obesity rates, cardiovascular disease, and other chronic conditions continue to rise and physical inactivity is the fifth largest risk factor for global mortality. Our incredibly poor eating habits and smoking are still greater risks, but research is now looking at our sedentary lifestyles as an independent risk factor—even if you exercise! Here are some simple habits to incorporate into your busy schedule to work toward better health. 1. Get up once per hour. Getting 30 minutes of daily physical activity is a great start, but it is often not enough to offset 7+ hours of sitting at a desk job, with another five hours sitting the rest of the day. A 2016 study in the International Journal of Behavioral Nutrition and Physical Activity found that spreading out physical activity throughout the day improved mood, decreased feelings of fatigue, and had a positive effect on appetite. Try setting reminders for yourself throughout the day to get up and take a lap around the office or perform some quick body-weight movements like squatting, twisting, and touching your toes to get your blood flowing and your muscles moving. Adding short, fiveminute breaks every hour was enough in another study to reduce the risks significantly. 2. Turn off the electronics. Social media and T.V. are often mindless tasks that discourage productivity and cause even more stress. A recent study in the Lancet found that TV watching is even worse than just sitting and that five hours of TV viewing per day will increase your mortality risk, no matter how much you exercise! Better to keep it at an average of just 1-2 hours a day, at the most!

24 // October 2018

3. Plan exact times and workouts. James Clear, an author and avid weight lifter who specializes in creating good habits, cites a study in the British Journal of Health Psychology where participants nearly tripled their participation rates in exercise by simply being asked to state exactly when and where they intended to exercise. Planning is stronger than willpower. Also, it is wise to develop back-up plans in advance. For example, you could think, “If I work late and can’t make it to the gym, then I will do a quick workout video at home or walk around the neighborhood once I’ve got the kids in bed.”

4. Find someone to keep you accountable. Whether you enlist a friend, hire a personal trainer, or join a group class setting, finding a way to be accountable is usually the best way to establish a regular exercise routine. Showing up and starting tends to be half the battle. Peer influence is a powerful motivator and pairing up with a friend or colleague provides mutual accountability to help you succeed. In addition, you’ll have someone there to spot you and cheer you on toward your best workout possible!

it’s critical that patients stick with the treatment protocol prescribed by their practitioners in order to achieve the full value of Spinal Decompression Therapy.

What is the Typical Treatment Protocol? A typical spinal decompression treatment protocol consists of about 12–20 sessions over four to six weeks. Some conditions require fewer visits; some require more. Many patients report relief from their pain and other symptoms during the first few treatment sessions, and most experience dramatic pain relief after completion of their prescribed treatment program.

How does Spinal Decompression help? Decompression Therapy gently stretches the spine, relieving pressure from the discs, joints and muscular tissues, while enhancing the body’s natural healing process. Learning to Fight

his was to teach the future generations of the Israelites how to fight in battle, especially those who had not fought before” (Judges 3:2, HCSB). The book of Judges is the sequel to the book of Joshua. Joshua ends like a blockbuster Hollywood hit. Joshua, the leader of Israel, has led them to their promise. As his time on earth comes to a close, he challenges the people one last time to serve the miracle-working God. The scene pans from the crowd to the face of the leader as he proclaims these famous words "as for me and my house, we will serve the Lord."

Conviction hits like rainstorm and the entire nation agrees to serve the Lord. Israel now has peace in the land and peace in their heart. Roll credits. Joshua's story ends. The book of Judges picks up where Joshua ends with a flashback telling of the passing of Joshua. The author of Judges had no clue when he penned the book it would be set next to Joshua in the Canon. So under divine inspiration, he retells for us the death of the nation's leader. Except where there had been a happy ending in Joshua's telling, Judges tells of a tension, “After that whole generation (the generation of Joshua) had been gathered to their ancestors, another generation grew up who knew neither the Lord nor what he had done for Israel” (Judges 2:10). Somewhere between Jordan crossing and conquering the land, a generation forgot to hand down the most important thing to the children of God: God. A generation did not know about Egypt or the Red Sea. They did not

know about the Jordan or Jericho. In turn, did not know the Lord of those miracles. Israel failed to give them the lessons that had led them to the promises of God. I wonder if when the children of the next generation asked "how did we get here" the parents answer was simply, “It's a long story.” I wonder if in protecting them from the stories of hurt and war, they forget to tell them about the way God triumphed. I believe we often insulate the next generation from the stories of hurt under the idea of protecting them. But the book of Judges tells us that is not the plan of God. These are the nations the Lord left to test all those Israelites who had not experienced any of the wars in Canaan (he did this only to teach warfare to the descendants of the Israelites who had not had previous battle experience). Read Judges 3:2 slow. The nations the LORD left. Meaning Joshua and his generation won a lot of battles to settle the land, but the Lord left some "giants" for the next generation to fight. Joshua won Jericho and the hill country and the valleys of Canaan, but God left some enemies for the next generation for this purpose: to learn to fight. I want to fight all the wars for my kids and those God has given me care over. But that is not my job. Our job is to train them for the fight. Our job is to remind them that they will face darkness and principalities of the evil. Our job is to tell them how God did the miraculous in our lives and can do the same in theirs. We cannot fight their fight for them and the more we try the more likely they are to not know God who fights on their behalf. In the fight is where you lean in and learn. Or get pummeled by the enemy of this life. It is incredibly hard to not step in when they are getting punched by the enemy, but it is not our fight to fight. God left some enemies specifically for them to face. So they can learn to trust, learn to pray, learn what faith is, learn who he is, and who he has made them to be.

Single Elegance

y beloved spake, and said…Rise up, my love…and come away” (Song of Solomon 2:10). I didn’t want to be single again, but I am, just me again. How do you walk in a phase of your life you weren’t prepared to re-enter? How do you honor God in a consequence that feels so unfair, so painful so undeserved? But here I am, years later, still single; yet in spite of the losses, disappointments, readjustments, and sense of failure, I am experiencing God’s joy, peace,

hope, ability to forgive and accept His ministry of reconciliation. The empty spaces are filled with Him and I feel free and complete and continue to be amazed at how He is transforming my life and using me in ways that He never could had I not become single again. God revealed to me just how He was using me and my painful journey back to singleness, in a recent conversation with my former pastor, as he confessed to me that he and his wife had been talking about me. I was immediately curious about the details and content of the words spoken between them. He explained how amazed he and his wife were at the courage, grace, and strength I have shown in dealing with my intense trial. He and his wife called me the epitome of Christian elegance and I was overwhelmed by their words and humbled to say the least. All I know is that God has allowed certain things

32 // October 2018

to happen in my life because He trusted me to steward well this particular trial. He wanted to work out His purpose in my life through this painful process and grow me so that He would be glorified in how I responded. I understand that what I experience here on earth is just a small sample of the ultimate spiritual warfare being played out over my life in a realm I cannot see. I feel privileged to be trusted by God to represent Him and stand as His ambassador. What is moving me forward is the knowledge that I am loved. Let me shout it out: I am loved! Everything that I have experienced is not wasted and is working together for my good and has been allowed by my beloved. He loves me too much to be solely concerned with my comfort so He has divinely ordained an alteration. He has told me that my latter will be greater than my beginning and he has told me that I will rise to new heights in Him. He has also told me to come away, and as I have spent more time with Him I have gained a new perspective which has altered my mind and responses. The definition of elegance is: style, good taste, gracefulness, refinement, class, taste, chic and sophistication. Initially I looked at this definition and could not see any aspects of myself in the description but I realize that all of us who have chosen to become new creatures in Christ will display Christian graces which in essence are the Fruits of the Spirit! I am standing on the strength of Jesus Christ and by his power I am able to stand in silent strength and confidence; I can stand equipped with grace under pressure, I can let go and forgive without a thought of revenge and I can look at all that is reality as temporary, knowing that what I can’t see is eternal. I am smiling as I write because I am now content in this phase of my journey. My hope and expectation is in God. I want what He wants for me! He is my companion and takes great care of me! May we all strive to be what God intended us to be! About The Author

The Keys of Life n 2010, seven days before Mother’s Day, my mother died from a massive heart attack at 86 years of age. I felt like I had lost my best friend. She taught me so much about the keys of life. One of the major keys of life she taught me was music as a form of worship. She often played her theme song for life on the piano. That song carried her through many trials in her life. She taught me through that song that with Jesus in my life I would never be without a friend. What a friend I have in Jesus. Mother took piano lessons through a mail order correspondence course. She received a cardboard key guide and beginner music books in the mail. She taught herself to learn the keys and play easy pieces. Eventually she learned the keys well enough to play her favorite hymn. Her favorite hymn was ‘What a Friend We Have in Jesus.’ It has become one of my favorite hymns too. This song is a reminder to me that I have a friend in Jesus. I grew up with a piano in the home. It was as big as a queen size bed, and took up half the space in a bedroom I shared with my siblings. Later my parents purchased an upright piano. Somewhere in the family budget mother scraped up enough money to pay for me to take piano lessons from a local music teacher. I was only ten years old. I often complained about the daily practice sessions. It was my mother’s desire that her daughter would learn to play the piano. I tried to

34 // October 2018

please her by enduring the weekly lessons. Finally, my constant complaining about back pains from sitting on a round wood stool on wheels gave me a reprieve from piano lessons. I had no regrets. As an adult, I learned to really appreciate the sound of piano keys making sweet melodious music. If only I had continued lessons and disciplined myself to practice instead of complaining, then I might have enjoyed playing the piano. Several years ago I purchased a brand new piano and tried to pick up the practice of playing music. I paid a few thousand dollars for it. My brother, who is the real musician among my siblings, jokingly told me that for the amount of money I paid for the piano that it should have played itself. Recently I sold my prized piano. I prayed it would find a new home where the keys would give someone an opportunity to play and enjoy the sounds of music that the keys could generate. The piano will always be a reminder of just one of the ways my mother loved to worship the Lord. For the Lord loves worship. Worship music is one of the keys of life. According to scripture in Psalm 119:175 it says, “Let me live that I may praise you, and may your laws sustain me.”

Chicken Potpie

“T

by Deana Thompson

o everything there is a season, a time for every purpose under heaven” (Ecclesiastes 3:1). Whether it is the trees, the animals, your family, your job, or your spiritual life, everything goes through seasons. Solomon, however, does not tell us to compare the different seasons—which one is better. He is merely stating a fact of life; there is a time for everything. Sometimes we get caught up in comparing the seasons. Fall is better than spring, or our family life was better when the children were little, or God used me so much more 20 years ago. Your life right now may seem like a potpie: a boiling mixture of everything insulated (or isolated) under a blanket of crust. Seasons will come and go at their appointed time; you cannot rush them or change them. Whatever season you are in spiritually or relationally, know that it will change. It may not change through your force or when you want it to, but it will change according to God’s timetable—just as autumn faithfully follows summer around the same time every year.

Ingredients

• ½ c. chopped onion • ½ c. chopped fresh mushrooms • ¼ c. unsalted butter • ½ c. freshly-milled soft white wheat flour, or 1/3 c. all-purpose flour • 2 c. chicken broth • ¾ c. milk • ½ tsp. salt • ½ tsp. sage • 1/8 tsp. pepper • 15-oz. can mixed vegetables, drained • 3 c. diced cooked chicken • ¼ c. snipped fresh parsley, or 2 Tbsp. dried parsley • 2-oz. jar chopped pimiento • 2 ¼ c. freshly-milled soft white wheat flour, or 2 c. all-purpose flour • 4 Tbsp. baking powder • ½ tsp. cream of tartar • ¼ tsp. salt • 1/8 tsp. baking soda • ½ c. unsalted butter, softened • 2/3 c. buttermilk

Directions

42 // October 2018

1. In a large saucepan, cook onion and mushrooms in the ¼ c. butter over medium heat until tender. Stir in the ½ c. flour. 2. Whisk in the chicken broth and milk until smooth. Add the ½ tsp. salt, sage, and pepper. Cook over medium heat until thickened and bubbly, stirring often. 3. Stir in the mixed vegetables, chicken, parsley, and pimiento. Heat until bubbly. 4. While the chicken mixture is heating up, make the biscuit topping: a. In a medium bowl, combine the 2¼ c. flour, baking powder, cream of tartar, the ¼ tsp. salt, and baking soda. b. Using a pastry blender, cut in the ½ c. softened butter until the mixture resembles coarse meal. c. Add the buttermilk. Stir until the dough is wet but not sticky. (Add more flour if it is too wet; add more buttermilk if it is too dry and the flour is not sticking together). 5. Pour the chicken mixture into an 8x12 baking dish. 6. Roll out, or pat out, the biscuit dough ½”- ¾” thick and into an 8x12 rectangle. Place the dough over the chicken mixture. (Or you can cut the dough into round biscuits and place them over the chicken mixture.) 7. Bake in a 450°F oven for 12-15 minutes, or until biscuits are golden brown.
