Minas Gerais szövetségi állam Pedralva településének szomszédságában, 1300-1560 méteres tengerszint feletti magasságon húzódik Antonio Fortes Bustamante ültetvénye, a Fazenda Paraíso. A most bemutatott tételük egy száraz feldolgozású Yellow Catuai, mely elegáns, enyhe savasságával, tisztaságával és mély édességével hívta fel magára a figyelmünket.

razília a világ legnagyobb kávétermelője, Vietnámot és Kolumbiát megelőzve. Főbb termő régiói Minas Gerais, São Paulo, Espírito Santo, Bahia, Paraná, Rondonia és Rio de Janeiro. A világ kávéfogyasztásának egyharmadát adó ország a mennyiségi kávétermesztéséről híres és leginkább eszpresszó kávékeverékek és instant kávé kapcsán hallhatunk róla. Ami viszont számunkra érdekes, az a tömegtermelés mellett meghúzódó specialty szektor. A minőségi szemléletet valló termelőket összefogó szervezet, a BSCA (Brazil Specialty Coffee Association) 1991 óta egyengeti a specialty kávétermesztés útját Brazíliában. A számos meghonosított arabica fajtavariáns és a száraz feldolgozás tökéletesítésére irányuló kutatások még hatalmas kiaknázatlan potenciált rejtenek, melynek reméljük, mi is részesei lehetünk!
A Fazenda Paraiso története 1977-ben kezdődött: Antonio Fortes ekkor vásárolta meg első földjét, melyen különböző zöldségfélék mellett banánt és kávét is telepített. A Serra da Pedra Branca völgyében elterülő, részben ősi növényzettel borított ültetvényen főleg Bourbon, Mundo Novo és Catuai arabica variánsokat termesztenek, melyeket száraz és félszáraz (pulped natural) eljárással dolgoznak fel.
Kávéink legjobb ízének eléréséhez elengedhetetlen a megfelelően lágy víz* használata. Felbontás előtt – a letisztultabb ízek érdekében – 5-10 nap pihentetési időt, míg felbontás után két héten belüli fogyasztást ajánlunk. Kellemes kávézást kívánunk!
A korai években Antonio kávécserjéit többször is elvitte a fagy, mígnem rájött, hogy a banánfák árnyékában fejlődő cserjék ellenállóbbak lesznek a faggyal szemben. Az árnyékolásnak még számos pozitív hatása ismert, melyek nagyban hozzájárulhatnak, hogy Antonio kávéi évről évre előkelő helyezéseket érnek el a különböző termelői versenyeken. * Teljes keménység: 50 –175 ppm CaCO3 (2.9–9.8 °d), tás: 40 –75 ppm CaCO3 (2.2–4.2 °d), pH: 6.5-8.0.

The Fazenda Paraíso plantation, owned by Antonio Fortes Bustamante, lies at
1300-1560 meters above sea level, near the municipality of Pedralva, in the
state of Minas Gerais. This batch is a
natural-processed Yellow Catuai, which
drew our attention with its elegant, mild
acidity, profound purity and deep notes of sweetness.

razil is the world’s largest coffee producer. Its main producing regions are Minas Gerais, São Paulo, Espírito Santo, Bahia, Paraná, Rondonia és Rio de Janeiro. Providing one third of the world’s coffee output, Brazilian coffee production is mostly known for excelling in quantity rather than quality. As a result, we mostly come across Brazilian coffee if we buy cheap espresso blends or instant coffee. What interests us, however, is Brazil’s specialty coffee sector lying in the shadow of mass production. Quality-oriented producers are united under the BSCA (Brazil Specialty Coffee Association), an organization which has been paving the way for Brazilian specialty coffee production since 1991. There is still tremendous untapped potential both in Brazil’s numerous acclimated arabica variants, and in advanced, developing natural-processing methods. We hope to take part in tasting the ever-improving results.
The history of Fazenda Paraiso begins in 1977. This is when Antonio Fortes bought his first piece of land, where, in addition to growing vegetables and bananas, he also started cultivating coffee. The plantation, which lies in the valley of Serra da Pedra Branca is abundant with ancient, native flora. Bourbon, Mundo, Novo and Catuai arabica varietal are grown here, which are then processed using the natural and pulped natural methods.
Our coffees taste the best when extracted with water of the proper hardness* range. In order to highlight the best flavour of our roasts we recommend having 5 to 10 days of resting period after roasting, but consume within two weeks of opening. Enjoy!
In the early years, Antonio’s coffee plants were often destroyed by frost, but he soon realized that growing the coffee plants in the shade of his huge banana trees makes the coffee much more resistant to cold. Growing plants in the shade has numerous other positive effects, all of which contribute to Antonio’s continued, outstanding successes in various competitions.
