Do Not Despise A Small Beginning

The faithful support, gracious feedback, and kind encouragement have absolutely made my blogging journey incredible! The verse from Zechariah 4:10 NLT has been my anchor over these last four years—“Do not despise these small beginnings, for the Lord rejoices to see the work begin…” I pray this verse would breathe life and speak peace into your soul today, too. Anytime God calls us to step out in faith and begin something new, it can feel daunting. Whether it’s a diet and exercise change for better health, a move that uproots you from everything you’ve known, or a job change that has you in unchartered territory,

want to tell a story about angels. It is a true story and happened to my husband and me while we were waiting for our precious 14-month-old baby to get a heart

transplant. We were in the hospital for 6 long months never knowing if she would come home to us or go home with Jesus. (I always like to reference what I write about back to our Heavenly Father's Word). In Psalms 91:11 NKJV, it says “For He shall give His angels charge over you. To keep you, in all your ways.” With that being said, let me tell you what happened one night. Our daughter had died several times that day and she crashed onto an “ECMO” machine that was keeping her alive. That night as we were praying over her, my husband asked God to put a hedge of protection over her so no more harm could or would come to her. Now keep in mind, nobody was allowed in to see her unless we were there. The next day as we were coming back from the cafeteria, one of our pastors was walking out. We asked him if he was able to see her. As he stood there scratching his head, he said, "Yes, but you won't believe what happened!" He quickly gained our attention as he continued. He said as he walked into her room, he saw with his own eyes–just like he was looking at us–a band of angels around her bed! He

so as to not let anyone near her! He said he simply bowed his head and asked God to allow him in just to pray for her. It was then that God allowed two of the angels to allow him enough space to enter and pray over her but when they felt like he was done they simply closed their wings back and he could no longer get back in. No one can tell me that angels are not real. We have had many encounters with angels over the years. When Megan finally began to speak, she would tell us that there were five angels in the house. One for me, one for her dad, and three for her. The Bible also says in Hebrews 13:2 NKJV, “Do not forget to entertain strangers, for by so doing some have unwittingly entertained angels.” The night my husband asked for God to send that “hedge of protection over Megan” I truly believe He sent that band of angels. I believe had my husband not prayed that specific prayer, satan could have sent more harm to her. But because he obeyed what God would have him to pray, God sent the angels to watch over her that very night. Over the years my daughter, (who by the way was given absolutely no chance to thrive due to a brain injury while waiting for a heart) has developed a love for helping the homeless. She is now 21 years old and knows full well that many of these homeless people may very well be angels. Some may very well be the same angels that watched over her some 20 years ago. So the next time you hear that still small voice telling you to go help someone, I recommend you do just that because there ARE “angels among us!” And you see, marriages and families are stronger, healed, protected, uplifted, and more joyful because husbands pray for their families. Don’t be discouraged by hard times. Pray, pray, pray!

Smoky Mountain Winter Comfort Soup

n the heart of the Smoky Mountains of Tennessee, January brings crisp, frosty air and a dusting of snow that transforms the landscape into a winter wonderland.

It's during this time that families and friends gather around cozy log fires to share stories and enjoy comforting meals. One such cherished recipe is the “Smoky Mountain Winter Comfort Soup.” This soup not only warms the body but also the soul, as it's passed down through generations along with stories of the region's history.

Ingredients For the Soup: • 1 lb of smoked ham hock • 1 cup of dried black-eyed peas • 1 cup of chopped carrots • 1 cup of diced celery • 1 cup of chopped onion • 3 cloves of garlic, minced • 6 cups of chicken broth • 1 bay leaf • 1 tsp of dried thyme • Salt and black pepper to taste • 2 cups of chopped collard greens (or substitute with kale or spinach)

For the Cornbread (optional, but highly recommended): • 1 cup of cornmeal • 1 cup of all-purpose flour • 1 tbsp of baking powder • 1/2 tsp of salt • 1 cup of milk or buttermilk • 1/4 cup of vegetable oil • 1 egg

Instructions Preparing the Soup: Start by rinsing the dried black-eyed peas and soaking them in water overnight. Drain and rinse them again before cooking. In a large pot, combine the smoked ham hock, black-eyed peas, chopped carrots, celery, onion, and minced garlic. Pour in the chicken broth, add the bay leaf and dried thyme. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it simmer for about 1 to 1.5 hours, or until the black-eyed peas are tender and the ham hock is falling off the bone. Remove the ham hock from the pot, shred the meat, and discard the bone and fat. Return the shredded ham to the pot, and season the soup with salt and black pepper to taste. Stir in the chopped collard greens and simmer for an additional 10-15 minutes until they are tender.

Making the Cornbread (optional): Preheat your oven to 425°F (220°C). Grease a 9x9-inch baking pan. In a mixing bowl, combine the cornmeal, flour, baking powder, and salt. In a separate bowl, whisk together the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the cornbread batter into the greased pan and bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.

Get Moving – Exercise improves your health, lifts your mood, and lengthens your life. 4. Floss every day – Scientists believe harmful mouth bacteria can enter the bloodstream, causing inflammation and other damage. 5. Get fresh air every day – Going outside, especially in green space, is an easy way to boost your well-being and mental state. 6. Take a breather – A simple way to feel happier, reduce stress, and raise your energy is to take short timeouts throughout the day to focus on your breath. 7. Beware of Actively Managed Investments – Lowfee index funds track the returns of an investment index, such as the S&P 500, and they cut your risk because you're investing in hundreds of stocks instead of just a few. 8. Eat plants – Eat real food! 17. Buy memories, not stuff – You'll derive more happiness from spending money on experiences rather than on physical objects. 18. Skip one meal a day – Eat less, cutting calories significantly protects against diseases. 19. Make money while you sleep – If you have some cash saved up, consider investing in assets that will bring in some passive income, such as rental property, ATM's in barber or beauty shops, etc. 20. Don’t give up - Be patient with yourself. These things take a lifetime to cultivate. The rewards make life better though. Keep trying!
