DIRECTIONS 1. Combine all the ingredients together into the work bowl of a food processor and process until finely chopped and very smooth. You will probably need to work in batches. 2. The sofrito will keep in the refrigerator for up to 3 days, or freeze it in ½ -1 cup batches in sealable plastic bags for up to 6 months.

Fresh Tomato Salsa (Pico de Gallo) YIELDS: 3 cups INGREDIENTS UÊ UÊ UÊ UÊ UÊ UÊ

3 large ripe tomatoes (about 1½ pound), medium diced ½ cup finely chopped onion ¼ red or green bell pepper, finely chopped ½ cup chopped cilantro 2 tablespoons lime juice Salt to taste

DIRECTIONS 1. Combine tomatoes, onion, bell pepper, cilantro and lime juice in a medium bowl. Season with salt. 2. Mix well and set aside in the refrigerator for at least 20 minutes before serving to develop flavor.

Modesta’s Rice and Pigeon Peas SERVES:

2 tablespoons olive oil ½ cup of homemade Sofrito (see recipe included) ¼ cup tomato paste ¼ teaspoon dry oregano 4 cups water 2 cup brown rice (dry) 1 (15 oz) can pigeon peas (gandules), drained and rinsed well under water UÊ Salt and ground black pepper

DIRECTIONS 1. In a large saucepan heat the olive oil over medium-high heat. Add the sofrito and sauté for 5 minutes. Add the tomato paste and oregano and cook for 2 minutes more, stirring frequently. 2. Add water and bring to a boil. Stir in the brown rice and pigeon peas, and season with salt and ground black pepper. Reduce heat to medium-low, cover with a tight-fitting lid, and simmer for about 40 to 45 minutes, or until all of the water has been absorbed.


Arroz y Gandules Receta de Modesta RINDE:

INSTRUCCIONES 1. En una olla grande caliente el aceite de olivo sobre fuego medio alto. Añada el sofrito y sofríalo por 5 minutos. Añada la pasta de tomate y orégano y cocínelo por 2 minutos más, revolviendo frecuentemente. 2. Agregue el agua y deje que hierva. Añada el arroz integral, gandules, sal y pimienta molida. Reduzca el fuego a mediobajo, cúbralo con una tapadera que se ajuste bien y déjelo hervir a fuego bajo por 40 a 45 minutos o hasta que esté suave y toda el agua se haya absorbido.


Chicken Burritos SERVES:

1 cup Sofrito (see recipe included) 2 pounds skinless boneless chicken breast ¼ cup olive oil 1 tablespoon dry oregano Salt and ground black pepper to taste

Serve With UÊ 16 small whole wheat flour tortillas UÊ 3 large ripe Hass avocados, halved, seeded, peeled and cut into slices UÊ 2 cups finely chopped lettuce UÊ Fresh Tomato Salsa (see recipe included)

DIRECTIONS 1. Preheat oven to 375°F. 2. Make the sofrito (see recipe included). 3. Put the chicken in a large bowl and add 1 cup of sofrito, olive oil, oregano and season with salt and ground black pepper. Mix well to coat the chicken and place the chicken breast on the baking sheet. 4. Bake chicken until cooked through about 30 to 35 minutes or until reaches an internal temperature of 165 degrees. Remove the chicken from the oven and transfer it to a cutting board. Cut the chicken breast into ¼- inch strips. 5. Serve chicken, avocados, lettuce, salsa and tortillas in separate bowls and encourage everyone to make their own burrito!

INSTRUCCIONES 1. Precaliente el horno a 375°F. 2. Hacer el sofrito (ver la receta incluida). 3. 2 tablespoons olive oil 1 large onion, finely chopped 2 garlic cloves, finely minced 2 medium carrots, peeled and cut in medium dice 2 celery stalks, cut in medium dice 1 green pepper, medium diced 1.5 teaspoon chili powder 2 teaspoons ground cumin 1 teaspoons dried oregano ½ chipotle pepper, canned in adobo sauce, finely minced (*this is spicy—omit for young children) 1 (15 oz) can crushed tomato 1 (15 oz) can pinto beans, rinsed and drained 1 (15 oz) can black beans, rinsed and drained 1 (10- 12 oz) bag frozen corn ½ cup cilantro, chopped (about ½ bunch) 1 cup water (or more if needed) Salt and ground black pepper to taste 2 cups Cheddar cheese, grated

DIRECTIONS 1. Heat the olive oil in a large pot over medium. Add the onion and sauté for about 8 minutes, until it starts to brown. Add the garlic and cook for 30 seconds more. 2. Add the carrots, celery and green pepper and cook for 5 minutes, or until the vegetables are lightly soft, stirring frequently. Add the chili powder, cumin, oregano and chipotle (if using) and stir to combine. Add the tomatoes, pinto beans, black beans, corn, cilantro and water and season with salt and ground black pepper. 3. Bring to a boil, cover and reduce the heat. Simmer for 30 minutes stirring occasionally and mashing the beans a little to thicken the liquid. 4. Serve in individual bowls with grated cheese on top.

INSTRUCCIONES 1. En una olla o cacerola grande caliente el aceite sobre fuego medio. Añada la cebolla y sofría o saltee por 8 minutos hasta que comience a dorar. Agregue el ajo y cocine por 30 segundos. 2. Añada la zanahoria, apio, chiles morrón verde moviendo de vez en cuando por 5 minutos o hasta que las verduras se suavicen ligeramente. 2 pounds tilapia fillets Salt and black ground pepper to taste 2 tablespoon olive oil ¼ cup fresh lime juice, divided ¼ cup chopped scallions or red onion (about 2 scallions or 1/4 red onion) ¼ cup chopped cilantro 16 small corn tortillas Cabbage-Carrot Slaw (see recipe included)

DIRECTIONS FOR TACOS 1. Place tilapia fillets in a shallow dish or pan, or large bowl. Season fillets with salt and pepper. Cover fillets evenly with olive oil, 2 tablespoons lime juice, onion/scallion and cilantro. Cover, refrigerate and let marinate for about ½ hour. 2. Preheat oven to 350°F. 3. Place marinated tilapia fillets (including marinade ingredients) across a baking sheet. Bake for about 20 minutes or until fish flakes easily with a fork. Remove from oven and transfer fish to medium bowl. Using a large spoon, break up fish fillets into large chunks. Stir in remaining lime juice and toss to coat. Season with salt and black pepper to taste. 4. While fish is cooking, wrap a stack of tortillas tightly in aluminum foil, and place them in the oven for about 10 minutes, or until they are warm. Keep them wrapped in foil until ready to serve. 5. Serve fish, cabbage-carrot slaw and corn tortillas in separate bowl and encourage everyone to make their own taco!

INSTRUCCIONES POR TACOS 1. Coloque los filetes de tilapia en un recipiente profundo. Sazónelos con sal y pimienta. Cubra los filetes uniformemente con aceite de olivo, 2 cucharadas de jugo de limón, cebolla y cilantro. Cubra el molde y déjelos marinar en el refrigerador por ½ hora. 2. Precaliente el horno 350°F. 3. Coloque los filetes marinados (incluyendo los ingredientes de la marinada) sobre una bandeja para hornear. Hornee por 20 minutos o hasta que el pescado pueda desmoronarse con un tenedor. Retire la charola del horno y transfiera el pescado en un tazón o recipiente mediano. Our Food Justice program empowers young people to explore the intersection of food and social justice in their communities.Through healthy cooking, community field trips and multimedia projects with photo and video, youth explore the issues of hunger, health disparities and what influences their food choices. The program culminates with Community Food Justice Projects that are created and lead by youth to improve their community’s food environment. This cookbook is the final project chosen and executed by our youth in the Food Justice at CS 211. For this cookbook, we asked the adults in the CS 211 community to submit healthy recipes they love from their families and culture. Many teachers came forward as guest Chefs. They shared not only their recipes but also their personal journeys with food, telling tales of sickness and health, Doritos and broccoli. Together, the adults and students bonded over a love of cooking with real, whole, unprocessed foods. Our wish is for this community cookbook to inspire people in the South Bronx, and everywhere, to come together to cook and enjoy healthy, delicious meals…and in so doing make terrible illnesses like diabetes become distant memories. Nuestro programa de Justicia Alimenticia (Food Justice) anima a nuestros jóvenes a explorar la intersección de los alimentos con la justicia social en sus comunidades. Cabbage-Carrot Slaw SERVES: Cerca de 3 tazas INGREDIENTS UÊ UÊ UÊ UÊ

4 cups finely shredded red cabbage ½ cup shredded carrots ¼ cup chopped cilantro 2 tablespoons orange juice

1 tablespoon lemon juice 2 tablespoons olive oil or canola oil 2 teaspoons honey Salt and ground black pepper

DIRECTIONS In a large bowl combine the shredded cabbage, carrots and cilantro and mix well. 1. In a small bowl, whisk together orange juice, lemon juice, oil, honey and season with salt and black pepper. 2. Pour the dressing over the cabbage and toss to mix well. Cover and refrigerate until ready to use.

Ensalada de Col o Repollo y Zanahoria RINDE: 8 porciones INGREDIENTS UÊ UÊ UÊ UÊ

4 tazas de repollo o col morada finamente rebanada ½ taza de zanahoria rallada ¼ taza de cilantro picado 2 cucharadas de jugo de naranja

1 cucharada de jugo de limón amarillo 2 cucharadas de aceite de oliva o canola 2 cucharaditas de miel Sal y pimienta negra al gusto

DIRECTIONS 1. En otro tazón grande combinar la col rebanada, zanahoria rallada, perejil y mezclar bien. 2. En un recipiente pequeño, mezcle con un batidor el jugo de naranja, el jugo de limón, la miel, aceite y sazonar con sal y pimienta al gusto. 3. Vierta el aderezo sobre la col y revuelva bien para mezclar bien. Cúbralo y refrigérelo hasta que esté lista para usarlo.


Baked Sweet Plaintains SERVES: 8 INGREDIENTS UÊ UÊ UÊ UÊ

5 large ripe plantains (about 4 ½ pounds) ¼ cup olive or canola oil Salt to taste OR 1 teaspoon ground cinnamon and ½ teaspoon ground nutmeg

DIRECTIONS 1. Preheat oven to 400° F. Cut the tips off the plantains and peel them. Cut them into 1-2 inch pieces. 2. Place the plantain pieces on a baking sheet and brush them with oil on both sides. Sprinkle either with salt (for more savory plantains) or with cinnamon and nutmeg (for sweeter plantains). 3. Bake for 12 to15 minutes on one side. Then turn the plantain pieces over and return them to the oven to cook for 15 minutes more until they are golden brown on both sides.

Maduros Horneados RINDE: 8 porciones INGREDIENTS UÊ UÊ UÊ UÊ

5 maduros o plátanos macho maduros (cerca de 4 ½ libras) ¼ taza de aceite canola Sal al gusto o 1 cucharadita de canela molida y½ cucharadita de nuez moscada molida

DIRECTIONS 1. Precaliente el horno a 400° F. Corte las puntas de los maduros (plátanos machos) y pélelos. Córtelos en trozos de 1 a 2 pulgadas. 2. Garden Salad with Baked Salmon SERVES: 8 INGREDIENTS FOR SALAD UÊ UÊ UÊ UÊ UÊ UÊ UÊ UÊ UÊ

1-1½ pounds salmon fillets 2 tablespoons olive oil Salt, black ground pepper, and oregano to taste 2 small heads Romaine lettuce, washed, dried and chopped 2 celery stalks, thinly sliced 1 medium red pepper, seeded and cut in medium dice 2 large tomatoes, seeded and cut in medium dice 1 medium cucumber, peeled and cut in medium dice 1 avocado, peeled, pitted and cut in medium dice

INGREDIENTS FOR HONEY-BALSAMIC VINAIGRETTE UÊ UÊ UÊ UÊ UÊ

2 teaspoons honey 1 teaspoon Dijon mustard 2 tablespoon balsamic vinegar Salt and ground black pepper ¼ cup extra virgin olive oil

DIRECTIONS 1. Preheat oven to 450°F. 2. Place salmon fillets skin side down on a baking sheet. Coat salmon with olive oil and season with salt, ground black pepper and oregano. Bake in the oven until fish is cooked through about 10 to 12 minutes. Remove from oven and flake into large chunks with a fork. Reserve. 3. In a large bowl combine together the lettuce, celery, red pepper, tomato, cucumber and avocado. 4. Make the vinaigrette: In a small bowl whisk together the honey, mustard, balsamic vinegar, and a pinch of salt and pepper. Slowly add the olive oil, whisking constantly, until well blended. 5. Drizzle the vinaigrette over the salad and toss well. Distribute the salad on individual plates, and add salmon chunks on top of each salad. Serve immediately and enjoy!

INSTRUCCIONES 1. Precalentar el horno a 450 oF. 2. Coloque los filetes de salmón con la piel hacia abajo sobre una bandeja para hornear. Cúbralos con aceite y sazónelos con sal, pimienta negra molida y orégano. Horno los filetes por 10 a 12 minutos hasta que estén completamente cocidos. Retírelos del horno y córtelos en pedazos con un tenedor. Resérvelos. 3. En un tazón o recipiente grande incorpore la lechuga, apio, pimiento rojo, tomate, pepino y aguacate. 4. Para hacer la vinagreta: En un tazón o recipiente pequeño mezcle con un batidor la miel, mostaza, vinagre balsámico, una pizca de sal y pimienta molida. Agregue poco a poco el aceite de olivo, batiendo constantemente hasta que este bien incorporado. 5. Rocié la vinagreta sobre la ensalada y revuélvala bien. Distribuya la ensalada en platos individuales y añada pedazos de salmón sobre cada ensalada. Sírvala inmediatamente y disfrútela.

UÊ 2 tablespoons tomato paste UÊ 20 ounces lean ground turkey UÊ 1 (15 oz.) can pinto beans, rinsed, drained and mashed UÊ ½ teaspoon dry oregano UÊ ¼ cup chopped pitted olives UÊ 8 ounces grated mozzarella cheese

DIRECTIONS 1. Preheat oven to 350 degrees. 2. Make the sofrito (see recipe included). 3. Peel the plantains and cut them into 1-inch pieces. Place pieces in a large pot, cover them with water and add 1 teaspoon salt. Bring to a boil and cook until plantains are very soft, about 20 minutes. Drain and reserve ½ cup of the cooking water. 4. Place the plantains in a large bowl. Add the reserved water and 2 tablespoon of butter and mash with a potato masher or a fork until you get a thick, smooth puree (like mashed potatoes). 5. In the meantime, heat 1 tablespoon oil in a large skillet over medium heat. Add the sofrito and cook for 2 to 3 minutes. Then add the tomato paste and cook for 1 minute more, stirring constantly, until paste darkens. Add the turkey, beans, oregano, and olives and season with salt and black pepper. Stir frequently for 8 to 10 minutes until most of the liquid is evaporated. Remove from the heat and set aside to cool. 6. Coat a 8-inch baking dish with the remaining 1 tablespoon of oil and spread 1/2 of the mashed plantains evenly over the bottom of the dish. Add the entire turkey filling, spreading it in an even layer, and then top with the remaining half of the mashed plantains. Sprinkle mozzarella cheese over the top. 7. Bake for 30 minutes, until the top is lightly golden brown. Remove from the oven and serve warm.

INSTRUCCIONES 1. Precaliente el horno a 350°F. 2. Hacer el sofrito (ver la receta incluida). 3. Pelar y cortar los plátanos en trozos de 1 pulgada. Coloque los pedazos de plátano en una olla grande, cúbralos con agua y añada 1 cucharadita de sal. Póngalos a hervir y cocínelos por 20 minutos hasta que estén suaves. Escurra los plátanos y reserve ½ taza del agua de su cocción. 4. Coloque los plátanos en un tazón o recipiente grande. Añada el agua que reservo y 2 cucharadas de mantequilla y májelos con un aplasta papa o tenedor hasta obtener un puré suave y espeso (como el puré de papas). 5. Mientras tanto, en un sartén grande caliente 1 cucharada de aceite sobre fuego medio. Añada el sofrito y cocínelo por 2 a 3 minutos. Luego añada el tomate en pasta y cocínelo por 1 minuto más, revolviendo constantemente hasta que el tomate se obscurezca. Añada el pavo, frijoles, orégano, aceitunas y sazone con sal y pimiento negra. Revuelva frecuentemente por 8 a 10 minutos o hasta la mayor parte del líquido se haya


evaporado y usando la cuchara separe los pedazos grandes de carne. Retírelo del fuego y déjelo enfriar. 6. Unte 1 cucharada de aceite el fondo de un molde de 8 pulgadas y coloque la mitad de los plátanos en el fondo del molde para formar una capa. 3 tablespoons onion power 3 tablespoons garlic powder 1 tablespoon black pepper 1 teaspoon dried oregano 1 teaspoon ground cumin 1 teaspoon turmeric or 1/2 teaspoon chili powder 2 teaspoons salt

INSTRUCCIONES 1. Combine all the ingredients in an airtight glass container, cover and mix well. 2. It will keep in a dry place for up to 3 months.

Adobo Casero RINDE: 1/2 taza INGREDIENTS UÊ UÊ UÊ UÊ UÊ UÊ

3 cucharadas de polvo de cebolla 3 cucharadas de polvo de ajo 1 cucharadas de pimienta negra molida 1 cucharaditas de orégano seco 1 cucharaditas de comino molido 1 cucharaditas de cúrcuma (turmeric) o ½ cucharadita de chile molido UÊ 2 cucharaditas de sal

INSTRUCCIONES 1. Mezcle todos los ingredientes en un bote de vidrio, ciérrelo bien y agítelo para combinar bien. 2. Manténgalo en un lugar seco por hasta 3 meses.


Turkey-Bean Tacos SERVES:

¼ cup of Sofrito (see recipe included) 2 (15 oz.) can pinto beans, rinsed and drained 1 ½ tablespoons olive oil 1 medium onion, finely chopped 1 pound lean ground turkey 1 tablespoon homemade Adobo Seasoning (see recipe included) UÊ ½ teaspoon chili powder

Serve With UÊ UÊ UÊ UÊ

16 (6 to 8 inch) whole wheat flour tortillas 1½ cups shredded Cheddar cheese ½ head of lettuce, thinly sliced 1 cup Fresh Tomato Salsa (see recipe included)

DIRECTIONS 1. Make the sofrito (see recipe included). 2. In a medium bowl mash the beans with a potato masher or fork and set aside. 3. In a large sauté pan, heat the olive oil over medium heat. Add the onion and cook until the onion is translucent, about 5 to 6 minutes. Add the sofrito and cook it for 2 minutes. 4. Add the turkey, mashed beans, homemade adobo seasoning and chili powder mix well and add ½ cup water. Cook uncovered, stirring occasionally, until turkey is browned, about 15 to 20 minutes. 5. Serve turkey, tortillas, cheese, lettuce and salsa in separate bowls and encourage everyone to make their own tacos!


Tacos de Pavo Y Frijoles RINDE:

16 (6 a 8 pulgadas) tortillas de harina integral 1 ½ tazas de queso cheddar rallado ½ lechuga romana finamente rebanada 1 taza Salsa Fresca de Tomate (ver la receta incluida)

INSTRUCCIONES 1. Hacer el sofrito (ver la receta incluida). 2. En un tazón o recipiente mediano aplaste los frijoles con un tenedor y póngalos aparte. 3. Caliente el aceite en un sartén grande sobre fuego medio alto. Añada la cebolla y cocinela por 5 a 6 minutos hasta que este translucida. Añada el sofrito y cocínelo por 2 minutos. 4. Agregue la carne de pavo molida, puré de frijoles, sazonador de especies, chile en polvo y ½ taza de agua mezcle bien. Cocine el pavo sin taparlo y revolviendo constantemente por 15 a 20 minutos hasta dorar. 5. Servir la carne, tortillas, queso y lechuga en tazones o recipientes y anime a que cada uno haga su taco.
